Protecting the Island We Love

by Carl Oscar Olson With a global population of over 7 billion human beings, it’s hard to imagine that any open space free of houses, highways, or high rises still exists.

That is especially so for a very small and very attractive destination island like Nantucket. Short supply always equals high demand. And in spite of land being in the highest demand on the island, there are forces at work to prevent all of it from being claimed. Since it was founded in 1963, it has been the sworn duty of the Nantucket Conservation Foundation to protect both the beauty and natural history of the island for residents, visitors, and the posterity of all. Nantucket was a town lacking a planning board or tough zoning laws. It was clear to some that urban sprawl of the mainland was within view, and if action wasn’t taken the results could be devastating for the picturesque island they knew and loved. Now, with over 9,000 acres of bogs, beaches, meadows, marshes, and more in their protection, they are officially the largest landowners on the island.

The first donation (and one of the smallest) occurred in 1963 and was given by Frances C. Cook. Just under an acre of land off of North Beach Street in the Brant Point area of town was destined to be a sanctuary for our feathered friends. Though its inhabitants took flight, this parcel of land was symbolic of The Foundation’s grounded and humble beginnings. This initial gift was the spark that started the fire in the minds of concerned residents and resulted in the giving of approximately 6,500 acres, over three quarters of the Foundation’s current total 8,853 acres. That is almost 1/3 of the entire landmass of Nantucket.

Some say size doesn’t matter. When it comes to preserving the beauty and character of the environment surrounding us this is especially true. The largest donation of land, however, is worth a tip of the hat. Given that the

This elaborate opening ceremony is followed by a seated multi-course dinner, which is where the real entertainment begins. Fighting for Women’s Rights

by Amy Jenness When 200 women and 100 men gathered in upstate New York in 1848 for America’s first women’s-rights convention, they unanimously agreed that women should be given the same freedoms as men: the right to speak publicly, pursue an education, get a job, practice a religion and own property. But when convention organizer Elizabeth Cady Stanton suggested giving women the right to vote, the group’s unity disintegrated. After intense debate and an eloquent plea in favor from famed abolitionist Frederick Douglass, they voted to keep in Stanton’s call to let a woman “exercise her inalienable right to the elective franchise.”

That stance was mocked by journalists and skeptics, and only 100 of the 300 attendees voted for it. But its passage started a long and arduous fight towards giving women the right to vote. It would take 72 years. Congress voted to amend the US Constitution on May 19, 1919 and ratified the 19th Amendment the following year. And, 178 years after the convention, Hillary Clinton looks to be the first viable female candidate for US President.

The 1848 convention’s co-founder and featured speaker was Nantucket-born Lucretia Coffin Mott, who said once, “I long for the day my sisters will rise, and occupy the sphere to which they are called by their high nature and destiny.”

Today a strand of Stanton’s and Mott’s social justice DNA resides in every ballot, every candidate, and every new generation of activism.

Lucretia Coffin was born into an island Quaker family in 1793. When she was a young teen, she moved to Philadelphia to attend a Quaker school and there met her future husband James Mott. The pair never left Philadelphia, although as her stature as a gifted orator increased, Coffin Mott traveled extensively to preach and give lectures.

She began by preaching at Quaker meetings, where congregants sit silently until moved by God to speak. But her opposition to slavery compelled her begin working for change outside of her religion. Although Quakers refuse to fight in a war, they have a long and storied history of bringing about change by engaging continued on page 9

Preheat oven to 350. Toast pine nuts until just golden (lightly toasted).

Wash and slice pears lengthwise into halves. With a small spoon or melon baller remove the core leaving a round dip for the filling.

Walt Whitman has joined the crew.

He is not old. He does not have wild hair, a fifty year beard, and leather leggings. As far as I can tell, he isn’t jotting down notes to himself, chasing the deer through the woods, or ranting and rambling through his day in iambic pentameter.

Walt, however, is a rambler in Carharts. He went from one college to another to a gap year and another gap year before someone tried to put an end to his wandering with a diploma. But the diploma merely freed him to keep on going.

