As we stand at the crossroads of the seasons, witnessing the gentle surrender of golden leaves and feeling the chill of winter whispering in the breeze, it's a reminder that change, in all its profound beauty, is inevitable. I find myself enveloped in this cyclical dance of nature, a dance that echoes the rhythms of our own lives.

It's a time of introspection, of recognising the journey from the hot lazy days of summer (even if they were limited this year!) to the warm, comforting embrace of darker nights. Just as trees shed their leaves in preparation for a new beginning, we too have our seasons of letting go and starting afresh.

With Christmas just around the corner, many of us are in full preparation mode. From the twinkling lights and festive decorations to the scent of trees and home cooking flowing through our homes, there’s a sense of magic in the air. It's that time of the year when our homes radiate warmth and our hearts overflow with gratitude. Beyond the hustle and bustle of gift buying, let us remember to gift ourselves moments of quiet reflection, to be truly present with our loved ones, and to carry forward the spirit of giving into the year ahead.

And oh, we can’t forget the anticipation of a New Year! The excitement it brings is unmatched. A fresh slate, filled with hopes, dreams, and countless opportunities. As you flip the pages of our magazine, we’ve made sure to incorporate articles that resonate with the theme of lifestyle intertwined with sustainability.

The Plum Pudding's Spirited Journey

The aroma of plum pudding, rich with spices and fruit, has drifted through English homes during Christmastime for centuries.

This iconic dish, deeply rooted in the cultural fabric of Britain, stands as a testament to the nation's evolving culinary and festive traditions. However, despite its enduring presence at the Christmas table, the journey of the plum pudding from its humble beginnings to its current esteemed status is one marked by transformation.

As the years rolled on and culinary tastes evolved, the 16th century saw the frumenty undergo significant transformations. It began to shed its savoury elements and adopt a sweeter profile. With the addition of eggs, breadcrumbs, dried fruits, and occasionally beer or spirits, the mixture took on a denser, dessert-like consistency.

However, it was still a dish in flux, not yet the grand centrepiece of the Christmas table.

The origins of the plum pudding can be traced back to medieval England. Surprisingly, the 'plum' in its name doesn't refer to the juicy stone fruit; rather, during medieval times, "plum" was a generic term for any dried fruit, primarily raisins.

The earliest version of this dish was a porridge-like concoction known as "frumenty." It was a far cry from today's sweet dessert - it contained beef, mutton, raisins, wine, and an assortment of spices.

Frumenty was typically consumed as a fasting meal in preparation for the Christmas festivities.

The 17th Century brought about religious and political upheavals that temporarily dimmed the plum pudding's glow. The Puritans, who held sway in England during the mid-1600s, disapproved of its rich ingredients, associating its opulence with pagan celebrations.

They declared it – and other similar festive traditions – a 'lewd custom' and effectively banned its consumption on Christmas Day.

THE SPIRITED EVOLUTION OF PLUM PUDDING:

A Christmas Tradition However, like all beloved traditions, the plum pudding couldn't be suppressed for long. By the 18th Century, it had made a triumphant return.

Renowned English personalities, including King George I, were said to have indulged in it, leading to its alternative name, "Christmas Pudding." Its ingredients had also been refined and expanded to include treacle, sugar, suet, and an even richer assortment of dried fruits.

The Victorian era, spanning the 19th Century, was when the plum pudding truly cemented its status as an emblematic Christmas dessert. The Victorians romanticised Christmas, reimagining it as a family-centred festival of goodwill and joy.

As part of these revamped celebrations, the plum pudding took centre stage.

A significant custom that emerged during this period was "Stir-up Sunday," the last Sunday before Advent, which falls about five weeks before Christmas. On this day, families would come together to prepare the plum pudding.

Everyone, from the eldest to the youngest, would take a turn stirring the mixture and make a silent wish.

Occasionally, small tokens or coins were hidden inside, promising good fortune to those lucky enough to find them in their serving.

WILDJAC BLACKBERRY VODKA

Indulge in the enchanting fusion of ripe blackberries and premium vodka, a taste adventure that awaits in every sip.

