“I’d give you the last bite of my food at dinner.” -Us everyday

This past Valentine’s Day we were faced with making the toughest decision any pet owner must, we said goodbye to Al. He told me that morning it was his time, he had loved us long enough and he wanted to be able play again. My heart sunk; I didn’t want it to happen Valentines Day. You see, I got him 13 years ago because someone purchased him to be a Valentine gift, but they never picked him up. Poor guy was stood up on the most romantic day of the year. The breeder that Randy came from the year before called me early summer 2009 to see if I would adopt him. Of course I went to “meet him”. He was 6 months old, so black you couldn’t see his eyes, his body was way too long, his feet were huge, and his ears were spread apart like an Ewok! How could I not bring him home? And so he was dubbed Saint Alphonso ...yes pancake breakfast, Zappa “Randy & Al 2009 From that day forward they were known as “The Boyz”. They loved each other. They walked in unison. Al was bigger than Randy in no time, but Randy was always the boss. They have been my companions, my buddies, my comfort, my reason to get up when I didn’t want to get out of bed. “You can usually tell that a man is good if he has a dog that loves him” -W. Bruce Cameron When Ken became part of our lives in 2015 they quickly trained him how to take care of them. Al was really Ken’s guy. He would wiggle from head to toe and cry like a little baby when Ken pulled in the driveway. He became a ‘big boy’ once he had a guy he could call his own, I became 2nd best. We did the “4 man” every night. We sat together in our loveseat and snuggled while they chewed their bones like little lunatics. As they got older they were like a comic strip of themselves. Two grumpy old dog-men. Randy talks constantly, he has full blown dog conversations with us. Al was the sneak, the bone stealer, the “I didn’t do it Mommy” face. He would steal my socks for years, I always swore it was Randy. I came back in the house once and there he was, in all his glory, tossing my sock like it was prize! I tried to put on the dog parent face, the stern look you shoot for when you are cracking up while you are trying punish them. He was just so stinking cute! This was so hard for both of us. Right down to saying goodbye on Valentines Day. We decided it would be our final act of love for Al. The 4 of us were together. We wanted Randy to know his brother was leaving us. I want to thank Burnt HIlls Al (St. Alphonso) Veterinarian for giving us a private goodbye, together as a family. We know it was 2009 - 2022 important for Randy to be there, we know he understood. We watched him as Al left us, he stood in front of him, he looked up toward the ceiling and he breathed him in so deep, it was like he kept him inside of himself. Now we are 3. You Deserve To Be Your Best Self! I have had people ask, “Do you really want me to get checked for the rest of my life? Even if I have no symptoms?” My answer has been, “No, only as long as you want to be at your best and continue to work toward fully expressing your purpose and potential in life.” Do you still take your car to the mechanic for an oil change even if you FEEL like it’s running smooth? Some Thoughts on Probate and the Probate Process What is Probate? If I have a Will, can I avoid probate? Is Probate bad? Do the directions made in a Will override beneficiary designations? Here are some answers to your most frequent questions. In its simplest form, Probate is a Surrogate’s Court process in which a person’s Last Will and Testament is Decreed by the Surrogate Court Judge to genuinely be the decedent’s last Will. Also, the nominated Executor is confirmed to have the administrative power to deal with the assets as directed in the Will. The need for Court intervention is not created by the Will, but by the deceased person having left assets that don’t have a beneficiary, joint owner with rights of survivorship, or other similar arrangement which allows for the assets to automatically pass to another person. The nominated Executor cannot simply take the Will to the bank and expect action. He or she must first get this Court Decree and “Letters Testamentary” as evidence of their authority. If there is no Will, New York State has a prioritized list of kin who may inherit the property, but it is still necessary for someone “with standing” to go to the Surrogate’s Court to get authority to administer the estate. Without a Will, the statutory distribution may not be as the decedent described or family members expected. Yet still that statutory distribution will be what the law will require. The Court process will only apply to assets that DO NOT have a joint owner, beneficiary, or transfer on death designation. If the “wrong person” is named (e.g., the ex-wife) and the decedent made a mistake in thinking the new Will would change the beneficiary, the beneficiary statement will be controlling and not the Will.

Probate and the Administration (non-Will) process both require that the statutory designated “next of kin” receive official notice of the Court process and an opportunity to object to the Will or the person applying to be in charge of the estate. While in many families, this is perhaps an administrative annoyance and expense, in other circumstances, this can be hugely time-consuming, inconvenient, unpleasant and upsetting. Once this hurdle is crossed, it is still necessary to report back to the Court periodically to provide assurances that the estate’s business in moving along in a timely manner, that creditors are paid and ultimately that beneficiaries receive their full and fair share of the estate’s assets. Some situations make this more difficult to accomplish, particularly where there is diversion of opinion between family members. It is my recommendation that you have a Will so you can designate what happens with your property after your death. Over and above the Will, I recommend you consider “testamentary substitutes” like joint ownership, beneficiary designations and sometimes a trust. Nevertheless, it remains very common for a court procedure to be necessary for some or all of the decedent’s assets. With a good Will and professional guidance, the process will be much more manageable. Let us know how we can help.

