PUBLISHER'S CORNER ELECTIONS MATTER, SO GET OUT AND VOTE THIS NOVEMBER As Executive Director of the Costa Rican Investment Board in New York City, I planned and hosted a high-level meeting at the Marriott Marquis in Times Square for the President of Costa Rica, his cabinet and a group of CEOs of major U.S. corporations with manufacturing operations in Costa Rica. President Figueres and his cabinet were in New York for the annual United Nations General Assembly gathering of world leaders. When the meeting ended, the President personally invited me to join him and his ministers in the U.N. chamber to watch him deliver his annual address to the Assembly. It was a privilege and an honor to join our Costa Rica delegation at the U.N. for such an important annual event on the world stage. This past Tuesday, I could not help but feel sad and embarrassed as I watched the evening news reports about Donald Trump's speech at the United Nations General Assembly. I was horrified to learn what has happened to our nation on the world stage. There used to be a time when the President of the United States was respected by our allies and feared by our adversaries. Instead, I watched Donald Trump quite literally being laughed at by world leaders and top diplomats for his outlandish claims during his speech to the United Nations General Assembly. This new low in American diplomacy and the presidency of Donald Trump is a stark reminder to everyone that elections matter and it is very important to vote. Get out and vote this November like the future of our nation depends on it, because it does. I look forward to the day when our country once again has a true leader that the entire world respects and our allies want to work with, rather than a man who gets laughed at in unison by world leaders and top diplomats. I am also sick and tired of hearing Donald Trump blabber about "so much winning," while he sinks to the new low of becoming the laughingstock of the entire world. hat is it about ancient products that make for such great desserts? What, is Häagen-Dazs with a fruit foam of some sort not chi-chi enough? Apparently not. And if you have eaten at a Chinese restaurant, you probably know this is true. Skip the mass market ice cream and go for the preferred choice of simply chilled lychee. Unless you are an aficionado that might be the only time you encounter the unusual Asian fruit. But once you have tried one, you might just decide to seek them out for your home meals. These days, besides the mediocre canned version, some markets and many specialty markets carry the seductive fresh version. Originally harvested in China, the lychee is a small rounded fruit with sweet white scented flesh, a large central stone, and a thin rough skin. It's also called litchi nut when dried. Its light, floral taste – some say it's a grape/rose, others insist pear/watermelon – pairs perfectly with coconut, lime, and other tropical tastes. The lychee is mostly served alone as a fruit However, there is more that can be done. There's nothing wrong with that and those who love the fruit can go their entire lives enjoying it this way. As INGREDIENTS • 1 large ripe banana, or 2 small ones a finale to an Asian themed dinner party, it's a palate-cleansing, sweet delight. • 8 to 10 fresh lychees, peeled (see below), or canned lychees (drained) • 1 can of coconut milk (regular or "lite") • 1/4 to 1/3 cup of loosely packed brown sugar, depending on desired sweetness • pinch of salt
1. Peel the lychees if you are using fresh fruit. 2. Peel the bananas, then slice them in half lengthwise. Cut these lengths into smaller sections – roughly 2 inches long. 3. Pour the coconut milk into a saucepan or pot, and place it over medium-high heat. 4. Add the sugar, stirring to dissolve (about 30 seconds to 1 minute). Start by adding 1/4 cup sugar, taste-testing for sweetness. If you'd like it sweeter, add a little more. 5. Add the rest of the ingredients. Continue stirring until the bananas, and lychees are warmed through (1 to 2 minutes). 6. Serve the banana-lychee soup immediately, or cover it and place it in the refrigerator for later. This dessert is excellent served either warm or cold. Chilled is great on hot summer days, while warm is a perfect comfort food during cooler weather. It can be your go-to recipe year-round.

CHOOSING AND PREPARING FRESH LYCHEES
• When buying lychees, look for pretty pink skin – not green. To see whether or not a lychee is ripe, simply press the skin gently with your thumb. With this, the lychee should give a little. If it's too soft, it may be over-ripe. Good lychees will also have a gorgeously lush and floral perfume. They will taste sweet, but not overly sweet. • Open the skin up. Your thumbnail is probably best for this, and then strip back the peel. • Peel off the skin entirely. • As you peel, you can eat the lychees. When you pop them into your mouth, watch out for the stone, which is very smooth and hard. If you're planning to prepare the lychees, whether serving or using them in a recipe, make sure to open up the fruit and use your thumb to remove the stone. • Better and necessary for most recipes, peel back the flesh, remove and discard the pit.
