The Sarasota Paradise started playing their first season at Premier Sports Campus this year.

L

akewood Ranch has lots of things.

It has parks and outdoor trails, golf courses and lakes, restaurants and retail and a huge selection of clubs and activities.

But one thing it hasn’t had is a professional sports team.

When Schroeder-Manatee Ranch, developer of Lakewood Ranch, was considering possible things that could activate a community, having a sports venue that provides opportunities for kids to compete, while also creating a destination for national tournaments, was an important piece of the plan.

That’s one of the reasons it developed and opened Premier Sport Campus in 2011 before turning it over to Manatee County in 2017 as part of a larger deal to expand it with more community amenities.

Meanwhile, over in Sarasota, Marcus Walfridson started working on his dream to bring a professional soccer team to the area in 2018. His hustle started humbly, rounding up support and backing and investing heavily himself. It took five years of pushing, persuading and promoting until the Sarasota Paradise emerged to play their first match in 2023.

And when, after a successful start, the Sarasota Paradise soccer club started looking for a home after hosting its first two seasons at Sarasota High School, it’s no surprise that Premier Sports Campus rose to the top of its list.

For us outsiders, it might seem like all this happened overnight. But this match was years in the making.

“I understand people thought we were crazy and idiots,” Walfridson told our contributor of the idea that

Sarasota and Lakewood Ranch could support a pro sports team. (See Page 64.) “I got it.”

He just took that as a sign he had to work harder to prove them wrong.

The results so far have done just that. In their first match March 18, the Paradise set an attendance record for the club, selling 2,248 seats in the 3,000-seat stadium.

More success followed when the club was upgraded from the pre-professional League Two of the United Soccer League to the professional League One of USL. That means that, starting in 2026, Lakewood Ranch will officially have its first professional sports team. Sure, it may not be the NBA or the NFL, but it is proof of what a little dreaming — and a lot of believing — can do.

T

he 2025 version of the multiple UTC districts in east Manatee and north Sarasota counties, with its hundreds of stores and dozens of restaurants — in addition to its thousands of employees — has a rather simple, yet significant, origin story.

It’s a tale wrapped in a fish restaurant, with a secondary role played by a discount department store.

The history is relevant today as the company behind UTC, University Park-based Benderson Development, looks at how it will build out some 75 acres on the east side of the property on the Sarasota County side, alongside Interstate 75. Future projects in and around there include the first-ever residential component of UTC; potentially up to three hotels; an entertainment and music district; and a large swath of new office space.

“As a company proudly headquartered here, Benderson is deeply committed to the growth and long-term success of the Sarasota-Manatee region and the entire state of Florida,” says Benderson Executive Director of leasing Mark Chait.

In a recent presentation on the past, present and future of UTC, hosted by Lambda Alpha International, a land economics professional society with a new Sarasota-Bradenton chapter, Chait detailed Benderson’s counterintuitive history, and strategy, in the area. Chait says the Shoppes at University Center, on the Manatee County side of UTC, is the beginning of the entire project.

er Joe’s in the middle to BJs Wholesale Club on the other side. Weekend parking spots can be tough to find.

But in 1998, when it was the Sarasota Outlet Center, it was anything but thriving.

Instead, says Chait, 80% of the stores were vacant and the plaza was physically dilapidated. The company’s founder, Nate Benderson, says Chait, “knew great real estate” and the company, then based in Buffalo, bought the center from a Canadian bank. The company paid $6 million for the property.

“When I first saw it, I was like, ‘Wow, I can’t believe we own this,’” Chait quips, “but we really saw what it (could be).”

That year, Chait points out, Lakewood Ranch was in its infancy. Cows roamed the south side of University where SuperTarget and the Mall at UTC now sit.

“We started doing deals, and then we started doing something most developers wouldn’t do,” says Chait. “We did a full physical remodel without many tenants. We knew it looked terrible.

We knew something had to be done, and we invested. We remodeled the whole thing, parking lot, landscaping.”

The first tenant? Bonefish Grill.

“Back then, Bonefish was a unique concept … and that kind of put a label on it that this was a great spot,” he says.

Next up, Marshalls. The retailer, which sells everything from perfume to pet food, was another tipping point for the center, and Benderson. It basically translates to someone fearless and resilient who, when hit with an obstacle, finds a different way in,

through or over the problem. Domino’s Pizza, to cite one example, has a Team Honey Badger of the Year Award. It’s for an employee who embodies the company’s core values, which, the pizza delivery giant says, includes a “high bar, unyielding spirit,” and someone who “tackles adversity head on and inspires those around them through their selfless actions.” Going even further back, college football star and future Super Bowl winner Tyrann Ma-

Fanning, say several colleagues and friends, both exemplifies a honey badger in her own life — she oversees marketing for Benderson Development and is an active civic leader, including serving on the boards of the Lakewood Ranch Business Alliance and Nate’s Honor Animal Rescue — and uses the meme to inspire people. “Oh, you mean the honey badger?” says Wayne Parrish, a longtime executive at Sarasota office equipment firm Rite Technology and fellow LWRBA board member when asked about Fanning’s leadership qualities. “She’s smart and professional and knows how to stay strong. She will not fold.”

