We raided the workplace food stashes of three Sarasota residents and asked them to divulge their guiltiest food pleasures, favorite snacks and diet regimen. Then, we consulted with Rachel Chambers, a registered dietician and nutritionist from Venice Regional Medical Center, for easy tips that can provide more energy and lead to a healthy, satisfying diet. — Loren Mayo

Chambers’ recommendations: π Failure to plan ahead can lead to

fast food. Make your grocery list on your day off and do some of the prep work.

For dining on the go, get a copy of the nutritional information and make choices from that list. π “Consider seafood to get healthy omega acids in and eat salmon twice a week. We should keep reminding ourselves how important a balanced meal with fruits and vegetables is to get fiber and antioxidants.” π “I like that she’s having 

hummus and pita — hopefully the pita is whole wheat or whole grain. My philosophy is ‘two to tango’ when it comes to snacks. We should consume at least two food groups at a time. Protein and fiber make us feel satisfied and will help carry us over to the next meal.” π Garlic powder can be a great substitute for salt. Try CrunchMaster crackers in the deli section of Publix. They are lowsodium, but the garlic powder gives it a salty taste. π “My suggestions for a mobile office are to keep it stocked with protein. A handful of almonds or Chobani Greek yogurt are great choices. Something with peanut butter is always good, whether on whole grain or eaten with a banana.”

should be whole grain. As toppings, try almond butter or fresh-ground peanut butter. Luna bars and Lara bars are great, or anything with four grams of protein. π “As far as some of the lattes, try to make a choice like skim milk. Cinnamon goes a long way with adding flavor without calories.” π For kids, try a variety of veggies in all different types and shapes.

Try serving exotic fruits, such as star fruit and kiwi, Kashi bars or Quaker oatmeal squares.

Chambers’ recommendations: π “The No. 1 reason we choose food is

taste. That being said, we can get used to and adapt to healthier choices, then improve.” π Starting with fruit may not be satisfying enough for the daily 1,800-calorie intake.

Without eggs, yogurt or cheese to anchor the fruit, which is a simple sugar and could only be 100 calories, hunger may come faster.

Portion control with protein and fiber will keep metabolism high and make overeating at meal time less frequent. π “For ribs, the sauce could be put on the side, but choose something lean to go with it. I tend to sauté red onions with barbecue sauce.” π “Incorporate more activity into daily life — park farther away, take the stairs, make yourself less efficient and move around more.” π Diet Coke is OK as a treat, but, as a mainstay, it can be improved upon, especially if going after it for the caffeine. π “Good choice on the V8 juice.”

Rachel Chambers, 37, is a registered dietician with Venice Regional Medical Center. She is a semi-vegetarian and incorporates lots of seafood, vegetables and whole grains in her diet. Her guilty pleasure is Publix Moose Tracks low-fat frozen yogurt, but she makes sure to add sliced bananas on top. Chambers, a tri-athlete, just competed in Ironman Florida. “Working full-time and training full-time, I have to fuel myself well so that I can thrive and excel in my sports and my job,” Chambers said. “When you’re doing what you love, it certainly helps.”

Healing-arts studio fosters creative connections The Healing Arts Open Art Studio at the Sarasota Memorial Institute for Advanced Medicine promotes self-expression, stress reduction and provides participants with a creative distraction.

When Sharon Pratt sat down to paint her first canvas, she didn’t know how to begin. She had no inspiration. But she picked up the brush, and after she made her final stroke, a clear image emerged — it looked just like a firecracker.

The painting now adorns Pratt’s kitchen cabinets, and, for the last three years, she’s also conjured up pictures of palm trees, sailboats and flower blossoms.

Up until three years ago, when Pratt started attending the Monday art studio class at Sarasota Memorial Hospital’s Institute for Advanced Medicine, she had carried with her a lifelong burden of lacking any artistic ability, along with respiratory problems.

“I discovered that when I paint, I don’t think so much about how I feel and that I really love it,” Pratt said. “I come because I feel good and know that I can accomplish something. Art calms my health issues and makes me forget about my problems.”

counselor with Sarasota Memorial Health Care System’s Cancer Care program, allows participants and their loved ones to express a multitude of feelings, often associated with illness, that are difficult to verbalize.

“In this group, we have people with neurological, breathing and health

issues,” Bornstein said. “The studio helps people to tap into their creativity, and the thought is that using creativity helps promote relaxation and is a soothing and a healthy distraction.”

The studio uses an inter-modal approach, wherein the focus is not solely on visual arts, but also writing.

“When I first got Parkinson’s, I had been doing realistic pieces,” said Irv Knowlen. “I thought I needed to get creative, so I’ve been doing touch drawings the past two years. I enjoy the interplay with accidents that happen, and let the accidents that look good stay.”

Knowlen and his classmates use creativity to identify ways of coping with the challenges they face.

“When Irv (Knowlen) said, ‘Creating is like breathing,’ it helped reinforce what he was trying to say verbally,” Bornstein said. “The studio doesn’t make challenges easier — but it’s easier to cope.”

Lee Escalera sits down at the Dakim BrainFitness System approximately once a week at the Senior Friendship Center’s Sarasota campus. Sometimes, the machine, which is designed to prevent Alzheimer’s disease and other forms of dementia, asks her to unscramble words.

