By Rabbi Shimon Kramer A rabbi was asked what to feed a person quarantined due to COVID-19.

“Matzah¨ of course” the rabbi replied.

“Well¨ does it help?”

“That I can’t tell you¨” said the rabbi.

“But it slides easily under the door!”

(Of course, we must not make light of a serious situation; but incorporating some humor can help us retain our sanity in these trying times.)

The truth is that this is not the first Passover in history that Jews were quarantined. In fact, the night before the Exodus from Egypt, G-d instructed the Jews “Do not leave the entrance of you home until the morning. G-d will pass to strike Egypt… He will pass over the entrance and not allow the destroyer to enter your houses and strike you” Ex 13:22–23).

But how, indeed, can one celebrate the Festival of Freedom in quarantine?

It depends on how you define “freedom.”

ability to go where you wish, do what you wish, and act how you wish. Passover, however, teaches us that freedom is not a condition but a decision. Freedom means to realize that there’s a Supreme Being running the show¨ and no one else but Him—even a coronavirus—has the ability to decide your fate.

When we submit ourselves to G-d and say,¨ “I know that only You are in charge of my future. I am in your hands”—that is true freedom.

So this April 8 and 9, make sure to attend Passover seders and express your freedom. In the event that you or someone you know will celebrate in private, we are here to help. Seder-togo kits are available, including the food items needed for the seder plate, hand-baked shmurah matzah, wine, a kiddush cup, a Hebrew-English haggadah, and instructions. (All matzahs were baked a while back, and will be delivered with all the necessary precautions.)

While people are waiting in line to stock up on long-lasting food items, make sure you stock up on handmade

shmurah matzah, the one food item that is sure to last you all Passover! Indeed, the Zohar, the most fundamental work of Kabbalah¨ describes matzah as “food of faith and food of healing” Let us all remain positive. “Think good and it will be good!” Let us utilize this time as a teachable moment for ourselves and our families to strengthen our faith and trust in G-d, and let us also pray for the wellbeing of all those who are affected and for all of humanity.

May G-d protect each and every one of us, among all residents of Merrick, Bellmore and Long Island, and give us all a year of health, tranquility, and freedom!

CORONAVIRUS (COVID-19) …WHAT YOU NEED TO KNOW

Important information you should know about coronavirus, what you can do to reduce its impact, and how you can keep yourself and others safe.

• Now in effect, New York State on PAUSE: 100% of the workforce must stay home, excluding essential services.

• All non-essential gatherings of individuals of any size for any reason are temporarily banned.

• Department of Motor Vehicles offices are temporarily closed for in-office visits. Online transactions, including for license renewals, are still be available. License and permit expirations will be extended.

• New York City will pilot closing streets to vehicles and opening them to pedestrians as part of the city's plan to address the lack of adherence to social distancing protocols • 40,000 healthcare workers, including retirees and students, have signed up to volunteer to work as part of the state's surge healthcare force during the ongoing COVID-19 pandemic.

• The Army Corps of Engineers will begin construction on four temporary hospital sites in New York State in an effort to address imminent capacity issues - the Jacob K. Javits Convention Center, and locations at SUNY Stony Brook, SUNY Old Westbury and the Westchester Convention Center.

• FEMA will erect four additional federal hospital facilities within the Javits Center. Each of the four federal hospitals will have 250 beds and come fully equipped and fully staffed by the federal government.

Our government has taken unprecedented measures in the attempt to keep us safe and avoid the spread of the Coronavirus. In doing so our lives have been turned upside down as we all work at figuring out how we take care of our families, pay our bills and do our best to avoid exposure to COVID-19. Small business owners struggle with the uncertainty of knowing if they can survive the imposed PAUSE. Please visit the chamber websites and shop your local merchants. They are creatively finding ways to serve the community within the guidelines set by New York State. Before you order goods from out of town businesses, consider buying from local merchants.

Easter and Passover will be very different this year.

Avoiding large group gatherings at places of worship and cancelled family get-togethers doesn’t mean that we can’t celebrate with our immediate family at home. Use technology to be closer to family and prepare a special meal or order family favorite dishes from a local restaurant.

The facebook group began during Superstorm Sandy exchanging ideas where to find food items and what you can do with chicken cutlets. This network foodies group is my go-to for new recipe ideas and as luck would have it, there are some recipes in this issue that your family is sure to enjoy.

