TACO SMASH BURGER

Burger meets taco. It’s the best of both weeknight staples. Try seasoning the beef with taco seasoning if you’re feeling more taco, or adding a fried egg and some bacon if you’re feeling more breakfast for dinner.

Serves 1.

Ingredients

❑ 6 oz ground beef

❑ 2 small flour tortillas

❑ 1/4 cup grated cheddar cheese

❑ Salt and pepper, to taste

❑ Tomato, chopped

❑ Sliced lettuce

❑ Various condiments

❑ Toasted sesame seeds, to garnish

Instructions

• Set the oven at 400°F. Press 4 ounces of ground beef onto each tortilla and season liberally with salt and pepper. Heat a pan over medium-high heat and add a drizzle of oil. When shimmering, add the tortilla, meat-side down, and cook until the meat is just pink, about 6 minutes.

• Remove from the pan and place on a baking sheet. Repeat with remaining tortillas, then top with cheese and place in the oven until the cheese is melted, about 4 minutes.

• Top each burger with desired toppings and serve immediately. ■
