Timo Mayer grew up in Germany, where his family has been making wine for over 400 years. He moved to Australia to study winemaking and worked with De Bortoli and Gembrook before establishing Mayer Wines in the Yarra Valley in 2000. Having made his name with elegant, innovative Pinot Noir and Chardonnay, he’s recently started experimenting with varieties like Nebbiolo and Gamay and continues to lead the charge for elegant, complex wines that reflect the Yarra Valley’s cool climate. Shaw + Smith was established in 1989 by cousins Martin Shaw and Michael Hill Smith. Michael had just completed his Master of Wine in the UK, and Martin was running a “flying winemaker” business in Europe when they decided–somewhat on a whim–to make wine together. Tolpuddle Vineyard was planted in 1988 in Tasmania’s Coal River Valley. The climate is cool and dry—ideal conditions to grow Chardonnay and Pinot Noir of exceptional quality. It was purchased in 2011 by Michael Hill Smith MW and Martin Shaw, who believe it is one of Australia’s great single vineyards. The wines show great vineyard character, with a core of intense natural acidity, savory fruit flavors, and lots of complexity even when young. The Chardonnay is fine and precise with firm acidity and a combination of lightness of texture and intensity of flavor.

Sam Neill started Two Paddocks in 1993 with modest ambitions to produce a good Pinot Noir that would be enjoyed by family and friends. Although production is still limited, Sam now owns vineyards in all four major subregions of Central Otago (Bannockburn, Gibbston Valley, and the Cromwell and Alexandra Basins). The estate Pinot Noir is a barrel selection of the older estate vineyard blocks that consistently produce some of the very best fruit. In years when the crew believe that the vineyards have produced an extraordinary expression of site, a small single vineyard offering is released: The First Paddock and The Fusilier.

The Le Paradis vineyard in Gualtallary Alto feels like paradise itself to Laura. Le Paradis, grown in deep soil in this cool climate vineyard, has intense mineral, herbal, and berry aromas, subtle oak, and fine tannins.

Domaine Nico is the world’s first extreme high-altitude parcela Pinot Noir, with elevations between 3,675 - 4,921 feet. The extremely small parcelas are all within the Tupungato region. Through Domaine Nico, the Uco Valley proves itself to be a new terroir for the highest quality Pinot Noir.

La Savante and Histoire d’A use whole clusters during fermentation to highlight the wine’s texture and graininess. While La Savante is mineral and vertical with spicy red fruits, Histoire d’A is more generous, due to greater sun exposure, with cinnamon, clove, and perceived sweetness to the tannins.
