As we go to print winter has well and truly arrived in the Hunter Valley. Hunter Valley Gardens is fully into the winter spirit with “Snow Time in the Garden” - the second largest feature event for the Gardens (second only to the Christmas Lights Spectacular). Who needs to head south to enjoy a spot of tobogganing or outdoor iceskating when you can enjoy it all right here! The Olive Tree Market will be making its way to the Maitland Regional Art Gallery this month for it’s seasonal ‘Winter Pop-Up.’ Drop in and meet the talented creative community, enjoy live entertainment and gourmet artisan produce. Oaks Cypress Lakes has been crowned Australia’s best golf hotel for the last two consecutive years at the prestigious World Golf Awards, and much of its recent success is due to the investment of the internationally renowned Minor Hotels Group.

Since then the resort has been undergoing a major refurbishment program, and a renewed focus on the resort’s hospitality offerings has also seen Oaks Cypress Lakes up-the-ante on dining. Cranky Handle Rally

Richmond Vale Railway Museum SAT 17 + SUN 18 AUG The Hunter Valley Vintage Farm Machinery Club and Richmond Vale Railway Museum are combining once again for the 4th annual Cranky Handle Rally – a demonstration of everything to do with early machinery, engines and tractors. Maitland Steam will also have a steam train engine display over the weekend, and train rides on Marjorie (pictured) are included in the entry cost – this is very popular with kids! The Class of ’59: The Rock & Roll Circus Tour 2019

Hunter Valley Beer & BBQ Festival

Wine Country is set to sizzle with the inaugural Hunter Valley Beer & BBQ Festival to be held at Hope Estate on Saturday 3 and Sunday 4 August. A celebration of all things Beer & BBQ, this Festival brings together two of Australia’s favourite pastimes, which also happen to be hugely popular trends in the food scene in a stunning rural setting. The event will stage sanctioned rounds of both the Steak Cookoff (Saturday) and Australasian BBQ Alliance Championship (Sunday) and have over 40 beers and ciders available to taste. BBQ, from Low N Slow through to Grilling and masterfully brewed Beer are both growth segments. “We’re really excited to be hosting Beer & BBQ, which will be our second lifestyle event for the season,” says Hope Estate owner Michael Hope. “We know that lifestyle events have a massive appeal to both locals and visitors to the area and believe the combination of Beer & BBQ is a match made in heaven. We’re lucky enough to claim Hunter Valley Wine Country as our backyard playground, and it’s sometimes easy to forget that the Hunter Valley is a major tourist destination in its own right with a growing number of reasons to visit. Of course, there’s the wine, the food and an ever-increasing foray of live concerts – but increasingly it’s festivals such as this that are attracting visitors who are looking for different experiences and to maybe learn something new. “We already know that large concerts, such as the Red Hot Chili Peppers, bring in thousands of visitors for the weekend, but what we are learning is that there is also an appetite for lifestyle events,” says Hope Estate owner, Michael Hope. “People are travelling to the Hunter Valley for more reasons than just filling their car boot up with wine. In creating the cheese and chocolate experience within Wine Country, we are exposing the Hunter to a broader market. I am a big believer that we need to evolve to survive.” Lifestyle events enable many local businesses to showcase their products to not only Hunter residents but also those travelling from Sydney and regional NSW. “Cheese & Chocolate 2018 was an incredible event,” says Jason Chesworth of Hunter Belle Dairy.

“Never have we seen crowds in such large numbers that were all seeking gourmet artisan products. We sold out of cheese twice and after two quick trips back to restock; we were left amazed by the level of expectation amongst consumers with our premium products our best sellers.” “Hunter Valley Cookies had one of the biggest single days trade from any event we have attended in 20 years last year,” said Sheryl Machain of Hunter Valley Cookies. Imagine being 12 weeks’ pregnant and suddenly out of a job. This was the scary scenario faced by Kishani Connett four years ago when the company she was working for closed without warning. It also turned out to be the push the Raymond Terrace woman needed to turn her private passion for creating art into a potential career path. “I started Damica Designs almost four years ago. The name ‘Damica’ comes from my Sri Lankan heritage and is my Sri Lankan name,” Kishani said. “At the time I was 12 weeks pregnant and suddenly found myself without work, the company I had worked for closed without any warning. “With lots of support from my husband and best friend, I decided to just go for it and put myself and my artwork out there. I started painting again and created my own market stall. “I was very nervous as I had only ever considered my art as more of a hobby, not as a potential business; almost four years later, and my little business has grown and is still growing. “It makes me so happy to know that people love and enjoy my art as much as I enjoy making it.”

