I'm convinced, human beings were never meant to live alone...I'm not talking about craving just a few hours of peace and quiet just for ourselves, I mean living totally without others. As hard as we fight it, we all experience times when all seems lost or hopeless when a cup of coffee or a walk with another human being can bring hope and solace. With our people issue, we hope to bring you some new friends in reading—your neighbors, co-workers, our clients, maybe even a cousin but most importantly, you'll meet people with interesting traits of confidence, magnetism and drive and the same desire to succeed as we all aspire to do and here's hoping you will be inspired.

Welcome a new contributor to foodsandflavors, Carmen Long. She graduated from Berea College in Berea, Kentucky with a degree in Home Economics.

She and husband Brent, an assistant principal over East Wing Freshman Academy at East Surry High School, have two children. Kelsey is 21 and is finishing up her junior year at Belmont Abbey College where she plays basketball. Carson is 16, a sophomore at East Surry High School where he plays basketball and baseball. When Carmen is not working, she is in a gym or on a field watching her children play sports. When there are extra minutes, she enjoys reading, crafting, shopping, cooking and walking her dog, Coda.

Since I’ve gotten involved at the John C. Campbell Folk School in Brasstown, NC, I’m gaining a greater admiration for items handcrafted, and an even greater admiration for those doing the handcrafting. Like for the Broom Maker and the Cake Tester I met a few weeks ago.

Marlow Gates is a second generation broom maker from Leicester N.C. who teaches frequently at the Folk School. One of the things he's known for is designing the brooms for The Harry Potter Theme Park. Another thing he's known for are his cake testers. Maybe because he has a special offer for anyone who buys one.

Marlow says, "When you've used it up, send me a slice a cake and I'll send you another one."

Hayesville, NC resident, Earlene, did more than that when she used up her cake tester. She hand delivered Marlow a cake during one of his classes at JCCFS. Not just any cake, but her Special Rum Cake.

And what did Marlow do? He sat down and started making a cobweb broom. He even got Earlene to help him. Marlowe got the cake. Earlene got the cobweb broom. And what do you get? Earlene’s Recipe!

Special Rum Cake 1 pkg yellow cake mix 1/2 c vegetable oil 1 box vanilla Instant pudding 1 c water 4 eggs 1/2 c dark or white rum (Earlene uses Meyers) 1 c pecans or walnuts (optional) Grease and flour a 1-inch tube pan or a 12-c bundt cake pan. Sprinkle nuts over bottom of pan. Mix all ingredients; pour over bottom of pan.

Bake at 325°F for one hour. Place on a rack to cool. Invert on a serving plate. Prick holes on top, drizzle and brush glaze on top and sides.

Glaze: 1/4 c butter, 1 c sugar, 1/2 c dark or light rum, 1/4 c water .

Gluten-Free Chocolate Cake or Cupcakes Mix with a fork: (let stand while you mix the rest) 1/2 c cocoa 1/2 c cold water 1 1/2 t soda 2/3 c butter (softened) 1 t vanilla 1/2 t salt 2 c sifted Dolch Gluten-free

1 3/4 c white sugar 3 eggs- beaten 3/4 c buttermilk flour

Cream butter and sugar. Add vanilla, salt and eggs. Beat well.

Add milk and flour alternately. Last, blend in chocolate mixture.

Bake cake at 350°F for 30 minutes or until done.

Cupcakes: Fill cupcakes 3/4 full and bake at 350°F for approx. 15 minutes or until done.

Today, it is very common to hear someone say that they eat gluten-free. Why would you choose this type of diet when it is generally more expensive and the special ingredients are not easily available? If your doctor has diagnosed you with Celiac disease, you will willingly try a new diet. Celiac disease is a problem some people have that makes it hard to absorb nutrients needed for good health. It is a reaction to the protein gluten which is found in bread, crackers, cookies and pasta. The immune system of Celiac disease sufferers, attacks the gluten therefore harming the small intestines creating a variety of digestive and other health problems. Before leaving off gluten products, consult with your doctor for the tests to determine if you do have Celiac disease. Often Celiac disease is mistaken for food intolerance or irritable bowel syndrome. Doctors don’t know the cause of Celiac disease but you are more likely to develop the disease if another family member has it. After beginning a gluten-free diet it may take from 2 weeks to 6 months for symptoms to disappear. To get and stay well, you must avoid all foods that have gluten.

Grains are the major food group that contains large amounts of gluten. The gluten-free diet includes avoiding all foods containing wheat, barley, rye, triticale, or oats. (Oats may be added back to the diet after a period of time.)Do not drink any beer or alcohol unless it is gluten-free. Some foods that are labeled “wheat-free” may still have gluten. Many processed foods are unsafe for celiac sufferers because the ingredients have gluten containing preservatives. The National Institute of Diabetes and Digestive and Kidney Diseases tells celiac sufferers to avoid processed products such as bouillon cubes, brown rice syrup, candy, chips, cold cuts, French fries, rice mixes, prepared sauces, soy sauce and prepared soups. Not all processed foods contain gluten. Read the label to look for wheat, barley or rye products or derivatives. U.S. Food and Drug Administration does not require disclosure of gluten on food labels although

manufacturers can voluntarily list it.

Products that list “modified food starch” or “hydrolyzed vegetable protein” may also contain gluten.

Several products are beginning to print “gluten-free” on labels. Gluten can also be found in items you don’t expect such as medicine, vitamins, and lipstick. Carefully read labels!

So what can you eat with Celiac disease? Go back to the basics! All fresh fruits and vegetables are safe to eat as well as beef, poultry, eggs, pork and seafood without added ingredients. Flours and starches made from rice, corn, buckwheat (which is not a grain), potatoes, and soybeans are also okay to consume.

You can also bake with certain types of flour such as potato starch flour, tapioca flour, soy flour, cornstarch, corn flour, white and brown rice flour and one of my favorites, cornmeal. These different flours can often be purchased at health food stores and some supermarkets. Gluten gives structure and a soft spongy texture to baked goods. To replace gluten, add 1 teaspoon of a gluten substitute such as Xanthum Gum , Pre-Gel starch or Guar Gum for each cup of glutenfree flour mix unless the recipe states otherwise. The following gluten-free mixes can be substituted for wheat flour using cup per cup measures.

Gluten-free versions have a similar taste to wheat flour.

Gluten-Free Flour Mix I ¼ c soy flour ¼ c tapioca flour ½ c brown rice flour Gluten-Free Flour Mix II 6 c white rice flour 2 c potato starch 1 c tapioca flour These mixes may be doubled or tripled. Start with recipes that use relatively small amounts of flour like pancakes or brownies. Remember for each cup of wheat flour, add 1 teaspoon of gluten substitute unless the recipe states otherwise.

SOUTHWESTERN CASSEROLE 1/2 onion, chopped ½ sweet pepper, chopped 1 garlic clove, minced 2 t vegetable oil ¾ lb lean ground turkey 8 oz tomato sauce 1 c frozen or canned corn 1 c milk ½ c cornmeal 2 T chili powder ¾ c cheddar cheese, shredded Heat the vegetable oil in a large skillet; sauté onion, pepper, garlic for approximately 3 minutes. Add turkey to skillet; cook until browned. Drain away excess fat. Pour tomato sauce, corn and milk into the skillet. Stir well; heat through. Stir in cornmeal and chili powder. Put into a greased 2-quart casserole, cover tightly with foil; bake for 45 minutes at 350°F. Remove from oven, sprinkle with cheese; place back in the oven for another 5 minutes.

SPAGHETTI SQUASH CASSEROLE 1 small spaghetti squash 1 ½ lb ground beef 1 medium onion, chopped 2 garlic cloves, minced 28 oz pasta sauce 8 oz shredded mozzarella cheese Spaghetti squash can be either baked, boiled or microwaved until it is tender. Cook squash; remove seeds and scrape out the flesh. Sauté ground beef, onion and garlic together, draining any fat. Mix pasta sauce with meat mixture. Layer ½ of the noodles on the bottom of a greased 9x13-inch casserole dish; top with ½ of meat mixture. On the top, add remaining noodles; cover with remaining meat mixture and cheese. Bake at 350°F for 30 minutes; let sit for 10 minutes before serving.

Chicken Tetrazzini with Broccoli 16 oz broccoli florets, fresh or frozen 12 oz gluten-free spaghetti 4 c cooked, chopped chicken 2 c sliced mushrooms 2 garlic cloves, minced 3 T butter

1 t dried oregano 1 t dried basil ½ c rice flour 4 c chicken stock 3 oz shredded Parmesan cheese 2 T white cooking wine or juice Salt and pepper to taste

Cook pasta in salted, boiling water until tender and drain. Steam broccoli until crisp tender. In a large skillet, sauté mushrooms and garlic in butter for 3 minutes.

Add oregano and basil, cooking for 2 more minutes. Add 3 c chicken stock to the skillet. Combine the one remaining cup of stock with the rice flour, stirring until smooth. Add to the skillet; bring to a boil.

Cook for 5 minutes, stirring frequently.

Mix in cheese, wine or juice, salt and pepper. Remove from heat; add in the chicken. In a greased 9x13-inch casserole dish, place ½ of the spaghetti in the bottom, add ½ the broccoli and ½ of the chicken mixture. Repeat layers again; bake at 450°F for 15 minutes or until bubbly.

POTATO DUMPLING SOUP ¼ c butter 2 large onions, chopped 2 celery stalks, chopped 2 garlic cloves, minced 4 c gluten-free chicken broth 2 c water 6 large potatoes, cubed

3 eggs ½ t salt ¼ t pepper 1 c gluten- free flour mix 2 c milk Chopped dill to taste Shredded cheese for garnish

In a large kettle, melt butter and add onions, celery and garlic. Cook until onions are translucent. Add chicken broth and water, increasing heat to medium high; bring to a boil. Add cubed potatoes to boiling broth; cook until tender. To make dumplings: Crack eggs into a bowl; add salt and pepper. Slowly add flour until it becomes a golden yellow, sticky dough. If dough is dry, add water until it is sticky. Drop dough by spoonfuls into the boiling broth.

Dumplings will cook in a few minutes. After dumplings have cooked, reduce heat to low and add milk. Simmer for 10 minutes, stirring occasionally. Serve; sprinkle with dill and cheese, if desired.

PEANUT BUTTER AND JELLY COOKIES 1 c peanut butter 1 c white sugar 1 egg 1 t gluten-free vanilla extract 2 T fruit preserves, any flavor Preheat oven to 350°F. Mix together peanut butter, sugar, egg, vanilla until well blended. Drop teaspoonfuls onto ungreased cookie sheets. Use a fork to make a criss-cross pattern on top of each cookie. Make a small hole in top of each cookie using the handle of a wooden spoon. Fill holes with preserves. Bake for 8 to 11 minutes in 350°F oven.

GLUTEN-FREE YELLOW CAKE 1 ½ c white rice flour ¾ c tapioca flour 1 t salt 1 t baking soda 3 t baking powder 1 t xanthan gum

4 eggs 1 ¼ c white sugar 2/3 c mayonnaise 1 c milk 2 t gluten-free vanilla extract

Preheat oven to 350°F. Grease and rice flour two 9-inch round cake pans.

Mix white rice flour, tapioca flour, salt, baking soda, baking powder and xanthan gum together; set aside.

Mix eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk, vanilla; mix well. Spread batter into pans; bake at 350°F for 25 minutes.

Cakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean.

When cooled completely, frost with your favorite icing.

Cook Once, Eat Twice FAVORITE POT ROAST 3 to 4 lb beef roast with fat trimmed 1/2 t seasoning salt 1/4 t paprika 1 T instant minced onion* 1 c beef broth or 1 beef bouillon cube dissolved in 1 c hot water Combine seasoning salt, black pepper, paprika in a small bowl. Rub all sides of meat with the spice mixture. Place seasoned beef, onion, broth in a slow cooker. Cover; cook on low for 8 to 10 hours. Remove from cooker; let rest 20 minutes to slice. * If instant minced onion is unavailable, substitute 3 T fresh, chopped onion.

Vegetables (potatoes, carrots, onions, celery) can be cooked at the same time as the meat. Use leftover meat in sandwiches, burritos or soup.

Work, kids' activities, church, hobbies, school events, it seems like there is always someplace to be and something to do. Where do family meals fit into this picture? We all need to eat. How can we make our food delicious, healthy, less expensive, quick and easy?

As a working wife, mother and extension agent for Family and Consumer Education with Surry County Center, my life, like those of so many is full of different obligations.

Fitting in a home cooked meal can be a challenge. My family's health is important to me and most of the time I prefer the food I make at home to eating out. I like having control of what goes into the food my family eats. I make recipe modification a game!

Are there ways we can make our favorite recipes healthier and still taste delicious? What can we do to make those family meals come together a little bit quicker when preparing?

Cooking once and eating twice or more is a wonderful timesaver in our kitchen.

These are not leftovers—we are just planning ahead and working smarter so we don't have tow work harder.

