The American Dream: As Real as Ever in the Hospitality Industry By Anthony Anton This month the WRA and WLA are recognizing members who have received awards at the state and national levels. Hearing about their lives made me think about my own story. Especially after hearing Taylor Hoang’s great story of an immigrant family that achieved the American dream of owning a now-sought-after restaurant in Seattle. I found myself sharing my story – the story of my grandfather and family – with our staff. At their request we did an interview on Facebook Live. I encourage you to check it out on our Facebook page! It was a great opportunity for me to talk about how I know the American dream is possible in this industry; and that it is available for immigrants in ways they can find nowhere else. I know from experience that immigrant families often find a chance at entrepreneurship by just cooking the foods they grew up making and eating, by bringing that taste and culture to an American town.

Decades ago, my grandfather escaped a war-torn Greece and came to the USA. At that time, with limited language, he was only able to find work on the railroad. He quickly decided he wanted to try and work for himself and take his shot at the American dream. So, he bought a small café and, using the skills he had from growing up in Greece, he made a successful restaurant business out of it. Eventually, my grandfather sold the café and bought another one in Tacoma. Even coming from a country in turmoil, he was able to rise and be a success in the hospitality industry. More recently, my uncle was able to find success in the hospitality business. I was raised on the story of how my uncle started as a dishwasher in a hotel. Although he had little English-speaking skill, he was willing to work hard as a dishwasher because it was the only entry-point of work for him. He turned that position into the American dream. The manager of that hotel took my uncle under his wing and helped him move up into a management position and eventually my uncle was able to have his own restaurant. It’s inspiring for me to know that this is still happening today. Stories like my grandfather’s and uncle’s are mirrored in stories like Taylor Hoang’s. These experiences are widespread in our industry. I hear about them every day. Our industry, more than any other, offers opportunities to be on top even if you start from nothing. We don’t talk about it enough – how our industry gives people an entry point to the workforce. And, our industry doesn’t just let employees languish there, either. Most business owners I’ve met in my 20 years in this industry have mentored their staff. We are an industry that thrives on lifting people up. I see it every day in our current workforce and in the history of my life.

Primary Source of Information | News Briefs Washington’s ProStart Students Make Strong Showing at National Competition Talented ProStart students from Bonney Lake and Lewis & Clark High Schools gave it their all at the 15th Annual National ProStart Invitational in Grapevine, Texas, last month, placing tenth in the culinary arts and restaurant management competitions. The Washington students were among the 373 high school competitors who put their skills to the test in front of culinary and restaurant business leaders. Nationwide, 140,000 high school students are enrolled in ProStart, and the 40plus teams competing in Texas placed first in ProStart invitationals at the state level. Bonney Lake High School earned the opportunity to represent Washington when it won the culinary competition at the 2016 Boyd’s Coffee ProStart Invitational in Lakewood in March. This was the school’s second time in the national culinary competition that required them to prepare a three-course meal in 60 minutes using only two butane burners. They were evaluated on taste, skill, teamwork, safety and sanitation. Spokane’s Lewis & Clark High School won Washington State’s restaurant management competition for the first time this year. At Nationals their team presented a proposal for the next promising restaurant concept in front of a panel of industry judges. In addition to their hard work and training, these students were also responsible for raising funds to travel to Texas. They have clearly demonstrated skills and dedication that will serve them well in their future endeavors in the industry. Hospitality job openings at record high The nation’s hospitality industry continues to expand payrolls at a steady pace, according to data from the Bureau of Labor Statistics (BLS). End-of-month job openings in the restaurants-and-accommodations sector averaged 685,000 during the first quarter of 2016 (on a seasonally-adjusted basis), which represented an increase of 21,000 job openings over what was reported during the fourth quarter of 2015. It also marked the highest quarterly reading since the Job Openings and Labor Turnover data series began in 2000. The pace of hiring in the hospitality sector has also been accelerating. Across the nation, restaurants and lodging places filled an average of 861,000 jobs each month during the first quarter of 2016, which represented the strongest pace of hiring since the first quarter of 2006. In Washington state, employment in leisure and hospitality, the broadly-defined accommodations and food services employment sector (NAICS 72), was 0.9 percent higher in April 2016 compared to April 2015. This represents a growth of 10,700 jobs, with 8,800 added in food services and drinking places. In terms of unemployment, Washington state’s unemployment rate was 5.8 percent in March 2016, slightly higher than the national rate of 5.0 percent. Unemployment in Seattle/Bellevue/Everett in March was 4.8 percent, up from 4.4 percent in March 2015.

