Dear Member,

This month, we’re excited to bring you a new cooking show – filmed in Chicago and featuring a local chef! On Saturday afternoons, settle in for the new series Indian as Apple Pie, hosted by food entrepreneur and cookbook author Anupy Singla. Chef Singla will share her love of her homeland by demonstrating how to make popular Indian dishes in your home kitchen, where and how to shop for key ingredients, and how Indian food manages to be both nutritious and delicious. On page 4, meet Anupy as she tells her story and reveals how her children inspire her work.

Also in May, mark Asian American and Pacific Islander Heritage Month with several new programs including Food Roots, following Emmy Award-winning restaurateur Billy Dec as he returns to his native Philippines to explore the food and culture that shaped him; timely documentaries from Independent Lens and Secrets of the Dead that explore Asian history; and an Antiques Roadshow episode that unearths stunning items made by Asian American, Asian, and Pacific Islands creators. And to honor Jewish American Heritage Month, WTTW will share two new films: Growing Up Jewish, which follows young people preparing for their Bar and Bat Mitzvahs; and About Face: Jewish Refugees in the Allied Forces, about men and women who returned to their native Germany to fight for freedom alongside American and other Allied troops in World War II.

In May, WFMT will present a new season of performances from the Santa Fe Chamber Music Festival and the annual Ryan Opera Center Rising Stars in Concert. WFMT also observes Asian American and Pacific Islander Heritage Month with the Filipino duo of violinist Diomedes Saraza Jr. and pianist Victor Santiago Asunción in their live recital for the Dame Myra Hess Memorial Concerts; a new Live from WFMT with Claire Huangci, an American pianist of Chinese descent; a performance by the San Francisco Symphony and Chorus led by Japanese conductor Kazuki Yamada; and another SFS concert featuring the electrifying Chinese-born American pianist Yuja Wang.

Indian as Apple Pie (New Series)

Chicago-based cookbook author Anupy Singla takes us on a journey of Indian ingredients by visiting fresh markets across the U.S. and cooking popular recipes in her own kitchen. She aspires to help create the next generation of Indian home cooks in America by demonstrating how to source Indian ingredients and prepare authentic dishes at home and beyond.

An interview with

Anupy Singla

Anupy Singla was born in the northern Indian state of Punjab and came to Pennsylvania with her family when she was three. She worked on Capitol Hill and then found her way to Chicago, where she worked in broadcast journalism before taking a career turn to become a cookbook author and food entrepreneur, selling Indian spices, sauces, and other ingredients under the name “Indian as Apple Pie,” a reflection of her background in two worlds.

Now she’s returning to television with a new cooking show, Indian as Apple Pie, which will air on Saturdays at 4:00 pm on WTTW beginning May 2. The show aims to not just demonstrate recipes for everything from roti to dal to street food, but also teach techniques, tricks, and shortcuts to make Indian food a part of the home cook’s weekly routine without losing the heart of the dish.

The Guide: Why did you want to make this show?

Anupy Singla: I have had this idea in my head since I was really, really, really young. I remember people would say, “Well, what is it that you really want to do?” and I was like, “Well I just want to host a travel cooking show for India, and I’ll be the host.” I think I’ve had such a love for India and such a huge love for growing up in America, that to be able to connect the two and show positive aspects of each has always been my goal. Americans on this journey to understand India has been something I’ve really wanted to do from the very beginning.

The Guide: How did you make food a career?

Singla: We came to this country when I was three. My mom had to work; we had to make ends meet. As she worked, she also wanted to make Indian food. Growing up in the ’80s, there was no place to go for Indian groceries or Indian ingredients. She was one of the first that I knew of that saw a crockpot and said, “That makes sense for Indian cooking: low heat, long cooking hours. I’m at work all day. This is the way to get Indian food on the table.” So she developed these recipes, and I always wanted to put her recipes in a book to celebrate her and everything she’s done.

