Yukoners love a chance to dress up

Vallenga loves the craftsmanship of vintage clothing

Vallenga collects clothes whenever she travels

essica Vallenga has an eye for quality-made clothes; she is an artist trained in textiles, and she makes clothes. She turns embroidery into pendants and earrings, and she makes lingerie.

As well as making clothing, Vallenga keeps her eyes peeled for second-hand finds wherever she goes. Most recently, it was Seattle, where she found a whole bunch of great thrift shops.

She always picks up something for herself, and often some things that she won’t wear herself, but that she can’t say no to.

Vallenga sells her finds in vintage pop-up shops. She’s been popping up for two years, now.

She started the endeavour with Evelyn Koh, who now owns Acacia Vintage in Haines Junction.

Vallenga took her trunks of clothes, jewelry and textiles to the Dawson City Music Festival last weekend to try to sales luck there – They’ll get lapped up! I say, imagining the lipsticked Montrealers who haunt Dawson summers.

“I hope so,” Vallenga laughs.

She’ll be setting up shop in Shipyards Park this weekend, too, in the studio she rents from the Frostbite Society.

This round of pop-ups is the

second she’s done without Koh, who Vallenga says has “incredible taste and such a good eye.”

Vallenga has learned that it’s better to sell vintage clothes during the Yukon summers because “it’s hard to get people to try on clothes when they’re wearing parkas.”

She says there is a taste that seems to be specific to Yukoners.

There is the obvious love of the finely-made parka, and a penchant for the Cowichan sweater.

But Vallenga says Yukoners dress ruggedly to face the outdoors, but also love a chance - any chance to dress up.

“I’m just as comfortable in my xtra tuffs as I am in my ‘20s dress,” she says, to exemplify the extremity.

She says there is no pressure to buy at her pop-up shop. She wants people to come and try on clothes, and to have fun.

“We don’t have the chance, always.”

This pop-up sale is really a opportunity for Vallenga to clean out her studio; she is taking a ninemonth sabbatical starting in April.

She has so many things that people have been asking her how it all fits in her studio, and she

says, “I’m amazed it did.”

She will be selling ‘50s and ‘60s dresses that she adores, a mink stole, and parkas. She says it’s a clearance sale, and there will be “garage sale prices”.

Along with the second-hand clothes there will be the aforementioned Vallenga-made lingerie for sale. It was part of her contribution to the Northern Scene Fashion Show, and pieces are adorned with mohair, fur, silk and lace. They are vintage inspired.

Vallenga is drawn to vintage because of the craftsmanship involved. She notices the details, and quality.

“I have a good eye for structure and pattern.”

Vallenga will be parting with her sewing supplies and patterns, as well as textiles.

The Vintage Clothing and Textile Sale is on Friday, July 30 from 5 - 7 p.m., and on Saturday, August 1 from 12 - 4 p.m..

It’s in the log building with the red roof in Shipyards Park. Vallenga prefers cash, but she can take credit card payments, too.

ost youngsters try on adult roles from time to time, but few go from role-play to reality as seamlessly as Eric Pateman moved into a career in hospitality.

The founder and president of Edible Canada has photos of his 5-year-old self with a waiter’s towel draped over his arm, serving lunch to his grandparents, complete with a written menu.

“I’ve always been enchanted by food,” he says.

By the age of 12, Pateman was already working in restaurant kitchens, but dreaming of a career in professional baseball.

“When an elbow injury ended that, I kind of fell back into the cooking world,” he says.

“I opened my first catering company on my own when I was 17 years old, so certainly I’ve always been touched by the entrepreneurial bug as well as the food side of things.”

After paying his dues with the “20-hour days of craziness” as a young chef, Pateman earned a Master’s degree in business, studying the impact of the Olympic Games on hotels and restaurants in host cities.

That led to a job as hospitality consultant with a New York-based company.

“But I still had this insatiable passion for food and for eating out, and my accountant was giving me a hard time for the amount of money I spent in restaurants,”

the fourth-generation Vancouverite admits.

The two began talking about a business called Edible Paris, which provided a ‘culinary concierge’ service helping tourists and locals find memorable food experiences in the City of Lights.

A new career direction was about to unfold that would justify the cost of the 20 or so restaurant meals Pateman consumes in a typical week.

“That’s where it all started from,” he says. “We set up a website called Edible Vancouver and started acting as a culinary concierge,” he says.

The business soon branched out into events such as gourmet kayaking dinners and “fun food tours” in the Vancouver-Richmond area, as well as a retail space offering local food product in the Granville Island Public Market.

Before long, his entrepreneur’s “constant need for chasing shiny objects ... led us to doing market dinners in the aisles of the market and adding more tourist events.”