In other cases, it asks her to match words or phrases that she might not use in day-to-day conversations, such as “telephone receiver” to its image. She has used the machine four times since the Senior Friendship Center got it in early October and has noticed improvements in areas such as word retrieval.

“I’ve introduced a lot of people (to the machine),” Escalera said. “You really form connections. It helps you remember details.”

From Oct. 26 through Nov. 2, the Senior Friendship Center made 84 appointments for seniors to use the machine in 20-minute intervals. Some people drop by the campus just to use the Dakim system, which operates with a touch-screen so that people who aren’t familiar with computers can use it.

“People seem to really enjoy it,” said Peg Palmer, director of communica-

one with Alzheimer’s disease or dementia might not benefit from such activities. But for individuals coping with the normal effects of aging, mental challenges are key to maintaining and even improving cognitive function.

“There’s a lot of push nowadays to help people stay as mentally active as possible,” Luis said.

The opportunities to stay mentally active abound locally. The Senior Friendship Centers offer numerous classes each week, including foreign-language classes, which can improve brain function because they require people to learn new things.

Organizations such as the Longboat Key Education Center, Sarasota Institute of Lifetime Learning and Pierian Spring Academy offer lectures and seminars primarily to seniors. At the Roskamp Center, a BRAINS (Building Remembering Abilities in Normal Seniors) class, which will provide education along with activities, is under development. Plus, activities such as reading, crossword puzzles and bridge can be beneficial for cognitive function.

According to Luis, brain function begins to decline around age 30. By the time a person reaches their 50s or 60s, he or she might have trouble remembering names or have trouble with word retrieval in an “It’s-on-the-tip-of-my-tongue” type of way.

Occasional lapses in memory are normal, although people often worry that they’re related to Alzheimer’s; the worry can make the problem worse.

So when should people be concerned?

Also, forgetting things in a short period of time can be a sign of dementia or Alzheimer’s.

Luis recommends that people coping with normal aging acknowledge the changes that occur in the brain so that they can compensate. One way to do so is to develop mnemonic strategies to create associa-

tions. For example, if you meet a person named Ray, instantly associate that person with a ray of sunshine. Also, multitasking becomes increasingly difficult with age, so focusing on a single task can be helpful.

For people with Alzheimer’s disease, medical treatment is important. But these patients can adopt strategies to slow memory loss. For example, a person who has verbal memory problems can sometimes compensate with pictures by putting photos of each contact on a telephone speed dial.

By the middle stages of memory loss, people often stop seeking stimulation.

“The trick is to find that optimal balance where you’re keeping them as stimulated as possible without frustrating them,” Luis said.

Pictures from the past can help trigger memories from people in the mid stages of memory loss whose long-term memories are generally stronger than their short-term memories.

Plymouth Harbor Smith Care Center resident Doris Stelzer was hoping to provide stimulation for her fellow residents when she came up with the concept of the Chart Room Dining Room, which features travel posters from the past. The dining room was a quiet place before the new design was unveiled in October. The posters are meant to stimulate conversation — and memories — for diners.

“Now people are saying, ‘I was there. I remember that,’” Stelzer said.

If you can swing a racket, you can play cardio tennis.

The high-energy sport, launched in September 2005 at the U.S. Open, brings tennis to a whole new level using repetition, calorie-burning drills and continuous movement, and is quickly gaining popularity at local Sarasota clubs.

Samantha Ardenfriend — president of Cardio Tennis Unlimited and one of 24 nationwide trainers on the National Cardio Tennis speakers team — has been instrumental in starting cardio tennis programs at Serendipity Racquet Club and Bird Key Yacht Club. Her sessions follow the format of traditional fitness classes: brief warm-ups that allow the body to perform cardiovascular-intense activities at high intervals; concentrated workouts; and cool-downs to flush out toxins created from exercising. Ardenfriend, director of tennis at Serendipity, instructs sessions several times per week at Serendipity Racquet Club, Bath and Racquet Club and The Sarasota-Manatee Jewish Federation campus.

“Even if you’re new to cardio tennis, you can learn to play from hitting lots of repetitions,” Ardenfriend said. “The more you use your feet, the better you get.”

Most players are attracted to the sport simply because of the fun factor. Ardenfriend’s sessions lead players through energy-pumping drills and games and allow for social interaction — arguably more fun than running on a treadmill.

Women typically burn an average of 300 to 500 calories per hour when playing cardio tennis, while men may burn 500 to 1,000 calories per hour.

“It doesn’t matter if you’re good or not,” said Ardenfriend. “You always get another chance. It’s all about moving around and hitting the ball.

At Bird Key Yacht Club, members are boosting their heart rates under the instruction of Mirage Maraj, of the Professional Tennis Registry. This tennis pro coaches “clinic cardio,” helping players improve their game by offering motivating pointers. His combination of cardio exercises and drills keeps members energized.

“There are different levels of players on the court, so I feed the ball according to age and ability,” Maraj said.

The BKYC cardio tennis program started about three years ago, when a member brought Ardenfriend to lunch as her guest.

“It’s great exercise and a fun way of improving your own conditioning and tennis skills,” said Charlene Kochanowski, BKYC cardio tennis coordinator. “Mirage has some very interesting personalities on either side of the net, so when you put all of that on the court, it really makes it fun.”
