THE ONE THAT GOT AWAY

I

t was a beautiful day to hunt for grouse—spruce grouse to be precise. Me and my friend Konstantine had aligned our schedules to see if we could get a late season hunt in before the grouse were off limits (the season runs Sept. 1–Nov. 30). We met in the late morning, loaded our gear into his trusty Toyota truck and headed out to find some small game. Now as far as hunters go, I am a total newbie; and he, an experienced hunter. The first indication of this was when it came to outdoor gear. Konstantine’s outfit consisted of sturdy hiking boots (there was only about 2 cm of snow—and that was out in the boonies!). I, however, had large, thoroughly insulated and sweat-inducing winter boots (it was only -7 Celsius). Atop his incredibly practical boots were a smart pair of waterproof gaiters, where I wore snowboarding pants, complete with suspenders. At least they didn’t make the classic swishing sound you all remember from the old days of snow pants that we wore in public school (and were mocked incessantly for!). In addition, he wore comfortable long johns and jeans and a warm jacket, with gloves and a hat. I wore a woefully inadequate (yet highly fashionable) jacket and vest combo that let the cold seep in (insert facepalming emoji here). At least I had good gloves and toque and even a neck gaiter that helped to keep

falling snow out of my jacket. Even our choice of firearm was the polar opposite. He, with his venerable shotgun; and me, with a .22 rim-fire. Apparently, I like to suffer for my work (trust me, people, you have not seen me shoot). But the most profound difference (at least to me) was the moment he pulled forth a mesh hunting bag in which to place the harvested birds. A bag! I sheepishly looked down at the sad excuses for pockets in my not-madefor-winter-hunting jacket and muttered a curse or two under my breath. You live. You learn. So off we went. Not even trudging! The trail was easy to follow, and every 50 metres or so we would veer off the path, either left or right, and do a small loop among the trees, scanning high and low for our quarry. On the second foray into the woods, we had just walked about 30 feet before we heard the telltale flutter and then saw a spruce grouse hightail it from a lofty tree branch, over our heads, and into the trees on the opposite side of the trail. Off we went, again scanning the lower branches, secretly hoping we had encountered a grouse that had a low IQ. No such luck. With Konstantine stalking and me watching the trees, the wily bird had been watching us closely and, when it felt the hunters were a little too close for comfort, bolted deeper into the forest. Onward we go. Now, for experienced hunters, tracking game and keeping your

Konstantine scans the surrounding trees for an elusive spruce grouse bearings comes from, well, experience! Like walking and chewing bubble gum, right? For me, it was more of an exercise in crisis management as I tried to keep an eye on Konstantine (so I knew his location) and scan the trees to see if and when the grouse popped out— and also sneaking quick glances over my shoulder in a vain attempt to align myself with the trail. One last flutter and the sound of beating wings and the grouse launched itself from cover and beelined for some exceptionally dense brush. At that point, the two hunters looked at one another and agreed to go back to the trail. The following conversation amounted to an agreement that this particular grouse was one of the smart ones (good for him) and not one of the dumb ones (bad for us). I guess all the dumb ones got bagged already. On the bright side, the smart grouse could go on to make more smart grouse and

thus be more challenging to hunt— albeit, that would actually be bad for me! Remember you have not seen me shoot ... Grouse 1. Hunters 0. After a few more attempts at finding a grouse, we decided to call it a day and go drink beer somewhere instead. As far as hunting experiences go, it was pretty good in my book. Just having the opportunity to go walk on the land and be outside (and somewhat comfortable), in midNovember, was amazing in itself. Getting an opportunity to have a friend teach me about hunting and seeing those best practices put into action was also something I am grateful for and will now be able to build upon going forward. I am excited to get out on the land once more and pit myself against a worthy adversary—which in this case is a spruce grouse. A very smart spruce grouse, mind you! ■

BACON-WRAPPED MEATBALLS

WITH SMOKED PAPRIKA AND BROWN SUGAR

PHOTOS: Sydney Keddy

W

henever we’re lucky enough to have game in the freezer, there’s always a good amount of ground, which is fantastic and versatile but can be a bit of a slog to get through if you harvest a large animal. These meatballs will work with pretty much any ground but will be especially good with all the different types of game we have in the Yukon. Makes 8 large meatballs.

