In this year of many changes, it is with a wish and a prayer that we celebrate this last issue of 2020 that is also the first issue of 2021. In what has been a truly awful year (let’s not sugar-coat it!), we’ve also seen wine country evolve into savvy online sellers and guardians of the ever-important QR code – all while supporting each other, our broader community and our families. Celebrations have been few and far between, but that great Aussie-spirit that’s shone throughout 2020 is truly something to celebrate. There is only one word to describe this issue, and that’s sparkling! From Christmas Lights to things that go ‘pop’ and shimmering spirits – if you love a bit of glitz then this is your issue! Twelve months of planning and preparation. Over 20 carefully designed displays. Three million (yes, million) lights. Those are the kinds of numbers that go into the largest Christmas lights display in the Southern Hemisphere: the annual Christmas Lights Spectacular at Pokolbin’s Hunter Valley Gardens. The Hunter’s favourite celebration of Christmas magic is back this year, bigger, bolder and brighter than ever.

The Christmas Lights Spectacular (through to Australia Day in January) is the event that’s for everyone – there’s a little bit of something that will appeal to the young, the old and everyone in between. Read more on page 12. Sparkling wine and celebrations go together like turkey and stuffing or Christmas pudding and brandy, but not all sparkling wines are Champagne, and not all sparkling wines are made the same way. This month we look at the ins and outs of sparkling wines and present our annual “Sparkling Dozen” – just in time for the silly season! We’re not the only ones hoping for a fresh start in 2021 with the team at Dashville gearing up to host a New Years escape to shake off 2021. Aptly named A Fresh Start, grab your kids and camping gear and get into the spirit from 31 December to 2 January. As we go to print, there is growing hope for 2021 with vaccine(s) on the horizon and easing restrictions. As bad as 2020 has been, we certainly are the lucky country. And that’s sure to give us some peace this Christmas. So, from our families to yours, we wish you a very happy holiday season and a safe and prosperous 2021.

shered in by bushfires, floods and then a global pandemic, 2020 was undoubtedly a year of constant change. What a year! It’s great to know some things don’t change though, and Hunter Valley Gardens Christmas Lights Spectacular is a prime example. It’s a magical event that lets families come together to create unforgettable memories that will last a lifetime. It takes the team twelve months of planning and preparation to organise this amazing event. With over three million lights, those are the kinds of numbers needed to create the largest Christmas lights display in the Southern hemisphere: the annual Christmas Lights Spectacular at Pokolbin’s Hunter Valley Gardens. This year they’ve added over 20 brand new displays, so there’s something new to see for those that have made Christmas Lights Spectacular a family tradition. The Hunter‘s favourite celebration of Christmas magic is back this year. Unsurprisingly, organising an event like the Christmas Lights Spectacular isn't just an end-of-year process – it’s a year-round job. The HVG team is continuously planning new displays to ensure the experience is fresh every year. "Twelve months out, we look at what we want to do, what we want to change, how we want to evolve to make the event bigger and better every year” explains Charise Foulstone, Events Manager at Hunter VaIley Gardens. "Generally, by the middle of the year we have a plan in place, and all the ordering will have been completed, and then October the last of the lights arrive, this year however we were still receiving lights right up until
the last week of November, so there are some displays that have been added in early December." The lights are created explicitly for Hunter Valley Gardens after a comprehensive design process mapping out each year's displays. "It’s all made to order for us," Charise explains. "We have a plan; we do a drawing, we send our team out to research options and then come up with the right concept for our event." Of course, once the lights arrive, there's the business of actually setting them up – which is no mean feat. The team begins the lengthy process of putting up the lights around three months before the Spectacular opens in November each year. (Continued next page) F

tunnels, where you can walk amidst the stars as you wander through hundreds of lights. While most travel is off the cards for the time being, Hunter Valley Gardens are thrilled to introduce their Around the World display, where guests can wander past some of the world’s most famous landmarks, including the new Australiana scene and Taj Mahal. For the young and young at heart, there will be even more fun with The Gardens’ giant Walk-Through Bauble, which is back and bright as ever, as well as the beloved Ferris Wheel, Teacup and Venetian Carousel rides. If you’re heading up for the New Year period, don’t miss the famous fireworks display to be held on New Year’s Eve. Overall, the big focus this year has been on continuing to expand interactivity. The HVG team has designed a more immersive experience than in previous years, pairing the usual sparkling visuals with an even greater sense of all-surrounding magic and wonder.
For those who are regular visitors to the Christmas Lights Spectacular and are hoping to revisit previous displays, never fear – all your old favourites will be there.