This pandemic has taken us all for a loop but we are all doing our best to cope with the restrictions and changes. If you’re feeling a bit stir crazy take a virtual journey with a visit to a museum or national park.

Proper Pruning is All About the Right Tools If you are like most homeowners, you need to prune trees, shrubs, bushes and other plants in your yard from time to time. But do you know which tool is best suited for each particular job? Experts say that choosing tools wisely is key to maximizing beauty, and minimizing damage to plants.

There are a few things to keep in mind as you go about selecting tools for your pruning jobs, big and small, and landscape designer Doug Scott of Redeem Your Ground in Atlanta, Ga., is sharing a few insights to get you started: • For most basic pruning around the yard, bypass or hand pruners, also known as garden or pruning shears, are go-to tools. Best for making clean cuts through living plants and tree branches, they work much like a set of heavy-duty scissors and are capable of getting into tight spots for close, precise cuts. Scott advises against a common pitfall here: the urge to save money.

“Since pruning shears see so much use, it makes sense to buy the best ones you can afford. From my experience, inexpensive models simply don’t last very long,” he says. “A well-cared for, high-quality set of bypass pruners however can be a lifetime investment for the average homeowner.”

• For larger branches, Scott says anvil-style shears can be a good choice, which feature one sharp blade closing against a flat, wide blade and work much like a knife cutting against a cutting board. However, he warns that they should be used selectively, as they crush plant stems more than bypass-style pruners.

• When it comes to branches of more than 1/2-inch (12.7 millimeters) in diameter, loppers are the best choice. Like hand pruning tools, there are bypass loppers, which operate much like a large, long-handled set of bypass shears, while anvil-style loppers use just one cutting blade.

“Bypass loppers generally cut with more precision, while anvil-style loppers are typically capable of generating more cutting force,” Scott said.

MARINATED CHICKEN & BEEF KABOBS

Christine White Restaino Chicken and beef kabobs with mango and veggies. All marinated in hoisin sauce, ginger, garlic, fresh squeezed orange juice and lime juice. Serve with brown rice.

sliced. For measurement I pour the spices in the palm of my hand until it looks like 3TB. 3 each cinnamon stick and star anis. Let the ribs sit in the fridge submerged over night.

NEXT DAY: Remove from brine and place in braising liquid. Water flavored with sliced apples, onion, garlic, no salt no pepper nothing. Braise ribs completely submerged for 7 hours at 225° I know it sounds low but slow is the way to keep them juicy! Turn the oven up too 350° let ribs go meat side down for one more hour. Remove from stove let cool in liquid for 20 min. Remove from liquid glaze with your favorite BBQ.

BBQ SAUCE

Cook one onion and 8 cloves of garlic sliced until soft. Add mustard powder 3Tb, garlic powder 1TB, onion powder 2TB, paprika 4TB, aleppo pepper flakes 4 TB. Deglaze with the juice of one lemon, half cup of white vinegar, worsheshire sauce 4TB, ketchup 2C, half cup maple syrup, 1C brown sugar, half cup Mike's hot honey cook until homogeneous then blend. We used the rib braising liquid to thin it out a bit, around 1.5C

PINEAPPLE SHRIMP

Denise Rubinstein Grossman 1 1/4 lb shrimp (peeled and cleaned) 1 tsp low sodium soy sauce 1 clove garlic grated 8oz can of pineapple juice fresh pineapple pieces for kabobs salt to taste

Mix all ingredients except for pineapple, marinade for 30-45 minutes, make kebabs using the pineapple. Grill over indirect heat.

SWEET & STICKY HOT HONEY BBQ RIBS

Gabrielle Calle 2 day operation: DAY ONE: Brine ribs completely submerged in water flavored with maple syrup, cinnamon, star anis, salt, peppercorns, adobo, onion powder garlic powder, fresh garlic and onion

Bake at 375° with first glaze for 20 minutes. Add thick second coating cook for 25 minutes.

If you need more char you can broil for 5 to 10 minutes but keep an eye because the sugars will burn! These were the best ribs I have ever had!