DOL Raises Overtime Exemption Threshold to $47,476 a year The Department of Labor released new federal overtime regulations on May 18, drastically expanding the number of people who will qualify for overtime pay. Under the new rule, salaried employees earning under $47,476 a year ($913 a week) must be paid time-and-a-half when they work over 40 hours a week. This threshold is double the current level of $23,660 ($455 a week). The regulations will go into effect on December 1, giving employers little more than six months to adjust to this significant change in salaried employment. The salary threshold will be automatically updated every three years and be tied to the 40th percentile of full-time salaried workers in the lowest-income census region, which is currently the South. Based on current wage trends, the DOL projects a salary threshold of $51,000 at the first update on Jan. 1, 2020. The duties test was not revised, leaving in place the current rule on how to determine whether a salaried employee above the salary threshold is considered an executive, administrative or professional employee and thus exempt from overtime pay. The National Restaurant Association and the American Hotel & Lodging Association were strongly opposed to the proposed changes and will continue to raise their members’ concerns with the Administration. The NRA has promised to use all available legislative and legal options to block the damaging rule. The WRA and WLA will closely follow developments and, through its many communications channels, provide members with information on important aspects of the new rule.

Congratulations to James Beard Award Winner Renee Erickson It came as no surprise in May when the James Beard Foundation recognized the talent of Renee Erickson with its Best Chef Northwest award.

The three-time nominee and selftaught restaurateur has helped shape the Seattle restaurant esthetic with her storied, but now closed, Boat Street Café and is considered one of the Northwest’s culinary stars. As restaurant and drinks editor Andrew Knowlton contended in a recent Bon Appétit magazine feature, she has helped make the city one of the most exciting places to eat in the country.

Erickson took over ownership of Boat Street Café in the 1990s not long after graduating from the University of Washington, and launched The Walrus and the Carpenter in 2010. Two years later, she opened The Whale Wins, which indeed does win as this is the restaurant that delivered her the James Beard Award. Her more recent projects include Bateau, Barnacle and General Porpoise. The other finalists in the Northwest regional award category were Mike Easton of Il Corvo and Rachel Yang and Seif Chirchi of Joule. Canlis was a finalist in the outstanding wine program category. The semi-finalist list included Ethan Stowell, Ethan Stowell Restaurants (Outstanding Restaurateur); Matt Dillon, Bar Sajor, and Jerry Traunfeld, Poppy (Outstanding Chef); Junko Mine, Café Juanita (Outstanding Pastry Chef); Jay Blackinton, Hogstone Wood Oven, and Maximillian Petty, Eden Hill (Rising Star Chef of the Year); Evan Andres, Columbia City Bakery (Outstanding Baker); and Wayne Carpenter, Skagit Valley Malting (Outstanding Wine, Spirits or Beer Professional). Lark was a semifinalist for Outstanding Restaurant; Girin Steakhouse & Ssam Bar for Best New Restaurant; Canon for Outstanding Bar Program; Café Juanita for Outstanding Service and Wild Ginger for Outstanding Wine Program. NRA Video Pays Moving Tribute to Taylor Hoang’s Determination and Vision There were few dry eyes in the house when Pho Cyclo Café owner and WRA board member Taylor Hoang was honored at the National Restaurant Association Education Foundation Awards luncheon in Washington, D.C. in April. That’s because the video shown before she received the Faces of Diversity Award told the moving story of Hoang’s unwavering commitment to help her family, which left Vietnam as refugees in the 1970s, and her community find success in the American dream. Radisson Hotel Seattle Airport is an AH&LA Property of the Year The American Hotel & Lodging Association has selected Radisson Hotel Seattle Airport as its Stars of the Industry Property of the Year in the small property category. General Manager Sanjay Majahan, CHA, accepted the prestigious award on May 18 in Washington, D.C. Awarded annually since 1966, the Stars program recognizes individuals and properties that have demonstrated outstanding service and an overall commitment to excellence. The Washington Lodging Association has held its own Stars of the Industry Awards since 2000 and, in 2015, honored Radisson Hotel Seattle Airport with its community service award. The Radisson team stands out for strong connection to its community. It supports the Genesis Project, a charity organization that helps victims of sex trafficking, and it is a member of the BEST Employers Alliance launched by Businesses to End Slavery & Trafficking in 2015. The hotel has also been active in local toy and school supply drives, participated in city tree plantings, and engaged employees in sustainability initiatives. In addition to the recognition from AH&LA and WLA, the hotel received the 2015 Responsible Business Award from the Carlson Rezidor Hotel Group, Americas. Virtual Reality will Play a Prominent Role in Hospitality’s Future By Lex Nepomuceno For many in the technology world, 2016 will be regarded as the year of virtual reality, or simply VR. Millions of consumers have already adopted VR in one form or another. Major players like Microsoft, Samsung, Facebook and Sony have rolled out initial versions of their respective VR/360 viewing products, such as Oculus Rift, Gear VR and the HoloLens. Hospitality for the most part has yet to embrace this new method of communicating with guests, potential customers and employees. There are some early adopters in the industry that have started experimenting with VR to attract travelers and show off their businesses with an immersive 360-degree view. However, the true “killer app” for VR in hospitality is transporting “experiences.” It is always a priority for hospitality establishments to make sure their customers come away with a positive experience that they can both cherish and share. VR allows businesses to take these experiences to the next level. Traditional photos and videos are two-dimensional, while virtual reality transports the user back to that fine dinner on a deck overlooking the water. You look to the left and you see that nice couple you had a conversation with. You look all around you, and you see the

