I’m dreaming of a Wylde Christmas It’s hard to believe that another year has come and is almost gone. It seems like only yesterday that I was working on the first magazine of 2017 and now, in just a blink of an eye, here I am again, reflecting on both the past year and the coming one. We officially became the largest park home operator in the UK, celebrated the first anniversary of our Wyldeliving Magazine, acquired new parks, launched brand new residential developments and set up our beloved Wyldecrest Parks Charity! If only 2018 could be as fruitful as this year has just been, we would be immensely grateful! The Wyldecrest Parks Charitable Trust has arrived, and our website is now up and running at www.wyldecrestparkscharity.org.uk. On the website, you’ll also find links to our Facebook page, so please do drop by and give us a Like and a Share so you can stay up to date with the latest news and developments.

What We Do Our focus in on FAMILY, the Wyldecrest Family within our parks and your families too. But it doesn’t stop there - we’ll also be reaching out into the wider communities within which our parks are situated. Our aim is to be able to assist the most vulnerable members of our families, the young and the elderly, who are facing life

threatening or serious health issues but who don’t have the resources they need to cope. We’ll be raising funds to enable them to access the medical treatments, equipment and care that they need, as well as to fund holidays in the UK and abroad so that our beneﬁciaries and their families can spend some quality time together, having fun and relaxing, away from the day to day worries and stresses of coping

with their situation. This can be an important part of the healing or convalescent process, or, if things are beyond that as they sometimes can be, just a great way to make some very special memories and spend whatever time remains with the people who matter most to them. Illness and disease can affect any one of us, at any time. It could be you, a member of your family or someone you know and care

about. Where possible, we’ll try to help to restore health and well-being, but in doing so we also hope to build a sense of community and caring so that whatever challenges we might individually face, we can face them together. Certainly, we’ll be dealing with some serious and emotional situations, but bearing in mind the maxim that “laughter is the best medicine”, where we can,

we would also like to inject some fun, laughter and merriment. We have a few events planned for the next few months which we hope you’ll be keen to take part in (details to follow on the website and Facebook page) which we hope will be enjoyable and engaging. We’ll also be distributing some collection buckets and chalices before Christmas, so if you’re having a party, a dinner or any

other special event, please speak to your Park Manager so that we can organise those items to be delivered to you. Some mouth-watering

Salmon, Cheese & Spinach Cups Ingredients: 1 salmon fillet (approx. 150 grams) Herbs & Garlic Soft Cheese 2 tbsp grated cheese

Olive oil (or melted butter) 2 generous handfuls of spinach leaves Salt, pepper & granulated garlic to taste

1 egg, slightly beaten 3 rectangular filo pastry sheets

Method: ★ Lightly poach or pan-fry the salmon fillet and flake ke it. Leave it to cool down. ★ In a bowl, mix the salmon flakes with 2 generous tablespoons of cream cheese, one tablespoon of grated cheese and the spinach. Season it with salt, pepper and garlic, add the beaten egg and mix it carefully. ★ Lay one filo sheet on a clean work surface, brush the filo with a thin layer of olive oil or melted butter and lay another sheet on top of it. Repeat the process with the remaining pastry. Cut it into 6 squares. ★ Gently brush 6 ramekins with a little bit of olive oil or butter and cover them with the pastry, shaping them into small cups. Fill each of these with a generous spoonful of the salmon mixture and sprinkle with the remaining grated cheese. ★ Take the ramekins to a pre-heated oven to 180°C for 15-20 minutes, until the cheese is melted and the pastry’s golden and crunchy! 20

Zest of 1 lemon

150 grams granulated sugar

1 cup fresh raspberries (plus some for decoration)

2 eggs

For the ganache:

150 grams self-raising ﬂour

4 tbsp heavy cream

50 grams soft cream cheese

50 grams white chocolate

3 tbsp natural greek yoghurt

Method: ★ Cream the softened butter and sugar using an electric mixer until light and ﬂuffy. ★ Keep whisking it whilst adding the eggs, one at a time, followed by the cream cheese and yoghurt. ★ Gently fold in the ﬂour and the remaining yoghurt, as well as the raspberries and the lemon zest. ★ Pre-heat the oven to 180°C. Pour the batter into a greased tin and cook it to a for around 40 minutes. Leave it to cool down. ★ For the ganache, pour the cream into a small pan and slowly heat it, but make sure you turn off the heat just before the cream starts boiling. Break the chocolate into small pieces, add them to the cream and leave it for 5 minutes, without stirring it. Then mix everything together gently until you have a creamy, glossy white ganache. ★ Pour the ganache over the cake and decorate it with fresh raspberries and lemon zest.
