Nothing proclaims Christmas more in the Hunter Valley than the flick of one tiny switch at Hunter Valley Gardens!

That one switch ignites millions of lights around the Gardens and reminds all of us that it’s time to dust off that Christmas Spirit and start thinking about the festive season.

Of course Christmas Lights Spectacular is back bigger and more spectacular than even last year, and when they flick the switch on November 2, the kids will want to rush to see all their favourites. A world of wonder awaits, as you wind your way through 16 individual light displays. Be dazzled by the Around the World exhibit featuring global icons such as the Opera House and the Eiffel Tower, or perhaps Cinderella's Castle or the 12 Days of Christmas display set to music is more your style!

The lights will run until Australia Day (January 26th) – and Santa is in residence right up until Christmas Eve for photos and lists! New Year's Eve will feature a magnificent fireworks display and is one not to miss!

Sculpture in the Vines has returned with its annual celebration of art, wine and culture. This event is one of Australia’s longest-running regional sculpture events and showcases large-scale and site-specific works at various boutique wineries and gardens in Wollombi.

The concert season is upon us again, and we’re gearing up for another bumper season. It’s no secret that the Hunter Valley has earned the reputation of being one of the ultimate outdoor concert venues in Australia and over the next few months, we’ll see why.

In this issue, we speak with Troy Rhoades-Brown whose fine-dining establishment Muse Restaurant has retained it’s two chef’s hats during the annual Good Food Guide Awards. The Pokolbin restaurant is one of only four regional restaurants in NSW, and the only venue in the Hunter, to wear two of the coveted hats.

Troy tells us why it’s his commitment to the whole experience for patrons that drives him and his team to a standard of excellence that is unrivalled in Wine Country.

The vineyards are bursting with colour, and as the weather warms up daily, it’s a great time of the year to get out and sample all that our beautiful area has to offer both to visitors and to those of us who are lucky enough to live here.

Sculpture in the Vineyards has returned to the Hunter Valley for its annual celebration of art, wine and culture throughout Wollombi’s boutique vineyards and picturesque landscapes, located only 40 minutes from Pokolbin.

Now in its 16th year, Sculpture in the Vineyards is one of Australia’s longest-running regional sculpture events. The free exhibition showcases large-scale and site-specific sculptures through the vineyards, tree groves and gardens of the boutique vineyards in the Wollombi Valley and the historic Wollombi Village.

Visitors can enjoy the latest in contemporary outdoor sculpture while relaxing amongst some of the most scenic surrounds of NSW. Now a firm fixture on the Destination NSW calendar of events, Sculpture in the Vineyards features creative works by some of Australia’s leading sculptors, attracting over 7,000 visitors to the area.

Sculpture in the Vineyards is a free public exhibition, open daily from 10am – 5pm from 2 November until 18 November. Sculptures will be displayed in the village of Wollombi and participating vineyards; Stonehurst Cedar Creek, Undercliff Winery and Noyce Brothers Wines. TWILIGHT FUN For the Whole Family!

An exciting collective of over 75 artists and designers will converge on Maitland Regional Art Gallery on 10 November for the highly anticipated annual Olive Tree Christmas Twilight Market. Featuring a Christmas theme, the market will provide visitors with access to a wide range of beautifully crafted contemporary products all in an exciting market setting.

“There are so many reasons to shop local – visitors can discover unique gift ideas, and be assured that they can pick-up, small batch, ethically created handmade goods. Each purchase means you are supporting local artists and championing creative talent,” says the markets founder, Justine Gaudry.

“There is also the bonus of finding Christmas gifts that you know will be unique on Christmas Day, and being aware of contributing to the local economy by making a stand against mass-produced imported goods,” she said.

Ms Gaudry said that the Christmas Twilight Market will include free Christmas craft activities for kids from 4-6pm, roving street performers, an exciting live music line-up under the gallery trees, and once the shopping and sampling is done, visitors can bring along a picnic rug, and join friends and family, for an early dinner from street food purveyors.

The Christmas Lights Spectacular is back in 2018! Experience enchanting displays of millions of sparkling lights across five hectares of gardens. Troy Rhoades-Brown should be celebrating.