After those “once-a-month or twice-a-month dinners” became almost a daily affair, Pateman moved outside the public market, adding a restaurant and retail space to the brand of Edible Canada’s brand as a culinary concierge.

These days, Eric Pateman (left) cooks professionally only a handful of times a year, “but when I do, I get to do it for really cool things.”

He now spends at least half of every month on the road, promoting Canadian cuisine and food products, and helping people discover gustatory experiences that won’t necessarily break the bank.

“I could take you to the best five-star restaurant in any city in the world, and you’d have a great experience,” he says.

“But let me show you the holein-the-wall noodle shop that’s going to blow your mind with huge flavours and going to cost you ten bucks. That, to me, is where the value is”.

Despite years of international travel and high-end dining, Pateman says nothing beats the simple pleasure of good, fresh simple ingredients.

“I’d rather have an absolutely perfect tomato with some sea salt on top of it and a touch of olive oil. That would blow my mind far more than some super-elaborate dish.”

He’s also an enthusiastic booster of Canadian cuisine, which he says enjoys an edge over many other countries.

“When you look at France or Italy, or these hugely serious food cultures, they’re bound by tradition, they’re bound by reputation, they’re bound by techniques,” he says.

“Our chefs are not bound by anything, other than the fact that Canada grows some of the most amazing products you’ll find any-

where in the world.

“That, coupled with an unbiased and unassuming ability to use whatever cultural influence we want, is what makes Canada such a fun playground for chefs.”

Pateman paid his first visit to the Yukon last summer, to play in the ‘chef’s playground’ known as the Yukon Culinary Festival. He’s been back five times since.

“I very rarely go back to the same place more than a few times, but the Yukon’s captured my heart,” he says.

Now he’s here again as a guest chef, feeling “crazy excited” about tackling a new cooking challenge at this year’s festival.

“I’ve never seen anybody roast a side of elk on a spit before. I’m apprehensively nervous ... but we’ll figure it out, we’ll wing it.”

As for the festival itself, the career foodie says it will be “a really fun weekend to show off a lot of the great local produce, and great local meats, and get people excited about what’s really in their back yard.”

ere is an idea that will add fun to your summer: compete in a golf charity tournament, and maybe win a new car.

Just bought a new car? Well, there will also be a three-course gourmet Mexican dinner.

Don’t like Mexican? Come out anyway; the organizer of the first annual Putt for Paws summer golf classic promises the event will be fun all on its own.

The tourney will take place this Saturday at the Meadow Lakes Golf & Country Club on the south side of Whitehorse.

Proceeds for this charity event will go to support the animal-care efforts of Kona’s Coalition. The coalition investigates abuse complaints, sets up spay and neuter programs and works with government to improve animal welfare legislation.

Coalition founder and tournament organizer Jordi Mikeli-Jones says animals cxan add a lot of fun to people’s lives, and she expects Putt for Paws will do the same.

In addition to prizes, participants will get swag bags. There will be organic nachos and homemade salsa circulating during the event, in case someone in the foursome ahead of you needs more than a double bogie to sink the ball.

For the past 10 years MikeliJones has put together the annual Sunstroke Music Festival.

With this year marking the end of that event, she decided to start another one that she hopes will grow each year.

“New sponsors are important, as we often tap into the same supporters, event after event.

We felt that a fun, but professional, sporting event was the way to go.”

The tournament is open to anyone, and the prizes are impressive. The first person to get a hole-in-one on a designated hole will receive a new car, courtesy of Mic Mac Toyota.

Other prizes include a signed Nashville Predators hockey jersey, four passes for a float plane ride from Alpine Aviation, an afternoon with Stand Up Paddleboard Yukon, gift certificates from Heat Yukon and more.

Mikeli-Jones is confident that Putt for Paws will be a success, but admits it got off to a bit of a slow start.

Take Steps to Protect Your Family Business There’s nothing more important in the world to you than your family.

However, your family-owned business probably helps support your family. So, when it comes to protecting both, you need to carefully consider your moves.

Fresh produce is probably the biggest attraction at the open air market stalls on Front Street each Saturday during the summer

F

ront Street is lined with vehicles and shoppers from late morning to midafternoon each Saturday during the summer, even on days when there’s a smoky haze or a bit of a drizzle.

The biggest attraction is the traditional Farmers’ Market, which has been going on weekly for many years.

The Klondike has a healthy crop of farms, both large and small. While some of their produce makes it into the grocery stores and onto the tables at the town’s restaurants, it’s a treat for residents to be able to buy produce straight from the people who grow it.

The vendors set themselves up in the log-framed parking stalls and display their wares for the folks to see. There’s lots of browsing and conversation and you really need to get there fairly early if you want to find a convenient parking spot.

