Delivering Milk Bottles to Your Door Once More

hat do sitting with a glass of fanciful eggnog to break the chill of a long winter’s night, pouring a heaping glass of chocolate milk over the holiday break for your children, or indulging in a tall glass of cold creamy farm-fresh milk to help with a plate of decorative holiday cookies all have in common? They are again being delivered in glass bottles to your door once a week, with no need to go out in a pinch to a crowded supermarket to pick a carton off a shelf that sports an annoying expiration date. That’s the promise the Bellmore Milk Company has been delivering to some 100 customers in the Bellmores and the Merricks since last February, when a former Kennedy student decided he wanted to have his milk delivered once again to his house and eat his cookies – and pies and cakes - too. So, he started a milk delivery company. “It began with wanting glass bottles of milk delivered to my home,” Todd Farber, a lifelong Bellmore resident who attended

Shore Road, Grand Avenue and Kennedy schools, told Your NewsMag. He said he posted to Facebook to gather general interest as to whether residents, both local and around Nassau County, might be interested. Buoyed by instantly favorable feedback, he next began researching local farms within the region that may be able to provide milk to match a plan to deliver it to homes. “I hoped to be able to use a close

farm upstate” that could provide the milk, he continued, and found it in the Battenkill Creamery in Salem, New York. Not a certified organic farm, Battenkill nonetheless produces milk products that are free from hormones and antibiotics using free-ranging cows that are fed mostly grass. In the winter months, of course, grains are the primary choices of feed. Farber suggests the milk may be as healthy as organic milk because, due to shelf life, even organic milk is “spiked” with a preservative to keep it fresh on the shelves for up to two weeks. But, he says, “farm-fresh milk that we deliver to homes is fresh within a day or two of it being pasteurized and homogenized, so it will stay fresh for up to 14 days in the refrigerator.” The taste of freshly produced milk out of a bottle is much different, too, he maintained. He says that using glass bottles, there will be no aftertaste from leaching that can occur from waxed cardboard containers or plastic containers, for example. “The milk is not

leaning against a material that can give off a residue,” he said. It also tastes creamier.

A ‘GREEN’ COMPANY

The smartness of using glass bottles – and the integrity they bring - becomes more evident when they are returned to the creamery to be cleaned and reused, significantly reducing or eliminating the process of adding them to ever-growing waste streams. Purchasing glass bottles that can be returned for reuse is a statement for the sustainability of the earth. The Bellmore Milk Company is a “green” company, and its customers are advocating for a “green” approach to living, Farber says. The challenge, however, is in the cost of ordering glass bottles to your home rather than purchasing milk in wax containers or plastic containers at a food store. Each half-gallon of milk is $4.17 while a whole gallon of organic milk can be purchased for as little as $4.99. But Farber insists the half-gallon cost is well worth the price because it remains fresh without hormones or preservatives, and the bottle is recyclable, [CONT. ON PAGE 9]

The Holiday Spirit Rejuvenates! The holiday season always brings me back to childhood days. Memories of family, friends and neighbors gathering to kick off the beginning of the season in the downtown village comes to mind as I see our neighbors come alive with excitement, and hundreds gather to see the menorahs and Christmas trees lit in Bellmore and Merrick. All in celebration with music, treats and the always popular visit from Santa. The holiday extravaganza in Bellmore brings you back in time by featuring old-fashioned horse-and -buggy and trolley rides. These events are hosted by the chamber of commerce, with volunteer business members working to bring joy to the community. The local chambers of commerce do so much for the community, including decorating the towns with decorative snowflakes on streetlight posts and garland across the boulevards to give a boost to everyone as they drive through the town to shop their favorite stores. The spirit of the holidays can indeed rejuvenate us each year. Enjoying the company of family and friends during a holiday meal is a tradition we all share. But it doesn’t matter whether we dine on turkey, ham, seafood or brisket with latkes … as long as we all save room for dessert! Carol Mueller, executive chef at RS Jones in Merrick tells us why dessert matters, and offers ideas on the kinds of desserts to serve and their benefits, while Robert Caravello, co-owner of Spiga Bakery in Bellmore, provides his take on popular holiday treats. North Bellmore American Legion Post 1746 Sells Building Joins with Bellmore VFW and Vietnam Vets to advance community causes