As I once said someone should invent already cooked ground beef which could be purchased at the grocery store. Why didn't I follow through on that idea before someone else marketed ground beef crumbles? A similar

product which is delicious and costs much less money can be made at home. think about all the different recipes calling for browned ground beef. Chili, soups, casseroles, pizza, tacos, taco salad and pasta dishes having the already cooked ground beef is a wonderful way to save time when making meals. Not only do you reduce the cooking time, but also the amount of time it takes to clean up—only one dirty pan to wash.

Purchase meat when it is on sale in larger quantities and avoid having to pay full price for the item during the weeks when it is not on sale. cook the meat, drain the grease and then package the portion you think your family would use for the recipes you prepare in freezer bags or containers. Freeze only for up to three months for the best quality. Take the container out of the freezer the day before you plan to use it and place in the refrigerator to thaw.

The meat could also be defrosted in the microwave or thawed as part of the cooking process in a dish like chili. cook onions, peppers or any other ingredients you choose with the meat to take another step off your recipe at the time of preparation. Use this same technique with all types of meats. Buy chicken breast when they are on sale and either bake, grill or boil them to have chicken on hand for salad,

casseroles, quiche or soups.

Roast and tenderloin work great for cooking once and eating twice. I love to put a roast, which is larger than we would eat in one meal, with some vegetables in my slow cooker before I leave for work. It is wonderful to walk into a home and smell a delicious meal! Make a quick salad and you are ready to eat.

Add some BBQ sauce to some of the remaining meat and have BBQ sandwiches another night with steamed vegetables and a fruit salad. the rest of the roast can be frozen and used when you would like homemade vegetable soup.

If there is liquid from when the meat was cooked, pour it in a container and refrigerate. When cool, there will probably be a layer of solid fat on the top.

Skim off the fat and freeze the remaining broth to give your next soup even more delicious flavor with much less sodium than you will find in broth purchased from the grocery store.

Cook once, eat twice works great to save time with any item which has a long cooking time—try brown rice, cooked dried bean even steel cut oats.

Package the food into appropriate portions for the size of your family and you have a convenience food waiting in your freezer.

Remember food will last indefinitely in the freezer if it is frozen correctly, but he quality decreases the longer it is

stored. Mark your packages with the date you put them in the freezer and practice the first in, first out method to make sure you rotate your stock and use the older items first. Recommended storage time for most meats is around three months.

I named this recipe SURPRISE STRAWBERRY BROWNIE TORTE because of the surprise used in the frosting—it's instant pudding.

By using different flavors of pudding such as pineapple or banana. I love to take recipes and make them my own.

This torte originally came from a church cookbook and ended up with my own interpretation that is very simple and wonderful to make.

SURPRISE STRAWBERRY BROWNIE TORTE Torte 2 boxes fudge brownie mixes Chocolate syrup Fresh whole strawberries

Icing 1 - 14 oz, Eagle Brand milk 1/2 c cold water 1 - 4 oz instant "cheesecake" pudding mix 1 - 8 oz extra creamy Cool Whip

Prepare brownies as directed on the box.

Spray two 9-inch round cake pans.

Bake at 350°F for 20 to 25 minutes.

Cool completely. Use a fork to punch holes in both cakes and drizzle with chocolate syrup.

For frosting, mix all ingredients together and chill until very firm. Fold in Cool Whip, mix well. Frost bottom cake layer, add sliced or mashed berries. (Optional to drizzle more chocolate!) On top layer, put strawberries on first, then icing and then decorate with more strawberries.

The Still Vibrant Wine Industry in North Carolina

The making of wine is unique because each winemaker gets only one chance a year to harvest a crop and produce wine. It then takes 8 to 24 months before there is a finished product. Making it even more difficult is the fact that they never get the same exact quality of grapes more than once because the weather pattern each year affects the harvest. Winemakers need years of training and experience to develop the skills to produce the highest quality wine possible. Due to the vagaries of these ever-changing conditions, winemakers tend to be a close network, readily sharing information and continuing vital learning.

In February the North Carolina Winegrowers Association had its 18th annual meeting in Winston-Salem, bringing together vineyard workers, winery workers and winery owners for three days of presentations by experts in the field on a wide variety of topics important to the North Carolina wine industry. It is important for wine con-

sumers to understand the time and effort the winery and vineyard owners devote to continued learning to continue improving the quality of our North Carolina wines.

The meetings began on a Friday afternoon with two series of breakout sessions. One group was designed for people new to the industry or those interested in working with wine. A second group of sessions focused on more experienced individuals needing more detailed information.

Friday evening was devoted to a wine and food tasting with 33 wineries pouring at least four of their wines and local restaurants providing samples of their featured dishes. This tasting was opened to the general public who got a chance to taste a wide variety of North Carolina wines while talking with the staff and owners of the wineries. Also most of the members of the Winegrowers Association were at the tasting and available to talk about North Carolina wines with the attendees.

Throughout the day speakers represented many companies working with wine producers as well as faculty from many leading col-

The afternoon sessions focused on viticulture (growing grapes), enology (producing wine from grapes) and marketing, which included the impact of tourism. During both Friday and Saturday sessions, vendors of equipment and services used by wineries were available to share their knowledge with the members.

Saturday evening was devoted to a member-only wine tasting and dinner.

The guest speaker was Steven Troxler, Commissioner, North Carolina Department of Agriculture. This was an opportunity for Mr. Troxler to learn more about this group and for the members to hear, first hand, what our state’s policies and plans are with regard to the wine industry.

On Sunday morning there were additional breakout sessions about grape growing, wine production and marketing.

The North Carolina Winegrowers Association has grown as rapidly over the years as has the number of wineries and vineyards. At the end of 2012, we had 117 wineries and more than 400 vineyards in North Carolina. The Association deserves a great deal of credit for bringing together wine experts to help improve the knowledge of our winery and vineyard workers which in turn can only continue to improve the quality of all North Carolina wines.

Meetings like this convey current information on the state of wine in North Carolina and sharpen the skills needed in this dynamic industry.

Carolina Wine Country Cooking

When you step off a plane at Raleigh Durham International Airport, you aren’t far from the Yadkin Valley. It is truly a short drive of about a hundred miles to the first vines in the AVA but there is a way to experience wines made from those vines within three little tiny miles of the airport. As a matter of fact at the same exit on I40. Winston-Salem has been marketed as the “Gateway to NC Wine Country” when in fact you can enjoy NC Wine Country in one of our state’s most urban centers.

The front door of Chatham Hill Wines is open and as I enter, I am greeted with a friendly handshake and smile all guests receive when visiting. I’ve come to interview Marek Wojciechowski, the owner and winemaker of Chatham Hill, for an international food tourism project concerning urban wineries. As we sit in the tasting room, which is large and roomy for events, I am pleasantly distracted by the fine art that grace the walls. Everything about the place is interesting and welcoming. Especially interesting is Marek whose background and breadth of knowledge of the industry of wine making are one of the key factors in the success of the state’s fourteenth winery; its first Urban Winery.

When Marek moved to the Raleigh area, he was working on a biomedical project focusing on reducing the lead in drinking water, testing and treating children with exposure. The project was a success in many regards, but as it concluded, Marek found himself looking for something new to do. Having made his own wine for many years, he looked into the viability of a commercial endeavor around his passion for wine. With grapes from producers in the Yadkin Valley, Marek was able to perform several tests that turned out to his liking. He was able to produce the quality he desired for the premium line of wines he envisioned.

Not having the desire to, or the time to establish a vineyard and see it maturity, Marek worked with Jack Kroustalis of Westbend Vineyards and other western growers who supplied him with the European varietals he chose to work with.

The partnership has been a good fit for Chatham Hill, as they are in their fourteenth year of production.

There are two lines of distributed wines produced by Chatham Hill.

Sweet Carolina wines are grape wines infused with fruit as opposed to fruit only wines. They pack a full punch of fruit flavor with a lower residual sugar on the palate. They also have the body of their base wines and would please even those who like dry wines. The other line are the premium wines produced by Marek. They are made with the cornerstone European varietals Chardonnay, Viognier, Cabernet Franc, Cabernet Sauvignon, and Syrah.

As a food writer I typically write the bones of recipes on the spot when I do a wine tasting. Sometimes the wines are so good; I have to take a few minutes to just appreciate the wine before I let my palate and mind wander to the page. This was the case at Chatham Hill.

An urban winery will typically offer the experience and education of fine wines in a city setting and work closely with restaurants and caterers to develop a following for their wines.

Chatham Hill does all the things an urban winery does—hosting art and culinary events—yet it isn’t a stuffy experience. Marek prides himself on meeting visitors wherever they fall on the wine knowledge spectrum. Ginger shares a delicious recipe from her new cookbook, Carolina Wine Country Cooking.

Old North State Wines are made from grapes nurtured on the hillsides of Yadkin Valley family farms. It's no wonder their Autumn Leaf Gold wine goes great with other North Carolina produce and pork. The black pepper and jalapeños in this recipe are a great compliment to the wine's fruity clean finish that pairs well with fresh or frozen peaches and juicy pork chops.

PEACHES, PEPPERS and PORK CHOPS 6-8 Boneless pork chops 2 c fresh or frozen peaches, sliced 1/2 c chopped Vidalia onion 1 whole, seeded jalapeno pepper finely diced 1 T olive oil 1/2 c semi-sweet white wine (Old North State, Autumn Leaf Gold) 1 t salt 1 t fresh ground black pepper If using frozen peaches, put them in a non-stick skillet on medium high heat, watching carefully. Once thawed and starting to caramelize, add oil. Add onions, jalapeno pepper, caramelizing further, until softened and golden. If starting with fresh peaches, add them last—after onions and peppers have softened.

Remove from skillet.

Season pork chops with salt and pepper; cook on one side in skillet approximately 5 minutes (longer for thick cut chops) or until juices start to rise. Brown both sides equally; remove from skillet. Deglaze skillet with wine, scrapping with a wooden spoon; let wine reduce, approximately 3 minutes. Add pork chops, cover with sauce, allow all to come to temperature; serve over buttered rice with a glass of the same wine used in preparation.

The North Carolina strawberry season is short and sweet. Did you know one serving of strawberries provides more vitamin C than an orange and one serving contains only 50 calories and has no fat, cholesterol or sodium? They are a tasty treat and a super source of nutrition. Approximately 1,600 acres of strawberries are grown in North Carolina so take advantage of your local farms or farmers markets to get this season's crop before it's too late!

To enjoy the perfect berry, choose berries that are firm and have a bright red color. Very dark red (sometimes almost a wine color) strawberries are likely overripe, while very light red strawberries won't be ripe enough. the perfect berries will also have that wonderful strawberry aroma that wafts through the springtime air. Once you've purchased your berries, wait to wash them, always be sure to wash your hands before handling strawberries-until just before you plan to eat or prepare them. Strawberries can be stored in the refrigerator, but only for a few days.

To save some berries for later outside of strawberry season, simply buy extra berries and freeze them. Choose fresh North Carolina strawberries and freeze them as soon as possible.

Remove the caps-those green leaves at the top-with a gentle twist or carefully use the point of a sharp knife or vegetable peeler. Wash the berries in cold water, making sure to remove any additional leaves or any berries that may have soft spots.

In a colander, drain the strawberries well. It's a good idea to let them sit, draining, for about 15 minutes.

Place the strawberries in a single layer on a baking sheet and put in the refrigerator until they are frozen, overnight is good. Remove the berries from the baking sheet. Store in a ziplock freezer bag. Remove as much air as possible from the bag. Label and date the bag and stick it back in the freezer until you are ready to enjoy them and all of their health benefits year-round.

To thaw frozen strawberries, remove the quantity you would like from the freezer bag and place in a bowl or bag in the refrigerator overnight or on the counter for a few hours.

STRAWBERRY SHRIMP COCKTAIL Created by Chef Mark Allison 2 garlic cloves, crushed 1 T organic honey 2 t nam pla (Thai fish sauce) 1 T lemon zest (grated) Juice and zest of 2 limes 2 Thai red chilies, finely diced 6 oz shrimp, cooked and shelled 1/3 c unsalted roasted almonds, lightly chopped 2 c strawberries, cut into quarters 2 T cilantro, chopped 1 T mint leaves, chopped In a large bowl, combine the garlic, honey, nam pla, lemon zest, lime juice and zest and chilies. Fold in the shrimp and almonds, add the strawberries and stir to combine. Sprinkle and stir in chopped cilantro and mint.

Serves 4.

The scholarship is open to high school seniors or current college students, applying, accepted to or currently enrolled in a land grant university, interested in or having declared a major in a program of study directly related to the strawberry industry. For example, small fruit production, marketing, food science, nutrition, entomology, agronomy, etc.

The number of awards will be determined based on applications received. This award is not limited to North Carolina. Family members of North Carolina Strawberry Association members are encouraged to apply. Previous award winners may reapply for a second year's award. The deadline would be May 1, 2014. FRIED ZUCCHINI 2 zucchini sliced thin 1/3 -1/2 c cornmeal 2T cooking oil, add as needed Salt and pepper

Put oil in non-stick pan; heat over medium. Place cornmeal in a small bowl.

