On March 4 of 2020, Nantucket lost a beloved artifact when a motorist (reportedly suffering from glare) struck and broke the iconic fountain that stood on Main Street for more than a century. Donated to the town in 1885, the fountain was originally installed at the top of Main Street. It was connected to a water main, and the lower, round basin was used to water horses. Spigots higher up provided fresh water for people. Eight years later, when street lighting was installed, the fountain was moved to the bottom of Main Street and disconnected from the water main. Extensive research done by Hillary Hedges Rayport, Chair of the Nantucket Historical Commission, revealed a number of little-known facts about the fountain, which she shared with us. The information she found reveals that there were at least two public fountains on Main Street in the 1880s. An article in a July 22, 1893 edition of The Incontinued on page 11

Since the beginnings of the pandemic restrictions in March, there’s been a surge in home cooking. From sourdough everything to complicated pies and homestead recipes for foraged harvests, island residents have been spending more time than ever in their kitchens, experimenting and sharing successes. We asked the many chefs and restaurateurs who are an essential part of our Nantucket community to share with our readers one of their favorite holiday recipes. We must have hit a chord with our request because we received more than we can fit in this issue. We want to share them all, so we are printing a selection of the recipes here, and you can find all the recipes, along with some of the chefs’ stories, online at yesterdaysisland.com. Here’s to full bellies and happy holidays! Magee Detmer of the Nantucket Bake Shop on Old South Road (where we all buy Portugese bread for our stuffing recipes and ship their cookie baskets to friends for the holidays) shared her Holiday Baked Brie and told us this is a favorite holiday tradition: “I use chopped dried cranberries for the fruit and our cranberry preserves for the jam. Sometimes I add pecans inside as well. “Our traditional meal always includes the classic roast beef, stuffed potatoes, (we call in-and-out potatoes), popovers etc. Pretty heavy right? And yet the only appetizer requested is always the baked brie.â€? 1 sheet of frozen puff pastry, thawed ad directed 1 egg, slightly beaten 1 round of brie cheese (about 14 oz) in a round box 1/3 c. dried fruit 1/4 c. jam or preserves Unfold pastry on a lightly floured surface. With a lightly floured rolling pin, roll into a 14â€? square. Cut an 8-1/2â€? square from corner, trim to round off corners. Using

Winter Staycations by Dr. Sarah Treanor Bois

Director of Research & Education at the Linda Loring Nature Foundation After a rather mild fall, Nantucketers have been spoiled with the unseasonably warm weather. As winter looms and truly sets in, many of us may be in the mood to hibernate. During typical winters, many Nantucketers vacation in warmer climates or go on winter wonderland get-a-ways to the mountains. Travel restrictions and isolation are on the mind, and we need to focus on how we can enjoy what our island has to offer this winter. Instead of retreating indoors back to Netflix and endless bread-baking, how about getting out into nature? Nantucket has a lot to offer during the off-season. Being out of doors is one of the safest things we can do in the time of COVID. Beyond just taking the dog for a walk to the usual haunts, there are many creative ways to enjoy natural Nantucket in winter. So how about trying something new to make our island seem a little bigger?

BIRD WATCHING

Nantucket is a special spot for bird watching year-round. Thirty miles out to sea makes us a great stopover for migrants. Late fall and winter storms can also bring unusual birds from afar—a treasure for local birders adding to life-lists. Many of our migrants have already flown south, but we are now entering winter duck season. Nantucket is “away” for these hardy ducks who breed in places like the Great Lakes region and some in the high arctic. Sightings this winter may include Longtailed Ducks, Scaup, Scoters of various species, and Mergansers. Nantucket in winter is a mild temperature getaway for these ducks! Winter is also the time of “the great gull show” where a myriad of gull species congregate on beaches like Low Beach in Siasconset which we normally don’t see in the summer with our typical gulls. Lesser black-backed gulls, Iceland gulls, and, if you’re fortunate, a rare Glaucous gull are ones to look out for. It wouldn’t be December without the annual Christmas Bird Count, which was started on Christmas day in 1900 as a bird census. The date for Nantucket’s 2020 Christmas Bird Count is Sunday, December 27. As one of the organizers, Ken Blackshaw said, “It will be an interesting project in this year of COVID and social distancing, no car-sharing, etc. All meetings will be done remotely/virtually…(but) the birds are still out there—thriving actually!” For more details on how to participate, join the Birding Nantucket Facebook group or contact lead organizer Edie Ray at ackbird@aol.com. As with everything this year, the details won’t be finalized until closer to the date. New to Nantucket birding? For aid in identification, pick up a bird guide at Mitchell’s Book Corner and join the Facebook Group: Birding Nantucket. The Ebird for Nantucket page—ebird.org/region/US-MA-019—will give you the most recent sightings and hot spots. We may not be able to bird together, but we can still share knowledge!