Why 2022 Is The Best Year To Go Solar If you were waiting to go solar, this is it. • Solar incentives have not been this lucrative in over 7 years. • Customers who go solar in 2022 can expect to save an additional $1,400 on average. How Is This The Year? The solar industry has always been a one string banjo, “this is the year to go solar” & “incentives have never been higher.” The good news for you is it’s finally true. The turn of the new year saw the announcement of Governor Hochul’s plan to power an additional 700,000 New York homes with solar by 2030. The incentives to accomplish this goal haven’t been seen in 7 years. With the governor’s announcement came the opening of a new New York State Energy Research and Development Authority (NYSERDA) block grant, a grant which previously gave $.35 per watt now gives $.50 per watt. The average solar customer can expect to save close to $1,425 more when they buy in 2022 vs 2021. This block grant once fully utilized will drop a tier, rewarding less money per watt ($.35 per watt to be specific). This means this incentive is first come first served, those who move fast will be rewarded more money. This new development in combination with the longstanding State and Federal (ITC) incentives cover up to 51% of the total investment via tax credits. Solar has not been this lucrative of an investment for some time and while it’s hard to look into the future, it will most likely never be ever again as renewable energy becomes more mainstream.

The March Awakening The year is moving forward as if it knows something we don’t. Unencumbered and quiet. Moving ever so slightly. Advancing without looking back. A friend of mine posted something the other day. It was attached to her success living a healthier lifestyle. what’s Non-traditional St Patrick’s Day Dinner for those of us who are not a fan of boiled everything.

Brown Sugar and Mustard Glazed Corned Beef Serves 6-8

• 1 lb corned beef brisket • 3/4 cup light brown sugar, packed • 1/3 cup water • 1/4 cup butter • 1⁄2 cup hearty brown mustard 1. Rinse off the brisket under running water. 2. Trim off excess fat. 3. Place in large stock pot and cover with water. At this point you may use the seasoning packet that came with the corned beef. 4. Bring to a boil. 5. Lower the heat to simmer. 6. Cook about 3 hours until very tender (skimming fat as necessary). Add more water if needed to keep covered. 7. CROCK POT DIRECTIONS: If desired, cook corned beef in crock pot until tender. Continue on past this point. 8. Preheat oven to 325º. 9. In a sauce pan, combine the brown sugar, water and butter. Bring to a simmer over medium-high heat. 10. After about 5 minutes, stir in mustard. 11. Continue simmering another 2-3 minutes. 12. Place the brisket on a rack in a roaster. 13. Thinly coat meat with glaze. 14. Put in oven and bake for 30 minutes, reglazing every 10 minutes. 15. Remove from oven and let rest at least 15 minutes. 16. Slice thin to serve. Wiggle room- add ½ raisons to the glaze before coating the corn beef.

Recipes with wiggle room Colcannon (Mashed Potatoes and Cabbage) • 3 pounds potatoes, peeled and cut into chunks • 1/4 cup milk • 2 tablespoons mayonnaise • 1/4 cup unsalted butter • 4 slices bacon, chopped • 1 onion, diced • 1 clove garlic, minced • 1/4 teaspoon cayenne pepper • 1/2 head cabbage, sliced into thin strips • 1/2 cup water • salt and ground black pepper to taste 1. Place potatoes into a large pot and cover with salted water. Bring to a boil, set heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and transfer to a large mixing bowl. 2. Stir milk, mayonnaise, and butter into potatoes. Mash with a potato masher until smooth. 3. Cook and stir bacon in a large skillet over medium heat until fat is rendered, 3 to 5 minutes. 4. Stir onion, garlic, and cayenne pepper into bacon and drippings and cook, stirring often, until onions are translucent, about 5 minutes. 5. Stir cabbage and water into onion mixture until cabbage is wilted, about 5 more minutes. Season with salt and black pepper. 6. Fold cabbage mixture into mashed potatoes and mix until lightly browned, 3 to 5 minutes. 7. Stir mashed potatoes and cabbage mixture until combined. Transfer oven proof serving dish to keep warm Wiggle Room- Top with your favorite cheddar cheese for an even more comforting comfort dish!