[Years later] I was the morning reporter for CLTV, and my husband traveled Monday through Friday for like 20 years, so I was a single mom during the week, and it was hard to get food on the table. I took a break to write The Indian Slow Cooker, because I felt like it was going to help a lot of people, and especially Indian Americans, to not have to give up their day jobs. I’m not a trained chef; I’m a home cook who learned how to cook from my grandfather in the village in Punjab.

That book was top of the charts. We sold so many copies, and we continue to, because now people felt like they could understand Indian, whereas before it was this unapproachable type of eating. That started the process [that continues today] of, how do we simplify Indian food? My journalism background came together to make recipes really, really clear and approachable and easy.

Singla: There’s been this misconception that Indian food is arriving or has arrived. What I always say is, unless the home cook is making Indian food at home once a week or twice a week, finding it approachable, we’re not there yet. People are going to Indian restaurants more than ever. They

want Indian food more than ever. But they still don’t know how to lock in the flavors, and that’s what my platform is about.

For me, the most important thing is that Indian food is incredibly healthy.

My perspective is to reach that home cook and say, “Here’s how you do it,” by making it easier, but then also saying, “You don’t have to lose the authenticity. You don’t have to lose the flavor.” I kind of figured out the spots where y ou can take shortcuts. It’s just about making it approachable. It’s basically giving them the path to making Indian food at home without having to give up their day jobs like I did.

and use them. And then we take them to the next step of curry. There’s so much misconception of what curry is. We show a chicken curry. Now you’ve gotten the curry and the spices down, let’s do your one-pot meal of a biryani, which is complex, but uses the same sort of elements. And then here’s your side; there are some complex sides, but then there are some really easy sides as well. So we just took them on a journey of teaching them from the basics and using the recipes as examples of those basic techniques, and then just started to stack on them.

The Guide: What makes you want to share Indian food and get the everyday cook to incorporate it into their lives?

The Guide: Indian food in all its variety is becoming increasingly common and visible in acclaimed restaurants. Has that changed how you approach your recipes?

The Guide: How did you decide how to structure the show and what recipes to include?

Singla: We start from the very basics, like the basic spices and how to buy and store

Singla: For me, the most important thing is that Indian food is incredibly healthy. Restaurant-style Indian food can be a little bit heavier; it isn’t everyday food. I’ve raised my kids on homestyle Indian. It’s also a gift to my kids, because I grew up where I was made fun of for eating Indian food. Everything I do is really just to show my kids that they can be proud of their roots and be American, too.

Santa Fe Chamber Music Festival

The Santa Fe Chamber Music Festival series showcases recent performances by leading artists recorded in the intimate atmosphere of the St. Francis Auditorium in the New Mexico Museum of Art. Concerts feature celebrated core repertoire alongside lesser-known composers and compositions. Hosted by Kerry Frumkin, program commentary is provided by artistic director Marc Neikrug. “[The Festival] is uncompromising in its exploration of iconic masterpieces as well as neglected works from the past and a substantial presentation of the music of our time,” says Neikrug. “The Festival has one of the most sophisticated audiences anywhere in the world. The musicians that come –and they’re global, they’re superstars –all remark about this audience. And I want to find a way where the audience is always comfortable having something they’re familiar with and, at the same time, open to the expanse of what this music is.”

Chicago Symphony Orchestra

Dmitri Shostakovich’s 11th Symphony, “The Year 1905,” depicts the start of the first Russian Revolution of 1905 when a large group of peaceful protesters gathered at the Winter Palace in St. Petersburg. Soldiers opened fire, slaying hundreds. Revolutionary songs of the era punctuate the score entwined with Shostakovich’s trademark pounding percussion and intense writing for brass and strings. In March of 2025, Jakub Hrůša led the CSO in highly acclaimed performances of the Symphony No. 11 to sold-out houses and a tumultuous response. Hrůša himself described these performances as having touched the “musical heavens.” Chicago Classical Review said the performance was “not just a highlight of this season, but one of the finest CSO nights of recent years.” Chicago On the Aisle reported that Hrůša addressed the rapturous audience, saying, “Keep coming back to this place. Keep coming to hear this great orchestra. Your response has made me profoundly happy.” Sunday, May 10

