ukon’s winter music festival is back, some might say, finally. Since taking the task on in 2014, a small group of volunteers have been spending their spare time working hard to make this happen. Initially hoping to bring it back for 2015 and quickly discovering that wouldn’t be possible, the team decided to focus on a 2016 return: “whatever it took,” says treasurer/secretary Amos Scott. What it ended up taking, aside from the commitment of a board of dedicated volunteers, was minimizing. “We’ve really made a commitment to cutting costs,” says Scott, which means they aren’t flying musicians in from outside the territory, and they aren’t hosting any workshops. In its first year back, Frostbite’s lineup is totally Yukon. Bands like Soul Migration, The Midnight Sons, Major Funk and the Employment, with Nicole Edwards and the Puppet Affair headlining the Sunday Kids Fest. A number of local businesses have also reached out to help, Scott says. This year is about Yukoners coming together to revive the festival that has defined their winter
for 40 years. “Some people would say to just start a new society,” says Scott, “But Frostbite is almost a 40-yearold society. We thought it was important to bring it back.” Having lost its official society status, the team has had to work hard to meet the requirements to get it back. This is largely what made a 2015 relaunch impossible. “It’s been a lot of going into offices,” Scott says. The board does have one carryover member from before, says Scott, but the rest are newcomers, people who grew up going to the festival, whose parents went to the festival. Keeping the previous spirit of Frostbite alive is important. And though this year won’t have the flash of big time artists that past festivals had, “we are planning to come back full scale,” Scott says. Next year workshops will return, and, though Scott says, “we’ll still focus on the local,” he’d like to see Frostbite alumnae coming back. Artists ranging from Fiest to Skinny Puppy to Jewel, Frostbite has seen “pretty much every Canadian musician,” Scott says. For now, Frostbite will be fo-
cusing on some of its other traditions. “One thing Frostbite always brought to the table is connecting the emerging artists with the established ones,” Scott says. They’ll be wrapping up each night with a jam, with musicians of all ages playing together on the stage. “It’s going to be a real family event,” Scott says. To him, that’s what Frostbite was 20 years ago – something you could bring your kids to. The return of that atmosphere is important to him. “There will be a bar,” he says, “but that’s not the focus.” The Frostbite Music Festival runs Feb. 12-14 at the Yukon College. Tickets can be bought at the Yukon Arts Centre or at Arts Underground. “It’s a real grassroots volunteer effort this year,” Scott says. “It’s a labour of love. ometimes I think we could skip February. I mean, January has got the cold and dark covered, and the wonderful triad of snow, sun and skiing find their fullest expression in March. Weird warm winters aside, February seems like a little more of something I’ve had enough of, and not enough of something I’m eagerly anticipating. And of course it contains that most successful of commercial creations, Valentine’s Day. Maybe I’m overly hard on the day of love, but I just can’t get behind the mass-marketing of poor quality chocolate and anything that tells me how to express that most deeply felt emotion. Plus, for those of us who find ourselves unattached, footloose and fancyfree, or otherwise single, well, we can feel a little left out. In the spirit of inclusion, then, I have mined the internet and my own creativity to come up with some activities that just might make Feb fourteen as awesome as any other day of the year, even if you’re flying solo. If you can’t beat ‘em, join ‘em Find a fellow singleton and together take advantage of all of those deals and specials that seem designed to slight us solo folk. For example, Canada Games Centre 2-for-1 night (disclaimer: I don’t know what is required to prove that your companion is your, well, companion.)
you are not invited. Not a scotch fan? I won’t judge. Just have a party where everyone wears a singlet and eats single origin chocolate. Some of us are quite content in our singledom – others not so much. I don’t wholeheartedly recommend this option, but I do acknowledge the therapeutic value of a good mope. If you can’t bring yourself to celebrate your solo status, bemoan it in style. Then pick yourself up in the morning and get back to enjoying life.

