Coronation Chicken Brioche

Adam Smith is executive chef at Michelin-starred, Restaurant Coworth Park in Ascot. Named as the Roux Scholar in 2012 and awarded Craft Guild of Chefs Restaurant Chef of the Year in 2015, he joined Coworth Park as executive chef in 2016, overseeing all its culinary outlets, and in 2021 was awarded the Michelin-star for Restaurant Coworth Park for a fourth consecutive year.
Coronation chicken was created in 1952, when renowned florist Constance Spry and cordon bleu chef Rosemary Hume catered for a banquet to celebrate the coronation of Queen Elizabeth II. Nearly 50 years later, we’ve recreated this popular dish in celebration of The Queen’s Platinum Jubilee. Perfectly seasoned coronation chicken meets light and soft brioche - this recipe would work excellently as a light lunch and is very easy to prepare at home.
INGREDIENTS
Serves Six People
CHICKEN 1 Whole Slow Grown Free Range Chicken 1tsp Mild Curry Powder 1tsp Garlic Powder 2tsp Cooking Salt 1 Head Garlic 2 Sprigs Rosemary 50ml Rapeseed Oil
CORONATION DRESSING 75g Shallot Brunoise 25g Ginger Finely Grated 25g Garlic Finely Grated 1tsp Turmeric 1tsp Curry Powder ½tsp Ground Cumin ½tsp Crushed Coriander Seeds 5g Sea Salt 100ml Rapeseed Oil 100ml Coconut Cream 300ml Mayonnaise ½ Bunch Chopped Coriander Zest and Juice of 1 Lime
GARNISH 6 Brioche Rolls Baby Gem Lettuce Leaves Golden Raisins (soaked in warm water for 24hr) Red Chilli Cut into Fine Strips Fennel Sprigs Baby Basil Leaves Baby Coriander The Crispy Chicken Skin
FOR THE CHICKEN
Roughly chop up the head of garlic and the rosemary, once done then place this inside the cavity of the chicken. In a small mixing bowl add the rapeseed oil, curry powder, garlic powder and cooking salt. Mix to a paste. Rub the oil/paste evenly all over the chicken skin and place into a roasting tray. Cook at 175˚C for 1hr 20min achieving a core temp of 74˚C. Remove from the oven and allow to rest to room temperature. Gently remove the chicken skin keeping as whole as possible. Place the skin between silicone paper and then between 2 baking trays, put back into the over at 175˚C until crisp and reserve for service. Remove the breast meat and the legs from the carcass ensuring there is no bone or cartilage.
CORONATION DRESSING
Warm the rapeseed oil in a heavy bottomed sauce pan. Add the shallots, ginger and garlic and sweat until without colour. Add the dry spices (curry powder, sea salt, turmeric, cumin, coriander seeds) and sweat for a further 2 min. Add 100ml water to the pan and slowly cook until the pan is dry again. Remove the spice from the pan into a mixing bowl and allow to cool to room temp. Once cool add the mayonnaise and mix with a spatula until fully incorporated. They repeat the process with the coconut cream. Season with the lime zest and juice before adding the chopped coriander.
TO SERVE
Add the meat from the roast chicken into the coronation dressing and test for seasoning. Cut the brioche roll down the centre from the top and fill generously with the coronation chicken mix. Garnish on the top with shards of the crispy skin, baby gem lettuce leaves, the soaked raisins and chilli to taste. Finally liberally sprinkle the fennel sprigs, baby basil and coriander. Then serve (works great with potato crisps or even chips).