Add salt and pepper to cornmeal to enhance flavor and mix. Slice zucchini thinly. If you want a little crust go ahead and start coating slices in the cornmeal mixture since when you slice zucchini they do have moisture that releases to make the cornmeal stick to them. Put zucchini in the pan; when brown on one, side flip them. If you like a thicker crust on your zucchini, after you slice them put them in water. The zucchini will retain that moisture; coat them one at a time in cornmeal mixture. As you are fixing the zucchini you will need to add oil from time to time so they will cook properly. Do only how many zucchini will fit in your pan. If you have a griddle you can do many at a time. When they are done, put the zucchini on a paper towel so some of the oil will be absorbed. This is how I remember mom cooking zucchini and squash often in the summer when Dad’s garden would start coming in. My brother and I preferred this to the stuffed squash and zucchini mom would prepare for dad!

BAKED ZUCCHINI 2 zucchini sliced thin ½ c shaved parmesan cheese Salt and pepper Pre-heat oven to 350°F. Use a mandolin or slice zucchini by hand into thin slices. Place zucchini on a greased baking sheet. Spoon or use your hands to place cheese on the slices; sprinkle salt and pepper on them as well; place into oven for seven minutes. At this point keep an eye on the zucchini so it does not burn. When the cheese is good and melted with little brown spots, take out of the oven.

My brother showed me this recipe a few years back. We were at Mom and Dad’s and he wanted to show me a new way of fixing zucchini. His wife tries to create new ways to get him to eat vegetables and so far I think that zucchini is his favorite—I have even seen him order zucchini from a restaurant now that he is an adult!

LEAF LETTUCE AND ONIONS 1 head of red or green leaf lettuce 1/3 – ½ c spring onions or 2 leaks ¼ - 1/3 c cooking oil Salt to taste Wash lettuce, dry in a salad spinner or pat dry with paper towels; tear into bite-sized pieces. Chop onions; put in the salad. Heat oil for up to 30 seconds in the microwave; pour over lettuce. Do not overheat the oil or you will wilt the lettuce. Salt salad to taste.

It is that simple. This by far is my favorite salad. Growing up we had iceberg lettuce until Mom found out leaf lettuce had more nutrients. I was

reluctant to change my eating preferences. At this time in my youth iceberg lettuce and Italian dressing was the greatest dish, but these four simply ingredients make the best salad.

We would put this salad in Mom’s big metal mixing bowl. She would get out the amount she wanted and Dad would have his mound up on half of his plate. I did not bother to put the salad on my plate—whatever was left in the bowl was mine! I preferred eating this salad over desserts.

Now I have to fight my son for my share of the salad.

PINA COLADA CUPCAKES 2 1/3 c all-purpose flour 2 ½ t baking powder ½ t salt 1 c butter softened 1 c sugar 3 eggs 1 t coconut extract 1 t rum extract 8 oz crushed pineapple in juice ½ c coconut flakes ¼ c milk Pre-heat oven to 350°F. Line muffin pan with paper baking cups. In a medium bowl mix flour, baking powder, salt together.

Set aside. In a large mixing bowl cream butter with an electric mixer on medium speed for 30 seconds or so; then start to slowly add sugar. Mix for about two minutes after all of the sugar is in. Add eggs, one at a time. Add milk, coconut flakes, pineapple. Slowly add flour mixture. For chunkier cupcakes, add pineapple after you have added the flour mixture. Spoon batter into baking cups. Bake 22 to 25 minutes. Test to see if they are done with a toothpick.

RUM-CREAM CHEESE ICING 8 oz pkg cream cheese, softened ½ t rum extract 4 c powdered sugar Cream softened cheese and rum extract together with an electric mixer.

Gradually add powdered sugar to the mixture.

Ice cupcakes and garnish with coconut flakes.

Carol’s Salad I suggest fixing the last eight ingredients when your family is not home. Heat the sugar, white vinegar and red wine vinegar in a sauce pan over medium heat until the sugar is dissolved. The reason why I suggest fixing the dressing when your family is not home is because these three ingredients make the house smell not so good for a little while, but they are so worth the smell. After you have dissolved the sugar, add the minced onion. If you are using dried minced onion let it reconstitute itself a few minutes in the vinegar mixture before adding paprika. At this point take the dressing off the burner; put it in a dressing container. Add seeds and oil. Mix well before placing over the salad. This is a wonderful salad.

Carol is one of my mother’s closest friends. Growing up, her son and my brother were best friends and from their friendship grew the families’ friendship. We had vacations together at the beach and would take turns cooking different meals and going out as well. The parents did the dinner meals and the kids were responsible for fixing at least one breakfast while we were on vacation.

There were many times when we were together for small holidays and dozens of weekends playing Rook. I truly miss those days.

French Silk Pie

An eggsceptionally rich dessert to help put some chill on the season's warmer weather menu is a FRENCH SILK PIE. Did I mention it's chocolate?

Here's what you need: 1 c sugar 1/4 t cream of tartar 6 eggs 1 T water 4 squares, 1-oz each, unsweetened chocolate, coarsely chopped 1 1/2 t vanilla 1/2 c (1 stick) butter, room temperature 1 graham cracker nut crumb crust or basic baked piecrust

Mix sugar and cream of tartar in medium saucepan.

Add eggs, water; beat until well blended.

Add chocolate; cook over low heat, stirring constantly, until chocolate is melted and temperature reaches 160°F. Do not allow to boil. Remove from heat immediately.

Cool quickly: Set pan in larger pan of ice water.

Stir vigorously until temperature of mixture falls to 80°F to 90°F. Remove pan from ice water.

Stir in vanilla. Beat butter in mixer bowl on medium speed until light and fluffy, 3 to 4 minutes. Pour into pie shell.

Refrigerate at least 6 hours before serving.

As the culinary industry continues to grow at tremendous levels, more and more people are tuning in to watch their favorite cooking shows on channels like Food Network, The Cooking Channel, and TLC. Whether you are a fan of reality TV style cooking shows or the more “traditional” cooking show, you may find yourself perplexed from time to time about some of the culinary terms used by the celebrity chefs while on air. If you are a cooking show fan, an avid home cook, or an aspiring professional chef looking to increase you knowledge, I will be discussing some not-so-common terms over the next few issues to add to your culinary vocabulary. Flambé is a term referring to the act of adding alcohol to a hot pan in order to create a burst of flames. The process also burns off the alcohol thus intensifying the flavor of the spirit itself. The spirit must be around 40% alcohol in order to ignite. Beer and wine can add great flavor to a dish but the alcohol content is much too low to ignite. Always exercise caution when performing this technique in the kitchen!

A Gastrique by definition is prepared by deglazing caramelized sugar with vinegar and used as flavoring for sauces. Today, culinariarns have broadened the term by referring to a gastrique as pretty much any acidic sauce that has been reduced to a glaze consistency.

Hollandaise sauce is one of the five French “mother sauces.” It consists of a mixture of egg yolk and butter typically seasoned with lemon juice, salt, and pepper. White pepper or cayenne is preferred as black pepper can be seen in the sauce. You will commonly see hollandaise sauce served over dishes Eggs Benedict and Steak Oscar or simply served over steamed vegetables.

Induction Burners (cook top) have gained tremendous popularity in home and commercial kitchens over the years due to their mobility. These burners heat by using electromagnetic fields that directly heat a cooking vessel. This leaves the surface cool to the touch and does not emit hot air from the cook top surface.

The upside to induction cooking is that it is much faster and more energy efficient. The downside to induction cook tops is that they require special cookware in order to be used.

Jerk Seasoning is a blend of spices used in Jamaican cuisine. Most every jerk seasoning blend you come across will have its differences but will include basic ingredients such as chilies, thyme, cinnamon, clove, garlic, and onion. Jerk seasonings are commonly used on pork or chicken and can be very mild to very spicy.

4 sticks unsalted butter, cubed Heat a small saucepan over medium low heat. Add butter; heat until melted.

Let butter simmer on low heat until white foam rises to the top. Remove white foam with a spoon. Strain butter through a fine mesh strainer lined with cheesecloth. Butter should be clear and free from solids after straining.

Clarified butter can be stored in an airtight container in the refrigerator for 3 to 6 months.

HOLLANDAISE SAUCE 1 c butter, clarified, warm (see recipe) 4 egg yolks 2 T lemon juice 1 T water, cold Salt to taste Cayenne pepper to taste In a medium saucepan, heat 2 to 3 inches of water to a simmer. In a glass or stainless steel bowl, add egg yolks and cold water. Whisk until foamy.

Set bowl on top of pan of simmering water. Whisk eggs until slightly thickened. Remove bowl from heat (water bath); begin slowly adding clarified butter, whisking constantly.

Be careful not to add butter too quickly or sauce will break (separate).

Continue whisking in butter gradually.

Once all the butter has been whisked in, add lemon juice; season with salt and cayenne pepper to taste.

Completed hollandaise should have a pale yellow color, a thick, smooth consistency. If sauce becomes too thick, add a teaspoon of warm water at a time until desired consistency is achieved. Serve promptly.

EGGS BENEDICT Water 2 t distilled vinegar 4 slices Canadian bacon 4 eggs 2 English muffins, sliced in half Butter Hollandaise Sauce (see recipe above) Parsley, chopped In medium saucepan, bring water (2/3 full) and vinegar to a boil; then reduce to low simmer. Cook bacon as desired; keep warm. Poach eggs in simmering water cooking until desired level of doneness. Traditional poached eggs have a cooked egg white with a runny, warm egg yolk. While eggs are poaching, toast English muffins.

After muffins are toasted, butter top side. To assemble Eggs Benedict, place buttered muffin on plate, top with a slice of bacon. Gently remove poached egg from water with a slotted spoon, drain and place on top of Canadian bacon. Top with hollandaise sauce and garnish with chopped parsley. Great

First Impression Getting Off to a Good Start

by Ruth R. Henderson, BeautiControl EVIP It takes just a quick glance, maybe three seconds, for someone to evaluate you when you meet for the first time.

In this short time, the other person forms an opinion about you based on your appearance, your body language, your demeanor, your mannerisms, and how you are dressed and the way you look.

With every new encounter, you are evaluated and yet another person’s impression of you is formed. These first impressions can be nearly impossible to reverse or undo, making those first encounters extremely important, for they set the tone for all the relationships that follows. So, whether they are in your career, going for job interview, or inter-acting in your social life, it is important to know how to create a good first impression. Hopefully, this article will provide some useful tips to help you do this. l. Be on Time. Someone you are meeting for the first time is not interested in your “good excuse” for running late.

Plan to arrive a few minutes early and allow flexibility for possible delays in traffic. Arriving early is much better than arriving late, and the first step in creating a great first impression.

2. Be Yourself, But Be At Ease. If you are feeling uncomfortable and on edge, this can make the other person ill at ease and that’s a sure way to create the wrong impression. If you are calm and confident, so the other person will feel more at ease, you will have a solid foundation for making that first impression a good one.

3. Present Yourself Appropriately. Of course, your physical appearance matters. The person you are meeting for the first time does not know you and your appearance is usually the first clue he or she has to go on. The key to a good impression is to present yourself appropriately. They say a picture

is worth a thousand words, and so the “picture” you first present says much about you to the person you are meeting.

Is you appearance saying the right things to help create the right first impression?

Start wit the way you dress…What is the appropriate dress for the meeting or occasion? In a business setting, decide what is the appropriate business attire? Suit, blazer, casual? Ask yourself what the person you will be meeting is likely to wear, and dress yourself accordingly.

And what about your grooming? Clean and tidy appearance is appropriate for all business and social occasions.

Adorn yourself with clean, pressed and tidy clothes. Neat and appropriate makeup is a must for the ladies. Making sure your grooming is appropriate helps you “feel” the part, which then helps you feel more calm and confident. The make-up you choose should also match the occasion, just as your attire does. For a job or business interview, you need to look professional, and not overly made up. The natural “daytime” look with flawless foundation, light blush, moderate eye shadow and mascara, and a moderate amount of lip coloring will set the right look for this occasion. For an evening out on the town to meet new people, you can “glamit-up” and go with heavier applications of the foundation, blush, eye shadow, and lipstick for a more “party and nightlife” look for the evening.

4. A Winning Smile! “Smile and the world smiles too!” There is nothing like a smile to create a good first impression. A warm and confident smile will put both you and the other person at ease. Smiling is a winner when it comes to great first impressions, but don’t go overboard with this – people who take this too far can seem insincere and unreal, which can make others uneasy.

5. Be Open and Confident. Body language as well as appearance speaks much louder than words. Use your body language to project appropriate confidence and self-assurance. Stand tall, smile, make eye contact, greet with a firm handshake. All of these will help you project confidence and encourage both you and the other person to feel better at ease.

6. Be Positive. Your attitude shows thru in everything you do. Project a positive attitude, even in the face of criticism or in the case of nervousness. Strive to learn from your meeting and to contribute appropriately, maintaining an upbeat manner and a friendly smile.

7. Be Courteous and Attentive.

Attentive and courteous behavior help make a good first impression.

