Behind the curtain, in the backstage area, one voice cuts through the commotion.

“Ladies and gentlemen,” it booms. “Prepare to be amazed!”

The voice — a commanding, articulate presence — belongs to Bailey Sloan, the show’s 18-year-old ringmistress.

She’s running her lines with Director Pedro Reis, making sure every word of the script is ready for opening night.

It’s an important job. As ringmistress, Sloan is the face and voice of the show.

circus performer and Sailor Circus graduate says it wasn’t a role she ever imagined for herself.

A NATURAL FIT

Sloan’s family circus history is on her father’s side. When she was in fifth grade, he suggested she try Sailor Circus, like he had when he was her age.

She says it was love at first tightrope. In her year eight years in the program, she explored just about everything it had to offer.

She walked the wire, flew trapeze, performed Spanish web — anything she could get her hands on.

But it wasn’t until an unexpected injury that she found her niche. After suffering a herniated disc her senior year of high school, she reluctantly opted to sit out of the more physically demanding activities and focus solely on ringmaster duties while she recuperated.

She was a natural.

“It was so much fun,” she says.

“I loved all the different costumes and introducing the acts. I had such a great time. Taking a step back, I got to focus on just being ringmaster and give it 100% of my attention. I realized that dedicating yourself to one thing and perfecting it can make you stand out just as much as doing 20 different things.”

Where most people break out in a cold sweat at the mere thought of public speaking, Sloan says the role is the perfect fit for her personality. Growing up, she was a talkative kid, always jockeying for her place in the spotlight.

She laughs thinking back on it.

“I guess the only way to shut me up was to give me a microphone and a script and put me onstage.”

Sloan is sitting at the kitchen table in the theater’s upstairs break room, looking over her script, which is filled with handwritten notes in the margins.

One of the biggest misconceptions about the job, she says, is the training involved. Like any performing art, when it’s done well, it looks easy.

“It’s not just going onstage and talking,” she says. “There’s a lot of training and hard work that goes into this. It might not be the same as it was rehearsing for trapeze, but I put in just as much effort.”

Being an effective ringmaster is about more than just memorizing lines. Equally important to capturing an audience’s attention are dialect, pacing and bringing the script to life with a personal touch. The audience needs to trust her — and connect with her.

“You need to know your environment,” says Sloan. “Under the big top, my challenge is to be this tiny person with a big personality.

You need that to draw in a crowd that big. Here, we’re in an intimate, 300-person theater. I use a more conversational tone; I slow the pace down. But I still need to have the commanding presence of a ringmaster.”

To perfect the script, Sloan works in collaboration with Reis.

Together, they develop the performer bios and circus history before what Sloan says is the most important part: adding her own flare.

“Just like singers, every ringmaster has their own thing that makes them special,” she says.

“My approach is to be confident and well-spoken, but also approachable and friendly. People say they become a character when

Sloan gives an enthusiastic “yes,” grabs her script and heads back to the stage. Even without a microphone, her voice fills the theater.

Many have pondered the possibility of improving upon perfection.

And if ever there were a perfect food, the hamburger would be at the top of the list.

So what could possibly improve the American staple? Removing some of the health-related guilt and making the food more sustainable are a good start.

That’s the thought process behind the James Beard Foundation’s Blended Burger Project, which challenges restaurants across the country to develop a burger whose patty is a blend of ground meat and at least 25 percent chopped mushrooms.

The competition, which runs through July 31, is open to restaurants across the country, but Michael’s On East marks the only Sarasota restaurant to compete.

The winner will be chosen based on the amount of online votes.

Executive Chef Jamil Pineda, the man behind the restaurant’s entry, says the challenge was right up his alley.

“We like to have fun here,” he says. “This was a great opportunity to experiment with some fun ingredients and do something a little different. As a chef, I like a challenge. I like seeing what the other restaurants are doing, and I especially like to see the customers’ reactions.”

His creation? The hefty, aptly named Mighty Mushroom Burger.

