THE CAUSE Since 1994, Yee Hong has offered a continuum of culturally appropriate care to Chinese seniors and long-term care services to seniors from various cultural backgrounds, including Japanese, South Asian, Filipino, Vietnamese, Portuguese, and Korean, in the Greater Toronto Area. Operating 805 long-term care home beds and a wide range of community support services. Yee Hong annually serves over 26,000 individuals across the Greater Toronto Area. The fast-aging population in our communities means Yee Hong needs to expand its services and programs. In November 2020, the Yee Hong Peter K Kwok Hospice opened at the Scarborough-Finch Centre. The hospice is the first built by the Chinese Canadian community in Canada. Additionally, Yee Hong is embarking on a capital campaign to build three new centres with a total of 800 beds in Scarborough, Markham and Mississauga in the next few years. As a charitable non-profit organization, Yee Hong relies heavily on support from sponsors and community partners.

THE GALA A combination of philanthropy and Chinese New Year celebration, Dragon Ball offers sumptuous cuisines, spectacular entertainment and fabulous prizes. The gala also provides a platform to bring culturally appropriate, dignified care to seniors and those of need to the forefront. Yee Hong services impact the entire family by providing much-needed respite and support to caregivers. Meeting our fundraising goal is critical to sustaining and expanding our services, which makes Dragon Ball Yee Hong’s most important fundraising event of the year.

Message from Dr. Joseph Wong Yee Hong Community Wellness Foundation Founder and Chair

The COVID-19 pandemic has caused countless hardships to everyone, but especially to seniors. Decades of underinvestment meant that many long-term care facilities were ill-equipped and unprepared for the coronavirus. Thanks to the dogged determination of our staff, the steady leadership of our executive team, and the incredible support of our donors and sponsors, Yee Hong was fully stocked and fully prepared. We have avoided the worst of the pandemic so far and will continue to remain vigilant. Fundraising during the pandemic has also been particularly difficult. With the lockdowns and social distancing, we could not rely on many of our traditional events and campaigns. With considerable effort and creativity, Yee Hong held the first-ever virtual Dragon Ball gala on various online platforms. It was a success beyond our wildest imagination. Viewers from around the world tuned into our program and contributed to the cause, helping us raise the same net amount as in previous galas. But COVID-19 is not the only crisis we have to confront. With the aging population trend in Canada, there is also a growing gap of senior services. Even before the pandemic, the wait time for a bed at Yee Hong could be as long as 10 years, despite the fact we are already Canada’s largest not-for-profit geriatric care centre. It is said that within every crisis lies great opportunity, and Yee Hong truly has the opportunity of a lifetime. The Ontario government has allocated a total of 800 new beds to Yee Hong in 3 new centres to be developed in Scarborough, Markham and Mississauga. These new beds will double our capacity and reduce the wait time to less than 4 years. It is an opportunity we cannot afford to squander. We must raise over $80 million as our equity of the $300 million total construction costs of the 3 new centres. We will need the total support of all levels of government, the corporate sector, and the community. It is a daunting challenge, but with so much at stake, it is a challenge we must accept. The pandemic has delayed our plans to launch our new capital campaign until later this year, but we remain on track for the ground-breaking of our first new centre in the summer of 2022. We look forward to that time when we have more to celebrate, but there is much work to be done before then. I hope you will join us.

“With our commitment of serving seniors in the community, Yee Hong’s mission is to be a leading provider of quality of seniors care services in Canada and internationally across the continuum of care.” Tony Chang Interim Board Chair Yee Hong Centre

“I’m so glad that Yee Hong continued the tradition of Dragon Ball during the COVID crisis. It’s not about the gala itself. We expect to not only celebrate the Chinese New Year virtually, but bring hope and cheer to others, especially to the seniors who have been hard hit by the pandemic.” Lenny Wong Co-Chair Dragon Ball 2021

“At Yee Hong, taking care of our seniors has always been our number one priority. Even though it’s been a challenging year, we continue to do everything we can to ensure that our seniors are not only safe, but healthy and have a good well-being. We are not letting our guard down even though the vaccine is here. It’s really important to stay diligent.” Dr. San Ng, PhD Interim CEO Yee Hong Centre

“Supporting our seniors has never been more important. Thank you to all the frontline workers, staff and volunteers at Yee Hong for keeping seniors safe, helping them thrive and live to the fullest through quality of care. The Foundation also did a great job. Even during this difficult period, they have been working so hard to raise much-needed money for the seniors.”

