A night at ESCA Bimbadgen is a lesson in why the Hunter Valley’s finest winery restaurant has kept diners coming back for almost two decades.
There is a particular kind of theatre to arriving at ESCA. You cross a bridge - literally - suspended above the gleaming steel tanks of Bimbadgen’s working winery below, the faint perfume of fermentation mingling with the cool evening air. It’s an entrance that tells you, before you’ve even been seated, that this is not a restaurant that takes itself casually. The name Bimbadgen comes from the local Indigenous language and translates to “Place of Good View” - and ESCA, perched at the top of the estate on McDonalds Road in Pokolbin, makes that promise good at every turn. Full-length windows command a sweep of vineyard, valley and the distant silhouette of the Broken Back Range. On the evening we visited, the temperature outside was decidedly wintry - but the balcony was warm with radiant heaters pulling warm air through the open doors, and a good number of diners were happy to claim a spot out there. We took a table by the glass wall inside, sipped on a glass of bubbly and watched the sky deepen from
apricot to indigo while the vines stretched away below us. It is, quite simply, one of the finest settings for a meal in the Hunter Valley.
ESCA has been a pioneer of fine dining in the region for the better part of two decades. The restaurant’s current incarnation is guided by Executive Chef Raphael ‘Rapha’ Martinez, whose story is worth knowing. He first worked here as a chef de partie back in 2018 before honing his craft

at Spicers Guesthouse and Brokenwood Wines. His return to Bimbadgen in late 2024 has all the hallmarks of a homecoming done right. “The Hunter Valley has been my family’s home since 2018,” he has said, “and we enjoy everything about wine country life - the people, the stunning landscapes and the exceptional local wines.” That affection comes through in his cooking: the menu is anchored in local produce and the Hunter’s seasonal rhythms, with a distinctive pan-Asian influence woven through the modern Australian framework. It is contemporary and creative, but never flashy for its own sake.

We began, as one should, with a browse through Bimbadgen’s estate wine list before turning to the menu. Bimbadgen farms two distinct sites - the Palmers Lane vineyard, with its ancient sandy loam soils producing elegant, perfumed Semillon and refined Chardonnay; and the McDonalds Road vineyard, higher along the valley crest, where red volcanic soils yield structured Shiraz and concentrated reds with real depth. We opened with the 2018 Semillon from the Signature range - and it was extraordinary, with the unmistakable depth that comes from a few years of patient ageing in the bottle. A Signature 2022 Chardonnay followed, then a young Bimbadgen Growers 2024 Pinot Gris and an even younger 2025 Rosé. As the evening progressed, each wine found its footing alongside the food in exactly the way a well-conceived winery restaurant should manage.
The menu is structured for grazing and sharing - starters, entrees, mains and sides - and we moved through it at a pace that felt entirely unhurried. The Yellowfin Kingfish Crudo was the kind of dish that immediately wins you over: thinly sliced, bright and zesty, a clean hit of citrus and acidity that woke the palate without overwhelming it. Light, precise and deeply satisfying - a confident first statement. The Beef Tartare, finished at the table in classic style, was rather different in character. Handcut Riverina beef dressed with shallots, cornichons and chives, finished with crimson butter and the crunch of pickled caper berries - but what distinguished it was a subtle, unmistakable Asian flavour profile that gave the dish an unexpected dimension. Martinez’s culinary identity is evident even in the classics.
The Squid Ink Tagliatelle was a standout of the evening. Made in-house and deeply coloured, the pasta was paired with Fraser Island spanner crab, sautéed eschalots deglazed with Chardonnay, cultured cream, dill and salmon roe. It managed to be both rich and delicate at once - the brininess of the roe lifting the sweetness of the crab, the cream binding it all together without heaviness. This is the sort of dish that reminds you why pasta in the hands of a skilled cook is always worth ordering. For the main course, we chose the whole barramundi: char-grilled, served with herbed garlic velouté, piquillo peppers
and house-made chimichurri. The fish was enormous in the best possible sense - generously portioned and beautifully cooked, the flesh giving way in the soft, delicate flakes that only a properly handled barramundi can deliver. The char on the skin added just enough smokiness to keep things interesting.
We finished the meal with a whisky flight - the Scottish selection, as it happened - which proved a fitting final chapter.

