The new center will be replacing the Orlando Health Express Care Urgent Care Clinic on Maguire and Old Winter Garden roads, which will close July

What is the single biggest challenge facing OCPS? The greatest challenge facing OCPS is (to ensure) all of our students feel loved and feel safe. I believe students need hope, they need a positive attitude, they need to know that people care, and they need to know they can become whatever they desire to be as long as they are willing to work. We need great teachers ... to accomplish these goals. This need is a major concern of mine because we are facing teacher shortages in many of the high-needs areas of math, science, special education and elementary education.

What is the best way for the district to address school safety?

We need to continue to secure the perimeter of our schools. We also need to move toward single points of entry. We need to make sure there are SROs at all schools, and we need to explore putting Class D security guards at the entrances of all schools. We also need to free up our teachers to be able to truly connect with and care about our students.

Teachers are the counselors kids see every day. A teacher showing they care can save a hopeless child’s life.

Our evaluation system must become teacher-friendly to foster this classroom environment.

How should OCPS handle the issue of school overcrowding?

We need to work more closely with the county and local developers to address areas of high growth.

We should not have a middle school opening with 90 portables. We need to invest in the trades to supply construction workers to help build

What is the single biggest challenge facing OCPS? Lack of adequate state funding.

Money doesn’t solve everything but, in this case, every challenge OCPS faces is made worse (because of) inadequate funding — from school safety, to school overcrowding, to recruiting and retaining teachers.

What is the single biggest challenge facing OCPS? Paying our employees and teachers the national average would be a great challenge to overcome.

Teachers are becoming increasingly discouraged because of the current state of education. Many, like myself, are now attempting to make changes from within the system.

Teachers all over this county, state and nation are now running for political office. As a school system, we’re not giving students the opportunities to be who they are — or to become who/what they want to be.

What we are doing is developing another generation of test-takers.

What is the best way for the district to address school safety?

No one single approach is sufficient. In 2012, immediately after the attack on Sandy Hook Elementary School, I offered to fund deputies in all unincorporated elementary schools. I also convened a Youth Mental Health Commission. Today, Orange County funds two mentalhealth programs available to all schools. A law-enforcement officer should be at the entrance of every school. Additional efforts must be undertaken to harden all schools, and to utilize technology and cameras to keep weapons out.

How should OCPS handle the issue of school overcrowding?

We need more state funding to keep pace with growth. As a commissioner, I championed a charter amendment requiring the Orange County Board of County Commissioners to seek a determination from OCPS of whether there will be adequate school capacity, before approving residential land uses. In 2004, as a county commissioner, I voted to place OCPS’s half-cent sales tax on the ballot to help pay for new school construction. I supported that effort as mayor in 2014. The public supported all three of these efforts. We need the state to honor its obligation to provide funding.

What is the best way for the district to address school safety?

As a school district we have put some safety measures in place, but we can do more. This is why I feel it is essential to place a safety committee that can bring to the board the entire district’s concerns. I want a to put a call center in place that can be used for multipurpose situations — safety being one of them. We have installed millions of dollars of surveillance cameras, and we need to make sure we have enough personnel watching all our schools and who is coming onto the property.

How should OCPS handle the issue of school overcrowding?

The same way hospitals handle growth — add permanent wings to schools, not unsafe portables. Each school only needs one principal, just like we have one superintendent.

For example: Existing elementary schools are on 15 acres of land, the maximum student count is 830. I recommend moving that up to 1,250 and adding one assistant principal.

This is much more cost-effective than building a whole new school at the cost of about $20 million.

What is the single biggest challenge facing OCPS? School safety. The School Board has spent $20 million in recent years to fortify its facilities and will be approving an additional $11 million this budget cycle to continue to do more. The School Board is also spending nearly $5 million on 51 new mental-health professionals that will provide more programs and support for our students’ mental-health needs. Also, the OCPS police continues to work with the nine local law-enforcement jurisdictions in Orange County to ensure our campuses are secure.

What is the best way for the district to address school safety?

The district should continue to receive suggestions of safety and security measures from students, parents, teachers and community members and have them vetted by OCPS police. The district should also distribute as much information as quickly as possible to all stakeholders regarding school-safety information, utilizing every means of communication available (social media, OCPS App, email, Connect Orange, print news, TV/radio, town hall meetings) to ensure stakeholders know what is taking place on our school campuses.

How should OCPS handle the issue of school overcrowding?

OCPS is building new relief schools as fast as possible through the funding from the half-cent sales tax and impact fees. … Growth in Orange County has been overwhelming and is projected to stay steady. ... In severe cases, I believe temporary rezoning may be necessary to handle overcrowding until relief schools can be built.

T

orey Eisenman surveys the carcass that was once the upstairs to her brand new, six-bedroom, fivebath, 5,557-square-foot estate in the Emerald Pointe community in Winter Garden. With the hardwood floors and subfloor ripped out, she can see the guts — the beams, the electrical, the plumbing.