He didn’t appear to be rich. He didn’t seem to have had a father who sent him to the right lacrosse camps with Connor, Harrison, and Wes. He wasn’t one to drive to the job site in a Saab and wear frat house t-shirts. His boots had been worn down honestly and he smoked like a craftsman.

Walt was young, though. He had spent a great deal of time and money tattooing both his arms from wrist to shoulder with a goth mix of a totem pole and a Maori sand painting. He wore his dirty blond hair a little long and a little ragged, with a squint and a smile that would drive the high school girls into fits.

He learned fast. He didn’t need to be shown twice. He didn’t need to prove himself better than or cooler than or smarter than. He watched how it was done and did likewise. He asked questions when he should.

When I dropped him off at night, he left the truck carrying a can of beer and his lunch cooler. When I picked him up the next morning, he looked just about the same, with a dimmer set of eyes and a cup of coffee.

You shall scatter with lavish hand all that you earn or achieve He slept on a sofa in the front room of an apartment that he shared with four other guys on Old South Road. The refrigerator had beer, butter, and ketchup, along with a three stale hamburger rolls. In the freezer, a five pound box of frozen hamburgers thawed and refroze. He rolled out early in the morning, rolled in late at night, and slept the sleep of the innocent as soon as he got horizontal.

You must spent a part of your life living luxuriously in your own youth, feasting on candy bars and coffee. You live paycheck-to-paycheck, bill-tobill, stretching out the ramen and frozen peas until the next pay day comes in, when it becomes Chicken Box shots and meatball subs.

These are the days that must happen to you Because you don’t have the foresight, wherewithal, or wisdom to make them your own, the days roll and batter. Later on, you learn to have more control, plan more, think more, trust more, and you don’t let the days happen to you. The triumph of age comes in a celebration of boredom. My days no longer happen to me because my poor, fragile, and aged life is organized into lists of things I can control. Adventure is my enemy and surprise is his weapon. I lay awake at night armoring myself against them.

The young can let the days happen to them. The days come in like waves.

Each one plucks you up and hurls you forward. The indomitable, impervious hide of youth rolls with him up the beach, laughing and giggling. Walt lives the legend of his days. To be Walt is to be in the present and see it as a story continued on page 19

Despite being encouraged to speak out as a child and practicing a religion that allowed her a voice, Coffin Mott encountered barriers in the abolitionist movement. She and Cady Stanton met in London in 1840 when they were both barred from participating in a World Anti-Slavery Convention because they were women. On that day, 37-year-old Coffin Mott became Cady Stantonâ&#x20AC;&#x2122;s mentor and the seeds of the womenâ&#x20AC;&#x2122;s rights movement were sown.

As these and other women fought for the freedom of slaves, they developed an awareness of the limitations placed on them in their own lives.

Eventually Cady Stanton (who was not a Quaker) and Quaker women migrated to William Lloyd Garrisonâ&#x20AC;&#x2122;s American Anti-Slavery Society because it allowed them to speak publicly. And a crack in the status quo appeared in April 1848 when the New York Legislature voted to give women the right to own property independently of their husbands.

consisted of non-Quaker abolitionist women shut out of the movement; those pressing for widespread legal reform that would allow women the right to own property; and Quaker abolitionists, who were now aligned with William Lloyd Garrison. Lucretia Coffin Mott was the main draw and spoke many times throughout the convention.

When it came time to debate the resolution calling for a woman’s right to vote, some called it too radical and others said they wanted only to address a woman’s civil and religious rights, not their political rights. James and Lucretia Mott were not initially in favor, although they eventually voted for the resolution.

Yet Stanton defended her proposal, saying it would expand women’s rights and allow them to influence future legislation. Frederick Douglass, an escaped slave who became a prominent reformer, was the only African American at the meeting. He spoke in favor, saying that he could not accept the right to vote himself as a black man if a woman could not also claim that right. And he concluded by saying the world would be a better place if women were involved in the political sphere and that it was unjust that half of the country’s people were not allowed to participate in government.

When the vote was called, 68 women and 32 men voted in favor of the resolution.