The original concept was that this would be a time and place to buy locally grown veggies and

other food crops. Then there are vendors who sell live plants, not all of which are necessarily foodstuffs. In addition to things related to eating, there are also garden plants, bushes and young trees for sale.

The variety in the stalls has expanded over the years to include jewelry, clothing, kids’ toys and all manner of plastic kitchen ware.

If it happens to be raining, some of this activity might be moved into the picnic shelter that was built next to the market area a few years ago now. But we are also in the third year of a fledgling Artists’ Market, which is taking up quite a bit of space in the shelter on Saturdays throughout the summer.

This was originally begun as an offshoot of the Tr’ondëk Hwëch’in’s economic development study, and was coordinated by a person hired by the Dawson City Arts Society.

More recently, the artists have been scheduling themselves. That does seem to mean that attend-

ance by the artists is not as organized or regular as it was in the beginning, but there is still a regular turnout.

When the annual goldpanning competition was moved to Saturday this year, the existence of the two markets happening at the same time worked out very well.

There are always lulls in the action at the goldpanning event, and the markets gave the audience something to do in between the various classes of panners.

This type of shopping is an entirely different experience from pushing one’s shopping cart around the aisles of the two grocery stores.

Not that they don’t offer good food and serve a very necessary purpose all year round, but it is nice to have this seasonal change for part of the year.

To create a succession plan, your first step — and possibly the most important one — is to collect the thoughts and preferences of family members on their future involvement with your business.

It’s essential that you know who wants to really do the day-to-day work and who is capable. During these conversations, you’ll also want to discuss other key business-succession issues, such as the retirement goals and cash flow needs of retiring family owners and the personal and financial goals of the next generation of management.

In developing a plan for the future of your business, you will need to work with a legal professional, in addition to a financial professional. You may start with determining who will control and manage the business, and who will eventually own it. These decisions will depend on a variety of factors, such as the time horizon, goals and financial needs of the family members involved.

Your succession plan could incorporate an estate freeze. An estate freeze is a tax and estate planning strategy used to lock-in or “freeze” the current value of the business today and transfer any future growth to your family members. There may be several ways to establish an estate freeze.

Another component of your succession plan might be a “buy-sell” agreement, which allows you to name the buyer for your business — such as one of your children — and establish methods to determine the sale price. Your child could then purchase a life insurance policy on your life and eventually use the proceeds to buy the business, according to the terms established in the buy-sell agreement.

We’ve just skimmed the surface of techniques that might be used alone or in combination to carry out your business succession. The transfer can be complex, so you will certainly need to consult with your legal and financial professionals. It’s important that you fully understand the business and tax implications of any succession plan, as well as the financial effects of a plan on all your family members.

In any case, once you’ve created your succession plan, you’ll need to work with your legal advisor to put it in writing and communicate it clearly to all family members. Surprises are welcome in many parts of life — but not when it comes to transferring a family business.

No Exit

Trying to quit the Yukon is like a line from Brokeback Mountain by by Joslyn Kilborn

Joslyn Kilborn always knew she’d be back.

She just didn’t know she knew.

“

I’m out without my long johns.

I start to feel as light as the sky at 9 p.m., then 10 p.m., then 11.

The days lengthen into possibility.

The forest fills with birdsong. The mountains lose their white hair, grow younger, fleshier, turn their

navigating the endless errands of departure. Every day gifts me a happy chance encounter with someone I haven’t seen in months I realize how many people I’ve gotten to know here. How recognizable the faces of this city are.

I

t’s mid-winter when I finalize the tentative plans I’ve carried with me since leaving Ontario to drive to the Yukon a year ago. This summer I will leave again: the myth of an uncle I’ve never met pulls me to New Mexico.

I’ll slip down the West coast, visiting friends as I go, then cross into the desert as the season cools, avoiding America’s pelvis at its sweatiest I’ll winter there. In the South.

In my camper. The following spring will return me to Ontario, the completion of a two-year continent-circling loop.

I begin to save my money and tell my friends. I give my three months notice on my cabin. I start leaving my sweaters and coats at the free store, culling a desertappropriate wardrobe.

I plan to go mushroom picking with a friend - we’ll drive out caravan-style in our own vehicles, make some money, then I’ll continue on my way.

PHOTO: Joslyn Kilborn I look at maps, plan my route, count kilometres. And from the people in my life I begin to accumulate something that is neither envy nor disbelief, yet tinged with both.

leaving the Yukon. With no plans to return. Unlike the thousands of others who arrived from Ontario for seasonal visits before me, I’m not staying.

Spring returns, my first in the North. Light rapidly re-enters the sky, four noticeable minutes every day, half an hour every week.

