Minnesota’s Nongame Wildlife Program The Minnesota Nongame Wildlife Program works to help thousands of species of Minnesota wildlife like bees, butterflies, songbirds, eagles, loons, frogs, turtles and bats thrive through habitat restorations, surveys and monitoring, technical guidance, and outreach and education - including the eagle and falcon cams!

News for 2017 This is the fifth year DNR’s Nongame program has streamed live video from a bald eagle nest.

The eagle pair has been photographed regularly throughout the year, near their nest and surrounding areas. They continue to rearrange sticks and other material in the nest, which strongly suggests these two will use this nest again next year.

By Katie K9 Why are you putting chemicals — aka pesticides — on or in your pet that YOU would not put on or in yourself? Your pet depends on you to make good decisions for their overall health. Most of the topical or systemic preventatives can cause health problems. Some tips to safely repel fleas and ticks naturally are: Flea comb - Run it through your pets’ coat often during tick season (nearly year round) targeting their face, rump and between their back legs. This will snag deer ticks too!

Organic apple cider vinegar - Spritz your pets lightly twice a week.

Use Diatomaceous Earth (DE) - Human/food grade only.

DE is actually tiny fossils that cut through the skeleton of fleas/ticks and kills them. Put some DE in a sock, zip-tie it off, then lightly pat a bit under your pets’ chin/chest, back of neck and on the base of their rump where the tail meets. Do this once every two weeks or after getting wet. Dust where they sleep too. Do not inhale.

Steeped lemons – Boil two sliced lemons for two minutes in two cups of water. Turn off heat, cover and let it steep overnight. Strain into a spray bottle. Lightly spritz juice on your pet once a week. Store extra juice in the refrigerator.

Garlic supplement - Buy a quality brand formulated for dogs. Great for their immune system too!

Eucalyptus oil - Put two drops on a bandana and place into a zip lock bag overnight; then adorn their neck.

I didn’t know what I didn’t know

I

didn’t know I came from a family of alcoholics until I left them. I didn’t know I was depressed until I didn’t want to live anymore. And I didn’t know I could feel better until I did.

My days of being a party girl are long gone but I always was more of the suburban sociable wine drinker anyway. A glass or two with my friends, a Cosmo at the bar, maybe some free drinks at a show.

Drinking made me feel bad and caused me to lose memories, yet I drank anyway.

Alcohol abuse crept up on me.

I have been alcohol-free for more than six months at the time of this writing and I realize now that booze was an “off” switch for me. I would turn off my feelings temporarily only to suffer more when the feelings came back. It was such an ingrained pattern that it didn’t click in my head that alcohol might be part of the problem. After all, I didn’t drink as much as a lot of other people. In fact, my tolerance was rather low.

One of many things I’m learning now is that how much I drank was less relevant than why I drank. Now that I’m

experiencing what it’s like to feel better I realize just how terrible I was feeling before. Not only terrible but disconnected.

The more I tried to understand my feelings the more I felt like I was drifting away from myself. I would be out having a normal day with my family and felt like a fly on the wall, watching them and thinking “They would be better off without me.” As the disconnection grew and the alcohol “off ” switch proved increasingly ineffective, the only possible escape seemed to be to simply go away. It didn’t feel like I needed to keep living. That’s when I knew I needed help.

When I last wrote I had just taken the first steps to getting healthier. I quit drinking and found peer support, sought out the professional advice of my family doctor and started taking medication to calm the mental chaos. I also learned

how to be more open and honest with my family and others. Now I’m creating a network of people I can trust and healthier ways to recognize and respond to my negative triggers.

My life hasn’t been easy. The loss of my mom as a young girl was a crushing blow.

But I never thought of myself as clinically depressed or traumatized, or imagined I would ever have suicidal thoughts— until, of course, I did. Fortunately the fear of leaving my loved ones behind was stronger than the need to escape my pain. I know I am lucky to have had that saving voice inside my head. Perhaps I knew from losing my mother that dying would not eliminate my pain but instead transfer it to those who love me.

What I didn’t know before was that when I reached out for help it would be there.

But it was and it is. We are not alone.

Grow With Us You know the iconic Bachman brand, and surely love one of their beautiful home and garden stores near you. It’s always easy to recognize a fresh floral arrangement delivered in a distinct purple and white striped box, by a truck decked out much the same!

However, did you know, Bachman’s is celebrating their 132nd year in business?

It’s amazing to learn that over the years they have invested in growing most of their own nursery and landscape plants on 670 acres down in Lakeville, complete with eight acres of high-tech glass greenhouses for growing annuals, perennials, and hanging baskets. Remarkably, they employ over 1,000 enthusiastic plant lovers throughout the year!