Their vibrant, playful and alluring set evokes the dazzling ambience straight out of Latin America or the glamorous Mediterranean.
Whilst listening to the Latin tones, diners can indulge in Isabel’s tempting brunch specials featuring classics such as eggs benedict with lashings of hollandaise; fried chicken with waffles and maple syrup; pancakes with whipped cream and banana or berries; and Pain Perdu with créme fraiche and a dusting of cinnamon.
For those looking for something a little different, then the a la carte menu does not disappoint with fresh dishes including tuna tartare with ponzu dressing, crushed avocado, wasabi and lime caviar; creamy burrata with marinated tomatoes; butternut squash tortelloni; and wild caught seabass grenobloise with Swiss chard and chive butter sauce.
There are also a whole host of options from the grill such as Westholme Wagyu and robata grilled octopus.
Every dish is beautifully presented and as expected, is accompanied by a fantastic wine list and innovative cocktails. Everything from the music to the decor oozes classic elegance. The restaurant itself is housed in a building that dates back to 1905, with the facade being one of the finest examples of Beaux-Arts inspired architecture in the area. One of the earliest occupants of the building was Charles Mellier, a furniture dealer and manufacturer selling period English and French furniture. Today, a glamorous hub for London's elite, Isabel celebrates the very best of food and drink, as well as the chic surrounds of Mayfair all the way from breakfast to dinner.
JUREMA TERRACE BRUNCH

Launched last month, The Mandrake has begun serving an al fresco Botanical Sunday Brunch at the stunning Jurema Terrace.
Tucked away above the hotel, Jurema Terrace is enveloped by a hanging garden of suspended jasmine and passionflower while overlooking the Courtyard with its soaring Tasmanian Ferns.
Offering a sense of calm and escapism, the evergreen oasis provides the perfect location for a moment of peace in the heart of the bustling city of London. From 12pm to 4pm, guests can indulge in a spirited and gastronomic brunch experience exclusively available on Sundays. Cool tunes by a leading sound sommelier add to the fun and lively ambience of the relaxed weekend afternoon spent under the sun.
Welcoming diners with a well-curated sharing-style set menu including South American fare capped with a tempting selection of vegan and vegetarian desserts. The set menu starts with delicious seasonal starters such as Padron peppers sprinkled with smoked chilli salt, crab and fennel tostada with sea herbs and lime. Brunch continues with sumptuous mid-afternoon plates including chorizo and poached egg muffin with chimichurri hollandaise, mushroom and kale tacos with grilled spring onion, and buttermilk fried chicken bun with pickled jalapeno coleslaw. For dessert, guests have an option between strawberries, vanilla and red pepper parfait infused with red chilli and Guatemalan chocolate mousse with coconut, buckwheat and almond.
Wash it all down with one of the new and exciting summer cocktails on offer. The Yohimbe is a refreshing cocktail with Bombay, basil, watermelon, lemon, yohimbe, and goji. The Blue Lotus is a cool concoction of Greygoose vodka, raspberry, bergamot, lemon, Veuve Clicquot Brut Champagne, blue lotus and passionflower. Coffee lovers may sip on the Praline, a cold brew-based cocktail with Belvedere, ODD café, maple, praline and hazelnut oil. The Mangosteen is a tropical blend of Patron silver, mangosteen, hibiscus, chipotle agave, Jalapeño vinegar, lime and grapefruit soda. And for a bubbly option, the Olea presents a mix of Ketel one, olive juice, elderflower, lemonade, champagne and caper leaf. Other drinks on offer include a selection of wines, beers, champagne and non-alcoholic drinks.
The delectable brunch is perfectly complemented by a bottle of Rosé wine for £95 per person. Guests may also opt to pair their flavourful brunch with three cocktails at £99 per person or with a bottle of Veuve Clicquot at £120 per person. The classic Al Fresco Sunday Brunch without the upgraded beverage package is available at £65 per person.