I leave the house without gloves on, then without a toque. Soon

faces to the spotlight of the sun.

I start going on walks every morning, finally getting to know the bit of the Yukon River I’ve lived on all winter. I take my shoes off, meditate in the sand. I bring my notebook down to the water to write. My living room expands into the forest; my office now has a river running through it.

I spend more time in town,

One day I run into someone I’ve been hoping to run into since I last saw him in October. We make plans to cook dinner at his cabin before I leave.

Two weeks before my scheduled departure, I go on the kind of first date I used to imagine all Yukon first dates must be like: a handsome solitary man invites me into his beautiful, private home in

the woods. We stay up all night drinking tea, stoking the wood stove, sharing the intimate details of our lives.

Around 3 a.m., coming back from the outhouse, he calls me outside. The sky is lit with the dancing green of the Northern lights. I lived a full winter here without catching them. Tonight they reveal themselves to me.

Two days before leaving, my mushroom picking partner and I suddenly question why we’re both driving 2,500 km in separate vehicles. Why wouldn’t we carpool?

We can take her car. I’ll just leave my camper here. I’ll come back for it.

The handsome solitary man offers me a parking space on his property.

When I arrive back in the Yukon six weeks later, no one is surprised to see me.

A guide to which fats to eat and which to avoid

D

ietary fat. Few issues in the world of healthy eating spark as much debate.

While some stay away from it, others put tablespoons of butter in coffee. Over the past few decades, we, as a culture, have been on and off with fat more times than most of us were with our high school sweethearts.

So what’s the correct answer?

The truth is, it’s complicated. There are many different types of fat, and not all are created equal.

Fats is essential for health. Some fat is good for the heart, is required for vitamin absorption, is important for brain development and mental wellness, is good for the skin, and protect against cancer.

Other fats are inflamatory and contribute to heart disease.

These days, scientists study which fats are healthy and which contribute to chronic diseases.

Saturated fats: bad boys, or misunderstood?

After years of being labeled the heart disease villain, it turns out that there are more sides to the story behind saturated fats.

The connection between heart health and saturated fat is in the impact the fat has on some blood cholesterol. Recent research, however, is suggesting that the link isn’t black and white.

There are dozens of types of saturated fats, which can be categorized by the number of carbon atoms one has linked in its chain.

Some, most notably the shorter of the medium-chained saturated fats, have some positive health benefits — the body absorbs them quickly and easily, and they are

and cancer, keeping your brain in good shape, and reducing inflammation in the body.

Adding avocados, almonds, and olives will help you get your fill of heart-healthy monounsaturated fat made famous by the Mediterranean Diet movement.

Of course, like all healthy eating, there is a need for balance. A diet high in omega 6 fatty acids, especially arachidonic acid found almost entirely in animal products, and low in omega 3 fatty acids, can result in chronic inflammation.

Eat no more than four times as many omega 6 as omega 3 fatty acids to take full advantage of all the health benefits these fats have to offer.

The Bottom Line While the research around fats is ongoing and decidedly complex, the guidelines for including this essential nutrient in your diet are simple.

Limit your intake of saturated fats, especially from meats and processed baked goods. Replace these with healthy polyunsaturated and monounsaturated fats and complex carbohydrates.

As omega 6 fatty acids are available in higher amounts from dietary sources, take care to balance them with foods rich in omega 3.

“Sales and manufacturing,” says Oakley. “He’s the guy.”

Her earliest memory of the game is playing on her front lawn for the cameras of the local CBC station.

So, last year, when she needed to come up with an idea of how to raise money for the good works of the YHMA, and to encourage Yukoners to connect with their heritage, the first annual tournament was launched on the lawns alongside the S.S. Klondike.

“It was a lot of fun,” Oakley says today. “You don’t know, when you throw out this idea of a croquet tournament, what reactions we would get or how hard we would have to sell this.

“Fortunately, the Yukon is one of those places where the weirder or the more fun an idea is, then people are right there with you.”

Nine teams played and there were 150 spectators throughout the day.

Last year, as they are this year, players were encouraged to dress up … and even some of the spectators were decked out in their Gold Rush finery.

“There is something about Yukoners,” says Oakley. “If you give them an excuse to get dressed up in period costumes, they will take you up on it.”

Oakley’s father is providing the equipment as a corporate sponsor and he will be officiating. Another sponsor, Air North, will be flying the equipment to the Yukon for free. And the local airline will put up the grand prize of a pair of round trip tickets to anywhere Air North flies.

Other prizes will be awarded for best costume, team spirit and the Sticky Wicket (just think of the Yukon Quest’s Red Lantern).

The day will be capped off with an Après Croquet, featuring a barbecue and beverages donated by Yukon Brewing.