She sees imperfections — air ducts that she’s been told were installed incorrectly. She sees oddities in the wiring. And on this day — more than three months after half her home had been left uninhabitable — she still sees the same problem that started this entire ordeal in the first place: To her eye, the beams still aren’t level.

Eisenman and her husband, Bill Gustavson, closed on the $1,094,300 CalAtlantic home Dec. 29, 2017. Nestled in the private Emerald Pointe community in Hickory Hammock, the home boasts picturesque views of Johns Lake and, better yet, access to the water itself.

Eisenman and Gustavson said it was their dream home — the paradise for which they had been searching for their son. Now 15, the boy has endured years of medical problems. He was diagnosed with postural orthostatic tachycardia, a circulatory condition in which most of his blood stays in his lower body when he stands. This increases his heart rate and can lead to dizziness, fainting and lightheadedness. He also battles gastroparesis, a condition that affects muscles in the stomach and prevents proper digestion; pectus excavatum, a condition in which the breastbone is sunken into the chest; and anxiety.

Combined, their son’s afflictions prevent him from any traditional athletic activities. Johns Lake offered an opportunity for personal watercrafts and other recreation.

After closing, the family moved into the new home — excited to begin a new chapter in their lives.

But it all unraveled four months later in April, when an installer came to set up a pool table in the upstairs game room.

A MATTER OF INCHES

Eisenman said the pool-table installer noticed a problem with the floor.

“There was a half-inch differ-

ence within five feet,” Eisenman said.

At that time, Eisenman and Gustavson added it to a list of problems they already discovered in their new home — a hole in a closet door, missing cabinet doors, unsecured window sills, a backsplash that was installed crooked, a missing shower head — more than 22 issues total.

They assumed the floor not being level was an isolated problem.

But when contractors from Lennar Corporation, which had completed a merger with CalAtlantic Group Inc. in February, came to address the issue in April, they ripped out the flooring and subfloor in nearly the entire second story of the home. According to Lennar Customer Care Manager Don Smith, the extensive demolition was necessary because of the adhesive used to install the hardwood floor to the subfloor.

As of press time Tuesday, July 24, it remains in that same condition.

The first delay came shortly after the contractors completed the demolition. To begin putting the home back together, Lennar needed to obtain a work permit, which first required Eisenman and Gustavson to sign a Notice of Commencement. However, that document named CalAtlantic as the contractor rather than Lennar.

Eisenman and Gustavson wanted Lennar’s name on it; they refused to sign.

In a letter to Eisenman and Gustavson dated May 7, Lennar Customer Care Manager Don Smith wrote: “Please keep in mind that your home’s warranty may be voided if you refuse to cooperate with us in any manner, including but not limited to signing the NOC and permitting access to your home. … If we do not receive a signed NOC by Tuesday, May 8, and thereafter granted access and full cooperation by you, we will consider the warranty void, and we will consider this matter closed.”

Eisenman and Gustavson hired an attorney, and by late May, the parties had been able to make some progress. Eisenman signed an NOC with the city of Winter Garden Monday, May 21, with Lennar named as the contractor; however, Lennar didn’t pick it up until Thursday, May 24. And in an email dated May 30, Smith told Gustavson the NOC the document was not usable because it wasn’t the original document.

However, eventually, Lennar did use the NOC; it was filed with the Orange County comptroller June 4. A permit application also was signed June 1, and that same day, Smith wrote in an email to Eisenman that Lennar would place “an order for lumber today and start talking with the vendors ASAP. I will let you know as soon as I can so you can make living arrangements.”

Optimistic, Eisenman and Gustavson drove their son and two dogs to Nashville to stay with a family member while work would be done.

However, Eisenman said Lennar’s attorney sent a letter requesting releases and confidentiality agreements.

“And then the attorneys argued for a month,” she said.

Meanwhile, the family has been split apart — Eisenman and Gustavson have been in temporary housing, and their son is still in Tennessee.

“Now, it has become our worst nightmare. Our family is separated, and at the end of the day, all we want is our home fixed according to plan. We haven’t asked for anything else.”

Eisenman said the stress has become too much to bear.

“For his birthday June 21, my son said, ‘All I want is my bedroom,’” Eisenman said, wiping tears from her eyes. “We can only fight for so long.”

By the beginning of July, the parties had been able to move forward. Lennar drafted a work order, signed July 5, which stated work was to commence July 9. However, in the two weeks since then, Eisenman said contractors have been in the house for about 22 hours total.

The second-floor is still uninhabitable, and their son has been away for nearly two months.

Last week, Lennar Customer Service Representative Daniel Holtzapple told Eisenman Lennar planned to come by to install insulation — before receiving an engineer’s report from the city of Winter Garden inspector regarding the nailing work completed.

“I would think you need to get inspections before you cover up the work,” Eisenman wrote to Holtzapple. “Who is checking the work done today? Are the engineers certifying the work done today was done properly?”