Kishani’s love of art began at a young age and continued through her schooling, eventually seeing her graduate with a Bachelor of Fine Art at the University of Newcastle, producing major works in photography and painting. Now focussed predominantly on using acrylic paint on canvas, she said she enjoys the process of building up the layers of paint and colour to create something unique and beautiful. “I find inspiration from many areas, but I am always drawn back to nature. The colours in nature are truly amazing; I try to capture this to create bright and bold designs,” Kishani said. “One of my most loved original artworks would have to be my very first elephant ‘Tashi’. I have always had a love for elephants; they are a sacred animal often celebrated in Sri Lankan culture.” For the past six months, Kishani has been selling her art at the Handmade in the Hunter Market and is looking forward to returning to the markets regularly later in the year. Glühwein (Glow Wine in German) – reminiscent of a European Christmas and Austrian ski holidays – is a hot, spiced wine also known as 'mulled wine' or 'spiced wine'. It consists of wine and spices heated to just below boiling point before drinking. Mulled wines are an ancient drink with a long history dating back to as far as 500BC where spices and herbs were added to wine for health reasons as well as to improve the taste. In Australia it is known as a very tasty drink that warms up the body and is popular in the snowfields, and for that matter anywhere cold! Ingredients (for 10 people): • 2 bottles of good quality red wine • 2 cups of water • 6 cloves • 2 cinnamon sticks • 2 oranges – cut into bite-size pieces • Oranges for decoration Directions: 1. Put all ingredients in a pot and bring it close to boil. For additional taste cut 2 oranges into bite-size pieces and add to the wine. 2. Let simmer. 3. Remove cloves and cinnamon stick before serving it into lightly pre-warmed glasses. Decorate glasses with an orange slice. Enjoy and drink responsibly!

It’s known internationally as Australia’s best golf hotel, but it’s not just the fairways and greens of the championship course that are making an impression on visitors to Oaks Cypress Lakes Resort. Nestled in the Hunter Valley’s picturesque hinterland surroundings of Pokolbin and located just two hours’ drive north of Sydney, Oaks Cypress Lakes Resort offers the ultimate holiday, wedding, conferencing, events and golfing destination. The resort was built on a stunning 25-acre property at the heart of one of Australia’s oldest wine growing regions in 1992, with an 18-hole course designed by Steve Smyers of Florida. Guests, golfers and other visitors can choose from two premier food and beverage establishments: Oak & Vine Bar or Cypress Lakes Bar & Bistro.

Open for dinner service from Wednesday to Saturday, Oak & Vine is a stunning and intimate dining venue committed to place, respectful of history and dedicated to local producers, offering enticing entrees such as the beetroot and vodka cured salmon, mouth-watering mains including the hearty oven roasted lamb rump and a range of decadent desserts. The Bar & Bistro is a more relaxed affair, offering a casual dining destination and social bar setting where golf members, resort guests and locals can celebrate long afternoons enjoying time with family and friends. Opening daily from noon to 9pm, the all-day bistro menu is full of comfort food favourites, from grilled fish tacos and slow cooked crispy pork belly to the traditional BLT or Cypress beef and bacon burger. Finally, there is the newest addition to the resort’s food and beverage fold, Oak & Vine Bar, which is fast establishing itself as one of the best whiskey bars in the Hunter Valley. Among the team leading the resort’s dining evolution is newly promoted Executive Chef Praveen Leelavathy. An award-winning chef with impeccable credentials, Praveen joined Oaks Cypress Lakes in October 2018 as the Executive Sous Chef, before being promoted to the lead role last month. Born and raised in southern India, Praveen began his hospitality journey by initially training in Hotel Management before making the transition into the kitchen, inspired in part by the career of his uncle, Suresh Kumar, who was an executive chef in Dubai. He soon moved to the United Arab Emirates to join his uncle at the Four Points by Sheraton, before progressing his career at a number of other luxury hotel chains across Dubai, including the Kempinski Hotels, Address Hotels and Resorts, and the Marriott International. Praveen spent 13 years honing his skills in Dubai, working across a wide range of restaurants and dining establishments including a stint as a speciality chef for At.mosphere Burj Khalifa. Located on the 122nd floor of the world’s tallest building, it is the peak of fine dining in Dubai, both figuratively and literally. (Continued next page) ►