he North Bellmore American Legion Post 1746, which has called 1298 Newbridge Road in Bellmore its home since 1949, has sold the building and moved into the Bellmore Veterans of Foreign Wars Post 2770 facility at 2400 Bedford Avenue. The move comes as membership has dwindled, leaving the cost of maintaining the building too expensive to continue. Pat Yngstrom, commander of Post 1746 since 2010, told Your NewsMag that with 100 members paying dues of $40 a year, the state and the county took $36 of those dues, leaving the post with little left to work with to maintain the building and continue to provide charitable programs for the community. “Our membership was also being reduced,” he said. “It hurt to have to leave it,” Yngstrom said of the building. He said that when a need for change was put to the membership, “there were no protests,” inferring they all knew the building had become too costly to maintain. The roughly 3500 square-foot building was sold in September to Dr. Douglas Drobbin, chiropractor of Merrick practicing at 2154 Merrick Road, Merrick. While American Legion Post 1746 has had three meetings at the VFW Post 2770 hall thus far, “We still

keep our focus on and serve the community of North Bellmore with events and activities.” These include the Veterans Day ceremony at Newbridge Road School Veterans Memorial Park on November 11, at 11 a.m., and the Memorial Day parade, which starts at the Newbridge Road School memorial park and marches down Bellmore Avenue to the Bellmore War Veterans M emorial Park in Bellmore Village. Yngstrom got the blessing of officials of the VFW Post 2770, which, along with the Vietnam War Veterans Association, will combine at the beginning of 2018 under the current Bellmore Veterans Association banner. The Vietnam War Veterans Association

was also housed in the American Legion building in North Bellmore, and moved with Post 1746. “Many members overlap their memberships into other posts, anyway,” he said of the name change. Chris Peterkin, chairman of the board of the Bellmore Veterans Association – VFW Post 2770 is its home - and a Vietnam war veteran, said he was pleased the VFW Post 2770 could help out fellow veterans “in their time of need.” He said there was a new opportunity for the association, with more veterans’ organizations now on board, to develop a better sense of direction for veterans going forward, and how to serve them better.

Bob Kohler, commander of the Vietnam War Veterans Association, said of the move to the VFW facility that he is “very grateful for what they’ve done to help accommodate us.” He said his association, along with the North Bellmore American Legion, had become saddled with ever-increasing debt, and selling the building was the only way to resolve that debt. “It was the right decision to sell the property, and it was a well-thought out decision on the part of the VFW to allow us to join with them” under the banner of the Bellmore Veterans Association. “They recognized our situation and reached out to fellow veterans to offer a helping hand.” Both Yngstrom and Kohler look forward once again to doing what they say their association and legion were created to do. By stabilizing the costs of a facility, membership dollars will once again be utilized to provide contributions toward events in the community to help veterans, and to provide for deserving students in the community, as examples. The schedule at VFW Post 2770, 2400 Bedford Avenue, Bellmore, is as follows: The North Bellmore American Legion Post 1746 meets the first Friday of every month; the Veterans of Foreign Wars, Post 2770, meets the first Wednesday of the month; and the Vietnam War Veterans Association meets the last Tuesday of the month. Dr. Drobbin said briefly that he started his practice in North Bellmore on Maple Avenue, and is glad to be “back in the neighborhood.” D. FINLAY

He adds that, with a subscription to purchase milk from the company, discounts are applied to the costs. The company doesn’t offer gallons of milk because, he says, logistically they are too heavy. The Bellmore Milk Company receives its milk shipments from the creamery on Friday night, and he and his drivers (there are two) are out on the road by 3 a.m. to begin deliveries. Milk is creamy and so delicious!” Presently, the company offers half-gallons and quarts of milk, quarts of egg nog during season, quarts and pints of chocolate milk, milk with the old-fashioned cream at the top, 1% and 2% reduced fat milk and a new lineup of Greek yogurt made on Long Island called Nounos. Just Desserts – For the Holidays

'Life is uncertain so eat dessert first'

or some, a dream devoutly to be wished for a fine Holiday dinner – or any dinner - might be to taste all the desserts first and then, only if there is room or interest left, actually have dinner. Cakes, pies, cookies, puddings, cannolis, ruggalahs, trifles, muffins and several creative variations on them only make the temptation to fulfill the dream all the more compelling. Nonetheless, we will clearly enjoy our way through delicious holiday dinners, with perhaps a discernible anticipation from somewhere heavenly that a final reward awaits at the end, and with it the power to fully complete and cap off the holiday dinner experience.

