AN APPLE A DAY The story behind Western Cider—Missoula’s first cidery.
When you enter the brightly lit, crisp and cozy taproom of Missoula’s Western Cider, the place seems familiar and welcoming. Music softly hums in the background, the rustic decor is perfectly in-tune with the atmosphere, and the place is buzzing with cheerful energy. Western Cider was Missoula’s first-ever cidery, which quickly became a community go-to for good drinks, fun, year-round events and craft markets. The ciders produced here continue to expand throughout the Pacific Northwest and beyond. Co-owner and orchardist, Michael Billingsley, sat down with Destination Missoula to discuss the origins of award-winning Western Cider and why cider itself is something we should all be excited about and on the lookout for. 6

“It started from the orchard side of things,” Michael explained in the Western Cider backyard—a space just as welcoming and charming as the indoor taproom. The sun warmed the cozy wooden tables, the green grass and the small line of apple trees that separate the covered and uncovered sections of the patio. So, we had to know—what came first, the love of ciders or the love of apples? For Michael, it was a little bit of both. He said he didn’t know what he wanted to grow, just that he always gravitated toward orchard plants. And then he tasted his first good cider. “That is when everything clicked and fell into place. It was an “ah-ha” moment.”
It was down in the Bitterroot at Montana Cider Works where Michael discovered the beverage that would soon become his life’s work. Lee McAlpine, the Cider Master at Cider Works, was the catalyst for his newfound obsession; she crafted a very delicious and very different type of cider than ones Michael had tried before. “True cider,” he called it. Not apple juice, or the fizzy, store-bought kind. Something else entirely. Turns out, it was the apples. Lee used a particular variety that couldn’t be found in Montana. So, Michael decided to learn all there was to know about trees, cider making techniques and the history of the brew in order to jumpstart his new life as an apple grower and cider maker. His research took him to Spain and France, where cider has been made for over a thousand years. Since cider is derived from the apple trees, soil and climate are huge factors in apple production. But luckily for Michael, and for Missoulians, Montana’s climate and history is prime for growing delicious apples. Michael knew that cider was going to take off, but he took a huge leap of faith in deciding to put all of his apples in one basket, literally. After years of growing trees and experimenting with various methods, Michael partnered with Matt LaRubbio and Jon Clarenbach to open the doors of Western Cider in 2017. But creating a drink market for cider, which was essentially non-existent in Missoula at the time, was no cake walk. It was critical for Western Cider to get the community involved and to inform them about what makes cider so special. The Western Cider tasting room always has 12 different ciders on tap, aimed at educating people and allowing them to see firsthand how diverse the drinks can be.
Western Cider sources all of their apples as locally as possible. Some come from Michael’s orchard in the Bitterroot, while others come from the old orchards in and around Missoula. However, Western Cider is producing too much cider to only use Montana apples these days; so the cidery has expanded their sourcing to Washington and Oregon as well. And to Michael, this means a greater variety of flavor. “No two are alike. There could be 20 different cideries in Missoula just like there are 20 different breweries and we could all be making different ciders.” The future for Western Cider is bright. Their building is located on the banks of the Clark Fork, a short distance from historic downtown and directly across the walking bridge from the Sawmill District. Chef Raz’s SHRIMP AND GARLIC RECIPE INGREDIENTS (YIELDS 4 SERVINGS): + 1 loaf of bread (Chef Raz got his from Grist!) + 1/3 cup olive oil + 4 garlic cloves, cut into thin slices + 1/4 teaspoon crushed red pepper flakes + 1/4 teaspoon paprika + 2 pounds large shrimp, shelled and frozen + 1 1/4 teaspoons salt + 1/4 teaspoon ground black pepper + 3 tablespoons dry sherry + 2 tablespoons lemon juice and fresh lemon rind + 3 tablespoons chopped fresh parsley + Pinch of sea salt flakes (for garnish)
DIRECTIONS: Step 1: Heat a cast iron skillet on high and place thickly sliced bread directly into the pan for several minutes on each side. Once the bread shows charring on both sides, remove from the skillet and set aside. Turn the skillet heat on low. Step 2: Add the oil and garlic to the skillet. Allow the garlic to cook at a low temp while you prep the shelled shrimp in the next step. Step 3: Remove your shelled shrimp from the freezer and add salt. Step 4: Add the shrimp to the skillet with the oil and garlic, poach the shellfish for ~4 mins, then turn off the stove but keep the skillet on the same burner. Step 5: Caramelize the sherry by adding it into the shrimp and garlic skillet and stir for one minute. Step 6: Add the crushed red pepper flakes, paprika, salt and pepper to taste. Stir. Step 7: Remove the skillet from the burner and serve in a bowl, with the charred bread on the side. Step 8: Add the lemon juice on top of the shrimp and garnish with lemon rind, chopped parsley and a pinch of flaky sea salt.