And thus began another delay.

DAVID VS. GOLIATH

Since the problems surfaced, Lennar has remained committed to fixing the home, the company said through its media consultant, Los Angeles-based Glenn Bunting.

“Lennar has devoted extensive resources to resolve this issue during the past few months, but we had to wait for the homeowner’s permission to make the repair,” Lennar officials said through Bunting. “While the home was built by CalAtlantic, we at Lennar are committed to fixing the problem and to making the homeowner happy. … As one of the nation’s leading homebuilders, we will continue to stand behind the quality of our homes as we do for all of our customers.”

Through Bunting, the company also said it has agreed to pay Eisenman and Gustavson $400 per day while the repairs are made. Eisenman said the original offer was $200 per day, and although the

money has helped, it doesn’t allow her family to secure stable housing.

A hotel is not an option because of the family’s dogs, and the family cannot sign a long-term lease for a temporary home.

“We have two days’ notice to go back to the home once they are finished, therefore we cannot do long-term leases,” Eisenman said.

“This is a huge inconvenience and a stress on my son, and that is why we have not been able to bring him back home. They don’t seem to get the health issues that are affected here. It is a bigger issue than just what they’re paying per diem.”

Furthermore, Eisenman said it does not cover the expenses incurred to hire a lawyer to get Lennar to pull a permit and engineers into the home.

“We have spent over $20,000 just for consultants, and we still need an engineer to confirm the work is done properly,” she said.

Eisenman is no stranger to real estate. Currently, she owns and operates Benchmark Real Estate Group. But previously, she served as director of customer service for KB Home, Beazer Homes and Pulte Homes and even worked for Lennar itself from 1994 to 2001.

With her background, Eisenman said she felt confident she could navigate any problems that arose.

That it became such an ordeal despite her experience has spurred her to action.

“We’re lucky — we are able to fight,” she said. “But there are people who can’t fight at all.”

Eisenman said contracts between buyers and builders offer little ability for recourse for the consumer. She said her contract with CalAtlantic contained language giving the builder control over the time and date of closing — regardless of issues discovered during the final walkthrough phase — once it received a certificate of occupancy.

“Seller will not have any liability to buyer for any extension of the closing date,” the contract reads.

Furthermore, Eisenman said her contract prevents her from suing the builder or joining a class-action suit. And finally, for any defects in the home, the builder reserved the right to decide whether to replace, repair or pay the buyer “the reasonable cost of repair or replacement.”

“These contracts need to be changed to protect the buyer,” Eisenman said. “This story needs to be told.”

and in addition to that, they have nurse practitioners that are able to promptly respond to patients as they show up to the various locations,” Ohe said. “One of the values that Orlando Health brings to the partnership is that we are able to round out the kind of services that a patient might need, whether that’s ambulatory surgery services or access to specialty physicians.”

Bea Goff, CareSpot’s Central Florida regional director, said the new Ocoee facility will have

at least two full-time clinicians, measure about 2,500 to 2,800 square feet and include five exam rooms, one procedure room and one X-ray room.

“We’ll be able to do blood collection, and we’re going to be doing occupational health through drug screens and workers’ compensation and physicals,” Goff said. “We actually have a promotion going on right now with back-to-school physicals for $25. But we’re not going to be changing much but we are adding a few more services.”

The new facility will offer the

same patient services as the former site but also will include the X-ray unit. The physicians will be able to treat non-emergency medical conditions, such as sprains, broken bones, cuts, minor burns, or upper respiratory infections, fever-like symptoms, colds, minor infections, animal bites, allergic reactions and minor injuries.

Patients are not required to make an appointment, but online scheduling and callahead options and walk-in visits are available.

During the July 17 Ocoee City Commission meeting, city leaders consented to the Ocoee Police Department’s request to privatize the department’s school crossingguard program.

The program, which employs 28 crossing guards and 31 employees, will be outsourced to All City Management Services, with a contract set to begin Aug. 1 and end June 30, 2019.

According to city documents, All City Management Services provides crossing-guard services to the city of Kissimmee and Renaissance Charter School in Ocoee.

Ocoee Police Chief Charles Brown informed commissioners that All City Management Services will offer employment to all the crossing guards currently employed by the city at an hourly rate of $19.50.

The estimated cost of the city’s contract with All City Management Services is $272,903 for the 2018-19 school year and includes costs for training, supervision, recruitment background clearance, equipment, insurance and the addition of a new crossing guard post and substitutes.

By contracting out the program, the city will see a cost increase of about $51,000. The increase should be offset by savings from avoiding the use of police officers and community-service aids, according to the agenda.

IN OTHER NEWS n Ocoee commissioners agreed to set the proposed tentative millage rate for the upcoming fiscal year at 6.50. This rate may be adjusted during future budget hearings in September, as has historically been done.

Because the city’s assessed property value increased by $232 million, the city’s current 5.65 rate would generate a $1.27 million revenue increase. n The city is soliciting qualification statements from firms interested in contract work for the new Ocoee City Hall.