A DIGESTIVE AID

Carole Mueller, executive chef at RS Jones in Merrick tells Your NewsMag that desserts actually help in the digestive process. “Desserts also provide a boost in energy after a satisfying dinner,” she says. They are also a wonderful way for diners to linger at the dinner table a little longer to keep the conversation and goodwill going into the night – adding coffee or tea and, perhaps, a cordial to the mix. Mueller suggests presenting a variety of desserts,

‘Rabbi Mickey’ Appointed New Rabbi of Temple Beth Am

abbi Michael Baum ("Rabbi Mickey") was appointed Director of Education at Temple Beth Am in July 2007 and Head Rabbi this year. A ceremony of his installation as Head Rabbi was held recently, in which over 200 people attended a super oneg to celebrate and congratulate him. Rabbi Baum has been involved in Jewish education since 1987. He attended Hofstra University and was ordained from Tiferet Yisrael Yeshivah in 2006. He started teaching at Temple Beth Am in 1995. Through the years, he has taught all grades (k-12), helped train

Bar/Bat Mitzvah students and has led P.A.C.T. (Parents And Children Together) workshops as well as teacher training sessions. Rabbi Mickey has taught adult education and adult Bar/Bat Mitzvah classes. He currently serves as the Immediate Past Chairman of LITE (Long Island Temple Educators). Rabbi Mickey is proud to be a member of the New York State Chaplains Task Force and to serve on the advisory board of Island Harvest. Prior to becoming director of education, he taught at Temple Emanu-El of East Meadow, where he also served as youth director and was also youth director at the Suburban Temple of Wantagh. At his installment ceremony, Rabbi Mickey said that “To say I am feeling a bit overcome with emotions at this moment is an understatement. While I knew this installation was coming, it is still quite a humbling experience. I am deeply honored and humbled to serve you as your rabbi. As your rabbi, I will be a guide and a teacher. I will continue to be an important and unique friend to all of you. “We are a family and I look forward to growing closer with each and every one of you as we make this truly a Beit Am – a house of the people."

Jennifer Vitiello McDermott 350-degree oven 1 cup ( 2 sticks) butter, softened 1/2 cup confectioner’s sugar 1/2 cup granulated sugar

• 1 tsp vanilla • 2 cups all-purpose flour • 1 cup finely chopped pecans Beat butter, both sugars and vanilla in large bowl with electric mixer on medium speed until light and fluffy. Gradually add flour and pecans, stirring until well blended. Ok to use hands now if easier for you. Shape into one-inch balls and place on parchment lined baking sheets. Bake approx. 15-20 minutes, until tops firm. Gently check underneath the cookie. It should be a little gold. Remove or will burn quickly. Cool 5 minutes and coat with confectioner sugar.

• 4 cups sifted 10x Beat until stiff peaks. No airbrush, I dusted the centers with pink luster dust. I use royal to do all the detail work but the cookies are first covered in a glaze. Don't have a recipe, just confectioners sigar (10x) mixed with water, clear Karo syrup and a little white food color for depth .

by Stacey Mittleberg One trifle bowl, two boxes of low-fat Entenmann’s marble cake, two boxes of jello chocolate instant pudding, two small lite cool whip, two Hershey symphony bars with toffee and almonds. Make the pudding according to directions, add two tbsp. of cool whip defrosted. In a ziploc crumble the two cakes. In another ziplock put in both candy bars and use a can to crush it. In bowl, layer cake, pudding, cool whip and crumbled candy bar, then

relayer rest of cake: layer of pudding, layer of cool whip, the candy bar ( you will have left overs of each so I put in cups) cover refrigerate overnight. It's a sure hit!!!! Enjoy.