YOUR COCKTAIL
LOOK BEYOND NIBBLES
Pairing cocktails with food rarely extends beyond nibbles such as the olive or cracker. But why? When paired well cocktails can do the very same as wine, enhancing dishes to maximise flavour and provide a broader eating experience.
Father’s Day lands mid-month or so on the19th and gives us some time to plan such an exercise and pairing summer lunches and BBQ menus with cocktails will stand you apart from the inevitable deluge of magnums of rosé.
It is worth keeping in mind that most cocktails can be batch made so don’t anticipate being stuck behind your home bar for every refill, those empty rosé magnums can well be repurposed to serve your cocktails with ease.
Here are some dish and cocktail pairing suggestions to get you started.
Dish: Fish Ceviche - Cocktail: Mojito
This refreshing sweet and sour cocktail with bright citrus tones complements the zesty dish of white fish cooked in citrus juices and then mixed with onion, tomato and coriander. Experiment with bright garnish of chilli and vibrant stalks or leaves of coriander.
Dish: Sushi - Cocktail: Moscow Mule
We commonly eat sushi with a side of ginger so try this effervescent ginger cocktail with a selection OF rolls. The classic Moscow Mule contains vodka, lime juice and ginger beer, add some fresh ginger matchsticks for an elegant garnish.
Dish: Cacio e Pepe - Cocktail: Negroni
This pasta dish requires a cocktail that enhances the taste and also gives a little respite from the strong flavours of Pecorino. Negroni comes to our aid intertwining wonderfully with notes of sweet, sour and citrus.
Dish: Spaghetti with Clams - Cocktail: Margarita
Freshly prepared spaghetti with clams is elevated when served with this cocktail containing tequila and lime juice. The salinity of clams works beautifully and note no need to salt the rim of your glass.
Dish: BBQ Lamb Skewers with Peppers - Cocktail: Whiskey Sour Light enough to contrast the meat’s heaviness yet deep enough to complement its richness cane sugar syrup, egg white, and fresh lemon juice make this bourbon-based cocktail ideal for meat dishes cooked on the BBQ. If you like sweetness add a splash of pineapple juice to your cocktail (and a little pineapple to your skewers).
Dish: Steak - Cocktail: Bloody Mary
Do you like a drink with a more assertive taste? A Bloody Mary is the perfect cocktail with your preferred mix of Worcestershire sauce, vodka, tomato juice and Tabasco bringing more savoury to savoury without overwhelming the flavour of the meat.

LE PETIT BEEFBAR
Last November, Le Petit Beefbar, part of the globally recognised collection of Beefbar, opened its first UK restaurant on Cale Street in Chelsea.

The menu also features a number of classic Beefbar dishes that are available as well as the affordable set menu. Highlights include the Steak Baguette, Posh Schawarma (300 days grain-fed Wagyu & Angus shawarma), Chimi Cheese double chimichurri cheese burger made from natural grass-fed beef and pickles, and elevated Cauliflower Steak.
Elsewhere on the menu are an assortment of sides - from Homemade Beef Fat Chips and salads to six varieties of signature mash - plus La Sauce Beefbar, a hero serve made from butter, herbs, truffle & an extract of the 'Sauce Originale Relais de Paris'.
With a large marble bar, panelled walls, natural light and an open kitchen, the decor is both stylish and reminiscent of a classic French brasserie.
Match that with fabulous food, great service and a welcoming atmosphere and you have a fantastic new addition to the dining scene in Chelsea.


