Finding success in Goa “I strongly believe in the idea of simplicity,” mentions Raul Prazeres, while extolling the importance of simple living, based on relationships rather than materialistic things. “It’s important that no matter what your station in life is, you should be able to relate to your old friends,” he adds. This coming from someone who, through his years has donned so many caps in the fields of event management, public relations, real estate, constructions and hospitality seems a total contradiction, but one Raul proves easily through his friendly, open personality and his ability to stay rooted. “Coming from Dar-e-Salam in Africa to Goa, was a big change, new schools, new friends and I spoke with an African twang which was not so easy for the people in Goa to get used to,” he recollects of his move back to Goa when he was ten years old. 14

With a varied educational background of zoology, personnel and entrepreneurial management, Raul took his first steps into business while working with an event company called Wave Promotions back in the 80s. Of the many events the company planned and hosted, it is the ones with a social cause that he most proudly recollects. “We hosted a concert called Drug Aid. This was the first time in Goa (in the early 1980’s) that a concert of this nature was held. Six music bands from Goa and one band from Bombay, Drug Aid was a concept to help rehabilitate those suffering from drug addiction in Goa where proceeds went to the Drug Rehab Center in Duler.” Wave Promotions then went on to host an excellent New Year’s show at the Dona Paula Jetty. Again, it was the first of its kind, dancing with the stars and brining in the New Year’s morning with the sun rising… one could not ask for a better way to usher in the new year.” Following a stint at Taj Aguada as a public relations manager, Raul went on to work with the Xavier’s Institute for the Handicapped in Old Goa, in its management department.

With 250 buyers from all over India and 100 buyers from 28 countries, the Goa International Travel Mart kicked off to a grand start on April 2, 2014. At the GITM 2014 opening ceremony Goa Tourism launched the new Goa Tourism website. Following an evening of music, dance performances and primary networking, the first day of this traveltrade business platform kick started at Dr. Shyama Prasad Mukherjee Stadium with travel and tourism related companies from around Goa and across the country set up stalls where one-on-one interactions forged new relations with buyers from across the global travel arena. 16

The Goa International Travel Mart was held at Dr. Shyama Prasad Mukherjee Stadium, where a collective mix of air charter companies, hotels & resorts, casinos, wellness spas, tour operators, travel agents and tourism organisations set up their own information kiosks with representatives sharing trade information and forging new connections within the travel community. Goa Tourism set up a large interactive space with tourism authorities participating in interviews and discussions while sharing their plans for the future of tourism in Goa. Aside from Goa Tourism, Karnataka and Maharashtra Tourism also set up shop at the GITM. Adventure companies, Kayaking Goa and Goa Rafting shed light on some of their interesting packages, while boat and yacht companies Champions Group and CruzeCraft Leisure showcased some of their sea vessels while expounding on the various luxury trips possible along the Goan coastline. Starwood Hotels & Resorts showed a great promise of bringing their internationally recognized luxury hotel brands to Goa in the near future. Hotels, especially the ones in Goa has a strong presence at the GITM with known brands such as Deltin, Royal Orchid, Ramada, The Crown and Country Inn, among others. Commenting on this year’s efforts for the GITM, Travel and Tourism Association of Goa President Francisco Braganca stated, “Buyers far out number vendors at this year’s event. I can see business happening all around. There are a number of new entries into the market which shows progress.”

katerina Belyakova, the brains behind the Russian Information Centre in Goa, chats with Wo’Goa about the ways the centre has been able to aid Russian tourists. Why was the Russian Information Centre (RIC) started in Goa? In India, Goa receives the highest number of Russian tourists each season. The RIC helps these tourists have a happier and safer stay in the state. We started the ROC back in 2013. Victor Albuquerque, the Honorary Consul doesn’t speak Russian and the Consul of Russia is stationed in Mumbai so they can’t do much from there. I work as General Manager of Tara Travels which handles tours and reservations of charters from Russia.

the locals and Russian tourists. Why is this? While Russia was part of the USSR, education was very controlled. Outside influenced were checked at every corner. For a long while, English was not taught in schools. People of that generation, don’t speak English. It is only now, with the recent generations that English is taught. And in many cases there is not much of a chance to practice what is learned in conversations, back in Russia. So when Russian tourists come down to Goa they cant communicate well what they need.