entire place, its staff, guests and ambiance. You would be able to re-live that moment in time. It doesn’t take a genius to see the value of this. Keep in mind that the aforementioned scenario isn’t science fiction. It is here now, and it is both affordable and usable. In fact, in May Facebook announced that Samsung’s Gear VR had one million monthly users on its platform alone. Interestingly, these Gear VR users spent an average of 25 minutes per day on the device. VR experiences in a restaurant or hotel can take many other forms. The most obvious is capturing guest experiences and using those as real-time testimonials to share with potential patrons. Experiences are also applicable to employee training, operations and quality control. Whenever it is advantageous to immerse a guest, employee or potential investor in a particular experience, it makes sense to utilize virtual reality. Imagine this… You want to make sure your restaurant is ready for a building or health inspection, but you are out of town and won’t be able to do a walk-through to identify potential problems and violations. This dilemma can be solved by having an onsite employee do a video walk-through of the entire restaurant and upload it to YouTube as a private video. You can then put on your Gear VR headset and experience the video walk-through and look all around you as if you were there. You can pause at any time to concentrate on particular spots or re-watch the video until you have identified everything that requires attention. Everything can be done in less than an hour, and you didn’t have to drop everything, incur travel costs or waste time in traffic. And the cost for your 360 gear can be less than $500. This is just one example of many practical applications of VR integration into core business activities. The best part is that we are just scratching the surface of how this exciting new technology can help improve our daily business and personal lives. Unions Target Hotels, WLA Fights Back By Stephanie Davenport

Signature gathering is underway in Seattle for a local ballot measure that seeks to institute a wide range of onerous workplace provisions on hotel employers. The Washington Lodging Association and your Government Affairs team are working closely with Seattle hotels to address this challenge. Initiative 124 is being shepherded by UNITE HERE Local 8 and would: Limit housekeeping employees to no more than 5,000 square feet of floor space in an eight-hour day if they are assigned 10 or more “strenuous room cleanings.” Mandate that housekeeping employees required to clean more than the designated square footage receive time-and-a-half for the entirety of their shift. Require a hotel to ban guests for a three-year period if an employee makes a complaint against them, even if the employee does not report the incident to law enforcement. Force hotels to follow a complicated mathematical equation to provide only certain employees. (For example, those who are single and making less than $47,520 a year.) Require hotel employers, after the purchase of a hotel, to use a preferential hiring list for at least six months after the ownership transfer date. WLA quickly filed a ballot title challenge to the measure. The original title would have misled voters into believing I-124 only addresses employee health and safety when, in fact, it also includes labor and employment mandates. WLA successfully had the court add “labor standards” to the concise ballot title. Other changes to the ballot title description include: Changing language on health care from “paying for access” to “improving access” to health care. Specifying that new requirements could be waived for unions. (With the exception of the assault protections, the measure’s mandates can be waived in collective bargaining agreements, making most of the measure open to union negotiation.) Noting that lists of “accused guests” would be required to be maintained, a requirement left out of the original title. Changing “large hotels” to “certain-sized hotels.”