After another successful year creating gourmet offerings with the finest local produce, Muse Restaurant has once again held onto two chef’s hats during the annual Good Food Guide Awards.

The Pokolbin fine diner is one of only four regional restaurants in NSW, and the only venue in the Hunter, to wear two of the coveted hats.

But while he admits the accolade is something he and his staff are all proud of, Troy said it is not what drives them to provide the best possible dining experience for their customers.

“Awards are fantastic; they’re a great pat on the back for yourself and the staff, the team in general,” he said.

“As long as it’s always kept in (perspective) that’s what it is - a pat on the back and a bit of industry recognition. It’s not a reason why you open a restaurant. It's not the reason why you turn up to work.

“You're there to be in a great work environment and make your guests happy and feel special, and keep your team strong and happy as well.

“Awards are great, but they definitely have a place where they sit in terms of the bigger picture.”

For Troy, that bigger picture first began at the age of 16 when he began working at a small family-owned Italian restaurant in Newcastle called Pascalles.

Continuing his training in the Hunter under the experienced eye of industry icon Robert Molines at Robert’s Restaurant, Troy’s budding

career in the kitchen received a huge boost in 2005 when he was awarded the Brett Graham Scholarship, granting him a trip to the UK to work with the former Newcastle chef at his Michelin-starred restaurant The Ledbury.

Four years later at the age of 24, Troy took the bold step of opening his own restaurant amongst the tranquil surrounds of the Hungerford Hill Winery in Pokolbin.

With such highly regarded chefs influencing his earliest years in the industry, it is little wonder Troy is also passionate about helping to develop the next generation of chefs and hospitality staff.

“It’s such a rewarding feeling to own a restaurant that provides a training ground for young chefs and front of house professionals,” he said.

“We watch them grow and succeed within the business, or sometimes leave to open their own restaurants or take on fantastic new management roles elsewhere.

“That said, my focus on the incredible importance of job satisfaction and retention is paramount more so than ever in this industry's current climate. I'm so proud of how loyal my staff are to Muse Restaurant and how much they enjoy their jobs. At least six of our senior front of house team have been working at Muse Restaurant for the last six to nine-anda-half years each. To have that type of support and wealth of knowledge, just on the floor alone, is absolutely priceless.

“At the end of the day when you step back and look in, I think it's such a wonderful thing and such a great feeling to have the staff that work for you be proud of where they work, be proud to tell people the restaurant that they work for. I mean, what else could you want?” ►

Troy is equally passionate about ensuring the dining experience at Muse Restaurant is continually improving, with a focus not only on the flavours coming out of the kitchen but on the interaction between the front of house staff and the diners as well.

“I think the ethos behind the menu has grown and been refined and been critiqued, but it's always had this underlying drive towards fresh, and exciting, and clean food, with dishes that are unique and, above all, delicious,” he said.

“And almost everything that we bring to the table represents the time of year, and all the sub-seasons within that, as well as the region

that we're from, which is the Hunter Valley. We aim to support, show respect and showcase the best of our local producers, large and small, but almost always it is a family-owned business.

“Regarding the service and the front of house, I think even back in 2009 when we opened, we were fully aware of and understood the true importance of service, to try and over deliver on guests' expectations.

“There has to be that underlying humility and intuitiveness that comes from the floor staff, and you need to be able to feel their genuine love and passion for bringing that food to the table and the way they describe it and deliver it.

“So (our commitment) had to be to everything, to the whole experience, and the focus needed to remain on all of that, all of the time.”

Over the years Troy’s passion for using local produce and ingredients has been widely recognised, earning him a string of awards and accolades including being named the Unearthed National Next Gen Chef during the 2015 Delicious Magazine Produce Awards.

For the Pokolbin chef, however, creating a new menu of contemporary Australian cuisine has always been about the flavours, not the fanfare.

“As a chef, I've always loved the creative and expressive element about putting together dishes, and I've always been lucky enough to have a like-minded head chef, like my current head chef Mitchell Beswick, or Frank Faulkner, who's now at EXP, to bounce ideas around with,” Troy said.

“When we collaborate and start to go through new dishes that we want to put on the menu, it's always from three different things.