Burger & Lobster
Launched in Mayfair by four schoolmates in 2011, Burger and Lobster has exploded across London. With nine locations across the City, from the expansive terrace at West India Quay, two spots in The City and various West End locations, all restaurants feature live lobsters that are flown in from Nova Scotia, Canada and beef from the cattle ranchers in Nebraska. The restaurants work tirelessly with the families that supply the ingredients to this monoproduct offer to ensure the absolute best quality.
Having been serving up its iconic lobster roll for a decade, and this spring, the surf and turf specialists are switching things up a gear. In an exciting collaboration with sarnie maestro and TV chef Max Halley of Max's Sandwich Shop, two limited-edition rolls have joined the crustacean clan for the first time.
Available until 6 June at all nine Burger & Lobster restaurants for lunch and dinner, the new rolls feature B&L's signature toasted brioche roll and the finest wild-caught Atlantic Lobster, sustainably sourced from the coasts of Nova Scotia Canada - plus Max's distinctive touch of topping creations with crisps.
The first - the Lobster Cocktail Roll (£26) - comes piled high with fresh-picked lobster claw and knuckle meat dressed up to the nines with a retro Marie Rose sauce that's finished with a dash of tabasco and brandy. Garnishes take the form of iceberg lettuce, avocado and cucumber, a squeeze of lemon, a sprinkle of finely chopped tarragon and crushed prawn cocktail crisps for good measure, all loaded into a buttery brioche roll and served alongside fries.
The second roll is the Fish & Chip Lobster Roll (£26). Featuring juicy chunks of lobster meat bound with tartare sauce and garnished with lime pickled onions, a vibrant pea and mint purée, shredded baby gem lettuce and finely diced gherkins, the lobster is topped with crushed salt and vinegar crisps, packed into a toasted roll and accompanied with golden fries.
Burger & Lobster's new Spring menu also features a refreshing lobster salad, a soft-shell crab roll served with fries, and a juicy 5oz pure Nebraskan beef burger with truffle and parmesan fries. There's also a tempting 100% Wagyu beef burger with crispy onions, an umami-packed beef sauce and horseradish mayo, and oozing truffle and burrata croquettes.

The second edition of the stunning Rolls-Royce Boat Tail series is unveiled, and it takes engineering and design to the next level. Exquisite detailing adorns every inch of this truly beautiful car, bringing quality and precision with the finest materials in the world.

GT McLaren
Right before the world experienced the worst pandemic of all time, stretching across the globe, impacting people and economies, the small but iconic British marque - McLaren - released what was meant to be an all-new shining light for the brand who had started to experience some serious turbulence of their own.
Fortunately, the manufacturer has so far ridden the wave and made it through to the other side, with the 'all-new' GT continuing to be a flag bearer for the road-going automotive section of the business, looking to build on an initial success that was somewhat scuppered by global events.
Delivering a very different offering in both driving experience and usability to the rest of the current line-up, the McLaren GT is not only unique in its setup, but also its appearance. Despite sharing numerous features with other cars in the production range such as the 720S, you will find the GT to be a very different vehicle, one that takes inspiration from the truly remarkable McLaren Speedtail.
Immediately apparent is the low, elongated profile exaggerated by the vast, glazed teardrop which appears to rest atop the body of the car - reminiscent of that inspirational Speedtail. What is not immediately obvious is what lays beneath said teardop. Unlike a 'regular' McLaren, the GT hides more than just a power unit under the rear glass; it hides the capability of housing a full set of golf clubs amongst other things.
One of this cars key features distinguishing it from the rest of the production stable, the GT's luggage capacity allows it to live up to the name, providing sufficient space for a weekend away or substantial road trip. It's not just luggage space that is needed to make a suitable and indeed successful GT, but it goes a long way when it's delivered in a package so beautifully and aerodynamically crafted.
In developing the GT, McLaren were obviously keen to maintain the level of performance owners and potential buyers have come to expect from the marque and the results do not disappoint. Utilising their well established carbon fibre monocoque know-how which was pioneered in motorsport all the way back in 1981, the engineers have managed to develop a passenger cell unique in the Grand Touring segment. The bespoke MonoCell II-T monocoque - the T denoting 'Touring' - provides not only exceptional strength and rigidity, but offers increased interior space and a level of refinement beyond that of any previous model.
The incredibly long body, which is longer than any other in either the Sports or Super Series model lines, stretches to a length of 4.7 metres and includes an extended overhang on both the front and rear longer than is usual on a McLaren. You might think as a result that this is therefore not suited to life on the more urban road, but you would be very much mistaken. Thanks to more clever engineering, the car features a 10-degree approach angle (which increases to 13-degrees when vehicle lift is engaged) and underbody clearance of 110mm (130mm with vehicle lift) which is actually comparative to many mainstream saloons. So those traffic calming measures you will undoubtedly come across on your travels won't pose any problems at all.
The vast rear end could quite easily have posed a problem yet the team at McLaren have managed to craft an extended carbon fibre upper structure which combines with the monocoque cell to create a car-wide architecture that allows the engine and exhaust to sit as low as possible to the ground, not only improving the centre of gravity and consequently the cars agility, but also providing the necessary space between the engine and the fully glazed tailgate to offer that surprisingly large luggage space.

