“Quality of meat makes you a good barbecuer; it makes what you’re cooking tastier,” Freeman said. For beef, look for choice- or prime-grade meat. If you’re cooking burgers, look for a higher beef-to-fat ratio.

The more fat the meat contains, the more the burger will shrink on the grill. n Pay attention to the meat temperature, depending on what you’re cooking and how you want it done.

“That means more than anything in any kind of barbecue,” Freeman said.

“If you don’t utilize the thermometer you have no clue where the middle of that meat is. You’re rolling the dice because you can’t see inside there.”

Competitive barbecue chef Buck Freeman shares his tips and tricks of the trade for the perfect summertime barbecue.

S

ummertime brings the heat, lazy days by the pool and beach vacations, but it also cues the sweet, smoky smell of a traditional backyard cookout.

A good barbecue is the staple of summertime food, but what you might not know is that there are a few factors that go into cooking the perfect meal. Whether you consider yourself a barbecue connoisseur or you’ve never fired up a grill in your life, it’s important to have your grilling basics down.

Buck Freeman, a competitive barbecue chef who grew up in the West Orange area, knows a thing or

two about grilling his food to taste.

From hot dogs and hamburgers to steaks and pork chops, he has a method to the madness for whichever style cookout he chooses.

Freeman grew up as one of seven children and always watched his father man the grill during family barbecues. He began hanging out beside his dad at the grill and became serious about learning his techniques as an eighth-grader.

“I got married right out of high school, and we’ve always had a grill,” Freeman said. “I’m the chef at my house — (I cook) all weekend long and then we normally eat what’s left over for two or three days.”

He’s a member of the Florida Barbecue Association and loves barbecuing so much that he’s been involved in barbecue competitions for years.

“It’s a serious hobby, it’s an expensive hobby, but when you love to barbecue (it’s worth it),”

he said. “We treat this as a fun gathering, but also I’m a serious competitor — everything I’ve been involved in is always all in or not at all.”

He and his team operate as Team Uncle Buck’s Barbecue, and he owns four cookers. Freeman also has his own business in Orlando, Superior Metal Fabricators, which he has owned and operated for 32 years. Because of this business, he was able to create a custom, mobile barbecue grill.

The grill serves three different purposes: It contains a smokerstyle grill, an eight-burner gas grill and three deep-fryer burners.

“When we do benefit cookings, we might want to cook hamburgers and hot dogs, and I can cook that on the eight-burner grill,” he said.

“If we’re doing a smoking-style barbecue, I do that on the big rotisserie smoker. If we were going to deep fry or have fried chicken and fish at a function, I have the ability to do a fish fry.”

THE PERFECT BURGER For beginners, Freeman recommends starting with a simple charcoal grill.

Another tip he offered is ensuring you cook with quality meat. For burgers, look for meat that contains more beef than fat — the more fat the meat contains, the more the burgers will shrink.

“The simplest way is to buy them prepressed,” he

said. “If not, you’re buying a lump of hamburger meat and squeezing them between your fingers and trying to make a round patty.”

Before you toss the burgers on the grill, be sure to season them to taste. Freeman’s holy-grail seasoning, he said, is Montreal steak seasoning.

“It’s got your salt and pepper in it, it’s the one-shake

deal,” he said. “It’s good for everything. That’s the golden seasoning.”

How long to keep them on the grill depends on the thickness of the patty and how you want them done.

Freeman suggests that they be cooked at least at a medium temperature, or 130 degrees. For well-done burgers, the ideal temperature is 160 degrees.

BUCK’S BAKED BEANS One of Freeman’s favorite sides is baked beans — with his own touch. He takes standard Bush’s baked beans and puts them in a mediumsized aluminum pan before adding bacon bits, onions and green peppers. He then puts the beans on the grill to warm them up.

“I’ll also put the beans on the grill and cook them on the grill — no aluminum-foil top,” he said. “I like to put some wood chunks on my charcoal to give it a little bit of smoked flavor. (Then) I put them (the beans) to the side with aluminum foil on top until we’re ready to eat.”