INGREDIENTS

DUCK BREAST WITH A BLACKBERRY SAUCE Serves: 2

2 duck breasts 150g fresh blackberries 1 tbsp fine sugar (caster sugar) ½ a shallot, minced 100ml red wine 25ml Wildjac Blackberry Vodka 100ml chicken broth A couple of sprigs of thyme 2 crushed juniper berries

METHOD Duck Preparation: Begin by setting your oven to 180˚C (or gas mark 4). Cut diagonal scoring in a crisscross pattern on the duck breast skin, being careful not to just through to the meat, and sprinkle some seasoning. Start with the duck breasts skin-side downwards on a cold pan and heat at a medium setting. Let it cook for roughly 15 minutes. As it browns, occasionally pour off the surplus fat.

Blackberry Sauce: Combine blackberries and sugar in a separate pot.

Allow it to simmer for around 5 minutes. Using a fork, mash the berries slightly. Set this mixture aside for later.

Duck: Once the duck's fat has mostly dripped off and its skin has a golden crispy texture, flip it to sear the meat side for about 2 minutes. Then, transfer these breasts to a baking dish and bake in the oven for 8 minutes. After baking, wrap them lightly in aluminium foil and let them rest for 5 minutes.

Sauce: As the duck is in the oven, retain only about a tablespoon of fat in the pan. Turn the heat to mediumlow and sauté the minced shallot until it softens (approximately 2-3 minutes). Next, add to the pan with wine, blackberry vodka, broth, thyme, and the juniper berries. Elevate the heat to high and let it bubble for 5 minutes or until it attains a syrupy consistency. Integrate the previously prepared blackberry mix and the juices that have been collected from the resting duck. Warm through.

To Serve: Cut the duck breast into slices and drizzle the blackberry sauce over it. For a wholesome meal, you can accompany it with some steamed greens and roast potatoes.

SLOW COOKER GAMMON WITH HONEY RUM GLAZE Serves: 4-6

INGREDIENTS 1.5-2kg unsmoked boneless gammon joint 1.5l Cola (not diet) 500ml water 1 carrot, peeled and chopped 1 onion, peeled and quartered 1 stick celery, chopped 1 cinnamon stick ½ tbsp peppercorns 1 bay leaf For the glaze 100ml maple syrup 50ml Wildjac Honey Rum 2 tbsp wholegrain mustard 2 tbsp red wine vinegar Cloves to stud

METHOD Set your slow cooker to medium heat. Place the gammon joint in and cover with the cola and water.

Add 1 chopped carrot, 1 quartered onion, 1 chopped celery stick, 1 cinnamon stick, ½ tbsp peppercorns and 1 bay leaf.

Cook for 5½ hrs on low until the gammon is tender, topping up with boiling water if necessary to keep the gammon covered.

Remove the ham to a roasting tin then carefully pour the liquid away, then let the ham cool a little, while you heat the oven to 190C/170C fan/gas 5. Cut away the skin leaving behind an even layer of fat.

Score the fat all over in a criss-cross pattern. Stud the ham with cloves in the corner of each cross.

Mix the maple syrup, mustard, vinegar and ground cloves or five-spice in a jug. Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 30 mins.

Remove from the oven and allow to rest for 10 mins, then spoon more glaze over the top. Can be roasted on the day or up to two days ahead and served cold.

CHOCOLATE AND CHERRY TRIFLE Serves: 4-6

INGREDIENTS 350g pitted cherries (if frozen, defrosted and liquid poured off) 50ml Wildjac Cherry rum 600ml thickened cream 200g dark chocolate 200g creme fraiche 35g icing sugar, sifted, plus extra to dust 1/3 chocolate panettone, or brioche torn into 3cm pieces

METHOD Combine the cherries and rum in a bowl and set aside. Meanwhile, place half the cream in a small saucepan over medium heat and bring to a simmer. Break 150g chocolate into pieces and add to cream, stirring until the chocolate ganache is smooth and combined. Set aside to cool.

Whisk creme fraiche, icing sugar and remaining 300ml cream to soft peaks.

