Dear Reader,
“I can’t change the direction of the wind, but I can adjust my sails to always reach my destination”. (Jimmy Dean) It was in 1997 that construction of what is now the Resort’s 18hole championship golf course began. Today, some 20 years later, our Resort has gone on to receive some of the world’s highest accolades. Aphrodite Hill’s Golf has recently attained top honours and the highest standard recognition in golf, the PGA National, Cyprus, one of only six in Europe. On 12 December 2017, the International Association of Golf Tour Operators voted Aphrodite Hills Resort as the European Golf Resort of the Year 2018. This was announced at the Palais de Congress in Cannes, France, in front of an audience of 1500 international golf tourism delegates at the opening of the International Golf Tourism Market. Our Vision to become the Best Golf Resort in Europe is now a reality. Reflecting on the successes of the last 12 months, we look forward with excitement to 2018, as our Resort continues to evolve in a way that meets the needs of today’s global traveller. HISTORIC HILL Aphrodite Hills, with its unique location in Kouklia overlooking the birthplace of Aphrodite, is steeped in history and mythology. The Resort is built in the vicinity of three important archaeological sites – the Rantidi Forest, the plateau of Hadjiabdoulla, and the man-made mount of Laona. IN THE FOOTSTEPS OF THE GODS
After a decade of surveying and excavation, a sanctuary site within the area known as the Rantidi forest was discovered, boasting an important cult of the Ancient Greek Deity, Adonis. Thousands of life-sized and greater-than-life-sized terracotta statue fragments were recovered, as well as more than 200 inscriptions, all of which reflect the beautiful legend of Adonis and Aphrodite. The deity of plants and prophecy, Adonis was the forever youthful god, who lived in a constant cycle of rebirth. So captivating was his beauty, even as an infant, that Aphrodite, the goddess of Love, handed him over to the care of Persephone, Queen of the Underworld to keep him from prying eyes. A struggle ensued between the two when Persephone refused to return the child to Aphrodite, and Zeus, King of the Gods, was forced to intervene and decree that Adonis could spend a third of the year with Persephone, a third with Aphrodite, and a third to do as he pleased. He decided to spend the latter third with Aphrodite, and the two spent their days hunting in the Rantidi Forest.
BORN IN THE PURPLE
Another excavation site near Aphrodite Hills Resort grounds, uncovered an extensive storage and industrial complex, dating to the Cypro-Classical period. The site, located on the plateau of Hadjiabdoulla, appears to have functioned as the Paphos royal dynasty headquarters until the end of the 4th century B.C. Most interesting, however, is that archaeological data from the site appears to confirm that one of the main elements found among the complex was a thick layer of crushed murex shells. The murex, a species of predatory mollusk, produced a highly sought after deep purple dye. Indeed, this is the first archaeological finding of its kind which confirms production of this precious, costly dye, known as ‘porphura,’ in Cyprus. Extracting the dye involved thousands of these murex snails, and a substantial amount of labor. As a result, the dye was highly valued, and purple-dyed textiles became status symbols. In fact, laws at the time restricted the use of the dye to the coloring of imperial silks only. The name ‘porphura’ thus lent itself to the term ‘porphyrogenitos,’ which literally translates to ‘born in the purple.’ In other words, a child born into royalty.

On December 12th, 2017, IAGTO, the International Association of Golf Tour Operators, voted Aphrodite Hills Resort, the 5-Star fully integrated Resort in Cyprus, as the European Golf Resort of the Year 2018. The Global Trade Association of the Golf Tourism Industry, comprised of 680 golf tour operators from 65 different countries around the world cast their votes for these awards. There are 1000 golf resorts in the USA and an estimated 2000 in total worldwide.

THE PROFESSIONAL GOLFERS ASSOCIATION (PGA)
Doing much to promote the game of golf through various collaborative projects with other renowned golf bodies, the Professional Golfers Association (PGA) is a members’ organisation that seeks to enhance the golfing experience of golfers over the world. The oldest PGA across the globe, it was established in England in 1901 with members that included famed golfers JH Taylor, James Braid and Harry Vardon. Currently, Ian Poulter (Ryder Cup champion) and Paul Lawrie (1999 Open Champion) make up some of its 7500 members located in the UK and over 80 other countries globally.

ELEMENT | GOLF The PGA was originally a male dominated body that strived to raise the profile and credibility of professional golfers so as to improve their working conditions and general welfare throughout their careers. It wasn’t until the middle of the 20th century that women began demanding increased presence in the game which led to the establishment of the Women’s Professional Golfers Association (WPGA) in 1978. Today, the PGA is involved in a number of initiatives to advance the game of golf worldwide, including projects like England Golf, Club Golf in Scotland and others in Wales and Ireland.
The recognition of PGA places the already award-winning Aphrodite Hills Golf on the highest places of Europe’s golf courses.