Just plain simple If all else fails, there’s always chillin’ with Netflix. No, literally. Make it all about you: your bowl of popcorn, your laptop, no fighting about what you’re going to watch – and maybe your very own nice bottle of red. That sounds like a pretty good Sunday to me, any month of the year.
Quest will be in full swing, and the Frank Slim’s building in Shipyard’s Park is open all week from 9 a.m. to 5 p.m. to keep you up to speed on the race.

o, how many times have you used that plug this winter?” came the question from my fellow citizen today at the Post Office. He was looking at the plug attached to the three varieties of engine heater (block, oil pan and battery blanket) that are hiding beneath the small hood of our little Yaris. I had to stop and think about it. Mostly it needs to get down to -30 or so before I need to use the plug, but I did try it out once and used it that night after I discovered the prongs on the Yaris’ plug had been bent and needed straightening before I could hook everything up. I do have long, flexible extension cords running from the outside outlets at the front and back of the house, just in case they’re needed. The one leading to the parking pad in the back lane where the car sleeps is the only one I’ve used this winter. “Once,” I replied. “Me too,” he came back. “Just one night.” It’s not that there haven’t been warm winter spells at various times during my 30 years here in Dawson, but this particular winter does seem to be one for the books. The natural ice arena has been shut down this week with the hopes that the ice will hold up long enough for this weekend’s big hockey tournament. With
teams coming in from all over the northern Yukon and some from the NWT, the local group doesn’t want to disappoint anyone. It’s approximately -5°C on the Thursday that I’m writing this. The hockey folks are hoping that it will actually get to the -10 or -11 – that is forecast for tonight and Friday. Yesterday I was walking home from a meeting of the World Heritage Committee Advisory

too close to some of the steeper pitched roofs in town. In this weather, he said, the snow layer next to the metal roofs tends to melt and get liquid enough under the returning sunshine to pose an actual danger to a person if it should all let go and slide off the roof and hit them. He’d nearly been hit by some falling snow load some time back and remembered just how scary that had been for him. I’d already noted that some of the businesses in town have put up caution tape and were clearing their roofs before they could slide on their own. Some of the flatter roofs in town are being cleared for other reasons. As the snow load warms up, it compacts and gets heavier. One section of the Westminster Hotel was cleared off a week or so earlier. The curling rink section of the Fry Recreation Centre has a roof envelope (as the engineers call it) that was installed incorrectly 15 years ago and has to be kept clear because it can’t take a lot of weight. Two guys were up there with scoops as I continued on home. Dan Davidson retired from 32 years of teaching in rural Yukon schools, but continues writing about life in Dawson City. ring family, friends, or even a date, because the All-City Band Society is hosting the 16th annual Dessert and Dance. The evening will start off with some sensational tunes provided by All-City Jazz Band, with the lights dim and the jazzy sounds of saxophones alongside the trumpets and trombones, controlled by the beat and rhythm of drums, piano, and bass. The All-City Jazz Band is made up of band students from Porter Creek and F.H. Collins secondary schools with some adult members. After the jazz band has finished, The BIG Band, now in its 26th year of performing, begins their beat with two diverse sets of music. The band will be setting a mood of excitement and generating lots of energy on the dance floor with swing, Latin, rock and funk styles. The BIG Band’s musi-
cians are some of Whitehorse’s most talented horn and rhythm section players. Under the direction of Keith Todd, the BIG Band is sure to please the most discerning of music aficionados. Don’t be intimidated if swing dancing is new to you. Dance instructor Bruce Sahlstrom will be teaching guests to swing and sway in the first part of the evening. Have some fun learning new styles as you pick up the art of the dance. Take a break and and relax from the buzz on the dance floor with decadent homemade desserts, tea and coffee. One of our waiters is sure to have a confection that suits you. While you eat why not visit one of the silent auction tables? Many unique items will be up for bid. Once dessert is taken care of return to the dance floor with your partner in hand, continuing
to dance the night away. Proceeds from ticket sales and the silent auction will go towards the AllCity Band’s trip to Maple Ridge, BC this year. This year’s Dessert and Dance and Silent Auction will be held at the Mt. McIntyre Recreation Centre from 7 to 10 p.m. Doors will open at 6:45 p.m. with music beginning at 7 p.m. Tickets include a dessert and coffee or tea, and are $20 for adults, $15 for students and seniors. Children three years old and under are free. Tickets are available at Dean’s Strings and online at AllCityBand.com or at the door. This a licenced event.