TAKE IN A SCIENCE TALK

If the winter weather gets too frigid to venture out and the woodstove is just too warm to leave, thanks to Zoom, you can now learn all about island science without having to leave the comfort of your couch. Multiple organizations are hosting winter speaker series to keep us all up to date about island flora and fauna. The Linda Loring Nature Foundation is hosting monthly Science Pub Talks. Check out llnf.org for info and to register. The Nantucket Atheneum is hosting multiple talks each week on a variety of topics including science and nature. You can even catch up on talks that you missed! The Linda Loring Nature Foundation, the Maria Mitchell Association, and the Nantucket Atheneum all have YouTube channels where previously recorded talks are saved to view whenever it’s convenient. You can hear about Nantucket bats, coastal resilience, our cosmos, and so much more. See the individual organization websites for the library of possibilities.

SHELLFISHING

Shellfishing (or clamming/clam digging) for clams, oysters, and mussels, is a traditional Nantucket activity. In Massachusetts, recreational shellfishing is regulated by each town. For all the local regulations, check out the Nantucket Shellfish Association which has all the Town regulations in one spot at nantucketshellfish.org/standards. In winter, the shellfishing mainly involves digging or raking. It can be cold, but after being shut in all winter, “softshell Sundays” are a welcome change of pace. Generally, scallop season lasts until March 31. Fun for the whole family and you end the day with a delicacy on your plate! As noted, you can dig for softshell clams only on Sundays. Spend an hour or two with the kids digging and spend Sunday afternoon steaming them open to dip in some butter. continued on page 24

Myth of the Star & Truth of the Constellation by Robert P. Barsanti

The great lid of winter has been sliding over the island. Over a few days, the last visitors of summer danced and tumbled, but then they slipped away and left us with the gray, the cold, and the damp. The leaves have fallen and blown into drifts and piles, then to be stomped, soaked, and frozen. Behind the bare limbs, the neighbor’s windows glow. They have a new TV set and, starting at 4:30 in the afternoon, Fox News dances through the glass and across the stone patio. The R months have emerged as the blossom and bloom of summer has fallen away; the brown and gray foundations reveal themselves again. It’s just us, again. The R months bring their own pleasures, some of which taste best with butter, white wine, and touch of garlic. The Old Salts, the ones we learned from, like to eat the scallops raw and pronounce them fit, but the performance does not live up the the truth after two or three. You don’t often see the Old Salts popping the scallops back like pop corn. The truth will out, no matter how strong your faith. I have stood among the eel grass, hip deep in the Atlantic, raking for scallops. I have trailed a floating basket and walked further out in still water. For a new islander, on their first winter, no activity brings you into the island more than scalloping. You stand in the footsteps of those who came before you, up to your hips in nature, and pull delicious food from the sea. When you go raking for scallops, you discover yourself in the middle of this horizon of water, underneath a rolling set of clouds and held in that inhale of the tides. You are an island of one, amidst a quiet, giving, and dangerous world. But you aren’t. Instead, the lone scalloper out in the eel grass of Madaket stands at the end of a long train of responsible people. The dinner he spreads before his friends, complete with story, pictures, and drying waders on the line, isn’t his own. Instead,