Cyprus has a long history with herbs. Not only have they been referenced in archaeological and historical records, they’ve also been traded on the island from as far back at 2000BC. There are reportedly some 600-herb species found across Cyprus today which is said to be due to the geology, weather and location of the island.

So popular are the herb varieties here, that many are exported across the globe. These include mint, oregano, chamomile, and others. Cypriots are also known to incorporate the use of herbs into daily life, not only for cooking, but also in beverages or as essential oils utilized in a range of massage therapies. So, what other herbs in particular are commonly found in Cypriot homes, and what are their health benefits?
NUMBERS
There are reportedly some 600-herb species found across Cyprus today.
STEVIA
This noncaloric herb is used as medicine and a sweet treat. Stevia has also been used specifically as a traditional medicine for burns, stomach problems and colic.
ANISE (GLIKANISOS)
Very often consumed as a tea made from the seeds of the plant, anise is helpful in easing irritable bowel syndrome (IBS) or stomach aches, and is said to promote liver, lungs, heart and brain function. In terms of cooking, anise is said to be a wonderful addition to rice.
LEMON VERBENA (ALOIZA)
Aside from being a mood booster, lemon verbena is reportedly also great for treating IBS symptoms, as well as nausea. Some even say that this herb is helpful when trying to lose weight.
ALOE
Aloe is fantastic for treating dermal conditions like sunburn, burns, eczema and other skin ailments. Although 99% water, it’s the remaining 1% that packs a punch by supplying the skin cells with oxygen which improves the strength and synthesis of skin tissue.
So popular are the herb varieties here, many are exported across the globe. FENNEL (MARATHOS)
Unlike other herbs, fennel is regarded as a herb and spice, being that the entire plant is edible. It’s an all-rounder due to its medicinal use, and also the depth of flavour it adds to food. Not only is fennel used to treat colic and bronchial congestion, it is said to be helpful in the quest to lose weight, and is believed to be beneficial in the treatment of snake or insect bites.
ROSEMARY (DENTROLIVANO)
This fragrant herb is widely used in Mediterranean cuisine to flavor all kinds of dishes. It improves the digestive system and enhances memory and concentration.
THYME (THYMARI)
This herb adds extra flavor to meaty dishes and helps make them juicier. It can also be used as a herbal aromatic tea for flu relief.
LAVENDER (LEVANDA)
Gourmet gardeners know that lavender flowers can also be used in the kitchen. Lavender can be combined with delicious creamy cheese (mascarpone, ricotta), lamb, chicken, duck, dried fruits, honey, dairy products (cream) and nuts (walnuts).

CAROB – THE BLACK GOLD OF CYPRUS
The carob tree is native to the Mediterranean and has been cultivated for 4000 years. Its Latin name, “Ceratonia Siliqua”, is derived from the Greek “Keration” meaning horn – as per the shape of the tree’s pod. Since ancient times in Greece and Egypt, carob has been used as food and fuel. The seeds from the carob are consistent in size and weight and are believed to have been the original gauge for the “carat” used by jewellers. Carobs were known as the “black gold of Cyprus” and used to be a major agricultural export product. Around 4000 carob trees can be found at Aphrodite Hills Resort.
BACK IN TIME
Cyprus Carob trees have been grown in Cyprus and countries bordering the Mediterranean since biblical times. It is said that they were the main source of food for St. John the Baptist during his forty days in the

wilderness, and to this day they are sometimes called “St. John’s Bread”. It was under a carob tree near Salamis in Cyprus, that the body of St. Barnabas, Patron Saint of the Church in Cyprus was found in AD 477.

Carob powder is higher in natural sugars, fibre and iron content than cocoa and has become a popular chocolate substitute. Carob syrup is used as sweetener in cakes and biscuits and may be blended with milk or ice cream to give flavour. Carob syrup helps improve the function of the stomach. Farmers dissolved carob syrup in water as a refreshing energy drink as well.

In 1750, the Jockey Club was established which sought to supervise English horse racing by establishing a complete set of rules for the sport. Measures were also taken to regulate the breeding of race horses, which extended to the pedigree of the horse and family line. The responsibility of overseeing this task was given to Jockey Club accountant, James Weatherby, whose work resulted in the publication of the General Stud Book in 1791. The pedigree of all foals born to race horses have been recorded in the book since 1793.
EQUESTRIAN THERAPY
Beyond horse racing, horse-back riding has also played a prominent role in therapy for adults and children. History tells many stories of how riding horses has provided both physical and emotional benefits. As far back as 460BC, Hippocrates allegedly made reference to the “healthy pace of a horse”. In 1875, it was said French neurologist Chassaignac discovered that the “balance, motion, control muscle and mood” of his patients improved when riding a horse. Chassaignac believed this to be of immense benefit for sufferers of neurological disorders.