BAKED APPLE ROSES

Adrienne Janowitz Ross • 4 apples, cored and halved (leave the skin on) • Juice from 1/2 lemon • 3 Tbsp fruit preserves ( I used apricot but you can use your favorite fruit) • 2 Tbsp water (plus more for apple soak) • 1 sheet of puff pastry • Cinnamon, to taste Preheat oven to 375 degrees. Put apple slices in microwave safe bowl. Fill bowl with water and juice from half a lemon. Use enough water to make sure apple slices are covered by water. Microwave for 3 minutes. This will soften the apple slices and make them more pliable for rolling up. Next, grab a sheet of puff pastry. Flour your board and roll out the puff pastry enough to make 6 strips at 3 inches wide. I scored and cut mine with a pizza wheel but you can use a knife. In a bowl mix your favorite fruit preserves with a couple tablespoons of water. Then spoon out the preserves in the center of the strip of puff pastry. Layer sliced apples to overlap the edge of the pastry strip, then fold the bottom of the pastry strip up. Roll dough to form a rose-shaped pastry. Bake until well browned, about 45 minutes. Dust with confectioner’s sugar before serving.

This Time, Keep Your New Year’s Fitness Resolutions! By BOBBIE ARNEL

he number one New Year’s resolution people make is to become healthier and lose weight. But chances are fairly clear that you’ve made this resolution in the past, and then broken it very shortly thereafter. Most people want to see a significant weight loss within a few months or hope to change eating habits within a few weeks. Unfortunately, weight loss can be more complicated than that, but here are some tips to help you reach your fitness goals. SET REALISTIC GOALS – Never make your goal unattainable, such as resolving to never eat your favorite food again. Instead, strive to avoid that fattening food more often than you do now. Set a reasonable time frame, for example, that within three months you will lose 10 pounds. Or plan to exercise for 30 minutes 2-3 days per week. GET SUPPORT - Tell your resolution to friends and family members who will be there to support your resolve to change yourself for the better, or improve your health. Even better, find a buddy that shares your New Year’s resolution and you can motivate each other.

EASE INTO EXERCISE – Take breaks or walks during your workday; leave your exercise clothes out each night to remind you to exercise in the morning; set an alarm on your cell phone to remind you to work out; make an appointment with a friend to exercise. ELIMINATE JUNK FOODS – Get rid of the unhealthy foods for which you have a weakness, such as your favorite cookie, ice cream or chips. Instead, replace these with fresh fruits, protein bars, Greek yogurt, healthy trail mix, portioned out almonds (about 15), etc. in your home and/or office. REWARD YOURSELF – This does not mean to give yourself fattening foods when you reach a goal. Celebrate your success by treating yourself to something you enjoy, such as a massage, a new piece of fitness clothing, or going to a movie with a friend. TRACK YOUR PROGRESS - Keep track of each small success. Short-term goals are easier to keep, and each small accomplishment will help you stay motivated. Instead of focusing on losing 30 pounds, focus on losing the first five. Keep a food journal to help you stay on track, and reward yourself for each five pounds lost.

DON’T BEAT YOURSELF UP - Obsessing over the occasional slip won’t help you achieve your goal. Do the best you can each day, and take one day at a time. If you have a bad day one day with your food choices, or you skip an exercise session, just start again the next day. Don’t tell yourself that you already blew it, so you might as well be bad the next day too. BE PERSISTENT AND PATIENT – It probably took you a long time to get into the unhealthy or overweight condition you now find yourself in, and therefore could take a while to undo. Stay focused on the end result, and allow a new activity or exercise to become a habit and part of your personality. Make it happen in the new year! Stay positive, and tell yourself you can do this! Take each day as it comes, and don’t be afraid to start again. Once you establish healthy habits, the rest will be that much easier. Make 2018 the year you achieve your fitness or weight loss goals! Calhoun Choral Director Celebrates 25 Years of Teaching

His music is the language of exaltation

anford Sardo, music director at Calhoun High School who has furthered the Calhoun Choral Program to gain a national reputation, was feted for his accomplishments at an after-concert celebration that included students, music boosters and alumni. Sardo was presented with gifts, banners, a huge cake, memories and, above all, love and thanks from every corner of the school community for his 25 years in building up an already first-class choral program to its current status, which includes traveling the country to compete in national and regional competitions. Nicole Hollings, principal of Calhoun High School, remarked to Your NewsMag that “As someone who came into the district around the same time as Mr. Sardo I can say that I am incredibly honored to work with this outstanding educator. For years I saw his awe-inspiring work while I was at Mepham and now to work with him at Calhoun - he is an inspiration. His students are better people for having worked with him. As someone who has sung in choirs my whole life I wish I had a director like him along the way. He is an amazing person and I am