But like any tourist country, if you are getting a large number of tourists from a specific country coming down, the businesses of that place should be equipped to understand the tourists’ language. Like any other information centre we help tourists with the basics about travelling in Goa. We offer them useful tips about customs of the locals so that they are sensitive to the Goan culture. Aside from general information, we also help tourists who might find themselves in some kind of difficulty. One of the most common problems is loss of Passport and other documents. In that case we help them fill out their applications and have them send it to the Consul in Mumbai. The new documents come directly to Goa from there. Another common problem is of accidents. When Russian tourists meet with accidents and are taken to the hospital they often can’t explain their problems properly to the staff due to the language barrier. In other cases they don’t have medical insurance and have to pay for the treatments, which they might have a problem doing. Even in this case we help them get the proper treatments and sort out the paperwork. In some extreme cases we also offer advice and assistance in case of deaths. There seems to be a large language barrier between www.wogoa.in

the Russian tourists. In the recent past, there have been many incidents of fights among the Russians and the locals. What is the reason for all these problems? Firstly, it’s the language barrier. Secondly, we Russians are a bit hot headed. For example, we are not used to slow service at a restaurant and can get pretty offended in that case. Also, foreign tourists, especially Russians are picked on a lot by the cops or in some instances by people posing as policemen. They pull the tourists over and harass them for money. What advice would you give to Russians who plan on coming to Goa for a holiday? Get copies of all your documents made… your visa, passport, driver’s licence and all other important documentation. Another thing I advise all future tourists and also wish the tour operators would stress on – Read up a little about Indian culture before coming. Find out what type of clothing is suitable in public and what is frowned on. It would make your experience in Goa a much better one. And if possible, carry a Russian to English dictionary!

Taking the NH 17 to South Goa

ne of my favourite designs of the Goan house is the one with the two semi-octagonal wings, like huge bay windows they surround the entrance porch. The colourful facades, the gorgeous window designs, the huge roofs under swaying palm trees, what a feast for an architect’s senses! So it was decided to go for a weekend trip to South Goa. But then I wonder what happened to a once lovely Goan country side? Did Saruman and his evil hordes escape from the Shire and continued the devastation in the name of progress (at what price) and prosperity (for a few)? Where are these adorable Goan houses gone? Nestling under palm trees, with their broad verandahs, the inviting balcaohs (no time to talk nowadays and by the way my favourite TV show starts in a minute). So less of them stand out like endangered species in a swelling sea of banality. Is it the yearning to be modern, show off to the neighbour while copying the same characterless design? Where is the art and ability gone to build something like the old Goan House? Somebody asked me once, what do you think as a foreigner living here for years now, are we Indians simply not able or not educated enough to do better? Being in my age and able to look back to more than 40 years working in the architectural field, I can say it has nothing to do with India or with education or a lack of artisan abilities. Do you think the craftsman and laborers working on construction sites in the bygone times were in an intellectual way ahead of their time? What made them able to do so was the traditional skills learned and carried on from one generation to the next to build for the common men, buildings to live in and for the larger temples and palaces there was a master or a group of masters to coordinate the same. Look around and the upcoming of the ordinary and ugly is visible all over this planet, you find it literally everywhere, it spread like a disease. The catch here is that clinging in a reactionary way on tradition, will reproduce an inbreed culture only. To make things clear I am not talking here about razing the Old for a better New World. My demand is, keep the heritage buildings, villages and towns intact and well-maintained and add to them in a sensitive manner neighbour buildings. Why not thinking of village or town as a family where you don’t kill the grandparents because you are convinced their bestbefore-date has expired? Instead see what the climate and the surrounding has to offer and adopt it. Basically speaking use the best out of the traditional skills