“As COVID has shown us after one year of pandemic, looking after our elders is not just about infrastructure, buildings, food. It’s more than that. It is about caring. That is what brought me to Yee Hong.” Albert Wong Co-Chair Dragon Ball 2021

Celebrate Chinese New Year with a Special Cooking Demonstration To celebrate the Chinese New Year, MasterChef Canada Season 1 winner Eric Chong and Michelin-starred chef Alvin Leung together delivered a special demonstration of their version of the traditional New Year dish “Lo Hei”, preparing the colourful salad with ox tongue and raw vegetables, and tossing it ever higher to bring prosperity for the coming year.

Alvin Leung With a fiery personality to match his unusual moniker “Demon Chef,” Alvin Leung was an engineer by trade when he decided to pack up at the age of 42 and pursue his culinary passion in Hong Kong. It was there he opened his critically acclaimed Michelin-starred restaurant Bo Innovation. Now with multiple restaurants to his name including Bo London, he is one of the few self-taught chefs in the world to hold multiple Michelin stars. Raised in the suburbs of Scarborough, Ontario, Alvin has re-established his presence in Canada as a judge on CTV’s MasterChef Canada. After seeing the similarities between himself and Eric, Alvin sought to mentor the young chef and open a restaurant together.

Eric Chong While his degree is in chemical engineering, Eric Chong’s true calling has always been cooking. Although his family was hesitant with his newfound career, he was determined to earn his spot in the culinary world after becoming the first-ever winner of CTV’s MasterChef Canada. To sharpen his skills, Eric travelled extensively through Asia with his mentor Alvin Leung, as well as working stints in Alvin’s Hong Kong Michelin-starred restaurant Bo Innovation. He also apprenticed in the kitchens of Buca in Toronto. Now Eric has returned to the heart of Chinatown to realize his dream of opening a restaurant, inspired by his childhood in Canada and his grandfather’s dim sum. Eric brings a youthful and rebellious passion to R&D—a modern eatery paying tribute to traditional Asian flavours and beloved Canadian dishes.

Chinese Dance X Martial Arts Convergence Infinity of Movement and Stillness Convergence is the culmination of an interdisciplinary research study on both Chinese dance and Chinese martial arts traditions. In HKDC’s three-year-long study, its artists explored the essence of both traditional practices, extracting new perspectives on movement and the fluidity of expression between ideology and physical gesture. Convergence brings these discoveries together, capturing the transient between stillness and motion, tranquility and exuberance; all that one may find through the synergy of dance and martial arts.

The Hong Kong Dance Company’s Children’s and Youth Troupes were established in 2006 and 2008 respectively. There are currently about 400 members aged 4-18. The Troupes aim to promote Chinese dance and provide comprehensive professional dance and arts training for children and young people. HKDC has developed a unique innovative educational model, “Training—Performance— Appreciation”, which allows students to benefit from high-quality dance training and also focus on their personal artistic development. The Troupes have created and performed many popular children’s dance works which have enjoyed an overwhelmingly positive reception. These performances offer valuable opportunities for stage experience. The Troupes also take an active role in cultural exchange events so as to broaden the horizons of our members.

