Our True Grit W

hen my husband and I went to Costa Rica about six years ago, we had a peculiar experience more than once in our conversations with the natives.

They would ask us where we were from, to which we replied the United States.

Several of them responded the same way: “Ohhh, you must work hard.”

We thought this was comical.

The irony was not lost on us that most of these people were on the clock when they made this comment, either taking us on a hike or preparing a meal, or some other task for our enjoyment as we relaxed on vacation.

But the more we thought about it, and the more tourists we talked to from other countries, the more we realized: They were right. Americans do work pretty hard.

After all, it’s part of the American Dream, right? If you work hard and fight to persevere over all the obstacles, you are free to make a life you enjoy living.

This doesn’t mean you’ll end up rich or all your dreams will come true, of course. But our country was founded on this

sense that if you work hard, you have opportunity to better yourself, your family and all of us in the end.

That principle is what this year’s section is all about. In the features teased to the right, we tell the stories of four individuals who embody the American spirit in different ways. Sure, they’ve been knocked down. They have all faced tough hurdles. But they have worked through them to rise above hard situations that life inevitably brings.

Whether they’re going back to their family roots to find their life’s calling, helping others navigate their final days, or building a business from nothing, each person shows toughness. Courage. Perseverance. Grit.

As Americans, our grit is rooted in our fight for independence, which we celebrate on Monday.

Through these stories, you’ll find that although the context of our struggle has changed, many of the principles our founders fought for remain the same.

Let us remember this, and may it always stay that way.

MANATEE COUNTY BRADENTON MARAUDERS INDEPENDENCE DAY CELEBRATION Watch the Marauders’ baseball game against the Charlotte Stone Crabs, then take in the fireworks show after the game. Gates open at 4:30 p.m. The Marauders take to the field at 6:30 p.m., at McKechnie Field, 1611 Ninth St. W., Bradenton. LONGBOAT KEY ANNUAL FREEDOM FEST PARADE AND HOT DIGGITY DOG! PARADE This yearly Fourth of July parade begins at 9 a.m. and runs until 11 a.m. around Longboat Key Town Hall, 501 Bay Isles Road. Dress in your most patriotic clothing, and deck your bike or wagon with red, white and blue, and join the parade. Parade line-up begins at 8:30 a.m. Activities, food and drinks will be available at Bicentennial Park next to Town Hall after the parade. The Rotary Club of Longboat Key will also hold its third annual Hot Diggity Dog! Parade. Prizes will be awarded for various costume categories. The event is free. Call 383-2466.

With a route that’s just a quarter-mile, it’s one of the shortest parades in America. n Bring your dog — even if he or she isn’t in costume. with an old friend who has a beach house. Rent a motel if you can find one with vacancies. But do not — repeat, do not — attempt to park at the beach on July 4, or you’ll spend most of the holiday circling the beach lots in search of a spot instead of enjoying precious time in the sand. Two warnings: Sarasota County Area Transit System buses do not run July 4. And if you take Uber, you can bet on surge pricing. n If you’re boating, remember that you’re sharing the waters with marine life. According to Mote Marine Laboratory, Sarasota Bay’s resident dolphins frequent shallow waters; most dolphin deaths and injuries from boat strikes have occurred in the weeks surrounding the Fourth of July. n You know not to drink and drive, but drinking and boating can also land you in hot water. The legal limit for operating a vessel is a 0.08% blood alcohol concentration (BAC). n If you head to the beach, remember that you’re also on sea turtle turf.

Avoid turtle nests, which are marked by stakes and ribbons. Also, remove beach furniture and knock down sandcastles when you leave the beach, because they can interfere with the path of a nesting turtle. n Sparklers are the only fireworks that are legal to use in Florida without a permit. You’ll find plenty of other fireworks for sale — but the vendor might ask you to sign a waiver stating that you’ll use them for purposes such as agriculture or mining. Visit the State Fire Marshal’s website for a list of approved fireworks and safety tips.