For Pineda, the name of the game was surprise. Instead of beef, he opted for a bison patty, blended with chorizo sausage and beech mushrooms. The patty is then porcini rubbed and topped with pan-roasted trumpet mushrooms, Monterey pepper Jack cheese, tomato and sweet onion relish, baby romaine and Creole mayo and served on a brioche bun.

And in the event that you’re somehow still hungry after that, the meal also comes with a generous serving of truffle fries.

It’s a handful, to say the least.

“There’s a lot going on,” says Pineda with a laugh. “But all the flavors are well-balanced. You

have a little bit of everything.”

His concept, he says, all started with the patty. He chose bison for its lean meat, beech mushrooms for their exotic flavor profile and chorizo to balance the mushroom.

The mayo acts more like sauce, adding a little extra spice. The final touch, he says, is the bun.

A burger this big can be tough to tackle. The brioche bun is perfect for grabbing with two hands and squeezing everything down into a more manageable bite. Slightly.

When the competition ends, the burger might make its way onto the menu full-time, but for Pineda, he’s just happy for the chance to flex his creative culinary muscles.

“I want to give customers something unexpected,” he says.

“I want them to leave thinking ‘Wow; what a great experience.’”

FST’s newest production lives in harmony MARTY FUGATE CONTRIBUTOR

Mark St. Germain and John Markus’ “The Fabulous Lipitones” is now on stage at Florida Studio Theatre. It’s a celebration of barbershop’s all-American harmonies. What does “allAmerican” mean, exactly? Stick around, and you’ll find out.

Not to hand you any spoilers, but the story’s about a coffin and a contest. A death sets it all in motion: Andy, the glue behind a Midwestern barbershop quartet called the Fabulous Lipitones, has shuffled off this mortal coil and joined the choir invisible.

Now the three surviving singers have an Andy-shaped gap to fill. The victory they seek? They want to crush their rivals (the smug “Sons of Pitches”) at the upcoming barbershop quartet finals. But who can take Andy’s place? Bob, that’s who.

The Lipitones call him into their basement lair after his stellar phone audition. In the flesh, “Bob” turns out to be an illegal immigrant—a Sikh from the subcontinent who detects animal cruelty in “Bill Grogan’s Goat” and Oedipal implications in “I Want A Girl (Just Like The Girl That Married Dear Old Dad).”

The man’s a hit with two of the singers; Bob’s got Bollywood moves and he sure can sing. Phil, the group’s leader, surely can’t stand him—but he grudgingly bows to the majority and lets Bob join.

John Markus, the director and co-playwright, hands you this improbable set-up and says, “Hey, it could happen.”

Some comedy works best with a straight face—high-concept comedy, especially. Markus never oversells it, and keeps the sitcom situation plausible. Musical Director Steven Freeman believably weaves the old tunes in and out of the characters’ situation.

Isabel and Moriah Curley-Clay add to the authenticity with the charmingly seedy basement bar where the Lipitones practice.

The actors all nicely get into the skins of their characters and make you believe in them. Even when they’re occasionally nonbelievable …

Levin Valayil is a show-stopper as Bob. His Sikh character is a decent guy with a lot of talent who’s slow to anger when dealing with snubs and implied racism. D.C. Anderson is exceedingly funny as Howard — the

Joel Blum is a hoot in his own right as Wally, a sexually frustrated pharmacist. Scott Wakefield hits it out of the park as Phil, the hometown racist who balks at a brown-skinned crooner. Great performance of a character who doesn’t always work on the page. Blame that sour note on the playwrights.

(Spoiler alert.)

Phil is basically a thin Archie Bunker who can sing. He talks about Al-Qaeda and Homeland Security at the top of his voice — then rats Bob out to the Department of Immigration. It’s as subtle as an elbow to the ribs.

Far better if Phil had smiled in Bob’s face, muttered his insults behind his back—and then made the call. What we get, instead, is broad comedy. (It got laughs, to be fair.)

There’s an honest observation at the play’s heart: America’s all-white institutions are changing complexion. It’s possible to honor their history while accepting change. And move on.

