n intimate, quaint backyard setting such as this one at the home of Jim and Lynn Dierking of White Bear Lake is the perfect way to spend a fall evening with family and friends, but it takes a good eye to get the right feel. Lynn Dierking, an interior designer, has a good eye for the outdoors as well. She says she wanted to take advantage of the charm and view of their home off White Bear Lake. Dierking said “We wanted it to feel inviting and warm, a place people love to come up to and feel welcomed.” And those who have walked along the White Bear Lake path in front of their home have done just that over the years — stopped by to admire how this 1880s cottage has transformed into a beautiful updated home while keeping it’s 19th century feel. “It’s not an overly huge home, but it’s intimate,” she added. “It’s my canvas.”

Celebrate the season by visiting area apple orchards

he mornings have a crispness in the air that signals the fall season is upon us. What better way to celebrate the new season than visiting some local apple orchards? There are several in the area that offer different varieties of apples, produce and other goods, as well as entertainment. Pine Tree Apple Orchard Pine Tree Apple Orchard is located near Pine Tree Lake in Dellwood. The first apple trees were planted in 1904. Art and Dickey Jacobson purchased the orchard in 1958. The orchard is located at 450 Apple Orchard Road. The large orchard spans more than 300 acres. In 1963, the Jacobsons purchased

an additional orchard in Preston. The orchard is currently growing 25 varieties of apples. A full list can be found on the website at pinetreeappleorchard.com. Apple season, which starts in mid August, lasts all the way through March. Starting in September, Pine Tree Apple Orchard offers a variety of entertainment, including pony rides, wagon rides, a corn maze and pickyour-own pumpkins. In addition to apples, there are bakery products, fresh cider, gifts and more on offer. The salesroom building is open from 10 a.m. to 5 p.m. seven days a week. Applecrest Orchards Applecrest Orchards is located at 7306 24th Ave. N. in Hugo, right on the border of Lino Lakes. It has been around since 1985 and had a few different owners. Current owners Chris and Shelli Ellis purchased the orchard in November 2019. The 10 1/2-acre property boasts about 1,400 trees surrounding an 1884 farmhouse. Starting in August, the orchard is open from 2-6 p.m. Wednesday through Friday and 10 a.m. to 6 p.m. on the weekends, or by appointment. Food trucks are often on site every weekend during the fall season. Apples and some other goods and produce from Applecrest Orchards are also sold at area farmers markets. The whole process happens at the orchard and the apples are all grown, harvested, pressed and brewed at Aamodt’s Apple Farm. The drink is available for purchase by the glass or bottle in several different varieties. It is also sold at The Velveteen, Cozzie’s Tavern and Grill, Mad Capper and Whitey’s Bar. Aamodt’s is located next to Saint Croix Vineyards, so orchard guests may also stroll through the vineyards and enjoy wine tasting.

Founded by Thor and Lucille Aamodt, it has been family owned since 1948. The orchard is open from 11 a.m. to 5:30 p.m. Monday through Thursday and 10:30 a.m. to 6 p.m. Saturday and Sunday. Aamodt’s does offer pick-your-own apples for in-season apples. They also have a large barn where visitors may purchase homemade goods as well as gifts. Traditionally, Aamdot’s has offered a variety of fun outdoor family activities, but some activities may be on hold due to COVID-19. It’s best to check the website, aadmodtsapplefarm.com, before your visit. Aamodt’s Apple Farm also offers its very own Thor’s Hard Cider, named after its

Sunnybrook Apple Orchard Sunnybrook Apple Orchard is a newer orchard founded in 2016. Orchard proprietors harvested their first crop of apples in 2018 and the orchard has plans to expand over time. It is located at 9085 Jeffrey Boulevard North in Stillwater. The orchard is open from noon to 6 p.m. on Wednesdays and Thursdays, 10 a.m. to 6 p.m. Saturdays and 10 a.m. to 4 p.m. on Sundays. Honeycrsip, SweeTango and Zestar apples are currently in stock. It's best to visit the website at sunnybrookappleorchard. com before visiting to see which varieties are in stock. The orchard also offers pumpkins, squash and gourds. Guests also have the option to order online for pick up at the orcahrd. Visit the website to find out more. Victoria Valley Orchard Victoria Valley Orchard is located at 4304 Victoria Street N. in Shoreview. It has been serving the Twin Cities area with fresh, local produce since 1966, when it was opened by Don and Molly Papenheim. The orchard offers 21 varieties of apples, as well as unpasteurized honey, pumpkins, frozen apple pies and frozen apple crisps. While the orchard does not offer pickyour-own apples, guests are invited to walk through the rows and rows of apple trees. The orchard is open 9 a.m. to 6 p.m. Thursday through Sunday. 1 ½ cups all-purpose flour 3 tsp baking powder ½ tsp salt 3 Tgranulated sugar ¼ tsp nutmeg ¹/3 tsp baking soda 1 egg 3 T butter, melted ¼ tsp vanilla 1 cup milk 1 cup apples, peeled and grated Directions:

1. Combine flour, baking powder, salt, sugar, and nutmeg in mixing bowl. 2. In a separate bowl, mix baking soda, egg, butter, vanilla, and milk. 3. Combine both mixtures stirring only until blended. Fold in grated apple. 4. Bake on hot, lightly greased griddle. 5. When batter is full of holes, turn to brown on other side. Turn pancakes only once while cooking. The recipe makes seven 8-inch pancakes.