OBSERVER TIPS n Don’t bother trying to park at Bayfront Park. If you are one of the fortunate souls who finds a spot, you’ll be blocked for about an hour when you leave. Take advantage of the public parking on Palm Avenue or State Street and walk to a spot for the fireworks. n Here’s where a boat — or a friend with a boat — is especially handy. Avoid the traffic by anchoring in Sarasota Bay to enjoy the fireworks. n Don’t count on finding a bench. Instead, bring your own chairs our blankets, and make a picnic out of the event.

As the display unfolds, revel in its glory. Hum a Lynyrd Skynyrd song of your choice. This is also one of the few acceptable moments to shed your annual single tear. If you’ve already watched “Old Yeller” this year, you’re just going to have to hold it in.

John Saputo, founder of Gold Coast Eagle Distributing, estimates he’ll sell 160,000 cases of beer in Sarasota and Manatee counties the week of July 4, a 20% increase over an average week.

Although July 4 tops other holidays throughout the U.S. in terms of beer sales, for Saputo it’s the No. 2 day for beer sales.

No. 1 is Easter because the population is so much larger in the area during the holiday.

It’s one of the great mysteries of life: Why are there 10 hot dogs per pack and eight buns per bag? When manufacturers began packaging hot dogs to sell them in grocery stores, they chose the 10-to-a-pack formula.

But hot dog buns are usually baked in clusters of four in pans designed to hold eight rolls.

Now, manufacturers are starting to bake buns in pans that allow for 10 or 12 buns at a time.

MATTER Tina Lipford greets death daily and still finds reasons to smile.

W

hen Tina Lipford first began dealing with death on a daily basis, she’d cast a dying rose into the ocean at the end of each week.

“It was my way of letting go,” she says quietly.

Today, Lipford, a registered nurse and case manager with Tidewell Hospice since 2008, has cared for dying patients in hospice care for 13 years.

She deals with death and discussions about it every day, but she doesn’t shy away from either; instead, she embraces the challenge.

Lipford remembers the dying woman she saw on one of her first assignments in nursing school being poked and prodded in a hospital bed despite her terminal prognosis. The woman died just moments before a phlebotomist came in to draw her blood, yet again.

Lipford felt there had to be a better way to care for the dying.

“When you think of death, it’s so sad, but for me, watching somebody with pain is hard,” Lipford says. “A big part of what we do is symptom management.

Nurses and doctors are taught to make people better.

Lipford, who worked as a hospital nurse from 1985 to 1998 before joining Hospice of Southwest Florida in 1998, knows her patients’ conditions won’t improve. Patients who enter into hospice care are considered terminal and typically die within six months.

But Lipford also knows medications such as morphine help manage the shortness of breath, pain, agitation and anxiety that come with progressive illnesses — and that can make death feel farther away.

“Once we get them comfortable, their quality of life improves,” says Lipford, who joined the Tidewell staff in 2008.

That’s the part of her job she loves.

She gets to know some patients well, but others, she meets only briefly.

On a recent day, Lipford pulls into the driveway of Bill and Donna Keith, whom she’s seen each Thursday afternoon since December 2015, when Bill, 69, stopped treatments for the stage 4 prostate cancer that had metastasized to his bladder and bones and entered hospice care.

The couple’s three cats appear in the sitting area as Lipford settles onto a flower-print couch.

When Lipford isn’t in her car on the way to visit her 14 patients, she’s at her desk in Sarasota answering the phone and coordinating with family and home-care nurses about her patients. She’s been in hospice care since 1998 and joined Tidewell Hospice in 2008. “The term ‘a good death,’ seems like an oxymoron, but in hospice we can really help them have a good death,” she said.

about what he’s experiencing.

The morphine has helped with Bill’s shortness of breath.

A new medicine has somewhat helped with tremors, but he’s still a little unstable when getting up.

The dizziness has subsided.

The couple has been able to get out of the house and enjoy life.

All good things, Lipford says.

Donna Keith tugs the sweater around her stomach as she thinks about her next words.

“I’d really like for him to stop smoking,” she says. “Could he take a Nicotine patch or something?”

Bill recently fell asleep while smoking and burned himself.