INGREDIENTS ❑ 1 pack ground meat (caribou, moose, bison or beef—all delicious) ❑ 4 tsp smoked paprika, divided

Bacon

Ground meat with spices

Wrap those meatballs

Place the wrapped meatballs in a pan

❑ 4 tsp brown sugar, divided ❑ 3 tsp salt ❑ 8 strips thick-cut bacon

METHOD: 1. Set the oven at 400 F. Mix the ground with 3 teaspoons smoked paprika, 3 teaspoons brown sugar, and the salt and mix to combine. Divide meat into 8 equal portions, then wrap each one with bacon. 2. Place each bacon-wrapped meatball side by side in an oven-proof dish. Then mix together remaining sugar and paprika and sprinkle on top. Roast for 25 minutes or until the meatballs are fully cooked. ■

SAUTÉED RUFFED GROUSE BREASTS IN MADEIRA AND CRANBERRY SAUCE

W

e met Roger Kempanien in a youth hostel on the outskirts of Gällivare, an iron-mining town in northern Sweden. My husband and I were on a food tour of Sweden, Norway and Finland, gathering recipes for my second cookbook, The Boreal Feast. Roger walked towards us down the corridor, a strong middle-aged man of medium build with a kind, open face, carrying two bowls of steaming dog food. Roger is a hunter, and like every Swedish hunter, he has hunting dogs whom he loves and expects much of. He and his dogs were in Gällivare to take part in a competition: the dogs had to do clever things in a difficult, simulated hunt, and they had to do them elegantly and well. One of Roger’s dogs was a young female who was very smart but tended to lose the plot at crucial moments. The next day would be her test. Roger hoped she would flush a fjällripa on the mountain. Sweden’s fjällripa is our rock ptarmigan, or Lagopus muta, found in the subarctic and Arctic tundra, nesting on stones. Until I went to Sweden, my culinary experience of the grouse family, to which the ptarmigan belongs, was limited to the spruce grouse (ptarmigan had not come my way). Roger’s young female dog didn’t do so well in the competition; she might have had a chance, but it snowed on the fjäll (mountain) and then it got foggy, so the day ended early. That night, Roger and the other hunters told stories over a couple of whiskies at the youth hostel, and by the way, the young hunters listened to Roger (we could tell he was someone they admired). At the end of the night, Roger invited us to visit him in his hometown of Luleå on the Baltic Sea. Perhaps he would cook us a fjäll-ripa. We found his house in a quiet suburb of Luleå, a couple of weeks later. Roger and his partner Birgitta welcomed us into a home

lit with candles and decorated in the simple, pretty way that Scandinavians are so good at. We stood at the kitchen counter and ate flatbread, melted Västerbottensost and cloudberry preserves, while Roger prepared the main course: breast of fjäll-ripa, cut into pieces and sautéed in butter, with chanterelles and bacon, then braised in a stock made with ptarmigan bones and finished with cream. We had lingonberry sauce to accompany, and Birgitta made potato cakes with Västerbottensost to go with the fjäll-ripa. We dined by the light of many candles and ended the evening with a singalong of ’70s songs. In the fall of 2013, a year after we met Roger, Cathie Archbould

his dish is prepared about 30 minutes before serving, but you soak the cranberries in Madeira for a few hours beforehand.

Rub makings came home with two ruffed grouse and invited me up to her place to cook it for us and our partners. This was my third culinary experience with the grouse family. After dinner, we did not sing ’70s songs, but we did sing the praises of the ruffed grouse, whose meat is mild in flavour, light in colour and cooks up quickly. The Boreal Feast, published in 2014, is now out of print and I am thumbing through it and remembering good times and good friends, both here and abroad. I hope you enjoy this recipe as much as I do. (If you were not blessed with ruffed grouse this hunting season, try it with local chicken breasts, but you’ll need to cook them a little longer.) As always, many thanks to the hunters. Serves 4. ■

METHODS • Two to three hours before you intend to serve, soak cranberries in Madeira. • Make the stock: sauté the grouse bones and vegetables in 1 tablespoon butter in a small, heavy ucepan until vegetables are beginning to brown. • Add the turkey or chicken stock and bring to a boil. Reduce heat to medium-low and simmer covered for 1 hour. Strain the liquid, measure and return to heat until reduced to one cup (250 mL). Set aside. • Grind Labrador tea leaves, spruce tips and black peppercorns in a mortar and pestle. Drench breasts in seasonings and let sit at room temper-

• 1 cup Madeira

• 1/2 tsp black peppercorns

• 1/2 cup low-bush cranberries

• 2 Tbsp butter, divided

• 2 ruffed grouse breasts, split and boned (reserve bones for stock)

• 2 cups chicken or turkey stock

• 1 Tbsp dried spruce tips* • 1 tsp Labrador tea leaves*

ature for 30 minutes. • Pour Madeira and cranberries through a strainer. Set liquid and berries aside in separate bowls. Reserve 1 tablespoon cranberries for garnish. • Thirty minutes before serving, melt remaining butter over medium heat in a cast-iron frying pan. When butter is sizzling, add grouse breasts and sauté for 3 minutes on each side. Remove from heat and let sit on a plate, uncovered, while you make the sauce. The meat will continue to cook as it rests. • Still over medium heat, deglaze the pan with half the Madeira, scraping up any browned bits. Add the remain-

ing Madeira, the turkey stock and the cranberries (minus the reserved tablespoon) and cook until reduced to a light syrup, enough to hold its shape but not thickened like cranberry sauce. If you do somehow cook the sauce too long, remove it from the heat and beat in a couple of tablespoons of cold butter. • Carve each breast into four thick slices. Pour a pool of sauce on each of four dinner plates and arrange the slices in a fan on top. Sprinkle with a few cranberries and serve at once on heated plates. Bring any remaining sauce to the table (there won’t be much). Serves four.