And there will be private tours of the S.S. Klondike.

Teams can register through the YHMA’s website at www.heritageyukon.ca.

The game will be Golf Croquet which, Oakley says, can be learned in five minutes.

ancy Oakley has a cool story about the likely origins of croquet.

(As the executive director of the Yukon Historical Museums Association and convener of Saturday’s second annual Charity Croquet Tournament, of course she does.)

It goes like this: “Some shepherds were hanging out, watching their flocks, and they needed something to do with their time.

One said, ‘Hey, we all have hooks, you have a leather ball, I have some willow for hoops, we can go knock some stuff around’.”

That was in 14th century France.

“It popped up again in a backyard in Ireland,” Oakley continues, “and a gaming company in England says, ‘Aha, that is a great idea’.

“They created the sets we know today and they spread out among the empire and somehow made their way to the Klondike during the Gold Rush.”

So, what sparked the popularity of this game?

“There is nothing like the feeling of taking your sister’s ball and smacking it all across the field and into the bushes,” says Oakley. “You just can’t put money on that.”

OK, this was less of a professional assessment, and more of a personal connection to the game.

But, really, that is how croquet evolved over the centuries: it was played in backyards with rules, without rules, and with little to no record keeping.

“From the Gold Rush era, to 1920s flappers, to 1970s polyester, it seems every generation finds a way to re-invent the sport in their own image,” says Oakley.

The most frantic Calvin & Hobbes rendering of the game is pretty close to the extreme play in some of those backyards.

Then there are the prim and proper games where players, dressed in white, conform to international rules and make spectacular jump shots.

“It can be a fun, social thing, or it can be this complex game of chess on the lawn,” says Oakley.

Her own evolution began much more close up than for the rest of us. Her father, Don Oakley, is the owner of The Croquet Store in Brighton, Ontario.

Birch Beer!

I

’ve always known Uncle Berwyn’s Pure Yukon Birch Syrup was the best birch syrup in Canada.

As it turns out, our homegrown syrup, produced off-grid in a homestead on the banks of the McQuesten River by Berywn Larsen and Sylvia Frisch, is actually the second-best birch syrup in the world.

So say New York birch syrup fans and a collection of Larsen’s and Frisch’s professional peers — birch syrup and sap producers from around the world who gathered last June at Paul Smiths College, in the Adirondack Mountains of New York, for the first-ever, International Birch Sap and Syrup Conference.

Cornell University Cooperative Extension put on the conference, in partnership with the Adirondack Center for Working Landscapes.

Cornell runs the Uihlein Forest and Maple Research Center in Lake Placid, where, near the end of the maple season, researchers have started to tap about 700 birch trees for sap and syrup.

The idea behind the conference was to bring birch researchers together with producers who have practical, hands-on experience of birch sap and syrup production in an exchange of knowledge, best practices, and problem solving.

Some of the topics they discussed were the challenges in bottling birch sap without getting offflavours or sediment fall-out, and devising a classification system for birch syrup.

But the high-stakes part of the conference was the tasting competition, held on the first night.

The producers set up their bottles in the Paul Smiths College Visitor Interpretive Centre, and both producers and public rated the syrups on a points system.

Most producers had elaborate displays and discussed their syrups in language usually reserved for wine and beer, but Larsen, who says, “I didn’t give a lick about the competition,” was so happy to be there he simply opened a bottle of his pure birch syrup, left it on his empty table, and roamed the room, tasting, drinking beer, and talking to anyone and everyone about birch syrup.

He didn’t even vote for his own product.

Here’s the lovely part of the story: the people who won first place, by one vote, were Berwyn’s Alaskan mentors, from whom he learned how to set up an operation back in 2004: Michael East and Dulce Ben-East of Kahiltna Birchworks.

“So it might have been a bit awkward if I had voted for myself,” says Larsen.

At the beginning of the conference some producers were tightlipped, but by the end “everyone was friends and sharing freely,” says Larsen.

They all agreed that future conferences should take place once every two years. The next one may be in Alaska, home to the greatest concentration of birch syrup producers in North America.

Should that happen, I foresee troops of Yukon birch syrup fans making the trek, just as we do for the Haines beer festival.

Now, on to birch beer.

Every year at the end of the season, when the sap veers away from sweetness towards bitterness, the last thing Larsen and Frisch do is process sap for Yukon Brewing’s birch beer.

They cook it until the sugar content reaches 26 per cent, decant it into two 200-litre barrels and drive all night to arrive at Yukon Brewing in Whitehorse first thing in the morning.

The reason for the hurry is that the sap is not stable at that level of sugar content, and deteriorates quickly.

The rush is worth it. Though Yukon Brewing gets a slightly different flavour from the sap every year, the brew is always delicious.