Storing your out of season tires properly
IS VERY IMPORTANT! Improperly stored tires may become unusable due to ride disturbances caused by flat spots in the tread, for this reason tires should never be stored sitting on the tread for any extended period! Another improper storage technique would be to hang the tires by the beads, which can cause bead damage rendering the tire unusable. The best practice when storing your out of season tires would be to keep them in a cool dry enclosed storage area that is not exposed to the elements (e.g. water, ozone etc.). They should be laid down on the sidewall of the tire and stacked either on top of one another or on a flat surface that won’t cause any indentations.

The Great Backyard Bird Count takes place here and around the world Feb. 12-15

here’s nothing like a bird count to inspire new and seasoned birders. This Great Backyard Bird Count (GBBC) takes place Feb. 12-15 and it’s a family-friendly event for any skill level. The GBBC helps to give a snapshot of bird life throughout Canada, the continent, and the world. Last year 5,090 species were recorded – or half of the world’s species – from birders in more than 100 countries. Held annually since 2007, the GBBC is aimed mainly at taking stock of overall diversity in late winter, says local expert Cameron Eckert. Participation is easy. At any time over the four days just record what you see – species and numbers of birds – for each observation period (of at least 15 minutes) and for each location. Then register and report your findings on the GBBC website. The info-packed site has observation forms you can fill out, and resources to learn about birds, explore data or enter a photo contest. Once the event is underway you can check out field reports on real-time, including who is birding and where. The site also has a trip planning feature, to identify birding locales in worldwide hotspots like Costa Rica, in case you’re heading out of town. Each year’s count brings surprising results, sometimes due to weather anomalies like the Polar Vortex. Last year’s most reported species was the Brambling – but probably because flocks of over a million of them were seen at one particular site in Germany. Of the top 10 species reported worldwide in 2015, only the blackcapped chickadee was observed in the Yukon. In Canada, British Columbia had the most number of species at

In Whitehorse, local winter birding hot spots are open-water sites including the Yukon River (Rotary Centennial Bridge or near the SS Klondike), and McIntyre Creek on the Fish Lake Rd. Downtown near Alpine Bakery is usually good for House Sparrows, and the landfill is a gold mine for common ravens and black-billed magpies. Boreal forests are also good birding habitats. Feeder-watching is encouraged, so stock up on black oil sunflower seeds or use a suet feeder. Commonly seen feeder species include pine grosbeaks, crossbills, common redpolls and chickadees. Keep an eye – and ear – out for early spring mating behaviours, says Pam Sinclair, a biologist with Environment Canada. “Listen for a whistled ‘fee-bee’ of the black-capped chickadee on

Hopefully hopeless, Anna Karenina details the rise and fall of a Russian beauty who is ultimately destroyed by the strength of her desires and her willingness to seek out her own sexual and romantic happiness. While it has been interpreted as a morality tale by early critics, it is now seen as a ground-breakingly realistic depiction of the way people are both born through, and devastated by, love and its various successes and failures. For those of a less romantic bent, much of the novel revolves around men and their place in the natural world, which for Tolstoy apparently meant being outside hunting, shooting, fishing and farming as often as humanly possible. Complex and intricate in its plot structure, this novel is practically made for the darkest, longest days of the year.