(Continued) He was a regular participant in the renowned Emirates International Salon Culinaire competitions, where he was twice named runner-up in the Chef of the Year category and also won more than ten gold, silver and bronze medals in categories ranging from the five-course gourmet dinner menu and live cooking beef to savoury tart plated and fourcourse vegetarian menu. Praveen said his experiences in Dubai and the high calibre of chefs that he worked with and was trained by, including Dwayne Cheer and Jason Oakley, helped develop him into the chef he is today. “There was no plan for me to become a chef, I had something else in my mind, and then it was in the early 2000s I was reading and seeing the executive chefs’ high profile pictures, and lifestyle in magazines and on the internet, and I became fascinated,” Praveen said.

“

My mum’s brother, my uncle, was an executive chef at that time, he had a very good career through hard work and dedication, and he was one of my inspirations to be in this industry now and where I am today.

“I worked with a lot of different chefs (in Dubai), who all came from different parts of the world, from Italy, from France, from Germany, from Greece, almost every part of the world. I worked with Michelin star chefs, I worked with chefs from all different places, and so I got exposure and experience from them.” In October last year, Praveen fulfilled a long-held dream to move to Australia, joining the team at Oaks Cypress Lakes. He said the Hunter Valley had been a change of pace for himself and his wife Anupriya, but they love the region’s community feel, which has also provided an unexpected incentive to be at his best.

“I always wanted to be an Executive Chef, that was my goal, and moving to Australia was also one of my dreams because it’s a beautiful country, with great producers, great chefs and great restaurants to explore,” he said. “Moving to the Hunter Valley has proved to be very different to city life, the Hunter Valley is much quieter and without the hustle and bustle that comes with a city lifestyle. “It’s also a small community, so people really talk; if you are good at what you do then everyone knows that and if you are bad, well then everyone knows that too. So there is a real incentive to continuously improve and to keep that positive reputation. “With a community such as this, there are also always people willing to support you; the locals, people who work in the vineyards, the winemakers and management are also all very supportive, so it’s really good to be in this part of the Hunter Valley and at Cypress Lakes.” Being a part of the community is also important to Praveen, who is keen to ensure that the menus at Oaks Cypress Lakes support local producers and reflect the seasonal offerings. ►

“I always go to the local farmers’ market every Sunday to see what the producers have on offer, and we have a small garden (at Oaks Cypress Lakes), so I’m trying to incorporate a few of the things from the garden into what I’m producing.” Community is also at the heart of the direction being taken by another new member of the Oaks Cypress Lakes team – Shaun O’Bryan. Having spent 18 years working in the United States across various Ritz-Carlton properties, including several luxury golf and spa resorts, Shaun returned to his homeland of Australia last May, before being appointed as General Manager of Oaks Cypress Lakes Resort in January this year. “What I've learnt in these destinational markets is that the business has to become a pillar of the community, a resort of the community,” he said. “You've got to focus as much on bringing people to the Hunter Valley and collaborating with some of the other businesses and the associations, as you do on collaborating with and fitting into the local community. You have to be involved in the local community, you have to support events and issues and different philanthropy efforts and environmentally friendly efforts, and be a good business of the community. “I believe (Cypress Lakes) did a good job of that in the past, but I think we can do a much better job in the future and that's part of my strategy and focus as well.

“

We're really pushing here to drive local business and be a place that people will think about, not that it's a resort that they can't just come and have a beer or a meal at. We want them to feel welcome; it can be just like your local hangout place, your local watering hole, your local restaurant for special occasions or your local bistro restaurant.