This impressive family operation began in 1885 with Henry Bachman planting vegetables on a few acres in south

Minneapolis where the flagship Lyndale store now stands. Along the way one of the five Bachman sons started growing flowers, selling them roadside, and the business started blooming!

It wasn’t until 1990 that their second location opened in Maplewood with much local anticipation. To this day, the Maplewood store is making personal connections with the community by continuing to be the trusted source for quality nursery plants, expert gardening information, unique gifts and delivering the freshest floral arrangements in the area.

Maplewood store manager Mary Jo Rosenow explains how she keeps a loyal staff of seasoned employees motivated.

Parmesan Crusted Walleye Lake Elmo Inn Serves 4 For Breading: 3 Cups Panko Bread Crumbs 1 Cup Grated Parmesan 1 Tablespoon Chopped Parsley Salt and Pepper 4 Walleye Filets 1 Egg ½ Cup Flour Clarified Butter or Olive Oil Prepare the breading for the fish. On an elongated platter, combine the panko, Parmesan, chopped parsley, salt and pepper.

Next, put the flour in a shallow dish. In another shallow dish, whisk the egg.

Dip the fish into the flour and pat to remove all excess.

Dip into the egg wash and shake to remove excess. Lay on the bread-crumb mixture and scoop bread crumbs on top.

Press carefully so that they adhere, flip the fish and repeat on the other side.

Heat a large skillet over medium heat and add the clarified butter or oil. When hot enough, add the fillets and cook until dark golden brown. Flip the fillets and cook until dark golden brown on the other side. Serve immediately, with lemon wedges if desired.

Lemon Bliss Cake Recipe by Michele Phillips, BaconFatte.com This incredible lemon cake is for serious lemon lovers! Its bright, citrus-y flavors are also perfect for chasing away the wintertime blues.

Serves: 12-24 Cake: 1 cup (2 sticks) unsalted butter (such as Kerrygold) 1/2 cups granulated sugar 1 teaspoon sea salt (use just ½ teaspoon if using salted butter) 1/2 teaspoon lemon extract 4 large eggs, at room temperature 2 teaspoons baking powder 3 cups unbleached all-purpose flour 1 cup whole milk, at room temperature 4 tablespoons lemon zest (from about 2 lemons), divided Glaze: 1/3 cup freshly squeezed lemon juice 1/2 cup granulated sugar Garnish with more fresh lemon zest Preparation: Preheat oven to 350 degrees.

Coat the inside of a 10-inch tube pan or Bundt pan with butter and flour or baking spray.

In a large mixing bowl, add the butter, sugar, sea salt, and lemon extract, and beat until the mixture is light and fluffy. Add the eggs to the mixture one at a time, and beat each egg completely into the mixture before adding the next.

Add the baking powder and a little flour to the wet mixture, and beat just until combined. Then, alternate additions of milk and flour, mixing well in between additions until it’s all incorporated and batter is smooth. Finally, stir in half of the grated lemon zest.

Pour batter into prepared pan. Bake 45 to 55 minutes, or until a toothpick or bamboo skewer inserted into the thickest part of the cake comes out clean.

Check doneness at about 40 minutes. Do not over-bake.

While cake is baking, prepare the glaze: Pour lemon juice and granulated sugar into a small bowl and stir well until sugar crystals dissolve.

When cake has finished baking, remove from oven and allow to cool in the pan for about five minutes.

If needed, gently shake the pan or use a butter knife to loosen the cake from the sides of the pan. Remove cake from the pan by placing a serving plate over the top of the pan and gently inverting the pan so they cake rests on the serving plate.

While cake is still warm, slowly spoon or brush a layer of the glaze all over the cake. Allow the first layer of glaze to sink in, then repeat with the rest of the glaze.

Easter Pairings

By Jack Farrell Meals for Easter shout out springtime and the wines you pick to accompany your feasts should be light and reflective of the season.

When ham is the main entrée at Easter time, the good news is there are many wines that will pair perfectly with the sweet and salty flavors of smoked pork. German riesling would be an exceptional match and there are a lot of quality selections to choose from. Wines of the Loire Valley in France pair well with ham and can be moderately inexpensive. Don’t forget Champagne or sparkling wine—they will also pair very well with ham and all the various side dishes.

If you prefer to have a red wine with the ham, I would choose a nice French Burgundy or a pinot noir from Oregon or even Sonoma. Rosé is another wine that should not be overlooked. Dry rosé is not too acidic and has good fruit on the nose which makes them a nice pairing with ham. An Anjou rosé from Loire, a Tavel from the Rhone Valley, or a lovely rosé from Provence are all excellent selections.