signatures to qualify for the November ballot. “Hotels care deeply about ensuring a safe, healthy, and supportive work environment for all their employees and already work collaboratively to address these issues,” said Jenne Neptune, Seattle Hotel Association president and general manager of Alexis Hotel. “We take these matters very seriously and have always been open to ways to better serve our employees. However, it’s critical not to overlook the bulk of this initiative and its true focus, which is workplace rules and health care premiums, all of which could be waived by a union.” WLA has a long track record of addressing hotel employee safety issues. In addition to offering employee safety training, it has been an active partner in the fight against sex trafficking. In 2013, the association helped develop innovative training to prevent sex trafficking at lodging properties, and it is a member of the Washington State Task Force against the Trafficking of Persons. WLA has also called for employee safety standards in the sharing economy. In 2015, WLA joined the American Hotel & Lodging Association in calling for all lodging establishments, including short-term rentals through platforms such as Airbnb, to be held to the same regulatory, licensing, insurance and taxation requirements to protect the health, safety and well-being of employees and guests. If UNITE HERE is able to gather the signatures it needs by August, the Seattle City Council will have several options. Councilmembers can choose to pass Initiative 124 as an ordinance, reject it, fail to act upon it, or pass a similar measure. If the council passes the initiative as an ordinance, it will become law. If it rejects it, fails to act or passes a similar measure, the initiative as written will be on the November ballot. The GA team will continue to be actively engaged in this important issue and will keep members informed as the process moves forward. Jillian Henze, Local Communications Manager

Jillian Henze is responsible for developing and implementing local communications to advance the hospitality industry’s legislative, advocacy goals and objectives. She serves as a liaison between the communications and government affairs departments and works with both to develop and implement communications strategies. Jillian joined the team in April 2016, and she’ll keep members informed of all local government affairs issues that could affect the industry and provide helpful resources. Prior to the WRA, she was the communications manager at the Hands On Children’s Museum, led a PR department at a boutique ad agency and was an investigative reporter and newspaper editor. Jillian has a bachelor’s degree in mass communication from Linfield College.

Kaare Ness, Member Engagement and Grassroots Manager

Kaare Ness is tasked with developing and implementing a strategic grassroots infrastructure that supports the WRA and WLA state and local political objectives. Prior to joining the team, Kaare worked for the Washington Realtors® Government Affairs team, the Washington State House of Representatives and political think tanks. He has also served in a variety of capacities for local and statewide political campaigns and ballot initiatives in Oregon and Washington. Marianne joined the WRA communications team in 2015 to help facilitate the deepening partnership between WLA and the WRA, and now serves as communications manager and editor-in-chief of content for the associations. She served as WLA’s director

of marketing and communications for two years, and prior to joining WLA’s staff, she was the project manager for the Washington State Visitors’ Guide and publisher/editor of Seattle Woman Magazine. She has a master’s degree in history from Harvard University and a bachelor’s degree in political science from the University of California, Berkeley. Trouble Ahead? Look for These Five Red Flags in Your Restaurant Financial Statements By Julie Eisenhauer, CPA

When the red warning light on the dashboard of your car goes on, it’s a very clear red flag that something is wrong and requires an urgent investigation and response. Unfortunately, financial statements and data that restaurant owners and operators review on a daily, weekly and monthly basis do not provide obvious flashing red lights or warning signals when the business may be headed for trouble. With financial statements, you need to keep a closer eye on how everything is working. Financial statements tell a story and, when evaluated, can provide owners, operators and lenders with valuable information to assess the success and well-being of the business. Performing an analysis on ratios and comparing the results to an industry average, a budgeted goal or a ratio from a past period may reveal warning signs that the business could be headed for trouble. Here are five key ratios restaurant and foodservice owners and operators should consider closely monitoring for red flags. For comparison purposes, the 2015 median value limited-service and full-service restaurant benchmark, reported by The Retail Owners Institute based on data from Risk Management Association Annual Statement Studies, is included. The current ratio is the ratio of current assets to current liabilities. Current assets are those assets that can be converted to cash within one year (i.e., cash, inventory and prepaid expenses). Current liabilities are obligations that are due within one year, such as accounts payable, accrued liabilities and short-term debt. This ratio measures whether