Bill says he wants to quit. But what’s the point if the end result is the same?

Lipford asks a series of questions before suggesting he either quit without aid, as he’s done before, or buy a vest he can wear to protect him against possible burns. She doesn’t recommend the patch because it could deliver too much Nicotine to his body and cause a stroke.

The Keiths mention Bill’s swelling of feet, and Lipford prepares to lift his white-socked foot. Donna grimaces.

“I have all tile floors and three dogs,” Lipford says with a chuckle. “No judgement here.”

Lipford prepares Bill Keith’s medications, collects her things and bids a familial goodbye.

Donna, herself a nurse for 38 years, is grateful for the support.

Before receiving hospice care, Bill Keith was on medication but still in pain.

“It’s hard to be present and help

people get through the end-oflife process,” Donna says. “You get to know somebody and support them through that. I don’t think I could ever do that.” nnn

After a patient dies, hospice nurses complete a bereavement visit with the family. Afterward, they generally don’t see the patient’s family again.

That sudden separation can be hard, both on the nurses and the families. On the hospice side, Lipford and other hospice staff, including nurses and social workers, meet regularly so they can talk through how they feel about dealing with death and other concerns. Tidewell’s bereavement counselors also are available to help them work through emotions, if needed.

Today, Lipford no longer buys a rose at the end of the week to throw into the ocean. But like most hospice nurses, she does have a ritual. She seeks peace in nature through backyard gardening or visits to the beach.

“The ocean is still my healing place,” she says.

LIFE Michael Garey had great teachers — but they weren’t inside a classroom.

A

n early mentor taught Michael Garey that what customers don’t see is just as important as what they do see.

That’s why when he sees something

small on the floor of the kitchen — say, a lettuce leaf, which left on the floor, could cause someone to slip — he places a dollar bill over it and watches.

Sure enough, an employee will stop to pick it up.

“Oh, you see it now,” Garey will say.

That’s also why 3 to 4 p.m., when Lazy Lobster Longboat Key is closed to transition from lunch to dinner, is so important, even though guests will never see what happens during what Garey calls “the fastest hour in show business.”

First, Garey makes sure staff is fed.

“Eat,” he calls out to them.

“Don’t dine.”

There are patios to sweep, seating to figure out and lunchtime books to balance. Staff pounds the veal so that diners won’t hear a thumping sound during their meal.

In season, when doors open, as many as 60 people will be waiting.

During their meal, they’ll see Garey, the 57-year-old co-owner who calls himself “the original poster boy for ADD,” bouncing around the restaurant, greeting customers by name.

Amid the restaurant’s bustle, they won’t know that most people thought Garey was crazy for believing he could make a go of a restaurant in 2009, mid-recession.

And they never saw Garey on all those nights in the restaurant’s early years in which he dragged the pullout couch from the front of the restaurant into his office after everyone had left for the night, slept a couple hours and was up working again by the time people returned the next morning.

They also won’t see that at 16, Garey left school for Christmas vacation during his junior year and never returned.

During season, when the Longboat Key restaurant is open for lunch and dinner, tasks like these, filing paperwork and managing administrative duties must be done between 3 and 4 p.m.

“The hour between… is insanity,” Flanagan said. “In one hour, you have to do all the ‘business.’ It’s a straight-up marathon.”

He had recently moved to Sarasota with his family following his father’s retirement after 40 years of hard labor with the city of Buffalo, N.Y.’s water department.

He still isn’t quite sure why he dropped out of school, though he figures his inability to sit still probably had something to do with it.

More than three decades after he first planned to spend his days on the greens, he says he’s “down to” a 50- to 55-hour workweek — thanks to both the off-season and the help of his staff. That’s after countless years of toiling 80 or 90 hours each week.

“It’s ironic that’s what drew me into the restaurant business, because the restaurant business killed my golf game,” says Garey.

“I’ve probably played 15 times since 1980.”

Although he never completed a formal education, Garey had great teachers.

The first were his parents, who taught him he could do anything if he worked hard enough.

His first mentor was Danny Wong, who owned a Chinese restaurant on the North Trail where Garey waited tables. He taught him to pay attention to everything in the dining room.