Aside from the focus on using local produce on the menu, Shaun said Oaks Cypress Lakes was also dedicated to supporting the local wine region, with “99 per cent” of the wine available at the resort being sourced from the Hunter Valley. ■

SWEET TIPPLES With Winter we start to see several really big tasting, small production seasonal brews that are real winter warmers. Some are made with fruit or spice, and some rely on the brewer's artful use of malt and hop combinations that provide for a wonderful complexity of flavours. What we are also seeing is a move toward slightly richer, darker and sweeter tastings beers – and often with more alcohol. Hunter Beer Co. is famous for brewing beer – and not just any beer, but instead, a unique range of innovative, handcrafted beers that come with a diverse range of flavours and styles. The small brewing team headed up by Keith Grice “The Beer Guy”, believe that beer should be a journey – “an adventure” – bold in flavour and character. A very unique beer with a big difference is the Barley Wine Beer. Keith has made two versions of this beer – one being aged for four years and the other aged for five years. This is a unique tasting, big drinking dark stout at 13.8% alcohol with a big personality and loaded with flavour – the perfect winter drink. Muscat! Muscat (Moscato in Italy or Moscatel in Spain and Portugal) is the name given to one of the oldest grape families in the world and is said to have originated in the Middle East. The Muscat family of grapes include over 200 grape varieties belonging to the Vitis Vinifera species that have been used in various forms of wine production throughout the world for many centuries. There is no one "true" Muscat, but rather a great many incarnations, each with its own regional character. Today, the grape is found throughout the wine-producing world making a wide range of wines from light, sweet sparkling and semi-sparkling wines to dry and fortified Muscat such as that found in Australia. Muscat Blanc à Petits Grains is a white wine grape and is the oldest member of the Muscat family and perhaps the oldest domesticated grape variety in the world. The variety is named for its characteristic small berries and seeds (petits grains). While technically a white grape, it is common for various Muscats to change the colour of their skins from vintage to vintage – for example, there are strains of Muscat Blanc à Petits Grains vines that produce berries that are pink or reddish brown. The same vine could also produce berries of one colour one year and a different colour the next. These strains are more prevalent in Australia where the grape is also known as Frontignac and Brown Muscat Variants, where the differing grape colour is stable, are typically classified as separate grape varieties Muscat Rouge à Petits Grains for red skin colour and Muscat Rose à Petits Grains for pink skin colour. Muscat of Alexandria or Muscat Gordo Blanco (also known as Lexia in Australia) is the second-oldest member of the Muscat clan and produces lighter wines that are usually soft and fruity. The distinctive grapey aroma of Muscat is one of its chief properties, but the variety’s versatility also makes it an attractive option for winemakers. Drawbacks include low acidity and an inability to age more than about four years (except fortified Muscat). Muscat may be produced as dry, medium, sweet, sparkling or even dessert wine. Being a typically sweet, rich wine that may have spicy notes, it is a wine often served on its own after a meal as a dessert wine, but it can be paired with food that has a similar sweetness and richness. Muscat is excellent with fruit-based desserts – banana and vanilla custard or caramel slice, full-bodied cheeses such as blue cheese and gorgonzola, milk chocolate and dry cookies, such as biscotti.

It’s a specialised role within the industry and I know that from my experience of talking with sommeliers, they are super passionate about what they do. Sommeliers can be an interesting bunch and are generally only found in our better restaurants and those restaurants that specialise in all aspects of wine service as well as wine and food pairings. The role is much more specialised and informed than that of a wine waiter, and in the finest restaurants, the role can be as important as that of the executive chef. Most people's dealings with sommeliers are limited to a brief conversation at a restaurant table while trying to select a wine or finding a wine to go with their meal, but there is a lot more to the sommelier's job than pulling corks and describing wine. ►

The most important work of a sommelier is in the areas of wine procurement, wine storage, wine cellar rotation and providing expert service to the restaurant's clientele. A sommelier's duties may also include taking responsibility for the development of the restaurant's wine list, which in itself can be a complex process and requires constant research and an excellent knowledge of wine and wine varietals. Rather than selecting a number of wines that take the sommelier's fancy or are his (or her) personal favourites - the restaurant's wine list must fulfil several important criteria, such as provide a balance with the food offering and also meet the affordability of the restaurant's patrons. Apart from the long hours, the role can also be quite physical too with the sommelier having to receive incoming stock, check it against the order, and then move it into secure storage – either in boxes or into wine racks. A busy fine-dining restaurant could receive up to 30 boxes of wine and other beverages in a week, all of which have to be physically handled until its ultimate sale. A sommelier may also be responsible for the training of other restaurant staff in the handling and serving of wines to the restaurant's customers. Working with the culinary team, they also pair and suggest wines that will complement each particular food menu item. This necessitates a good knowledge of how food and wine, beer, spirits and other beverages work in harmony. Every time a new wine is added to the list, the waiters and bar staff have to be introduced to it and learn what foods to match it with and how to describe it. Most wine lists are constantly evolving, so the training aspect of the job never stops. Top sommeliers tend to be very talented people who have built up an enviable knowledge of the wines and vintages of the old and new worlds.