the meal owes itself to the generations of scallopers that came before and did not overfish the beds. It nods to the landscapers and homeowners who cut down or eliminated the fertilizer. And it smiles on the other scallopers, out in the harbor, who kept silent watch and took attendance of everyone who is upright and warm in the cold Atlantic waters. We have lost too many people in quiet of a December morning to the weight of cold water. We live in constellations, connected by invisible lines of trust, character and responsibility. Scallopers, alone between the land and the horizon, forget those invisible connective lines. One of the unfortunate aftermaths of family scallop season is the family scallop dump. We love the muscle that holds the shell together, we don’t care much for the life that created it. So, the cleaning of the scallops invariably creates a large pile of death along with a small pile of delicious. (I don’t apologize for it; carnivores should know what they are eating). But we have piles for the dead; you can either put them in the pile at Jetties Beach or out by the old road into the dump. But, you shouldn’t put them in the back yard, your neighbor’s back yard, Sanford Farm, or a dumpster. The shells will not magically dissolve into the landscape, instead they will be picked at by gulls, feasted on by rats, and decomposed into a ripe odor. Your freedom ends someplace between the rat and my nose. I understand why people dump their scallop shells into bushes and lawns: they don’t know the problems, and they don’t care. In America, we learn the myth of the star and ignore the truth of the constellation. It takes years to unlearn the myth of the solitary and free man and more years to absorb the wisdom of the crowd. Everyone of us was told, over and over, that we were the special one...we had the lightning scar, the hidden family, the Promised Present. When we became continued on page 12

stars, we would shake the dust from our feet, empty our shoes of sand, and go to our Great Expectations. What does the lottery sell, otherwise? Then, as the years wore that myth into the mud, we find ourselves tied to the rest of the world through the gray lines of responsibility. Freedom isn’t free: it is licensed. We can go and scallop because others have made it possible. They have given us the license to do it. If they had not been responsible and had vacuumed up every scallop they could find, fertilized their lawns to a glowing green, or done any of a number of “free” things, the scallops would be no more. Freedom arrives in June, with a fat wallet and four-wheel-drive. Responsibility emerges in the R months. In our thinner numbers and without the blooms and the bushes, we see those lit windows. During these months, we count, we measure, we plan. The island, as lovely a place as it is, doesn’t exist without responsible people to shepherd it away from the selfish, the greedy, and the Free. The Land Bank, the Trustees, the Conservation Foundation were all built with that gray cement of responsibility. And every dime we take and every scallop we rake comes from responsibility, not freedom. In the winter of disease, when calamity and catastrophe shop for turkey and stuffing, we should put our hands to that responsible gray cement. We can’t blame the New Yorkers, or the ferries, or the college kids. The disease preys on the “free.” We are the ones who were free to have church suppers, free for Halloween parties, free for puppet shows on birthdays. And we are the ones who will have to be responsible: we will have to wear the masks, to keep the family off island, to bravely sit on the couch. In the R months, it’s just us—just us living or just us dying.

Selectmen Perplexed.” and refers to the problem of traffic congestion due to the fountain: “...if a team drives along from the northward, through South Water street, and the horse stops at the fountain for a drink, all traffic coming from the north is held up until the horse is through and the driver chuckles to him to move along. The same thing occurs if a team drives up from lower Main street and the driver turns the horse in towards South Water street and stops at the fountain.” The article also covers some history, stating that the fountain was “first placed on Main street in 1882” close to the curb opposite Orange Street: “the fountain then quenches thirst of both man and beast, and four heavy iron drinking cups were fastened to chains which dangled from the bowl. Men and boys — and women, too—drank from those iron cups—germ laden we presume—but in those days there was not such a grand fight against the poor little germ as there is today.” In 1932, the lower section of Main Street and the fountain there were dedicated to the memory of Lieutenant Max Wagner, husband of Jennie Macy who was a decendant of one of the first English families to settle on Nantucket. Lt. Wagner was a member of the 26th Massachusetts Regiment who died of wounds he received fighting in the Philippines as a result of the Spanish-American War. Over the decades, the Lt. Max Wagner Memorial Fountain has become a much photographed island landmark. Though the incident last March was not the first time the structure had been damaged, it was the first time in recent memory that it had to be removed for such a length of time. Now, nearly nine months after the accident, according to DPW Director Robert McNeil, the fountain repairs are almost complete. “We expect to have it back in the beginning of December, some time before Christmas,” he said. McNeil explained that the wrought iron fountain had been repaired several times over the past century, but that this repair is a “complete restoration” being done by Cassidy Brothers Forge, a restoration specialist in Rowley, Mass. He also mentioned that it took a considerable amount of time between March and September to negotiate an agreement with the insurance company to fund the repair. “Having the opportunity to do a full restoration is great, and I’m delighted to be a part of it,” McNeil commented, “I learned a lot during the procedure. “When I first arrived on the island, the paint on the fountain was chipped and fading. It was such a focal point, and I thought it would be a good idea to have it repainted, also Max Wagner’s plaque had not been serviced in a long time. So we made it one of the priorities to have it painted. We put the primer on it on a Friday… the amount of phone calls we got over the weekend…” McNeil chuckled