I know it is a corny phrase but there is really no need to invent the wheel again. • Have large roof overhangs to shelter from the monsoon rains. • Have open but shaded places instead of A/C shoeboxes. • Lower the heights of buildings to max. 3 floors (more than half of the newly built apartment blocks aren’t occupied permanently anyways). • Keep God given nature in mind as an advantage and not as an unnecessary hindrance, blocking the cool breeze from the sea and vice versa blocking the rain water drainage from flowing back into the sea is simply not a good design, if not to say a dangerous one. • Reduce the sealing of soil and give trees and plants a place to exist. Everyone can experience the drop of temperature when passing the open fields between Tonca and Adarsh circle. The need for density and highrise buildings is mostly a hypothetical creation of shortsighted money orientated business. Don’t fall for it. I am neither putting a case for an impossible “Back to Nature” nor an anachronistic repetition of traditional forms and shapes. The first one is since Rousseau coined it first, an illusion and doesn’t bring the development of men and earth an inch forward. The second one will show romantic replicas, even when they are perfectly designed and executed but still gives you the feeling of living in a theme-park and therefore gives also no gain for progress. Something new has to come (not only in architecture) even if it is confusing or funny to look at and not at all perfect from the start. This brings me back to my trip to South Goa. See for yourself the way Pantha from Bakti Kuthir in Palolem designed the beautiful airy cottages and then you have a look at the cookie-cutter-huts strewn along the beaches. Or if you want to look beyond the horizon than google for César Manrique’s work which he has done in Lanzarote, one of Canary Islands. Heavily depending on tourism, Goa can learn enough from other examples to alter the course. A rampant sell-out of Goa ends otherwise with a “Lost Paradise”. 27

Old Goa Make this trip to Goa an educational one with a day tour of Old Goa – home to a collection of the state’s breath-taking Christian architecture. Little known to most people, this UNESCO World Heritage Site is situatded 9kms outside Panaji and was once a flourishing city built during the time of the Sultan of Bijapur. Old Goa then went on to become the capital of Goa during the Portuguese rule, until the 18th century when a bout of plague drove the inhabitants to Panjim. What remains of the old city is a sprawling collection of basilicas, monasteries and convents, the most popular of which are Se Cathedral (the seat of the Archbishop of Goa), the Church of St. Francis of Assisi, the Church of S. Caetano, and notably, the Basilica of Bom Jesus which contains the relics of Saint Francis Xavier. While here, don’t forget to visit the Museum of Christian Art, at the annexe to the Santa Monica Convent. While a large number of Christian devotees make sure to visit the area, Old Goa, with its well-manicured gardens and lawns, marble statues and Portuguese-Manueline & Baroque architectural style and makes for a great historic as well as artistic learning experience. Enjoy a mix of adventurous hiking and historic learning with a visit to Goa’s popular forts. Spread out across the state, these stone marvels relate back to the time of Maratha rulers and later on, the Portuguese colonists. Strategically built along Goa’s coastline, they tell the story of battles gone by, ones lost and won. Fort Aguada: The most popular fort in Goa, built on the cliff facing Sinquerim Beach, Fort Aguada was meant as a Portuguese defence against the Dutch and Marathas. It also played a significant role in protecting the shipping interests of the Portuguese in the North. Aguada, which means water, got its name after the fresh water spring in the fort. Part of the fort complex includes the Aguada Lighthouse, jail and grounds around. Today visitors can easily hike to the fort and enjoy the scenic view from above.

Chapora Fort: Located 10km from Mapusa, the red-laterite bastion, was built by the Portuguese in 1617 on the site of an earlier Muslim structure. Intended as a border watch-post, it fell to various Hindu raiders during the 17th century, before finally being deserted by the Portuguese in 1892.alt Today, the fortress lies in ruins, although you can still see the heads of two tunnels that formerly provided supply routes for besieged defenders, as well as a scattering of Muslim tombstones on the southern slopes of the hill, believed to be relics of pre-colonial days. However, the main incentive to climb up here are the splendid views of nearby Anjuna and Vagator beaches.

The Quan Spa has five treatment rooms. There are four individual treatment rooms and a couple’s treatment room with a bath tub. All the rooms are attached with a relaxing sofa, shower cubicle and rest rooms. There is also a steam room, chilled showers and a Jacuzzi; a brand new Fitness Centre (gymnasium) and a Kids Club as part of the recreational facilities. The fundamental concept of Goa Marriott’s Quan Spa is based on the five great elements – Earth (Ira), Water (Jal) Air (Vayu), Fire (Tejas) and Wind (Akash). Hong Kong based Barry Withington of Island Design Studio Ltd. is responsible for the creative thought process and design with taking into account Marriott International’s global spa standards and infused a touch of the local culture. This theme is predominant in the décor of the spa and the five treatment rooms are also named after these elements. An attempt to create positive energy in the treatment rooms by having Tibetan singing bowls and raw crystals placed in strategic lcoations of the treatment rooms. Elemental based unique music for each treatment room and public areas like the relaxation lounge is the other signature feature. Natural materials have been used where ever possible and the colours are neutral, calm and subdued. Fabrics have subtle floral or leaf patterns, or simply rely on colour and texture to give a natural feel. A combination of light and dark timber has been used throughout the spa, with natural stone counters and ceramic tiles in off-white and neutral tones. The color palette is largely earthy; while contrasting colors feature in some areas, the treatment rooms have neutral colors for a soothing effect and a