the business has enough resources to pay its debts over the next 12 months. The higher the ratio, the larger the margin of safety to cover short-term obligations. For example, if your business has current assets of $300,000 and current liabilities of $200,000, the current ratio equals 1.50. For every $1 of liabilities, the restaurant has $1.50 of current assets. There is a cushion of 50 cents for every dollar of current debt. A ratio of 1.0 is reasonable; however, restaurants typically have a lower current ratio because they maintain relatively small inventory levels and have quick cash turnover. A ratio under 0.8 is a red flag and warrants taking action as the business may have difficulties meeting current obligations. The inventory turnover is a common ratio used in the restaurant industry and is the cost of food or beverage sold divided by average food or beverage inventory. The turnover should be calculated separately for food and for beverages because food may have a shorter shelf life than beverages. Although inventory may not be a significant portion of the restaurant business’s total assets, it is highly susceptible to theft and should be managed in order to minimize the cost of food and beverage. A low turnover may suggest that food is overstocked and could result in excessive spoilage cost. A high inventory turnover is desired as it means the restaurant is able to operate with a small investment in inventory. However, a high inventory turnover should be monitored as it may result in possible out-of- stock problems and the inability to provide desired food items to guests.

The debt-to-worth ratio is calculated by taking total debt and dividing it by total owner’s equity. A high ratio shows that a company has been aggressive in financing its growth with debt. The beauty of this ratio is in the eye of the beholder. An owner may wish to maximize their return on investment by maximizing debt. A lender, however, would prefer a lower ratio because their credit risk is reduced if an owner’s equity increases relative to its debt. A red flag would exist if debt continued to increase and earnings were not sufficient to cover the cost of borrowed funds.

The operating expense ratio is calculated by dividing total operating expenses by sales. It measures how efficient a business is. A red flag is an operating expense ratio that increases over time because it represents a decline in operating efficiency from period to period. Significant deviations identified when comparing operating ratios at the account level to budget and/or prior periods should be investigated to determine the cause.

The gross margin percentage is calculated by taking total sales less direct costs of sales and dividing the result by total sales. It represents the percentage of total sales that the business has available to cover other costs and obligations such as general and administrative costs, occupancy costs and interest expense. A percentage increase in gross margin results in an additional percentage growth to the bottom line. Therefore, consistent monitoring and analysis of this ratio for changes from budget, prior periods or industry benchmarks can identify areas where a restaurant can improve and maximize its profit. A decline in this ratio may identify a red flag in direct costs or sales. Increasing food

In Summary Using these benchmarks, are your financial statements telling you a success story or are they sending up red flags that there may be a problem? It is important to note that, on a stand-alone basis, your ratios do not tell the complete story. They are useful, however, in identifying trouble spots when compared to an industry benchmark, a ratio from a past period or budget. Timely and consistent evaluation of these ratios will allow you to take corrective action to improve the financial strength of the business. Bridging Gaps to Eliminate Hunger and Waste By Andy Cook

Feed Spokane partners with local restaurants and hotels to get food to those in need.

Tami Kennedy knows something about giving back. As general manager of Bargreen Ellingson in Spokane, she oversees sales and operations at the wellknown foodservice supply and restaurant design company, and she is a longtime ProStart management mentor. She has also been an involved member of the WRA Spokane Chapter for many years, and is a co-founder and the current secretary of Feed Spokane, a nonprofit 501(c)3 that brings together meal providers and community partners in the greater Spokane area dedicated to serving the region’s hungry families. Tami and a few other Spokane hospitality industry leaders formed Feed Spokane nine years ago to rescue highquality, nutritious food from the waste stream at foodservice operations and grocery stores to help feed those in need. Thanks to their efforts, Feed Spokane now helps provide 65,000 free meals each month. It is reducing both waste and hunger in the community. Donating food to charitable organizations used to be a significant challenge for restaurants and hotels, and it came with some risk. “The barriers between foodservice operations and food banks began to crumble in 1997 with the Bill Emerson Good Samaritan Food Donation Act, relieving the donor from the liabilities formerly associated with such practices,” she reported. “The only liabilities that remain are reserved for those who donate food they know to be hazardous, which is gross negligence. “The missing link was in the logistics. How do we get the food from the operators to where it needs to be? That was the gulf that Feed Spokane needed to bridge.” It bridges this gulf by providing storage equipment and a food pick-up service that gets nutritious food to local nonprofit