RECIPES GARLIC HONEY MUSTARD SLOW COOKED HAM Gail Peltz Goldman

9-10 pound precooked spiral cut ham, bone in 2 cups honey 1 cup Dijon mustard 1/4 cup Worcestershire sauce 2 tablespoons minced garlic Combine all ingredients except ham in your blender and pulse until well blended. Reserve one cup of glaze.

Place ham in crock pot, flat side down.

Slowly pour glaze over ham, making sure to get some between each spiral slice. Lift ham to get glaze underneath as well. Cook on low for 2 hours. Pour remaining glaze over ham and continue cooking on low for an additional 1 to 2 hours. Enjoy!

Add 5 or 6 red potatoes, 2 onions, 3 carrots cut into chunks then place around the meat. Add two cups of beef broth. Top meat with 1/2 cup of Worcestershire sauce and cook for two hours on 400 degrees. Add fresh string beans and cook for an additional hour.

Preheat oven. Wash decked roast and dry with paper towel. Seasoned with salt and pepper. Then place oil on the bottom of a dutch oven to lightly coat the bottom and sear meat on both sides. Remove meat and add

Sprucing Up for Springtime

By Marc Bromberg Spring is the perfect time to take a good look at your home, assess for damages and create a wish list of improvements.

Start at the curb and look around the entire house.

Has time changed your view on the curb appeal of your home? Painting the exterior can do wonders for renewing pride in your home and making it beautiful once more.

When picking colors, consider the elements that will remain constant such as stone work or brick and then select complimenary colors to match.

Accent features of the house by using different colors for the body, trim and the shutters. Consider expressing your personality and make a bold statement with a brightly painted front door. Choose complimentary colors that coordinate and contrast with the scheme which will add character and make your home stand out.

Once inside, starting with your foyer,

think of how you want to welcome people into your home. Light colors keep entryways light and airy and neutrals provide seamless color flow into a room.

From creating a tranquil to a dramatic look, a fresh coat of paint can go a long way in restoring your appreciation for the beauty in your home.

AVOID STRUCTURAL DAMAGE

Use a pair of binoculars to take a close look at the upper floors for damage caused by the winter elements. Water, mold and mildew of poorly painted or exposed wood can cause softening and decay, which may result in structural damage. Professionally painted and stained woods prevent termites from making their way into your home. So, beauty is not the only benefit of painting.

Wood decks take a hard hit during the winter. Inspecting and keeping up with painting or staining can save on costly repairs like replacing deck boards.

Check around the skylights and look at the interior ceiling for water damage. You will notice this damage as round tan-col-

ored stains on your ceiling or dried drip marks running down the skylight. Because hot air rises, a white ceiling can begin to look tired and grey around the corners from the heat that heats your home.

Choosing interior paints go beyond color. You will be happier with your selection if you follow some simple paint finish guidelines. Managing Screen Time While Kids Are Home From School

With many kids out of school and spending more time at home, finding ways to fill the time is essential. As most parents know, it can be tempting to allow children to pass some of the extra hours using digital devices, however, research shows that managing screen time is vital for developing minds.

When used in moderation and under parental supervision, devices of course can be incredibly powerful learning and communication tools, and in many cases, they will be vital to kids’ continued academic progress while campuses are closed. However, people aren’t meant to spend all their time in front of screens, especially kids. Excessive screen time can lead to: • Impaired mental and physical well-being.

• A loss of quality sleep.

• Impeded impulse control -- for kids, impulse control is already hard enough!

• Poor communication skills (nonverbal cues are learned in face-to-face interaction, not through device-to-device communication).

• Addictive behaviors, and even violent tendencies.

• Vision problems.

• An increased risk of obesity.

With all that said, here are a few ways to manage your children’s screen time: • Create a routine. Post a schedule each morning in a place that’s easy for kids to see. Include such items as doing chores, reading books, practicing an instrument, creating artwork, playing in the backyard and any other activity that

will help ensure chunks of the day are spent away from screens doing something productive.

• Talk. Be extra proactive about starting conversations with your kids. Check in with them about progress on assigned homework. Ask them how they are feeling. Children are used to being surrounded by fellow students and teachers all day, so be sure to give them opportunities to practice social skills.

• Use tech tools. Every parent knows the struggle of limiting device use. But new tech tools can help you make rules that stick. One such tool is a parental control app called OurPact.