As for material, wood predominates, again to broaden the earthy feel while the furniture is finished in leather and natural fabric. There is now an expanded reception area with lounge seating and several retail displays showcasing Marriott’s unique spa product range. Existing changing areas have been fully renovated and upgraded to now include steam rooms, cold drench showers and an increased number of lockers. A waiting area where guest are welcomed at the beginning of your spa experience with a welcome drink and a wet towel as well as a relaxation lounge where one can complete a spa experience amidst tasting detoxifying teas. ‘Goan Magic’ is the signature treatment of Quan Goa. Western, Indian and Oriental methodologies come together to synthesize this signature massage. With long loopy movements, the masseur expertly channels toxins and other harmful elements out of the body. Body and mind strike a fine resonance induced by the smooth application of a hot herbal compress and oil, to attain the state of wellbeing. The Goan coastline is dotted with numerous beaches, all with their own unique charm. While the crowded and shack dotted sands of Calangute and Baga might be the most popular beaches in North Goa, the sea itself can be a bit troublesome. The favourite family friendly beach recommendation is Mandrem Beach, with it’s gently sloping coast, the waves are mild and safer for smaller children. 350gr of fresh yellow fin tuna, diced 90gr diced shallot 1 medium size pickled cucumber, diced (around 50gr) 50gr capers, roughly chopped 2small cloves of garlic, grated 1 large green tomato, diced same size as tuna Roughly chopped fresh dill, chives, parsley – add as much as you like, I like a lots of fresh herbs in this dish 65gr of Japanese mayonnaise, if you can’t find it in the market use normal mayo but not Hellmans, it’s too sweet 10ml fresh lemon juice Salt, black pepper to own liking 4 slices of brown or rye bread Just mix everything together and serve with bread. It’s delicious and fresh.

Slow cooked shoulder of lamb

Recipe Serves Four The Lamb 1 whole shoulder of lamb (around 3kg) 2 carrots, 4 celery sticks, 2 brown onions with skin, 2 bulb of garlic, 4 large tomatoes, 8 bay leaves, 10 black peppercorns, 1.5ltr of water, 150ml red wine - merlot, 20ml pomegranate juice plus some molasses, 70ml corn oil and Salt & black pepper. Set the oven to 145C. Take large frying pan, season the lamb shoulder with salt and pepper, add oil to heated pan then cook lamb shoulder all round for aprox 1min on each side. 102


curried parsnip puree, spinach and light pomegranate jus Roughly chop all vegetables and put them in roasting tray together with lamb. Add 1.5 ltr of water, and cover it, very tight, with aluminum foil. Place the tray in the oven and leave it for 10hr. Tray has to be covered very tight so lamb will cook in own juices and aromas. After 10hr lamb will very easily fall from bones, will be very soft and juicy at same time. In the roasting tray you will have tasty lamb jus, strain it and keep it. In the sauce pan put red wine and reduce it to half, add lamb jus and pomegranate juice. Continue to cook it until the sauce becomes slightly thick. Once reduced strain it again and add molasses. For parsnip puree and spinach 1kg parsnips 900ml milk 100ml veg stock 110 gr butter 8cardamoms 1tsp curry yellow curry powder 1small cinnamon stick 3 garlic cloves 10gr ginger root Salt, white pepper to own liking Peel parsnip and cut into same size chunks. Soak them in the milk together with all spices, garlic cloves and ginger for at least 2hours. After 2 hr bring it to the boil, turn the gas down and slowly cook it till parsnip is very soft, aprox 25 min. Remove parsnips from milk, strain the milk and keep the liquid. Using a hand blender, start mixing the parsnips slowly adding milk and butter and veg stock. It should have a very silky consistency, almost velvet like. Season with salt and white pepper.