Veterinary emergency clinic opens in Oakland Veterinary Emergency Clinic of Central Florida’s West Orange location is its fifth in the area.

While the entire country celebrated Independence Day a few weeks ago, Veterinary Emergency Clinic of Central Florida simultaneously celebrated the opening of its fifth location.

Situated off West Colonial Drive in Oakland, VEC Central Florida’s newest emergency 5,900-squarefoot veterinary clinic aims to serve residents of West Orange and Lake County. Its opening is a response to a need for local veterinary emergency services in the area — something that has been in the works for a couple of years, said hospital administrator Patricia Reynolds.

“I feel like it’s in a very needed area for us, because this area has grown so fast, and we’ve dealt with our clients having to choose between Lake County (in Leesburg) or going to south Orlando,” Reynolds said.

VEC has locations in Casselberry, Waterford Lakes, south Orlando and Leesburg. Reynolds has been with VEC since its first clinic in Winter Park.

“We opened in 1975, so we’ve been here for 43 years now,” she said. “It started from the ground up; I think there were 20 doctors that started the practice and now 170 own it. We started in Winter Park — our initial clinic was there,

and we grew and built clinics in Casselberry and south Orlando.

In 2005 we built Leesburg, and in 2015 we built Waterford Lakes.”

About 170 actively practicing veterinarians from around Central Florida own VEC, which serves Orange, Osceola, Seminole, Lake and Volusia counties. VEC has a rotating staff of veterinarians and critical-care veterinary nurses. Reynolds said that number includes about 100 veterinary technicians and receptionists, 10 full-time veterinarians and about 50 relief and part-time veterinarians.

“We’ve got everything you need for emergency medicine — a full surgery room, X-ray (capabilities), full lab equipment, ultrasound, oxygen capabilities and anesthesia,” Reynolds said. “We don’t do vaccines, spays or neuters like the regular veterinarian. … We don’t do any regular day-practice stuff, but anything someone is having problems with their pet and wants to come in for, we’ll take care of it. “(We see emergencies such as) vomiting, diarrhea, eating a foreign body, bloating, if your dog collapses or has respiratory issues, animals hit by cars, snake bites and, unfortunately, this time of year, we see a lot of heat strokes,” she said.

George Oliver pushes to launch youth initiatives The recently elected commissioner has many goals in mind — several of which involve city programs dedicated to helping Ocoee’s youth.

It all started during a police ridealong. Ocoee District 4 Commissioner George Oliver spoke with teenagers who had just been caught trying to open unlocked car doors.

When he approached them and asked why they were knowingly committing a crime, they gave him an unexpected answer: They were bored.

Their answer made him think about how he could help, particularly in his new role as an Ocoee commissioner.

Oliver is the newest member of the city’s commission; he was sworn in March 20. He has since generated ideas and proposed programs he hopes could both help Ocoee’s youth find employment and reduce the chances of them resorting to illegal activities.

His most recent initiative was the Ocoee Summer Job Fair, held June 9 at West Oaks Mall.

A little more than 200 people and 25 businesses showed up at the fair, Oliver said. About 16 teenagers were hired on the spot, and several more managed to obtain interviews in the following weeks, he said.

Oliver also proposed a summer program that would employ

about 10 high school-age teenagers in the city’s departments at an hourly rate of $10 based on a 20-hour workweek. The goal of such a program, which would have cost about $15,000, was to help them get acclimated and see how a government works.

“The commission thought it was a great idea,” he said. “They like the idea of being able to invest in our youth. However, they didn’t have the money to do it. So without the money, we thought about maybe doing it next year on a grander scale. So right now, since we’re in the middle of our budgeting process, I’ll be fighting to set aside enough funds to hire some youth next year.”

Another one of Oliver’s pet projects is to establish a “junior city commission” comprising highschool students. He envisions a program where students could work with city commissioners for a day and have it count toward volunteer hours or school credit.

“I started thinking, well once we get this program off the ground, what’s the next step after that?” he said. “So I thought we could create a junior commission. One of the potential requirements could be having the commission spending at least an hour a month with them to show them what working for the city entails. So my goal is to reach out to the Ocoee High School

Most of the city’s general budget is earmarked for other projects and essential expenses, which leaves no funding for community initiatives commissioners might want to pursue, he said.

“A lot of cities have these type of foundations — Orlando is one of them,” Oliver said. “So their commissioners have budgets that allow them to push for community initiatives, but Ocoee is a city that doesn’t have that. I have no funds to be able to push for my community initiatives. I have to raise the money somehow, and once the money is raised, I need to be able to put that money into an account that is transparent, so that citizens can see: Here’s the money we collected and here’s how it’s being used.”

Oliver hopes having the foundation would allow him and his fellow commissioners to fund a variety of programs aimed at helping the community, but his own goal is to provide Ocoee’s youth the resources and knowledge they need to succeed, he emphasized.