To assemble the trifle, divide half the panettone or brioche among 6 x 250ml glasses and gently press into the bases.

Top with half the cherries and a little of their soaking liquid. Spoon over half the ganache, then half the creme fraiche mixture. Repeat the process, finishing with the remaining creme fraiche mixture.

Drizzle over remaining ganache, shave over remaining 50g chocolate and dust with icing sugar to serve.

Whether you’re greenfingered or simply appreciate the value of time spent outside, bundle up, grab a warm drink, and enjoy giving your garden and its wildlife a little bit of love…

JOBS IN THE GARDEN It’s a time for many plants in our garden to take a breather, but there are a few simple outdoor jobs which if done now, will pay off dividends come springtime…

NOVEMBER Prune/trim deciduous trees, shrubs, and roses. Remove dead or diseased branches to encourage healthy growth in the spring.

Plant spring-flowering bulbs like daffodils, tulips, and crocuses in November. This gives them time to establish their roots before the cold winter sets in.

If the soil isn't frozen, you can still work on improving its structure. Add organic matter, like compost or well-rotted manure to the soil to enhance its fertility.

DECEMBER Cold weather and frost can damage tender plants. Protect vulnerable plants by covering them with horticultural fleece or moving potted plants to a sheltered location.

Take some time to clean and sharpen your gardening tools. Properly maintained tools will be more efficient and last longer.

JANUARY Use January as a planning month for the upcoming gardening season. Order seeds, plan your garden layout, and consider any new plants or features you want to introduce.

Pruning Fruit Trees: January is a good time to prune apple and pear trees while they are dormant. Pruning helps shape the tree and encourages healthy fruit production.

Checking Garden Structures: Inspect fences, trellises, and other garden structures for damage caused by winter weather. Repair or replace any broken parts to ensure they are ready for the growing season.

BIRDLIFE TO LOOK OUT FOR Many bird species stay in the UK throughout the winter. Look for robins, blue tits, great tits, chaffinches, blackbirds, and sparrows. You might also spot winter visitors, like redwings and fieldfares, which come from colder regions in search of milder climates.

WINTER WILDLIFE There are several ways you can give the wildlife in your garden a little helping hand during the autumn/winter months.

Create Mulch Piles – rather than clearing all the fallen leaves away, create mulching piles in corners of the garden, which will not only enrich your soil but also provide shelter for small insects.

Keep bird feeders filled with nutritious seeds and fat balls. Opt for high-energy foods like sunflower seeds and peanuts, which provide essential nutrients for birds to withstand the winter cold.

Provide fresh water in shallow dishes to ensure birds have access to clean drinking water, especially during frosty mornings.

Create habitats for wildlife by adding features like birdhouses, insect hotels, and piles of logs. These structures offer safe havens for various creatures, from insects to small mammals, providing crucial shelter during the winter months. A compost pile can also attract insects, which, in turn, becomes food for birds and other wildlife.

Lastly, be mindful of your gardening practices.

Avoid using pesticides and herbicides, which can harm beneficial insects and birds. Instead, opt for natural pest control methods, such as companion planting. Additionally, embrace a wilder garden design, allowing patches of grass to grow longer and leaving fallen leaves in certain areas, creating a diverse habitat for wildlife to thrive.

Various invertebrates, including snails, slugs, and earthworms, remain active in the soil during the winter months. They play a crucial role in breaking down organic matter, and enriching the soil for the upcoming spring.

GARDEN INSPIRED

Rosehip Syrup INGREDIENTS To make approx. 1 litre of Rosehip Syrup: 1kg rosehips, trimmed and washed About 500g granulated sugar Rosehips are part of the same family as apples and pears, and this classic autumn hedgerow syrup has a unique and lovely flavour: warm, floral and fruity. It can be enjoyed in several ways; drizzle it over porridge, yoghurt or chopped apple, pour on into rice pudding or ice cream, pop a few drops into spring water to add a refreshing flavour, or add to cocktails for delicious rose notes (it goes beautifully with a Wildjac gin and tonic!).

