WHAT MAKES VIRGIN OIL?

Virgin Oil is based on 2 Variables:

Oil is treated with heat, chemicals, and filtration to remove impurities and standardize the product

Polyphenols and antioxidants are largely removed during processing

Neutral flavor and aroma due to removal of compounds

Higher yield; maximizes extraction efficiency

More cost-efficient production

Highly stable with a higher smoke point

Considered a standard or commodity oil

1. Production Process, ONLY Cold Press Extraction, No Solvents or chemicals can be used during production.

2. Acidity level present in the oil must be low.

Oil Acidity:

• Acidity is caused by the free fatty acids.

• The higher these acids the poorer quality oil.

• High Acidity is caused by older bruised olives, long storing,unhealthy olives, mold, bacteria, poor cold press production processes.

REFINED OIL

(ALSO REFERRED TO AS “PURE OIL”)

• Refined oil is produced through a series of processes that may include charcoal filtration, chemical treatment, heat application, and mechanical filtration techniques to extract and purify the oil.

• This process removes most naturally occurring polyphenols, resulting in a product with significantly reduced health benefits, as well as diminished taste and aroma.

• Refined oils are often blended with a small proportion of virgin oil to reintroduce some flavor characteristics.

• Products in this category are commonly labeled as Olive Oil, Pure Olive Oil, Salad Oil, or Light Olive Oil.