Horse-back riding has played a prominent role in therapy for adults and children.
Horse riding is undoubtedly one of the oldest and most distinguished sports that continues to endure. Dating back to around 4500 BC when the nomadic tribesman of Central Asia first domesticated horses, the history of horse racing is remarkably long and fascinating. The sport certainly expanded into other countries, with some archaeological records making mention of it taking place in Ancient Greece, Egypt, Syria and Babylon. Chariot racing in particular was popular amongst the Greeks, Romans and Byzantines, and reportedly featured in the Greek Olympics, together with mounted horse racing, by 648BC.
WHEN HORSE RACING WENT TO ENGLAND
Horse racing in the United Kingdom also stems back hundreds of years, to the 12th century. It is said that on their return from the Crusades, English knights brought back with them Arab horses. These were subsequently bred with English horses to produce what are known as Thoroughbred horses. In England today, Thoroughbred horses are used in horse racing. From 1660 to 1685, King Charles II held horse races on open fields or private courses. The race was typically between two horses, with the winners being awarded prizes. During the reign of Queen Anne between 1702 1714, horse racing involved multiple horses and spectators were able to place bets. It was during this time that horse races became a

let’s start with summer foods Tomatoes They’re not just a powerhouse of Vitamin C or antioxidants, they also contain a high percentage of lycopene which is a polyphenol said to contribute to the prevention of prostate cancer. Other health benefits of including tomatoes in your diet are the maintenance of healthy blood pressure and the decrease of blood glucose in people suffering from diabetes.
Watermelon Who doesn’t love the sweet juiciness of a blood red icy cold watermelon on those hot summer days? This high-water content fruit is exactly what you need to keep hydrated and cool when the heat is cranked up high. Another bonus, the lycopene found in watermelon will also protect your skin from sun damage.
Strawberries Like most berries, strawberries contain high levels of flavonoids which are incredibly powerful in warding off diseases.
Dark, leafy greens I can’t think of a single person who doesn’t enjoy some variation of salad in the summer. If you want to strengthen your skin’s defence against the sun’s rays, make raw kale and spinach your go-to salad ingredients. The carotenoids in dark green foods convert to Vitamin A which are a line of defence against skin damage.
Green tea Water can get boring. So if you’re on the lookout for something with flavour, green tea is the way to go.

Getting the right amount of shut-eye, every night does a world of good for our health and overall wellbeing. In fact, a lack of sleep can directly affect our mental and physical health, causing us to feel sluggish, unproductive, and emotionally imbalanced throughout the day. Luckily, a few small changes in our daily routine can get rid of that nightly tossing and turning, and ensure that every time we hit the hay, we are in for a night of deep, relaxing sleep. By going to sleep and waking up at the same time each day, you are setting your body’s internal clock and optimizing the quality of your sleep. Choose a bedtime when you normally feel tired, and stick to it all week long.
PRACTICE A RELAXING RITUAL
Hectic schedules during the day often leave us stressed, anxious, and unable to relax at night. That’s why it’s important to make time for your mind to wind down and prepare to sleep. Quiet activities, such as yoga, meditation, soft music, or even a few pages of a favourite book can help quiet our overstimulated brain and allow us to drift off sooner.

If you can’t keep all light out of your room, consider using a sleep mask to ensure that you are not interrupted by a flashing digital alarm clock or sliver of early morning sunlight. THE BEAUTY OF A DEER WITH THE AGILITY OF A GOAT
High in the Troodos mountain range, engulfed by the fresh scent of pines, cedars, and the earthy aroma of the soil, one hopes to catch a glimpse of the ever-elusive Mouflon. The ‘Ovis gmelini ophion’, or ‘Agrino,’ as it’s commonly known in Cyprus, is the island’s largest wild mammal, endemic only to these shores. The Mouflon is a shy creature, preferring to stay hidden in the brush, venturing out only to nibble on edible plants and trees. Its agile nature allows it to move very fast across steep slopes, making the Mouflon even harder to see, and almost impossible to approach.
SNEAK PEAK
Wildlife experts say that the best time for a Mouflon sighting is early in the morning, before the sun rises too high, while the forest is still quiet and mist drifts gently through the trees. Only then might an eager hiker catch a glimpse of the magnificent, muscular Mouflon as he steps out to examine the morning air. A full-grown male can weigh up to 35kg, but most impressive are the thick, curved horns that adorn his head, each reaching up to 55cm long. The proud Mouflon is truly a breathtaking sight to behold, albeit fleetingly, before he tosses his head and flees once more, disappearing into the dense woods.
MOVING WITH THE SEASONS
The Mouflons’ seasonal activity pattern is quite variable, as the animals move to the high peaks of the Tripilos Mountains in Paphos. This mountain range stands at an altitude of 1,362 meters and overlooks the Cedar Valley. In the winter time, when snow blankets their stomping grounds, the Mouflon migrate to lower pastures in search of food, even venturing outside the confines of the forest.
Mouflon mating season is usually in autumn, and it is at this time when the animals move in large herds of ten or twenty males and females. By spring, the herds have broken up into smaller groups of two to three animals, while some males even prefer to go it alone, wandering the forest solo until it’s time again to search for a mate.
PROTECTING OUR HERITAGE
Mouflon once roamed across the Troodos and Pentadaktylos mountain ranges in large numbers. However, the introduction of guns and influx of hunters on the island, combined with the lack of a suitable protection policy, caused a rapid decrease in the Mouflon population. In the 1930s in particular, numbers dropped frighteningly low, and only 15 wild Mouflon were left in the Paphos forest. The Mouflon had become an endangered species.

