hether you feel that the winter season is something to be endured or embraced, there is no question that the stark contrast it provides leading into spring adds to the feelings of wonder and gratitude when the landscape finally comes back to life in all of its glory. Looks can be deceiving and although the landscape still looks lifeless, the trees and plants are just conserving their energy until its time to burst back to life. Similarly, behind the scenes in greenhouses around the region, local farmers are carefully nurturing seeds and fledgling plants — giving them a head start and a chance to thrive during the short Minnesota growing season. We also hope to offer you the opportunity to get a head start on your plans for the spring season. The feature story in this issue of SaVour highlights the growing (pun intended) trend of local farmers participating in community supported agriculture (CSA). Nothing beats the freshness of produce that farmers in our own community grow and distribute. In this issue you will also find spring favorite menu items from area restaurants, an extensive calendar of events and more to explore and inspire leading into the long awaited respite from the cold.

Growing in your neighborhood Community-Supported Agriculture by Elizabeth Callen
T
he gray skies, chilly temps and parking lots piled with yetto-melt snow may not suggest that spring is on its way, but the start of CSA sign-up season is a sure enough sign. As the farm-to-table movement grows, so does the number of area farms offering CSA shares. Have you been considering joining a CSA share but are not sure where to start? Confused about what those three letters even stand for? We've got you covered—just keep reading. CSA, short for community supported agriculture, is a relatively new farming trend. Through such programs, community members can purchase what are essentially memberships to local farms. By paying an upfront fee to support a farm's operations, they receive shares of its bounty in return. Leslie Axdahl of Axdahl Farms in Stillwater said that this model makes for a win-win for everyone involved. “Investing in us and buying a share of this year's harvest in advance supports the kind of stewardship that is good for the land and the community,” she explained. “You are sharing in the rewards as well as the risks of the year's crops (and) sharing in the rewarding experience of being connected with your food, the land and the farmer.” CSA shares can include everything from meat to cheese to jams, but fresh produce is the most common. Chris James of Fresh Earth Farms, located 20 minutes south of Afton, said that joining a CSA program can serve as a good motivator for eating healthy.
presspubs.com/savour 7
“It forces you to buy vegetables every week. You don't fall back in the habit of buying the usual things while grocery shopping and skipping the farmers market,” he said. James also said that CSA shares can force people out of their culinary comfort zones—in a good way. He told the story of a couple of formerly picky vegetarians, who purchased a CSA share and opted to pick up their share at the farm. “As I watched them grab their goodies, I noticed they skipped over the tomatoes. I asked them why, and they replied, 'We hate tomatoes. We hate them to the point of always asking servers at restaurants to hold the tomatoes,'” he remembered. James suggested that the couple take a share of tomatoes just to try and offered to let them swap them out for something else if they didn't like them. “They came back the next week and (said), 'Farmer Chris, those were the besttasting tomatoes we've ever eaten. … (We) never knew tomatoes could taste like this.' If they weren't 'forced' to take (them), they would've never realized what good heirloom tomatoes taste like,” he said. Because no two CSAs are alike, it's important to do your research to find one that suits your wants and needs the best. Options for pick-up locations and sizes are as diverse as the homegrown goodies themselves. “I highly recommend talking directly to the farmer,” James advised. “CSAs are all very different. Don't assume it is a commodity where you purchase the lowest cost share. Ask the farmer their philosophy on growing and choosing what they grow.”