LWRBA President and CEO Brittany Lamont, like Parrish, quickly mentions the honey badger when chatting about Fanning. Lamont recalls the pair recently ruminated about a project “that didn’t come together” the way they wanted. “Julie was really supportive,” Lamont says. “She was saying, ‘today you are a honey badger. You are tough, you are strong and you are going to get through this.’”

“Julie makes tough decisions, and is confident in her decisions,” Lamont adds, “but she does it with kindness and heart and warmth.”

GOOD WORK

Fanning’s year as chair has extra significance, given 2025 is a milestone anniversary for the alliance: two decades.

“To be at the helm of this organization for our 20-year anniversary is a really big honor,” Fanning says.

More than just celebratory, Fanning’s goals for the organization are to sustain the recent growth and take it further for the 2026 chair, a role Parrish will fill. One example is in revenue, where the six-employee organization, which makes most of its money from events, sponsorships and memberships, passed $1 million for the first time in 2024. Another milestone lies in membership, where the goal is to have 800 members by 2026. It currently has some 750 members.

Fanning also seeks to ensure current members are getting the most from their membership. Some members go back 15 or even 20 years; the organization says 27 members have been part of the alliance since at least 2010. Helping members get the most out of the LWRBA, in part, requires consistent communication and a stickto-it marketing strategy. “Sometimes we get caught up in doing all the work internally,” Lamont says, “that we forget to let people know about all the work we’re doing.”

In other words, says Fanning, she doesn’t want the LWRBA and its offerings to be a best-kept secret.

It helps that Fanning has some 20 years in marketing, branding and helping companies and nonprofits get the word out, internally and externally, about a host of happenings.

She has spent the past six years with Benderson, first as senior marketing manager and, since 2021, director of marketing. She oversees a team of four employees in the role, which, at its core, involves marketing for all the events, news and more coming from east Manatee County-based Benderson.

Prior to Benderson, Fanning worked nearly 14 years at an advertising, public relations and design firm with offices in West Palm Beach and New York City. Fanning grew up in South Florida and worked her way up at the firm, O’Donnell Agency, starting in event planning. She opened a Sarasota office for the firm about a decade ago.

She and her husband, Tim Fanning, a restaurant executive, had moved to the region after Tim was named general manager of the Capital Grille at the Mall at UTC. Julie Fanning spent four years grow-

ing and building O’Donnell’s presence in the region, working from home — before Covid made WFH universal.

But she also longed for more human connection. That led her to the alliance. Soon after she moved to town, Fanning reached out and had lunch with Heather Kasten, who was then LWRBA’s president and CEO; now Kasten has the same role with the Sarasota Chamber of Commerce. “I really felt the connection with them right away,” she says. “Everyone there was so helpful and welcoming.”

Lamont paid the lunch forward: When she was named CEO of the alliance in November 2021, one of the first people she reached out to for a conversational lunch was Fanning.

Now the CEO and board chair text or talk, and sometimes both, at least once a day. Sometimes, but not always, the chats include honey badger references — always with an eye toward making the LWRBA better and stronger. “We want to continue building on the success that we’ve had,” Fanning says, “so this organization can continue to have success for the next two decades.”

estaurateur Sam Fox frequently uses the descriptor “from scratch” when referring to his food at Flower Child, the restaurant he founded in 2014. The same expression can be applied to his culinary backstory — one that includes 11 James Beard Award nominations.

Fox is the brains behind the Flower Child concept — a full-kitchen, fastcasual restaurant known for its healthcentric menu of wraps, bowls and salads — set to open its first Florida location in Center Point at Waterside in May. The restaurant, at 6532 University Parkway, is part of Phoenixbased Fox Restaurant Concepts, and the upcoming spot — a 3,500-square-

foot space with a patio — will be No. 41 for the brand nationwide when it opens this spring. (The Cheesecake Factory acquired Fox Restaurant Concepts in 2019 in a $353 million deal.)

“Sarasota-Bradenton has such a vibrant and growing food scene, and people here really care about what they eat,” Fox says. “There’s an active, health-conscious lifestyle in this community, and we felt like Flower Child was a natural fit.”

THE RIGHT FIT

For Fox, crafting the perfect menu is much like creating the ideal career — it has to be right. He grew up in the restaurant industry with parents who owned an eatery in Tucson, Arizona.