It takes several years to develop an accurate wine palate and to be able to identify the various wine varieties confidently. In modern times, a sommelier's role may be considered broader than working only with wines and may encompass all aspects of the restaurant's service, with an enhanced focus on wines, beers, spirits, cocktails, non-alcoholic beverages and coffee. ■

Four CLASSIC Hunter Varieties Mistletoe Wines

2017 Reserve Chardonnay – RRP $33.50

CHARDONNAY Chardonnay is one of the world’s greatest and prolifically grown grape varieties. Ranging from unwooded, light and fresh to full-bodied barrel fermented and aged; this versatile grape can produce a range of styles that can be matched with just about any food. Such was the demand for Australian Chardonnay in the late 1980's that the area of Chardonnay vines increased more than five-fold during the decade so that in 1990, Chardonnay, became Australia’s most planted white wine grape variety. But then it all changed. This peak in popularity in the late 1980 and early 1990's gave way to a change in tastes. The market was drinking more red wine, and there was a backlash from consumers disenfranchised by the buttery taste and high level of oak used in these wines. Chardonnay sales declined as consumer tastes turned towards lighter wines such as Pinot Grigio and the crisp, juicy coolclimate Sauvignon Blanc. Despite this setback, this adaptable and hearty grape remains one of the most widely-planted grape varieties worldwide, is planted in more wine regions than any other and is an important component of many sparkling wines around the world, including Champagne. Chardonnay is making a comeback with styles that are not as heavy as the past but instead lighter, more elegant, a little more subtle and a little less oak. When it comes to food, Chardonnay has the potential to be paired with a wide range of food types – especially poultry dishes, pork, seafood or recipes that have a heavy cream or butter base. Enjoy the buttery taste of a good Chardonnay with mild cheeses or a crab cake appetiser. Oysters and salmon also pair well with the citrus flavours of a crisp Chardonnay.

Hunter Valley Semillon is a unique white wine which keeps getting better with age and is considered to be the highest quality and best example of dry white Semillon wine produced anywhere in the world. dry without the use of oak and then bottled. Classic Hunter Semillon is restrained, with piercing acidity and lemon flavours. As a cellaring wine, it is one of the best and can be cellared for a good 20 years and even longer. Over time it mellows from a fresh, tangy, fruity and pale coloured white wine into a deeper coloured softer and richer wine – evolving through an array flavours, slowly developing into richer and more honeyed characters that match with many different foods. When young, Semillon is just perfect with fresh oysters, prawns and any white-fleshed fish. As it ages (10 years or more) pair it with smoked trout or salmon, grilled fish, roast chicken, creamy pasta, lemon based sauces, shellfish and most other seafood as well as semi-hard cheese.

SHIRAZ Shiraz (or Syrah) is a dark-skinned grape that is thought to have originated from the Rhone wine-growing area of France but is now grown throughout the world and used primarily to produce rich, strong red wines which can be both varietal or blended. Cuttings of Shiraz vines first arrived in Australia in the early 1830's and by the 1860's was established as an important variety in Australia. Shiraz is, without doubt, Australia's favourite and most important wine variety and has played a crucial role in the development of our wine industry, both within Australian and overseas. Today, Shiraz is the most widely planted grape variety in Australia where it accounts for 40% of all red grapes planted in Australia. Australia is also the world's second largest Shiraz grower, after France. The beauty of Shiraz is that it is extremely flexible in its ability to adapt to virtually any combination of climate and soil and can be made into a range of styles, defined by the terroir of the region and the winemaker's skill. Despite the region’s tough growing conditions, the Hunter Valley produces some of the most famous Shiraz in Australia. The typical young Hunter Valley Shiraz is a medium bodied wine showing red and dark berries, spices and a great deal of tannin. With age, the wines become far more complex, full-bodied, yet smooth and richly flavoured wine with some earthy tones. Shiraz enjoys the reputation as the ‘food-friendly’ wine, pairing well with rich foods such as veal dishes, lamb, steak (especially peppery steaks), kangaroo, roast duck, Indian and Middle Eastern dishes, chocolate and smoked cheese and cured or smoked meats.