“… it caused SUCH a stir. I was not expecting that. It was quite an introduction to Nantucket. In the end it looked great… up until it got hit. I know the Garden Club is dying to have it back!” In 1973, the Nantucket Garden Club took responsiblity for adorning the fountain seasonally and caring for the plantings. “We do it year-round,” explained Garden Club President Maryann Wasik, “it’s a labor of love for us, and quite an undertaking: getting the plants, putting them in, and making sure it gets watered—that’s one of the hardest parts, it gets quite dry during the summer months. We’re happy to do it...Jill Sandole has been doing it for years and Dottie Gennaro has been helping this year with the urn.” McNeil thought it was important to maintain something where the fountain stood until it could be replaced so that drivers did not get accustomed to the fountain not being there. Bartlett’s Farm donated the urn, and the Garden Club members “have been doing our best with it.” “We will be absolutely thrilled to have the fountain back—it’s important to us,” Wasik commented. “Jill and Heidi Drew have already planted spring bulbs indoors to prepare for a massive display come spring.” Most island residents and many visitors have missed seeing the beautiful decorations in the historic fountain and will be happy to see it back in place on Main Street. AAN Exhibition Rings in the Holidays A peaceful harbor, softly falling snow, cozy fires & steaming cocoa, flaming plum puddings, holly, winterberries, festive greens and great art—all signs of the holiday season on Nantucket. And so is the Artists Association of Nantucket (AAN) annual Holiday Small Works exhibition. The exhibit opens on Friday, November 27, at 10 am in the Cecelia Joyce & Seward Johnson Gallery, 19 Washington Street. “Warm the Heart with Holiday Art” will be showcasing—in small format sizes—gifts of oil paintings, watercolors, ceramics, photographs, and wooden pieces. The display will be open to the public through December 23, with best Covid safety measures in place. “This is a long-standing holiday tradition on the island and within our community, and we feel supporting local Nantucket artists, particularly this year, is a special and meaningful way to kick off the season,” said AAN Executive Director Courtney Bridges. “With over three hundred artist members in our organization, there is a wide variety of beautiful work from which to choose. I can’t think of a