This year’s version, Up the Creek, is no exception - deep amber in colour, with a texture and mouth-feel similar to champagne and a slightly bitter finish, it’s the best birch beer I’ve ever had.

Probably the best in Canada.

Maybe even in the world.

This year, I’ve started cooking with it. Though not top of mind as a summer meal, birch beer Welsh rarebit makes an excellent campfire supper, with some radishes and sourdough bread for dipping, and served with Up the Creek, chilled in the river.

CAMPFIRE WELSH RAREBIT INGREDIENTS 1 lb. (454 gr) grated old white cheddar 1 tbsp. (15 mL) butter 1 tbsp. (15 mL) flour 1 cup (250 mL) birch beer 1 egg, beaten 1 tsp. (5 mL) salt 1 tsp. (5 mL) Dijon mustard

METHOD

Melt butter in a saucepan over medium heat. Stir in flour, cook for a minute or so then whisk in beer.

Add the egg, stirring vigorously, then add seasonings and stir until combined.

Serve immediately over toast, or tear toast into chunks and dip into the pot.

Makes 6 to 8 servings.

A premium-level homage to the bringer of fire

H

ow good is your knowledge of Greek mythology?

Yes, we all know about the heavy hitters such as Zeus and his Olympian brothers, Poseidon and Hades. We may know about Gaia and Demeter and others whose names have landed a place in popular culture.

But what about Prometheus, the god of forethought, who created mankind but got on the wrong side of Zeus in the battles between the Titans and the Olympians.?

So great was his perfidy that Zeus condemned him to be chained to a rock and have his liver picked out by an eagle.

As a Titan, Prometheus was immortal, so crafty Zeus would have his liver restored every night, only to have it plucked out again the next day. This happened for many years, until Hercules came to his rescue.

The makers of Don Carlos cigars, descended from the iconic Arturo Fuentes, decided to honour Prometheus by naming a cigar after him. Entitled God of Fire, this premium cigar pays homage to the Promethean gift of fire to humans.

The first thing you notice about this cigar is the artistic label. A stylized painting of Prometheus in his peril is depicted on the band.

Poor Prometheus gazes in agony at the cursed eagle. Despite the painting’s tragic mood, the band still looks impressive.

Now for the construction. You could not find a flaw no matter how hard you tried.

At $21.00 a stick, I’d expect nothing less. The cigar is very

wood; the cream remains. I am pleasantly surprised that this cigar has such a longlasting cream palate.

I thought some heavy spice would kick in somewhere.

The last third, there is cinnamon.

The cigar sort of tastes like spiced eggnog. Toward the very end there is some cayenne pepper, with cream.

I can honestly say I was not expecting this cigar to have a permanent cream flavor as the base.

“It’s not something that is cheap, not something brewed for the masses, but something that’s brewed from the heart, and brewed because they want it to taste good.”

In May, Marjanovic and his wife, Meghan, opened the doors to their own small craft beer operation on Mount Sima Road in Whitehorse, called Winterlong Brewing Co. On their first day, they filled more than 100 growlers, and also became one of only two licensed breweries in a territory that boasts three commercial distilleries of hard liquor.

The Marjanovics have been together since high school and share several hobbies, but it was during their university days a decade ago that they decided to do something about the lack of flavourful options in their tipple of choice.

“We were still buying American and Belgian beers, because at that time there weren’t many Canadian craft breweries, and there weren’t many craft beer bars. This was in Vancouver.”

The mass-produced product of Canada’s beer behemoths didn’t interest them.

“Some of the larger brands, the beer inside is mostly tasteless, fizzy yellow water,” Marjanovic says.

“The only differentiating feature between some of the bigger brands is their marketing. The beer inside is brewed to be inoffensive, not very flavourful, very watery not very appealing to somebody who wants flavour in their drinks.”

Their best bet, it seemed, was to start making their own.

“Home brewing was one way for us to have any style of beer that we wanted. And we enjoyed the local craft aspect of it, where we could make a product ourselves and enjoy the fruits of our own labour.”

Little did they know that discerning beer drinkers would soon get to benefit from a veritable explosion of micro-breweries and brew pubs all across Canada.

For now, Winterlong Brewing’s products are only available in growlers, and during limited hours on Thursday, Friday and Saturday there, and a few breweries, and then slowly it made its way over to Vancouver. Since then it’s just skyrocketed.”

So, with more flavourful beer options readily available, were they tempted to abandon their kettles and stop sparging their mash at home?

Far from it. The Marjanovics remained avid home brewers even after moving to the Yukon eight years ago, and have regularly displayed their output at popu-

lar events in Alaska, such as the Haines Beer Fest and the Skagway Home Brew Festival.