Raspberry Ultimatum A
t the beginning of January I set myself the task, for 2016, of clearing the cupboard of experimental aquavits, infused spirits and liqueurs. A task that was easier set than done, especially when the experimental beverage, put up with such hope and optimism two years before, turns out to be nasty and medicinal-tasting. Such was the case with a raspberry-infused brandy I found at the back of the shelf during the clean-out. It was delicious a year ago. But when I poured half an ounce into a liqueur glass to check it out, I was floored by how awful it had become. I poured another half-ounce just to be certain. Yup. Awful. But there were three full cups of the deceptively pretty, ruby-red liquid, and I was too proud (too cheap?) to call it a bust. And so began several hair-raising days of cocktail research and development. I mixed raspberry brandy with bourbon, birch syrup, orange bitters, and an orange twist. No go — pure cough medicine. I tried something called “Charm and Audacity” that I found online, a cocktail that combined Cynar (I subbed Punt e Mes, a terrible waste, because you can’t get it in Whitehorse anymore) with raspberry brandy, green Chartreuse and grapefruit juice — hello, ulcer. I brought the problem to friends and colleagues. “Make trifle!” said one. “It’s my go-to solution for unwanted booze. Just soak a cake with it.” I suggested to my editor a Valentine’s Day cocktail made with chocolate syrup, raspberry brandy and cinnamon or chocolate bitters. “Sounds like a really good

icing,” she said. So I made raspberry syrup with raspberries picked two summers ago, probably the same batch that went into the brandy. As the berries thawed they made their own juice, and I put berries and juice and some extra water into a pot and boiled them. I strained them and added sugar and boiled the juice again, and the sub-optimal, two-year-old berries became a pretty good syrup. So then I made cocktails with raspberry brandy and raspberry syrup, though my friends warned me against it, they said raspberry takes over, that’s too much, watch out, but I ignored them and produced extra-concentrated raspberry-flavoured cough syrup. I reached a state of fed-up-ness that bordered on fury and in that state mixed three parts raspberry brandy with one part raspberry syrup, and, lo and behold, the waters calmed and I had a liqueur. Not a brilliant liqueur, but a good one. Pride demanded I use that liqueur, not in trifle, not in icing, but in a cocktail. One that worked. A friend advised me to look up what flavours raspberry pairs well with, and I found, among others, lemon, ginger and rhubarb. With that I built a cocktail that I can stand behind. Not a brilliant cocktail, but a good one. Thank heavens. I gave several bottles of raspberry liqueur away, with caveats. I believe the moral of this story, though I can’t verify it unless I try another batch next July, is make raspberry brandy, but drink it within the year. Or cut to the chase and make liqueur. And if all else fails, just soak a cake with it.
Raspberry Liqueur
3 cups (750 mL) brandy 3 cups (750 mL) wild fresh raspberries 1 cup (250 mL) raspberry syrup Rinse raspberries briefly and place in a clean 1L jar. Pour brandy over top. Seal jar and store in a cool, dark place for one week. Strain and taste. (Use the raspberries in trifle.) Add raspberry syrup. Reseal the jar and let stand for a few weeks before serving.
Raspberry Syrup
2 cups (500 mL) fresh or frozen raspberries 2 cups (500 mL) water ¼ to ½ cup (60 to 125 mL) sugar Bring raspberries and water to the boil in a medium saucepan over high heat. Reduce heat to medium low, cover and simmer for 20 minutes. Strain into a clean pot, reserving raspberries for muffins or smoothies. Bring juice to the boil over medium high heat and whisk in sugar, starting with ¼ cup (60 mL), and tasting until mixture is sweet but still tart. Cook at medium high for 10 minutes and pour syrup into hot, sterile jars. Seal and refrigerate when cool.

1 ½ oz. Appleton Estate Signature Blend rum ½ oz. raspberry brandy liqueur ½ oz. lemon juice 1 tsp. ginger syrup 1 dash rhubarb bitters Stir all ingredients over ice. Strain into a double rocks glass over one big ice cube. No garnish.

