Technology comes in many forms, especially in relation to restaurants. It could be the latest oven hood, genetically re-engineered produce or just a simple website.

However, when it comes to getting new customers and driving repeat sales, the list of available technologies becomes very specific. Here are five current tools restaurants really should be taking advantage of: 1) Get involved in ratings sites, such as Yelp!, Urbanspoon and TripAdvisor. Many restaurant operators already know this, but turning a blind eye to online reviews doesn’t make negative customer opinions go away. The criticisms maybe unfounded and ridiculous, but potential customers reading the reviews do not know that.

Business owners need to take an active role in the major sites that have dynamic review communities. Oftentimes, these sites are the first and only place potential customers go to research their dining choices.

2) Texting doesn’t have to be spam. Make your customers WANT to receive text messages from your establishment. DVD rental giant Redbox uses texts perfectly.

Every month Redbox texts out a code for a free DVD that is good for just one day.

Although this may not stimulate sales, it does keep the Redbox name front of mind with customers, thus remaining relevant. The key is to provide enough value so the customer will want to keep receiving the texts even if they don’t avail of the offer. A restaurant could perhaps offer one free appetizer that is only good for that day, etc.

3) Make your website more than a digital brochure with menu. Restaurant owners should have fun with their websites and use them as an opportunity to build a rapport with existing and potential customers. Adding a blog to an existing website could go a long way in building long-term trust with diners. Perhaps, peppering an occasional “owner’s discount” within blog posts would encourage users to come back to the site on a regular basis.

4) Keep up with social media. Face it—platforms such as Facebook and Twitter are not going away anytime soon. So if a restaurant hasn’t fully engaged in social media, it needs to get involved right away. Facebook has three times the population of the entire United States. Its population encompasses tech savvy grandchildren to “old school” grandparents, and everybody in between. However, it isn’t enough just to have a Facebook or Twitter profile; it is vital that businesses actually use these tools to keep their customers interested and enthusiastic.

5) Up sell through tablets and table kiosks. The proliferation of tablet computers has enabled enterprising operators to set up interactive screens at tables. Major chains such as Chili’s and Applebee’s already have started experimenting with mini kiosks that allow diners to place orders. A recent Wall Street Journal story reported that dessert orders rise 30 percent after restaurants installed a touch screen system at their tables. Although these kiosk systems are far from perfect, they do provide restaurateurs a peek into ways to improve table service in the future.

Primary Source of Information | News Briefs WRA files joint lawsuit against Liquor Control Board’s 1183 rulemaking The I-1183 coalition has filed a lawsuit in Thurston County Superior Court, challenging the rules adopted by the Washington State Liquor Control Board in the implementation I-1183, the liquor privatization initiative approved last November by 59 percent of Washington voters. The I-1183 coalition includes the Washington Restaurant Association (WRA), the Northwest Grocery Association (NWGA) and Costco Wholesale Corp. The lawsuit, filed late Thursday, asserts that the LCB is circumventing the language of the Initiative by arbitrarily restricting the wholesale distribution and pricing of wine and spirits. Updated I-9 form in the works The restaurant industry has weighed in on a proposed update of the I-9 form, the form that all employers and employees must fill out to certify an employee’s identity and eligibility to work in the United States. The Department of Homeland Security has proposed changes aimed at making the I-9 clearer and more user-friendly for employers and employees. The National Restaurant Association commended the goal but noted that some of the DHS’s suggested changes could add confusion — and, if left unchanged, could put employers in jeopardy of immigration-related paperwork fines for inadvertent violations. Summertime means teen workers… are you compliant?

The numbers are undeniable, but the meaning of them? That’s an unknown story Based on the best monthly indicators available to us—industry employment figures and the Washington Restaurant Industry Tracking Survey—the restaurant industry is seeing steady improvement so far in 2012.

Restaurant employment figures released by the state Employment Securities Department grew for eight straight months since last August, and while they dipped slightly in April, we added another 1,000 jobs to the Washington economy in May and are back over the 200,000 employment mark. (The all-time high mark for the industry was 206,000 just before the recession began, and at the depth of the recession we dropped to 189,000).

These figures seem to be corroborated by the Washington Restaurant Industry Tracking Survey (WRITS), which polls Washington restaurants each month. For the first time since the survey began in 2008, more than 50 percent of surveyed operators reported year-over-year same-store sales were up for three consecutive months (March, April and May). While we have seen flashes of hope, this is the most consistency we have seen since the recession began.