“Look at the average age of our commission … we’re not going to be here forever,” he said. “So what are we doing as leaders in our city to prepare the next generation of leaders? Such programs have not yet been initiated in Ocoee, so I figured if no one else is going to do it, why not me? Why shouldn’t I push these ideas? I want to be that guy holding up a sign who’s able to say I want you to vote for this young guy or this young lady here because they are the future of our city. I want to be able to hold up their sign and support them.

That’s my goal.”

hen Taylor Mezime participated in last year’s Arts After 5 summer musical, she was nervous, shy and quiet. This year, she feels more confident.

“I’m feeling pretty good,” Mezime said. “I’m not really that nervous this time. I think I’m going to do great.”

Mezime is just one of dozens of children participating in the Arts After 5 program’s performance of “Annie Jr.” at 7 p.m. Friday, July 27, and Saturday, July 28, at the Maxey Community Center, 830 Klondike St., Winter Garden. by St. Luke’s United Methodist Church as part of the church’s community outreach efforts and presented by the East Winter Garden Neighborhood Alliance in partnership with the Arts After 5 program in East Winter Garden.

St. Luke’s Associate Director of Neighborhood Ministries Ruth Berlus described how Mezime’s confidence is reflected by her demeanor and work ethic.

“In the beginning of the auditions for this year, she came in ready (and) ready to go,” Berlus said. “She’s one of our hardest workers, one of our hardest actors, and she’s not one of the main actors — but she works so hard.

She comes in every day (and) she helps encourage the kids.”

West Orange High grad reports at Jimmy Awards Clarissa Moon served as a student reporter for Broadway World at the Jimmy Awards in June in New York City.

Both of Clarissa Moon’s parents are immersed in the world of the performing arts, so it’s not surprising the recent West Orange High graduate has grown up in it, too.

Moon, 18, has performed in the Orlando theater community for as long as she can remember. Her father is a show director at Universal Orlando Resort, and her mother both acts and serves as a finance manager for SAK Comedy Lab. But when Moon found her passion for Broadway and began following that community, she never imagined she would be asked to serve as a student reporter at the Jimmy Awards. The award is named in honor of James M. Nederlander, legendary Broadway theater owner and producer.

This year’s Jimmy Awards ceremony, presented by the Broadway League Foundation, took place June 25 at the Minskoff Theatre on Broadway in New York City. The event included 80 participants from 40 regional programs across the country — and Moon got to be

on the red carpet to cover it.

Her interest in Broadway began with watching videos on YouTube and broadway.com. As a sophomore, one of her theater directors came up to her and told her that Broadway World was looking for student reporters to write about high-school shows.

“I wrote an article about my high school’s theater production of ‘Into the Woods’ and got the position,” Moon said. “I wrote articles about my high school and (then) expanded into the theater community. I started doing video interviews … and next thing I knew, theaters were contacting me asking me to do interviews for their shows. Two years later, I’m still working for Broadway World as a staff writer.”

She first applied to become a student reporter for the Jimmy Awards last year, made it to the Top 10 contenders and ended up first runner-up. She applied once again this spring and again made it to the Top 10. After a month of competing with other semifinalists for social-media activity on their application videos, Moon learned she was one of two student reporters selected.

League the day of the awards ceremony, waking up at 6 a.m. and getting to bed around 2 a.m.

“In the morning, we shot a promotional video for the livestream that night, kind of introducing ourselves and explaining what was going to happen that day,” she said.

“We had breakfast with managers from the Broadway League, and we met up with somebody who runs social media for ‘Playbill’ and got to tour their offices, which was insane because that’s where all the playbills are created, and it’s one of the Broadway news organizations that I follow.

“The most exciting part by far was the red-carpet experience,” she said. “I got to talk to theater people: Kyle Selig, currently starring as Aaron Samuels in ‘Mean

“I like being the boss sometimes,” She said.

Berlus said the children only had about six weeks to prepare the production.

“We have to pack in as much as we can,” Berlus said. “It’s a long process, and there’s not much time to do it.”

She added some of the children were new to theater. Although the production came with its chal-

lenges, ultimately, the goal is to enrich children’s lives, Berlus said.

“The most important part is making sure that they come and they have fun and that they’re exposed to everything that we do,” she said. “It’s about them.

It’s about making sure that they have this opportunity …(and) that they’re happy and having fun.”

The drama production also helps the children avoid the “summer slide,” defined by The Brookings Institution as a tendency for some students to lose a level of a academic gains they made during the school year while on summer vacation.

Berlus said the program helps continue the children’s education during the summer by having fun.

“Reading in the summer (is something) kids don’t really like to do, but when they come to the production … we make them read,” Berlus said, adding children also are exposed to math and science techniques.

“They actually (make) the production pieces,” Berlus said. “They get to paint, they get to measure the dimensions, so there’s mathematics involved. There’s science involved. Like, how much weight can go on this (piece)?”