W
hether you see February as the month of love, loneliness, or a time of being just plain fed up with winter, there is one thing that we all turn to during these 29 days: chocolate. Throughout the year we are generally quite good at consuming what can be seen as one of the world’s tastiest foods. Come February, however, we lean on it a bit more to get us through the month – or to celebrate the month for those in the love group. While turning chocolate into a core food group is not the healthiest of ideas, eating it in moderation – and in its pure cacao form – can be a good thing. In fact, cacao has been used medicinally for centuries. The earliest recorded evidence for its use can be found in Mesoamerican civilizations. Iconographic works and pieces of pottery suggest that it was in use as early as 600 BC. The raw cacao seeds, before they are processed into chocolate treats, are rich in a group of antioxidants known as flavonoids, specifically catechin and epicatechin. It is these flavonoids that are responsible for cacao’s many health benefits.
In studies, flavonoids have been shown to boost memory and learning. One group of Italian researchers found evidence that regular consumption over eight weeks could even improve cognitive function in the elderly. Other studies focused on a younger generation found that high-flavanol cocoa consumption enhanced cognitive performance. It would seem that cacao-powered cognitive gains are a great benefit for all ages. Another key area of focus for those linking chocolate with medicinal benefits, is heart health. Researchers have been finding that cocoa consumption can have positive effects on the cardiovascular system. Studies on the subject have found that cocoa can help lower blood pressure, restore arterial flexibility, and may even reduce the risk of stroke. Before you rush out and clear the shelves of your favourite chocolate-y treats, it’s important to differentiate between the types of chocolate available. Chocolate candy bars stocked in grocery stores and pharmacies don’t qualify for the healthy type. In their sweetened form that we are most familiar with, the raw
cacao seed has been processed to the point of no nutritional return. Add in the fat, sugar, and other additives and consumption can do more harm than good. Raw cacao with minimal processing is the way you want to enjoy this delicious food. Not only is it a more pure shot of tasty chocolate goodness, but it’s also full of flavonoids. It can be bitter on its own, but with the right preparation and by adding your own natural sweeteners you can have the stuff that chocolate dreams are made of. Raw cacao can be purchased in both a powder and nib variety. The nibs are small chunks of the cacao bean. Adding a spoonful or two to smoothies and frozen banana ice cream is a great way to add a fudgy punch to your day. It’s also a great addition to raw truffles made from nuts and dates.

Ode to Kusawa Lake Part 1 of 2

oxing Day: we drive out to Kusawa Lake . My beloved lake, Kusawa. The joys of the lake for me include swimming, boating, floating, skating, to be in it/ on it or crossing the lake. I have even bicycled on it and now I walk on it. I have often sunbathed on its sandy beaches or hiked along the shore. I have seen the lake from the top of the surrounding mountains, which I reached on foot. I’ve never been farther down the lake than The Narrows, where the Primrose River flows into the lake, which means that I have only been in or on a fifth of the lake’s full length. Earlier this winter, on Nov. 21, it was a stormy day; Whitehorse recorded 9 knot hurricane force wind gusts. We drove to the lake to be with the waves. I say, we, to ease my guilt for using up resources; I hardly ever drive to the lake alone. And the road is always a gamble, even though it has been cleared for the first part, seemingly by locals. At Mendenhall Landing the river was still wide open and I heard people were canoeing it late into the season. We stop at the first campground to see if any otters are in the river. Once when the river was frozen over up to the river bend to the north, I sat on a shoreline ice shelf and otters swam right up to me, playing and diving, looking at me with their old man faces lined with frozen whiskers. No otters this time, although at the next stop, we did see a large flock of common goldeneyes. The water was choppy from the wind more than the current. The ducks flew up and took off when they