At the WRA, a debate has emerged about what this means for the state of the industry. As we try to help our members (you) succeed, we want to be able to give you the best answer to what is going on out there, so you can make the best decision for your business.

Additionally, as the voice of the industry to legislators and media, to be a trusted resource, we are expected to have a good handle on the question asked of us at least 10 times a day: “So … how are the restaurants doing?”

Yes, employment and sales are up. But sales are partially driven by higher costs, and both the WRITS and the Bureau of Labor Statistics indicate that food prices are

still rising. In turn, this forces higher menu prices or smaller margins, which may explain why sales figures were stronger than customer counts. Customer counts might be the better marker than sales, and only 39 percent of surveyed operators reported year-over-year improvement in May, despite the fact that the year they were comparing against was 2011.

Anecdotes are tricky as well, because even in the best of the good times, the restaurant business is brutal business; and 20 percent of restaurant units close or sell. So the onset of improving times certainly does not mean that times are improving for you.

The forecasting numbers in the WRITS inspire little celebration… or worry. Neither the “Outlook for Business Conditions For the Next Six Months,” nor the ” Planned Capital Expenditures For the Next Six Months” have yet shown 50 percent or more positive so far in 2012. Yet both numbers reflect stabilization in 2012, when compared to recession figures that would bounce around month to month.

And lastly, we are an industry that, as we all know, is greatly influenced by the overall economy, and there is a lot of uncertainty out there right now between the status of health care, the election, the stability of the Euro, gas prices and the relative slowdown in China. Each of these things impact Washington jobs, which of course impact the spendable dollar in your restaurant.

So yeah, things are improving at this point – and as one who has been craving good economic data for a long time, I will raise a glass of wine with family and friends to recognize the moment. But as your primary source of information and as the voice of the state’s largest employer, I think cautious optimism is probably the more responsible tone. Let’s see if we can put together a couple of strong quarters in a row before we finish the bottle in celebration of tough times being behind us.

Government Affairs Washington Restaurant Association members enjoy the benefits of being represented by one of the top political lobbying organizations in the state.

The WRA government affairs team’s mission is to help its more than 5,000 members succeed through proactive, responsible political representation.

The GA team works daily to mitigate harmful legislation and regulatory changes, while promoting and advocating beneficial new laws and amendments.

Every year, it becomes more important to our industry for legislators to understand the challenges restaurant operators face in this volatile business climate. The WRA is committed to representing the restaurant industry before the Washington State Legislature, and the GA team is committed to promoting restaurants’ interests year-round.

Grassroots Network The WRA has one of the most sophisticated and effective grassroots networks in the state, and it’s all because of our members’ participation.

Our Grassroots Network is made up of members representing all aspects of the industry. Grassroots volunteers vary in time commitment and duties, ranging from a grassroots ambassador to a grassroots phone contact. While the WRA lobby team works closely with state legislators and agencies throughout the year, it is crucial to remind our elected officials who the WRA represents: real people and real business operators. Putting a constituent in front of an elected official and allowing a dialogue to unfold is one of the most effective forms of communication the WRA can facilitate.

Action Alerts Part of what makes the WRA’s Grassroots Network so effective is our use of action alerts during the legislative

session. The WRA relies on a sophisticated grassroots tree, separated by business type and legislative district, to place telephone calls to legislators when a bill is reaching action in the Legislature. This is one of the best ways to show the strength of our industry among the Legislature.

The WRA Political Action Committee The WRA Political Action Committee (PAC) is one of the leading political action committees in Washington state today. As representatives of the state’s hospitality industry, the WRA knows how important it is that restaurant operators’ voices be heard in Olympia.

The WRA PAC’s purpose is to: Educate candidates on hospitality industry issues while they are on the campaign trail Support candidates who take the time to understand and work with our industry Utilize your numbers and resources to affect change WRA members’ PAC contributions shaped the political outcome for restaurants in Washington by educating lawmakers.

Government Affairs Team Bruce Beckett Government Affairs Director Bruce Beckett joined the WRA in 2009, bringing with him more than 27 years of public affairs experience, including 17 years leading Weyerhaeuser Company’s Western Region and Washington State public affairs teams. Prior to joining the WRA, Bruce served as the director

of public affairs for the Cascade Land Conservancy’s $20 million Cascade Agenda campaign. He has served on the boards of numerous business organizations, including the Association of Washington Business, as a Deputy to the Washington Roundtable, TVW, the Washington Forest Protection Association, Northwest River Partners and the Washington Research Council. Bruce is accountable for overall leadership of the WRA government affairs team, provides strategic direction to the lobby team, and ensures WRA members are fully informed and engaged in the development of WRA positions and tactics.