organizations that in turn provide free meals to those in need. “The enthusiastic participation of Spokane’s hospitality industry is key,” she pointed out. “We couldn’t do without the network and support from businesses such as the Davenport Hotels, Northern Quest Resort & Casinos, Papa Murphy’s and Starbucks.” The public-facing facet of Feed Spokane is an annual fundraising event known as Dine Out to Feed Spokane. During March, which also happens to be National Nutrition Month, the community is encouraged to eat at participating restaurants and to purchase services at participating vendors. These establishments then donate a portion of their proceeds to fund Feed Spokane. The event also helps raise public awareness. When asked about some of the discoveries they’ve made in developing this community resource, Tami said that they had expected some resistance from the foodservice workers who would be tasked with the extra steps necessary to quantifying and packaging the donations. “But that wasn’t the case at all,” she said. “Arby’s, for instance, was one of the first large-scale contributors, and what we discovered was that the employees were just as enthusiastic as we were. A lot of those employees thanked us, saying that it made them feel good about their jobs and their employers. Hospitality workers really care about the social good, and we see that throughout the industry.” Feed Spokane also helped businesses, particularly smaller, independent operations, in an unexpected way. “We were able to show them not only how much avoidable food waste they created. It presented to the operators actionable data to alter their ordering and prepping procedures,” she said. “This not only helped them create less waste, it improved their bottom line.”

As they developed this resource, Tami and the Feed Spokane team worked hand-in-hand with their local health department every step of the way. A food safety program manager at Spokane Regional Health District serves on their board of directors, helping to ensure that their processes and procedures follow the highest food safety standards. One tactic they employ is freezing the food, not only stopping the clock, but also allowing for wider distribution. To maximize the integrity of the food and ensure safe distribution, the staff at the receiving end of the donations is trained in ServSafe.

When asked about tax deductions, she informed us that, while there are many different formulas that can be applied, the simplest and by extent, the most popular has been to write off $1.50 per pound. Larger donors were able to carry over donations into following years. That carry-over benefit was made possible for all businesses with recent revisions to the tax code with regard to food donations. (See below for more information.) “It’s a win-win-win,” Tami said. Besides the social good, the business gets the write off, more of our hungry neighbors have access to nutrition, and less food goes into landfills.”

EVERYONE WINS WITH FOOD DONATIONS How much food does your establishment throw away? Although you may have trouble quantifying that number, in 2010, the U.S. Department of Agriculture estimated that about one-third of the nation’s food supply, or 133 billion pounds, ends up uneaten each year. Waste at the retail level makes up about 43 billion pounds of that loss, and most of this goes to landfills or incinerators. While many foodservice operators have modified their practices to include composting to turn their unconsumed food into a nutrient-rich soil amendment, donating prepared food to feed those in need is another important way to reduce waste and serve the greater good. Thanks to the 2015 PATH Act’s revision of how donations of food are treated in the tax code, foodservice operators have more certainty and clarity about the tax benefits of food donations. The change in the law makes the enhanced tax deduction permanent and allows all companies to claim the enhanced deduction as long as they donate their food to 501(c)(3) charitable organizations. It also increases the cap for food donation deductions, allows all eligible businesses to carry over a deduction for up to five years, and allows donors that use cash basis accounting to estimate their cost to produce the food as part of their enhanced tax deduction. WRA Education Foundation Programs Train and Educate the Industry The Washington Restaurant Association Education Foundation (WRAEF) is a 501(c)3 charitable organization dedicated to helping the hospitality industry grow through training and education for current and future employees. It offers a rich array of programs that support the success and safety of Washington’s hospitality employees and businesses. Many of the programs are offered online, and onsite classes are available for ten or more employees. Hospitality Workplace Safety Program In 2014, the WRA Education Foundation launched one of the most comprehensive safety initiatives ever aimed at the hospitality industry in Washington state—the Hospitality Workplace Safety Program. This program was developed by the Education Foundation as a tool for owners, managers and supervisors in the hospitality industry who are responsible for training their employees. The purpose of the program is to help improve employee safety in the workplace with the goal of reducing injuries and decreasing workers’ compensation premiums. The guide is available in English, Spanish and Korean. It is also available in multiple platforms including print and online. ServSafe® Manager This advanced food safety certification is a National Restaurant Association training program for foodservice and hospitality personnel. ServSafe allows foodservice establishments to offer the highest standard of advanced food safety training to their staffs. This manager-level certification not only keeps customers safe with advanced safety knowledge, it also helps food service establishments comply with the Demonstration of Knowledge requirement within the Washington State Food Code. Training is available online or in a classroom setting. ServSafe® Alcohol (mandatory alcohol server training) The WRAEF partnered with the NRA to create a Washington-specific ServSafe Alcohol program that is approved by the Washington State Liquor and Cannabis Board and is designed for restaurants and hospitality businesses. This award-winning program can be administered in a classroom setting at a member location by either a WRAEF instructor or an in-house trainer (approval required), or taken online at www.SSAwashington.com. It is offered as a standalone course or as an add-on to the First Aid/CPR/AED training. Incipient Fire Fighting Training The skills required to fight incipient fires, such as using portable fire extinguishers, will be covered in hands-on training by instructors who serve as certified fire personnel. Employees will learn the different characteristics of fire behavior and be trained on appropriate response skills to fight and control fires that are in the beginning or incipient stage. Employees are also given assessment tools to determine whether or not it is safe to stay and fight or if it is safer to evacuate. Hazardous Communications Training This course is designed to protect employees from hazardous chemicals used or stored in the work setting. physical or health hazard is introduced into the work area. Participants are able to train on industry- and workplacespecific hazard labels, as well as safety data sheets (MSDS/ SDS). Q:

My business is busier than ever, yet my cash balance isn’t growing as I would expect it to. I’m concerned I’m out of touch with what could be happening around controls. I trust everyone, but need to dig a little deeper. Where do I start?

A:

The hospitality business benefited from lower employee turnover during the Great Recession. Over the last two years, the labor pool has tightened, and turnover is getting closer to traditional levels of plus or minus 100 percent. With higher turnover, internal controls need to be tightening as the risk of fraud increases. This is an enormous topic, and I’ll touch on a slice of it – taking a fresh look at procedures and controls with your point-of-sale or POS system: Evaluate voids. Look for patterns with voids both in number and amount. How many are there per day per person, and are voids increasing or decreasing over time? Most voids occur when product is rung incorrectly into the POS. The longer an employee has been employed, the higher the accuracy level, so you should expect to see this number trending toward zero. Ensure that every product has to be rung in order for it to be produced by the kitchen or the bar. Make sure items cannot be voided after they have been produced, and look for time stamps of when voids occur. Additionally, manager voids should be close to zero since most systems allow hourly employees to void. Evaluate comps and promos. Limit comps and promos to authorized personnel – typically managers. Since hourly employees outnumber managers, lowering the number of people who can comp or promo reduces the opportunity and temptation for theft. Comps and promos should be completed during the guest visit, not at the end of the shift. For each comp or promo, a manager should visit the table and speak with guests about their experience, solve any issues, thank them for coming in and make sure they have a return visit. Check the type of comps and promos the day after they occur, examining frequency and trends and spot checking tickets. Look at when they occurred. Did they happen

during the guest visit or at a later time? Since managers have the ability to comp or prom, the risk of theft increases when a shift is complete and balancing the books for the day occurs. Look for small comps and promos that may help in balancing over/short for the day. Evaluate transfers. Limit transfers to managers only. There are certain items that do not require being rung through the POS for production such as soup, iced tea and coffee. Unless the POS is set to prevent transfers of items at the hourly employee level, these items can be transferred on and off guest checks during the shift by creating another table and transferring items to and from it. For example, Table One orders coffee. The employee serves the coffee and eventually the guest check and collects from the guest. Prior to closing the check, the employee transfers the coffee to another table and changes the tip amount in the POS. This single order of coffee is transferred between tables throughout the day and is either voided or the last guest to order coffee ends up with the charge and the transfers cease. This can also be done in the bar by the bartender with any drink made in the bar since he/she produces the drink. Examine transfers closely on a daily basis and occasionally ask about the process. The areas open to theft are limitless and those committing fraud are resourceful. Evaluate trends for each shift for the number of checks, items and dollar amounts by person that have comps, promos, voids and transfers. Be vigilant. By tightening up controls around the POS, fraud can be reduced and profitability increased.