His grandparents also worked in the culinary business.

“Naturally, my parents did not want me and my siblings in the restaurant business. It wasn’t easy, but I was drawn to open my own restaurant at age 21, without formal training,” Fox says. “I learned very quickly that, to be successful, I had to run a great restaurant and excel at the business side of restaurants. I am not a chef, but my education came from being hands-on in the kitchen those early years, learning from talented chefs and pushing myself to ensure every guest enjoyed the meal and experience.”

Fox opened his first concept, Wildflower American Cuisine, in Tucson in 1998. Since then, Fox has operated dozens of brands, including Culinary Dropout, North Italia, Zinburger, Blanco Cocina + Cantina, Doughbird and The Henry. Fox’s culinary path included an early detour: he used his college tuition to open his first restaurant, according to a bio of him on the website for No Kid Hungry, a nonprofit hunger organization. It was there where Fox, the bio says, “was forced to learn how to cook when he got into a fight with his chef, and the chef broke his hand.”

PERFECTING THE MENU

Flower Child exemplifies Fox’s community-focused vibe. The restaurant has garnered a following for its customizable bowls, wraps, salads and mix-and-match veggies, grains, fruits and proteins.

“We start with the best ingredients we can find: organic produce whenever possible, responsibly sourced proteins, and house-made dressings and sauces that take our dishes to the next level,” Fox says. “Every ingredient on the menu serves a purpose, and we make everything from scratch daily to ensure the highest quality.”

Some of the most sought-after dishes include the Mother Earth Bowl, featuring ancient grains, sweet potatoes, portobello mushrooms, avocado, cucumber, broccoli pesto, charred onions, leafy greens, red pepper miso vinaigrette and hemp seed; the gluten-free Mac & Cheese with aged white cheddar and Parmesan cheeses; the chicken enchiladas with guajillo chiles, smoked gouda, poblano cream, organic black beans, roasted corn and avocado; and the Flying Avocado Wrap with smoked turkey, gouda, romaine lettuce, tomatoes and avocado hummus.

In addition, the restaurant was a sought-after tenant: Brett Hutchens, president of Casto Southeast Realty, which developed Center Point at Waterside, told the Observer late last year that the firm was “really lucky. UTC had been trying to get [Flower Child], but they’re just not a mall tenant.”

The Center Point at Waterside location will feature Flower Child’s signature airy, vibrant aesthetic and offer dine-in and patio seating. Guests will be able to place orders for regular pickup, curbside pickup or delivery through the Flower Child app, which offers exclusive rewards.

leader’s mindset — like the time she covered a shift on Christmas Eve — pushes top-level nurse Judy Young to set up her team, and community, for success.

hen Judy Young was a 20-year-old rookie nurse at Sarasota Memorial Hospital, fresh out of Manatee Community College, the notion of running the nursing operation for an entire hospital was nowhere on her radar. “It was the furthest thing from my mind,” she says, chuckling at the thought. “I never, ever in a million years would have pictured myself reaching this point. I didn’t even go for my bachelor’s degree. Becoming a manager was not a consideration at all.”

And yet here she finds herself chief nursing officer at Lakewood Ranch Medical Center, where she oversees roughly 400 staff members, 340 of them nurses. LWR Medical Center has 120 beds and is amid a $120 million expansion expected to double capacity.

It wasn’t as if a lightbulb clicked on for Young, 58, to start clawing her way up to the C-Suite. Her rise in the ranks came more organically. “I just had really great opportunities and mentors that helped me along the way and showed me what it’s like to be a good leader,” she says.

Young has been in her current position for 10 years. She came over from Blake Medical Center in west Bradenton, where she served as assistant CNO for four years. Before that, she was in the trenches at Sarasota Memorial, usually in a surgery unit — not as a scrub nurse, but as a clinical nurse responsible for a variety of duties that involved managing the operating room and the overall process. She did stints as a charge nurse and a surgical services director.

BIG TEAM

These days, Young handles a heavy load, which she sums up as, “guiding the clinical care here at the hospital for nursing and other clinical areas other than the medical staff.” Her most important role within the job? “I’d say growing the right leaders for the (hospital) areas,” she says. Currently, Young has 10 supervisors who report directly to her. As CNO, she makes sure to get out of her office and into the hospital units, going on rounds, connecting with her charges, talking with staffers in the cafeteria.

She grew up Judy Tittle in a golf neighborhood in an eastern part of Sarasota that bordered rural areas.

Her proximity to agriculture was one reason she joined Future Farmers of America, although she didn’t see driving a tractor as part of her future. While at Sarasota High School she served as the organization’s treasurer, and the president during her senior year. “I think I gravitated toward leadership from a very young age,” she says.