Ode to Kusawa Lake ... cont’d spotted us on the high bank. Along the road we noticed that one driver, of an obviously bigger vehicle than our jeep, had been driving the road and had driven into the round about lay-by at the mouth of the river. We followed the vehicle’s tracks in the frozen snowdrifts. At last, we reached a place where the grandeur of the lake was spread out before us: a lake
full of waves and innumerable white caps. Whitecaps were rolling into the river and crashing over the rocks on the shore. Sun shafts illuminated the spray that the wind blew up. On Dec. 16, we drove out again and discovered that the whole road had been plowed by a government grader. The lake was frozen, not fit for skating, as, perhaps, all those waves froze into a

rough surface. And today, Boxing Day, the road is drivable all the way – unlike most winters. Today our destination was to reach the high bank overlooking the lake. The lake is white, frozen with a layer of snow. The Takhini River is full of ice floes and farther downstream we see two lone common mergansers. The sun is shrouded in a dirty yellow-clouded sky, about to set behind the mountain. The steep mountain slopes rising out of the lake on either side block the sun early in the afternoon. Jozien Keijzer is a visual artist, writer and avid hiker who lives in the Mendenhall Subdivision.

o what are teen relationships like on Valentine’s Day? Well, the answer may surprise you. It is actually one of the most stressful days of the year. For girls we look to it with heightened anticipation, but there’s also some stress. All of a sudden we have to figure out our partner’s likes and dislikes for a present and try to out-do the guy in gift giving. The price of gifts stings as we glance at our empty wallets. How about the easy way out : a $10 McDonalds card? That would please both my bank account and his appetite. What about the romantic dates, like in the movies? Well in reality, fancy dinners and diamond necklaces are replaced with fruit loop bracelets and homemade mac and cheese. Well, any home cooked meal is welcome. On the other hand, for those of us with no partner, we tend to spend that day a little differently. As we watch the couples in high school pair off and hand each other roses, we look on with longing. However, it does not need to be a day of loneliness. You need to get out there, buy that bouquet of daffodils from Superstore and place a vase of them in your locker. Just for yourself. Open the door and, ta da! A gift to yourself celebrating you. After all, Valentine’s Day is meant to be a day of love and what everyone needs to do a little more of is love themselves.

Until that day, I had no idea how many rotations a tricycle wheel takes to cover three-pointsomething miles. Still, I plunged valiantly onward until the MacLeans’ barn finally hove into view. Must. See. Kittens. Mary was in the hayloft when I arrived. While she went to fetch me a much-needed jar of water, I introduced myself to the kittens, who were so unimpressed they didn’t even bother opening their eyes. To be honest, I wasn’t that impressed either. After a few minutes, a furry mass of wiggling and sucking loses its enchantment.

ome people have a knack for the Grand Romantic Gesture. They’re the ones who swim the Hellespont, write soulful ballads in milady’s honour, or casually slip the keys to a Maserati under their partner’s breakfast plate. Then, there are the rest of us, the romantically-challenged, who just can’t get it right, no matter how many courses we’ve taken in Hallmarkology. The only GRG I recall pulling off happened before I even understood that’s what it was. It started with a surreptitious note from Mary MacLean during a spectacularly boring Grade 3 class. “I have baby kittens in the hayloft. Want to see them?” Now, there’s a come-on if there ever was one. Who could resist a farm-fresh batch of kittenhood? Besides, Mary MacLean was kind

But, have I mentioned that Mary was kind of cute? Time, as they say, passed. “My goodness, Kenny, are you still here? Your parents must be worried sick,” Mrs. MacLean admonished when she came to call Mary for supper. Since I was the fourth child, known as a bit of a dreamer, my absence hadn’t provoked any such response. Nor did it prompt an offer from Dad to come and get me when I phoned to report my whereabouts. His exact words were, “You made it there, I’m sure you can make it back.” Apparently, the rule that the homeward stretch is shorter doesn’t apply to tricycles. When I finally arrived, I was too tired to eat the stone-cold supper that had been left for me. I was even too weary to ward off my older brothers’ taunts of, “Kenny’s got a girlfriend. Kenny’s got a girlfriend,” or my sister’s irritating chant of, “First comes