Since then, the hunting law has been revised, and draconian measures taken to ensure that the Mouflon is protected and continues to thrive. A large part of the Paphos Forest has been declared a Nature Reserve under Forest Law, and the entire area is now included in the European network for protected areas, the ‘Natura 2000,’ forbidding the illegal hunting and poaching of these dignified animals.
THE SYMBOL OF CYPRUS
Today, the Mouflon is no longer considered to be in any danger, and concerns for its disappearance have all but been eliminated. Indeed, the Mouflon is now held dear as an indispensable part of Cyprus’ natural heritage. Its unique horned figure has become a familiar symbol for our island, having once adorned the entire fleet of Cyprus’ flag carrier airline, Cyprus Airways, and now prominently displayed on the one, two, and five cent Cypriot Euro coins.

ENVIRONMENTAL POLICIES
As the only Resort in Cyprus with an Environmental Manager dedicated to enforcing all Environmental Policies, Aphrodite Hills prides itself on the effectiveness of its actions for reducing emissions and promoting sustainability. The Resort’s environmental policies are designed to respect the natural landscape and existing ecosystem, and lessen the impact of human activity. This approach therefore takes advantage of the natural sea breezes and solar power, both of which are plentiful in Cyprus, in order to conserve energy. The construction of each building on the Resort grounds has been carefully planned to ensure minimal impact on the environment. All external light fixtures are energy conserving and minimize light pollution, and solar panels are used throughout. The natural landscape is conserved through the use of hedges for plot subdivisions, and preservation of existing site features, including limekilns, stone walls, scree slopes and rock outcrops. Existing tree vegetation has been transplanted with a very high success rate, and vegetation in non-built areas is retained and enhanced wherever necessary. In addition, indigenous trees and shrubs with minimum water and maintenance requirements are planted across all public areas, and grey water from the Resort is recycled and used for irrigation. All gardens are maintained using organic and eco-friendly products, ensuring that they are non-

Indigenous to Cyprus from the Neolithic period, the olive tree remains a familiar feature of the island’s landscape. Found in practically every town and house garden, this much-favoured tree can also be seen growing in abundance in the forests of Pentadactylos, Karpasia, Akamas, Paphos, Limassol and Stavrovouni.
A SACRED OIL
Once considered sacred, olive oil was used for blessings given to kings and athletes. It was also the eternal flame of the original Olympic Games, and it was used to light revered lamps in temples. In Cyprus, the leaves of the olive tree are said to ward off evil, and the smoke of burning olive branches is believed to protect one’s home and family.
AN ANCIENT HISTORY
In Cyprus, olive trees have been around since antiquity, with a huge number of wild olive trees found in the southern Troodos region. Archaeological evidence dating back thousands of years before the birth of Christ includes olive pits found at various sites across Cyprus such as Nicosia, Kyrenia, Larnaka, Famagusta and Salamis. Aside from the pips, other finds relating to olive oil production include separation vessels, vats, mortars, millstones, among others. Perforated monoliths have also been discovered, predominantly in the south Troodos region evidencing what many think was equipment used for the production of oil. Olive oil production continued through the years, although not always in great quantities, nor for aggressive commercial use. Yet the relationship between people and this tree still thrives.

Whilst the production of olive oil in Cyprus has improved dramatically, it is still a task also largely done by members of families. Due to the significant sophistication of the production methods used today, and the high quality of Cyprus olive oil, many producers have gone on to win international competitions for the end product. Further, the demand for organic olive oil production has also increased due to the rise in the want for products not contaminated by chemical processing.

The consumption of olive oil comes with it numerous health benefits that have served the Mediterranean diet, in particular, well for hundreds of years.
Cancer prevention. Although it’s not altogether clear as to what part of the olive oil plays the largest part in the fight against cancer, research is starting to show that this oil certainly plays a role. In fact, various studies have shown that a certain fat in olive oil can protect against bowel and rectum cancers. Cyprus has a longstanding tradition of winemaking, and produces a wide variety of wines ranging from the ancient sweet-tasting Commandaria, to more well-known global varieties, including Chardonnay, Cabernet Sauvignon, and Shiraz. While the island’s wine industry has been thoroughly modernized and greatly expanded, there are still many villages that produce wine in the old traditional ways, and these make for a fun day of exploring! So, jump into your car and let’s take a trip through the Cypriot countryside, along slopes of shimmering green vineyards, cobbled streets and nature trails, for a chance to discover the island’s glorious winemaking history – and sample some tipple along the way.

