As I prepare to write this letter at the end of March and the beginning of April in preparation for delivery in May I am realising what a great time of the year this is. Recently we passed the March equinox and there was the goodbye to the darkness of winter, bare trees and lack of flowers, but hello to the new life of spring. Hedgerows coming to life, flowers starting to bloom and a general sense of expectancy in the air. That was closely followed by the changing of the clocks, the final departure of long dark nights and the arrival of longer spring evenings looking forward to the long days of summer ahead. This sense of change touches every part of our lives. The need to defragment the computer, have a disc clean up and compact the files in order that the machine runs efficiently is surely a good example. Cupboards need to be spring cleaned, foodstuffs that have gone beyond the best before date are removed to make way for fresh supplies. raked and planted ready for the summer display of fresh flowers, fruit and vegetables. Garages, (or perhaps I shouldn’t mention garages) in reality need a clean up from time to time. Materials hoarded, paint gone hard, bent nails all have to go so that those things that are useful can at last be seen and used to full advantage. It seems to me that de-cluttering is not only the order of the day but a necessary part of life. How significant it is that in the Christian calendar we have just passed another Easter weekend and many have remembered again the death and resurrection of Jesus Christ. Well, what’s that all about? It’s about the same thing - de-cluttering! Not now of computers, cupboards, gardens or garages but of human lives, my life your life. To some measure or other it is true for us all, we carry the pain, hurt and baggage of the past, those things that make life a drudgery, but the prophet Isaiah says this concerning the death of Jesus - “He took our infirmities, he carried our sorrows, he

was pierced for our transgressions, he brought us peace.” Isaiah 53:4-5. The apostle Paul continues and tells us that in his resurrection he gives us hope, life, purpose and a future that is eternal. Even far greater than the pain and hurt of life being dealt with, it was at the cross that Jesus took my wrong doing, my sin, those things that kept me from God, giving me the opportunity to come to him, to know him and fulfil the purpose of life. May it be that, as from time to time you are involved with de-cluttering the computer, cupboards, garden or garage, you will hear the voice of Jesus say “come to me all of you who are weary and I will give you rest” Matthew 11:28. Cornish Fish Pasty

Being Cornish, the Cornish pasty is part of your upbringing. However it was not until recently that I was reminded of the fish pasty. As a boy, I remember having these fish pasties as an alternative to the traditional meat, so one night recently I decided to try and recreate the tastes and aromas of my childhood by the sea. Wonderful memories. I hope you enjoy as I did. Some people say why make pastry when you can just buy it…well if that’s your thing then who am I to say otherwise, however if you want to make your own then here’s how… For the pastry - Serves 4 450g of self raising flour Pinch of salt 225g of butter 4 teaspoons of cold water 1 egg, beaten Sift the flour and salt into a large bowl. Add the butter and rub it in with your finger tips to form what looks like breadcrumbs. Next add the cold water enough to form a dough. Work the dough until smooth. Wrap in cling film and put in the fridge for 30 mins. For the filling 50g of butter 1 leek chopped finely 1 white onion chopped 1 red onion chopped 250g of diced potatoes 2 medium carrots diced 400g of any fish, cut into smallish pieces 25g of grated mild cheddar Some chopped tarragon to taste Salt n pepper To make the filling melt the butter in a large frying pan and add the leeks, onions, potatoes and carrot, cook for about 10 mins untill the vegetables are slightly softened. Once that’s done remove from the heat to cool.