Anything less can ruin the one chance you have at making that first impression positive…so be on your best behavior! Turn off your mobile phone.

What first impression would that make if you are on your phone the first time you meet someone? Your new acquaintance deserves l00% of your attention.

Anything less and you will create a less than good first impression.

You have just a few seconds to make a good first impression and it is almost impossible to ever change it.

So, it is worth giving each new encounter your best shot! Much of what you need to do to make a good first impression is use common sense.

The Center Shop, Artful Gifts

Arts council gift shops have been around as long as arts council have been to afford local artisans a retail outlet for their work.YARD (Yadkin Artists Residing Downtown) was opened by the Yadkin Arts Council in 2012 in conjunction with the new Yadkin Cultural Arts facility. Yadkin Arts Council provides the space for the gift shop free of charge for its members to sell the goods they create.

Now with a new name and a new location, a new experience is in store with your visit to The Center Shop, Artful Gifts located in Studio C at the Yadkin Cultural Arts Center in downtown Yadkinville. "The shop is staffed by participating members so visitors have the opportunity to chat with an artist when they visit," says mosaic artist/shop manager Jody Pound. What makes The Center Shop so very special is that every Wednesday, one of the studio artists stays in the gift shop to demonstrate his/her skills.

Currently you will find woodturnings, knit and crochet items, fused and stained glass, fabric, acrylics, photography, jewelry, mosaics and handcrafted greeting cards—all one-of-a-kind treasures.

Check out Bill Gramley, a retired Moravian minister and his charming framed mini-pastel landscapes and figuratives. Then there is Phyllis Hail, a mountain artist from Roaring Gap. She offers framed painting as well as intriguing hand formed pottery. Original designs by basket makers Ginger Mcghee and Glenda Church are decorative and functional.

by Tavi Petree Finally, after a long winter and spring weather roller coaster, we can count on hot North Carolina summers.

The fireflies are out and the songs of crickets fill the air. I always have such mixed emotions at the end of the school year. The children become such a part of your everyday life, but yet you are ready to recharge your battery.

Enjoy the nature outside and at night by creating a moon journal. Start with a new moon and draw the phases each night. Black paper and white chalk are very dashing together. Grab some containers and grow a plant such as a tomato, pepper, or herbs. It is so fun and rewarding to watch something you have planted come to life. Not to mention if what you planted is edible.

You might go so far as teaching your child how to can. Freezer jams are a pretty good beginner level.

The end of the school year can be wild and crazy. Fun activities, somewhat structured can help make those last few days a ton of fun. Gather some balloons and place some slips of paper inside with fun activities written on them. Some ideas are popsicles, karaoke, ice cream sundaes, movie and popcorn, snow cones, dance party.

Each day, pop a balloon to reveal what the special treat for the day is.

Another cool activity is called tape ball. Like the title suggests, create a tape ball, but layer small toys and candy. For large groups, you may want to make several smaller tape balls with ya d ki n va l l e y l iv i n g . co m

treats. Divide the children into groups. While one player rolls dice trying to roll doubles, another is trying to unwrap the tape ball as much as possible to get treats.

When the player rolls double, the tape ball and die must be passed to other players for round two.

As a final note, it is always fun to give out awards at the end of the year.

For a little added fun, consider giving out candy awards.

The Ballad of Jessie Pearl is Shannon Hitchcock's first novel though she is hardly a beginning writer with her work published in Highlights for Children, Cricket, and Children's Writer as well as her children's biography, Overgrown Jack.

In 2008 Shannon's son had a homework assignment to study his family history. That inspired Shannon to do the same and the result is the Ballad of Jessie Pearl. Raised on the 100-acre family farm in the rural Yadkin Valley, her southern roots run deep and she had lots of family and friends to gather information. Her southern overtones are reminiscent of Robert Morgan's Gap Creek of similar tough times in the South of the early 1920s. Tobacco was harvested, tied and hung by hand, food wasn't always abundant, the word technology hadn't been coined yet, but doctor's still made house calls, midwives were still needed and Tuberculosis, also known as "consumption," was contagious, feared and made sanatoriums like The Villa in Asheville a must. Needed for fresh air,sometimes it proved to be the only hope of recovery for TB patients.

Protagonist, young Jessie, has dreams and aspirations to be a teacher, "...keep on studying," her Ma encouraged. She had to grow up quickly with the loss of her mother and then TB infects her family. Absorb moments of anxiety, sadness, happiness, personal strength, love-all true to life for a young woman growing up at this time. Written with tenderness, The Ballad is a moving taste of the southern past. As always with a well written novel, there is a hopeful ending, no, wait, not an ending but rather a conclusion to that part of Jessie's life as you move with her on to her future. Don't let the page count of only 129, keep you from reading The Ballad of Jessie Pearl, it's well worth every minute.

Growing Basil in the Garden Basics: Start this tender annual indoors four to six weeks before you intend to set the plants out in the garden. A good rule of thumb is to wait till the night temperatures are regularly above 55째F before setting them in the garden. Give the soil some time to warm up too before mulching.

Basil likes a fertile soil and will tolerate a wide range of pH (4.5 to 6.5).

Although most folks think basil has a better flavor is not fertilized, it is a heavy feeder and looks better if fed at planting time and possibly again during the growing season. It is best feed for sure if you are going to harvest up to 75% of the foliage each cutting.

Basil has few pests and Japanese beetles can be kept off with a cover when the beetles are working your garden.

Harvest and Storage: The best time to harvest basil is just before it flowers. Many people just pick the tip clusters which are usually stem-less and succulent. A market gardener harvests this way because the restaurants prefer the stem-less bunches. If you pick this way your plants may start flowering sooner. Basil is programmed to initiate flowering when it has at least six pairs of leaves on a stalk so I like to cut it back to two leaves per stem to keep it from flowering longer. Keeping basil to four pairs will keep it from flowering longer. You

Basil actually keeps longer if it is picked late in the day unlike other herb harvesting in the morning. If put in a plastic bag for storage and kept at room temperature will last up to two weeks. Basil will keep only two or three days if refrigerated. You can keep basil cuttings in water for a long time on the counter and have it fresh for the picking. Change the water frequently.

Just treat the cuttings like a cut flower would be kept.

The flavor is sweet but not as strong as sweet basil. This one is good to add to a salad and good for grilling with fish and chicken.

Bush or dwarf basils—(O.b. minimum) this one has small narrow leaves with a sweet, less pungent smell than the large leaf ones. The stems are softer and can be chopped up with the small leaves. In long cooking this basil will wash out so better to add this basil closer to the end of the cooking time or use them raw.

Opal basil—This type of basil is a purple hybrid such as Purple Ruffles. They are quite beautiful but a less vigorous grower. You will see some greening on the foliage at times. Used a lot more for decoration growing in containers.

Exotic basils—Here I place the lemon basil, licorice (anise), cinnamon and other flavored basils. Some are Ocimum basilicum and some are different such as lemon (O.b. americanum

She was very overweight and couldn’t bend over. She taught me how to pick flowers and put them in a vase with water. I would proudly put them on the kitchen table. She would show me what was a weed and have me to pull them. I remember my daddy digging up an area around a small tree. My grandmother showed me how to plant the thrift plants she had dug out of her yard. I took my watering pail and filled it with water and watered them. My grandmother faithfully reminded me when they needed water. I was so

proud of the flowers when they grew.

In the spring, my family planted garden. Everyone helped. We took seed potatoes and cut them up in pieces, making sure each piece had at least one eye. My sisters and I took turns dropping beans, peas, or corn in the furrows Daddy made with the tractor. Mother or Daddy would follow behind us and cover the seeds. They always said we had to drop the seeds because we were closer to the ground.

Now I realize it was just to teach us how plants grow and responsibility.

Cucumbers, squash, cantaloupes and watermelon were planted further apart in hills. We would put in posts and string for the beans to grow on. In the bean rows we put newspapers down and cover them with straw. This kept down the weeds and conserved moisture. Also, it enabled us to pick the beans even in wet weather. We would pick the beans, string and snap them while Mother was at work and she would pressure can them when she came home.

When I was in 4-H, I had a project growing flowers. I grew zinnias, asters, and marigolds from seed. I transplanted them into rows Daddy plowed in front of the garden, next to the dirt road we grew up on. I took pictures and wrote of my project. I was surprised when I won the county medal on it in horticulture from Allis Chalmers. That was a new word for me and I decided then I would major in Horticulture. My parents wanted me to be a teacher, but I would freeze in front of the class and stutter. I went to NCSU and majored in Horticulture.

I met Jim, my husband there. We had a dream we would start a nursery at his grandmother’s farm, but things didn’t go as planned and we ended up here in King when he got a job with the Department of Agriculture in 1977.

Now I have a granddaughter I show our flowers to. She is 21 months-old now. She was so funny at Christmas saying ‘poinsettias.’ Big word for a little girl. She also loves flowers.

Celebrating Life The Gilreath's story is material for a romantic novel. Charles and Lelia Gilreath met over dinner at a restaurant both sets of parents frequented.

Charles was home from college and joined his parents for dinner and, "It was love from the very beginning," recalls Lelia.

Following in his father's footsteps, Charles became a chiropractor and has had a chiropractic practice in Elkin over 50 years. Beyond that long dedicated work ethic, Charles' patients, "... appreciate his personal attention and listening ear," says his wife. Lelia taught dancing for 25 years in Elkin and jokingly said as she recalled some personal injuries, "It was helpful to be married to a chiropractor!"

The vivacious pair has two daughters. Terri is the oldest and lives the farthest away in Raleigh. She was a grief 66

counselor for 25 years. During that time Terri also created teaching videos for hospital counselors. Terri's daughter, Julie Anne is the Gilreath's only grandchild and she is going into the Gilreath's long line of helping people careers. She graduates from college this year and will be a registered nurse in an ICU in Winston-Salem. The Gilreath's younger daughter, Holli lives in Clemmons. She is a gerontologist and proprietor of Age with Grace. She is an advocate for the elderly, assessing and evaluating their options of staying at home versus moving to an assisted living facility.

The couple enjoys traveling in the mountains, antiquing and "being together." In spare moments, Charles says, "I piddle on my 1980 Mercedes, rescued from a pasture field." He soon hopes to paint it again with its original

Charles has served as past president of the Elkin Lions' Club and was involved in founding the local Ruritan group. An avid historian, Charles traced his Brushy Mountain ancestors back to 1856 and has volunteered with the Overland Victory Trial Association and joined both the Sons of the Revolution and Confederacy. He and Lelia have visited the Gilreath 17th century homeplace, now a B&B, in Scotland twice. "The best Scottish games are in Huntersville," says Charles. "They are breathtakingly beautiful," he continued.

After celebrating his 50th year of practice, Dr. Charles S. Gilreath is still working to keep his community healthy, one spine at a time.

Focusing on What’s Right Marty Driver inherited her mother's good looks, her gift of gab and an innate love of people. She smiles as she thinks back to her mom making every typical childhood lesson available for Marty and her younger sister.

Studying nursing at Gardner-Webb, Marty earned a BSN as one of the first four women to graduate GardnerWebb's four-year nursing program. She reminded me how women have come along way in the business world as at the time she went to college the choices were pretty much being a teacher or a nurse. With her mother's urging, she trained to be a flight attendant. Marty married and lived two and a half years in England. "It was a great experience, but it also made me appreciate 'home.'" This job lasted only seven and a half months, "It just wasn't the right fit."

Being intelligent, social, caring and attractive hasn't guaranteed a life of ease and bliss. Life has dealt Marty some of the same hard blows as everyone else. She lost her only sibling in an auto accident and now both parents are gone. It's in her nature to look at the bright side of situations. One of her greatest joys is her daughter, Rae, who is studying tourism, hospitality and management at the University of Tennessee...not falling far from the tree with people skills.

Marty's career seemed to always gravitate back to utilizing her nursing skills. While working at N.C. Baptist Hospital, she started a home visitation program for children. In essence it was today's hospice care. She worked four years as a clinical nurse manager and activities director for New Horizons Home Care before becoming the Program Director at New Horizons Adult Day Services, Inc., a private non-profit facility for special needs adults. She teaches a North Carolina Intervention course to help her staff of 15 to persist in being people centered with its 33 regular attendees and to learn what triggers a member's feeling. Ten or her staffers are on a one to one working basis with some attendees.

"I've always loved and desired to work to improve my community," says Marty. She helped found the Downtown Business Association in Yadkinville, was influential is seeing the new YMCA being completed and now sees another definite need—with the growing number of dementia cases, there is even more family and patient daily care concerns.

Being an avid reader, a favorite author is Marianne Williamson and you guessed it, Marianne is a motivational writer and inspirational lecturer. ya d ki n va l l e y l iv i n g . co m

PEOPLE The North Wilkesboro Lions Club Celebrates 75 Years of Community Service

The North Wilkesboro Lions Club was formed on April 5, 1938. One charter member who is still with the club is Mr. Blair Gwyn.

All Lions share a common spirit—helping those less fortunate and wanting everyone to see a better tomorrow by doing volunteer work. The Club’s core belief: Community is what we make it.