island to choose from, whether you are a connoisseur, or simply enjoy the pleasure of a drink once worshipped as the ‘nectar of the Gods.’ The first route is aptly named after the Limassol Wine Villages, or ‘Krasochoria.’ The crown jewel of the Cyprus wine routes, this itinerary boasts the highest concentration of wineries on the island and takes you through about twenty villages, some of which will give the impression of a journey back in time. The second route is the Commandaria Route, dedicated to the amber colored sweet dessert wine known as Commandaria. The oldest wine in the world still in production, can remarkably be traced back to 800 BC. Fourteen Commandaria-producing villages can be found on this route, offering your tastebuds ample opportunities to sample this delicious nectar. The final two routes are for those of you who enjoy taking the road less traveled. A breathtaking journey through the winding villages of Paphos, down the rugged coastline and across unspoiled green landscapes, where you will see parts of Cyprus you never knew existed and sample some delicious local wine varieties.
LIMASSOL WINE VILLAGES
On the Limassol – Paphos highway, take the exit for Avdimou and embark on a scenic route through 20 charming, unspoiled villages, with 16 wineries among them. You will notice the dry climate, with a specific geology that is conducive to the local grape varieties Xynisteri (white) and Mavro (red), as well as certain imported varieties, including Cabernet Sauvignon, Mataro, Grenache and Syrah. The villages include Pachna, Agios Amvrosios, Malia, Arsos, Vasa, Omodos, Mandria, Kato Platres, Lania, Doros, Lofou, Ayios Therapon, Vouni, Pera Pedi, Erimi, Kolossi, Anogyra, Kantou, Pano Kivides, and Souni – Zanakia. Walking in Arsos Village
Following the winding mountain roads into higher altitudes, you will reach the picturesque villages of Kato Platres, and a little further up, Pano Platres. Not too far off is Lania, a well-preserved village of narrow cobbled streets where you can peer into beautifully restored traditional homes with large courtyards. The old wooden wine press is still on display for visitors all year-round. Finally, don’t forget to make a pit-stop at the Cyprus Wine Museum in Erimi to cap off your journey through the island’s winemaking tradition, from its humble beginnings to the powerhouse that it is today.
COMMANDARIA VILLAGES
This route takes you along a steady rising road that gives way to an expanse of countryside, through 14 Commandaria producing villages. At an altitude of 500 to 900 meters, these villages are surrounded by vineyards of indigenous red Mavro and white Xynisteri grapes. These grapes are the backbone of this deliciously sweet wine. The Commandaria villages include Kolossi, Erimi, Monagri, Agios Georgios, Silikou, Doros, Lania, Trimiklini, Agios Mamas, Kapileio, Zoopigi, Kalo Chorio, Agios Pavlos, Agios Konstantinos, Louvaras, Gerasa and Apsiou.

So, jump into your car and let’s take a trip through the Cypriot countryside. Highlights Stop by the Kolossi Castle in the village of Kolossi. This fortress dates back to the age of the Crusaders, and the Order of Knights of St. John, who were stationed there, were early adopters and developers of this sweet local delicacy. In fact, they gave it its name that it still proudly carries to this day.
Highlights In Pachna you will see two-story houses built with characteristic limestone blocks nestled amid the vines and carob trees. Visit the village winery, or stop for a refreshment at the local coffee shop. Malia village has a long history of wine-production, and its winery reopened its doors in 1996. Many of the village’s well-preserved stone houses still have stills for making Zivania, a local spirit distilled from grape must. The village of Arsos is perched on a steep, chalky hillside. Take some time to meander through its narrow lanes, and visit the local olive press, mineral water springs, and the folk art museum.
Along the route you will find the Kouris Dam, the largest man-made lake in Cyprus, and an important wetland of great ecological value to the island. The Commandaria Villages have very limited levels of rainfall and overall dry growing conditions. This, combined with the high altitude and unique soil is what gives Commandaria its characteristic flavor and aroma. Don’t miss the Commandaria Museum in Zoopigi village for some in-depth knowledge – and a few samplings – of this delicious wine.
Kolossi Medieval Castle
Vasa is a major wine producing village, and you will notice that many of the red-roofed, whitewashed houses still display their large, clay wine jars (pitharia) and Zivania stills in the garden. The Vasa Winery is located in a beautifully restored stone building, and well worth a visit. Omodos is the Cyprus Wine Village Capital, and visitors can enjoy wandering its quaint streets, taking in the medieval wine press, or ‘Linos,’ the handmade Papilla lace made by local women, and sampling the delicious specialty ‘arkatena’ bread, baked with chickpea fermentation.

