These days a trip to the Hunter Valley is all about wine (of course), but for a growing number of visitors it’s also about the experience, and that includes all sorts of tasting opportunities. Each and every Saturday, our local Hunter Distillery serves up over 5,000 test tubes (yes, test tubes) for tasters to enjoy their ever-growing range of vodkas, gins and liqueurs – certainly a different way to taste – and all adding to the experience. In this issue, we speak with Hunter Distillery’s Neil Langdon about this growing trend.

“En Plein Air” is a French phrase meaning ‘open (in full) air’ and is the practice of producing artwork outside - engaging with your surroundings, taking more notice of the way light falls and how shadows are cast by objects within nature.

During the Easter Long Weekend, there will be loads of fun for the whole family at Hunter Valley Gardens as they host a fantastic program of activities, entertainment and prizes, as well as an appearance by the Easter Bunny!

Now in its 11th year, this annual event will be held from Friday 14th to Monday 17th April, with the popular Giant Easter Egg Hunt taking place on Saturday and Sunday.

The Giant Easter Egg Hunt is the favourite of all the Easter activities, as children participate in the search for thousands of brightly coloured plastic eggs throughout the Storybook Garden. Every child that participates receives a gift of Easter chocolate at the completion of the hunt. The Giant Easter Egg Hunt runs every 45 minutes from 10am until 2.30pm.

Make sure you keep an eye out for the Golden Egg that will be hidden somewhere in the Gardens to win a Family Annual Pass for two adults and two children worth $350. There will be only one Golden Egg hidden each day, so be sure to arrive early!

But the fun doesn’t end there, kids can hang out with the Easter Bunny while he takes a break from delivering eggs, take part in gingerbread workshops, admire the hatching chicks, plus heaps more!

GRAPEST 5K! Exercise, laughter, entertainment and wine tasting all-in-one fun-filled day… does it get any better than that?

The Grapest 5k Run is a new series of wine-tasting fun runs, the likes of which has never been seen in the Southern Hemisphere! The event combines fitness with taking a tipple, with participants required to put in the hard yards before they get their red and white rewards.

Director for event organiser Centaur Outdoor Events, Peter Manning said “Themed fun runs are offering runners a fresh, exciting and fun alternative to the local 5km fun run scene, and something perceived as more ‘do-able’ than the more physically challenging obstacle mud race or triathlon-style adventure race.

Consisting of two sections, the Grapest 5k Run starts with runners sprinting, jogging or moving at whatever pace they choose, through scenic vineyard surrounds for either 5 or 10 kilometres. Then there is the 1km Wine Walk, stopping at wine-tasting stations along the way, sampling some of the best wines the country has to offer. But the fun doesn’t stop there, there is then an after party with live entertainment by ‘Hurricane Fall’, one of Australia’s most exciting up-andcoming country rock bands.

But if you are not keen on the first section, and more interested in wandering, sipping and learning about wines, that is also an option (albeit the less fun option!).

Three of Lovedale’s most loved wineries, Domaine de Binet, Adina Vineyard and Tatler Wines will be co-hosting the Hunter Valley event.

Italy in Broke Now in its 13th year, A Little Bit of Italy in Broke will once again transform the Broke Fordwich Wine Region in the Hunter Valley into a mouth‐watering Italian haven. Spanning three days, from Friday, April 7th to Sunday, April 9th, the event will celebrate all things Italian to the backdrop of the tranquil Broke Fordwich landscape.

The local restaurants, wineries, street food vans and caterers have all come together to create a weekend with a broad range of Italian temptations. The restaurants will be cooking up pasta, pizza, porchetta, antipasto, Italian picnic boxes and fire‐pit lamb. Visitors can dine in the vines, alfresco, on the run, graze through a range of dishes and venues, picnic at the long table or dine in a restaurant. Throughout the day, there will many opportunities to indulge in Italian and local cheeses, olives, cannoli, Italian pastries, espresso, cappuccino and a range of enticing gelato flavours.

Due to the overwhelming popularity last year, the workshops are back.

Pizza making, gnocchi workshops, cocktail classes, olive preserving and vineyard and olive grove walks are just a few of those on offer.

Throughout the weekend look out for the event flags that indicate participating venues and be sure to pick up your event wine glass ($10) at your first stop – this is your ticket to enjoying and sampling wine at each venue.

To make experiencing the event a little easier, Rover Coaches will be operating an event Mini‐Shuttle, running a continual loop from McNamara Park in Broke to all event venues throughout the day. On Saturday 8th April, RidgeView will be hosting their Autumn In-Season Dinner – a night of fabulous wine and a menu highlighting the very best seasonal produce with a specially crafted menu.

Executive Chef, Donna Hollis and Sous Chef, Kelly Scott have created a unique feast using the fresh seasonal ingredients from the kitchen garden together with freshly sourced local produce.