MERLOT Merlot is most famous in its homeland of Bordeaux in France where it is often used to produce some of the world's most expensive wines. In Australia, it is considered to be one of the most important red grape varieties – coming in 3rd after Shiraz and Cabernet Sauvignon. Merlot is softer, fruitier, and earlier-maturing than Cabernet Sauvignon, yet displays many of the same flavours – cherry, currant, plums and raspberries along with mint and tobacco. Tannin levels also tend to be lower than other red grape varieties, and the skin is a deep colour. Merlot also possesses a rich and ample

Although enjoyable as a varietal wine, it is most successful when blended with Cabernet Sauvignon – contributing to the depth of flavour and ability to age that Merlot lacks. Merlot can also soften the severe and tough nature of a young Cabernet. The Hunter wine region has extensive plantings of Merlot, and the summer heat is considered to provide the ideal growing conditions for this versatile grape variety. In recent years Hunter Valley Merlot has experienced a surge in popularity and is often judged to be more robust and fleshy than other well-regarded varieties with a rich bouquet delivering one of the most pleasurable wine experiences. When it comes to food matching, Merlot can match well with all different types of food including Italian-style, red-sauced pasta or even salads and is a perfect wine with Winter beef stews and roasts. The agile sweet fruit characters of some Merlots are best to match with roasted meats or Mediterranean vegetables that complement the variety. ■

these filling dishes are synonymous with casual dining and comfort food – especially during the colder months. Matching wines with pasta was previously a relatively simple matter in the age of traditional sauces. Pasta gets all its flavour from its sauces – red meat sauces, creamy sauces, simple garlic and oil coupled with some tasty additions (grilled chicken, broiled fish, and steamed veggies, to name a few). It is this adaptability and divergence of flavour that makes pasta a universally recognised and loved dish, but it also makes pairing with the perfect glass of wine a challenge. Given the significant diversity that typifies both sides of the pasta/wine equation, the rule of matching them is that there is no rule! Instead, there are some guiding principles. As many sommeliers remind us (even when we're not talking about pasta), think about the sauce. Buttery sauces often require buttery wines, and lighter sauces call for lighter bodied wines – such as Pinot Grigio. Similarly, acidity also needs to line up between the dish and the wine as, generally speaking, foods with high acidity are inclined to overwhelm wines that don’t have a complementary level of acidity. For example, the fresh acidity of Sangiovese wine makes it a good match for anything involving tomatoes, from a simple marinara sauce to sauces like puttanesca or amatriciana. The list goes on. Fortunately, you don't have to be a sommelier to pick the perfect wine for your pasta feast - so if you're making the pasta at home have fun and use your imagination for the ingredients and don't be afraid to experiment with the wine.

Ultimately, it is the flavours and ingredients that you mix with your plate of pasta that will determine which wine should go in your glass so here are a few pairing tips: • Creamy sauce based dishes match well with delicious un-oaked Chardonnays • Cheese sauce dishes are perfect with Pinot Grigio and buttery Chardonnays • Tomato based sauces should be tried with a crisp rosé, a dry white or a light red. Sangiovesebased blends are also great with a tomato and garlic sauce • Pesto based dishes go well with dry, crisp whites like Sauvignon Blanc • Meat based sauces are well paired with mediumbodied Cabernet Sauvignon or a Shiraz/ Malbec blend • Pork dishes can be enjoyed with Chardonnay or Viognier • Seafood based dishes are well matched to Sauvignon Blanc, Pinot Grigio, Riesling, Semillon or a Rosé. Sunshine IN A BOTTLE Fortified and Dessert Wines WORDS Quentin von Essen

Dessert wines (or sweet wines) have been produced all over the world for centuries and hold a special place in the hearts of wine and food lovers - from the higher priced Botrytis-affected wines of Bordeaux to the gracious Tokaji wine of Hungary and the late-picked ice-wines (Eiswein) of Germany. Dessert wines are sweet, luscious after-dinner drinks that linger on your palate more deliciously than any mousse, cake or tart. Affectionately known as ‘stickys,’ these sweet wines are a sensational accompaniment to fruit desserts and are perfect with blue or soft cheeses. Alternatively, they can stand alone as a replacement for dessert at the end of a meal. Fermented in the same manner as conventional white wines, Dessert wines tend to be intensely flavoured, deeply gold in colour with bouquets of dried apricots, rich sweet flavour and a sharp acid finish. The types of desserts that a dessert wine can go with are limitless, but the general rule is for the dessert wine to be sweeter than the desserts to avoid having the dessert over-power the dessert wine. Here's a quick overview of three of our favourite fortified and dessert wine styles.