The primary focus is tackling the problem of blindness. Several Club members are V. I. P.’s (Visually Impaired Persons). The Club provides eye exams and glasses to those less fortunate; helps to support Camp Dogwood, a summer camp on Lake Norman with dormitories and activities for visually impaired; sponsors Leader Dogs Program for the blind; sponsors an annual Blood Drive and Book Drive for Literacy of Wilkes and collects used eye glasses to help the visually impaired in third world countries. The North Wilkesboro Lions Clubs helps to raise money for the blind through Broom Sales, White Cane Drive at the Brushy Mountain Apple Festival in the fall, selling food at Merle Fest, through dues and donations from Club members.

As the world’s largest civic organization, The Lions clubs have more than 1.4 million men and women. Membership in the Lions Club is by invitation. The North Wilkesboro Lions Club meets on the first and third Thursdays of each month at noon at the Golden Corral.

Here’s to an additional 75 years of hands-on community work and service projects of providing emergency assistance—The North Wilkesboro Lions Club continues to improve its community.

PEOPLE Welcome to the Yadkin Valley Joseph F. Zastrow is a doctor, a new member of the Hugh Chatham Memorial Hospital specializing in family medicine. His name is followed by M.D. and everyone knows the medical doctor inference but there are more letters, FAAFP to note his Fellowship with the American Academy of Family Physicians but also he holds an approved consultant degree from the American Society of Clinical Hypnosis, (ASCH).

As a the most recent past president of ASCH, another layer of Joseph's medical intellect reveals some fascinating work with hypnosis to alleviate specific fears, ie. needles and/or dentists. Very soon he expects to publish his study on using hypnosis to help with Sjogren's disease and dry mouth, both closely related medical problems.

Originally from Wisconsin, Joseph has lived in Mooresville over 21 years.

It seems almost everyone in his family attended Marquette University in Milwaukee, as he did for his pre-med studies. He finished his doctor's degrees at the Medical College of Wisconsin, also in Milwaukee, specializing in individual, family and community health. North Carolina was fortunate he interned in Charlotte in 1987.

His Elkin office walls reflect his many talents and credits from almost all aspects of the medical genre. Joseph comes from a long line of a quite large medical family including his wife, Caroline, a Minnesotan, who is a medical technician.

Joseph splits his week between Elkin and the Carolina Medical Center and Research in Charlotte where he teaches.

When asked if he enjoyed the teaching facet, he quickly made an affirmative response and noted the word doctor is from Greek for "teacher." ya d ki n va l l e y l iv i n g . co m

It's interesting that Joseph lived at home while attending college. He also took business classes and conducted his college studies as if it was a business; he started his days with 8:00a classes and ended his classes at 2:00p, when he went home to study.

Joseph and Caroline have a daughter, Carrie, a rising senior in high school.

She has recently been accepted at the prestigious North Carolina School of the Arts in Winston-Salem and will start her first year this fall in video and film making. "She has inherited her creative talent from me," Joseph said, grinning yet not very seriously. His hobby is photography. His work of family photos adorn his desk and shelves. "I learned the hard way," he said as he recalled hours in his dark room, film rolls and developing. Having mastered the techniques, the good doctor has been known to "shoot" weekend weddings!

Music Maker Educator Extraordinaire

by Cindy Martin When you step inside Pat Hiatt’s third grade classroom at C.B. Eller Elementary in Elkin, you’re instantly transported to a land of learning, where the students are constructing their own communities, memorizing and reciting multiplication tables, calculating area and perimeter, writing stories and poetry, identifying muscles and bones, reading chapter books, and encouraging one another to “give it all you’ve got!.” It is evident that teaching is more than a job to this nationally board certified teacher, it is her vocation, her calling. She puts her heart and soul into building better minds for a better future.

Pat chose the road less traveled on her way to becoming a classroom teacher.

She married young, just out of high school, and started a family. When her youngest started kindergarten, Pat enrolled in Gardner-Webb College and went to school four nights a week from 5-10 p.m., year-round. During the day, she would substitute teach and drive a school bus. With the love and support of her family and friends, 70

Pat earned her teaching degree and began her career as an educator.

From a young age, Pat’s parents, Charlie and Shirley Hawks, taught her the importance of hard work, of being resourceful and responsible, and of showing respect to herself and others.

“I grew up playing and singing in church,” she said. “In fact, it was my daddy who taught me to play the guitar, like his dad taught him to play.”

Taking her musical heritage to the next level, Pat went on to form the “Sugar Loaf Mountain Band,” which plays in a variety of venues locally.

It appears that Pat’s drive and determination have been passed down to her children, as well. Sarah Wild, 34, is also a nationally board certified teacher at Meadow View Middle School; her son, Charles, 32, is currently employed at Eagle Car Port; and her youngest daughter, Philicia Marion, 29, works as a nurse at Central Continuing Care.

For Pat Hiatt, life is but a melody.

She faces each day with a positive attitude and a song in her heart. She strives to uplift and encourage and make every child’s day brighter, giving them the confidence to realize their full potential. “May you always hear the music” is Pat’s wish for not just her students but the world at large.

Art and

Style

An epiphany is a moment of sudden insight that usually becomes a life changer. Lance Crumley, a Stokes County Arts Council member, may have had one and is subsequently "...reinventing himself.” He prefers to think of himself, he says, "As an artist who does hair."

In a career expanding over 36 years Lance was awarded the Master of The Craft award by The Art And Fashion Group International in 1993. Anyone who has had a truly professional hair cut will quickly affirm the artistic talent and skill used to design and create a hairstyle.

Lance was born in Ohio, lived in Tennessee and at 11, moved with his family to Pinnacle, when his father transferred with Piedmont Airlines. He started drawing early on. Art classes weren't part of South Stokes' curriculum when Lance went through the system so formal lessons didn't happen.

Graduating high school at 17, Lance had finished barber school and began his career as a hairstylist by 19. After much encouragement from his brother Bob to give painting a try, Lance took an acrylic workshop from a craft store but quickly switched to watercolors, commonly considered one of the most difficult mediums to master.

Oils slipped into his artistic lifestyle in his 40s and he could not be happier.

"Oils are a sensual medium which you can feel as well as see. I get the pleasure of the experience of the painting on multiple levels." He can paint anything for custom work. Very eclectic in his subject matter he loves to paint wildlife, landscapes, plein air, figures and abstracts. His salon walls display samples of all those subjects with lots of color, texture and detail.

Interestingly, he isn't into mass marketing of prints but rather desires to paint and market his originals. "I've done very few print series," Lance said, “And I think most people would prefer ya d ki n va l l e y l iv i n g . co m

PEOPLE to have a painting that is truely one of a kind, their own special treasure.” He prefers to do home shows where he introduces his artwork and discusses the development of an emotional attachment to each piece of artwork allowing a Q & A time.

An avid outdoorsman, it's easy for the observer to see his love of nature in his displayed artwork. “My wife, Lynn and I enjoy hiking, biking,and kayaking, together. I also hunt and fish.”

On a more personal level, Lance revealed a spiritual side. He studies scripture from a theological standpoint but the direction of his relationship with God and His word is as personal and intimate as his relationship with

Lynn, perhaps even more so.

As an artist who does hair, Lance has turned his focus to expanding his salon to a more formal gallery with a working studio inside the salon. "I feel I have a unique opportunity to do both my passions without diminishing either. I'm constantly working not only on getting yet better at creating artwork but also I want you to feel how wonderful the art feels to me."

Once you have browsed one of Lance’s exhibits like his past exhibit at the Stokes County Arts Council Gallery, you might be convinced he is one of the best already. But he will tell you, “My best is yet to come.”

Beth & Dale Smith We’ve all heard the adage “Families Who Pray Together,” stay together. I think this may also apply to families who “Play Together.” This has certainly been the case with Beth and Dale Smith and sons Jordan and Tim. I’m referring to their musical talents. They all learned to play guitars and mandolins at an early age. The family plays together, as a group, individually or with other groups. Their basics were bluegrass but Jordan now plays with “44Love,” a southern rock group. Tim followed his baseball dream after South Stokes High School. He pitched for Catawba College then played with a New York Mets minor league team.

trips seemed to help relax and bring the team together. Tim is now working in the energy field, but occasionally joins mom and dad at local jams or shows.

When Beth met Dale, her primary musical experience, as she tells it, had only been singing in the shower. Dale was playing with his cousin’s band, “Touch of Grass.” At a Sparta Fiddlers Convention, shortly after they met, she decided to go on stage for her first time to compete. she enjoys performing and won her first blue ribbon with a tremendous voice range.

With Dale on guitar and Beth as vocalist, they teamed up with Scott Brown, banjo, David O’Brein, mandolin, Joe Freeman, dobro, Kevin Hicks, bass to form “Blues Creek” in

2005. They’ve played radio shows, festivals and for Bill Clinton during Hillary’s presidential campaign. They felt honored to be invited to play at Renofest along with groups from as far away as Alaska. Beth has also become a great songwriter. She and Scott have written several songs together and were able to record a CD. She continues to write but acknowledges the one she is most proud of is “Water Rushes By”— the story of two young boys that drowned in the Dan River. This and other songs have been submitted to Chris Austin Songwriting Contest at Merle Fest.

In 2002, their future faced a real setback. Dale had a congenital heart condition, leading to several surgeries and ultimately a heart transplant—a physical and psychological roller coaster. Again music became a vital part of Dale’s therapy. After surgery, he was so weak he could barely strum a “G” chord, but he persevered and shortly regained what he had lost. Dale does not just strum a guitar, he picks it and can compete with the best. At every performance, he reminds the audience to be organ donors.

Trying to earn a living and finding time to make music as a band has been difficult. Beth started playing the upright bass. She and Dale would sing together in the comfort of their home.

With inspiration and encouragement of a good friend, they have ventured to some small venues, such as coffee shops, restaurants and private parties.

They enjoy the more intimate settings but still play with “Blues Creek.” Beth says the “vibrato” in her voice is still not from voice training but just nerves.

PEOPLE A friend said, "You have got to meet Kathy Johnson!" It took a while to schedule an appointment; this is one busy lady who is secretary to her division of Wilkes Community College Business and Public Service Technologies, including accounting, computers, culinary, criminal justice, early childhood, networking, simulation and game development—25 instructors in all. That's why she was chosen Outstanding Staff Member of the Year!

Kathy brings joy to her office and every person who passes through or by the windows as she decorates for every season. Entering her office drew immediate attention to the ceiling boiling over with dangling shapes and colors for spring. In May, Kathy and her work study students will decorate for her favorite time of year—summer. "I have red, white and blue everywhere until after September 11th," says Kathy. Not only does she decorate her office, she does the same at home. And everybody will tell you, Kathy knows everyone's anniversary and birthday, never missing the opportunity to send congratulations!

A very gracious, personable lady, not a single staffer or student entered the office without a smile, an answer, something sweet from one of the candy jars or a chunk of bubble gum. "I decorate the office because it makes people smile and many, many times students have told me they enjoy just walking by because it feels like a very warm and friendly place.”

Wilkes County lays claim to four generations of Kathy's family. For her, "...family gatherings are the most important and happiest times." Her church family is important also. “We belong to the Church of Jesus Christ of Latter-day Saints and have attended the same church for nearly 40 years where my husband and I have served in many areas.”

The Love of People is Mutual Cassie both attend the University of Virginia—Ryan is in Pre-Med; Brandon works full time for a pharmaceutical company while attending college and Amber is currently at Brigham Young University in Idaho where she is studying to be a teacher. Middle daughter, Shannon was born with Cerebral Palsy and is confined to a wheel chair. Like Kathy, she is always happy and loves everyone! Youngest daughter Miranda lives in North Wilkesboro with her husband, Justin and another grandson, Dallon who is 12 and attends N. Wilkes Middle School.

Retirement is not in the near future for Kathy who likes what she does and the people she works with. When not on campus she is with her best friend and husband, Theon, sharing time together in travel, a movie, just enjoying each other's company.

It’s been a very busy year for

Girl Scout Troop 42063

In this program the girls have done community projects to earn badges.

The first badge was Gives Clothing.

Our girls collected unwanted items from family, friends, neighbors and visited our local Goodwill Store to donated those items. We had 25 bags of items to donate. We toured the store and the girls learned how our donations help Goodwill make jobs and provide training for people. They earned the Goodwill patch for donating items and touring the Goodwill Store.

The second badge was Gives Life.

The girls volunteered at a Blood Drive.

They helped check people in, made name tags for volunteers, handed out information pamphlets to people giving blood and helped the Red Cross Volunteer hand out snacks and drinks.

The third badge was Gives Food.

The troop collected food for a local food bank, The King Outreach Ministry. We held a food drive at the First Baptist Church of King where we have our meetings. The girls donated 74

over 450 items, including personal care items, like toothbrushes, soap, shampoo, deodorant and baby wipes. All the troops in Stokes County participated in the collection of food items to donate to local food banks. We received a certificate and ribbon for being a top troop with one of the highest donations. Once collected, we met at the food bank and helped stock their shelves. The girls strived to meet a goal of 300 items. I told them if they met the goal, they could each hit me in the face with a cream pie. I think they had way too much fun hitting me in the face with pies!