In the ensuing years, generations of supporters lectured, wrote, engaged in civil disobedience and lobbied to allow women the right to vote. None of the 1848 convention main players lived long enough to see suffrage enacted: Coffin Mott died in 1880, Douglass died in 1895, and Cady Stanton died in 1902. Of the 100 signatories, only Charlotte Pierce Woodward lived long enough to witness women voting, although at 91 years old she was too frail to ever cast a ballot herself.

In April 2016, the US Treasury announced it will commemorate the heroes of the women’s suffrage movement on a redesigned ten dollar bill. The Treasury will include portraits of Cady Stanton and Coffin Mott, and others, on the back side. “With this decision, our currency will now tell more of our story and reflect the contributions of women as well as men to our great democracy,” US Treasury secretary Jacob J. Lew said at the time of the announcement.

cranberry has long been a trademark of New England and especially the Massachusetts coastline, it’s fitting that the most sizable gift to date was the 737 acre Milestone Cranberry Bog. This generous and functional contribution was given collectively

by Walter Beinecke, The Larson Family, and The Nantucket Ornithological Association. The Milestone Bog is one of two remaining commercial bogs in operation on the island. Not only is the NCF helping to maintain Nantucket’s 200 year old history of harvesting cranberries, the bogs and surrounding land are just another one of the unique and fragile ecosystems they are dedicated to protecting.

Landscape Architecture, visited the field station and gained some exclusive access to a sort of “behind the scenes” Nantucket. Soon after, Jim heard tell of a position with a burgeoning conservation foundation and submitted his application. He says he was told to “start from scratch” in the most literal way; a desk and a pencil was just about all he had to work with. In the same year, The Foundation acquired The Ram Pasture and The Woods, two properties including Sanford Farm that are some of the most popular today. The land was purchased for $625,000 and was paid for in part by The Foundation’s first fund raising campaign. Jim’s first job and first as the first employee was to track down funds to pay off the rest of the debt.

Fifty years later, Jim continues to wear the hat as the Foundation’s longest running employee.

Though his roles have changed through the years, the passion he has for protecting the beauty of the island has not. Today he is the Executive Director of the Nantucket Conservation Foundation.

From a bird’s eye view it really is quite astonishing just how much open space still exists on Nantucket, much of which remains pristine and untouched. The most important thing to understand, however, is that this did not happen by accident. One may shudder to imagine the island’s appearance if not for the foresight and generosity of the original founders of the NCF: Walter Beinecke Jr., Tell Berna, Alcon Chadwick, Frederick W. Haffenreffer, Roy E. Larsen, John L. Lyman, Robert F. Mooney, W. Ripley Nelson, and Charles G. Snow.

it must have been easy just a generation ago to wander onto a property one might assume to be public. Being greeted by a sign reading PRIVATE PROPERTY or NO TRESPASSING must have caused dismay for many, but not anymore. “We have traditionally been after properties taken for granted by the public.” Jim stated. This in a way is the mantra of the NCF. Acquire what is private, protect it, and open it for the public to enjoy.

Nantucket is home to many rare plants, animals, and resources, unique habitats such as sandplain grasslands, and the highest percentage of rare species in the state. Certain plants, once common throughout the state, can now only be found on Nantucket. This is due in large part to the conservation efforts of The Foundation. According to the National Heritage and Endangered Species program and the Massachusetts Division of Fisheries and Wildlife, one example of this is the Eastern Silvery Aster (Symphyotrichum concolor). The lilac-flowered plant thrives in dry, sandy soil. Other efforts seek to help animals being displaced for unknown reasons, such as the American Burying Beetle (Nicrophorus americanus). Once widespread in North American, the beetle is considered endangered on both state and federal lists.

Researchers hope to learn more about the animal and it’s behavior, and Nantucket is one of the few places this is taking place.

There are research projects ongoing throughout the year. Some projects help to curb the natural and unnatural decimation of a variety of habitats, such as prescribed fire effects research. Given the numerous grasslands and dry shrubbery (largely due to past human interference) on Nantucket, wildfire is a constant and easily spread threat. Burning prescribed and controlled fires has been a human practice for thousands of years, one that is currently being researched and implemented on the island in an effort to prevent future catastrophe. There are many other ongoing projects that are meant to track and protect plants and animals on the island, many of which welcome help from residents and visitors. If you happen to see a tagged horseshoe crab in the coming months, be sure to call the NCF! By working alongside The Properties Maintenance team, seasonal field assistants/volunteers, members are able to make the best decisions for land use. Since the island can’t possibly be set aside land solely for conservation, such entities as The Nantucket Land Council are involved as well. In this way, efforts are coordinated cohesively and dynamically, creating as much of a

win-win situation as is possible.