Roasted Carrots and Parsnips • 1 1/2 pounds carrots • 1 1/2 pounds parsnips • 1 tablespoon olive oil • 1/2 teaspoon dried thyme • 1 teaspoon coarse salt • 1/8 teaspoon ground pepper 1. Preheat oven to 350 degrees. Peel carrots and parsnips; halve crosswise to separate thick and narrow parts. Halve or quarter thick parts lengthwise (so pieces will be similar in size); cut both parts diagonally into 3/4-inch pieces. 2. On a large rimmed baking sheet, toss carrots and parsnips with oil, thyme, salt, and pepper. Spread in a single layer. 3. Roast vegetables until tender, tossing once or twice, 1 hour to 1 hour 20 minutes (if vegetables begin to stick to the pan, sprinkle with water, and loosen with a spatula). Serve immediately.

Bailey’s Salted Caramel Chocolate Pie • 6 ounces semi¬sweet chocolate chips • 1 chocolate cookie pie crust (or other pre¬baked pie crust) • 1 cup whipping cream • Coarse salt for sprinkling • 1 tablespoon sugar • 2 fluid ounces (4 tablespoons) Baileys® with a hint of Caramel 1. Melt chocolate chips according to package directions, and set aside. 2. Whip cream and sugar together until soft peaks form. 3. Gradually add Baileys with a hint of Caramel. 4. Gently mix in melted chocolate. 5. Evenly pour mixture into pie crust and top with a sprinkling of coarse salt. 6. Refrigerate for 4¬6 hours, or until set. Serves 8. Wiggle room - Substitute other Baileys flavors to create different versions. Optional for garnishing: shaved chocolate, caramel sauce for drizzling

Maple Weekend 2022, It sure is Sweet! What is Maple Weekend?

Maple Weekend is a chance for the public to come to the farm to learn about New York’s maple sugarmaking processes and traditions and to provide a chance to taste pure maple syrup in its many forms – right from the source. When did Maple Weekend in New York State begin? 1995 was the first year, as a single “Maple Sunday”. 2022 is the 26th year of an event that now officially spans 4 days on 2 weekends. Where is Maple Weekend? Maple Weekend happens at locations all across New York State. This is agri-tourism at it’s best – come right to the farm to see the process, smell the delicious smell of maple sap cooking down to syrup, and taste many of the maple products made right there on the farm.

What are the dates of Maple Weekend? 2022: March 19-20 and March 26-27

We will be there regardless of what the weather does! 10 am to 4 pm each day at most locations. Check your planned destination for any exceptions. What is the cost?

Tours and product samples are offered at most sites free of charge (museums are the exception). On-site pancake breakfasts, where available, incur a per-plate cost and prices vary by location. Check out producers offering a pancake breakfast here!

What should I wear?

Many locations are rustic and most will be muddy. Dress in layers and wear closed-toe or insulated footwear.

How and Why to Build a Raised Garden Bed This Season Fairly easy to construct and even easier to maintain, raised garden beds are a great way to raise plants and vegetables in the comfort and convenience of your backyard. • Why use raised garden beds? A raised garden bed can help facilitate the ideal growing environment, as most people don’t have that perfect soil naturally in their yard. The height makes them easier to work in and maintain. Plus, they’re a nice architectural design element in any landscape. • What’s the ideal size? The main rule of the thumb applies to width. The bed should be no wider than 4 feet, as you never want to compact the soil when working. Length however, is based on personal preference and needs. As far as height is concerned, you want the roots to be able to grow out and down as much as possible -- 6-inches at minimum. While 12-inches is common, anything higher is a bonus. • What materials work best? For organic gardening use untreated hardwood, as it lasts almost as long and doesn’t contain chemicals. Other materials you have around the home and yard, such as rocks, old tubs, etc., can work too. • Where’s the best location? Build your raised garden bed on level ground, in full sun exposure near a water supply. DIY Instructions: To build a 10-foot x 4-foot x 18-inch raised bed, you’ll need: • Nine 6-inch x 6-inch x 12-foot cedar timbers • Tape measure, t-square and marking pencil • A saw and extension cord • One box of 10-inch heavy-duty exterior wood screws • Ten 24-inch x 1/2-inch rebar stakes • Twenty 10-inch galvanized timber spikes • Sledgehammer • Impact drill and long drill bit • Level • Hammer • Shovels • Hardware cloth, wire cutters and fence staples • Work gloves, safety glasses and ear plugs • Wheelbarrow (to transport soil) 1. Begin by cutting six, 6 x 6 timbers, each measuring 10-feet 6-inches in length. And six, 6 x 6 timbers, each measuring 4-feet 6-inches in length. Drill rebar holes in each timber. 2. Once the first layer of bed has been placed, leveled and squared in your desired location, fasten the corners using 10-inch wood screws. Secure the entire layer to the ground with 10 pieces of rebar. 3. Place the second layer of timbers, staggering the corners and fastening them with wood screws. Secure this layer to the first with ten 10-inch galvanized spikes. 4. Install galvanized cloth to prevent burrowing pests from eating earthworms and destroying plants. 5.