Judy charted her course toward a health care career early on. “I had an aunt who was a nurse and my mom’s cousin was a nurse, so I had good role models,” she says. “I had a cousin a year younger than me with muscular dystrophy, so I saw the care that he needed. I always felt a little bit bad because I could walk and do all of the things, and he couldn’t. So it really taught me empathy at an early age.”

Being a “hometown kind of girl,” Judy had no plans to leave the area, but she did have a plan for her professional life. “I stuck to it,” she says. “I

graduated high school at 17, and I was an RN by the time I was 20.”

As Young climbed the management ladder, she often had to balance her continuing studies for advanced degrees with having a husband and two small children. That’s a lot, yet she doesn’t remember being terribly overwhelmed.

“I kind of learned to do one thing at a time,” she asserts. “There’s always more to do. Sometimes it’s OK not to be ahead of it.”

STEP UP

Young occasionally misses doing hands-on nursing, but not the way it happened on Christmas night in 2008.

She’d been the director of surgical services at Sarasota Memorial “for a long time” when one of her nurses called in sick. Instead of assigning a replacement, she elected to cover the shift herself. “I thought, ‘Well, I’ve had my Christmas, so why ruin someone else’s?” Young recalls. After all, it was just a simple endoscopic procedure. It

didn’t turn out that way. “They had to open the patient up and do a full abdominal surgery,” she recalls. “I was nervous, and it was one of those situations where I had to really grasp some of my roots to get through it.”

It’s unlikely Young will find herself thrust into the OR any time soon. And she’s more apt to spend Christmases with her family. Young has two stepchildren to go along with a daughter and a son, both of whom live in St. Petersburg. Her son and his wife have a 2-year-old daughter named Olive.

“They’re close enough to us that we get a lot of Olive time,” she says.

Young, who lives in Parrish, has another commitment to health care, this one an avocation she shares with her husband of 12 years, Jim. On Saturdays, they volunteer at Nate’s Honor Animal Rescue Center on Lorraine Road in east Manatee County. “Working with animals is one of my passions,” she says. “I guess, in a way, you could see it as me going back to my roots in Future Farmers of America.”

After facing and

overcoming a harrowing medical experience, a Lakewood Ranch resident leads a group of women on a mission to help other women live their best lives.

ver the years, Lakewood Ranch resident Simi Ranajee has sat on boards of large charity organizations like the American Cancer Society and American Patients Rights Association. Along the way, she made friends with other board members.

“We would talk about how we love these great boards but sometimes when you’re on them you don’t really get to impact the daily lives of people,” she recalls. “And we thought, ‘Is there something we can do?’”

As it turns out, yes.

In 2019, Ranajee recruited nine of her fellow philanthropists to form Mission Neem 5, themed around a tree found in India and nearby countries celebrated for its wide-ranging environmental and medicinal effects.

“It wasn’t just transforming health,” Ranajee asserts. “It was creating employment opportunities for women.

Mission Neem 5 became a platform to educate, uplift and empower women and the families they support through sustainable, organic solutions.”

In 1990, when she was 22, her aunt signed her up for the Miss India Illinois pageant. “I didn’t know about it,” Ranajee recounts. “‘She said, ‘You’re tall, you’re pretty, you can do this.’”

So she did. And she won. She moved on to Miss India USA — and she won there, too. Then the ultimate rung of the ladder: Ranajee was crowned the first Miss India Worldwide. She won a diamond ring, some scholarship money and a round-trip ticket to India.

She worked for Edelman, a global PR company, as a senior vice president in health care, and is currently a managing director for Johnson Controls, a multinational corporation that produces HVAC, fire and security systems for buildings.

The couple has a son, Surain, 21, and an 18-year-old daughter, Sarisa. Both were born on April 1. In 2016, the family moved from the Chicago area to the Country Club neighborhood of Lakewood Ranch to be closer to family.

A year later, Ranajee was diagnosed with lung cancer and needed surgery.

She flatlined during the operation — and remembers a death experience.

“I was happy. I was done,” she says. “I was like, ‘I lived a good life, had some incredible experiences.’ But both my kids’ faces kept coming to me, and it was like, ‘I’m not done. I’m not done. I need to go back. Please let me go back.’”

Her wish was granted. She’s back with her family — and doing charity work.

f the past seven years were one long soccer game for Marcus Walfridson, he would have been tagged with a yellow card in the first minute.

This goes back to 2018. The Swedish-born Walfridson — the person most responsible for bringing pro soccer to Sarasota and Lakewood Ranch — had a 90-day, temporary visa to be in the United States. On day 80, he recalls, he received a text from U.S. Border Patrol, much like a referee hands a player a yellow card as a warning of a potential penalty in soccer. Walfridson had 10 days to clear out of the States.

Walfridson left. Then he came back.