(Continued) "It's quite detailed, and there are lots of little components to it," Charise says. "So, the team aim to start in August, and then we are still literally putting up lights right up to the moment we open, and this year it was even happening after that.” While some displays and the Christmas Lights Spectacular path remains the same every year, the event is always evolving. Layouts are changed, and new displays created, so the experience feels fresh for every guest, even those who make a point of return attendance. "Every year we change it so that when you come the following year, you're not looking at exactly the same setup and exactly the same area where the lights have been," Charise explains. "Quite a large amount of our time goes into looking at the layout, thinking about how we want to change it for next year, what new and interesting things we think people would like to see." Santa's Workshop is up and running, as usual, Santa photos will also be available until Christmas Eve, and families won't want to miss an opportunity to take a snap next to the eight-metre-tall illuminated Christmas tree. Kids can enjoy the fairytale scene created around Princess Castle. At the same time, guests of all ages can take a trip across the globe with the Christmas Around the World display, which incorporates famous landmarks like the Eiffel Tower, Edinburgh Castle, London's Big Ben, Statue of Liberty, our very own Sydney Opera House and Harbour Bridge and the brand new Taj Mahal. 'Hunter', the all-time favourite, enormous illuminated teddy bear, is also back for more prime photo opportunities. And don’t miss the walk-through Christmas bauble, as giant, gorgeous and glittering as ever. Some other classic displays have made a return this year as well, including the sweetest stop on the path: Candyland. "Everyone loves Candyland! It’s still in the same position, and of course, it gets added to all the time,” Charise says. “Another one is Fairyland – that’s always a huge favourite. And the Twelve Days [of Christmas display] has been with us for as long as I’ve been here, an incredibly long time. We have that every year because people love it.” And, it's not difficult to see why, with the classic carol combining with corresponding light displays to create an irresistibly festive atmosphere. The lights and displays are the main attraction, of course, but there's plenty of additional entertainment to enjoy. Classic rides like the specially designed traditional Venetian carousel will delight visitors young and old, while the Ferris Wheel offers visitors a unique view of the Gardens from 25 metres up, and this year we’ve added a brand new Tea Cup ride which is a favourite with both kids and kids at heart. Keep in mind that all rides are user-pay, and height and age restrictions apply. Tickets for the rides are available from the ticket booth in the Event Area. The event area also has food and beverage stalls when you’re ready to refuel. Christmas Lights Spectacular is an ideal family event, but it's not just for parents and kids. Couples can enjoy a date night in the festive spirit, made even more romantic with Lover’s Corner which was the location of 19 proposals last year. And it's an excellent option for groups of friends or colleagues looking to get into the Christmas spirit out in Wine Country. (Group rates are available for groups of 10+ adults)
“Christmas Lights really is an event for everyone,” Charise says. "You'll get older people who just love the feel of it, right to the very young who are just wowed by it. There’s a little bit of something for everyone.” And the fun doesn't stop after Christmas Day has been and gone. Visitors can experience the festive feel right up until the last night of the Christmas Lights Spectacular on Australia Day, 26th January 2021. The Gardens are also a perfect place to see in the New Year, with the sky as well as the grounds set to be lit up by an impressive fireworks display on New Year’s Eve. The bottom line? No matter when you plan to go, and whether you’ve been to previous events or not, this year’s extra-interactive Christmas Lights Spectacular is an unmissable experience. "Even if people have been previously, they really should get back and have another look at it,’’ Charise encourages.

