Jacky Charpentier Brut Prestige Rosé and smoked salmon were meant for each other. Picture this colourful pair as the opening act to your festive feast. The Brut Rosé Champagne's dry finish, a medley of red fruit and sparkle provide an irresistible match for smoked salmon canapés. The smoked salmon's oily texture and the assertive flavour pairs well with a subtle, low-alcohol wine with enough acidity to cut through the creamy mousse. As a general rule, rich oily fish pair perfectly with full-bodied white wines. Bret Brothers Terres De Vergisson is a beautiful expression of the ancient seabed of Pouilly-Fuisse. Contrary to popular belief, turkey pairs wonderfully with reds -- just keep them on the lighter side. If your preference is red, a stellar choice is Rondan Reserva. This Rioja is a turkey-friendly stunner. A creamy and buttery Chardonnay from Burgundy is a top choice for a special occasion white and Domaine Emilian-Gillet is at the top of that list. You will see both of these wines on many a Wines Direct staff table this Christmas.

Traditional Christmas Turkey There is nothing that says Christmas more than the traditional Christmas Turkey at the table. There is also nothing more daunting Christmas morning than staring at a naked turkey, especially if it's your first time hosting the family Christmas feast. A few tips for a centrepiece Christmas Turkey showstopper: • Get your turkey out of the fridge 30 minutes before cooking and preheat the oven for at least 20 minutes before cooking. • Stuff only the neck cavity, rather than the body. Otherwise, turkey does not cook all the way through. Fill the body with fresh herbs, slices of orange or onion, so flavours diffuse into the meat while cooking. • Use kitchen string to tie drumsticks loosely. Tying them too tightly can prevent thighs from cooking evenly. • To help turkey brown evenly; rub with olive oil or melted clarified butter. Sprinkle turkey with salt (unless brined) to help crisp skin. • A good estimate is to cook the turkey for approximately 35 - 40 minutes per kg at 180°C/350°F/gas 4.

Vegetable Wellington A Vegetable Wellington is a fun spin on the classic Beef Wellington. This indulgent meat-free version is an impressive centrepiece. If you want a sensational spread for Christmas, an enticing vegetarian or vegan main option is a treat for both meat-eaters and vegetarians or vegans alike. Vegetable Wellington is flaky on the outside and not short of texture on the inside. The mushroom, carrots, and thyme complement each other so well. Ireland has the best farmhouse cheese in the world. Your cheese board will be a miss if you ignore our marvellous, award-winning cheese culture. Carrigaline Smoked is a semi-firm cheese Beech smoked on the farm in Cork. Les Truffières is a sensational Chardonnay from Bordeaux. The toasty oak in this buttery Chardonnay perfectly complements the smoke in Carrigaline. Les Les Truffières Truffieres is another Chardonnay €23.75 class act from the Courselle sisters.

Manchego is by far the best Montelaguna known Spanish cheese Roble and Sheridan’s Tempranillo semi-curado lives up €17.25 to that reputation. Montelaguna Roble is a juicy Tempranillo with soft tannins and a hint of vanilla oak. Its lively flavours of blackberries and blueberries and noted dryness offer the perfect background to this beloved cheese.

Winemakers: Nuno Elias Casa Agrícola HMR (Pousio) Alentejo, renowned for its hot, dry climate and as a holiday destination, is now considered a birthplace of premium wines. Herdade do Monte da Ribeira (HMR), located next to the village of Marmelar. In 1987, it was purchased by Victor Carmona e Costa. After his passing, his niece and nephew took over. The first vintages were tended by Luís Duarte – one of Portugal’s most recognised vignerons. In 2002, Nuno Elias assumed the position as head winemaker. HMR has 43 ha of vineyards and sits 400m above sea level on a fault line. The soil has a considerable amount of minerals like iron oxide, creating its surreal crimson red soil. HMR is dedicated to supporting contemporary art and regularly host artist retreats at the winery – hence, the brush strokes on the Pousio label.

Winemakers: Susana Balbo Susana Balbo Wines The most recognized and well-known female oenologist in Argentina, Susana Balbo has been instrumental in the transformation of quality table wines in Argentinean viticulture. She is best known for her innovation and is the first Argentinean oenologist ever hired as a consultant by European wineries. At Dominio Del Plata, in the famed Mendoza wine region of Argentina, Susana crafts her signature label wines. For her Crios label, which means "offspring" (as in children), Susana selected a word to express the notion that these are wines given loving care and attention deserving of her children. The three hands on the label, inspired by a Mayan artefact, represent Susana and her two children. By definition, Crios is to be enjoyed while still young and vibrant. Meet the