Josh McDonald State and Local Government Affairs Josh McDonald joined the WRA government affairs team in 2007.

Before joining the WRA, Josh spent the several years previous splitting his time between contract lobbying work during legislative sessions and working on congressional, state and local campaigns. In addition to his work at the state level on such issues as nutrition/obesity, food safety, tourism and the environment, Josh focuses much of his attention on building and maintaining a strong industry presence at the city and county level, as well as cultivating an ongoing dialogue with local health departments.

Julia Clark Government Affairs Manager Julia Clark joined the Washington Restaurant Association’s Government Affairs Department as government affairs assistant 2007 and significantly grew and strengthened the WRA’s grassroots network which was directly responsible for our most recent defensive successes—protecting the pop syrup tax credit and our Retrospective Rating program.

Additionally, Julia was responsible for establishing the WRA’s Ambassador training program – giving restaurateurs tools to communicate with their elected representatives.

Julia worked to achieve a tax exemption for free employee meals, as well as granting restaurants the privilege of selling growlers to-go. Julia works closely with state regulatory agencies, and focuses on liquor-related issues. She has been particularly engaged with the I-1183 liquor privatization transition.

Contract lobbyists Denny Eliason Denny Eliason is regarded by much of Washington’s legislative community as one the most accomplished lobbyists on the hill in Olympia. Among other significant wins, Denny’s hard work yielded the B&O tax credit on pop syrup taxes that saves restaurants across the state an average of $3,000 annually. Denny is the founder of Alliances Northwest, a business-oriented government relations firm emphasizing representation before the Washington State Legislature and local governments in Washington state. Denny has experience working on a number of issues, including banking, energy, employment, environment, finance, growth management, health care, insurance, pharmaceuticals, retail, securities, taxes and transportation. Some of Alliances Northwest’s other clients include Puget Sound Energy, Nintendo and Amazon.com.

Kim Clauson-Hoff Kim Clauson-Hoff is a partner with Denny Eliason at Alliances Northwest. Kim’s primary focus is workplace and labor issues. She is also a strong force on the front lines for the Washington Restaurant Association on some of the industry’s toughest issues. She routinely delivers results on issues that affect restaurateurs’ bottom lines. Kim has landed the state’s restaurateurs their biggest proactive wins in the past five years, which include tackling issues such as workers’ comp, gift certificates and pushing the obesity lawsuit prevention bill past the governor’s desk.

Kim successfully aided in the passage of an exemption for free employee meals. Kim has defended WRA members against a series of bills that would have expanded eligibility for unemployment insurance benefits to (1) those who voluntarily quit their jobs and (2) those who are seeking only part time work. If enacted, these bills would have increased the overall costs of benefits for UI, thereby leading to higher UI taxes for employers.

Training & Education The WRA Education Foundation (WRAEF) strives to be the leading solutions resource for training, education and career development for the Washington restaurant industry professionals of today and tomorrow. The WRAEF offers a range of certification classes, including ServSafe Alcohol, ServSafe Manager and Allergy Safe at locations across the

ServSafe Alcohol Training (mandatory alcohol server training) The WRAEF partnered with the NRA to create a Washington specific ServSafe Alcohol program that is approved by the Washington State Liquor Control Board (WSLCB), and is designed for restaurants and hospitality businesses. This award winning program can be administered in a classroom setting at your location by either a WRAEF instructor on an in-house trainer (approval required), or online at www.SSAwashington. com. All students who successfully complete the training will receive a Class 12 or Class 13 permit and a nationally recognized ServSafe Alcohol certificate. Both certifications are good for five years.

ProStart school-to-career training Our Education Foundation plays an integral role in supporting the public education system. We currently have our nationally accredited culinary and hospitality management training in more than 50 public high schools throughout Washington state.

Spot Check Food Allergy/Sensitivity Education More than 45 million Americans suffer from a food allergy or sensitivity. The WRAEF partnered with Spot Check to help the food service industry make sure their staff is educated on how to serve those guests with special food allergy needs.

This first-of-its-kind curriculum helps employees internalize the information needed to implement the protocols, policies and procedures for safely serving customers with special food allergy-related needs. The WRAEF class is designed for management-level employees who already hold an advanced food safety certification, such as ServSafe Manager, who can then take the knowledge back to their organization and train others in-house. (Attendees wanting to train the public must go through a separate approval process).