With a love of all things French and a natural flair and undeniable talent for cooking and pastry making, it was only natural that Angel Joy should open her very own Patisserie in Pokolbin. A short stint living in France with her daughters in 2019 was all Angela needed to start thinking along the lines of opening her own French Patisserie. That and the constant encouragement from friends and family who have long recognised the talent of the self-trained pastry chef. “It was while living in Bordeaux, contemplating the future, and debating whether to open a high- end children’s clothing shop or pursue my passion for French cuisine that I finally decided to open a French patisserie,” said Angela. When a shop became available at Hunter Valley Gardens Shopping Village, Angela completely refurbished the building, purchased new kitchen equipment, new furniture and artwork and painted the entire shop a monument blue colour. Angela named the patisserie “Gigi & Chix” – the pet name of her two daughters who are aged three and six, as cute as can be and her pride and joy. “This was to be my second home, so I wanted it to reflect who I was, my personality, individuality and passion. This is evident in the name, the colours, the furniture, and artwork. Also, having been born and raised in Zimbabwe, I wanted to instil in it a part of my African culture, which I am so proud of,” said Angela. Angela believes that “the devil is in the detail” which is abundantly evident in the delicious pastries made in the onsite kitchen each day, and which are true works of art. Customers can expect an authentic sensory experience with a stunning range of cakes, tarts, eclairs, pastries and savouries aplenty, as well as coffee from the famous The Grounds of Alexandria. Customers can also choose to dine in or take-away or book a high tea on the premises Gigi & Chix Bonbon was opened for business in November, and it rapidly became popular with locals and visitors keen to explore the flavours of the sweet and savoury delights that everybody has been talking about. There’s something new and sparkly in wine country – and it’s not wine! Small Mouth is a small family-run distillery that specialises in hand-crafted, quality spirits, including shimmering vodkas and gins. And you can now taste them all at their new tasting room at Hunter Valley Gardens Shopping Village. If you think the Small Mouth brand seems a bit familiar – it is! Small Mouth Vodka has been online for, years; however, the tasting room in Pokolbin has been open for only three months and during this short time the team has been working hard to expand the range. “Since the tasting rooms opened, we have grown our range, and now have several gins, vodkas and liqueurs to offer customers,” said coManager Jaydan Addis Small Mouth is made up of an enthusiastic team of mostly family members. Paul Addis is both co-owner (with Peter Clarke from The Garden Cellars next door) and the head distiller. Paul has been distilling for eight years. Melloney Addis, Kaitlyn Addis and co-Managers Jaydan Addis and Mia Thompson all work in-store conducting tastings and sales. Mia and Jaydan also work on the online side of the business as well. “Small Mouth is a hand-crafted, premium spirit that is organic and vegan friendly. Our spirits are distilled in traditional copper pot stills and
utilise freshly captured rainwater. We add edible glitter to our products so you can shimmer on the inside just like you do on the outside!” said Jaydan. Since the tasting room opened, the team has been surprised by the variety of customers that walk through the doors – ranging from freshfaced 18 year-olds to 92-year-old connoisseurs. “For us, this is evidence that we are on the right track. We aim to create a premium and innovative product that can be used to make even simple cocktails unique and delicious. We’re dedicated to providing a product that excites all ages,” said Jaydan. Small Mouth offers gins, vodkas, and liqueur’s, ranging from 45%, 40%, and 20%. All products have a shimmering glitter in them that are food-grade safe so that when you add any mixer with bubbles, the glitter will continuously move in your drink. Top sellers include the Watermelon Liqueur and the Pina Colada, especially in the Summer heat. Both drinks are delicious ‘on the rocks’, with lemonade or with soda water. Just one look at the exterior of The Garden Cellars at Hunter Valley Gardens Shopping Village speaks volumes to its history – it’s one of the oldest cellar door complexes in the Hunter Valley. But while the buildings that once housed tastings for Hungerford Hill still showcase a wide range of Hunter Valley reds and whites, its current tenant is known for more than just great wine. CHANGING THE MINDSET At Hunter Family Dental Luc Evans bought his Newcastle dental practice following the very sad and premature passing of Dr Andrew Harrison in 2009, building upon and growing the solid practice over the ensuing 11 years to foster a strong focus on preventative dentistry. Never one to sit still, Luc then took over Hunter Family Dental in Cessnock in February 2019. Whilst the two practices were some distance apart, there was a common denominator in the form of Elizabeth Hughes – a hygienist who has worked at both practices for the last ten years. Luc says that, apart from Elizabeth, the Newcastle and Cessnock practices contrast in many ways.
Hunter Family Dental first opened its doors in Cessnock in 1999, not too far from the beautiful wine country we know as the Hunter Valley.