PRATT HOMES: IDEAS MADE INTO REALITY ratt Homes was founded in 1973 by Len and Lowell Pratt. Pratt Homes has been building quality homes throughout the Northeast metro area for 46 years. Len Pratt knows that houses age just like people do. Systems break down. Parts wear out. Priorities change. The passage of time calls for a new look. The company’s remodeling division was added about 10 years ago and is now headed up by Mike Taurinskas. Whether it’s a new home, an updated kitchen, a bath remodel or a whole house renovation, Pratt Homes can come up with the perfect plan to adapt, beautify and personalize a home, turning ideas into reality for homeowners looking for a change. Besides replacing worn out mechanical systems, Pratt said, remodeling can involve adaptive changes like minimizing the number of stairs, opening up a kitchen, or eliminating shower doors leaving less glass to clean. Maybe a homeowner wants to add an enclosed screen porch or patio to make the most of spring and summer. If a home is short on storage, the design team can suggest ways to better allocate and organize existing space, or create closets where there were none. “We help people through the thought process of whether they should build new or renew and remodel the house they’re in,” Pratt said. “Usually those decisions don’t take place instantly. It can take three to six months to get all their ideas
together on paper, get a budget aligned, and decide to go ahead.”
subcontractors who are used to working with us,” Pratt said.
Sometimes the changes needed would be too dramatic for a home. It may not be possible to add a first floor bedroom or eliminate a trip downstairs to use the washer. Now that kids are grown, a couple may want to downsize for the next chapter in their lives, let go of some tasks like lawn care and snow removal so they can treat themselves to that vacation, Pratt explained. Young families may need to add a bedroom or bathroom as their family grows.
Pratt Homes online ‘HELP Button’ system walks would-be clients through each step of home building including site selection, design, financing, and marketing an existing home - even assistance with the move itself. The company sponsors events almost every month that provide an opportunity to see before and after projects. Pratt Homes has four new homes featured in the Spring Parade of Homes, March 2-31.
With 40 full time and 13 part time employees, Pratt Homes has experienced team members ready to assist with every step from design to construction and move-in. “Most of our homes are built by Pratt Homes carpenters. We also have
Kris Koski, Sales Administrator for Pratt Homes said, “Many times, real estate agents from other brokers will mention the Pratt Homes name when selling on the resale market because they know our quality. We truly work hand in hand with our clients to build their dream home.”

POTENTIAL THREATS
TO PETS IN YOUR YARD
Pets love to roam free, and homeowners with outdoor space often let their pets get some exercise and play time in their backyards. While it’s important for pets like dogs and even some cats to get some time outdoors, pet owners should recognize the potential threats to pet health looming in their lawns and gardens.
Mulch
Slug & snail baits
Fertilizers
According to the Pet Poison Helpline, mulch made from cocoa beans can pose a threat to pets. These byproducts of chocolate production contain varying concentrations of the toxins theobromine and caffeine. When ingested in high concentrations, these toxins can cause vomiting, diarrhea, hyperactivity, abnormal heart rhythm, seizures, and, in some instances, death.
The PPH notes that the active ingredient in slug and snail baits is metaldehyde, which is highly poisonous to cats and dogs. Symptoms of distress, including restlessness, vomiting, seizures, and high body temperature, can appear as soon as one hour after these baits are ingested. The baits are typically available in pellet, granular, powder, and liquid form, but each should be avoided by pet owners who allow their pets to play in their yards.
Certain types of fertilizer also may be harmful to pets.According to the PPH, fertilizers that contain blood meal, bone meal, feather meal, and iron can be dangerous to dogs. When ingested in large doses, such products can form a concretion in the stomach, which can obstruct the gastrointestinal tract and cause severe pancreatitis. Fertilizers that are high in iron also can contribute to iron poisoning if ingested by pets.
Allergies can affect anyone, even the family dog. According to the American Kennel Club, various types of allergies can affect dogs. Skin allergies and food allergies can be very unpleasant. And just like their owners, dogs may be vulnerable to environmental allergens like dust, pollen and mold.

MAKE YOUR HOUSE A HOME WITH SIMONET’S
H
the business’s longstanding commitment to the community.
elpful, knowledgeable salespeople who treat their customers like family are a hallmark of Simonet Furniture.
Simonet’s also offers countless custom options on upholstery, leather and wood products from the most trusted names, like Norwalk, Flexsteel, Omnia Leather, Mayo, Sam Moore and Fjords USA.
It’s one of the reasons the business has been around for more than 150 years. Founded in 1864 by Swiss immigrant and cabinetmaker Sebastian Simonet, Simonet Furniture offers solidly built furniture and top-notch customer service, remaining true to its founder’s penchant for treating people fairly. The store carries on the tradition of fine craftsmanship and customer service from its 21,000 square foot showroom on Memorial Avenue North, across from Stillwater Area High School. Simonet’s Furniture started in downtown Stillwater and occupied different locations in town as the business eventually grew and was handed down from generation to generation of Simonets and O’Briens. In 1996, Simonet’s moved to its Curve Crest Boulevard location “on the hill” to better serve a growing customer base. An economic downturn forced closure of that store in 2009. The decision was difficult and emotional for owners, staff and customers alike - it was thought to be
the oldest family-owned and family-operated furniture store in the United States. Thankfully, the store reopened its doors again the following year with a new business model, selling new, used and consignment furniture. A small showroom was opened on Main Street to supplement the main store. In May 2017, another chapter in the Simonet’s story began with the opening of a newly built showroom on Memorial Avenue North, the store’s present site. Simonet’s proudly offers high quality American-made furniture purchased directly from Amish craftsmen: handcrafted tables and chairs, bedroom sets, hutches and desks of maple, cherry, walnut, oak and
other durable woods, among other items. About 70% of the store’s business is custom, taking the client from an idea to a finished product. “Our specialty is building that perfect piece of furniture you’ve always dreamed of,” says Mike O’Brien, who with his daughter Jill Fischer are fifth and sixth generation members of the Simonet family to carry on
In addition to expert professional knowledge of the products, Simonet’s staff are ready to offer helpful advice for people searching for just the right look for their homes, and can help match a client’s budget to their tastes. They’re known for being “friendly but not overbearing” as one customer put it. The Simonet’s family is pleased to provide today’s clients with top quality furnishings built to last, made with the same pride that went into every piece offered by Sebastian Simonet more than 150 years ago.