None more influential than the late Titus Letschert, owner of the acclaimed Café L’Europe, where Garey took a job as a busboy in 1979 and spent the next 22 years working his way to the role of general manager.

Her calm demeanor helps him focus on the task at hand — an ability he said he sometimes lacks. “I’m a high-energy person, and an ADD poster boy,” he said. “Focus can be a problem.”

During open hours, Garey mingles with customers — and all the regulars know him. Phil Schneider and Mel Schwartz, full-time residents, said they are frequent visitors.

He was a “wonderful but difficult” Dutchman who immigrated to New York City with $500 in his pocket and went on to a storied career in the restaurant industry.

(He’s the one who taught Garey about the importance of what the diner doesn’t see and the dollarbill trick.)

By the time the spot where Lazy Lobster’s Longboat Key location is located became available in 2009, Garey had a three-decade education in the restaurant business.

He and his business partner, chef Bob Fracalossy, who also owns the original Lazy Lobster in Sarasota, believed a new location could succeed. No one was more skeptical than their wives.

Garey knew that only politics was a hotter discussion topic than restaurants locally — so it was essential to be good from the start.

“In two weeks, people would know if we were really, really good or really, really bad,” Garey says.

He and Fracalossy invited Lazy Lobster’s mainland customers for half-price night for the grand opening. They posted a sign with an arrow directing customers to the new location outside the Centre Shops of Longboat Key, where it’s located. They learned they were in violation of the town of Longboat Key’s sign code, so they sent someone out to direct traffic there.

Seven years later, during a typical day of peak season, the Longboat Key restaurant will serve as many as 600 meals during a typical day. Garey and Fracalossy now also own Kacey’s Seafood & More in Sarasota, and Garey is working with the Alderson family, which owns Tyler’s Ice Cream, on a location next to Lazy Lobster Longboat Key. “It’s taken me 35 years to become an overnight success story,” Garey says.

Because he’s well-spoken, Garey says most people wouldn’t guess that he never finished high school. But when it comes to written correspondence, he struggles. He’s “almost phobic” about making a spelling or grammatical mistake.

He would tell a budding entrepreneur to get an education.

“It’s still possible to succeed without one, but it’s a lot easier if you have one,” he says.

The past two years, he’s helped raise money for dozens of students to do just that as chairman of the Kiwanis Club of Longboat Key’s Gourmet Lawn Party. The event raises money for local students and children’s charities, and under Garey’s leadership, it has grown from 600 or 700 attendees to around 1,200.

His other lessons for succeeding: “Don’t let anyone talk you out of your dream work,” he says.

And lastly: “Try to do something you’re passionate about.

Then the long hours and difficult work don’t seem so difficult.”

When he isn’t tied down to his desk by administrative duties, Jerry Dakin still takes the time to walk his farm and check on his animals. He said he misses spending more time in the barn and less time with paperwork. “It isn’t easy anymore,” he said.

erhaps it was some kind of American dairy farmer’s acid test.

Karen Dakin was on her first date with

her soon-to-be husband, Jerry, in the mid-

1990s. Dressed for dinner, the couple made an unexpected stop at Jerry’s family farm in Parrish.

Jerry jumped out of the car and went to the springer lot, where the cows were sent to give birth.

Karen sat in the car, figuring her date would return shortly.

He did, but with a request.

“He said, ‘I need your help,’” says Karen, telling the story while sitting in a board room at Dakin Dairy Farms in Myakka City. “The

cow giving birth was having a problem.”

“He said, ‘Put your foot here,” she says, motioning at an imaginary cow. “And he said, pull the opening.”

She never hesitated. Unconcerned about her apparel or which end of the cow she was grabbing, she did as he asked. Jerry went about helping the mama cow, and a healthy calf was born. The dinner clothes, meanwhile, took a beating.

Karen laughs. She knew at that moment, Jerry was hooked. They were married in 1997. nnn

Karin Dakin had no experience working a dairy farm, or even living on one. Until 1992, she was a married businesswoman and coowner of Telecommunications Concepts Inc., in Burke, Va. She gave that up and headed to Flori-

da, hoping to learn about farming.