Moon plans to continue working for Broadway World, as well as at Universal, as she heads to the University of Central Florida this fall.

“I still feel like I’m on cloud nine,” she said. “I’m still kind of in disbelief that (the Jimmy Awards experience) all happened, but it’s slowly sinking in.”

TOOLS OF THE TRADE. When it comes to tools, Caterson said he keeps things simple and frugal when he grills.

He suggest that individuals should have spring-loaded tongs; a spray bottle filled with water in case of grill flare ups; a wide, metal spatula; meat thermometer; and a wire grill basket.

CHICKEN. To prepare chicken, Caterson suggests seasoning it both underneath and on top of the skin.

“That way, I’m guaranteed that the seasoning is really going on the chicken,” Caterson said.

“That’s especially important if you have friends who don’t like to eat the skin.”

After seasoning, grill the chicken using two “heat zones” to ensure the chicken cooks fully without drying out. Caterson said to start cooking the chicken on one side of the grill and finish cooking on the other.

“Generally, you want one side hot — whether it’s charcoal or gas — and one side cool,” Caterson said. “Sometimes, what I might do is get an aluminum tray — like a basting tray — put some water in it and put it on (the cooler) side.”

He added that the steam from water keeps food juicy. The tray of water also helps keeps the grill cleaner by catching any drippings that would fall onto the inside of the grill if the tray wasn’t there.

loose balls before flattening them into patties.

“We don’t want to pack them very tight,” Caterson said.

“They’ll come out much juicier if you don’t pack them really tight.”

He also said to make sure that patties are at least four-and-onehalf inches in diameter. Before placing burger on grill, make a small indentation in the middle of the burger. This prevents the center of the burger from bulging while it cooks, Caterson said.

STEAKS. Caterson said ribeye, New York strip, T-bones/porterhouse or filet mignon are ideal cuts for grilling. For special occasions, he suggests buying USDA Primegrade steaks.

Before cooking, Caterson suggests salting the steak at least 40 minutes before putting on the grill.

“What the salt does in the first three to five minutes, it draws moisture out of the beef,” Caterson said. “Then over the next 30 to 35 minutes, reverse osmosis takes place and all that juice the salt pulled out gets reabsorbed back into the meat and brings the salt with it. So, now you’re salting inside of the meat as well as the outside. That way, when you go to cook it, your steak will come out much, much juicier.”

He added that one shouldn’t salt a steak at all or salt it right before cooking if they don’t have the 40 minutes to wait.

Steaks should be turned at least every 30 to 45 seconds. This way, steaks cook faster and more evenly. This also creates a sear across the whole steak.

West Orange alum Austin Gomber has been bouncing back and forth between the St. Louis Cardinals and their Triple-A affiliate in Memphis the past few weeks.

yan Ashworth is almost certainly not going to be a professional baseball player — he’ll tell you that much, himself.

Undersized at 5-foot-10, the rising senior for Flagler College and multi-year returner for the Winter Garden Squeeze knows he doesn’t have the physical attributes or velocity that pro scouts look for in a pitching prospect.

Ashworth is not bothered by this, either.

It’s a reality the Ocoee native and West Orange High alum made peace with years ago, and he has, instead, chosen to soak up every moment of his final season with the Squeeze this summer and with the Saints next spring.

“I’m trying to have as much fun as I possibly can,” Ashworth said after tossing another gem for the Squeeze July 20 in Sanford. “Since I started college … I’ve had the harsh reality that someday baseball is going to be over me — and that realization is coming soon.”

Ashworth’s performance last Friday in a 12-3 win for the Squeeze against the Seminole County Scorpions was what Winter Garden coach Jay Welsh would boast as “classic Ashworth.” After allowing two runs early, the former West Orange Warrior settled in and followed that with seven scoreless innings.

“He’s amazing on the mound,” Welsh said. “His consistency, he works fast, holds runners and has a great off-speed pitch.”

Welsh has known his go-to pitcher since Ashworth was 10 years old at Windermere Little League and on the same all-stars team as his son, Ryan Welsh.

Perhaps that shared history was part of the reason that, when he pulled Ashworth with no outs in the bottom of the ninth inning, he sent him over to third base instead of back to the dugout.

Ashworth has not been a position player since Little League, so it was his first time on the field as a non-pitcher in years.

They’re making room for another statewide trophy at West Orange High.

The Floyd E. Lay Sunshine Cup All-Sports trophy has found a home on Beulah Road, signifying that West Orange High’s girls athletics were — collectively — the best in the state of Florida in Class 9A in 2017-18.

“To me, by saying, ‘You’re the best program for females in the state of Florida’ — it’s a huge accomplishment,” West Orange Athletic Director Jerry Shafer said. “It’s up there with state championships and national recognition. It just goes to show how well our coaches, our teachers and the community rally behind our programs here.”

Samara Singh has done more than just stand out as a talented player at Ocoee Little League (since renamed to West Orange Babe Ruth).

