CLIENT Joost Bakker is an artist, restauranteur and disruptor known for his commitment to zero waste. His Greenhouse project spans the last two decades and has evolved through multiple iterations in Sydney, Melbourne and Perth. The project aims to educate the public on zero waste and prove that urban food production is not only possible, but imperative for maintaining the balance between humans and nature. Joost has distilled his approach to Zero Waste into a contemporary system called Future Food System where he reimagines the home “as an ecosystem that provides shelter, energy and nourishment for it’s inhabitants”.

BRIEF Future Food System uses a conscientious approach to both the construction of the site and it’s operation, implementing numerous systems that complement each other to sustainably manage supply chains, produce food, filter water, recycle waste, heat the home and produce electricity. With many of the innovations stemming from Bakker’s previous experience in restaurants, he is looking to return to hospitality with the opening of a mixed use precinct that creates a new normal.

The brief is to conceptualise and design a zero waste restaurant, bar, bottle-shop and cafe to compliment the residential component of the building and urban farm on the rooftop, whilst generating zero waste.

To meet the client’s zero waste requirements, attention was paid to the potential carbon footprint of a building. Instead of a new build or an internal space in a structure designed to last fifty years I looked for a building that has existed for closer to one-hundred years. By adding value back to the building, and the local area, it is more likely the structure will be maintained and keep the building around for another century.

The chosen site is 167 Franklin St, Melbourne. Constructed in 1928 for A.G Healing’s motorcycle company the site is noteworthy for it’s Commercial Palazzo style; designed by architects Sydney Smith, Ogg and Serpell.

The building is five stories tall with an open rooftop that mirrors the buildings footprint. Overall the site occupies approximately 1000 sqm with the ground-floor, basement and rooftop being incorporated into the design scheme.

SCOPE Bakker is looking to expand Future Food System by extending the current version from a selfcontained home for two people to a mixed residential and commercial building. The ground floor will host hospitality and retail spaces while floors one through four will be a mix of offices and residential. The rooftop will be used to create an urban farm that supplies the restaurant on the ground floor and the residents of the building.

The project will occur over four phases managed by different parties.

PHASE ONE:

DESIGN STATEMENT Inspired by zero waste and heritage venues from around the world, the design scheme combines a number of contemporary styles together to craft spaces with unique identities but a common DNA. The three key references for this project are NOMA in Copenhagen, Higher Ground in Melbourne and RE Bar in Sydney.

By using the natural, raw materials and light pallet of Noma we create spaces of sophisitcation and elevation, best suited for the restaurant and private dining areas. The industrial influences of Higher Ground and RE juxtapose NOMA’s Scandanavian aesthetic

and is applied to the retail, entrance and public bar spaces. The two styles will be connected through common use of select materials such as reclaimed timber, recycled concrete tiles and black steel cladding.

The design scheme is all framed by the overarching requirement for zero waste in all aspects of the design, consruction and operation of the building and its constituents.