“I found 10 acres in Parrish, and I began to diddle with herbs,” she says.

Diddling turned a little more serious as, after a divorce, she tried her hand at vegetables, then began selling to local restaurants and at a farmers market in St. Petersburg.

Still, when she met Jerry, she wasn’t exactly an agriculture expert.

“She had the passion,” Jerry says. “She knew the culture. But she knew nothing about dairy farming.”

Jerry had both the passion and the knowledge. His father, Pete Dakin, was a dairy farmer in Maine before moving the family to Florida and eventually starting another diary business in 1973 in CONTINUED ON PAGE 36

Karen and Jerry Dakin have been married for 19 years. While Jerry still enjoys spending time out in the fields with their livestock and crops, Karen’s mind is always thinking of the next move for the farm. “I’m project oriented,” she said.

“To me, when I think of patriotism, I think of looking out and seeing the cows grazing, the sun setting. Oh God, farmers have to be patriotic.

If we weren’t, we wouldn’t be able to feed our own people.

It gives a farmer great pleasure to put food in front of them.”

Karen Dakin has a vision for her farm, and she’s always formulating a new plan for the dairy. Besides ice cream and milk, the farm is working on creating its own cheese.

In 2001, Jerry decided to go out on his own and purchased property in Myakka City, the current site of Dakin Dairy Farms. If he needed any inspiration, Karen was right beside him, pushing him forward. “I think you can do whatever you put your heart into,� Karen says. “But you do face something every day in dairy farming.�

On their first day — July 5, 2002 — in Myakka City, they had 237 milking cows and a handful of helpers.

He remembers the day he tasted the first batch of milk produced on his own farm. “When our first gallon came off the line, I cried,� he says. “Wow. We made it. We worked so hard at it.�

They now have 2,400 milking cows and 80 employees. “My dad discouraged me from getting into the dairy business,�

I knew it wasn’t easy.�

Karen’s favorite moment came in 2009, when Dakin Dairy began labeling and marketing its own products instead of selling them to big companies. “I remember tasting our own milk,� Karen says. “I had it with a brownie.�

It’s an American success story that Jerry says wouldn’t have happened if he didn’t have such a strong love of his country and the opportunities it provides.

“To me, when I think of patriotism, I think of looking out and seeing the cows grazing, the sun setting,” Jerry says. “Oh God, farmers have to be patriotic. If we weren’t, we wouldn’t be able to feed our own people. It gives a farmer great pleasure to put food in front of them.”

He points to the fact that only 2% of the American population are farmers or ranchers. Not many people are willing to survive the problems dairy farmers endure, such as a fluctuating market, a changing industry, government regulations, severe weather and an onslaught of bugs, he says.

“We’re always waiting on the milk prices, the feed prices,” Jerry says. “We’re stockbrokers now.”

“Then there is the labor of hiring managers, my biggest challenge along with the government regulations,” he says. “Now we need someone to write up 12-page reports. I think the fun has gone out of dairy farming. Farming is a business now.”

Through the challenges, the Dakins persevere.

“I love the cows, the people,” Jerry said. “When I put seed in the ground, I go out a few days later and dig some up, just because I can’t wait to see it. I see a heifer

calf and I think, ‘She will be milking in two years.’”

Karen looks out onto the fields from the farm’s board room.

“This business is our home, our family, our land,” she says. “My love for it is unbelievable. America the beautiful. Look what we have here. Amazing.”

In 1917, Sarasota pioneer Bertha Palmer donated a flagpole and Stars and Stripes flag for the center of Five Points Park. The message “WELCOME BUDDIES” was later painted there to honor local World War I heroes as they returned home.

The Sarasota County Veterans Commission and city staff collaborated to bring back that piece of history in 2010.

It features an array of photographs, artwork and memorials that depict the war experience and honor those who have served.

Unveiled to the public in 2013, it is fully funded by The Patterson Foundation and was created through a first-ever public-private partnership with the National Cemetery Administration.