And similar to Malmö FF, widely considered Sweden’s most successful soccer team, Walfridson has since been a relentless attacker driving toward a singular goal: to build a community of sports fans of all ages in the region over soccer, or in his native tongue, ‘fotboll.’ He’s doing that through the Sarasota Paradise, which, as of March 18, plays its home games at Premier Sports Campus at Lakewood Ranch.

SHOOTS AND SCORES

Despite losing that March 18 game 2-1 to FC Naples, the Paradise has been on an off-the-field winning streak of sorts.

For starters, the team learned earlier this year it had earned a promotion in the United Soccer League, from playing in pre-professional USL League Two to the professional USL League One. While USL League Two is a go-to spot for collegiate and aspiring pros, League One, the team says, is a “major step forward for the club,” and will pit the Paradise against some 17 other teams featuring “high-level competition, top-tier talent and clubs with dedicated professional infrastructure.” Sarasota Paradise will play its first USL League One games in 2026.

Justin Papadakis, deputy CEO and chief real estate officer for the USL — which is based in Tampa — says moving up the Paradise was an easy decision, given the surge in families in east Manatee County and the recent Premier Sports expansion. The one thing “Lakewood Ranch has been missing is a professional sports team,” continues Papadakis, adding USL League One games are on ESPN+, creating a “two-hour commercial” for the region.

Another big win for Sarasota Paradise? The March 18 game, the team’s first at Premier, easily set a team attendance record, with 2,248 fans in the 3,000-seat soccer-specific stadium.

The team averaged about 500 fans a game while playing at Sarasota High School its first two seasons, maxing out at 1,038 for a game.

“I want to create an organization that can live forever — not only a soccer team,” Walfridson says, “but a brand that becomes synonymous with the community,”

RAISE THE FLAG

With a penchant for wearing Sarasota Paradise scarves nearly every day, the always-hustling Walfridson, to the dozens of people he meets on the Sarasota-Manatee-Lakewood Ranch networking circuit, is the face of the Paradise. He simultaneously considers himself an introvert, someone just as comfortable sharing a beer with a buddy and talking about his other sports love: the NHL’s New York Rangers.

“The one thing I never want to experience is regret for not doing something,” Walfridson says, which motivates him to go to events and constantly carry the Paradise flag.

That flag, in the past seven years, has gotten a bit heavy. Since 2018, Walfridson has spent into the six figures of his own money on the team; passed up on other lucrative opportunities in the sport where he says he could have made up to $400,000 a year; negotiated deals and contracts with sponsors, players, partners, coaches and vendors; and notably, dealt with a stream of setbacks and doubt.

“I understand people thought we were crazy and idiots,” he says of the

idea that Sarasota and Lakewood Ranch could support a pro sports team. “I got it.”

That, in turn, has partially driven his busy networking schedule. “We have to really educate the community as to what a professional soccer team is all about,” he says.

And there have been some believers along the way, too. In 2020, Walfridson, along with business partner Kenneth Bethune, who has experience in English soccer clubs, formed Audigr Group. Named for the Old Norse/Norwegian word for prosperity, Audigr is the parent entity for the Paradise.

The Papanicholas family, which owns Nicholas & Associates, a national construction management company with offices in Illinois and Tampa, were also early believers in the Paradise. The company started as a jersey sponsor for the team, and then, last August, purchased a minority stake

in the club at a low/mid seven-figure valuation, Walfridson says.

Erin Silk, the president and CEO of the Economic Development Corp. of Sarasota County, was another early believer in the team. Walfridson and Silk connected in 2021. Silk was impressed with Walfridson’s optimism, even amid shrugs from some and rejections from others. “As soon as you meet Marcus, you know that if anyone was going to pull this off it would be him,” Silk says. “You just feel his positive vibes. I’ve really never heard him have a negative thing to say.”

Silk also lauds Walfridson’s ability to change directions quickly.

“Sometimes people get so focused on a task they get tunnel vision, but he didn’t do that,” Silk says. “He was really able to change and adapt.”

Walfridson, 44, has made a career of being able to change and adopt.

Ice hockey was his first love growing up — not soccer. He knew another Swede hockey player of a similar age, the legendary Henrik Lundqvist, who went on to lead the Swedish national team to a gold medal in the 2006 Turin Winter Olympics. Lundqvist, now 43, also played 15 years with Walfridson’s beloved New York Rangers.

Walfridson didn’t really start playing soccer until his teens and says he didn’t get good until he was 18 — late for soccer players. He ended up playing in Norway, quipping the flights were cheap, so it was easy to get there. He soon took coaching jobs and even some jobs outside sports to scratch together a living.

Coaching, leading and running teams in some ways came more naturally to Walfridson than playing. Some of that can be traced to his dad, an entrepreneur and a businessman. “When the other kids at school would say ‘I want to be a cop, I want to be a firefighter,’ things like that,” Walfridson says, “I said, ‘I want to be the boss.’”