Lightly Sweet Dessert Wine

The ultimate dessert wine for fruit-based and vanilla-driven desserts. These wines are generally refreshingly sweet and perfect for a hot day. When it comes to food, these wines are well matched to spicy foods like Indian and Asian cuisine. Some of the lightly sweet wines on the market today include Gewürztraminer, Riesling and Chenin Blanc. These wines are usually best served cold and are meant to be enjoyed at their freshest, although some examples, such as Riesling, age well.

Richly Sweet Dessert Wine

Richly sweet wines are made with the highest quality grapes in an unfortified style and can age 50 years or more. This is because their sweetness and acidity preserve their fresh flavour. There are several ways to produce richly sweet dessert wines: Late Harvest: Late harvest means exactly what it’s called. Often described as ‘’liquid sunshine’’ these wines are traditionally made from grapes that are left on the vines late during the harvest so that they ripen to their fullest before naturally dehydrating. The result is a wine that has a higher residual sugar (or alcohol, depending on how long it is left to ferment). Late harvest is usually an indication of a sweet dessert wine such as late harvest Riesling, Pinot Gris or Semillon. Semillon is the favourite grape used in dessert wines because its thinner skin allows for a more effective state of botrytis and therefore sweeter juice. When it comes to food, foie gras, blue cheese and light chocolate desserts are excellent pairings for a late harvest Semillon. Noble Rot: While it may not sound very appealing, some of the most sought-after dessert wines in the world are made from grapes

Rose petals, orange blossom and musk perfumes abound on the nose with a fresh, clean, beautifully weighted palate to finish. FOOD MATCH Excellent with fruit-based desserts and full-bodied cheeses. that are, well…rotten. The fruit is covered in a fungus called botrytis cinerea – also known as “noble rot,” which causes it to shrivel and dehydrate, leaving behind extra sweet pulp, which the winemakers then press for juice. While it sounds and looks disgusting, it adds a unique and highly sought-after flavour of ginger and honey in wine. Wines made from botrytized grapes are generally medium-sweet to very sweet, typically displaying aromas and flavours of tropical, stone and soft citrus fruits, honey, marzipan and liquorice. These wines are not only wonderful with desserts such as a fruit tart but are also perfect when accompanied by strong washed-rind cheese and blues such as Roquefort. Ice Wine (Eiswein): Freezing grapes is another way to concentrate sugars to make sweet wine. When made in the traditional way, ice wine, or “eiswein” as it is called in Germany and Austria, the grapes are left on the vine long after the typical harvest is finished until temperatures drop enough for the grapes to freeze. Ice wines are commonly produced in cold regions like Canada, Germany and Switzerland.

Fortified Wines

Fortified dessert wines such as Sherry, Port, and Madeira are made by adding alcohol (brandy spirits) during fermentation. This kills the yeasts that convert sugar to alcohol, leaving the wine very sweet and increasing the alcohol level to between 15 and 20%. The types of spirit used and the point at which the spirit is added has an enormous impact on the style of wine being made. Generally, the earlier the spirit is added, the sweeter the resulting wines. After fortification, the wine is left to mature in oak barrels, sometimes for decades, maturing into complex, aromatic wines, with immense depth and concentration of flavour and colour. Muscat grapes are used to make a variety of sweet dessert wines in various parts of the world. Typically, these are fortified wines, although some sweet late harvest and noble rot wines are also made from Muscat grapes. Liqueur Muscat is a fortified wine from the Muscat Blanc à Petits Grains which is a white wine grape and considered one of the oldest grape varieties in existence (also known as Brown Muscat grapes). The wine is sweet, dark and highly alcoholic with similarities to the Portuguese fortified wine Madeira. Liqueur Muscat essentially starts out as a late harvest wine, with the grapes left on the vine longer than usual - until they are practically raisins and very sweet.