better holiday offering than a one-of-a-kind gift of art.” “All of the work has a size restriction of 12 x 16 inches or smaller, so for those wishing to give gifts of art or those with limited wall space, this is the ideal exhibition to find that perfect piece,” said AAN Gallery Manager Peter J. Greenhalgh. This in-gallery exhibition will be on display at the same time as AAN’s robust Holiday Works Online, which features more than one-hundred works for sale. Kids under 14 are free, but children must be with an adult who has a valid permit. Even when my son was small, we could teach him how to find the bubbles in the sand. He could dig them himself (sort of), but mostly he could tell us where he saw the bubbles for us to hand dig. With more than 50% of Nantucket under conservation, there are so many places to explore. There is no need to get stuck in a rut! The Nantucket Conservation Foundation (NCF) has their ACKtrails app to explore their properties. This app will help you discover new NCF properties and also provide some points of interest on properties you may already know and love. The Linda Loring Nature Foundation (LLNF) has a self-guided nature trail. The brochure can be downloaded at llnf.org and comes in 6 different languages. The popular LLNF StoryWalk is up trailside, and a new story will be installed in early December. Some organizations are offering guided walks in winter with local experts. COVID restrictions apply and spaces are limited, but it’s great to be able to ask questions in-person to someone who knows (rather than random posts on social media). Need help figuring out what you’re seeing? Use the iNaturalist app to take a photo and identify a bird, plant, animal, egg case, shell, etc. Using the public, free app, we can all take photos of cool things in nature and share them with the community. Experts will even identify them for you! When headed out on the trails, remember that hunting season lasts until December 31, so if you venture out Monday-Saturday, remember to wear hunter orange or other bright colors. Hunters are out putting long hours into their hunting spots while helping to maintain the balance of the island’s deer population. We are fortunate to have thousands of acres available for roaming. The important thing to remember is that this is a privilege. Please respect the rules of each individual organization and property; keep dogs on leashes, pick up trash, clean up after your dog, no bikes where applicable, and even no dogs on some properties. Remember to practice social distancing and follow CDC guidelines.

top of the cheese box as a guide, cut a circle out of remaining pastry. Brush square & circle with the egg. Save remaining egg & pastry scraps. Starting at 1 rounded corner, bring pastry up over cheese. Place pastry circle, egg side down, on top: press gently to adhere to brought-up sides. Place circle side down on baking sheet and brush top and sides of pastry with egg. Decorate if desired. Let glaze set. Cover with plastic wrap and refrigerate up to 3 days. When ready, bake the brie direct from fridge in a 400F preheated oven for 25 min. until golden brown. Cool 10 min before serving. Chef Joseph Ranstatler of Dune told us “My family like most spend a lot of time together in the kitchen... These recipes are simple and tasty reminders of my childhood holidays ... Apple Cider is huge in Buffalo where I’m from and we used to make a day of going to the orchard and pick apples and buy cider to drink throughout the fall and holidays especially Christmas morning.” Here is his recipe for Cinnamon Apple Cider. You can find his recipe for Broccoli Casserole at yesterdaysisland.com. 1 quart your Favorite Apple Cider 2-4 tablespoons red cinnamon candies 1 cinnamon stick(save after for more use just put in fridge) Heat all gently while stirring until candies are melted. Use as little or much candies as you like and drink hot or cold Chef M.J. Mojer of Bartlett’s Farm sent several recipes—you can read her full article at yesterdaysisland.com—commenting that she collects cookbooks, and especially loves the original Bartlett’s cookbook, saying that “a couple of the recipes that I love (and they are easy to find in my dog-eared, coffee cup stained copy) are just right for the holidays. Here is Cranberry Orange Relish from Dorothy Bartlett, and, if you’re lucky enough to have Nantucket Cranberries, all the better. Our children not only loved to make this easy to prepare relish, they also loved eating it. If I wasn’t careful, they’d sneak “‘samples” out of the refrigerator while I wasn’t watching, and I might find it nearly gone when I went to use it. They would just as soon eat it like a dish of applesauce or ice cream. This relish can be made days, even weeks ahead. And it freezes well. 4 cups fresh cranberries 2 oranges with thick skins, quartered and seeded ½ to 1 cup sugar Wash and sort cranberries, removing any stems or soft berries. Put cranberries and oranges (including skins) through a food grinder or Cuisinart. Save juice. In a large bowl, combine fruit and juice and add sugar until desired sweetness is reached. Refrigerate to allow flavors to blend. Variation: For a sweeter version add chopped apples and/or nuts. Yields approximately 1 quart Ron Oldham, chef and co-owner of the Downyflake (still open for breakfast and lunch), shared his recipe for Pumpkin-Crab Soup. “This is one of my old favorites. I started cooking on the Delaware & Maryland Shore in the summer during my school vacations. Eventually, I began staying on the shore through the off-season. I put this recipe together to bring to the potluck Thanksgiving dinners with restaurant friends who were also off-season stragglers. The recipe combines the flavors of autumn with the tastes of the shore.” 1/2 c. diced onion 1 can pumpkin puree (15 oz) 8 oz chicken broth 2 cups heavy cream 1 Tbl pumpkin pie spice 4 dashes green Tabasco 1 pinch of Old Bay seasoning 6 oz crabmeat (claw meat breaks up well in the soup & has good flavor) salt & white pepper toasted sliced almonds and finely chopped parsley for garnish