Highlights This route is mainly located along the Akamas peninsula, an area unlike any other on the island. With its distinctive geography, diverse morphology, and untouched wildlife, this route is truly a treat for the eyes and ears as well as the taste buds. Take a fascinating journey along the Diarizos River to discover the lesser-known wine-producing region of Diarizos Valley, located east of Paphos. This route will take you through 14 hilly villages, and two noteworthy wineries that place the area firmly on the Cyprus wine map. The Diarizos Valley Wine Route includes Acheleia, Kouklia, Nikokleia, Choletria, Stavrokonnou, Kelokedara, Salamiou, Mesana, Arminou, Filousa, Agios Nikolaos, Praitori, Kedares, Agios Georgios, Mamonia, and Fasoula.
Highlights The villages across the Diarizos Valley lie at a lower altitude than other main winegrowing areas. This means that the wines produced in this area have a distinguishing flavor and aroma that set them apart from other local wines. Astute viticulturists will be able to identify 18 different types of vines. The predominant variety is the local Mavro (red) grape variety. Make a pit stop at the Nelion winery in the village of Pretori, which offers wine tasting sessions as well as a tour of the winery and vineyard. The second winery along the route, Lagria winery, is located in Salamiou village, and they offer four wines of the Xynisteri, Cabernet Sauvignon, and Mavro varieties.

You’ve probably consumed your fair share of beer, and most likely enjoyed most of them too. The question is, how well do you really know what you’ve been consuming? With all the varieties of beer out there, it makes sense that not everybody can identify what differentiates one beer from another, particularly when they’re all made from pretty much the same basic ingredients. The term beer is a particularly generic word encompassing all fermented malt beverages. So, if you’re a beer enthusiast, here’s what you should know.
BEER CAN GENERALLY BE CLASSIFIED INTO TWO CATEGORIES, ALE OR LAGER
Ales originate from England and have been around since antiquity, a lot longer than lagers which have only been around for a few hundred years, and originate from Central Europe. Ales are brewed at room temperature for a minimal period of time, using a top-fermenting yeast (a yeast that floats on top of the beer). Lagers on the other hand are brewed at colder temperatures for a longer period of time using bottom-fermenting yeast.
Where lagers are usually more mild or fruity flavoured, and lighter in colour, ales tend to be more bitter and a darker colour. Ales can be further broken down into other categories of beer style such Pale Ales and Brown Ales, and lagers into Pilsner and Dark Lagers. A third classification of beer exists as well, the hybrid beer, which is more or less a blend of ale and lager.

A particular style that can transform a space entirely. Decorating your home to your liking lies in the design detail. So we’ve accumulated some home decorating tips and ideas that can be applied to your entire house, and integrated into every room in the way that you want. CHOOSE YOUR COLOUR If you’re planning on redoing your entire home, the first step is picking a colour scheme that can then be applied to each room in one way or another. Make sure that what you select isn’t too harsh, aim for neutral colours that are easy on the eye, and which are also gender neutral. BE MINDFUL OF COMFORT We all want that one piece of furniture that looks gorgeously chic. Make sure that what you end up with however is as comfortable as it is beautiful. If it’s a couch you’re after for
instance, test out the seating for comfort, and measure it for size. A private initiative charity, ‘For the Love of Life’ Foundation was created by Aphrodite Hills Hotel by Atlantica Hotels and Resort to provide economic and material assistance to people in need in Cyprus, so as to alleviate poverty and suffering, focusing on quality of life. THE VISION The fundamental basis of establishing the Foundation was to help the less fortunate members of the local community, placing them at the centre of the organisation’s mission. This is evident in the Foundation’s philanthropic initiatives, which place the needs of the suffering at the forefront, offering support and providing much needed emotional strength and respect.