In addition to making Ocoee’s 12-Year-Old All-Stars team last spring, Singh — a catcher and a pitcher — played for GTB (Girls Travel Baseball) and will compete this November in the “WORLD COMES to the Palm Beaches” International Baseball Tournament.

How long have you been playing baseball?

I was around 4, or maybe before that. My brothers played T-ball, and I always liked to run around with them and practice with them.

What do you love about the game?

I like that I’m a girl and people think I’m (bad) at it. This weekend I was playing (travel ball), and the other team was like, “Just get this easy out,” and everybody moved in. I hit it over their head, and we scored.

What is your favorite baseball memory?

Hitting my first home run last year. It was in Apopka … the field with the three palm trees behind it — I hit the top of the palm tree.

distract me. I like to throw my fastball, because it kind of tails a little bit for me.

Do you intend to keep playing baseball into high school?

I’m trying to make it. I’m going to try out for my high-school team, but if I don’t make it, then I’m also going to try out for softball, so I can get that scholarship.

How did your regular season at Ocoee Little League go?

I was on the Rays. We started off not that good, but we got better throughout the season. We came out to be Top Team.

THE BASICS

Who is your favorite player?

(St. Louis catcher) Yadier Molina. I like to watch when he throws people out from his knees — it’s really cool.

What was your favorite class at Ocoee Middle last year?

Science — we did fun experiments, and my teacher (Shannon Hulcher) was awesome.

He was funny, and he told a lot of jokes.

What do you think you would like to be when you grow up?

Probably a lawyer. My dad always says, “You would make a great lawyer,” so I’ve thought about it, and it would be pretty cool.

Who is your biggest role model?

My brother JJ (John Singh Jr.). I look up to him a lot, because he is a catcher and pitcher, too.

Do you have a favorite show you like to watch?

I like to watch “Full House” and “Fuller House.” I like when Stephanie says, “How rude!”

What’s your strategy when pitching?

I block everybody out, because most of the time, they’re trying to

When Welsh talks about Ashworth, he talks of a ballplayer whose passion and enthusiasm have taken him far.

“The main thing is, he loves the game — you can tell he’s very excited to be out there,” Welsh said. “(Ashworth) has done everything he can with his ability. He’s going to go down as a four-year college pitcher and a guy (who) earned his scholarship to play in college.”

The same self-awareness about his prospects beyond college baseball has informed the way Ashworth approaches the game on the mound — and it has done so to his benefit. Instead of trying to be a flashy pitcher who tallies tons of strikeouts, Ashworth has made a career of

trusting his fielders behind him.

He works quickly on the mound, hits his spots and purposefully pitches to contact.

“That’s kind of my approach — I learned that when I got to college,” Ashworth said. “I’ve made my bread-and-butter off just pitching to contact and throwing to guys to get them to pop out or ground out.”

His pitching philosophy paired with his even-keeled demeanor have made for a remarkably consistent — and impressive — career. In three seasons for the Squeeze, Ashworth has a 3.36 ERA and nine wins to his credit. At Flagler College, he had a 4.96 ERA last spring after throwing 81.2 innings and was named the school’s Total Package Award recipient for the spring season, recognizing his excellence on and off the field.

The knowledge his baseball career likely will not extend beyond next spring with the Saints could have meant that Ashworth would forego his final season with the Florida League, but Ashworth said he was excited to take one more go-round in orange and blue — and with Welsh as his coach.

“There’s nobody I’d rather

play for in the entire world,” Ashworth said. “My (college) coach came to me at the end of my spring season and said, ‘Do you want to play summer ball?’

I said, ‘Yes, I want to play for Coach Welsh.’”

ON DECK

Perhaps one of the main reasons Ashworth is handling the end of his baseball career in stride is he is eager for the next chapter of his life. The Ocoee native is majoring in media production/ broadcast journalism at Flagler and minoring in advertising.

Much the same as he once had goals such as making a college baseball team — goals he accomplished — his new goals are geared toward what is next.

Ashworth said he wants to start a creative media company and dabble in sports broadcasting.

Most of all, his dream is to one day make a feature film.

Although he wants to soak up the baseball he has left, this West Orange product is also eager to bring that same winning mentality from the diamond to the real world.

“It’s honestly extremely exciting,” Ashworth said. “I have a lot of goals, and I’ve set my goals really high.”

To determine winners, points are awarded to a school based on its finish in the FHSAA State Series in each sport. Among other accomplishments, West Orange girls teams won a state championship in volleyball, were state runners-up in softball, third in the state in competitive cheerleading, regional champions in track-and-field and won district championships in a handful of sports, including lacrosse and basketball.

When the points were tallied, West Orange High’s 90 points topped state runner-up Winter Park by five points (85).

“The consistency — from fall-to-spring with all the programs — when you talk across the board, it’s just unheard of,” Shafer said.

The Warriors will look to continue their winning ways this fall not just in girls sports, but in boys sports, too.