“There’s what's coming into season... usually locally... and then what we are receiving or what our commitments are with our local producers, and where that fits in. ►

“Then also, generally, it’s what we're interested in at the time. It might be something unique. It might be something different. It might be something that we haven't tried or tasted before that we would like to see on the menu or something that we may have preserved from past seasons when we have an abundance of something locally, and we're trying to store it. Something as simple as a summer sweet corn from Morpeth where we dry the cobs out, and then shuck the kernels and store them, and make our own milled, fresh polenta.

“Another part of inspiration comes from things that we've developed over the years at the restaurant that we’ve come to refine and love, like base sauces or seasonings or base preserves... stuff like our own miso pastes, or our own togarashi seasonings, our own black garlic, and kimchis and ferments and pickles.

“We pull all four of those things together and figure out where that will fit on a menu if it's balanced with the rest of the menu and how long we’re going to have it for in that season.”

Right now, Troy said he is particularly excited about using the beautiful heirloom tomatoes that are coming into season, and the local mulberries that are in currently in abundant supply, as well as the trileaf wild garlic flowers, which they have been using the last remnants of before they finish up for the year to create mouth-watering salted caper bulbs.

“Some things that we’re making at the restaurant that we’re also excited about is a blood orange and red chilli kosho, which is like a zest juice and chilli ferment that we ferment for about three to six months, and then we turn it into a paste, to flavour different sauces and dressings,” Troy said.

“Another one is our next batch of miso, which has just came out of a six-month ferment, which is based on bunya nuts, an Australian bunya-bunya nut from some trees at Branxton, which we fermented with some Australian koji rice and some soybeans. We’ve just had a look at it, and it's absolutely fantastic.

“It’s just a constantly evolving menu between myself and my head chef Mitchell at the moment. We are both on a very similar wavelength in what we like to play around with.”

Muse Restaurant is preparing to celebrate its 10th anniversary in 2019. While for some restaurateurs the thought of notching up such a significant milestone may have them dreaming of the next project, Troy said his focus remains on improving what he already has.

“My plans are definitely not to open another restaurant or to expand what we do,” he said.

“I think a lot of restaurant groups, big restaurants, fine dining restaurants, are not really looking to expand at the moment but to consolidate and drive what we have and what we do well.

“We have a very, very busy restaurant and what we do is really good; we’re just focussed on improving that.” ■

Mary Booth was just 15 years old when she started her first job working in a Sydney newsagency.

More than 60 years later, the lively 76-year-old is still toiling away behind a shop counter, driven by her passion for people and her love of retailing.

Almost half her working life has been spent running businesses of her own, including the past eight years as the owner of Pokolbin’s beautiful Wine Glass Gallery.

Facing many challenges throughout her career, Mary’s dedication and determination have seen her overcome all obstacles and achieve more in retailing than she ever dreamed possible.

Now that passion and perseverance has been recognised Australiawide, with Mary receiving a prestigious Lifetime Achievement Award (+30 years of service) at the 2018 National Retail Awards.

The accolade was presented in front of 300 of Australia’s top retailers during a gala event at the Myer Mural Hall in Melbourne on August 23.

“It felt amazing and was a great honour to earn a National Retail Lifetime Achievement Award,” Mary said. ►

“It has given me and my business credibility amongst my peers and family, also with my customers and suppliers.

“I got a standing ovation for my speech, and all the young retailers kept coming up to me say what an inspiration I was; it was an amazing night.”

Equally amazing is Mary’s retail career, which has taken her from the thriving tourist mecca of The Rocks to the world-renowned destination of the Hunter Valley vineyards.

While she had a number of jobs during her early career, her passion for retailing began in earnest in 1987 when she decided to dip her toe in the water as a business owner, taking over a failing British-themed shop at The Rocks.

“Instinctively knowing it had to be an Australian theme, I increased the takings by seven times within three months,” Mary said.

“With the ability to be creative and the help of my daughter plus a few great staff members, I traded Spring Row Gift Shop successfully in The Rocks seven days a week for 18 years.”

Mary explored some other retail ventures during this time, including a chocolate and ice cream shop, firstly at The Rocks and later in Glebe, as well as operating two gift shop/galleries with her long-term partner at the Nikko and Inter-Continental Hotels in Sydney, selling exclusively Australian products.