Now as the boss of the Paradise, Walfridson can at least say if there’s a job or task to do, he has done it before at some level. He’s been a head coach, an assistant coach, a scout, run player development and more. “I’ve done everything you could think of in soccer,” he says.

That experience has led Walfridson to run Sarasota Paradise with two core principles: accountability and clarity.

“I’m very big on accountability,” he says. “If I tell you I’m going to do something, I do something. But I also expect Marcus Walfridson, founder and CEO of Sarasota Paradise, is the driving force behind the region’s growing professional soccer presence. that from everybody else.”

In the Company of Cows At Dakin Dairy Farms in Myakka, four brothers tend to cows, kin and a vanishing way of life.

urious creatures, cows.

Curious about us humans. So says Garrett Dakin, who should know, because he owns Dakin Dairy Farms with his three brothers and has been part of his family’s milk business since childhood. A cow’s curiosity only goes so far, though. “They’ll let you get close, but they will not let you touch ’em,” Dakin says.

I’m up for the challenge. As an enticement, I pick up a handful of feed and extend it to one of the cows, who’s just finished a milking session. She meanders over, pauses, inches a bit closer, then stops and gives me a long, soulful — curious — stare. Her coat is a ruddy white accented by puzzle pieces of deep brown. A yellow tab with the number 5965 hangs from each ear. I push the feed closer to her, about a foot away. “Go ’head, it’s OK,” I murmur. A cow whisperer. Shortly after, she slowly turns and saunters away, joining the rest of the herd.

I don’t get to touch #5965 but I like to think we had a moment. Our humanbovine encounter was among several memorable experiences I had at Dakin Dairy Farm on a sun-kissed day in mid-March. The 350-acre complex is just 10 miles from Lakewood Ranch in Myakka City.

Dakin is the only dairy farm in Florida that’s open to the public, says

Garrett, 43. An employee hosts tours, often showing large groups of young school kids the ins and outs of the farm, and then cutting them loose to frolic on the adjacent playground and mingle with goats and other farm animals in the petting area.

I get an extended, behind-thescenes tour in Garrett’s well-used GMC pickup. He’s a big, bearded dude — 6-foot-2, 260 pounds, he says — with a high-pitched, twangy voice that’s like a plucked banjo string. He’s wearing a black golf shirt with the company logo above the front pocket. The logo also adorns his camo baseball cap.

Before the tour, we meet Jason Dakin, the eldest brother at 44, for a chat in the company offices. The two younger sibs — Grant, 36, and Ethan, 34 — just left on a rare and well-earned vacation.

During our pickup trek, Garrett — a natural storyteller — discusses the workings of the farm, the dairy business, the Dakins’ multi-generational commitment to it and the dynamics between the brothers, who purchased the property from their uncle, Jerry Dakin, in May of last year.

Along the way, I see every facet of the farm, from the fields of grass that make up the primary food source for the herd, to the final product that’s bottled on-site in plastic retail containers.

Garrett touts the brothers’ efforts to maintain a highly sustainable farm that recycles anything it can — especially water — and makes a bespoke

product from cows that have “a better diet than your average football player.” Most mass-market milk is blended from different sources. Dakin Dairy milk is produced exclusively on this farm, which “gives it its own flavor profile,” Garrett explains.

He’s a refreshingly candid man. “I can make more money serving hamburgers at McDonald’s than what I’m doing today,” Garrett says, only halfjoking. The brothers don’t take profit from the business because at the moment they’re in break-even mode.

Running a dairy farm is a tough racket.

“Just the other day I had a guy from a government office ask me, ‘Why are you guys still doing this?’” Garrett muses. “And I said, ‘for some dumbass reason, I love it.’”

So do his brothers, Garrett asserts.

THE FAMILY

The Garrett brothers’ grandfather, Romanus “Pete” Dakin, ran a dairy farm in Maine. In 1963, he visited Sebring, Florida, and really took to the place. Pete returned home and told his wife, ‘We're movin’ there, and I’m not milkin’ another cow for the rest of my life,’” Garrett recounts.

Pete relocated his family — including four sons — to Sebring and bought a home. After about a year, he got restless. Pete drove around Florida, found a 60-acre spread in Parrish, Continued on Page 76

Continued from Page 74 and bought it. He built two chicken houses and started raising the birds.

“Then the chicken market crashed or something,” Garrett says. “He told my Grandma, ‘The only damn money I ever made was milkin’ them damn cows. I hate doin’ it, but I’m gonna do it again.’” In 1974, Pete built a milking parlor, converted the chicken houses to feed barns, bought 110 cows and began accumulating the surrounding 200 acres.

