Timo Mayer grew up in Germany, where his family have been making wine for over 400 years. He moved to Australia to study winemaking, and worked with De Bortoli and Gembrook before establishing Mayer Wines in the Yarra Valley in 2000. Having made his name with elegant, innovative Pinot Noir and Chardonnay, he’s recently started experimenting with varieties like Nebbiolo and Gamay, and continues to lead the charge for elegant, complex wines that reflect the Yarra Valley’s cool climate. All wines are full malo, unfined and unfiltered.

Ashton Hills is a three hectare, dry-grown vineyard that lies in the Piccadilly Valley sub region of the Adelaide Hills on a ridge just below the summit of Mount Lofty. The estate was founded by Stephen George in 1982 and since that time it has built a reputation as one of Australia’s finest proponents of Pinot Noir and cool climate whites. The Reserve Pinot Noir is sourced purely from our five preferred clones. The

fruit is de-stemmed via a small, customised, gentle de-stemmer that keeps as many whole berries as possible. After ferment, the fruit is then basket pressed, and the wine is made without any additions until bottling.

The Pewsey Vale Vineyard was established at Eden Valley in 1847, producing some of Australia’s first cool climate wines. Today, Pewsey Vale is considered one of the great Riesling vineyards of the world. Where a true alliance between nature and variety exists, the need for human intervention is minimal. Gentle guiding hands and an understanding of place are all that is needed to create consistent and delicious wines, vintage after vintage. The Contours Riesling is produced from old vines farmed on the coolest slope within the vineyard, while bottle aging for 10 years before release transforms it into a very complex wine.

Yalumba first began making wines at its Angaston winery 170 years ago, and the production of fortified wine has long been part of that history. By the early 1900s, Yalumba was supplying the world with these wines— from the connoisseurs of London’s gentlemen’s clubs to the British Raj in India. In fact, on Christmas Day 1929 a bottle of Yalumba Four Crown “Port” even found its way onto the table of Sir Douglas Mawson’s Antarctic Expedition. Following a 50-year-old tradition the very best barrels from each vintage continue to be selected and tucked away in the museum cellar, and it is from these time capsules the fortified collection is blended each year.

Vasse Felix was established in 1967 and is Margaret River’s founding wine estate. It remains family owned, with the simple aim of producing “the best possible wine.” Vasse Felix Heytesbury Chardonnay is a selection of the most striking parcels of Chardonnay from the vintage, recognised for its innovative winemaking and distinguishing “Heytesbury” character. The Tom Cullity is a single vineyard evolution of the Heytesbury, named after the founder of Vasse Felix, with the inaugural release marking the 50th anniversary of Vasse Felix. It is a Cabernet Sauvignon Malbec blend, made 100% from Vasse Felix’s home vineyard in Wilyabrup (planted in 1967 by Dr. Tom Cullity).

Tolpuddle Vineyard in Tasmania’s Coal River Valley was planted in 1988. The climate is cool and dry—ideal conditions to grow Chardonnay and Pinot Noir of exceptional quality. It was purchased in 2011 by Michael Hill Smith MW and Martin Shaw, who believe it is one of Australia’s great single vineyards. The wines show great vineyard character, with a core of intense natural acidity,

savory fruit flavors and lots of complexity even when young. The Chardonnay is fine and precise with firm acidity, and a combination of lightness of texture and intensity of flavor. There was no 2019 Pinot Noir produced.

Sam Neill started Two Paddocks in 1993 with modest ambitions to produce a good Pinot Noir that would be enjoyed by family and friends.