The play never hits you over the head with this notion. But that’s the essence.

Mostly, this hardly serious play cracks jokes at the expense of four quirky, broadly drawn characters. It also celebrates the barber shop medium itself— tongue firmly planted in cheek.

The play mocks the style, while simultaneously savoring the nostalgic, chocolate sundae sweetness of it all. The audience gets to have it both ways.

creative as the cocktail itself, so don’t be afraid to step out of your comfort zone. This refreshing drink combines chipotle peppers and mangoes with the kick of tequila for a cocktail that proves that spicy is great for more than just bloody marys.

SPICED MANGO FALERNUM INGREDIENTS n 1 ½ oz. mango-chipotle infused tequila n 1 oz. golden falernum — a rum-based liqueur with flavors of ginger, lime, almond and clove n ½ oz. simple syrup n ½ oz. fresh lime juice

CHIPOTLE-MANGO TEQUILA INFUSION INGREDIENTS n 1 bottle of your favorite tequila, preferably silver n 2 to 3 ripe mangos, peeled and pitted n 1 chipotle pepper

INSTRUCTIONS In a shaker, combine all ingredients with ice and shake well.

Strain over fresh ice and garnish with lime wheel.

MOZART ‘Cosi’ at The Players explores a production of ‘Cosí fan tutte’ at a mental institution. It’s not as crazy as it sounds.

For a clear perspective on society, there’s nothing like an outsider’s point of view.

Australian playwright Louis Nowra knows this full well. His plays are full of outcasts, misfits, rejects and rebels on the outside looking in.

“Cosi,” the Players Centre for Performing Arts’ latest production, is no exception. It offers a fragmented kaleidoscope of viewpoints from the most celebrated misfits of all: the folks society labels insane and locks away.

The year is 1971. Lewis (Tanner Holman), a college dropout, talks his way into an art therapist position at a shabby asylum. They start rehearsing Mozart’s “Cosí fan tutte” — in English, because nobody speaks Italian. The theater smells like “burnt wood and mold.” The cast — a motley crew of pyromaniacs, obsessive compulsives and a recovering drug addict — surprisingly doesn’t stink.

ent backgrounds,” says director Dan Higgs. “Lewis starts to discover they’re not all that crazy — they just don’t fit in.”

He notes that Lewis doesn’t start out as a good director. “He’s all bluff,” says Higgs. “When someone asks, ‘What’s your concept?’ he replies, ‘I don’t have a concept; I’m a director!’ But Lewis winds up putting himself in the shoes of these wildly diverse individuals. He gets outside of himself, and the experience makes him a better director.”

Lewis learns dramaturgical lessons. The life lessons prove a bit more painful. Mozart’s opera revolved around a bet between two officers that they could trick their fiancées into being unfaithful. “Roughly translated, the title means ‘All women are like that’— which is another way of saying women are like men.”

Basically, the moral is: Don’t lead your lover into temptation.

Lewis has enough sense not to place bets on the virtue of his girlfriend Lucy (Anna Massey). She winds up sleeping with Lewis’ best friend Nick (Quoc Pham) — a charismatic anti-war radical — on her own initiative. Lewis finds out the hard way.

As Higgs puts it. “Lewis asks Lucy, ‘You’re not sleeping with Nick, are you?’ Her response is, ‘No. I’m having sex with him and sleeping with you.’ She tells him sex should just be sex — and forget love. Thousands are dying in the Vietnam War. Who can think about love in a time like this?

Lewis agrees with her in theory, but in his heart he feels betrayed.”

is on his side. The inmates aren’t, at first. He butts heads with three women: former addict Julie (Olivia Valek), obsessive Ruth (Jenny Walker) and volatile Cherry (Debbi White). The male patients give him headaches as well, including Henry (Tom Aposporos) the bottled-up, ex-criminal lawyer, firebug Doug (Parker Lawhorne) and the mostly medicated Zac (Joshua Seavey), the musical director. The production is really Roy’s baby.

