q•u•i•n•o•a (KEEN-wah) Quinoa is a “pseudocereal,” which are broadleaf plants whose seeds can be ground into flour or used as cereals. (Other examples include amaranth and buckwheat.) Quinoa is a complete protein source that contains all the essential amino acids needed by the body and is 12% to 18% protein. It is also a great source of fiber, magnesium and iron and is gluten-free, which makes it easier to digest and a good option for people with celiac disease.

The grain-like crop originated 6,000 years ago in the Andean region of South America, where the Incas hailed it as the “mother grain.”

It grows in well-drained soils and requires a relatively long growing season.

Today, quinoa is used in a variety of ways, from breakfast cereals to flours to

side dishes and as a base for main courses. It can be substituted for rice in any dish.

Preparing the grain

The first step in cooking quinoa is to rinse it to remove the saponins, which is a coating on the grain that can give it a bitter taste.

To cook, combine one part quinoa with two parts water (one cup of grain will take about 15 minutes to cook.)

Bring the water to a boil, then add the rinsed quinoa. Cover the pot and simmer on low. After the quinoa is done, remove it from the heat source for a couple of minutes, then fluff with a fork.

At a glance: Nutrition retention In terms of gaining the most nutrients from produce, it’s best to eat just-picked produce from either your own garden or a farmers market, because once produce is picked, it starts losing nutrients immediately. Most produce at the grocery store has been picked before it is ripe, so it doesn’t contain the peak amount of nutrients. When vegetables are not in season, it’s best to look for the frozen variety, which are flash-frozen vegetables picked at their peak nutrient times.

(Sometimes the canning process can cause vegetables to lose nutrients.)

In addition, certain cooking methods can cause vegetables to lose even more nutrients and vitamins.

At right is a look at which cooking methods can help preserve the most nutrients and how certain kinds of produce are affected. As a general rule, the less the cooking time the better, which includes steaming and stir-frying. And if you do use water to

boil vegetables, save it as a base for vegetable stock, because it contains some of the lost nutrients.

The most heat-sensitive nutrients are Vitamin C, the B vitamins and folate. Cooking in water reduces the antioxidant phytochemicals in such cruciferous vegetables as broccoli, cauliflower and kale.

But cooking shouldn’t get a completely bad rep. Lycopene, a phytochemical found in tomatoes, benefits from heat because cooking breaks the tomato’s plant cells open, which helps the body absorb it. And cooking carrots increases the antioxidant power of beta carotene and phenolic acid.

Place food in water only after it’s at a full boil. Cover pot to speed up cooking time.

Examples: Green beans lose 72% of Vitamin C when French cut and boiled versus 46% when cooked whole. Broccoli loses 25% of Vitamin C when boiled for two minutes versus 33% after 11 minutes.

Microwaving

Tip: This is a good way to preserve nutrients because it cooks fast and requires no water.

Examples: Cabbage and broccoli lose 10% to 20% of Vitamin C when microwaved versus 27% to 62% lost when boiled in a large amount of water. Spinach only loses minimal amounts of folate in the microwave in comparison to 23% when boiled.

Examples: Vegetables generally lose 50% less minerals during steaming than boiling. Carrots lose 17% to 30% of their vitamin C when steamed.

Baking/roasting

Tip: Higher temperatures and longer cooking times mean more vitamins are lost.

Example: Beef cooked at 450 degrees loses 53% of thiamin versus a 30% loss at 300 degrees.

Frying

Tip: Frying at high temperature destroys heat-sensitive vitamins.

Fitness gurus beckon movers and shakers Low-impact hula-hoop exercise classes are a popular way for the whole family to get fit while having fun.

Jodie Urias lets her body loose inside her hula-hoop. Shimmying the hoop up and down her body, the smile that stretches across her face is contagious. A former trapeze artist with the Barnum & Bailey Circus, Urias used to perform a 10-minute hoop act before shows. She became a licensed hoop instructor in 2008 and teaches several classes in Sarasota, alongside fellow instructor Sue Bacher.

“When I’m having a rip-my-hair-out day, I go outside, put on my favorite music and hula-hoop,” Urias said. “I become focused, get clarity and am full of ideas.”