The fourth badge was Gives Back.

Our girls decided to make the day better for residents at a local assisted living facility by making small care packages and handmade valentines for each resident at Priddy Manor. The girls delivered the care packages and Valentine’s Day cards to each resident at the facility.

Do A Good Turn is the fifth badge we are working on. The girls will be doing a community service project on Girl Scout’s annual Do A Good Turn

weekend.

The girls also received “fun patches” for each of the community projects listed above.

Other patches the girls received this year include: participating in the “early bird” registration for membership dues, attending “Disney On Ice” at the Greensboro Coliseum and a World Thinking Day. All of our girls will receive the participation patch for selling cookies. Some will receive the 100+ patch for selling over 100 boxes.

Our troop sold 540 boxes of cookies.

One girl sold boxes for Operation Sweet Treat that sends cookies to soldiers. Each girl purchased a box to donate to another troop in the county that is doing a community project to collect cookies for a local women’s shelter. Our cookie mom this year was Carla Miller.

All the girls started Girl Scouts at the same time—all will be bridging this year.

Andrea will become a Brownie; all the other girls will get their wings and fly up to Juniors at our year-end ceremony.

One glimpse at Sydney Peavy’s Girl Scout scrapbook, lying alongside her Gold Award Swimming Safety Project Board, tells us immediately that she is no ordinary teenager. In fact, she is a member of a very elite group of women who achieved the most prestigious award bestowed by the GSA, the Gold, an award afforded only to those who have found greatness within themselves and moved forward to share it with their communities.

There she is on the first scrapbook page: a sweet, smiling preschooler in a swimsuit awaiting her swim lesson at Reeves Community Center. “I can’t remember a time when I wasn’t swimming or involved in Scouting,” she said.

As Sydney progressed through the ranks in Scouting, her skill grew in swimming. She began to swim competitively and became a certified lifeguard and water safety instructor.

Sydney combined her love of swimming with her passion for scouting to design, plan, and implement a community service project aimed at promoting water safety and reducing the occurrence of drownings due to the lack of training of nearby persons.

Modeling her program after the Olympic swimmer, Cullen Jones’ “Make-a- Splash Foundation,” she, with a group of volunteers she recruited to help, provided free swimming lessons during the summer at Pro Health Fitness Center. Sydney also launched a photography fundraiser and letter-writing campaign, where she solicited more than $550 in donations for future lessons for youth at the Reeves Community Center.

Sydney credits the success of her project to her family and friends. She observed, firsthand, how her brother, Nick, became an Eagle Scout. He sparked her drive to plan, follow through, and take her project to the finish line. “Of course, my mom and dad, Dr. Ken and Mrs. Robin Peavy, and my grandparents, Margaret and Al Peavy and Daymond and Leona Thompson always instilled in me the need for service as an expression of my faith: Honoring God through service,” she proffered.

Now a junior at Mount Airy High School, Sydney plans to attend college. In her spare time, she enjoys (among other activities) singing and playing the piano, running Spartan races with her father, and frolicking with her boxer, Otis.

“Truly, she’s an inspiration to all of us,” Mayor Debbie Cochran said.

Standing on Faith

PEOPLE A lifelong farmer, Lenuel still owns the family's Century Farm. When a farm accident nearly cost Lenuel his foot and ability to walk, he decided to “retire” and lease his grain business. While recuperating, he visited family in Texas and as he toured the state, snapped photographs of every arena he encountered.

Why arenas? "God and kids," he says with a grin.

Though Lenuel never rodeo’d, he always had animals and loved riding horses. He knew the values and sense of responsibility working with animals instills in children.

He went to a few youth rodeos with family and appreciated how they promoted those values. He also saw how hard the kids trained only to have events rained out. A seed was planted and soon he shared with a few friends he felt led to build a covered arena. His friend, Sandy, loved the idea and encouraged him to step out on faith.

Lenuel knew the perfect spot, part of the family farm his brother owned. Leslie was thrilled to sell him the land for this purpose. Lenuel broke ground in April 2010 with help of family and friends, buying local materials when possible, like the rough cut pine that gives much of the interior a warm, rustic feel. This includes the chapel, which was dedicated in memory of Brittany Casstevens, the daughter of good friends, who died in a tragic car accident in July, 2009. The building grew to include a kitchen, bathrooms, showers, bleachers, offices, and more. After clearing state and county permitting, the arena opened in November, 2010 with Cowgirls with a Cause, a huge ladies barrel racing and roping fundraiser to fight breast cancer, Since then, Lone Hickory Arena has been blessed with great events and great folks like high school and youth rodeos, Cowboy Mounted Shooting, Walking Horse shows, Ranch Sorting, AKC agility trials, 4H Livestock Shows, Agriculture Awareness Day for second graders, many great fundraisers and more. Triple Cross Cowboy Church now meets each Tuesday at 7p in the chapel with Pastor Eddie Totherow, who also serves as arena chaplain.

Recent arena additions include a dining hall, barn and the beginning of riding trails. Most events are open to the public and many are free (see www.lonehickoryarena.com or Facebook/Lone Hickory Arena for details).

As Lenuel worked on the arena, his injury healed, and a wonderful relationship with Sandy grew. They married in the chapel in January, 2011. Though challenges arise, the couple found if they just “stand on faith” God’s plans far exceeds theirs.

Though Leslie’s health declined, he enjoyed many events and church services with his wife Ann and family and was proud to be a part. Lenuel and Sandy wish to dedicate this article with love and appreciation to Leslie who went to be with his Lord on April 28, 2013.

A new way to enjoy the Yadkin Valley

Countryside It could be because it's that time of year, after months of confinement and the strong urge to go somewhere for an adventure. Or it could be the result of spending a morning with Angela and Mark Casstevens at their Countryside R.V. dealership in Yadkinville. After being greeted by two sets of smiles and blue eyes, the Casstevens split, one on the phone, one returned to a customer and I was on my own to leisurely peruse the stock. It was love at first sight, so to speak, when I saw my first Park home, and my mind put one unit in the mountains and one at the coast with visions of our "kids" and their spouses vacationing with us.

Both Mark and Angela grew up in camping families. Angela's is a history of tent camping. She will testify camping is a wonderful source of family fun and 2013 offers lots more options than when she was camping as a child. Mark decided in 2001 to leave his car dealership job to strike out on his own in the R.V. world. In that short period of time they have been nationally recognized as one of the top five sellers of the Kropf Park homes alone. In addition they carry three Park model and two travel trailer lines. Retro campers are back as well as Starcraft trailers...lots to check out on the huge lot.

Not stopping at one Park home, I toured them all. Each unit is like a mini-house with all the bells and whistles you could ever want: fireplace, bay windows, full size stove, sink, fridge, washer/dryer and tub/shower. Surprisingly there is lots of storage space and lots of natural light with windows in

every available space. It's a woman's dream come true when choosing flooring, cabinetry finishes, appliances and whether to have a loft for extra sleeping, maybe even two lofts!

Mark marvels at fields once yielding tobacco, corn, wheat and soybeans now house a myriad of campers, travel trailers and Park homes even some gently used models. Both Mark and Angela are truly passionate about what they do. "We enjoy people and we love sharing something that is so fun!" says Angela. Mark is a Yadkin County native while Angela is a Southern belle from Georgia. She is the oldest of four girls and is lucky to have her mother working in the office with her.

The Casstevens have met people from all across the country, Canada and England. The British couple have a travel trailer stationed in Washington, D.C. and they travel the U.S.A. when they vacation in the States.

You'll never guess what the Casstevens do for free time—they spend time in their motor home in the mountains or at the beach.

Complete with traditional campfires and lots of bike riding, their favorite part of camping is "relaxing out in nature." Angela shared that surveys show adults who camped as kids have the best childhood memories of family, friends and fun. Let's not be left out...let's go camping!

Laura is staying at the House with Monica and Monica’s son, and recalls a similar situation years ago when her father was put into hospice. At the time, the hospice was a few rooms off a wing of the hospital. Conversations Today, or, Crisis Tomorrow… our Choice by Dee Leahman I’d like to tell you a true story about the importance of conversations about healthcare choices WELL IN ADVANCE OF CRISIS. When telling this story I ask people to identify the missing link. What do you think it is?

My job at a small community hospital was to help resolve conflicts so I wasn’t surprised when I was paged to the ICU. The nurse who called said the heated exchange going on at the nurses’ station was disrupting the entire ICU. They were arguing about whether a frail, elderly, 84 year old woman should be put back on the ventilator. Unable to breathe well on her own, she had been on the ventilator twice and weaned twice. Soon, breathing became very difficult again.

After introducing myself to the group, I learned that the doctor and the adult son were adamant about putting her back on the ventilator immediately, saying, “If we don’t, she won’t make it through the day.” The daughter and the patient’s nurse were pleading with them not to do that.

“She has been through so much! She would not want to go back on the ventilator. Can’t we just let her die a peaceful, natural death?”

My first question to them was, “Is the patient alert?”

The answer: Yes. You already know what my second question was: “What does SHE want?” The surprised looks on their faces said silently, “That’s a good idea. Why didn’t I think of that?” They followed me to the bedside. I saw a tiny woman with bright, alert eyes, a sweet smile and a weak body. Her voice was all but gone. Her throat was sore. Her

answers to my questions came in the form of shaking her head or an inaudible whisper. She had a very important decision to make. Had she heard them arguing? Most likely, yes.

Did she understand what they were saying? Did she understand the importance of her decision?

I held her hand and asked several questions, leaning close enough to hear her whispers. We exchanged notes on paper.

When I finally knew she understood the choice she was making I asked: “What do YOU want?” She took both of my hands in hers, tapped them lovingly and whispered, “I just want to go to heaven.” And she did. That afternoon her children sat beside her holding her hands and talking softly. She died peacefully hearing their loving voices, not their angry ones.

Headed Outside?

Keep Safe from the Elements

by Jessica Owens Wall, MPH Of course when the weather is nice, the first things we want to do is run outside and play. Maybe that means heading out to the garden or taking a dip at the local pool or just having a rest on your porch. Doing any of these activities, or others, outdoors puts you at risk for injury or harm. You’re getting ready to head outside, but have you thought about bugs and bites? or the sun and heat? or even asthma and allergies? You should! Take into consideration these simple steps so that your outdoor time can the best time.

Be sure to fight the bite. Mosquito, tick, and flea bites that is. These biting insects can carry diseases such as the West Nile virus or Lyme disease. The best thing you can do to protect yourself is wear long-sleeve shirts and pants and use the correct type and amount of insect repellent. Your insect repellent should be at least 20% DEET. You could also look for repellents that contain Picaridin or oil of lemon eucalyptus, as these are recommended by the Environmental Protection Agency (go to EPA.gov for more information).

Remember that mosquitoes are usually most active from dusk to dawn, but ticks can be around at all times. After coming back inside, shower immediately and check yourself for ticks.

Check pets and children as well. Wash and dry the clothes you were wearing.

If you do find a tick, remove it with a pair of fine tipped tweezers. Contact your healthcare provider if you have the following signs or symptoms 1-3 weeks after a tick bite: rash, fever, body aches, fatigue, headache, stiff neck, and/or disorientation. Keep the shrubs, bushes, and grass trimmed within 100 feet of your home as well as pick up any lying brush, leaf litter or 82

Dump any standing water and remove items that can easily collect standing water, as this is where mosquitoes can breed.

If you are going outside to garden or to do yard work, think safety first.

Again, wear long sleeves and pants when possible and always wear insect repellent. Wear gloves and safety gear (such as goggles/safety glasses), especially when handling chemicals and equipment. Make time for plenty of rest breaks and drink plenty of water to hydrate yourself. As always, follow any instructions on chemicals and equipment and mind all warning labels.

Know that your equipment is working properly before using it and be careful when sharpening any tools you are going to use. Keep chemicals, tools, and equipment out of the reach of children and know where your children are when you are using equipment, especially a riding lawn mower. Asthma and allergies can also be an issue when

working outside. Take prescribed or over-the-counter medication as directed and wear a face mask to protect against those tiny dust and pollen particles.

Sun safety is another big piece of outdoor safety, and in any weather.

This will help protect you against skin damage, which can cause skin cancer.

The sun’s UV rays are most dangerous between the hours of 10am and 4pm, so avoid being outside during these times if you can.

If you need to be outside, remember the five S’s of sun safety: Slip, Slop, Slap, Seek and Slide. Slip on a shirt, slop on some sunscreen, slap on a hat, seek some shade, and slide on some sunglasses.

Being outside can be a great way to boost your physical activity, especially when the weather is nice. But don’t let your guard down. Follow these simple tips when doing any outdoor activities to help keep your family health and safe all summer long.

Do Memory Pills Really Work?