But Mary’s passion wasn’t just limited to helping her own businesses thrive, spending a number of years on the local Chamber of Commerce.

“While trading in The Rocks I was a member, and elected secretary of The Rocks Chamber of Commerce, becoming president in 1996 for two years,” she said.

“During my presidency I organised four business luncheons before the Sydney Olympics in four major hotels in The Rocks, introducing the Olympic Committee, Lord Mayor of Sydney also the Chairman of the Sydney Harbour Foreshore Authority.

“I arranged for The Rocks to have a large screen placed in George Street during the Olympics, which brought thousands of visitors to our businesses. This was very exciting retailing during the Olympics, with shops opening until 11pm every night.

“At the request of the Sydney Harbour Foreshore Authority in 1999 my partner and I also set up a large gift/gallery in The Rocks for Australian artists, just for the Olympics, called ‘Australian by Design’.

With a coffee shop attached it was quite a challenge!”

Mary and her partner relocated to the Hunter in 2003, building a home and five attached tourist accommodation units, which they operated for 13 years.

Despite the change in location Mary’s passion for retailing continued, running a gift gallery at Morpeth for five years with her daughter before closing it to set up the Wine Glass Gallery at the Hunter Valley Gardens Shopping Village in 2010.

While her retailing journey has not been without its challenges, Mary said it has been a fulfilling journey that has allowed her to meet wonderful people from all over the world – including former US President Bill Clinton and Prince Andrew, the Duke of York.

“Over the years I have experienced unhelpful banks managers and greedy landlords with leases that were less than favourable to tenants,” she said.

“However, I remained effective, positive and have overcome all of the challenges these male executives imposed on a woman in business.

“I have achieved and succeeded where others have failed and have thoroughly enjoyed my retail journey.

“I believe the best way to succeed in retail is to be tolerant and enjoy the customers, and during my retail journey, I have met thousands of amazing, wonderful and interesting customers from all over the world.

“The biggest lesson I have learnt is one must have a passion for whatever you choose to do. Retailing is no different, with passion it is not hard to give more than you receive.” ■

Casual Dining with a Touch of Style Hunters Quarter owner and chef Brian Duncan knows his way around a kitchen – and so he should, he has worked in some of the best.

Describing his style as “Modern European”, Brian brings a wealth of well-travelled experience to the Hunter’s dining scene, having worked at the Dorchester Hotel (three Michelin stars) and Claridge’s Hotel (one Michelin Star) in Mayfair in London. Brian was also the executive chef

at Level 41 and The Establishment - two of Sydney’s most iconic dining venues. He even cooked for Russian President Vladimir Putin during the 2014 Winter Olympics.

Attracted by the lifestyle, wine and food offered by the region, Brian and his wife Jen and their young children decided on a "tree change" and made the move to the Hunter Valley in January 2016 where they opened Hunters Quarter at Cockfighters Ghost vineyard in Pokolbin.

The restaurant itself is elegant and stylishly furnished with floor to ceiling windows providing loads of natural light and a wonderful view of the dam and vineyards located just a few metres away. The vibe is relaxed and welcoming, and the dining space has an almost rustic look to it, with a polished cement floor, timber tables, high ceilings and large drop pendant lighting.

For Brian, it’s all about the food and the experience, and he tends to shun the limelight, preferring instead to let his food do the talking – letting it define who he is.

And talk they do. With dishes that include Spanner Crab Dumplings with house smoked salmon, tomato, lime and coconut broth; Butter Poached Bug Tail with seared prawns, wild rice, shellfish broth and tempura asparagus; Lightly Peppered Kangaroo Loin with pickled fennel, quinoa pilaf and plum compote; Seared Fillet of Hiramasa Kingfish with red miso broth, shemiji mushrooms, samphire and edamame beans and Marinated Duck Breast with peppered caramel cherries, smoked almonds and broccolini - all of which are just superb.

"Hunters Quarter isn’t about fine dining,” says Brian.

“We feel that the Hunter Valley has sufficient fine dining options.

Instead, we are about smart-casual food. We want people to come here to catch up for a glass of wine and choose from the bar menu or sit down for a meal.”