Urias and Bacher became certified through two different styles of hooping — HoopGirl and Hoop Surround — but blend their techniques together during three classes: Intro to Hoop, Hoop Fitness and Creative Hoop Dance. The latter is a cross between hula hooping and belly dancing. One of the easiest ways to begin hooping is to put one foot in front of the other and shift your body weight back and forth, from foot to foot.

“Once you learn to hoop, you develop your own personality and creative side,” Bacher said.

Hooping burns 300 to 800 calories per hour. All hoops are custom-made, and adult hoops weigh between two and two-and-a-half pounds and contain friction tape, which allows the hoop to better stick to the body. Weighted hoops move slower and are more controllable, and as the hoop circles the waist, it gives a solid massage to the body.

The duo teaches at various places in Sarasota and offers classes at Vertical Fitness, in addition to private sessions and hooping on the beach. They recently introduced a “Mommy and Me” class that helps moms and children exercise

Disease prevention should be taken to heart Heart disease is the No. 1 killer in America of both women and men, surpassing HIV and cancer combined. Local doctors have taken great steps to ensure early detection has been pushed to the forefront.

Janella Leibovitz suffered a minimal heart attack at age 33.

Janella Leibovitz lay on the operating table at Sarasota Memorial Hospital’s Cardiac Catheterization Lab in a state of twilight. She drifted in and out of consciousness, watching while the doctors inserted a stent and catheter into her right coronary artery — 99% blocked with plaque. At one point during the evening, the 33-year-old suffered a heart attack.

“The day before, I was walking the Ringling Bridge with a friend,” she said.

“We had no phone and would have had to flag down a car, had anything happened.”

Two years ago, she began experiencing chest pains upon waking up in the morning and severe indigestion every time she walked the bridge. Leibovitz used WebMD to diagnose herself, thinking she just had high stress and anxiety.

The results insisted she visit the hospital immediately.

Chippy Nalluri, a cardiologist with the Heart Specialists of Sarasota.

“When she told me she was having chest pains, I said, ‘Janella, you’re only 33 years old,’” Nalluri said. “After I heard her story, I thought the symptoms were ischemic heart disease.”

The disease prevents the heart muscle from getting the proper blood supply. Nalluri wanted to perform a thallium stress test, a type of nuclear scanning that is usually conducted along with an exercise stress test to show how well oxygenated blood flows to the heart muscle. But Leibovitz’s insurance company rejected the test.

“The company said there’s no way at such a young age that she could have coronary artery disease,” Nalluri said. “We did the treadmill stress test without imaging and she had the same discomfort. I made a gut decision, even though my colleagues thought I was crazy.”

February 2010 disaster after disaster coming through the door — I sat there for six hours with my dad,” Leibovitz said. “I remember being treated like a celebrity in the cardiac room because I was so young.

I kept looking up at the nurse, saying, ‘There’s nothing wrong with me.’”

Leibovitz recalls Dr. Kapildeo Lotun looking into her left arteries and commenting that everything was looking great. But she watched 45 minutes go by and knew something was wrong. The right arteries revealed blockage, so Lotun called for a stent.

“My dad had his first heart attack at 39 and has had five stents,” Leibovitz said. “I know my dad cried the whole time in the hallway, and my mom kept call- Nalluri ing my dad, screaming, ‘You can’t cry in front of her!’”

When doctors measured the levels of cardiac enzymes in her blood the following morning, the test revealed that she had suffered a minimal heart attack.

The enzymes leak slowly into the blood, so high levels may not appear until six or more hours after the attack. Her stay at the hospital was extended for five days because her chest pains wouldn’t subside.

“Putting something inside your heart or in your arteries is traumatic,” she said. “I was lucky to have a woman doctor, and I think that made the difference

for me. Dr. Nalluri saved my life. She was willing to be humiliated if she was wrong.”

Early detection

Cardiovascular disease is the leading cause of death in the United States for both men and women and exceeds cancer and HIV combined — one in three Americans has some form of cardiovascular disease.

“Women’s symptoms for heart disease are different than men’s,” Nalluri said.

“Symptoms such as indigestion, insomnia and an exorbitant amount of fatigue could be manifesting the heart disease but aren’t recognized by physicians.”

Men usually have midsternal, chest-pain pressure, discomfort that radiates to the jaw and shoulders, and they break out in a cold sweat.

The Institute for Advanced Medicine, the Cardiac Disease Assessment Center, located at 5880 Rand Blvd., offers the latest testing available to detect early markers of cardiovascular disease with the goal of prevention.

