Hockey team departure leads to higher user fees for Sports Center BY DEBRA NEUTKENS EDITOR

WHITE BEAR LAKE — Now that the Twin City Steel hockey team is leaving the Sports Center, a rate hike is needed to keep the city-owned facility in the black. "Operating expenses are expected to be recovered through user fees," Finance Director Don Rambow told the City Council July 26. The Steel contracted for significant ice time the last two years, particularly non-prime ice time, which provided an additional $15,000 in revenue to the Sports Center that would not have otherwise been realized, Rambow said. The city was notified that effective September 2016, the junior hockey program would be moving to an ice facility near Mankato. The White Bear Lake Hockey Association, Mahtomedi High School District and the White Bear Lake Area School District are interested in utilizing the prime ice time vacated by the Steel, according to Rambow, however, the non-prime time will again be "under utilized." Ice rental accounts for 95 percent of the Sports Center revenue. Rental fees have not been adjusted since 2010, he said. The proposed rate increase is intended to ensure the Sports Center recovers its operating costs for the 2016-17 period to at least break even in lieu of lost revenue from the junior hockey contract. New Fresh Thyme brings food ‘down-to-earth’ BY SARA MARIE MOORE VADNAIS HEIGHTS EDITOR

VADNAIS HEIGHTS – Fresh Thyme Farmers Market is bringing health food back to its natural, earthy roots. The Vadnais Heights store opened to the public Aug. 3 at 7 a.m. It is Fresh Thyme's 42nd store and its third in Minnesota. Vintage-looking wooden signs around the store beckon buyers back to a bygone time when shoppers bought food that was fresher. “It is like an indoor market type of feel,” said Troy Logan, director of operations for the northwest region. Fresh Thyme is like a farmer's market and health food store rolled into one. It carries organic options of many items and also carries healthier options that are not organic.

It has an on-site bakery, deli, sushi shop and butcher shop. The deli has a salad bar open all day, sold by the pound. Shoppers can also create their own pizza or buy it by the slice. Sandwiches can also be heated up or made on site. An on-site sushi chef creates a variety of sushi. The butcher shop has a variety of fresh meats, and meal-ready meats such as chicken fajitas. “Just come on in; we've already done the work for you,” said David Oviedo, meat specialist. The butcher shop has 18 varieties of sausage, and 26 varieties around the holidays. The butcher shop has grass fed beef available, but all of its beef is grass fed until 120 days before butchering. And all of its meats are steroid free. “It tastes like meat is supposed to taste; there is nothing in it,” said Oviedo. Fresh Thyme also has a fresh juice shop. FreshSEE FRESH THYME, PAGE 8A