If you are over 55 you have likely seen several if not dozens of advertisements for supplements and formulas to improve your memory. Their claims range from modest to fantastic improvements like “I took this pill and within an hour I had total recall of names, faces, facts and figures I hadn’t remembered in years!” My favorite was an ad I read just before Christmas, wherein a doctor claimed that after taking his pill his brain cells “lit up like a Christmas tree.”

A pretty bright metaphor, but was it true? Are these ads accurate or just a bunch of bunk? Are there scientifically validated supplements that can really help an aging brain – and significantly improve memory? Well actually the answer is yes! But before you run down to your local health food store, let me share a few insights that may save you some money.

The truth is, memory, especially as we age, is relatively fragile. There are in fact many factors (at least 50) that may affect your ability to remember. Some of these won’t cost you anything to fix.

For example, chronic dehydration can affect one’s memory, and a recent study suggested 30% of dementias could be prevented simply by drinking more water. Sleep is also essential for a healthy mind and memory, as is exercise. In fact regular physical exercise has been shown in more than a dozen studies to reduce risk for dementia by at least 45%. And just 30 minutes of 84

moderate exercise in the afternoon can significantly improve your sleep. So there are 3 major ways to improve memory that may take a bit of time, but need not cost you a dime.

The biggest factor however, according to a major study by Dr. William Grant, is diet. Our brain is a nutrient hog. And most of us eat too much junk and not enough of the nutrients our brain needs to succeed. Especially as we get older. In fact if you were able to eliminate refined sugars, cookies, cakes, pastries, fried and hydrogenated oils from your diet, and replace them with whole fruits and vegetables, and healthy fish, you could reduce your risk by nearly 60%! But for those with memory problems, good food and exercise may not be enough to turn things around.

So what about supplements? There are many plant extracts, vitamins, proteins, and minerals which have been found to help improve memory. B-12 is one, especially when combined with folic acid. Lower Your Baby’s Risk of SIDS

Sudden Infant Death Syndrome (SIDS), also frequently referred to as Crib Death, is defined as “the sudden death of any infant or young child, which is unexpected by history, and in which a thorough postmortem examination fails to demonstrate an adequate cause of death.”

While the cause of SIDS remains unknown, there are numerous tips you can follow to lower your baby’s risk of SIDS and infant sleep related death: • Make sure your baby sleeps on his/her back at night and at every nap until he/she is one year old. If your baby is strong enough to roll onto his/her tummy while sleeping, your baby can be left that way.

• Make sure your baby lives in a smoke-free home and is not around people who smoke and places where people smoke, such as in a car.

Smoking or breathing secondhand smoke during or after a pregnancy is a risk-factor for SIDS. • Make sure your baby sleeps in a room that does not get too hot. A room that is too warm can put your baby at a higher risk for SIDS. • Parents are to not use products that claim to reduce the risk of SIDS. Special mattresses, wedges, breathing monitors, or positioners do not reduce the risk of SIDS and may be dangerous to your baby.

Make sure your baby sleeps on his/her back at night and at every nap until he/she is one year old.

• Make sure your baby always sleeps alone in a bassinet, crib, or portable crib. If your baby falls asleep in a stroller, swing, bouncy seat, infant sling or couch, or a car seat, you should move him/her to a crib or bassinet as soon as possible, to avoid choking or suffocation.

• Make sure your baby has taken to all of his/her scheduled doctor’s visits and gets all of his/her recommended immunizations. Research has shown that babies who have all their immunizations may be at a lower risk for SIDS. • Mother needs to breastfeed for as long as possible. Studies have shown that breastfeeding your baby reduces the risk of SIDS. • Make sure your baby wears no more than one layer of clothing than you would wear. Your baby may be too hot if sweating or if his/her chest feels hot.

• Make sure baby is never allowed to sleep on a bed or couch alone or with someone else, including the baby’s parents. Just keep the crib or bassinet at

an arm’s reach from your bed so you can be close to your baby and easily breastfeed your baby.

• Make sure baby sleeps in a crib or bassinet with a firm mattress and tight fitted sheet.

• Parents are not to put pillows, sheepskins, bumper pads, quilts, loose blankets, or stuffed toys or stuffed animals in the baby’s crib or bassinet.

These types of items can trap, strangle, or suffocate your baby.

• Parents are to keep items with a cord, such as mobiles, baby monitors, lamps, etc., out of the baby’s reach.

• Make sure your baby’s face and head are uncovered.

• Use a lightweight blanket tucked in on three sides of the crib or bassinet.

• Make sure your baby’s blankets are no higher than the baby’s chest.

Parents, make sure everyone who cares for your baby follows these tips until your baby is at least one year old.

Mayberry Farmfest Fun for all Ages, May 17& 18 The distant but familiar sound of the hit and miss engine will once again be heard in Downtown Mount Airy during the annual Mayberry Farmfest Festival this May. The festival, which centers around the strong agricultural roots of Surry County, will feature a multitude of agricultural demonstrations of farm equipment, both antique and modern. Of course, as the old saying goes, “all work and no play, and so on and so on,” the festival also celebrates the extra-curricular activities of hard working farmers and country folks, old-time music, square dancing, clogging, and eating!

The event kicks-off with the tractor parade Friday, May 17 at 6:00p, which will immediately be followed by a kids’ ride-on parade. After the tractor parade, the antique farm tractors will take their place to park along historic Main Street. Food vendors will be present during the festival as well as the great eateries of Downtown Mount Airy. Visitors may enjoy a world

famous pork chop sandwich, milk shake or malt at the soda fountain, or enjoy a festive treat on the street.

Agricultural demonstrations will take place throughout the day, including the Hogway Speedway Racing Pigs from Catawba County. Pony rides will be offered for children. Many other livestock and educational displays will also be part of the Downtown event. The Mount Airy Museum of Regional History will open a new luthier exhibit featuring several local and regional instrument makers. Admission to the museum will be free for the day.

Saturday’s outdoor activities begin at 9:00a. The agricultural festival wraps up for this year at 6:00p, with the tractor award ceremony and the crowning of the Hogway Speedway Pig Queen. This event is made possible by the Mount Airy Downtown Business Association, with the help of Mount Airy Saw and Mower, Southern States, Mt Airy Equipment, Dan Valley Tractor, Eagle Carports and Patterson

Great traditional music continues at 7:30p as Travis Frye and Blue Mountain and The Round Peak Ramblers take the stage at the Historic Earle Theatre for the monthly Voice of the Blue Ridge Concert.

Exhibit of Ancient Chinese Ceramics Sara Cromwell from the Wake Forest Museum of Anthropology announced the opening of the Museum’s new long-term exhibit called Chinese Ceramics From the Changsha Kilns: Reflections of Tang Dynasty Openness and Tolerance.

The exhibit provides an overview of the ceramics produced by families at the Changsha Kilns during the Tang Dynasty more than 1,000 years ago— putting Tang ceramics into their historical, geographic and cultural context.

Featured are more than 100 ceramic objects from the Museum’s Lam Collection. In 2012, Wake Forest alumnus Timothy See-Yiu Lam donated nearly 600 ceramic pieces he collected over more than 25 years. The Tang Dynasty bowls, ewers, cups, teapots, small toys and other pieces in the collection represent the largest and most comprehensive group of ceramics from the Changsha Kilns in the United States.

Audrey & Chris Testerman The traveling exhibit The Luthier’s Craft: Instrument Making Traditions of the Blue Ridge will open to the public on Saturday, May 18, from 10am to 5pm at the Mount Airy Museum of Regional History. The exhibit opening includes a full day of programs, music and activities. Admission for the grand opening will be free.

The Luthier’s Craft is funded in part by a grant from the Blue Ridge National Heritage Area. The exhibit explores and documents the traditional

In the years before WW Two, life was simple, moat women stayed home and gardened, quilted pretty quilts as they exchanged recipes or visited around the quilting frame.

by Miranda N. Burgin As an award winning artist, active 4-H member, and hard working teenage home school student, Sarah’s days are busy and rewarding. Among her many interests and activities, Sarah enjoys collecting vintage aprons. The collecting gene, much like the aprons she treasures, is something handed down between women in her family. YVL readers may remember that Sarah’s mother, Trudy, was featured in the magazine last year with her delightful strawberry collectibles.

Each of Sarah’s 17 vintage aprons belonged to beloved family members. This special collection began with a gift from Sarah’s grandmother. “My grandmother gave me an apron that was hers as a child,” Sarah recalls. “ I told her I really liked it. As she found more aprons, she gave them to me. “ “This made me want to collect more aprons and gather any information she could remember,” said Sarah. “Most of the aprons in my collection belonged to my great, great aunts. That would make them 70 plus years old.”

“My only remaining great, great aunt is 94 and she is the baby of the family.”

Sarah went on to say.

All of Sarah’s aprons are handmade work aprons made mostly of cotton fabric.

Work aprons from this era were made for both style and substance. Women often repurposed printed feed sack fabric, which was made of durable cotton and featured geometric or floral patterns, into everything from aprons to quilts.The design of a lady’s work apron was made to suit the type of work she was planning to do. Sarah’s collection includes both waist aprons and full bib aprons.

Sarah continues to put these lovely vintage pieces to good use in new and innovative ways. In addition to wearing the aprons for church fundraisers, she has found ways to decorate with them.

“We used them when we decorated a table for The Hiddenite Center’s Festival of Tables fundraiser,” Sarah shares. “Our theme was called “Old Timey Summer” and we tied the aprons around the backs of the chairs to make chair covers.”

It means a great deal to Sarah’s family that she is able to keep memories of loved ones present by using and caring for the aprons. “I love the aprons, because they have been passed down to me,” Sarah said. “They are very old, but beautiful and I can still use them.”

Collectors know that it can be hard to choose just one favorite among a collection but Sarah says that if she had to choose, “My favorite apron is a waist one.

It looks like Christmas, which is my favorite holiday. My great, great aunt Carolene gave it to me herself and it means a lot to me.”

It is no surprise that Sarah intends to continue to add to her apron collection.

“I am hoping my other grandparents are able to find some that belonged to their families,” she says. “I will also be looking for vintage aprons when we go shopping for collectibles.”

When asked what advice she would offer to someone who wants to start collecting vintage aprons, Sarah says, “First, see if you have any within your family because they would mean a lot to you. Then decide which type of apron you like best, either the full apron or around your waist. Be Aware of the Need for Disability Insurance It probably doesn’t show up on your calendar, but May is Disability Insurance Awareness Month. And you might agree that such a month is useful, when you consider the following: • Three in 10 workers entering the workforce today will become disabled before retiring, according to the Social Security Administration.

• At age 42, you are four times more likely to become seriously disabled than to die during your working years, according to National Underwriter Life & Health.

• Disability causes nearly 50% of all mortgage foreclosures, according to Health Affairs, a health policy research journal.

Given these statistics, it’s not surprising that the Life and Health Insurance Foundation for Education (LIFE) sponsors Disability Insurance Awareness Month to encourage Americans to address their disability income needs.

Here’s the bottom line: You can be really good at budgeting your money and you can be a disciplined long-term investor — but unless you’ve protected at least a reasonable percentage of your income, your whole financial strategy is incomplete.

And all your goals, such as a comfortable retirement, could be jeopardized.

Of course, you may not be totally unfamiliar with disability income insurance; if you work for a large employer, a group disability policy may be part of your employee benefits package. If so, you should certainly accept the coverage, which may be offered to you free, or at minimal cost. However, this coverage might be inadequate to replace the income needed to allow your family to maintain its lifestyle without dipping into your investments.

Consequently, you might need to think about purchasing an individual disability insurance policy. Here are some tips: Look for a policy that is “non-cancellable” until you reach age 65. When you purchase a non-cancellable policy, your policy premiums can’t be changed, provided you pay them on time.

Pick the right waiting period.

Typically, disability insurance policies don’t start paying benefits immediately; there’s usually a waiting (or “elimination”) period ranging from 30 days to two years. Obviously, a shorter waiting period is more desirable, but it’s probably also going to be more expensive. You may be able to give yourself the flexibility of choosing the longer waiting period if you have created an emergency fund containing six to 12 months’ worth of living

expenses, kept in a liquid account that offers significant preservation of principal.

Avoid overly restrictive policies. You may want to avoid an "accident-only" policy or one with a limited benefit term (five and 10 years are common). These policies may be cheaper, but they don’t cover either a disabling illness or the entirety of your working life.

Consider adding appropriate “riders.”

It will likely add to the cost of your policy, but a cost-of-living rider will help protect your future benefits from the effects of inflation. You also might want to add a future income options (FIO) rider, which provides you with the ability to purchase additional coverage in the future with no further medical underwriting.

These suggestions are general in nature. Your financial advisor can help you determine if you need a private disability insurance policy — and, if so, what type of policy is best suited for your needs.

But don’t wait too long to take action in this area. You can’t predict the future, but you should still prepare for the unexpected.

Welcome Home, MWD Fara

by Dr. Robin Ganzert President and CEO, American Humane Association Military Working Dog Fara H341, an explosives detection canine who helped keep our troops safe in Kuwait, returned home to a hero’s welcome at Baltimore’s BWI airport, greeted by her adoptive handler, Military Working Dog Adoptions, and a cheering contingent from American Humane Association.