THE TRAPPER’S LIFE

Sonja Seeber Sonja Seeber and her husband Paul are Yukon trappers who live in the Pelly Mountains and have developed a lifelong passion for the trapping lifestyle in the North.

THE CHATTERBOX OF THE BOREAL FOREST

E

nvision this … you’re trying to walk quietly through the bush; maybe you’re hunting grouse … Next thing you hear is a squirrel, challenging you not to come any closer. This column is about the red squirrel, also known as Tamiasciurus hudsonicus. They inhabit the boreal forest from the Atlantic to the Pacific, ranging north to the treeline and south into the mountains of the eastern and western United States. If there are lots of whitespruce-tree cones available, there could be up to two or three squirrels per hectare (1 hectare is nearly 2.5 acres). In Au-

Squirrels on forming boards and crafting equipment

Squirrel having a snack gust and September, squirrels harvest the green cones before the seeds start to fall out: they chew the seeds out from the cones

and can harvest up to 16,000 of them in one season. Those voicy mammals, belonging to the rodent family, can cut one spruce cone per second and eat 40 to 50 cones a day in the wintertime.

Sometimes they make small stockpiles, scattered about in their territory, but most often they stash all of their cones in one central depot called a midden. Middens are the bits and bracts from the cones they have already eaten. Squirrels also eat buds, flowers, mushrooms (I’m sure you’ve seen a mushroom stuck at eye level in the branch of a tree!), aspen buds, lichens and berries. They also won’t say no to meat, therefore going after birds’ eggs and young birds, as well. Insect larvae and wasps are also welcome. Their predators are bigger birds such as hawks, harriers and kestrels, as well as lynx, coyotes, wolves, ermine, marten and fisher. In B.C., squirrels might have two to three litters a year; in the Yukon, just one. A squirrel, therefore, only mates one day in the year, usually between late March and mid-May. A month later, she’ll give birth to three or four young. In another four weeks, the young

Squirrels ready to be tanned

Squirrel tracks in the snow are covered in fine fur and their eyes are open. They’ll remain with their mother until August. If they aren’t able to find a new territory before winter sets in, or if there is a poor cone year, then they’ll try to make it through the winter by eating buds, sap, the inner bark of spruce trees, mushrooms and rotting cones. An adult squirrel weighs about 280 grams. When it gets really cold, they will burrow in their middens and increase their metabolic rate by three to four times, in order to burn enough energy to stay warm.

PHOTOS: Sonja Seeber You can hear squirrels chattering throughout all of the seasons. In springtime, intruders and potential mates are being chased and we see that as a high-speed tag. When you approach their territory, they will let you know. You’ll hear their “chuck-chuck” and see the body jerks and tail flicks. If you get too close, they’ll aggressively start stamping their feet, their body quivering as they make a ruckus. Squirrels scold you while they go up and down the trees, barking and muttering. They will defend their patch of forest to the utmost.

The Chatterbox of the Boreal Forest ... cont’d from page 10 ARE SQUIRRELS HELPFUL?

NOW AVAILABLE:

Cons: Those “Timber Tigers” are vicious (in trying to eat young birds and bird eggs), and they also want to get into your cabin! Not all Yukon cabins are completely squirrel-proof, so when you show up after having been gone for a few months, you might have to pick up the broom, the dustpan and a big bucket in order to remove the foot-high spruce-cone refuse, the bracts and bits, droppings, chewed-up insulation and plastic. You’ll need soap and water to clean-up their urine too.

Pros: On the other hand, squirrels may warn you! One time, I was on my way to the outhouse when a squirrel started barking. I thought, I’m not that close yet— and, sure enough, a big black bear was wandering past the outhouse, minding his own business. So, when it doesn’t feel right, look up and around you. In the meantime, get outside and see if you can find a squirrel’s “dinner plate” (a.k.a. stump) with chewed-up cones on top of it. Squirrels are good eating (make a casserole!). Their fur is used as a trim or for a coat lining, and can even be made into light garments. Some might try to incorporate it into their knitting! I have tanned squirrels before and have made simple jewelery such as earrings, necklaces and bangles.

Clayton’s CAR CARE Tips

MAKE IT A HABIT Having good visibility on snowy roads can make all the difference. You will be able to see things clearly and avoid accidents and injuries. Here are a few tips to sharpen your vision and ensure a safe drive at night. First, check your lights. It is important to check your headlights that includes fog lamps, driving lights and brake lights if they are working properly before heading out. It is also important to visit your local mechanics if your vehicle requires to adjust or change your headlight bulb or if it requires some cleaning in order to have a safe and enjoyable drive.