Pete gave his oldest son Cameron — the Dakin brothers’ father — a barn in which to raise calves. “Next thing you know he has, like, 200 of ’em,” Garrett says. “So he sent them off to get raised up, and then he realized he needed to build him a dairy because he was gonna have some cows to milk in about two years.”

Cameron, now 72, and his brother Farren, who died of Covid in 2020, bought a piece of land in Myakka City in 1979, and two years later opened

From an early age, Jason and Garrett got up real early to help their mother, Sondra, feed the calves before going to school. “I think that’s why my folks had two more sons after us — because they needed the cheap labor,” Garrett says with a mischievous grin.

In his mid-teens, Garrett got a stern life lesson. He recalls, “I told my Dad, ‘I’m 16 years old now; I want you to go buy me a truck.’ He laughed at me. He said, ‘There are three things I’ll give you: I’ll give you a ride to the bank. I’ll give you a ride to look for a truck. And I’ll give you a job.’ He instilled in us that there’s no reward if you don’t work.”

Garrett joined an on-the-job training program while at Lakewood Ranch High School — where he was part of the first graduating class — and did some HVAC work during his senior year. But he got stuck inside a pipe on a job in the dead of August and freaked out. So, it was back to dairy — for good.

The Dakin family has owned four

dairy farms in the Myakka City area, and there are now two. The current Dakin Dairy Farm was founded by Jerry Dakin in 2002. The other is Cameron Dakin Dairy, about seven miles away. All along, the Dakin brothers worked on the farms, learning the business, top to bottom. Last year an opportunity opened. Their uncle Jerry had grown weary of the grind and put the farm up for sale. The announcement caused plenty of consternation among locals who worried it would be sold to developers. The purchase was probably fated. Garrett says the brothers toil “from dark to dark,” and rarely take vacations. When they manage to get away, they like to hunt and fish. For a weekend every June, the extended family — all the brothers are married with kids — heads to the keys for a weekend, where they rent a nine-bedroom house.

THE FARM

Dakin Dairy Farms is a menagerie of buildings, silos, open-air barns and fields. Visitors first encounter a cafe that serves ice cream, shakes, merchandise (and soon food, Garrett says), in a space that evokes a country store.

The main building houses offices, a sophisticated milk processing plant, bottling and storage. A covered, open-air milking parlor is attached.

It’s late morning as I lean on a railing with Jason Dakin, looking down on two long rows of Holstein cows that stand placidly in stalls for one of their three daily milking sessions, each of which takes about six minutes. The cows then amble back to a vast open-air barn, where individual stalls are laid with soft white sand. They’re free to roam out into a small field, but most prefer the shelter, says Ethan Dakin, especially during the hot summer months. Each of the barns is equipped with huge fans to help keep the cows cool, although on this 70-degree morning they’re switched off. “My power bill is $32,000 a month,” Garrett says.

Hungry creatures, cows — 70 pounds of dry food a day, Jason told me. It’s called silage, which is 60% fresh-cut grass. One section of the farm includes several huge mounds of natural raw materials that combine to make the silage. There’s grain from the Yuengling plant in Tampa, dry bakery waste, cotton seed, soybean meal, hominy, grass. Hay makes up the smallest pile. The dairy contracts with a feed nutritionist, who blends the ideal mixture.

Back at the building, Garrett walks me through a door and into the massive storage room that has pallets stacked high with plastic containers of milk. An analog thermometer on the wall reads 35 degrees. I’m wearing a T-shirt. Impervious to the cold, Garrett explains the finer points of the

HERD MENTALITY FUN FACTS ABOUT DAKIN COWS

n The herd consists of ~1,200 Holstein cows. n No Bessies or Millies in this herd—there are too many to name. n Most of the cows prefer to stay inside the barn. Garrett Dakin says their body temperature is 101.3 to 101.5 degrees, and “they start to get hot when it’s 65 degrees.” n At the time of my visit in mid-March, each cow was producing an average of 61 pounds of milk a day, or 7.1 gallons.

The cows’ production ranges from 60 to 80 pounds a day, depending on the season. n The cows get milked for roughly 300 days and then “dry off” for about 65 days. n The cows are artificially inseminated while in heat — which is once every 21 days — and usually have one calf per 14 months. n The gestation period for a cow is a little more than nine months. They start calving at around 28 months and then start milking. n Calves are separated from mothers within a day or two. They spend their first 12 weeks in a separate facility and are fed a gallon-and-ahalf of milk a day. After that, they’re integrated into the herds, starting with small groups of 25, then slowly building up to groups of 250. n The male calves are sold and end up in feed lots throughout the country, then put into what the Dakin brothers euphemistically call “the protein market.”