Winemakers: Victoria Pariente Bodegas José Pariente Victoria Pariente came from a wine family and grew up skipping through her father’s vineyards. She went on to get a degree in chemistry and oenology at the University of Madrid. In 1998, bored with an office job, she joined forces with Victoria Benavides and made wine under the “Dos Victorias” label (Two Victorias). Soon after this José Pariente (named after Victoria Pariente’s father), won the prestigious Best White Wine in Spain award. It was the house wine in El Bulli, regarded as the best restaurant in the world. Victoria, along now with her daughter Maria, is always trying out new ways to preserve the essential character of the grape with cooler fermentation and gentle filtration. Her scientific and analytical background is evident in this constant quest for small changes which allow the wine to reach the customer in a way which reflects precisely the characteristics of her excellent Verdejo grapes. Winemakers: Jean & Anne Lignères Château la Baronne On our visit to Château la Baronne this year, we were warmly greeted by the Lignères family and a small army of adorable puppies. If juggling medical practices and a vineyard isn’t enough; they were treating and rehoming abandoned puppies (in between tastings). We continued to walk the vineyards and experience the terroir of the Alaric Mountain. The vines are well-tended, happy, healthy, and full of beautiful biodiversity. The winery — an amazing place of experimentation, including Jean’s custom-designed clay vessels for vinification and storage. The last stop on the tour is the tasting room where it all starts to make sense. One can taste the respect of land and all living things, painstaking attention to detail, and the loving care in each wine produced by the Lignères family. Another trip to Château la Baronne underlining the philosophy that wonderful people make wonderful wine.

Winemakers: Michiel Eradus Eradus Who would have thought that tulips would have been so popular in New Zealand? When Har and Sophie Eradus retired after 20 years selling this peculiar Dutch export to curious Kiwis in New Zealand, they had saved enough money to purchase a vineyard on a small patch of land in Marlborough. Little did they know that they had acquired one of the best terrains for Sauvignon Blanc in an area known locally as the 'Golden Mile.' No doubt aided by their horticultural background, the first vintage of Eradus Sauvignon Blanc Ana was an unexpected hit. Alongside Michiel’s bestselling Ana, we are proud to bring you two additional wines from this stellar young winemaker; his eponymous single-vineyard Sauvignon and Pinot Noir. Winemakers: Stephane Dupuch Château Sainte-Marie The renowned Château Sainte-Marie goes back several centuries when the owner used to supply the Abbaye de la Sauve Majeure (one of the most ancient abbeys in France, located just 4 km from the Château). Set in the heart of Entre-Deux-Mers, this magnificent estate is located in an excellent geographical position. The south-facing vineyard stretches over two sunny hilltops which are among the highest points in the Gironde region. Old vines with low yields, including a one-hundred-year-old parcel of Semillon, guarantee top-quality production. The Dupuch family believe that wine is a history of time, from the planting of the vines, through every year's harvest, to the time needed to grow in the barrels. Winemakers: Francesco De Filippis Cosimo Maria Masini Francesco De Filippis, the winemaker at Cosimo Maria Masini, is a biodynamic winemaker with a PhD in Agricultural Science. Francesco visited Wines Direct this year and took the time to present to our staff, allowing us to ask every question imaginable about biodynamic farming. His passion for the soil and vine is inspiring and as if we weren’t fans already of his wines - Francisco, the winemaker, gained a fan club of his own. He’s just a cool down to earth guy (literally - he loves the soil). Cosimo Maria Mansini is located in Tuscany, near Pisa. The 15th-century villa first house the Bonaparte family. It is now surrounded by vineyards, fig trees, and chickens. Francesco said that when he started biodynamic farming at the vineyard 13 years ago, the soil was hard as a rock. The soil is now looser, richer, and revitalised with micro-organisms. The results are healthy vines and endless potential. You can taste the dedication in his wine. Sending wine as a gift? Meet the

Winemakers: Sylvain Tatraux Domaine Tatraux Jean et Fils Givry Pinot Noir was famously the favourite red wine of ‘Good King’ Henri IV of France (reign: 1589 – 1610). While we can’t say for sure if his robust intake of this fine Burgundy was the reason he survived at least 12 assassination attempts, it certainly didn’t hinder his chances. This particular wine, made by Sylvain Tatraux, is one of the best examples of high-end Burgundy at a reasonable price that we’ve come across. The Tatraux family have been making wine in the Côte Chalonnaise since the 1700s. Their small plots are scattered over the rolling hills on enviable soils of Jurassic limestone, eroded pebbles and clay. This wine comes from a south-facing vineyard, as is required for 1er Cru. We were transfixed with it from the very first sip. It has that hauntingly pale colour of great Pinot that belies the power of the flavours underneath. A cracker, with or without food.

Winemakers: Jean Marc Charpentier J. Charpentier The Charpentier family have been winemakers since 1920 when Pierre Charpentier began growing grapes. Before Champagne was glamorous, winemakers in the region essentially sold the grapes they produced to négociants. It was Pierre’s son, Marcellin, who first produced Charpentier Champagne in 1954. Four years later, Marcellin died suddenly and his wife, Solange, was left to run the business. Her son Jacky began making wine at the age of 11, showing prodigious ability. Over the next few years, through hard work, diligence and passion, Jacky Charpentier managed to save the family business, achieving the recognition and respect that is now associated with the J Charpentier label. Jacky’s son Jean-Marc now runs the winemaking at Charpentier. With 38 plots of vineyards and three different varieties of grapes grown, there is a lot to be discovered among the Charpentier range.