Red Book Our management tools The Manager’s Red Book, The Heart of the House Yellow Book and The Bar Green Book provide tools to the restaurant industry based upon the nationally renowned Manager’s Red Book. These solutions improve the safety, operational efficiency and profitability of WRA member’s restaurants. These management tools also provide

ProStart prepares students for careers in the foodservice industry through academic and workplace experiences.

Students receive classroom training and enter into paid internships with industry professionals.

Additionally industry mentors build relationships with students and are possible future employers. Since 2000, the program has trained more than 7,000 high school students in Washington.

Each year participating ProStart students showcase their talents in cooking, knife skills and restaurant management proficiency in front of chef judges at the Boyd Coffee ProStart Invitational.

High schools from across the state compete for more than $400,000 in culinary scholarships.

WRA events deliver valuable resources, industry support and peer interaction WRA-owned events, such the 2013 Northwest Foodservice Show, connect restaurateurs to exhibitors, promote industry progress and educate attendees. Last year, more than 5,000 people attended the show, and that number is expected to climb in 2013. Attendees in 2012 gained insight into several new product lines, new regulations that may impact their bottom line and met with several purveyors of spirits that are now able to deliver directly to their restaurants.

In 2013, the Northwest Foodservice Show, produced by the WRA in conjunction with the Oregon Restaurant and Lodging Association (ORLA), takes place in Portland, Ore., April 21 and 22 at the Oregon Convention Center.

It continues to be the largest, most comprehensive restaurant and foodservice industry trade event in the Pacific Northwest.

Next year’s show will feature “The Oasis” – a designated 21+ only section of the show floor, featuring a wide array of alcoholic beverage vendors and a chef demonstration stage showcasing some of the region’s hottest culinary talents.

Attendees also are able to participate in several free educational seminars (topics to be determined) on topics such as marketing, technology, efficiency, what’s trending and more—all led by industry experts.

They will also have a new and improved product showcase, including several products never seen before, and prototypes that highlight innovation and ingenuity. Vendors will run special deals on products that you will not find outside of the event. Leverage the most underutilized resources in your restaurant

Q: I often feel as though I’m the only person in my business who understands it. Where can I turn for advice and help?

A:

It’s lonely at the top. Often, the owner or CEO of a business has few people, if anyone, to speak with about his/her business. Family is wonderful, but dragging your business into your family is a guaranteed way to invite unsolicited, often frustrating advice. Your family cares about you and unless they’re working in the same business, they’ll have a difficult time avoiding the anxiety and perplexity you’re experiencing when you simply wanted to vent or get some ideas.

So, where should you turn? There are three underutilized resources at your ready disposal:

Your vendors are ready to help. Understanding their businesses will yield unexpected benefits. They have a vested interest in your success and want you to succeed more than you expect, the more you succeed, the more they sell. Work closely with your vendors in the following ways: 1. Ask how your vendor how they can be successful with your account. For foodservice vendors, the best clients are those that have complete and accurate ordering, large drop sizes, convenient delivery options and trained staff to receive product. This leads to more participation from the vendor, recommendations to others in the community and most of all, better pricing.

2. Be clear on the pricing on all your different products.

Sit down quarterly to review pricing, and discuss what they see upcoming in the market and how you can be proactive around your core products to limit your expenses and maximize your profitability.

3. Plan six months out. Your vendors know what products will be abundant or limited well in advance. The information available from your broad-line food purveyor is well beyond your imagination. Only the best companies take advantage of this type of planning and as a result, when others are struggling, they’re thriving.

4. Review vendor purchases and product usage annually.

Meet and review pricing and product volume purchases.

Business owners are usually shocked to know how much of each product they use and price variances during the year. Working with your annual volume will allow you to work with your vendor for better sourcing and in some cases, direct purchasing from the manufacturer. You can also gather insight from your vendors about how other restaurants are enjoying success.

Your customers are ready to provide insight. Customers pay the bills. They have ideas as to what they want to see on the menu (food and beverage), the service package, and the atmosphere.

Pull together a focus group annually, and get their input on the quality of your business. Make sure you provide a guide to be completed prior to the meeting, and keep the meeting to two hours or less. Ask the following: 1. How likely they are to refer your business to a friend or colleague and why 2. The value your restaurant provides for: a. Product quality b. Service quality 3. Quality of atmosphere including facility cleanliness and design 4. New ideas that excite them to come back more often and invite their friends 5. Where they dine when not at your restaurant and why 6. What makes your restaurant and other restaurants special Your customers can provide keen insights and are more than willing to participate. Reward them with a gift card substantial enough to bring their friends and/or family in for a special meal.