Their different concoctions have regularly received a positive response - and various awards - at both festivals.

Marjanovic admits that going commercial was a big decision for the couple.

“We had a lot of friends who were asking for our beer and they wanted to buy it, which is not legal, so we weren’t able to real-

ly share our beer very much,” he says.

“Meghan and I wanted to bring our passion of craft beer to our friends and family and the people in the Yukon. We took some time to think about it, and then said, ‘Let’s just do it’.”

They deliberately decided to start small, to minimize their risk.

For now, their product is only available in 1.0-litre and 1.9-litre growlers, but that may change eventually.

“After about two weeks of being open, we knew we were already running out of beer very quickly, so we’ve already ordered more vessels to double our size, and we’ve rented more space,” Marjanovic says.

“A year from now, we hope to have either cans and bottles in liquor stores, and/or kegs at some of the bars. That’s what we’re going to be looking at, so that people in downtown Whitehorse can conveniently get our beer as well.”

As the new kids on the block, do they have any worries about Winterlong having to share the market with the well-established Yukon Brewing Company?

Not at all, according to Marjanovic.

“In the brewing world, the saying is a rising tide floats all boats.

As more breweries come up and expand the knowledge to the people about beer, it actually benefits all breweries,” he says.

“Of course there’s always friendly competition there, too, but collaboration and getting the word out there really helps everyone.”

There may even be some advantages to being smaller in stature, he suggests. For one thing, with smaller batch runs, there is less at stake if an experiment doesn’t quite work.

Being new also means being able to test-drive new ideas more easily without having to engage in large-scale branding and marketing.

“We’ve been brewing a new beer almost every week for the last seven weeks, but we’ve found that some people really gravitate toward a few that we’ve made,” Marjanovic says.

“So we’re going to continue to have a core three or four beers that we’ll be brewing all the time, and then we’ll always be experimenting at least once with a new beer.”

As for marketing, so far it’s all been done through social media.

We use Facebook, Twitter, Instagram and word of mouth, and that’s all we’ve had to use right now to sell all of our beer,” he says.

But that, too, may change eventually.

I

arrived for the 8 a.m. meeting at 7:40. But it had already started.

I was to be a “fly on the wall” as advertising professionals planned out the YukonNOW television commercials targeting domestic summer travellers.

To say that Dee Enright, the lead strategist and president and CEO of Outside the Cube, has 36,500 customers, would be a cliché.

But it is true.

Fortunately, Enright doesn’t have to answer to each Yukoner (although she often does) since they are represented by various organizations: Yukon Chamber of Commerce, Tourism Industry Association of Yukon, Department of Tourism, Government of Canada, Tourism Marketing Committee (sub-committee of TIAY with both Yukon Government and industry representatives), Wilderness Tourism Association of Yukon, Yukon First Nations Culture and Tourism Association, Klondike Visitor’s Association, Screen Production Yukon Association and Yukon Film Society.

Each wants Enright and her team to represent their interests in the 30-second and 60-second commercials that will begin airing this fall in Vancouver, Calgary, Edmonton, Toronto, Ottawa and possibly Kelowna.

Enright takes these “asks”, applies her experience and market research, and comes to this small room on the second floor of the Horwood’s Mall to figure out how to accomplish it.

With 80 per cent of the contract going to broadcasters in outside markets, that doesn’t leave much for research, planning and production.

Today’s meeting is a high-level strategy/approach/vision discussion to provide guidance to those attending the 9 a.m. execution meeting in the same room.

Before details can be hammered out, larger issues need to be addressed.

The following conversation occurred between Enright; Colin MacKenzie, the agency producer who manages the production team and ensures that agency interests are kept top of mind; and Sandy Legge, the account director, who oversees the project budget and overall timeline.

They need to plan out one quick scene in one commercial to appeal to one segment (target audience).

There is an elephant in the room, today. Enright is not convinced that Sauer, the director who is to arrive within two weeks to shoot the commercials, understands who the target audience is.

Sauer’s resumé proves he can create lush, mystic, emotional commercials. But his commercials for Santa Barbara Beach & Golf Resort, Squamish Tourism and Fairmont Hotel Vancouver were aimed at young adults and young families.

Enright’s customers have directed her to attract “paying” customers to the Yukon. And that means they need to appeal to older tourists.

“The segments we talk to, the ones most likely to travel here, are what we call ‘Learner Segments’,” says Enright during a break in the meeting.

“They are authentic experien-

“We start with that history and we move to an invitation from a Yukoner. The whole strategy is around telling our stories because nobody else can own our stories.

“Research tells us Canadians have a really good impression of Yukon, they think it will be amazing to come ... and they have zero knowledge of what to do when they get here. So that is the next 15 to 20 seconds: the do, do, do.”