Personally, spring lamb would be my very first choice as an Easter main course. A Bordeaux, which is a blend of cabernet and merlot, will pair very well with almost any type of lamb dish. I would let my budget be my primary guide but try and choose a Bordeaux with a little age.

Any Medoc or Saint-Émilion will match nicely.

Another great choice with lamb would be malbec. Argentina is the world’s number one producer of malbec wines. They are versatile and very agreeable with lamb. Aguaribay is an old favorite that is delicious and won’t break the bank.

If you are feeling lavish, why not try Gran Flechas, one of Argentina’s best malbecs!

Salmon presents an unexpected twist to Easter. The best pairing would be a pinot noir from Burgundy, such as Charles Vienot or Marchand. They are wonderful choices and are modestly priced. If you prefer a lighter red, you are in luck with Beaujolais. I would serve one of the crus, which is a Beaujolais named after a town such a Fleurie or Moulin-a-Vent. Staying state side, salmon and Oregon pinot noir is a marriage made in heaven.

If you prefer white wine with salmon, try a white Burgundy, like Boisset Bourgogne Aligoté, or a famed Meursault. After all, the French swear by it! Again Champagne is not to be overlooked as it can accompany salmon very well also.

Stop into your local Haskell’s and ask our knowledgeable staff about any of these suggestion for your special gathering. You will be impressed by how pairing the right wine will give your meal the recognition it deserves.

What’s the deal with gluten?

By Lisa Bowman “What happened to you?” my husband gasped as he pointed at my very swollen tummy. “I ate a gluten free cookie,” I answered while picking up the cookie wrapper.

To my surprise, the wrapper stated wheat free, not gluten free. I was back to being miserable after having three weeks of blissful health with a flat tummy, having more energy, freedom from brain fog and all around happiness.

This whole gluten free thing can be confusing!

I have Non-Celiac Gluten Sensitivity (NCGS) which means I suffer similar symptoms as someone who has Celiac disease (CD), however, I do not test positive for CD nor is it considered an autoimmune disorder. Again, more confusion! Celiac disease is a genetic autoimmune disorder where lifelong strict avoidance of gluten is necessary to avoid damaging the small intestine. This damage can lead to a vast array of health problems that range from psychological disorders, digestive complaints, fatigue, to skin problems and many other health issues. Gluten is found naturally in wheat, barley and rye and is found in a vast assortment of foods where gluten is added.

Reading each and every label is a must.

The Celiac Disease Foundation estimates that CD affects 1 in 100 people worldwide. The prevalence of NCGS is unknown since folks like me don’t test positive for CD. Some health experts believe NCGS affects 1 in 20. For many years, doctors thought it was all "in our head" but reality is we have gut issues. The truth is that we need better testing methods and more awareness amongst doctors.

Since laboratory testing for NCGS is nonexistent, about the only way to discover if you have gluten sensitivity is to take the “gluten challenge.” This involves strict avoidance of all gluten from the diet for a period of at least 30 days. I recommend that you get rid of all gluten containing items from your house since bread cravings can happen in the early stages. Around the 30 day mark, consume one gluten item like a piece of wheat bread and see how you feel. If your symptoms return (mine flooded back in like a tidal wave), then you most likely have NCGS.

Asparagus and Scallion Soup Serves: 4-6

This velvety, chartreuse-colored soup is a gorgeous way to enjoy two favorite spring vegetables. Be sure to source American asparagus to help support our domestic farmers!

Ingredients 2 lbs asparagus stalks, washed Kosher salt for blanching 1 bunch scallions, roots trimmed, washed 1 garlic clove, sliced 2 TB butter 2 c low-sodium chicken broth 1 c plain yogurt 1/4 c extra-virgin olive oil, plus more for garnish 1 TB lemon juice 2 TB chopped mint Salt & pepper, to taste Snap off the fibrous root ends of each asparagus stalk and discard. Cut off the tips to use as a garnish and

set aside. Prepare a pot of boiling, salted water and a bowl of ice water.

Blanch tips for 1 minute then strain out and plunge tips into ice bath.

Dry on paper towel, reserve. Blanch remaining stalks for 2 minutes, strain and chill in ice bath. Place stalks in a blender.

Slice scallions, setting aside two full scallions worth for garnish. In a skillet, heat 1 TB butter and quickly sauté remaining scallions and garlic with salt and pepper until lightly browned. Transfer to blender.

Add broth and yogurt to blender and whiz until completely smooth, scraping down sides and adding a bit of water if necessary. With blender running, slowly drizzle in olive oil.

Strain into a medium saucepan. Heat gently and season to taste. Stir in lemon juice just before serving.

For the garnish, heat remaining butter and quickly sauté reserved tips and scallions until just browned.

Ladle soup into bowls and garnish with scallions, tips, mint and drizzle with olive oil.