love, then comes marriage. Then comes Mary with a baby carriage.” According to the GRG Handbook, I should now be reporting that Mary and I just celebrated our anniversary with all 14 grandchildren, but that’s not exactly how things went. If there’s a cautionary tale here for my fellow romantic clods this Valentine’s Day, it’s this: Do a thorough cost-benefit analysis before embarking on a GRG. If it’s within your financial means, go ahead and book that weekend in Venice, or order that little bijou from Cartier. If you have the right emotional stuff, climb the Matterhorn or write a symphony for your beloved. But remember, there’s a reason florists and chocolatiers exist. In Praise of Whistle Bend by Darrell Hookey
A
s I turn from Mountain View Drive and toward our Whistle Bend home, I am yet again gobsmacked by the sudden and looming sight of the mountains on the far side of the Yukon River. Blue in the mornings, pink at night and otherwise brilliantly lit against a vivid indigo background of so much sky, it is sometimes moody with rolling and churning of its own weather. Often I see my neighbours and visitors pulled over to the side of the road here to take in this everchanging sight. If they travel a little further to the bottom of the hill where Whistle Bend proper begins, where Whistle Bend Way and Range Roads meet, there is a recently completed parking area at the trailheads of the many spidering paths that explore the Eagle Bay Park. It doubly serves as a lookout over the Yukon River where it meets McIntyre Creek. As Whitehorse’s newest neighbourhood, it has become, automatically it seems, the subject of much criticism. Whistle Benders (Whistle Bendians? Whistle Bendites?) know this criticism comes from those who have not visited here... lately. True, I thought Whistle Bend was a vast wasteland when my wife and I first visited in the fall of 2013. Six months later, when we could not find a reasonably priced house elsewhere, we returned to find it transformed in our eyes. Its wide-open spaces allow a clear, almost magical, light. Streets are wide and houses do not hug the curb to allow for large backyards hidden away from neighbours. Indeed, each home has a porch, which is that personal space for each of us that, at the same time, also welcomes passersby to stop for a chat. When walkers want solace, there are the kilometres and kilometres of paved trails all around Whistle Bend that are now lined with grass. I would think that the house that is furthest from a paved trail is the Evergreen Homes and Construction’s show home at Summerhill. Even so, it is just a two-minute walk from this house until the forest welcomes its future inhabitants. The gem in the centre of Whistle Bend has to be the pond. Nicely landscaped, it is a place to walk your dog and greet your neighbours. A playground will soon be built in the far corner. Until then, children (and adults) have been enjoying the impromptu toboggan hill down to the pond that now features two ice rinks that have popped up. Yes, Whistle Bend has some issues: Hydrologists haven’t figured out the flow of water to the pond... but they will. And that pond needs an aeration system that works. Those of us who live here were hoping for a fountain but we didn’t get it. A city official, however, told me it could still happen if enough people advocate for it and/or engineers deem it the best solution. And sand blows everywhere. But, as more houses are built, this problem is slowly going away. I see a lot of pride in Whistle Bend. On Skookum Drive, where townhouses are literally selling faster than Empress Homes can
build them, every resident dutifully shovels the sidewalk out front. I have never seen this on another street to this extent. We take pride in Whistle Bend partly because the Yukon Government and the City of Whitehorse demonstrably take pride in it. All last summer, convoys of trucks came in with new trees to be planted along the roads or in the miniparks throughout. Wherever there is a cul-de-sac, there is a pleasant array of trees, benches and paths winding through it. Fortunately, with a continuing
care facility being built in Whistle Bend, we won’t have to leave. Darrell Hookey is a freelance writer living in Whistle Bend.