IMPLEMENTATION Aphrodite Hill’s decision to create an autonomous, nonprofit charitable foundation was based on the belief that it would eventually have a significant impact on society through continuous social and cultural activities that support the common good with targeted actions.This belief stems from the continuous exercise of human values and is based on charitable offerings of the founding members of the Foundation. Through a variety of social and cultural activities, the Resort has been able to raise and provide much needed charitable and financial support to the Foundation, thereby providing the means for donations to be made to non-profit organizations.
Unfortunately, the situation in Cyprus leaves a lot to be desired, for as all other European citizens reap the benefits of having a national health system in their country, Cyprus does not currently have a National Health System in place. Thus, such systems are able to provide the population with the screening programs offered at our Center. National screening programs are non-targeted tests and rely on screening the whole (asymptomatic) population. It is of paramount importance therefore, that such programs are offered for free so as to maximize coverage.” Are there limitations in Cyprus regarding the provision of optimum support and counselling services to families with children afflicted with some form of mental disorder? “Basic care and rehabilitation for people with special needs have been provided for by the Theotokos Foundation since 1969 in the form of day care and boarding.
CENTER FOR PREVENTIVE PAEDIATRICS In 2017, Aphrodite Hills, through the Foundation, decided to lend its support to the Limassol based Center for Preventive Paediatrics (CPP), a not for profit organization implementing ethnic prenatal and neonatal (screening for metabolic disorders and hearing loss) screening programs to the entire island of Cyprus. The Center has contributed to the prevention of many new cases of intellectual disability and has been a pioneer in the application of universal prenatal and neonatal screening programs. All programs are offered free of charge to the whole population of Cyprus. Renowned paediatrician Dr Argyris Argyriou has been the Chairman of the Center since 2006. We spoke with Dr Argyriou to learn more about the Center’s immediate needs and its continued efforts towards establishing medical programs for future generations. What are the current more pressing needs of the Center in terms of diagnostic facilities and essential laboratory equipment? “A large proportion of the Center’s annual budget, estimated at €640,000, is spent on the purchase of diagnostic reagents used for our Prenatal and Neonatal Screening Programs.
Today, the foundation continues to provide shelter, day care, integrated housing units and special preschool education amongst counselling and support to the family. It goes without saying that improvements can and always should be made to provide the best care.” What immediate challenges does your Center face that need to be addressed for its overall objectives to be properly met? “It seems that more solid awareness campaigns aimed at the general public, for the provision of their monetary support, are required so as to guarantee the security of the well-established national screening programs and face the challenges of expanding our screening platform.” One would be hard-pressed to not admire and respect the continual efforts and determination of the Center in their endeavour to provide the entire Cypriot community with essential prenatal and neonatal services, as well those services pertaining to mental health care. The Foundation’s aspirations of helping children and their families are aligned with the Center’s objectives and we look forward to providing our assistance in raising the much-needed funds the Center requires to continue to do the amazing work that they do. INTRODUCTION
The EU General Data Protection Regulation (“GDPR”) imposes a number of enhanced obligations on data processors and data controllers, with which businesses shall comply. Failure to be in compliance with the GDPR could lead to fines up to 4% of the annual worldwide turnover or €20 million, whichever is higher.
SCOPE
The GDPR increases the territorial scope of the applicable data protection law and applies not only to controllers but also to processors. “Data controller‟ refers to a person or organisation that decides how and why personal data is processed whereas “data processor” concerns any person or organisation (not employee of the data controller) that process personal data on behalf of the data controller. In particular, with the new regime a “data processor” may now be directly liable to sanctions (Article 83) and may also face private claims for compensation brought by individuals (Article 79). In general, the GDPR applies to organizations having EU “establishments” and processing data in the context of their activities. The notion of “establishments” is very wide and encompasses any real and effective activity-even a minimal one through stable arrangements in the EU irrespective of whether the data processing takes place in the EU or not.
PERSONAL DATA
Personal data is defined as “any information relating to an identified or identifiable natural person (“data subject”)”. The concept of identified or identifiable has now been broadened from the basics (e.g. personal details such as ID and home address) to include things like location data, online identifiers (e.g. IP address, cookies) or other factors which may identify a data subject.
PRINCIPLES
Data protection principles are not new per se but the GDPR has now come to strengthen them through the introduction of the principle of accountability. Under the GDPR processing not only needs to be fair and lawful, but must have an identifiable purpose and include personal data which are relevant and not excessive (e.g. principles of necessity and proportionality of the processing in relation to the purpose). Moreover, data controllers are now obligated and responsible to demonstrate how they comply with these principles.
DATA PROTECTION IMPACT ASSESSMENT (“DPIA”)
Article 35 of the GDPR introduces the concept of the DPIA, a process by which controllers shall carry out an assessment of the impact of the proposed processing on the privacy rights of individuals where the processing is likely to result in a high risk to the rights and freedoms of “data subjects”. The GDPR expects companies to formulate measures to address such risks.
DATA PROTECTION OFFICER (“DPO”)
Where processing is being carried out by (a) a public authority (b) by a controller or processor whose core activities consist of processing operations requiring regular and systemic monitoring of data subjects on a large scale, or (c) by a controller or processor whose core activities consist of processing on a large scale of special categories of data or data relating to criminal convictions, then such controller or processor must designate a data protection officer having “expert knowledge” on data protection.
DATE OF COMING INTO FORCE
GDPR shall be in effect from 25 May 2018, therefore persons or organisations that process personal data shall act imminently to ensure compliance with its provisions before the said date.

THE CENTER OF TOWN
At the turn of the 20th century in Greece and Cyprus, the local ‘Pantopoleio’ was the meeting point for all the town residents. The word itself literally translates to ‘shop that sells everything,’ and it was the sole retailer for all residents’ daily supplies. Mothers would wrangle up unruly children and march to the pantopoleio, shopping list in hand, to secure the family’s weekly groceries. There was always a friendly face behind the counter, one who knew each customer by name, who would often wink at the small children playing hide and seek among the large bins of legumes and shelves of washing powder and soap. Older children would visit, with their few coins clutched tightly in hand, to buy their weekly ration of sweets and lemonade. Outside, dice would rattle against backgammon boards, as men

Once found in every neighborhood, today the ‘pantopoleio’ has gone the way of the blacksmiths, the tailors, and the milliners, taken over by gleaming new supermarkets and shopping malls. However, they are still found in many villages, selling all basic necessities, from foodstuffs to cleaning materials and general household items, and usually flanked by the neighborhood coffee shop or ‘kafeneio.’