After their careers of service to the nation, saving soldiers’ lives, many fourlegged heroes need help getting home. MWD Fara H341 was lucky enough to have many supporters who worked behind the scenes to ensure her repatriation to the United States, including Military Working Dog Adoptions, her adoptive handler MA2 Logan McMichael, and American Humane Association, the child and animal welfare charity that has been helping the military, military animals, and military families since 1916.

It is vital that we honor and protect all our military heroes – at both ends of the leash. Military working dogs have been a vital, life-saving part of our armed services and they deserve our support when they can no longer work. The public agrees as we dramatically saw firsthand during this year’s annual American Humane Association Hero Dog Awards™ when after 3 million votes were cast by the American public, Military Working Dog Gabe was chosen as the nation’s top American Hero Dog. MWD Fara, MWD Gabe (who I’m sorry to say recently passed away) and all the other courageous canines who work every day to keep our soldiers safe deserve our help and thanks.

“After all these animals have done for us, we owe them a debt of gratitude and repatriation to a safe, loving home where they can enjoy a well-deserved retirement,” said Debbie Kandoll, founder of Military Working Dog Adoptions, a charity that through public donations has engineered the return, placement and care of more than 300 military hero dogs, including MWD Fara H341.

MA2 Logan McMichael and MWD Fara H341 became a team when Logan

first got to Greece in the spring of 2008. They were then deployed to Kuwait from about July 2009 to April 2010. They returned to Greece and Logan returned to the States, where he is now stationed in Yorktown, Virginia. Before leaving Greece, Logan asked to adopt MWD Fara upon her retirement, but did not have the funds and necessary permissions to get her on a plane back home. Military Working Dog Adoptions worked to raise the money needed, and American Humane Association worked behind the scenes with the military to have them put MWD Fara on a flight so she could get back from Greece to the United States, ensuring a happy ending for everyone involved.

“Fara not only kept our son safe while he was deployed, but her entire life has been dedicated to keeping her country safe,” said MA2 Logan McMichael’s mother Roberta Wright. “She deserves to be loved for the rest of her days.”

The German Shepherd Dog The German Shepherd Dog was voted the second most popular dog in 2012 by the American Kennel Club. Readily known as a “one-man” breed, the German Shepherd Dog shows extreme loyalty and fidelity to its human caregiver and the family it is brought into as a puppy. It is the most used dog for personal protection, service, police and military jobs because of its intelligence, agile strength, ease to train and retain that training.

This large dog originated in Germany and didn’t come to the states until the 1920s. It usually measures 24 to 26-inches tall and weighs in at an average of 77 to 95 pounds, depending on if male or female. Colors range in silver, black, sable and white but the most predominant color is tan with a black saddle and facial markings; just think RinTinTin! The German Shepherd Dog has a double coat— the outer, close and dense coat, sheds all year round and grows over a thick undercoat.

Service Dogs at the Public Library Aaron and Jackson/Mary Ann and Otis T. Good Dog A mass of second graders simply melted into the carpet when two standard poodles - Jackson and Otis T Good Dog entered the Yadkin County Public Library. Together with their handlers, they came to demonstrate exactly what a service dog is and what it does. Why poodles? the breed doesn't shed and is hypoallergetic. Service dogs can be seeing eyes, offer therapy, help with seizures and the autistic who are often anxious in new places.

Jackson is a year old and is already planning his journey to Pennsylvania.

He will live with a child who has seizures.He is trained to touch and lay on top of the child to keep the youngster calm until the seizure if over. Otis is only eight months old but when he finishes "school" that usually takes a 106

year, he is headed to Tennessee to live with a young boy.

Training takes longer with a dog fetching for a person confined to a wheel chair. Service dogs can be trained to recognize a diabetic attack and for the hearing impaired, the dogs can learn to signal at a fire alarm or a knock on the door.

Not every dog can be a service dog.

Since they are trained to work with only one person as with a therapy dog who is shared only by invitation to many people. Observed as puppies, handlers look for traits of a dog not easily scared when pots are banged together, calm when in a crowded airport and heavy traffic and more. Every person has different needs so the family and location are screened to find the

best match for the human and the dog.

Trainers spend three days or so with the adoptive family to help both the dog and the family adjust to the new family member. The average waiting period for a service dog is from a year to two.

Trainers go through training also.

The Humane Societies of Forsyth and Davie counties joined hands to finish up a fantastic place to enjoy your dog's company. The park will be open seven days a week and will be free to the public. It will have benches for the humans; water and poop stations for the canines. It is 2.3 acres and has a section each for small and large dogs.

The all-volunteer Dog Park Committee completed multiple fund raising efforts and now extends its thanks to all of the local businesses, civic organizations and individuals who supported this great addition to the community and the already beautiful Tanglewood Park.

"I want to personally thank the fundraising committee that worked so hard on bringing the dog park to fruition. It has been fun to see new friends and partnerships emerge as part of the process. Once the park opens, we can meet each other's dogs, too!

WHAT’S SO SPECIAL ABOUT THAT DIET?

So your pet needs a special diet and you think you can get it at Walmart?

You should probably think again.

Unfortunately, many special diets are not sold in large supermarkets because the demand for them is not large enough. The low demand and the often higher cost of ingredients usually results in much higher prices for these diets when compared to conventional diets. Why would you want to pay these higher prices? What makes diet so important in certain medical conditions? To understand this it is important to understand the role that certain organs play in the digestion and metabolism of certain foods. Foods are made up of proteins, carbohydrates, fats, vitamins, minerals and water.

Proteins are broken down in the digestive tract into amino acids which are molecules small enough to be absorbed through the gut wall. During the break down of these proteins, cer112

tain waste products are created. The most important of these is ammonia.

Yes, this is the same chemical that is used in cleaning products—not a good thing to have floating around in your blood stream. Fortunately, the blood vessels that supply the gut and pick up these protein waste products travel to the liver before going anywhere else in the body. As they pass through the liver, their blood is cleansed of things that could be hazardous to the body, including the ammonia. The liver converts the ammonia into a chemical called urea. Urea is then carried by the bloodstream to the kidneys. The kidneys expel the urea in urine. Because of this process, proteins in the diet cause the liver and kidneys both to have to work to clean up waste. Excess protein in the diet puts excess strain on these organs.

If either the kidney or liver is not healthy, protein waste products may build up in the bloodstream. One way

to prevent this is to feed diets that have a lower than normal protein level or better yet, have protein sources which don’t produce much ammonia when they are digested. Such protein sources include fermented dairy products such as yoghurt and cottage cheese, fermented grains such as brewers grains, eggs, and (ironically) liver. Diets that are designed for animals with kidney or liver disease will often have these items as main ingredients.

Carbohydrates make up the largest part of most pet foods. Carbohydrates are the main source of energy in the food. They are broken down in the stomach and intestines into sugars.

Sugars are the main source of energy used in an animal’s body. Sugar in excess of that amount used for immediate energy production is stored in fat or used to produce other compounds used in the body. In order for sugar to be utilized, insulin is required. Insulin opens the door for the sugar to get out of the bloodstream and into the cells to be used as energy or converted into fat and other products. Excess amounts of sugar from excess carbohydrates in the diet demand high levels of insulin production from the pancreas.

When insulin production is low or when cells lose their ability to respond to insulin as is the case in animals with diabetes, sugar levels will spike in the blood stream after a meal high in carbohydrates. High levels of sugar in the blood stream can lead to a number of serious problems. Adding ingredients high in fiber will slow the absorption of

the carbohydrates and lessen the after meal sugar spikes that can occur. Diets designed for diabetic pets will have higher fiber and lower carbohydrate levels than non-diabetic pet foods. They will also have higher protein levels to compensate for the lower carbohydrate levels. While carbohydrates are a more efficient energy source, proteins can be converted into energy without producing the blood sugar spikes that carbohydrate burning can cause. When you think of diabetic diets, think of the Adkins diet—low carbohydrates, high protein, high fiber.

Salt, or sodium chloride, is another ingredient that we sometimes have to worry about with our pets, just as we worry about it in our own diets.

Water follows sodium. Diets high in sodium may cause excess water retention which makes both the heart and kidneys have to work harder. The excess water in the blood vessels can increase the pressure within those vessels resulting in high blood pressure.

Diets for heart disease will tend to be lower than normal in sodium. Animals like the taste of salt.

When it is left out, the diets are sometimes unpalatable. For this reason and because sudden changes in sodium intake can be detrimental, it may be necessary to introduce salt restricted diets gradually.

Diets made for animals with kidney disease are less salt restricted than diets for heart disease. For this reason, I often start with the kidney diets when treating a heart patient. Heart and kidney function are tied closely together. The heart has to pump blood so the kidneys can filter it. The kidneys have the ability to regulate blood pressure since they control the excretion of sodium. In addition to this, medications to help the heart by decreasing excess fluid in the body, often stress the kidneys. This makes kidney diets even more useful in patients with heart disease.

Fat content is another aspect of pet foods that can be very important to our pets’ health. Fat, like salt, is added to foods because it makes them taste better.

It is also a way that pet food manufacturer’s can increase the caloric content of the food rather inexpensively. The types of fat added affect how the food is received by the body. Certain animal fat, like pork, seem to be more commonly associated with episodes of pancreatitis than other fats. Pancreatitis is a very painful condition where the pancreas over reacts to certain ingredients, primarily fats, in the

diet. This overreaction causes the pancreas to secrete more enzymes than actually needed to digest the fat. The excess enzymes may then start to act on the pancreatic tissue itself causing damage to both the pancreas and the tissues surrounding it. Animals that are prone to pancreatitis should have diets which are low in fat. In particular, low fat meats such as chicken are preferable to more fatty meats such as pork.

Prescription diets are not for every pet. In fact, only those with certain medical needs should be eating them. These diets have special restrictions in order to deal with the medical condition for which they are designed. They often contain ingredients which are not found in traditional pet foods because these ingredients increase the cost and in some cases decrease the palatability of the diets. When needed, these diets do wonders for assisting in the medical management of pets with certain health problems. It is not as simple as one might think to create these special diets. I do have clients who prefer to create their own diets rather than purchasing prescription diets. In the long run, it is usually easier and less expensive to buy the diets that someone else has spent the time researching and formulating for your pet’s special needs rather than trying to create them yourself.

Dear Daddy, There are some things I forgot to ask you. If you aren’t too busy having a reunion with your parents, siblings, and numerous friends, well…maybe you can respond to this (somehow).

I never thought to ask who nicknamed you “Jake?” Mama doesn’t know, either, and it’s eating away at me.

We’ve been going through old pictures since you left. Did you ever notice how I wormed my way between you and Mama when I was little?

Your eyes were always on her. I didn’t like sharing your affection. Just thought I’d mention that, in case you never noticed.

Did you know you were my hero? The day you rescued my parakeet from that big oak tree was heroic. I never knew how you fell out of the tree and sprang your ankle without losing grip of Pretty Boy! With that kind of skill, you could have been in the movies!

Looking back, I know you worked all those long hours so that we could have a nice home, among other things. You were gone at lot when you worked 2nd shift. Remember when Mama and I stayed up to surprise you on the Friday night that I won a colt at a horse show? When they called my name out over the speaker, Mama wouldn’t go with me because her hair was in rollers. You’ll never know how I needed you at that moment! But it was fun getting to surprise you. And thanks for teaching me to ride—those were specials years.

Daddy, it was your genes that awarded me a love for sports. Were you disappointed that I was a girl? I never told you, but I liked it when you were able to be at my basketball games. Did you really sink 7 baskets from the centerline in a high school game?

I’m glad I got to be with you in the father’s waiting room the day you finally got your boy. We were both ecstatic, weren’t we? And rightly so, you and Mama waited 16 years for another child! Three years later you were in that room when your grandson was born. I forgot to ask why it took y’all so long?

And oh, did your coworkers at Archer pick at you the time you changed into your work shoes and discovered that I’d painted your toenails red while you were asleep? I sweated over that one!

Daddy, in the window of my mind I see you two ways: as you were when I was growing up, and as you were when you left us. I prefer the earlier version, your black hair cut in a flattop, exhibiting a twitch on your upper lip, and a flick of tinfoil shining somewhere on your face. I will never forget your hands! Never.

But the most precious memory you left me goes way back. We were at church and it was invitation time. I heard crying, and I saw the preacher kneel down and place his hand on a man’s back at the altar. It was you. It tore me up, Daddy. But mostly, it was the change I saw afterwards. We didn’t go back to some of the places we used to go to. The atmosphere changed. You changed.

And Daddy, as sad as I am that you’re gone, I’m at peace because I don’t have to wonder if we’ll be together again. We will. And the picture of you looking so frail will be forever erased. You said you believed everybody will be 33 in heaven. I need to know, Daddy, have you seen the child I miscarried? I’ve read about a nursery in heaven where babies who die in the womb get to grow. If you see him, Daddy, tell him about us and that I love him, too.

I’ll be looking for the answers, Daddy. But no funny stuff! You know I spook easily. But if you want to say something to Mama…just don’t say it was my idea!