Since there is much more to be done by the NCF’s members than simply procure and protect land, monetary gifts are of the utmost importance. Many of the properties are in need of constant maintenance and attention. As more and more people are welcomed onto the Foundation’s properties every coming season, this work becomes increasingly important. The Properties Maintenance team gets the job done in stride. They tend to tasks ranging from fencing and signage to keeping up with the Foundation’s many buildings and structures, and even keeping those few unruly guests in check. The team’s array of abilities allow for nearly all of the work to be carried out without having to involve third parties.

These days, the Island’s own nonprofit conservation organization is not being gifted much in the way of acreage. “Land acquisition is winding down.” says Lentowski. A growing population requires housing, schools, and property to meet the needs of the people. As Lentowski stated, “We’re currently working toward building on past accomplishments.” This means not only expanding on what’s currently owned, but also taking care of the land they are responsible for. This is no small feat considering the Foundation has just three people working on maintaining the 9,000 acres. There are many challenges facing conservation at this point, but the biggest for NCF are maintaining the properties and finding ways the NCF can use this land to educate the growing public to care for the gifts as well, ensuring it lasts for generations to come.

The day before the last surviving founder of The Nantucket Conservation Foundation will be put to rest in the earth he helped to preserve, Jim said, “The founders wouldn’t just be satisfied with our progress since the beginning, they’d be jubilant.”

quality bottle of wine to share with the table. This means a wine that has a pedigree, perhaps from an older vintage, and not just the newest wine on the block that recently received 100 points from a wine publication (this wine probably isn’t ready to drink yet anyway). You will be enjoying a multi-course repast, so keep an open mind to bringing a spectacular white wine for the first course or a “nectar of the Gods” dessert wine or vintage Port as a perfect pairing to the grand finale of the evening. In this case, your due diligence before the evening should include discovering the menu in order to coordinate your own food and wine pairing.

Be sure to do your homework on the wine(s) you choose to bring so that you can share your knowledge. At it’s finest, each “Show & Tell” has a good story behind the bottle in order to capture the audience, but remember to show restraint when discussing your wine: no one likes a braggart or a show-off.

How many bottles of wine should you bring? Rule of thumb is that each guest is asked to bring at least one bottle per person. If you are attending as a couple, then you are expected to bring two bottles (or one magnum) to share with the table. While you may not be a huge drinker and think that this amount is somewhat excessive, keep in mind that because you are bringing such a rare gem, it may need to be decanted which could leave a few ounces lost due to the amount of sediment present in the bottle. Also, if your table is set for ten people (including the winemaker) one bottle will give everyone just over a two-ounce splash to sample. Some may really like it and want a little more, while others may decide to pass.

BONUS TIP: Bring a back-up bottle. What if your wine is corked, oxidized, or just over the hill? Think of it has having a spare tire which you may or may not use and can always return to the cellar if it returns home unopened.

There is one winemaker assigned and seated at each table at the Fête (lucky you if you get to sit next to one!). The historical roots for such an occasion trace back to Burgundy, France—the city of Beaune in the heart of this region is the sister city to Nantucket. The Fête was hosted by the vignerons as a way to celebrate the completion of the harvest amongst their harvest crew, friends, and family. As the host of your table, this esteemed wine personality will also be sharing with you numerous bottles of the top wines they produce (some may even bring a special stash from their personal cellars).

The winemakers enjoy the opportunity to taste other wines, especially rare, older vintages. They want nothing more than to share with you their enthusiasm of where they come from and what they have to offer, along with their guidance and experience, and knowledge they may have about your wine. For those of you who enjoy wine travel, be sure to exchange contact information with your winemaker so you can add their winery as your next vacation destination.