THE HISTORY
The history of Zivania is one that dates back to the 14th century, at a time when Cyprus was under Venetian rule. Although there isn’t much by way of recorded history through the years, evidence of its production through British and Ottoman rule is referenced by writers of that period, in particular British writer Samuel Baker, in his book “Cyprus, as I Saw it in 1879”. Prior to this, in the late 18th century, the Abbé Giovanni Mariti also makes mention of a drink with the name “Aqua Vitae” in “Wines of Cyprus, by Giovanni Mariti (1769)”. Mariti seemingly describes this alcoholic beverage in a way that perfectly resembles what we know as Zivania today.
THE PRODUCTION PROCESS
Frequently referred to as the national drink of Cyprus, Zivania is still produced in much the same way it was 600 years ago. This authentically Cypriot brandy is made from pomace - a combination of grape residue (including pulp, stems and seeds) and local dry wines, in particular those produced from the indigenous Xynisteri and Mavro grapes which grow on the southern slopes of the Troodos Mountain range. This pomace-wine blend is then distilled in a distillation apparatus called the ‘kazani’. Various qualities of Zivania are produced, depending on the pre-distillation mixture. This mixture is comprised of wine only; a mixture of wine and pomace; or a combination of pomace with water and weak Zivania (otherwise known as porakos).
HOW ZIVANIA IS ENJOYED
There are a myriad of ways to consume Zivania, be this on its own, or as the perfect accompaniment to a selection of mouth-watering traditional Cypriot appetisers such as lountza (smoked loin), loukaniko (smoked sausage) and chiromeri (smoked ham).
OTHER USES
Aside from being enjoyed as a drink, there are a multitude of other uses for Zivania. Treating toothache or wounds, massaging aching muscles, a cold remedy, or simply to warm up in the iciness of winter, these are some of the ways that Cypriots utilise Zivania.
THE ARCHAEOLOGICAL ORIGIN FROM THE VILLAGE OF PAPHOS
Some say, that the first references to the drink can be found in Homer’s texts, specifically Homer’s Odyssey. When Odysseus passed through the island of the Laestrygonians, its giant inhabitants, under the influence of Zivania, destroyed his ship. The ancient Greek text states in particular: ” […οἱ δὲ ἦλθον υπο τὴν ζίβανον καὶ βάλλοντες πέτροις τὰ μὲν σκάφη κατέαξαν, αὐτοὺς δὲ ἐβίβρωσκον” * *they came, and they were under the influence of zivania and then started throwing rocks and destroyed their ships and then started eating them”. In later references, we encounter Zivania in excavations which took place outside the village of Panagia in Paphos, dating between the 5th and 6th Centuries AD. It is worth mentioning that ancient civilizations used grapes that grew only on limestone rocks.

While friends of mine were into paintings, I somehow felt that the real beauty of owning a rare and magnificently designed car was the fact that you can use it. Some of the more jaw dropping highlights include the 1930 Mercedes Benz SSK ‘Count Trossi,’ a roadster worthy of royalty. In fact, it was designed by Ferdinand Porsche and commissioned by Italian industrialist and racer Count Carlo Trossi, who campaigned the car in the Mille Miglia as well as other competitions. With a supercharged straight-six engine,
capable of up to 300 horsepower in the 1920s, this could very well be the first blueprint for the Batmobile. The star of the show in Ralph Lauren’s garage has to be the 1938 Bugatti 57SC Atlantic Coupé, the only one of two originals ever built. The rarity of this car puts it somewhere between engineering marvel and fine art, and it is considered to be the pinnacle of the Bugatti family’s contribution to the twentieth century automotive industry. A piece of art deco on four wheels, this car is estimated to be worth a cool $40 million. Another literal winner in Ralph Lauren’s collection is the 1996 McLaren F1 LM. The king of the supercars in the ‘90s, the McLaren F1 raced to victory, taking four of the top five spots at the 1995 24 Hours of Le Mans. To celebrate its success, McLaren built five unique versions of the F1, with the added name LM, for Le Mans, painted a showstopping Papaya Orange in honor of the racing colors of the late Bruce McLaren. One of these $15million-plus cars rests today in its place of honor in the Ralph Lauren garage.

Golf clubs also have additional rules about the specifics of golfing etiquette, namely the style of clothes worn out on the Golf Course. While golfing fashions have evolved over the years, strict adherence to a particular dress code has always remained. For instance, gentlemen are required to wear collared shirts and conservatively tailored shorts. For ladies, dresses, skirts, slacks, golf shorts, blouses and golf-specific t-shirts are all considered appropriate. Denim, t-shirts, sweat pants or other athletic wear is generally not permitted anywhere on the Golf Course.