Harvey Lin Harvey Lin was born in Taiwan and raised in Canada. He is now a co-owner of Marathon Donuts and Coffee in Scarborough and Richmond Hill. This traditional Hong Kong-style diner serves up its award-wining milk tea with its pineapple buns and Cantonese dishes. Harvey has also been very active in the community and supported many charitable events. Hong Kong Milk Tea Hong Kong-style Milk Tea or “Kam Cha” is a legacy of British colonial culture, a blend of east and west originating in Hong Kong cafés. Instead of regular milk, brewers use evaporated or condensed milk to give the tea a special level of richness, sweetness and smoothness. The other special component of this drink is the sackcloth bag used to strain the tea, which is believed to make the tea smoother. When the milk tea is hot, it gives the aroma and flavors of black tea, but without the overpowering taste that can accompany it.

Behind the Scene - A Storyteller Producer/Director, Stanley A. Papulkas Known as “An Architect of Creativity”, Stanley A. Papulkas has always been a story teller – first with words, then with pictures. After induction into the Western Association of Broadcasters Hall of Fame in 2017 and multiple awardwinning projects, Stan’s goal has remained the same: to make a difference within the broadcast industry by allowing people to tell their stories. Success came early. At the age of 18 and still in high school, he produced a 30-minute program titled “Mime ‘79” about Monarch Park Collegiate Institute’s Pantomime Club. The program was so well received that Scarborough Cable distributed it to different cable networks across Canada. As a student of the Radio and Television program at Centennial College, his organizational and leadership skills did not go unrecognized. Stan was hired to take full control of the campus radio station which had been devastated by poor management. Within two weeks, CKCC was fully staffed and operational offering campus news, information and entertainment for the 4 campuses of Centennial College across the City of Toronto. Stan was also quick to realize that every Canadian, no matter where they came from or what language they spoke, had a story to tell, and he wanted to be the one who would help them tell it. He joined CFMT Multilingual Television in 1981 and made an immediate impact to their multilingual programming. In 1985, Stan left CFMT-TV to work in sports broadcasting at TSN but returned to CFMT as a Producer/Director in 1986 when Rogers Media acquired the television station. For the next 30 years, Stan would be the creator of all magazine

language programs not under the news umbrella. He created more than one hundred programs, specials, and documentaries during that time. A true and passionate Canadian, he dreamed of a harmonious society free of racism. But how to go about doing that? Stan believed that we needed to go back to what makes us all proud to be Canadians – the game of hockey. Stan founded the Canadian Multicultural Hockey Championships, where Canadians would represent their heritage for the Canadian Cup. Over the next nine years, 26 different ethnic communities regularly took part in an event that only played the Canadian National Anthem. In 2008, Stan left his hometown of Toronto, Ontario and moved his family to Alberta as a Vice President of Rogers Media to build and launch OMNI Television in both Edmonton and Calgary. In 2013, he took over all in-house programming for Rogers Media in Alberta, including the local version of Breakfast Television in both Edmonton and Calgary. As an out-of-the-box thinker, Stan created “Dinner Television”, an evening news and information program with the genre of a morning show for the Edmonton audience. Today, Stan has turned his focus to Canadian independent productions and the creation of Hydra Films Inc, a Film and Television production company. Stan is now able to use his entire imagination as a story teller in developing feature films, documentaries, television comedy series, and a 13-part television series promoting independent filmmakers and their work! Yee Hong is Entering a New Era of Epansio Canada’s population is aging and the demand for geriatric care continues to increase. Yee Hong, as the largest non-profit senior care organization in Canada, has been striving to provide culturally appropriate care to seniors. As of June 2020, more than 38,500 people in Ontario are waiting for a long-term care bed, and the waitlist for a Yee Hong bed has grown to over 6,000 people with a wait time that can be as long as 10 years. In 2017/18, the Ontario Government awarded its first allocation of long-term care bed licenses in 20 years. Yee Hong was granted 800 new bed licenses, which represent over 10% of the total allocation for the entire province, in three new homes in partnership with various organizations in Scarborough, Markham and Mississauga. After completion of the three new centres, Yee Hong’s long-term care capacity will reach 1,605 beds in seven centres in the Greater Toronto Area and wait times will fall substantially. All of this development comes with a substantial price tag. It will cost an estimated $300 million to build the three new facilities. Yee Hong must raise $80 million as the equity stake for the construction.