“Our boys programs, there’s some programs that are going to catch a lot of teams off guard this year,” Shafer said.

And should a little friendly ribbing occur between the girls and boys on campus, that might

not be so bad, anyway.

“I’m sure the boys will get heckled a little bit — but that’s sports, too,” Shafer said. “It never hurts to have a little competition within the school itself.”

Standout running back lends a hand to rival athletic director in time of need

W

hen West Orange and Dr. Phillips square off in football Sept. 7, Steve McHale and Nemea Hall will be on different sides of the field at Bill Spoone Stadium.

McHale, athletic director for the Panthers, will be on the home sideline in his trademark Dr. Phillips polo and hat.

Hall, a rising junior running back for the Warriors, will be suited up in orange and blue.

He’ll be doing his best to pick up first downs and touchdowns for West Orange, while McHale will be cheering on the Dr. Phillips defense to slow him down.

It will be, in short, as any high-school sports rivalry ought to be.

Of course, none of that changes the fact that, when one was in a time of need, the other was there to help.

First, some background.

Before McHale was a coach and later an athletic director, he served in the U.S. Marines Corps. On June 22, he was in El Paso, Texas, for a national conference for combat veterans.

Along with several other of his fellow veterans, McHale is a motorcycle enthusiast, and so that day, he and a group went for a ride to the base of the nearby mountains, where there is a scenic overlook of the city.

Thanks to a freak accident, McHale ended up in the emergency room instead of taking in the splendor of the overlook he and his friends had sought out.

As a result of the accident, his bike had slid from under him, leaving him with a fractured vertebrae in his back, a broken hand and road rash up and down both sides of his body.

After spending two days in the hospital, the Panthers’ athletic director was cleared to travel home to Orlando, but there was an additional problem. McHale and his family, who reside in Winter Garden, were supposed to be moving to a different neighborhood in Winter Garden at the beginning of July.

Eric Schwalbach, a neighbor of McHale’s and an active member in the local sports community, decided to help by bringing a trio of teens whom he had known through youth football to help with the move.

Hall was among them.

McHale has known Hall since the standout running back was in elementary school; he was in the same class as McHale’s daughter. A few days of Hall and company helping to move furniture and boxes provided an opportunity for McHale to catch up with the young man he had known since

he was scoring touchdowns in Pop Warner football.

“We talked about being so talented (at football) and making the right decisions,” McHale said. “We talked about his GPA and stuff he can do within the community.”

Part of the reason college football coaches from around the country are taking an

interest in Hall is he stands 6 feet tall and weights a solid 210-pounds. He boasts an athletic frame that helps him break through tackles as he accelerates down the field. As a sophomore, he was dominant running the ball, culminating in bowl-game appearance where he rushed for five touchdowns and more than 300 yards against Lyman High.

He can be soft-spoken and shy outside of the game, though, and McHale wanted the community to know that there is more to the Winter Garden native than football.

“He’s got a big heart, and he’s a great kid,” McHale said.

“He’s helping out the athletic director of a rival high school — which is unheard of in other parts.”

As much as anything, it was also a reminder of what the “rivalry love” that Orange County Public School’s Metro Conference likes to talk up actually looks like.

HURRICANE SAFETY BEFORE THE STORM WATER HEATERS/POOL AND SPA HEATERS Most water, pool and spa heaters have a safety valve which will automatically shut off the flow of gas if the pilot light goes out. Tankless water heaters need a UPS backup device, connection to a 120V standby generator or a 12V inverter.

IF ASKED TO EVACUATE: Leave the gas on. Turning off the gas could result in unnecessary delays in restoring your service. It is not necessary to turn off the gas at your meter or, if you use propane, at your tank. Should Lake Apopka Natural Gas deem it necessary to turn off the service, Company representatives will inform you. By leaving the gas on, you will be able to cook and, as long as there is a reliable supply of water, you will have hot water. Leaving gas on also helps you avoid reconnection fees.

Do not do anything to cause a spark (i.e., using a garage door opener, portable phone, etc.). Immediately evacuate the premises and call Lake Apopka Natural Gas District’s 24/7 emergency number at 800.542.3344 or 9-1-1. It is important to call from a telephone away from the building where you smell gas. In the case of a gas leak, our first responsibility is to make sure the area is safe. Service will be restored as soon as possible. All District personnel carry identification and will, upon request, show their identification before entering your home.

If your home or business was flooded and gas appliances were underwater, do not attempt to operate the appliances. Water can cause damage to the internal safety mechanism and create a hazardous condition. Call Lake Apopka Natural Gas or a qualified appliance contractor for a safety inspection and to relight the pilot lights on your appliances.

Check yard for loose items. Move and secure items not firmly installed before the storm arrives. This includes grills, patio furniture, swings, pool equipment and supplies, even water hose reels. Items such as these can be blown around by hurricane winds causing unnecessary damage to your home, propane tank or gas meter.