At some point during the festivities, a short, live charity auction will take place. Items include exclusive wine experiences and prestigious wine lots (including this year a Nebuchadnezzar, a ginormous 15 L bottle which is equivalent to 20 regular sized bottles of wine, from Domaine Christian Moreau Pére & Fils Chablis ‘Les Clos’ Grand Cru). I do not envy his bed or his breakfast. I can turn the pages back to my chapter in the basement of the Manchesterâ&#x20AC;&#x2122;s house (â&#x20AC;&#x153;six feet underâ&#x20AC;? we called it) and my winters in the cold apartment behind Dr. Vallettâ&#x20AC;&#x2122;s house on Centre Street. I remember tuna fish and salsa on English muffins to go along with Busch beer and a flickering television set. I remember biking to work in the winter dark and combing the sand out my hair, then shaking the ticks out of the cuffs of my pants.

I remember, too well, the energy of my youth. I remember how lightning came in every step. Where I stood, I anchored in rock. I sang in the halls and shouted in the classes and rode the waves through the day. I can still do that if I have two cups of coffee and a good nightâ&#x20AC;&#x2122;s sleep.

But I miss all the years spread out before me, all of those blank pages and all the unwritten chapters. The rest of your life could spring at you in surprise and fall in legend. Now, I see the stories that have been written and how thin the rest of the volume is. Age hopes that the rest of the tale measures itself out gently: youth wants the tale to come in torrent of words.

I think heroic deeds were all conceivâ&#x20AC;&#x2122;d in the open air, and all free poems also, I think I could stop here myself and do miracles, I think whatever I shall meet on the road I shall like, and whoever beholds me shall like me, I think whoever I see must be happy.

On my way home from the Stop and Shop, I saw the crowd building at the Chicken Box. Walt Whitman stood in the line, in a square of others, alight with fire and talk. While the pears are heating, combine the goat cheese with the pine nuts and rosemary in a small bowl. Season with a pinch of salt and freshly ground pepper (fine).

Remove the pears from the oven and cool slightly. Fill the pears, mounding the filling on top of the indentations. Drizzle over a bit of honey and bake the pears again for another 10 min. Serve immediately. Serves 4

MUSHROOM & GRUYERE BRUSCHETTA serve with a light red, Pinot Noir or Beaujolais 1 small loaf ciabatta bread or a crusty baguette 2 cloves garlic, halved 2 cups cremini mushrooms 1/3 pound Gruyere cheese, grated 1 Tbsp sherry pinch of salt fresh thyme leaves fresh black pepper, course grind Cut the bread in half lengthwise, so you have a large cut surface. You may not need the whole loaf. Grill the bread, cut side down on a hot grill until it starts to get char marks. Rub the cut sides of the garlic across the bread while it is still hot. Set aside.

Wipe off the mushrooms with a clean cloth. Trim the tips of the stems, and then slice the mushrooms into thick slices.

Heat a saute pan on medium high. Add the mushrooms and thyme leaves.

Saute til the mushrooms release their moisture and are slightly browned.

Add the sherry to deglaze the pan and scrape up the browned bits from the bottom of the pan. Season with salt.

Spoon the mushrooms and any juice onto the bread. Top with the cheese, black pepper, and additional fresh thyme. Broil until the cheese is melted and slightly bubbly.

Slice the bread into individual portions and serve right away. Serves 2

DO AHEAD: Puree half of the watermelon cubes. train the watermelon juice through a fine sieve set over a large bowl. Add the remaining watermelon and the tomatoes, cucumber, bell pepper, onion, garlic, and vinegars. Add a 1/2 Tbsp of lemon juice. Season lightly with salt and pepper and refrigerate for overnight (at least 8 hours).

Puree until smooth. With blender on, slowly pour in 1/4 cup of the olive oil. Strain into a bowl through a fine mesh sieve. Press on the solids to extract all the liquid. Discard solids. Season with salt and pepper.