Modeled after the Cohn Prevention Center, in Minnesota, the center provides heart, lung and circulation tests, non invasive diagnostic screening techniques and a detailed medical intervention plan to slow progression of the disease.

Common cardiovascular diseases The four most common types of cardiovascular disease are coronary heart disease (heart attacks), heart failure, stroke and high blood pressure. > Heart attacks often occur when the blood flow to a part of the heart is blocked, usually by a blood clot. If the clot cuts off blood flow completely, the part of the heart muscle supplied by that artery begins to die. > Heart failure means the heart isn’t pumping enough blood and oxygen to the heart. Swollen feet, ankles or legs and fatigue due to fluid buildup in the lungs can be signs of heart failure.

“More than 1,200 people took advantage of the program, and the majority were not on any medication and feeling fine,” said Dr. Mahfouz El Shahawy.

“Fifty-seven percent of the females and 70% of the males were intermediate-tohigh risk.”

In general, medical technology has reduced the risk of cardiac deaths but has not translated to all age groups and genders. With every one death from breast cancer, 10 women will die from heart disease. Two-thirds of women never experience any symptoms.

“We’ve seen a 20% increase in women ages 35 to 44,” Nalluri said.

accuracy over traditional nuclear imaging technology; three-dimensional echocardiograms to better evaluate intra-cardiac structures and heart muscle function; and CT coronary angiography, an alternative to traditional, invasive cardiac catheterization that takes images of blood vessels to determine the presence, percentage and makeup of plaque have been developed.

“It’s important to find it very early and diagnose,” El Shahawy said. “We recommend screening in the 20s, unless somebody has a strong family history of heart disease — then we can start (screening) earlier. One ounce of prevention is better than one pound of cure.”

Personal trainer Patti-Linn Stanley definitely falls into the “actions speak louder than words” camp. Displayed on a wipe board at the front of the room is the night’s mantra: “Words, words, words, shut up and start moving.” And Stanley’s T-shirt, a quote from one of the trainers on the television show “The Biggest Loser,” Jillian Michaels, says it all: “Unless you faint, puke or die, keep walking!”

Stanley and her group of 20 contestants in “The Biggest Loser” Sarasota Challenge are in week two of the contest. So far, some contestants have lost as much as 10 pounds thanks to changes in their diet, hard work and up to four or five workouts a week with Stanley.

Last October, Stanley led a women’s holiday weight-loss challenge, during which six women each lost between eight and 15 pounds from Halloween to New Year’s. After seeing such great results, she decided to offer Sarasota’s version of “The Biggest Loser” beginning in January, complete with before-and-after photos, goal setting, group workouts with Stanley and a show staple — weekly weigh-ins. Stanley emphasizes that diet is key to weight loss and advocates that contestants eat fewer processed foods and follow a diet plan made up of 50% protein, 30% carbohydrates and 20% fat. Members do count calories, and each participant is given a “Biggest Loser” family cookbook and “Biggest Loser” calorie counter book.

Stanley said realistically people looking to lose weight should expect to lose between one and two pounds a week. But in the first couple of weeks, group members have already exceeded those expectations — “Biggest Loser” style — with some dropping six, eight and 10 pounds.

Personal trainer Patti-Linn Stanley will be hosting a second “The Biggest Loser” Sarasota Challenge beginning at the end of April and running through July 19.

Participants are required to attend at least one group workout a week but can attend as many as they would like. Cost is $350. For more information, contact Stanley at 993-9007.

“It’s really rewarding to me,” Stanley said. “You see them go through a whole process in the first two weeks. I tell them you have to be happy where you are now to get to where you want to be.”

Stanley said another positive outcome of the challenge is that she sees participants working out together outside of the group workouts; one group walks the Ringling Bridge together.

Tonya Laughlin said her goal is to get in shape and lose some weight. She said she and other members go dancing together outside of class.

“It’s so amazing,” Laughlin said of the challenge. “We push each other; it’s good to do it as a team.”

At the end of 12 weeks in April, each man and woman with the highest percent of body fat lost will be named Sarasota’s Biggest Loser and receive a prize package valued at more than $500.

But, ultimately, Stanley says the best prize is that each person will eventually reach the end of his or her weight loss journey and gets the benefit of working together as a team to succeed.