You will be welcomed with canapes and bubbles, followed by RidgeView cherry tomato and goat’s cheese tart with caramelised onion jam and aubergine crisps. Your taste buds will be taken on a journey with stuffed squid, chilli and coriander prawn farce, spiced saffron rice with garlic and lemon buerre blanc, followed by sugo braised beef cheek, rosemary salted chats and charred zucchini. The menu will culminate with honey glazed figs, hazelnut biscotti, vanilla mascarpone with white chocolate and ginger butternut rocks.

Owner and winemaker, Darren Scott, has matched his award-winning, single estate wines to the set menu to complete the dining experience.

This year’s event has been themed “Hunter & Gather” in celebration of RidgeView’s ‘Kili Krew’ climbing Kilimanjaro to raise money for the School for Life Foundation. A portion of ticket sales will be donated to this worthy cause as part of RidgeView’s fundraising efforts.

The School for Life Foundation is a not-for-profit organisation aiming to break the cycle of poverty in rural Uganda through the provision of quality education and associated services, including employment and health care.

It’s a familiar sight on a Saturday in wine country – groups of people crowded around a long, gleaming bar eagerly awaiting a taste of the establishment’s prizewinning products.

Cellar door manager Neil Langdon said since opening four-and-a-half years ago, the cellar door’s original bar space has been more than doubled to cope with the numbers of tourists and locals alike who stop by for a tasting – and even that still isn’t big enough sometimes!

“The popularity is across the board; male or female doesn’t make any difference, and all different age groups, we’ve had people in here in their 90's tasting, and actually buying.”

“There’s a lot you can do with them and there’s all different times you can have them. We have our dessert varieties like the chocolate and caramel vodka, choc mint and Turkish delight liqueur, butterscotch schnapps, they are great after-dinner drinks.

“Then we’ve got our summer afternoon with blackberry, mango, passionfruit and ginger, it’s my favourite because it’s just so refreshing. Mango liqueur is our best seller. It’s sweet, the flavour is derived from real mango so it has a really beautiful aroma and it is easy to drink because it’s 20 per cent alcohol so you can’t tell you’re drinking alcohol.”

For those looking for something a little stronger, there’s the awardwinning Copperwave Gin and uniquely flavoured Jail House Gin, as well as the Connoisseur Range, which includes their product with the highest alcohol content, Arak (52 per cent), and the spirit with the most interesting history – Honey Vodka.

“Part of it is that some people don’t like wine and we’ve got spirits, which a lot of people do like,” Mr Langdon said.

“The other thing would be that it’s a really good break in the day for the bus groups. The average person will go to about three wineries maximum, after that everything starts tasting the same, they’re hearing the same thing and unless you’re a wine connoisseur, you’re not really going to be able to tell a big difference between the wines.

“So with a lot of the local tour operators, we are now part of their permanent tour and there’s a few from Sydney who come up as well and we’re always included.

“Some people are coming up for a wine tour, they only want to try wine, but others come for an experience of the Valley and that’s where we fit in really well.”

WORDS MICHELLE MEEHAN David Morgan always loved art, having studied the techniques and dabbled in drawing and painting all his life.

Around 15 or 20 years ago he “fell into” the art of decoupage, challenging himself to decorate a blanket box for his daughter after she spied a rather expensive version she liked on a family trip to Berrima.

But it wasn’t until he retired from a lifetime in banking that the Nelson Bay man found a way to turn his passion for creating into a thriving little business.

“I have had an interest in painting since a very early age. On a family visit to Berrima, my daughter saw a decoupaged blanket box, and I said, ‘I could make that!’

“With no experience in decoupaging, I purchased two large blanket boxes (having two daughters).

“Luckily my wife and I spent a weekend in the Blue Mountains, and we came across Glenbrook Art and Craft. Jane Moore, the owner, said ‘Noone starts on a blanket box,' and suggested I sit in on a lesson, so for two years I travelled to Glenbrook, Saturday mornings, learning the craft, and completing two blanket boxes.

Now the Hunter’s very own “Nanna” – Nanna Kerr’s Kitchen – will keep the fires burning day and night after deciding to extend their hours to trade seven days a week.

They use predominantly organic and locally-sourced ingredients, favouring Hunter Natural’s free range beef and lamb; Little Hill Farm in Mount Vincent for their supply of eggs and chickens; Organic Feast in Maitland for fruit and veggies and Farmer’s Table in Lovedale for herbs and leaves.

Both themes are continued in their recently expanded wine list, which includes Baringbah (their onsite label), organic winemakers Macquariedale, Krinklewood and Tamburlaine, and Hunter selections from Domaine de Binet, Ballabourneen, Cockfighter’s Ghost, Pooles Rock and Audrey Wilkinson.