My Mother’s Kitchen with Murray Martin
Pizza, Ribs and Lasagna Staples from my 1950s childhood Mini Biscuit Pizzas INGREDIENTS 1½ cup flour ½ cup milk 1 Tbsp sugar
1 Tbsp Baking powder ¼ cup oil ½ tsp salt
METHOD • Combine flour, sugar, baking powder and salt in a bowl and mix well. Add your oil and milk. Make sure the dough remains soft and mix into a bowl. Roll ball on floured board to ¼ of an inch thick and cut into 2-1/2 inch rounds. TOPPING: • Pizza sauce, pepperoni, diced green peppers, diced white onions, mozzarella cheese. • Spread dough with pizza sauce and dressings of your choice. Bake in a preheated oven at 400ºF for 10 to 15 minutes or until browned.
Lasagna d’Italia INGREDIENTS 1 lb ground beef ½ lb lasagna noodles two 6 oz. cans of tomato paste 1½ cups hot water 1 medium white onion chopped 2 garlic cloves, minced ¼ tsp pepper ½ tsp rosemary 1 Tbsp Minced parsley 2½ Tbsp salt 2 tsp oil 2 eggs 1 pint of cottage cheese ½ lb of mozzarella cheese, sliced ¼ cup parmesan cheese

METHOD • Cook noodles in salt water for five minutes. Drain. Heat oil in skillet. Cook onion and garlic. Add beef and seasoning and cook. Add tomato paste and water. Simmer for 5 minutes and set aside. • Blend 2 eggs with 1 pint of cottage cheese in a bowl. In 9x13x2 baking dish put a thin layer of meat sauce and half the noodles, all of the cottage cheese and egg mixture, and ¼ lb mozzarella cheese. Repeat with remainder of the meat sauce, noodles and mozzarella cheese. Sprinkle with ¼ cup parmesan cheese. Bake at 350ºF for 30 minutes. Serves 8.

Sweet and Sour Spare Ribs 2½ lbs spare ribs 3 Tbsp soy sauce 3 slices of bacon, diced 2 Tbsp cornstarch ¾ cup vinegar 2 stalks of celery, sliced thin ¼ cup cold water
1 small white onionsliced very thin 1 small tin water chestnuts, sliced 1½ cup brown sugar ½ tin of bean sprouts
METHOD • Cut spare ribs in small pieces and arrange in layers in baking pan. Season with salt and pepper and bake uncovered at 325ºF for 2 hrs. SAUCE: • Combine brown sugar, vinegar and soy sauce in a saucepan and bring to a boil. Mix cornstarch with cold water and add, stirring constantly. Cook until clear, then remove from heat. • Brown bacon in frying pan, then add onion, celery, water, chestnuts and bean sprouts. Cook five minutes and then add sauce mixture. Drain any excess fat from spare ribs; pour the sauce over. Cover the pan and return it to the oven for 20 to 30 minutes. • To serve, place a mound of rice on the plate; add a spoonful of Chow Mein noodles; spoon ribs and sauce over it and top with a sprinkle of toasted sesame seeds.

Place ingredients in a stockpot and simmer for 45 minutes. Remove breasts, separate meat from the breastbone, and cube. Strain the stock to remove the vegetables. Put the clear stock into a pot.
PREPARING THE STEW: Add cubed meat to the stock. Then add the following: 1 medium diced onion 2 sliced celery stalks 2 sliced carrots 3 or 4 peeled and cubed potatoes ¾ cup frozen peas 2 Tbsp. cornstarch • • • •
Baking Powder Biscuits 2 cups sifted all-purpose flour 2 tsp. baking powder 1 tsp. salt ¼ cup lard (or shortening) � cup cold milk Sift flour, salt and baking powder together. Cut in lard with a knife or pastry blender. Add milk and mix minimally. Knead on a floured surface. Pat out to ¾-inch thickness. Use a cutter or top of a glass to cut 2-inch circles.
Take 1 cup of stock and set aside for thickening with cornstarch. Bring remaining stock to a boil and add the vegetables. Simmer for five minutes with the lid on. The veggies will still be firm. Add the cubed grouse. Return to a boil and thicken with extra stock and cornstarch (add slowly while stirring). Stir until the stock thickens, then remove from heat. Pour the whole thing into a casserole dish and top with baking powder biscuits (see recipe) cut about ¾-inch thick. Bake at 375F for 20 to 25 minutes until the biscuits are golden-brown. If you’re not using biscuits, just lid the pot for 20 minutes.