ESCA runs occasional Masterclass Series dinners pairing seasonal menus with specific producers, a program that reflects the kitchen’s genuine engagement with the wider world of wine and spirits. The whisky flight is a lovely way to slow the evening down and linger a little longer above the vines.
Service throughout was warm and well-paced, with staff who know the menu and the wines with equal confidence. The room itself is elegant but not stiff — full-length windows, warm lighting, the kind of setting that feels equally right for a milestone celebration or a relaxed long lunch with friends. It welcomes everyone, from first timers making a special occasion of it to regulars who treat ESCA as their go-to Hunter table. The balcony, even on a chilly night, is worth asking for: the view across the vineyards as darkness falls is something you'll want to sit with for a while.
ESCA has always understood something that not every winery restaurant manages: the food and the wine must be in genuine conversation, not merely co-existing on the same table. Under Raphael Martinez, that conversation is more fluent than ever - rooted in place, shaped by season and informed by a culinary sensibility that is entirely its own. Few names in the Hunter Valley wine landscape have evolved with as much consistency or conviction as Tamburlaine Organic Wines. This year marks a remarkable double milestone: 60 years since the Tamburlaine story began, and 40 years since Managing Director and Head of Grape and Wine Production Mark Davidson and General Manager Lou Davidson took the helm of the business.
Together, they have guided Tamburlaine through industry shifts, climate challenges, and changing consumer expectations - all while holding firm to one founding philosophy: grow well, farm responsibly, and let the vineyard lead.
That philosophy is most visible at Borenore Vineyard in the Orange region, shortlisted in this year’s Vineyard of the Year Awards. The vineyard operates on a layered organic system: soil moisture probes guide irrigation; weed control is managed mechanically through roll hacking, discing, and mow-andthrow practices; and nutrition is delivered via certified organic inputs. Canopy management is tailored vine by vine. The team describes it as “vine husbandry without shortcuts”, and the results are measurable, with improved soil biology and stronger fruit expression, particularly in Cabernet Franc.
Innovation at Tamburlaine tends toward practical problemsolving. Smoke-affected fruit during bushfire seasons became the Herding Cats gin range. Research partnerships with the University of Adelaide shaped a sophisticated alcohol-free wine offering. Lightweight recycled PET bottles in the Lizard Drinking range reduced transport emissions while giving consumers a practical option for outdoor entertaining.
The winery’s membership model has also evolved. Alongside the long-standing Reserve Members Club, delivering strictly limited annual allocations that rarely reach general release, the new Organic Rewards program lets members build their own subscription, selecting wines, quantities, and delivery frequency.
“The wine consumer expectations have changed,” says Samantha Elliott, Executive Director of Branding, Digital Sales and Marketing.
“People still love quality wine, but they want flexibility, they want control, and they want to feel like their choices fit their lifestyle.”

The Hunter Valley is renowned for having a talented list of innovative winemakers at the forefront of their profession and for producing some of the world's best and most distinctive wines – particularly Semillon and Shiraz, which are the hallmarks of this region.
The most recognisable of these is Hunter Valley Semillon – the Hunter Valley’s flagship variety and a truly outstanding wine in terms of quality and taste with a style that has not been replicated anywhere else in the world.
Other varieties grown include Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay and Verdelho, which have all produced great Hunter wines.
SEMILLON
Hunter Valley Semillon is one of Australia’s most distinctive and celebrated white wines. Known for its unique style and longevity, this varietal has become synonymous with the region, setting it apart on the global wine stage. Semillon in the Hunter Valley is often picked early, at low sugar levels, which contributes to its characteristic light body, crisp acidity, and low alcohol content. Initially, these wines exhibit fresh citrus and green apple flavours, often accompanied by herbaceous notes. With time, these wines develop into a more complex, richer, fuller wine with great toasty complexity.
CHARDONNAY
Hunter Valley Chardonnay is a versatile and iconic wine known for its rich yet balanced style. In the Hunter, Chardonnay often showcases bright citrus and stone fruit flavours like peach and nectarine, with a subtle minerality reflective of the region's terroir. Winemakers employ various techniques, including barrel fermentation and lees aging, to add complexity, resulting in a creamy texture and hints of vanilla or toast. Unlike some other regions, Hunter Valley Chardonnay often strikes a delicate balance between freshness and oak influence, making it an elegant and food-friendly wine that appeals to a wide range of palates.
SHIRAZ
Hunter Valley Shiraz is medium-bodied, full of flavour and great with food. Characterised by soft tannins, bright red fruit flavours like cherry and plum, and earthy undertones, Hunter Valley Shiraz often exhibits a savoury complexity with hints of spice, leather, and tobacco as it ages. The region's warm, humid climate allows for gradual ripening, which contributes to the wine's balanced acidity and approachable structure.
MEDITERRANEAN VARIETALS - A NEW FRONTIER
While the region's signature varietals have defined its identity for generations, the emergence and growing popularity of Mediterranean grape varieties in the Hunter Valley reflects the region's adaptability and evolving winemaking culture.
The Hunter Valley’s challenging warm and humid climate, rising temperatures and frequent droughts, coupled with changing consumer tastes, has led to winemakers increasingly planting and experimenting with grape varieties that originate from the Mediterranean regions such as Spain, Italy, and parts of France where they share a similar warm climate.
As a result, a growing number of Hunter Valley Wineries have adopted alternative varieties that include Grenache, Tempranillo, Sangiovese, Durif, Nebbiolo, Barbera, Petit Verdot and Gamay, amongst the reds and Vermentino, Fiano, Pinot Gris/ Grigio and Viognier amongst the whites – and with fantastic results.
The point and growing importance of these new varieties is not that they are the absolute future for Australian winemaking, but instead, they are an exciting addition to a still maturing and evolving industry.
The Hunter Valley’s rich tradition of producing exceptional Semillon, Shiraz, and Chardonnay remains the backbone of the region’s winemaking legacy. However, the emergence of Mediterranean varietals reflects the region's forward-thinking approach to winemaking, adding another dimension to our wine drinking and enjoyment, giving the consumer a touch of the exotic, new tastes and encouraging debate.