Discover the art My name is Sarah Moving to our Hirst Scanlon and I am a 3rd generation new location on art gallery owner, a 209 Main Street new endeavor for South me after my recent retirement from a production career at Flint Hills Resources in Rosemount, MN. My Grandparents had an Art Gallery called ‘The Collector’s Corner’ in Ellison Bay, Wisconsin in Door County where I learned about printmaking and printmakers. My Grandmother Helen Powell Hooper was also an acclaimed Wisconsin artist and I carry many of her watercolors, paintings, and mixed media works, and the pottery in Galeria Saro is made by my sister Helen Hooper-Hirst (the “Poulterer”), from East Nashville, Tennessee, and my mother Mary Hooper Hirst whose studio / co-op was ‘The Pots Place’ in Bowling Green, Kentucky. T ruman Company top-rated coin and precious metal exchange
ore than 40 years in business has given The Truman Company owner Roger Westerling a clear idea of what customers want in a coin and precious metals dealer. Most of all, he says, it’s to be treated fairly. “I believe in the repeat customer. If you treat everyone fairly they will come back,” Westerling said. “Doing business in the right and honest way is important. Most of our business is repeat customers. I want to make everyone’s experience pleasant and as stress-free as possible.” The Truman Company buys gold and silver bullion, old gold and silver jewelry, scrap gold, and other collectables. Their specialty is the coin business. Licensed by the State of Minnesota as a Bullion Coin Dealer, the company is one of the leading rare coin and precious metals dealers in the Twin Cities, often beating the prices of low-cost internet companies. Personalized service and competitive pricing are the hallmarks of The Truman Company. Taking care of customers and giving them a fair price are values handed down from Westerling’s Uncle Truman, who taught him about the metals and coins business as a young man. After obtaining his business degree, Westerling spent many years working with some of the finest and most prominent dealers in the business before establishing The Truman Company in 2010. Customers may be local, regional or national. Westerling prefers the local business because he loves interacting with customers. Often, he says, people come in wanting to buy something tangible thinking that the price will go up. Sometimes a customer will inherit an item or a whole estate, with no clue

Aidan and Roger buying another coin deal with the help of Sonny, the shop dog. what they have. Westerling and his team go into the home and make a list of every item, with their offer price.
Some of their more unusual ‘finds?’
“Coins that people have no idea are rare until we tell them. One case comes to mind - they thought they inherited a box of old coins from grandpa. It was able to pay off their student loans.” - Roger Westerling Owner, Truman Company
The biggest mistake people make, Westerling said, is to clean an item. ‘Do Not Clean,’ he emphasized. “It totally destroys the collector value of any coin. Just box them up and bring them to us. We’re happy to sort and itemize and we can do it much faster.” Westerling and his store manager, Aidan Kelly, both love to be in the shop every day, “not knowing what will walk in the door next.” And of course, Sonny the labrador retriever, is in the shop every day to greet visitors. The Truman Company is open weekdays until 6pm, and Saturdays 10am - 2pm, or by appointment. Visit The Truman Company at 2585 Hamline Avenue North, Suite E, Roseville, MN, call 651-582-3865 or visit www.trumanrc.com.