Live from WFMT

American pianist Claire Huangci gained international acclaim by winning first prize as well as the Mozart Prize at the 2018 Concours Géza Anda. She performs live from the Levin Studio to share selections from her latest album Heroines celebrating women composers and the struggles they’ve endured, with works by Clara Schumann, Amy Beach, Fanny Hensel, and Florence Price. Née Clara Wieck, Clara Schumann was a mother of eight and the main breadwinner, constantly on tour. Fanny Hensel composed largely in private, often publishing under her brother’s name (Mendelssohn). Amy Beach’s career was practically silenced during her marriage; only upon her husband’s death did she return to the stage. Florence Price faced both racial and gender discrimination and later raised two children alone. Huangci writes, “The realities these women faced are difficult to imagine for any modern woman in the field. In their music, we don’t just hear history. We hear transformation. Heroines is my way of listening back – and adding my voice to theirs.”

After 24 years at the helm, Bruce Tammen, founder and artistic director of Chicago Chorale, will be retiring at the end of the 2025-26 season. Without institutional funding or sponsorship, Tammen founded Chicago Chorale in 2001. The group flourished under his direction and was quickly acknowledged for its high-quality performances of a cappella and orchestral choral works – a transformation of the sound of Chorale’s 60 volunteer singers into that of a professional-level ensemble. “Tremendous ability and feeling resides in all of us. And we all have voices,” says Tammen. “My goal, both as voice teacher and as choral conductor, has been to discover and unlock that potential. Great music is too important to be left to the pros.” Bruce Tammen joins WFMT to look back on the accomplishments of the Chicago Chorale in advance of his final performance as artistic director leading Gabriel Fauré’s Requiem later this month.

Dame Myra Hess Memorial Concerts

Violinist Alejandra Switala has been praised as a musician of “beauty and grit” (Cleveland Classical ) who plays with “a flair and capacity far beyond her years” (Sarasota Herald Tribune). Since her solo debut with the Fort Worth Symphony at the age of 13, Switala has performed as a soloist with orchestras including the New World Symphony, Buffalo Philharmonic, New York Philharmonic, and the Cleveland Orchestra. She graduated from the Curtis Institute of Music under the tutelage of Ida Kavafian and Pamela Frank and recently attended the Cleveland Institute of Music studying with Ilya Kaler. An alumna of the Grant Park Music Festival’s Project Inclusion and a laureate of the 2023 Sphinx Competition, Switala is currently curating a multi-concert series for Pilsen Classical, a project that aims to make the chamber music concert experience more accessible, inclusive, and engaging. For their Dame Myra Hess recital, Switala and pianist Katherine Peterson perform Mel Bonis’s Violin Sonata, Florence Price’s two violin fantasies, and selections from Paul Schoenfield’s Four Souvenirs

In a program conducted by EsaPekka Salonen, Yuja Wang brings her dramatic flair and interpretive finesse to two piano concertos. The first, Maurice Ravel’s Piano Concerto for the Left Hand, would have constituted a full night’s work with the composer’s challenge to make a one-handed soloist sound as virtuosic as any pianist. But following Wang’s recent feat of performing all four piano concertos by Sergei Rachmaninoff, as well as the composer’s Rhapsody on a Theme of Paganini on a single program, performing at least two concertante works per program may now be the Chinese pianist’s minimum offering. In the second half of this concert, Wang tackles Einojuhani Rautavaara’s post-modern Piano Concerto No. 1. Composed in three movements, the Finnish master’s concerto calls for technical flourishes including a flurry of tone clusters played with the forearm and bravura glissandos which Wang makes look almost effortless. “For Yuja Wang’s legion of fans, the pianist’s prodigious, seemingly inexhaustible gifts are a settled matter,” said San Francisco Classical Voice. “The sound and fury, range and finesse, drama and delicacy she summons from a Steinway grand are a renewable marvel.”