Many people dream of travelling to far-flung lands for the chance to savour a taste of a different language, history, culture and, most tantalisingly, cuisine.

Located on the award-winning Calais Estate, the tapas-style menu features Mediterranean classics with a twist, through to imaginative new creations.

But you don’t have to clock up the frequent flyer miles to take your tastebuds on a trip around the world, with a host of multicultural menus on offer right here in the Hunter Valley.

A duck liver parfait, accompanied by cornichons, caramelised onion and house made sourdough is one of the signature dishes on Matt’s menu, while his soft-centred chocolate soufflé with Baileys and almond ice-cream is a perennial favourite, having been on offer at The Verandah Restaurant since they first opened 10 years ago.

Your international itinerary begins close to home with the flavours of the Orient, dished up at the region’s only winery-based Asian eatery, Oishii Japanese and Thai Restaurant.

Located at Tempus Two, it offers regional and traditionally-inspired dishes prepared by an expert team of Asian chefs.

The restaurant is owned and operated by Bo Lorchaiwet, who arrived in Newcastle from Phuket, Thailand in 1992 to visit her sister and instantly fell in love with the area.

Drawing on her own cultural background and her love of Asian cuisine, Bo created an authentic menu featuring everything from teppanyaki and gyoza to pad Thai and green chicken curry, which in true Asian style, are perfect for sharing with family and friends.

Oishii’s signatures dishes would undoubtedly be their expertly cut and prepared sushi and sashimi selection, which uses a variety of raw seafood sourced from the Sydney Fish Market.

Restaurant manager Patrick Boonsoong said preparing freshly cooked food that is served quickly and is reasonably priced has been a “winning formula” for the restaurant during the past 10 years.

He acknowledged that while showcasing and pairing these intriguing tastes with Australian wine had been a big challenge initially, the combinations are now appreciated by many wine lovers who live in or visit the region.

A trip to The Verandah Restaurant at Pokolbin will add a Mediterranean stamp to your gastronomical passport, with Matt Dillow’s menu inspired by his family’s Maltese background.

“It’s the food and flavours I love to eat, so it is enjoyable cooking with and showcasing a love of Mediterranean flavours,” he said.

But the Sydney-born chef loves to continually try new things, with his egg yolk ravioli with ricotta and cavolo nero (a loose-leafed Italian cabbage) becoming a feature at recent events.

“Ravioli is a traditional rich pasta that uses more than the usual amount of egg yolk in the pasta. In the 14th Century it was a signature of wealth if your pasta was a richer yellow colour,” Matt said.

“The egg yolk in the centre of the ravioli is a difficult one to master as the yolk needs to be runny, but the pasta needs to be cooked to perfection.

“It is a delicate process but a fun challenge and a fantastic result.”

A more extensive taste of Italy can be found at Il Cacciatore Restaurant at Hermitage Lodge, which is owned by Mark and Noreen Gottaas.

Specialising in cuisine from Northern Italy, which includes regions such as Tuscany, Emilia-Romagna, Lombardy, Liguria and Veneto, the restaurant reflects the Gottaas’ philosophy of food - fresh and uncomplicated while at the same time highlighting that there is more to Italian cuisine than just pizza and pasta.

“The (Northern Italy) region is home to the world famous white truffle, parmesan cheese, Parma ham, balsamic vinegar and the finest olive oils in the world,” Noreen said.

“Tuscany, with its green rolling hills, olive groves and grapevines, features a cuisine that is quite rustic, with an accent on fresh vegetables, beans, fresh tomato and garlic.

“In the Lombardy region, the cuisine features salami and other fine meats, polenta and risotto. The coastal regions, such as Liguria and Veneto rely heavily on the sea for their ingredients. The Liguria region is where pesto originated.

“The Emilia-Romana region is the richest gastronomic region in Italy. The city of Parma is the focus of the region, resulting in a cuisine featuring an abundance of parmesan cheese, Parma ham, Bolognese sauce and rich, dark balsamic vinegars.”

Oishii Japanese & Thai Restaurant

With so many traditional recipes on offer, it’s hard to go past the restaurant’s signature dish – the gnocchi.

“Our delicious housemade potato gnocchi is featured on each of our seasonal menus,” Noreen said.

“Although our cuisine is Northern Italian inspired, we often modify traditional recipes to better cater to Australian tastes.

An example is our gnocchi, which we pan fry … this not only heats the gnocchi but adds texture and a toasty flavour.”

And if you want to take a taste of Italy home with you, Il Cacciatore also hosts gnocchi-making classes, which allow participants to make their own gnocchi, as well as watch demonstrations on how the gnocchi can be featured in dishes easily prepared for family and friends.

Sharing with others is also on the menu at RidgeView Restaurant, which will take tastebud travellers on another Mediterranean-inspired adventure with their Greek and Cypriot food.