In a small bowl, toss the lobster with the remaining lemon juice and 1 Tbsp of olive oil; season with salt and pepper. Serve with lobster in the center of each soup and garnish with avocado and tarragon, serve immediately. Serves 8-10 as an appetizer.

serve with Pinot Noir for the olive butter: 1 garlic clove, crushed 1 small shallot, peeled about 18 oil-cured olives, pitted 1 Tbsp chopped fresh parsley 1/2 cup unsalted butter, at room temperature 2 tsp Dijon mustard salt and freshly ground black pepper for the salmon: 6 oz orzo 1 medium wild king salmon fillet cut into 4 pieces salt and freshly ground black pepper small parsley sprigs, for garnish 1/4 cup small olives, for garnish Olive Butter: put the garlic, shallot, olives, and parsley in a food processor and pulse until the mixture is evenly chopped. Add the butter and mustard and pulse until the mixture is smooth. Season with salt and black pepper, pulse again briefly.

Transfer the butter to a sheet of parchment paper and roll into a log about 1-1/4 inches in diameter. Wrap tightly in the parchment, cover with plastic wrap. Refrigerate (will keep up to 5 days). To use, unwrap and cut into 1/4-inch slices.

Salmon: Heat the grill to medium. Fill a medium saucepan half full with water, add a Tbsp of salt. Set to boil.

Season the salmon fillets with salt and pepper. Grill skin side up for 8 minutes, rotating once to mark. Turn the salmon over and grill (2 to 3 minutes for a 1-inch fillet, longer if the fish is thicker) until it is just cooked through. just before removing the salmon from the grill, top each piece with a round of olive butter.

When the water boils and as the salmon cooks, add the pasta, stir, and cook until just tender. Drain, transfer to a warm bowl, and toss with 2 Tbsp of olive butter. Keep warm.

Divide the pasta among 4 plates and set a salmon fillet on top, skin side down. Top each piece of salmon with another round of olive butter, garnish with olives and parsley. Serves 4.

Featured Restaurant: Brant Point Grill

A Doorway to Culinary Delights The entrance to the Brant Point Grill is a stenciled glass door unobtrusively off to the right of the entrance to the grand White Elephant Hotel. It’s easy to miss and that would be a shame, as this door leads to some true culinary delights.

There are only a few fine dining restaurants on Nantucket that actually offer waterfront dining, and Brant Point Grill is an island favorite. Reserve a table on the covered deck outside the dining room and if you choose an early seating, you can watch the harbor transform from day into night, as the sky turns rosy at sunset till the moon comes out to add a silvery shimmer to the water. Come on a Friday and if you stay past 8pm, you can enjoy live music in the BPG bar while you enjoy a crafted cocktail (we recommend the ACK Crisis or Charcuterie Plate the Bee’s 75).

The Brant Point Grill has been the venue for many special occasions, and this month it will again be the venue for the Nantucket Wine Festival’s fabulous (and sold out) Harbor Gala. But we like that for all the elegance, there is no pretension here. At BPG you can enjoy a relaxed meal with friends and family (children are welcome), and linger over dinner and conversation.

The wine list was described to us as “a living, breathing document with more than 400 selections...northern and southern, old world and new world.”

New bottles are added through the season as tastings reveal what will compliment the menu and please their guests. Brant Point Grill has again been awarded Wine Spectator’s Award of Excellence.

The menu, too, has been updated. Chef Thomas William Pearson is back at the helm, and he’s added several dishes designed for sharing to his dinner menu of superb steaks, lobster, and fresh seafood. His beautifully curated Charcuterie Plate is spectacular—one of the best we’ve been served—with three different cheeses, paté, prosciutto, finocchiona, and a slightly smoky sopressata. Housemade pickled vegetables, cornichons, and housemade mustard provide a delightful crunch and delicious notes of acidity and spice.

All you need is a tall cold brew, and the BPG bar has a nice assortment of New England Micro Brews to choose from.

We were also delighted with the exquisite Pineland Farms Beef Carpaccio. The thin rosy slices of beef are beautifully presented, topped with a colorful assortment of shemiji mushrooms, pickled red onions, micro greens, tracings of truffle aioli and black garlic, and crunchy bits of brioche croutons.

(Suggested wine pairing: 2010 La Chapelle de Calon, St. Estephe, Bordeaux, France) Crab & Artichoke Dip is the ideal choice for sharing around the table.

Creamy, with just enough cheese, crab, and artichoke to be balanced and flavorful, the dip is delicious on the spiced, grilled pita bread served alongside.