Spinach For 6pax 1kg of fresh spinach, washed and stalks removed 40ml corn oil 50gr butter, cut to small pieces Salt, white pepper Take large frying pan and make it hot, add oil on the pan and spinach. Mix the spinach continuously and add butter piece by piece. Cook it for aprox 2min. take the spinach of the pan and squeeze the excess water. Season it and serve immediately. 103


Apple Miso ‘Pie’ Recipe Serves Four Apple miso ‘pie’ Makes 10 200gr sugar 100gr butter 50gr miso paste 5gr sea salt 1400gr fuji or green apples, peeled and diced 400ml cream 190gr egg whites 270gr icing sugar 90gr flour plain 230gr almond powder Start with making filing for the pie. Combine butter and sugar together in the pot and slowly cook it till has golden brown colour and toffee consistency. Add miso paste, sea salt and cream. Divide into two and set aside. To one half add the diced apples and cook it for an additional 2 min, that’s your filing. After making the sponge just mixe together the almond powder, icing sugar and flour. Mix the white egg until they stiff and fold it with all the powder which you made earlier. In the mould put the first layer of the almond paste on the bottom, then layer it with apple and caramel miso and cover it with the almond paste, put them in the oven for 20 min at 175 degrees. Serve it warm with warm miso toffee and vanilla ice cream.

The overall feel of the place is relaxed and easy-going. And the pricing of dishes is equally easy on the pocket. Offering a varied menu of a little bit of everything, one can opt for Lobster Thermadore (price on request), a Chicken Biryani (Rs.130) or go local with a Pork Vindhaloo (Rs.100). We tried out the Beef Chilly Fry (Rs.90) and the Golden Fried Prawns (Rs.160), both which were made with fresh produce and cooked to perfection. One can easily imagine spending the evening at The Hangout, relaxing in the hammock with a Goan Sunset cocktail (Rs 200) or unwinding with friends while a musician croons out the classics nearby. Good relaxed ambience along with value for money food and drinks make The Hangout the sort of place that becomes a regular pitstop for those visiting Siolim. Now in its second year, Sunny is hoping to include thematic performances like open night poetry slams and stand-up comedy acts. We’re definitely looking forward to more lazy days at The Hangout. More than just Calamari Its takes a lot of confidence for a restaurant to name themselves after one specific item on the menu. It signifies that they are sure that the dish prepared in their kitchen is of the highest rating. In the case of Calamari on Candolim Beach, this holds very true. It’s an obvious choice – the calamari (squid), whether batter fried or served in a thick masala gravy, the name of the restaurant itself prompts the ordering of this choice seafood. So on our visit to the beach restaurant we started off directly with a plate of batter fried squid served with a generous portion of dip. A few minutes after our order reached the table, we asked for another plate of these crispy fried squid rings. It’s obvious that the fish that owner Reggie D’Souza serves is soon enough after leaving the basket of the fishwives. It’s fresh, well marinated and cooked to the right level of tenderness. Aside from the calamari preparations, the menu is made up of the typical mix of Indian, continental, Chinese, Goan and barbeque. But like any discerning gourmand, one should know to choose dishes that are typical of a certain restaurant. While the place has been known to serve a variety of tasty Indian dishes, we opt to stick to either Goan or Continental.

Calamari’s chefs clearly are well-versed with their seafood and cook it brilliantly. Ask for the day’s catch or simply snack on juicy rava fried prawns and mussles. As for Goan, Calamari serves up pork vindahloo, made less spicy, for the tourist’ palate. Aside from that, chorizo pulao, prawn curry and beef chilli reach the table well prepared and in good quantities. On the Continental side, the steaks and pork chops are decent, but our favourites are among the barbeque items. Enjoy a grilled pomfret or tiger prawns while watching the sunset and enjoying the great selection of music playing in the background. The restaurant’s major drawback however is the pricing. While the food and ambience is great it’s the inflated prices prevents tourist from making too many visits.

LPK Waterfront club is the most unique location showcasing excellent architecture and beautiful landscaping made entirely of mud and stone. LPK has taken a conscious decision to stay away from the trance and club music which is played at many other party spots. The emphasis here is on international chartbusters from all over the globe. While the European tourists often request Euro hits, the desi domestic crowd clamours for Bollywood hits and the DJs throw in hiphop chart busters for extra measure. The DJs cabin resembles Alladin’s magic cave, some magical fairyland where the music sounds better not because of the décor, but because of the acoustics. Yes, because it’s all mud, the sound is better absorbed and does not bounce back. A variety of special places in the whole property for our guests to explore and enjoy. Everywhere you look there are surprises! The place opens up at around 9.30 pm and rocks till 4 am, enough time to satisfy most party animals. A wellstocked bar with international and local drinks, and if you want to chow while sipping on a Goan drink, well one has got to try the Choris Pao, this is highly recommended by the WO’GOA Publisher.