Mark Giffen has bee-n the business of producing honey from his backyard hives for almost a decade and for the past year-and-a-half has been selling the golden goodness at the Handmade in the Hunter Markets under the brand of Largs Honey.

While he spends his days keeping things in tip-top condition as part of a busy maintenance crew at Tyrrell's Wines at Pokolbin, much of his spare time is consumed by the challenging task of caring for a collection of 15 hives at his Largs property.

“I moved to Largs almost ten years ago, and my neighbour had bees,” Mark said.

“We soon became very good friends, and it wasn't long before I had hives in my yard as well.

“We currently have 15 hives in various stages of producing honey.

The amount of honey collected in a year depends upon rainfall and weather.

“The biggest challenge is having enough time for everything; juggling a full-time job while still inspecting the hives for pests, collecting the honey, bottling it and delivering to customers.”

The health benefits of honey are well documented throughout history, with countless records of its therapeutic uses for everything from eye and throat infections to being a popular treatment for wounds and skin infections.

These days however it is more commonly found on a menu than it is in the medicine cabinet and is popular both consumed as a condiment or used as an ingredient in other recipes for its rich, sweet flavours and silky smooth texture.

Largs Honey sells a range of raw, unprocessed honey, with flavours ranging from natural honey straight from the hive, to more interesting combinations including creamed honey, creamed ginger, macadamia honey and lavender honey.

Mark has been taking his wares to the Handmade in the Hunter Markets since April 2017 after being invited by organiser Karen Rowe to take up a stall.

“Karen invited me out to give it a try, and we received plenty of good feedback and encouragement to keep coming back,” Mark said.

“Everyone has a different palate, but a lot of people seem to enjoy what our little ladies (the bees) produce and we continually play with different tastes.”

Wine Country Restaurants Achieve Hat Status in National Good Food Guide 2019

The scores are in, and the results are official – Hunter Valley Wine Country is home to four of Australia’s top restaurants, with the recently released national Good Food Guide awarding restaurants in Pokolbin, Mount View and Broke with hat–status.

In the Hunter, Pokolbin was a standout, with Muse Restaurant retaining it’s two hats and Muse Kitchen retaining one hat. Mount View’s Bistro Molines and Broke’s Margan Restaurant also retained their one hat status.

The Guide of independent, anonymous reviews is written by a panel of trusted restaurant critics and recognises the best Australian restaurants nationally with ‘hats’, symbolised by a chef’s toque.

To secure a coveted spot in the Guide, restaurants in New South Wales and Victoria must score at least 14 out of 20, while all other states must score a minimum of 15. More than 500 restaurants from across the country were reviewed for this year’s Guide, with 264 of these receiving hat status, ranging from one to three.

To achieve a hat is a pinnacle of a chef’s career and a restaurant’s history, and the term ‘hatted’ has become embedded in the Australian lexicon.

Created in 1996 to build awareness of the quality of wines produced in NSW, the NSW Wine Awards have become an indicator of the growth and diversity of the NSW wine industry and the potential of new regions within New South Wales.

The recent 2018 NSW Wine Awards, saw 16 expert judges from across Australia taste a record number of nearly 900 wines over three days, resulting in 402 medal winning wines, of which 51 were gold medal winners. Of the gold medal winners, 27 of them were from the Hunter Valley - shared between Hungerford Hill, Sweetwater Estate, Tamburlaine Organic Wines, Tyrrell's Wines, Brokenwood Wines, First Creek Wines, Mount Pleasant Wines, Thomas Wines and Silkman Wines.

At the final awards ceremony held at Government House on 19 October, Mount Pleasant Wines 2017 Old Paddock & Old Hill Shiraz championed over the others to be given the title of overall Best Dry Red and awarded the ultimate title of 2018 NSW Wine of the Year and claim the ‘NSW Governor’s Trophy for Best in Show’.

Chair of Judges Dave Brookes commented on the Best in Show winner, “This is a wine of impeccable pedigree, purity and balance and one that highlights what the Hunter Valley does best – medium bodied, savoury red wines that are approachable and delicious in their youth yet have everything that is needed for a noble life in the cellar with spectacular results.”