Though not strictly a dessert wine, Phoebe is a little sweet with a lovely light blush – a bit like her namesake, a pale strawberry blond, a sweet young lady who has an answer for everything. TASTING Made with Semillon and Verdelho with just a hint of Shiraz there is a taste of sweet guava, ripe lime and a touch of delicious apple. All-around nice-guy Matt Dillow is a local chef that has been kicking culinary goals since he opened his first restaurant in the region 12 years ago. Since then, Matt has cemented his position as a leading culinary force in the Hunter’s hospitality industry by embracing his Maltese heritage and bringing a touch of the Mediterranean to the valley. The father of two has earned a reputation, not only as a cooking maestro but as a savvy business operator who over the past 12 years has had no less than three highly regarded dining venues under his belt which were very popular amongst local, interstate and international visitors. Having sold two of the restaurants (The Verandah and Twine), Matt has retained The Deck Café in Lovedale and continues to host food, wine and produce tours to Tasmania, New Zealand and Tuscany which are fast growing in popularity. Born and raised in Parramatta – Sydney, Matt discovered his passion for food at a young age, indulging in his love of cooking when he was just 15. After undertaking his apprenticeship with Rydges Hotels and Resorts, Matt went to work as a full-time chef at the stylishlyrestored Hotel CBD Sydney and the multipurpose Slip Inn in Sussex Street, before finding himself back at the Rydges Hotel in North Sydney in the position of Head Chef. A desire to sample the flavours of the world saw Matt travel through Europe to experience the cultures and cuisines of Spain, Greece, Portugal, Prague, England, Germany, Demark and France. He returned to Sydney to undertake the challenge of revitalising the historic Barrenjoey House as Head Chef of the Palm Beach venue before heading north to the Hunter to take the reins of his own establishment, opening the Verandah Restaurant in the picturesque surrounds of CalaisEstate in 2007. STEP BACK IN TIME

Drink in the history of

Potters

Travelling along Wine Country Drive from Cessnock, it would be difficult to miss the beehive-shaped structures that feature prominently on the property that is now Potters Hotel Brewery Resort in Nulkaba. Heritage listed, the structures are the extensive remains of the brick kilns that were used to make the clay bricks, roofing tiles and sewage pipes required by the region at the time. The first Brickworks was set up by Stephen Arthur Hennery and Mark Robinson (circa 1880) on the 10-acre site especially chosen for its rich clay deposits in the soil which were considered ideal for the baking of bricks. Initial construction was basic, consisting of wire cut pressed bricks, these original bricks were used in coal mines, houses and public works. In 1927 the village of Pokolbin was renamed Nulkaba to avoid confusion with the district four miles to the west also (and still) known as Pokolbin. The kilns fed the insatiable demand for bricks required by the coal mining industry – the primary industry and employer in the Hunter at that time. Not only were the pit top buildings mostly made of brick, but the shafts were bricked as well. The pipes and bricks produced by the kilns were also used to build the town as well as the water and sewage systems, which were added later. The roof tiles made by the potteries became a popular local roofing material. A red brick with vertical scores on its surface, the design was unique to the pottery. With such high demand, the brickworks eventually became the biggest employer in the area outside of the mines. During 1928 the original entrepreneurs formed the company known as Robinson and Hennery Ltd and moved into the business of producing garden terracotta pots. The business grew, and a new kiln was commissioned under the specifications of W Cunningham, who was a pottery manufacturer in England. In 1929 the name was changed to Cessnock Potteries.

In 1931 Cessnock Council accepted a tender for the salt-glazed stoneware pipes used for the development of sewerage lines in the area. During this time brick and garden pottery ceased at Cessnock Potteries, and public works took over. This expansion continued, and sewerage pipes were supplied to neighbouring townships including Scone, Singleton and Muswellbrook and as far away as Condobolin and Bourke. In 1933 it became apparent to the plant engineer Joaby Shoesmith that coal was often associated with clay, and this led to the discovery of more clay in the area. During the 1940's renovations were undertaken at the plant to convert to electric power and during World War II the company was declared to be an essential industry for the war effort. In 1989 what is now the Hotel part of Potters was built and named Potters Tavern to reflect the rich heritage of the area. In 2002 accommodation was added to Potters to take advantage of the lush grounds and its proximity to the wineries. Around this time the Hunter Beer Co. first started operations, much smaller than the scale seen today.