“The dishes that we serve are typical to those areas and are large portions to share called mezzedes,” executive chef Donna Hollis said.

“We use special cooking techniques, with our meats cooked on our Cypriot grills, which are big skewers and smaller skewers of meat like lamb and chicken cooked over hot coals to give a slow-cooked, smoky flavour when finished.

“I would say the serving sizes are unique and also the flavours that we use are typically common in those areas. We use a lot of lemon, oregano, garlic, paprika amongst a wide variety of fresh herbs that are sourced from our onsite garden.

“The Greeks and Cypriot culture is generally very family-orientated, and our style of dining is set up to reflect the sharing of dishes with family and friends, and certainly no one leaves hungry!”

RidgeView Restaurant is known for its souvla and souvlaki, cooked over the hot coals on the Cypriot grills, as well as the halloumi with caramelised pears, pistachios and fresh oregano topped with fresh radicchio. ►

FARNHAM As far as Australians are concerned, on stage and on record, John Farnham is without challenge Australia’s most successful solo artists.

With a career spanning over 50 years, Farnham’s popularity has never diminished, still needing to stage arena-sized concerts to satisfy the demand.

As an 18-year-old, Farnham’s career took off with the release of the novelty single ‘Sadie the Cleaning Lady,' which became the biggestselling single in Australia at that time. Practices include the use of specific herb and mineral preparations to enhance the vitality of plants, soils, composts and livestock. Manual or mechanical weed control, nontoxic pest management, and sustainable animal husbandry are also employed.

Some people might perceive biodynamics to be a bit whacky, but anything that we don’t yet fully understand or have the knowledge to fully explain is often seen as whacky. It’s the grape growers that are spending long hours observing what is happening in the vineyards who are best qualified to judge, and the rate at which more and more of them are converting to organic principles is quite convincing!

Mark Davidson, Chief Winemaker and Managing Director of Tamburlaine Organic Wines in Pokolbin and Australia’s largest producer of organic wines, is one of those who brought some hard-nosed business sense to what had long been regarded as a hippie pursuit.

First established in 1966, Mark has maintained a pioneering vision and turned Tamburlaine into Australia’s largest organic wine producer with a 5- star “outstanding” rating by James Halliday.

Tamburlaine has organic and bio-dynamic vineyards in the Hunter Valley and the Orange Highlands of NSW. Its 93-hectare Orange property has also integrated bio-dynamic methods into its organic management

system and is now one of the largest certified organic vineyards in the Southern Hemisphere.

At Tamburlaine, all organic waste – plant material, grape skins, office paper, food scraps, manure and leaves – is composted and used to fertilise vines, dramatically reducing the amount of waste heading to landfill. In place of pesticides, sheep are used to keep weeds and grass under control underneath vines.

For Mark, the shift to organic vineyard management and a more sustainable business model has had a massive effect on the way Tamburlaine operates – leading to a 740-tonne reduction of carbon dioxide pumped into the atmosphere each year and significant energy cost savings.

Owner Jo Clarke said what started out as a simple idea to set up a small chocolate shop in Hunter wine country has grown into a booming business venture that now includes three stores and 40 staff. ►

Easter is undoubtedly their busiest time of year, as more and more people seek out something finer than the mass produced eggs lining the shelves of their local supermarket.

“The difference begins with the chocolate that is used for the product,” Jo said.

“The major commercial companies extract a high quantity of the cocoa butter from the raw material before they use it, but it is the cocoa butter that actually gives chocolate its richness, smoothness and overall taste sensation.

“We are very conscious about using a quality Swiss or Belgium couverture as the base of what goes into our melting tanks because it is like any recipe that is prepared by a chef - the best end result comes from using top quality ingredients.

“People’s tastes have changed over the last 15 to 20 years, people appreciate the better quality, and we are proud of our products and the reputation we have earned.”

That reputation has developed on the back of Hunter Valley Chocolate Company’s amazing array of handcrafted products, which are available seven days a week online as well as in-store at their “Twenty-3-Twenty” Chocolate and Fudge Factory on Broke Road and their retail outlets at Hunter Valley Gardens and Peterson’s House.

There’s sure to be something to cater to every taste bud, with dark, milk and white buttons and blocks a staple of the range.

Those looking for a chocolate-coated treat can choose from a selection of nuts including the ever-popular almonds and macadamias, as well as ginger, liquorice, honeycomb and orange peel.

Pure fruit oils are used to create mouth-watering chocolate infusions, with flavours such as raspberry, lime, mint and orange, as well as the newest addition to their line – musk.

“We also do candy-coated eggs and freckled eggs, which were very popular last year, and for something more novel, we use a real egg shell with chocolate piped into it via a tiny hole. The kids can crack the egg shell, peel it off and find a solid chocolate egg underneath.