(Suggested pairing: 2013 Domaine Fouassier, “Clos de Bannon,” Sancerre, Loire Valley, France) Oysters served at Brant Point Grill are as fresh as they can be, harvested just a few miles away in Wauwinet at the Retsyo Oyster Farm—truly a seato-table experience—plump and fresh and clean.

Steamed Mussels Oysters are a great choice for a heartier start. Fresh from Chatham, Chef Pearson steams them in a tomatoey cioppino broth. (Suggested pairing: 2014 Torres, “Pazo das Bruxas,” Albariño, Rías Baixas, Spain) Through the end of June, Brant Point Grill is offering a 3 for $33 Menu in addition to their regular menu, and it is from those selections that we ordered our favorite appetizer of the evening: Bison Pappardelle. Housemade pasta is cooked al dente and topped with a bison ragout full of deep, slow-cooked flavor The broad shavings of aged parmesan served overtop soften into the ragout, adding a delectable pungent bite. fresh from the docks and meats that are pasture raised and hormone-free to design a menu that has both familiar flavors and original choices. He has a talent for combining tastes and textures to create memorable dishes. Even his vegetarian selection is inspired—on this menu it’s a Seared Sea Scallops Roasted Hearts of Palm with hazelnuts and foraged mushrooms over spaetzle with manchego cheese and poached egg.

We were tempted to indulge in Chef Pearson’s Grilled New England Lobster or Surf and Turf (which is designed for two), but we wanted to taste the variety of the menu, so instead we chose the Butter Poached Halibut and Pearson’s Seared Sea Scallops. Both are sensational! The delicate halibut comes apart in big moist flakes over a luscious lobster cream sauce. Thin spears of white asparagus, sweet cubes of roasted turnips, and briny crunchy sea beans complete the dish. The delectable scallops are deliciously caramelized top and bottom, their sweet flavor intensified by a dollop of apple-vanilla jam atop each. They’re served around a delectable thick square of pork belly, the meat tender and the fat delightfully crisped. (Suggested pairing for the Halibut: 2012 Pahlmeyer, “Jayson,” Chardonnay, Napa Valley, California; and for the Scallops: 2012 Gaston André, Puligny-Montrachet, Burgundy, France) As good as the seafood is here (and it is very good), the meat entrees that stole the show.

Prime Aged Rib Eye

Steaks at Brant Point Grill are simply served and simply delicious. We were dazzled by the tenderness and rich flavor of the Prime Aged Rib Eye. The thick steak arrived at table with beautifully charred edges, its center warm and red—exactly medium-rare, as ordered. The rib eye rested upon a sweet, bright orange carrot puree and a pat of herb butter melted down to run into the jus. At 16 ounces, it was a bit large for us to finish at dinner, but it made lunch the next day very special. (2012 Bramare, “by Paul Hobbs,” Mal-

bec, Lujan de Cuyo, Mendoza, Argentina) In true Steakhouse fashion, there are a variety of sauces and sides. The peppercorn sauce is our top choice for the steaks, and the BPG Signature Lobster Mac & Cheese (which is large enough to be a light meal on its Grilled Pork Chop own) and the Green Beans and Pine Nut Salad are the two sides we highly recommend.

Bite by bite we explored the Grilled Pork Chop that was the 3 for $33 entree we chose. Thick and succulent, the chop is nestled in a bed of satiny smoked mashed potatoes studded with pearl onions and topped with chopped grilled romaine, smoky salty bacon, and peas. Every forkful could have a different flavor, each one splendid! (2014 Henri Boillot, Bourgogne Red, Burgundy, France) Sommelier Robert Pruett suggested we finish the meal with a Dow’s 20 year Tawny Port, or a Christain Drouin Pays d’Auge, XO, Calvados, but we couldn’t resist the desserts.

BPG’s trios of Housemade Sorbets or Ice Creams fit the bill for a light finish. But their justifiably famous Chocolate Fudge Cake named for pastry chef Marcia Bruce left us Vanilla Creme Brulee purring with delight, and we especially loved their Vanilla Creme Brulee for the fact that the choice of a tall cup rather than the typical flat oval dish gave us more of the satiny-sweet custard to spoon up and enjoy.