While Roy (Don Walker) may be crazy, he knows a thing or two about theater. Ultimately, Roy pulls the group and Lewis into his obsession — and the meaning behind it. Mozart’s opera celebrates love between flawed human beings. The composer’s magic starts to work on Lewis.

Despite the protests back home and the body count overseas, he decides that love might not be a

thing of the past.

Holman says that, “My character grows. He’s very wary at first, and then goes beyond tolerance to affection and appreciation. It’s all about giving a second look to the people we initially write off and really seeing them as human beings.”

The reason for the change?

The encounter-group quality of a good rehearsal. Even outside mental institutions.

“This is really a play about rehearsal,” says Higgs. “Rehearsal demands emotional honesty and self-exposure. The process transforms you, and that’s what ‘Cosi’ is really all about.” He adds that a similar thing has been happening at The Players.

“I’m working with actors from widely different backgrounds, from longtime professionals to high-school kids,” he says. “I

know some of the actors very well, like Jenny and Don Walker and Tom Aposporos. Others are completely new to me, and we’re still getting to know each other. The whole process has been fascinating. Our experience really echoes the play — apart from the fact that we’re all certifiably sane.”

Higgs adds that rehearsal is going smoothly, and all of the actors are now “off-book.”

“I give most of the credit to the playwright,” says the director. “Nowra’s characters talk like real human beings. Good dialogue flows off your tongue. Actors pick it up quickly, because it’s the kind of thing they’d naturally say. Bad dialogue is terribly difficult to remember. Your mind rebels; your tongue rebels. But we’ve all picked it up very quickly. That tells me the playwright’s doing something right.”

Westcoast Black Theatre Troupe joins theaters across America in simultaneous performances of ‘The Colored Museum.’

West Coast Black Theatre Troupe will present a staged reading of George C. Wolfe’s “The Colored Museum” on June 20 — along with more than 40 African-American theater organizations across the country. Project1VOICE is the catalyst for these simultaneous readings and performances.

Every year since its 2011 founding, the project chooses a play from the canon of AfricanAmerican literature. Black theater companies and acting conservatories then perform that play at the same day and time.

Nate Jacobs, WBTT’s founder and director, thinks it’s the perfect endeavor for WBTT, and he especially likes this year’s selection.

“George C. Wolfe is a treasure of contemporary American theater,” he says. “This particular work explores the facets of the AfricanAmerican experience that WBTT deals with throughout the year.

Knowing our reading will be part of a shared national experience just takes it to another level.”

Actor Ariel Blue agrees. “This is exciting for me because I’ve never had the chance to do this piece,” she says. “I’ve read it two times, and I think it’s a dope piece of literature. It has something for everyone, and the comedic pieces particularly resonate with me.

the 30th anniversary of “The Colored Museum.” If sparks are in the air, it’s thanks to the playwright and his high-voltage 1986 play.

“The Colored Museum” is a black comedy that’s occasionally black comedy. It unfolds in a series of 11 “exhibits” about the African-American experience. A chirpy flight attendant welcomes African passengers destined for slavery. (Not to worry, she says.

Their descendents might become rich playing basketball.) An African-American businessman fills a garbage can with his teenage artifacts — including vintage Sly and the Family Stone records. A straight-haired wig and an afro wig get into an argument over what it means to be black and beautiful. One sketch even takes aim at Lorraine Hansberry’s beloved “A Raisin in the Sun.” Is nothing sacred? No. This is satire with the gloves off — and Wolfe doesn’t pull his punches.

“Authenticity is the heart of the play,” says director Bryce. “In African-American terms, Wolfe is signifying — he’s looking at the gap between who you say you are, who other people say you are and who you really are. Thanks to that experience, we can laugh at ourselves, cry at ourselves and hopefully better ourselves. Getting in touch with your true self is how you do that, and that’s really Wolfe’s intention.”

Bryce adds that Wolfe’s work is all about storytelling, which makes it ideal for a staged reading.

“The actors will perform a series of monologues in the voices of different characters,” he says. “It’s a theater of the mind, very much like old-time radio. Pay attention and put your imagination to work.