Once the vegetable mix has cooled down put the mixture into a bowl and add your fish, cheese and tarragon. Add a pinch of salt and pepper and mix together. Remove the pastry from the fridge (that is if you made it yourself, if not take it out the packet!). Roll the pastry out thinly and, using a cutter, cut out discs about 20cm (if you do not have a cutter use a small plate as a template). You should get four disc’s out of your pastry. Split the mix between the disc’s, moisten the edges of disc’s then fold over and crimp the edges together. Give the pasties a generous coating with the beaten egg and place in a preheated oven 200°c for 15 minutes. Remove from the oven and coat the pasties again with the egg. And place back in the oven for a further 20 minutes. To serve, you can have them hot with some new potatoes or chips, or if you leave to cool a little they are really good with a tossed salad. The Elgin Marbles – why Elgin? Elgin Museum continues to receive the occasional tourist expecting to find the “Elgin marbles”, probably having by-passed their location in London. We even used to have bags of children’s marbles, available as a consolation prize. What are the “Elgin marbles”? They are the marble architectural sculptures brought to Britain by Thomas Bruce, 7th Earl of Elgin, from the temple, the Parthenon, built on the Acropolis of Athens between 447 and 438 BC. The building had survived largely intact until 1687; it then suffered an explosion in a bombardment when in use as a gunpowder store, after which the sculptures suffered from ongoing damage and piecemeal sale. In 1799, Elgin became ambassador to Constantinople (Istanbul), capital of the Ottoman Empire, which then included most of Greece. As a personal gesture, in return for a diplomatic intervention, the local authorities allowed him to record the remaining monuments, and later to allow their embarkation for Britain. The sculptures survived the sinking of the “Mentor” and Elgin subsequently sold them to the British Museum, where, controversially, they remain. The Scottish sculptor, John Henning (1771 – 1851) saw the marbles soon after they arrived in Britain and was so impressed that he obtained permission to draw and make models of them. Using earlier drawings to help him work out the order of the procession depicted in the frieze, Henning carved miniature impressions in slate, from which casts were made in white plaster. Classical sculpture and casts like these became immensely popular in the 18th and 19th centuries. By a quirk of fate, Elgin Museum has a set of

these 2” by 6” casts on display. Originally gifted to the Museum by Louise, Countess of Seafield in 1886, they disappeared to resurface in someone’s attic in 2003! Also, on loan from the present Earl of Elgin, we have two of John Henning’s original drawings, which show the power and beauty of the horses in the original sculptures. Returning to the original question, why did a British diplomat, whose main residence was Broom Hall in Fife, have the title 7th Earl of Elgin? For a closer geographical link, we can go to Kinloss Abbey, ten miles west of Elgin. Edward Bruce, the father of the 1st Earl, was in 1583 both parson of Torie, in Fife, and associated with the abbey of Kinloss. He became abbot, and later Lord Bruce of Kinloss when Kinloss became a temporal lordship and barony in 1604. It was his third son, Thomas who became 1st Earl of Elgin in 1633, probably as a reward from King Charles I for contributing to the pomp of his coronation in Scotland. A fortnight later, Thomas is reputed to have provided a more significant service, rescuing the King from drowning when their pinnace capsized in a gust of wind on the crossing homeward from Burntisland to Leith. Thomas lived almost entirely in England. It is said that, as all the cities and counties around the Bruce country of the upper Firth of Forth had already been used for titles, Thomas wrote to friends in Scotland, and the great cathedral city of Elgin, not far from his considerable land holdings of Kinloss, was suggested. W Well were ell we wer e certainly eally pleasant surprise. Simpsons is certainly mor in for a rreally more e den centr e. Y es you can buy everything than just a gar garden centre. Yes normally garden that you would nor mally expect to buy in a garden den pr oducts was centre garden products centr e (in fact - their range of gar eally ‘W owed’ us. huge!) but it was the other things that rreally ‘Wowed’ sophistiFirst of all the rrestaurant estaurant - a rreally eally smart and sophisticated rrestaurant estaurant and cafe ar ea that was absolutely area buzzing when we wer e there there and (we couldn’t believe it were a baby grand piano playing in the background background apparantly ther e is live music during the day on both there Satur days and Sundays). The views fr om the windows Saturdays from over the Inver ness, the Black Isle and beyond wer e Inverness, were simply stunning! On the way to the rrestaurant estaurant you ar e led thr ough a are through pleasantly laid out ‘r etail ar ea’ which includes a fully ‘retail area’ fledged Florist and a concession fr om a local clothes from shop! In the rretail etail ar ea the list of what you can buy is area simply stunning - books, gifts, gar den equipment and garden per haps one of the lar gest collection of pots that I have perhaps largest seen in a long while! All in all we spent about 3 hours in the centr e and centre finished up with a lunch which for all the family (four in total) came to £22.50 including drinks (this is not a set deal). The food was wonder fully pr esented and (I was wonderfully presented assur ed) all made fr esh on the day using local pr oduce. assured) fresh produce. On the way out we noticed that Simpsons won ‘Gar den ‘Garden Centr e of the year 2010’ for all of Scotland - we‘r e not Centre we‘re surprised! So what’s my ver dict?