The trick is to advertise to those people — the ones who spend $1,700 to $2,700 — instead of the “self-serve tourist”, as Enright calls them.

“RJ is a free spirit,” as an example Enright explains. “He will come to the Yukon and self-guide with his Bucket List. He will buy his groceries at Walmart and eat dried raisins and his financial value is zero.

“If I advertise to the high-value customer, the free customer will still come; but if I advertise to the free customer, the high-value customer will run away.”

This next conversation shows how Outside the Cube must find a

way to communicate its customers’ goals to Sauer, while assuring him that, when he lands in the Yukon for the two-week shoot, the right images will be available to him.

ENRIGHT: “One of the spots is ‘Festivals’ and the director wants to set up a scene with all kinds of people together with their arms in the air and the band in front … and it is not as if that doesn’t happen, here, because it sure as heck does, but our segment wants to be sitting at the Tombstones at the Coffee Jam with that one artist in front of them with the air and the setting because they can’t do that anywhere else.

“The director wants the concert, I want the coffee klatch.

“What a visual director thinks looks exciting on screen, won’t to our target audience, in fact it will make them run far, far away.

“But we cast 10 years younger for aspirational reasons, but we can’t change the activities to 10 years younger.”

MACKENZIE: “There might be a translation lost there, I’ve been reminding him those are the numbers for the cast …”

ENRIGHT: “He (Director Sauer)

has an interesting skew on it. I know his brilliance and I know what he is capable of when he understands who we are talking to, but I am worried he doesn’t understand because of what he is bringing back.”

MACKENZIE: “Is that the source of the head butting yesterday? ‘You guys aren’t giving me enough, you aren’t letting me go.’”

ENRIGHT: “I can’t let him go, I don’t feel safe. Talk to me, tell me the tone of these commercials in your head, tell me who this person is, tell me what really touches them. If you can nail that with me, I’ll let you go.”

MACKENZIE: “That’s fair.”

ENRIGHT: “I will tell him that if I am uncomfortable, but you are committed, I will always take that to the client.

“What we are struggling with now is the culinary set up in Dawson and Tombstone musicians. Typical of RJ, the director, he is not sure if he loves the look of those people.”

MACKENZIE and LEGGE: “Oh.” MACKENZIE: “He did say he wanted to see someone way more exciting.”

ENRIGHT: “I am not sure what exciting looks like.”

LEGGE: “Sure, but maybe they look exciting on film.”

ENRIGHT: “The problem is that RJ’s vision of exciting is a party and we have to get him down to Leonard Cohen.”

MACKENZIE: “Our new tagline for him is, ‘This is not for you, this is for your mother’.”

ENRIGHT: “He wants the big concert. In the Iconic Drives (commercials) he wanted to have them stop on the highway and jump into the lake on the side of the road.”

MACKENZIE: “Would your mom jump into a lake?”

It is now 9 a.m. and the conference call begins with beeps and chirps. Enright makes introductions and then steps out.

The new participants are younger and less animated. They are now speaking the language of logistics.

oo often, I have seen people wearing knives that are really too big to take on any task except chopping down trees.

These are often visitors, but locals sometimes wield these big blades as well. If we had junglelike undergrowth, maybe these machete stand-ins would have a legitimate purpose.

I’m guessing that folks who really don’t know any better get fooled by advertising.

A knife for regular camping needs a blade-length of only 2½ to 3½ inches and can be a folding type or fixed blade, either of which can come with a sheath.

A folding knife can be carried in a pocket as sheaths (especially inexpensive ones) allow knives to fall out and be lost. Any sheath should have a fastener to securely hold the knife in place.

Even better than a simple folding knife is one of the many “multi-tools” or Swiss Army knives, which come in a variety of price levels depending on quality and the number of blades, files, saws, awls, screwdrivers, et cetera, that each type has.

Look for a brand name at a moderate price, but by all means avoid the very inexpensive models that seem to have all the blades and tools you could ever need.

These are cheap and poorly made, will break when you need them and may injure you in the process.

Reasonably good quality, brand names start at about $60 and go up to hundreds of dollars. A pretty good quality lock-blade folding knife with a secure sheath can be had starting at about $50.

If the knife owner is an angler, an additional filleting knife with a 6-10 inch flexible blade is available, with well-known brand names starting at less than $20, including a sheath.

If the knife owner is a hunter, I suggest a multi-tool worn on the belt for general knife work and a

more expensive, high quality knife for field dressing your game animal.

It is a mistake to buy anything less than the best quality you can afford when it comes to choosing a knife for field dressing and skinning. It should have a similar blade

Various inexpensive, small sharpening devices are available with sheaths or for carrying in a pocket. These are important to