In order to ensure your luggage doesn't experience the full force of the heat from the engine directly below the main luggage space, the clever people at McLaren have also developed an impressive 'barrier' which measures around only an inch in depth, but dramatically reduces the temperature between the source and your belongings. Furthermore, this futuristic material also does an excellent job at reducing engine and road noise in the cabin supporting the GT's refinement credentials essential for those longer journeys.
The elegant interior of the McLaren GT with exceptional levels of attention paid to the quality of materials and occupant comfort is a space designed for uninterrupted pleasure on longer journeys. Comfort seats fitted as standard which and have been optimised for long distance comfort, with the perfect amount of padding and providing shoulder and back support in combination with superb lateral control to ensure a perfect driving position. The Comfort seats are upholstered in authentic hand-stitched Carbon Black Nappa leather and complemented by Carbon Black Nappa leather for the steering wheel, leather door inserts, with black stitching and carpets. Now with optional upgrades to Pioneer and Luxe trims bringing further design and functionality to your interior.

panel that darkens or lightens at the touch of a button in lieu of the standard carbon fibre composite gloss black roof. Machined and knurled aluminium switches and controls contrast with satin black surrounds for the infotainment screen, steering wheel clasp, window switches, gear-selection console and air vent housings, with further decorative elements finished in satin silver. A 12-speaker, Bowers & Wilkins premium audio system, featuring carbon fibre sub-bass woofers and kevlar mid-range drive units, is also available to enjoy some serious road tunes on your journey.
It would be easy to forget this cars performance capabilities when you step inside and take it for a gentle drive to the shops. The comfortable interior combined with the silky smooth 7-speed SSG dual-clutch transmission and incredible suspension setup deliver an adaptive driving experience that will take you from around town to the open road seamlessly.
This is however an outright supercar in its own right - boasting a substantial 4.0-litre twin-turbocharged V8 packing an impressive 620PS and 630Nm of torque - meaning the McLaren GT will accelerate from standing in just 3.2 seconds and reach over 200 mph (when the international road legally allows of course).
The suspension is one of this cars most important features though and is instrumental in providing that any-road capability. Lightweight aluminium, double-wishbone suspension front and rear with bespoke anti-roll bars is paired with continuously variable, twinvalve hydraulic dampers that feature individual compression and rebound characteristics that reflect the increased ride height of the McLaren GT compared with other McLaren vehicles. The incredibly stiff MonoCell II-T carbon fibre structure is essential in facilitating the reduced spring rates that provide enhanced comfort levels with no detriment on dynamic performance.
Proactive Damping Control, a technology unique to this model - governed by the most sophisticated iteration yet of the pioneering Optimal Control Theory software algorithm first developed for the McLaren 720S - is a state-of-the-art system which uses inputs from sensors to 'read' the road, learning from previous scenarios to interpret what will likely happen next and reacting predictively in just two milliseconds to dictate damper responses.
This is a serious piece of automotive engineering. Whichever way you look at it, you will struggle to find fault. From performance to comfort, usability to aesthetics, there are very few reasons not to consider the McLaren GT when you're looking for your next continent conquering car. The refinement they have managed to achieve whilst delivering this comfort and performance combination is something to behold.
Festival of Speed