54 | Dragon Ball 2021

There is good news: the Ontario government announced last November that $25 million of new funding will be invested to help Yee Hong build one of three new homes, a 224-bed long-term care centre in Scarborough. The investment recognizes the dedication, compassion and expertise of the Yee Hong team. We know it is a monumental task but the reward will be tremendously fulfilling. Yee Hong needs the total mobilization of the community, support from the corporate sector, and past, current and new donors, and the dedication of our volunteers and members of the Yee Hong Centre Board and Foundation Board.

Hong Foundation; MPP Aris Babikian; Hong Centre; MPP Christina Mitas; ter for Seniors and Accessibility; and Foundation Board Chair;

Keeping Seniors Safe and Socially Conne The COVID-19 pandemic has increased the risk to seniors’ safety and social isolation. At Yee Hong, we are actively working to ensure our programs have a positive impact on seniors’ lives – especially since lockdowns and restrictions have been implemented in long-term care homes for several months. Physical distance does not have to mean social isolation. While residents dearly miss in-person visitations with families and friends, our Video Chat program has been introduced to all our long-term care homes to keep loved ones connected. Instead of gathering a large number of people in one room, our activation teams organize small group and one-to-one interactions. Other activation programs such as virtual reality games, online entertainment and religious programs help relieve the physical and mental impacts of the pandemic and maintain their quality of life. Apart from long-term care services, Yee Hong also provides a full spectrum of community-based services, enabling seniors of diverse backgrounds and needs to stay independent, dignified and active. Though many community programs have been suspended or cancelled since the pandemic started, Yee Hong Community and Professional Services continues to support clients and families through a variety of virtual programs, including wellness calls, online virtual interactions, group exercise, cognitive activities, caregiver education, mental wellness and leadership

training, and more. The pandemic has not changed Yee Hong’s commitment to our residents, families and clients. We provide a warm, caring and safe home even at this challenging time.

About “I Can Dance” Program Parkinson's disease is one of the most baffling and complex of all neurological disorders. The cause is unknown and there is no cure. In 2017, Yee Hong Centre partnered with Dance DNA to develop the “I Can Dance” fitness program for individuals with Parkinson’s disease or other Parkinson-like illness, so that they can experience the joy and benefits of dancing. This pilot project demonstrated encouraging results, showing a positive impact on improving patients’ motor movements and balance. It also provided a social support network, helping to reduce depression and build self-esteem.

Happy 100 Hazel McCallion A hurricane that never subsides stay strong and continue to be our inspiration The legendary Hazel McCallion, former Mayor of Mississauga, turned 100 on February 14, 2021. A special celebration was held during the Dragon Ball 2021 virtual gala to thank her endless contribution to the community and unwavering advocay for Yee Hong seniors. As an Honourable Chair of Yee Hong’s Board of Governors, Hazel has always stepped up to support Yee Hong initiatives and events over the years. When Yee Hong first considered expansion to Mississauga in 1999, she was one of the first to get on board. She wholeheartedly joined the Capital Campaign to help rally support to build our three new centres, and was instrumental in helping to ensure the support of Mississauga City Council for the Yee Hong Centre on Mavis Road.

“Hurricane Hazel” stops at nothing to help a worthy cause. She continues to attend Dragon Ball year after year as one of our most beloved ambassadors. Among her many exploits, she

has strapped on her rollerblades, led a team of dragon dancers in the blazing summer sun, and sang karaoke to advocate for our seniors, increase awareness and help Yee Hong raise funds for our services. In 2006, Hazel received Yee Hong's Golden Achievement Award.

Hazel holds the record as the longest-serving Mayor of Mississauga. Since her first election win in 1978, she was re-elected 11 times, serving her city for an unprecedented 36 years before retiring in 2014. During her leadership, Mississauga grew to become Canada's sixth largest city.
