WHITE BEAR LAKE — A tired dog is a good dog. That observation from a resident dog trainer was meant to emphasize the point that pooches allowed to frolic in the lake tend to be better behaved. They are less apt to bark, run away from their owners or challenge other dogs, noted Debra Schneider, who owns AllBreed Obedience Inc. The White Bear Lake dog

expert was one of about two dozen people who spoke at the Feb. 28 City Council meeting regarding the Matoska Park dog beach. Most were dog owners, some were not; some wanted the beach closed; most did not. In the end, the council agreed to keep the area open, but there are conditions. It also took some persuasion. MAHTOMEDI — Over the past few years, room has been made for more cooks in the kitchen at Mahtomedi High School. Becky Anderson, culinary teacher, has two culinary classes and two baking and pastries classes this semester. About two years ago, she started part-time at the high school and worked herself into a full-time job through the popularity of the electives.

Culinary students at Mahtomedi High School often eat what they made in class for their lunch that day. “That's the best part — we get to make it and eat it,” said junior Bithia Butwin. And the food is healthy, she added. “It's always the class I look forward to coming to,” said junior Mackenzie Ryan. Bithia and Mackenzie were in the midst of rolling ricotta cheese into lasagna noodles in a lesson on mirepoix. Several groups of students each chose a type of mirepoix — a sautéed vegetable combination

— and made their own recipe with it. One group created a taco dish with a Spanish mirepoix. Sophomores Dylan Lallier and Helio De La Torre were cooking bacon to use in noodle dish with a French mirepoix. “We get to learn how to cook for ourselves when we are home alone,” Dylan noted. Other dishes the class has studied recently include stir fry and potatoes and chicken. SEE CULINARY CLASS, PAGE 8A