blessed to know him.” Your NewMag met with several senior choral students for an impromptu discussion on the program and the impressions the self-effacing Sardo makes on them – which helps them plan their daily lives. Jack Appello, Calhoun Colts’ football captain and singer whose E-flat bass note has awakened judge’s ears at national competitions, repeated the choir’s mantra: “It’s not in the destination, but in the journey.” He explained that, to him, the music they rehearse forces them to focus on what has to be accomplished at the moment, “here and now,” to make the entire ensemble sound as perfectly as it can. “Sometimes you just feel it,” admitted Michaela Cassella. “You are put into a situation that is bigger than yourself” and you put yourself on the line every time to make it work for the group. Michaela spoke of the first time she heard now-alumnus pianist Noah Turner play “Pompeii,” a piece in which Sardo let him work on all of the piano voices in order to perfect it. “After I heard him play that, I wanted to be in the choir,”

Sardo enjoys his cake after 25 years of concert performances well done! she said. Turner, now studying music at SUNY Fredonia, said in an email that he was given so many new opportunities to expand his musical horizons under Sardo, including teaching and conducting his own arrangement, that “The time in the CCP truly prepared me for the rigors of my college music program and beyond.” Harley Glick said matter-of-factly she doesn’t

think she would be the person she is today if it weren’t for the choral program. “It was one of the happiest days of my life making the Calhoun Choral Program,” she continued, because Mr. Sardo “makes it a safe place for us all.” Sara Grossman said “It’s not a bad thing to be vulnerable and emotional , and Mr. Sardo allows you to be that way by listening to you and offering positive musical ways” to express that vulnerability and work with it. Lara Klein reiterated Sara’s point on vulnerability – and Glick’s notions of a safe place, saying fifth-period class can indeed be a safe place to come after a morning spent in math and science classes learning to develop reason and use intellect. “Being in Mr. Sardo’s class permits me to breathe again for a little while, it is a place to let go with my emotion and express it through the music. Mr. Sardo,” she said, “brings out the interior” into an exterior world – which helps resolve the challenges. “He holds us to high standards,” said James Caracciolo. “We’ve never been this good before,” he said of the current sound of the choir. “He expects the best from us, and he brings it out in us.” [CONT. Peri Hoffer-Hinden, a co-president with Gina Turner of the Calhoun Music Boosters, an all-volunteer based parent group, said they often sit with Sardo to discuss future events and how the group can raise funds for the program. “We support Mr. Sardo. He is a genuine, caring and passionate teacher” towards his students and clearly sets boundaries between his teaching and his students, said Hoffer-Hinden. Turner added that he shows tremendous enthusiasm toward his students while never displaying a judgmental side toward them at all. “He’s always attempting to lift them up,” whatever mood they may be in. Meanwhile, Audrey Conti-Levine, a co-president of the Calhoun Music Boosters from 200510, said "Sardo teaches more than music. He empowers his students with a sense of responsibility. His students learn that their actions affect the entire ensemble and that no one stands alone.” Yet, he teaches it all while “his passion is so openly presented to all his students, every day,” announced student Tim Fine.

CALHOUN ALMUNI ANNUAL MULTI-YEAR REUNION: Over $950 was raised at the Calhoun Alumni Association’s annual multi-year reunion at a local restaurant recently. The donations will be used for senior awards in May, in which two exemplary seniors will be awarded $500 dollars apiece

For Cami Arzt, Sardo’s discipline-while-being-openly expressive nonetheless makes sure all students in the choir focus squarely on the music before them: “To be early is to be on time, to be on time is to be late, and to be late is to be left behind." It is an environment, she believes, he has created for his students to follow and emulate. Elizabeth Herman, a junior among the seniors in the choral program, remarked that even when the group has placed lower at a local, regional or national competition, “It’s still as if we have won, because we are all on this amazing journey” of experiencing the moment while singing, which Sardo instills in them. Perhaps Amanda Geist, president of the Calhoun Choral Program, sums the choral experience with Sardo best. She said Sardo once told her music isn’t meant for the ears, but for the soul. “He gives me my favorite part of every single day,” she said. “He taught me how to love the challenges and love the work just as much as loving the results.” And it all begins – and ends – with the heart.
