Christmas is right around the corner. Once the beloved holiday hits, numerous families celebrate their unique traditions together. Many of the students may wonder, “How do their vice principals celebrate Christmas?” Pilot had the privilege to interview our vice principals, Mr. Whiteside and Mr. Hopf, about their family Christmas traditions.
Mr. Whiteside
Mr. Whiteside said that during Christmas, he enjoys meeting with all his family members and having a big reunion dinner together. In addition, he takes delight in watching the NBA Christmas games with his friends and opening presents that he has received. Mr. Hopf
Mr. Hopf said his family will come over to his house on Christmas Eve for a dinner and gift exchange. While there, they play a lot of board games too. He also enjoys singing karaoke with his family on Christmas Eve. His wife’s side of the family will come over for a giant breakfast on Christmas Day.

Polish Kolaczki (thedailymeal.com)
Ingredients:
3 ounces cream cheese or half a package 1/2 cup butter, softened
1 1/2 cup all-purpose flour
1/4 cup sugar for dusting 1/2 cup confectioners’ sugar for dusting 1 can jam (apricot or raspberry works well)
Directions:
In an electric mixer, beat together the cream cheese and butter until light. Slowly add the flour. Once the dough has come together, form into balls and chill overnight in the refrigerator. Preheat the oven to 350ºF.
Dust a large area of your kitchen counter with half granulated sugar and half powdered sugar. This will prevent sticking. Remove the dough from the fridge and roll out into a square about 1/8 inch thickness. Cut into 3 inch squares. Add a dollop of jam in the center of the squares. Then put the 2 opposite corners into the middle and pinch them to seal the cookies.
Place the Kołlaczki on ungreased baking sheets and bake for 10-15 minutes. Allow to cool and dust with powdered sugar.