23-26 JUNE
This year’s Festival of Speed at Goodwood, presented by Mastercard, will demonstrate ‘The Innovators - Masterminds of Motorsport’. Celebrating the technical landmarks that have seen the racing automobile develop from crude behemoth to spaceage projectile. It will focus on the human stories of engineering ingenuity that have been ever-present throughout the sport’s history, and shine a light on the future, as motorsport’s visionaries play an essential role in pioneering new technologies that will impact the next generation of motion and mobility.
The theme will be reflected throughout the event, from the cars and drivers taking on the iconic Goodwood Hill, to special guests and interactive displays on the ground, including stories from the Festival’s partners and immersive exhibitions such as Future Lab and Electric Avenue.
Long established as the world’s greatest celebration of motorsport and car culture, the Festival of Speed is increasingly geared towards the future - providing a glimpse at the technology of tomorrow, set against the context of history. The evolution of mobility is at a pivotal point, with electrification, autonomy, personal flight and many other developments set to have a profound impact on the way we lead our lives in the future.
Established in 2017 at the globally renowned Goodwood event, Future Lab is a showcase for these technologies, along with many others, presenting them in an accessible, interactive way for all visitors, old and young. Returning for its fifth year, Future Lab will once more present ‘Technology for a better world’, featuring breathtaking exhibitors from mobility, robotics, aviation, healthcare and more.
Continuing the forward-looking theme, last year saw the launch of ‘Electric Avenue - The Road to 2030’, the new home for electric mobility at the iconic automotive event. The innovation behind EV development will be showcased again this year as the destination for customers to ask questions of the experts, inspect the latest EVs, and learn about the benefits associated with switching to electric.
New for 2022, will be a special experience for eventgoers to get behind the wheel of a variety of exciting EV manufacturers.

As part of the celebrations, legendary British Formula 1 driver, Nigel Mansell, will attend with ‘Mansell Mania’ set to sweep Goodwood once again as he returns to the Festival of Speed to celebrate the 30th anniversary of his Formula 1 World Championship in 1992.
In attendance across the weekend, Mansell will join the legions of motorsport icons who have been celebrated at the Festival of Speed, including a special balcony moment, evoking memories of British Grands Prix in the late 80's and early 90's when ‘Mansell Mania’ swept the nation. Renowned for bringing together the cars and drivers that made each other famous, Mansell will be reunited with his 1992 championshipwinning Williams FW14B and will also take to the Hill in a number of other cars from his Formula 1 days, including the Lotus 91, Ferrari 639 and 640.
Nigel Mansell said: “I’m thrilled to be coming to the Festival of Speed this year! It’s always a wonderful event and I’m looking forward to getting behind the wheel of some of my cars again and celebrating 30 years since my World Championship with all the Goodwood fans.”

Taking the title as the fastest production car in the world at the time of its launch, the elegant Jaguar XK 120 was eventually available in three body styles, initially as an open 2-seater - as in this example - then as a fixed head coupé from 1951 and finally as a drophead coupé from 1953. Each was delivered with a 3.4-litre engine, however, each variant was adapted to produce different power outputs ranging from 160-220 bhp.
This car has received a number of upgrades and comes with a large service file. It was previously fully restored with photographs showing a full strip-down of body and engine. New panels, engine rebuild complete with an aluminium radiator and header tank, upgraded C-Type heads, a disc brake and suspension upgrade, series 2 gearbox with overdrive, bucket seats, moto lita wooden steering wheel, improved steering rack, revised suspension geometry, new leather interior, carpets, soft top, enlarged cockpit, new tonneau cover, chrome wire wheels, kenlowe fans and relocated battery to name just a few of the items. There is an invoice from Wessex Motor company for £12,600 to show works undertaken, and the car later went to Twyford Motors marque specialist who went through the car fully, adding new manifolds, exhaust etc., with invoices for over £7,000 to show further works including a new leather interior.