Sautee onions till transparent. Add chicken broth and pumpkin puree. Stir and bring to a simmer. Add the cream, spices, and tabasco. Bring to a boil and then simmer over low heat. Add crabmeat. Salt, pepper, and adjust seasoning to taste. Garnish before serving. Recipe makes approx. 4 servings. Amy Young of The Beet (serving lunch and dinner Tuesday-Saturday) told us their Butternut Squash Soup with Sage Brown Butter is a favorite because “the holidays are all about comfort food, and soup warms the soul!” Cut 3 peeled and deseeded butternut squash To make the sage brown butter, put 10 leaves sage and 1/4 stick butter in pot and cook till butter is brown. 3 quarts water 1/4 cup honey 1 Tbs cinnamon salt & pepper to taste Simmer together till squash is tender and purée in a blender. Serves 10-12 Susan E. Handy, general manager & owner of The Chanticleer and Black-Eyed Susan’s (which is serving dinner until mid-December this year), shared her family version of Pearl Onions in Mornay Sauce, and said “Pared with turkey, stuffing, green beans, and fresh cranberry/orange sauce is to spend an evening in tastebud heaven All the best to you and yours this winter.” Blanche a pound of white pearl onions and drain. Make a classic Mornay Sauce (2 cups) using 1/2 Gruyere and 1/2 Emmenthaler cheeses. In addition to the classic ingredients, add 2 dashes of Tabasco, 1/4 tsp of paprika and a dash of Worchester sauce. Bartholomew Gangemi, owner of Easy Street Cantina and the Nantucket Cookie Company not only shared his recipe for Nantucket Bay Scallop Scampi, but he also added the dish to his holiday menu, so you can stop by his eatery at Easy Street & Steamboat Wharf to taste it: he’s open daily to mid-December. He likes this dish because “it is delicious and naturally festive in appearance. It can can be prepped ahead of time and is a different way to enjoy a Nantucket treasure while utilizing a version of a classic dish.” The recipe serves 8. 16 large Nantucket Bay Scallop Shells (cleaned WELL, bleached, & run through dishwasher) 1-1/4 lb. of fresh Nantucket Bay Scallops 1 red bell pepper (1/4 -inch dice) 1 green bell pepper (1/4-inch dice) 1 large shallot (minced fine) 1 clove garlic (pressed in garlic press or sub 1 Tb minced garlic in oil) 12 ounces bacon (1/4 -inch dice) 1-1/4 cup panko breadcrumbs 1 T Bartholomew’s Nantucket Island Spice 3 T Pernod liqueur 1/4 stick butter 4 T olive oil 2 lemons cut in quarters In large skillet on medium-high sauté diced bacon, stirring often until bacon is half-way done, remove bacon & reserve. Pour off bacon grease and wipe out skillet with paper towel. Place 1T bacon grease, butter and olive oil in skillet, add shallot and garlic to skillet and sauté on med-high, stirring often about 1 minute. Add peppers and Bartholomew’s Island Spice to skillet, stir, reduce heat to medium. Stir often and cook until peppers are starting to soften, remove from heat. Do not brown: peppers should still have color and be firm to touch. In large mixing bowl place pepper sauté, bacon, breadcrumbs, and Pernod. Fold all together. (This can be done ahead of time, even a day before, and held in refrigerator.) If mix seems too moist, add more panko. Place 2-4 scallops in each shell, top with your crumb mix and bake in pre-heated 375 degree oven for 10-15 minutes until scallops are done. If crumb mixture needs color, put under broiler BRIEFLY: do not burn. Serve on small plate lined with cocktail napkin and garnish with lemon wedge.