Applecrest Pink Applesauce Recipe from applecrestfarms.com Ingredients:

1 ¼ pounds red apples (about four Honeycrisp, Haralson or Regent) unpeeled, cored and quartered 2 T water 1 tsp fresh lemon juice Directions:

Place apples, water and lemon juice in saucepan. Cover, and cook over medium heat, stirring occasionally until apples are soft (about 15 to 20 minutes). Pass apple mixture through a food mill fitted with a medium disk. Applesauce will keep, covered and refrigerated, for up to one week. A food mill separates the apples from their peels but allows the rosy color of the skins to remain.

ome of us love turkey and all the fixings but sure don’t want to prepare it. Why not turn to award-winning Keys Café and Bakery in White Bear Lake to do all the cooking? After all, they’ve been serving these popular dinners year-round for decades. “Starting about 15 years ago, we came up with the idea of preparing family-style Thanksgiving meals for take-out as a way of serving busy families who deserve a stress-free day,” said owner Celine Carlson. “We enjoy working in the kitchen, greeting people and helping them bring the hot food in containers to their cars.”

The Thanksgiving service exemplifies the Keys Café philosophy: Memorable service and absolutely the best breakfasts, lunches, dinners and desserts using created from

scratch recipes “you grew up with.” It’s no wonder Keys is Minnesota’s most awarded family-owned café and bakery, now in nine locations, including nearby Forest Lake, Woodbury and Hudson. The first restaurant on Raymond Avenue in St. Paul was started by her mother, a stay at home mother of four kids. She instilled a love of people, service and great food in her children, who now run the restaurants. The pandemic has tested the restaurant industry like never before, and Keys is still feeling the impact of shutting down, opening modestly, and facing supply shortages. Carlson said they’ve had to get creative with some traditional menu items. “We’ve been forced to punt and think more creatively,” she said. “and we’re more aware now of our blessings, our humanity, and not worrying about everything having to be perfect.” She said it’s been wonderful to serve customers again and appreciates how much they love dining at Keys Café and Bakery. She knows some shortages can be a disappointment to long-time customers, but they leave having had a wonderful meal, and service breakfast and lunch. The family-style Thanksgiving meal includes turkey, mashed potatoes, sage dressing, cranberries, carrots, gravy, coleslaw, dinner rolls and a whole pie. Single orders are available as well. Butternut Squash and Apple Bisque with Crème Fraîche Serves 4 Ingredients 2 tbsp. butter ½ cup finely minced onion 1 ½ lbs. butternut squash, peeled, cut into 1" cubes (about 4 cups) 2 cups apple juice ¾ tsp. ground cinnamon 1 cup half-and-half ½ apple, cored, peeled and very thinly sliced 2 tsp. salt ¼ tsp. white pepper 7 oz. carton crème fraîche Directions In a large saucepan over medium heat, melt butter. Stir in onion; sauté until slightly softened (about 2 min.). Add squash, apple juice and cinnamon. Bring to a boil over medium-high heat, covered; reduce heat and simmer until squash is fork-tender (2025 min.). Cool in pan 15 min. Place squash mixture in a food processor or blender and process until smooth. Return puréed squash to saucepan; stir in half-and-half, apple slices, salt and pepper. Warm over medium heat, stirring occasionally, until heated through (about 10 min.). Ladle soup into cups; top with a small dollop of crème fraîche.

Wassail punch

Serves 10 Ingredients ½ gal. Kowalski’s Apple Cider 2 cups no-pulp orange juice ½ cup Kowalski’s Freshly Squeezed Lemon Juice 12 whole cloves 4 cinnamon sticks ¼ tsp. ground ginger ¼ tsp. ground nutmeg Directions Stir together all ingredients in a large pot; bring to a boil. Even though the turkey and side dishes are the crowning achievements on Thanksgiving, hungry guests will need something to tide them over until the pièce de résistance is ready. In such situations, bite-sized appetizers that are tasty yet not too filling can fit the bill.

MINI CHEESE BALL BITES MAKES 12 8 ounces light cream cheese, softened 1 cup shredded sharp cheddar cheese 3 tablespoons drained, chopped pimentos 1 teaspoon garlic powder 1 teaspoon paprika Pinch kosher salt Pinch freshly ground black pepper 1⁄2 cup crushed pecans 1⁄4 cup chopped chives 12 pretzel sticks 1. In a large bowl, stir together the cream cheese, cheddar, pimentos, garlic powder, paprika, salt, and pepper until well combined. Cover and refrigerate for at least 30 minutes. 2. Place the crushed pecans and chives in a small bowl. Set aside. 3. Roll the cheese mixture into twelve 1-inch balls. Evenly coat each ball with the pecan-chive mixture. Press a pretzel stick into the top of each cheese ball just before serving. Serve at room temperature or chilled.

Green Chicken Enchilada Soup Makes about 16 Cups Ingredients 1 tbsp. Kowalski’s Extra Virgin Olive Oil 1 yellow onion, chopped 4 cloves garlic, minced 2 jalapeño peppers, seeded and chopped ¼ cup chopped fresh cilantro 1 tbsp. Kowalski’s Ground Cumin ½ tsp. freshly ground Kowalski’s Black Peppercorns, plus more if desired 15 oz. can gluten-free green enchilada sauce 15 oz. jar tomatillo (green) salsa 15 oz. can Northern beans, rinsed and drained 10 oz. frozen corn, thawed 8 cups low-sodium gluten-free chicken broth 1 ½ cups shredded Kowalski’s Signature Rotisserie Chicken Directions Heat oil in a deep pot over medium heat. Add onion, garlic, jalapeño and roughly ½ the cilantro; sauté for 5-6 min. Add cumin; cook for 1 min. Stir in black pepper, enchilada sauce, salsa, beans, corn and broth; bring to a boil. Add chicken; reduce heat to low and simmer, covered, for 10 min. Garnish individual bowls with remaining cilantro; season with additional black pepper to taste, if desired.