“A large proportion, probably 85%, of our patients in Newcastle attend religiously for their six-monthly preventative appointments. They recognise the importance of prevention and take on board small pieces of advice, and most require no further intervention, such as fillings, extractions or root canal,” said Luc. “It has been a bit of a different picture in Cessnock though with far more patients being ‘reactive’ with their dental treatments, rather than preventative,” he said. “A large proportion will only attend when there is a problem, such as a painful tooth. Unfortunately, pain is often a late sign of a dental problem, and hence this often results in costly, more invasive treatments, which could easily have been avoided. This presents a significant challenge for us as dentists.” Luc says the goal for the practice is to try to change this mindset. “Prevention is the key to reducing more invasive and often costly treatments and keeping your own natural teeth. No replacement is as good as a healthy natural tooth. Most tooth and mouth issues are preventable, and the answer is to be proactive by attending regularly,” added Luc. With this goal in mind, the practice has brought on board two key members of staff. Elise Smith is another gentle and experienced hygienist, whilst dentist Dr Martin Hou brings with him a wealth of knowledge. Dr Hou has a Master of Science degree from the University of York in the UK. Improvements at Hunter Family Dental include the introduction of 3D dentistry, meaning that very broken down or compromised teeth can be restored on the spot with very strong, tooth coloured ceramics in just one appointment. For those patients that are missing teeth, from a single tooth to a full arch, dental implants are often the most life-like alternative. Champagne is a regionally protected name and can only be produced in the Champagne region of France. It can also only be produced in one way, and that is in a bottle using natural fermentation known as the Traditional Method (or Méthode Traditionnelle) and using only three grape varieties – Chardonnay, Pinot Noir, and Pinot Meunier. Sparkling wines produced in other regions of France as well as other countries around the world are often referred to by their local name or region, such as Espumante from Portugal, Cava from Spain, or Asti from Italy (the generic Italian term for sparkling wine being Spumante) to name a few. SO, WHAT IS SPARKLING WINE? When it comes down to it, Sparkling wine is simply wine with significant levels of carbon dioxide in it making it fizzy. The carbon dioxide may result from natural fermentation – either in a bottle, as with the Traditional Method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of carbon dioxide injection. Sparkling wine is usually white or rosé, but there are many examples of sparkling red wines as well. In Australia, most sparkling wine is produced from Chardonnay and Pinot Noir and is usually white or Rosé, but an Australian speciality is the Sparkling Shiraz – a sparkling red wine made from Shiraz grapes. Young examples are typically refreshing, rich, fruity, and juicy with a touch of sweetness. Older examples are generally rich and lush in style, and some high-quality bottles are suitable for cellaring and ageing. The sweetness of sparkling wine can range from very dry "brut" styles to sweeter "doux" varieties. Although wonderful on its own, when it comes to food, sparkling white wine is incredibly versatile and can be enjoyed with just about any meal. These wines have the perfect balance of dryness, acidity, bubbles and fruitiness to enrich any dining experience and excellent when paired with shrimp and shellfish, smoked salmon, caviar, oysters, triple cream brie and fruit-based desserts such as tarts, crepes and any buttered or honeyed dessert. Sparkling Rosé is the most versatile sparkling wine for food pairings. That is because these styles tend to have a remarkable depth of flavour, but powerful acidity too making them perfect for smoked salmon, roasted white meats, rich fish, or chocolate-covered berries. Brie and prosciutto are also fantastic with a lovely Rosé and even better when combined. A perfect sparkling wine for the festive season, the uniquely Australian sparkling Shiraz is fantastic with glazed Christmas ham and depending on how sweet the style, can be paired with pastries and desserts. HOW TO SERVE SPARKLING WINE Temperature is key here. Sparkling wine is best served cold – so keep it well-refrigerated. Even better, chill your sparkling wine for 15-20 minutes in an ice bucket before serving, and keep it in the bucket between pours. As for glassware, stick with a classic Champagne flute. Not only will the thin neck keep the contents cool, but the narrow opening also acts to retain aromas and funnels the bubbles. It is the holiday season and therefore a time to indulge and give the gift of indulgence too. This wine is made from the traditional sparkling wine varieties of Pinot Noir, Chardonnay and Pinot Meunier. TASTING Most of the berry notes are developed and subtle as are the citrus tones. As it finishes however the citrus characters, of preserved lemons and cumquats, give a lovely fresh note to end on. The acid on the finish cleans the palate and gives a refreshing zing. FOOD MATCH Light to medium intensity seafood and white meat dishes. Perfect to accompany smoked salmon or paté. CELLARING These sparkling wines are made to be served cold – less than 4C. Store for 24 hours in a domestic fridge prior to opening or leave in wet ice for 2–3 hours.

A 100% Chardonnay-based sparkling wine harvested early from the Iron Gate vineyard. An elegant wine with a fine acid spine, it has aromas of grapefruit, passionfruit and citrus bud as well as floral undertones. TASTING The palate is lively with citrus flavours and a mouth-coating texture from 8 months yeast lees contact. The finish is dry and long which cleanses and leaves the palate unsated. This bottle fermented Methode Traditionelle style Chardonnay is sourced from the Hilltops region of NSW. Fresh crisp clean citrus flavours with light notes of straw and toast. This “white of white” is based on 100% Chardonnay grapes, giving it wonderful elements of that variety. Apple and honey characters on the nose, complexity on the palate and the ability to be delicious when young, or superb with age. TASTING Pale straw in colour, light and lively on the palate with a freshness akin to crisp green apple. Nectarine, white peach and sherbet flavours abound, adding to the complex yet delicate fine mousse bead. Its potential to age is indicated by a well-balanced acid backbone, giving the wine great length and persistence through to the finish.