THE BUSINESS

Dakin Dairy Farms has no CEO. Each of the brothers is listed in company documents as “Manager.” With no top boss and no voting majority, the corporate structure seems like a recipe for conflict. “It makes for a lot of meetings,” Ethan says with a hearty laugh.

“But we manage to work it out pretty well.” When it comes to making decisions, the older brothers don’t push around the younger ones. “If it’s your idea, you own it,” Ethan explains. “If we agree on it, it’s your job to follow through.” He then adds with a laugh, “So sometimes you think twice before puttin’ up an idea.”

One reason the siblings work to-

gether well is because each one concentrates on a different facet of the operation, while having expertise in the overall business. Garrett is in charge of crop management. Jason takes care of the herd. Ethan oversees the milk plant. Grant handles the finances and is the primary mechanic.

Dakin Dairy produces roughly 8,000 gallons a day, Garrett says, and sells to a variety of retail outlets, mostly within the region. As of early April, its milk was in 29 Publix stores, Detwiler’s Farm Markets, Sarasota Memorial Hospital, some farmers market vendors and a handful of other places.

“We have a good story to tell about our cows being grass-fed,” Chappell adds.

“There is a taste difference. Whatever the cow eats is going to represent the flavor of the milk. We differentiate ourselves by being better quality and price accordingly.”

The Dakin Brothers have expansion plans: more cows, more milk production, more efficient systems, more sales, better profits. But not more land.

The eastward creep of residential development in Manatee County makes land nearly impossible for a farmer to acquire. Garrett explains that during certain seasons his farm must lease land to grow extra crops for feed. As more agricultural businesses sell their properties to developers, the available land to lease will shrink and likely vanish. “I expect we’ll be out of business in 15 to 20 years,” Garrett says, sitting on a bench in the playground.

He utters this prediction without rue or a hint of bitterness. That’s

here’s an undeniable thrill to touring the home of a prominent local builder. After all, he knows how to get the best of everything. The premium location. The perfect floorplan. The crucial bells and whistles.

Take the home of Derek and Kelly Nelson in The Lake Club. Derek was, until recently, owner and president of the local division of Arthur Rutenberg, a company famous for decades for its sophisticated designs and quality products. The Nelson home was built in 2019 and contains all the lessons Derek has learned during his 36-year career.

“Location is critical,” Derek says.

But there’s a twist. Directly across the street is a mini-preserve, offering a rare, two-sided connection to nature that enhances the home’s tranquil setting.

Size is also an important factor. “You will find when you move to Florida you will have more frequent guests,” Derek states, a fact he knows first-hand, for Kelly has nine siblings. “A larger home is always better.” The Nelson home comes in at 5,292 square feet. Another tip: “You can never have too much garage space. After all, in Florida you won’t have a basement for storage.”

The Nelson home is a custom design. The couple worked with the Arthur Rutenberg corporate architect to come up with a unique plan for their family and lifestyle that includes four Continued on Page 102

The result is a simple, modern look, with neutral colors, beiges and cremes, which are contrasted with blue accents — complementing the blue of the lake visible through the windows, along with strategic doses of wood to warm the atmosphere.

The most unusual of the interior spaces is the unique club room. Designed as a deluxe mancave, it features a full-scale bar and several mounted TV’s. “This is where I display some of my favorite sports memorabilia,” Derek says, “along with some signed baseballs from players I have built homes for.” There’s even a coffee table shaped like a football and another table perfect for snacking — or a poker game.

Young people explore multiple facets of theater arts at Asolo Rep’s summer camps. Whether crafting their own stories or embarking on characterdriven quests, kids and teens delve into acting, design, storytelling and — most importantly — imaginative play.

The high school curriculum includes Costume Workshops and Musical Theater sessions at the FSU Center for Performing Arts. Both are taught by theatrical professionals. Asolo Rep sessions for younger campers unfold at the Out-of-Door Summer Academy.

sunami Sushi & Hibachi Grill is the brainchild of three coowners — Jeffrey Karasawa, Jason Klamson and Sam Ray. The original downtown Sarasota location has been a local favorite since 2016, known for its fresh flavors and creative flair. Now, with their second act in Lakewood Ranch, the team is making waves all over again. Karasawa and Klamson recently spoke to us about the new location. Their answers below reflect a shared vision.

The inspiration for expanding Tsunami Sushi from downtown Sarasota to Lakewood Ranch came from …

… our loyal customers. Our guests kept encouraging us to expand. Some even helped us find the perfect spot in Lakewood Ranch — so the expansion felt like a natural next step. And it’s really worked out for us.

… the Ruby Tower, which is part of our extensive vegan menu. It’s our take on the ahi tuna tower, featuring sushi rice, avocado, tempura sweet potato and a sweet brown sauce. We created it to ensure that vegans have more options beyond salad.