METHOD Sterilise a couple of bottles and vinegar-proof screw-tops or stoppers by washing thoroughly in hot soapy water, rinsing well, then putting them on a tray in a low oven (at 120°C/Gas 1⁄2) to dry out and heat up.

Roughly chop the rosehips in a food processor in batches, then transfer to a large saucepan and add 1.25 litres of water.

Bring to the boil, then turn the heat down and simmer for around 15 minutes.

Strain through a double layer of muslin, letting the pulp sit for a good half an hour, so that all the juice passes through.

HOLLY BERRY

A twist on a negroni, this sweet and smooth short drink is a great aperitif.

25ml Wildjac Cherry Rum 25ml sweet vermouth 25ml Campari Ice Orange peel twist, to garnish STEP 1 Pour the Rum, vermouth and Campari into a mixing glass, jug or cocktail shaker. Add a large handful of ice, and stir until the outside of the glass feels very cold.

STEP 2 Strain the cocktail into an ice-filled tumbler, and garnish with a twist of orange peel.

HOT APPLE TODDY

Warming and comforting, this hot toddy is sweet and spiced for those cosy nights in.

50ml Wildjac Apple Rum 2 tsp honey 1 cinnamon stick, snapped in half 1 lemon, half juiced and half sliced Apple Wedge 2 cloves STEP 1 Whisk the Rum and honey together and split between 2 heatproof glasses. Add half of the cinnamon stick to each, then top up with 200ml boiling water.

STEP 2 Add a splash of lemon juice to each, then taste and add more to your preference.

Finish each with a wedge of apple, studded with a clove, and serve immediately.

Dating back thousands of years, juniper berries have been used for their medicinal properties, and revered for their therapeutic effects on ailments ranging from digestive issues to joint pain. Ancient civilisations, including the Egyptians and Greeks, prized these berries for their healing abilities, acknowledging the plant's significance in traditional medicine.

FROM MONASTERIES TO MIXOLOGISTS It was during the Middle Ages that juniper berries found their way into the world of spirits, laying the foundation for the creation of gin. Monks in medieval Europe, particularly in Italy, honed the art of distillation and experimented with various botanicals, including juniper. Recognising its aromatic and flavourful essence, they crafted medicinal tonics and elixirs, paving the way for the juniper-infused spirits we enjoy today.

In the 17th Century, gin experienced a surge in popularity in England, leading to the emergence of numerous gin distilleries. HIGHBANK HOUSE FLOWERS Helen Humphrey Helen, we are so excited to have you running a wreath-making workshop this month at our HQ and would love to learn more about the person behind the brand! What is a typical day for you in your business?

“I start the day with a cup of regular tea in my favourite lovely shaped mug. It’s all about autumn at the moment and making the most of the glorious, warm colours even if the weather is sometimes questionable! I love making wreath bases from willow, hazel and dogwood, so I stock up on supplies and decide what I’m going to create.”

You get to work with so many different beautiful natural plants and flowers, what inspired you to set up your business?

“A love of flowers from an early age. Blue hydrangeas and Lily of the valley grew in my Nan’s cottage garden and they always evoke such special memories for me. I spend hours looking in hedgerows and drive my friends insane foraging on our dog walks. I just love creating something from nothing.

It all started when I started working with a close friend of mine, I was asked to help out at a friend’s wedding and took from there, had a flair for.”

A DAY IN THE LIFE It sounds a bit like our dog walks! What is your favourite thing about running your business?

“I love working with the changing seasons and using foraged treasures or flowers from my garden. My greenery comes from my friend Sally’s field. We call it the LAM action field and I support the charity by making wreaths and donating the profits from the activities that we collaborate on. LAM is a lung disease that affects mostly women, including Sally - hence why she does so much for charity, and I am keen to support her by donating the profits from any activity days run alongside Sally. All the Xmas tree fir for the workshop will come from there.”

That sounds like a very rewarding partnership and a great charity to support. Apart from the foraged treasures, what is your favourite flower/plant and why?

“Hydrangeas are by far my favourite flowers.
