northodox Yukon is one of the Yukon’s most-colourful spaces—partly because it’s decorated with cheerful, bright paper flowers made by Tara Kolla, and partly because it’s home to some of the mostbeautiful Indigenous beadwork pieces in town. The store’s owner, Douma Alwarid, is funny, open and animated. During my conversation with her, she punctuates the conversation with an emphases on certain words (crazy, love), an occasional Texas accent, and more than a few f-bombs. Unorthodox Yukon opened as a small, narrow shop in Horwood’s Mall in June 2019. Alwarid’s intention was to have a northern-themed business with products from Yukon, Northwest Territories, Nunavut and northern BC. She especially wanted to work with the “Yukon Built brothers,” whose product she had featured in a previous business and it “sold like crazy.” The first months of the store were a huge success. “It was gangbusters from the get-go,” Alwarid said. Along with the Yukon Built apparel, Unorthodox Yukon offered Klondike Kettle Corn, local ceramics and decorative tiles. Alwarid also had one case with Indigenous designer Kaylyn Baker’s beadwork. “The response [to Baker’s work] was so insane, right off the hop, that I quickly realized that there was a little niche there— there was a need for this type of store in Whitehorse.”

PHOTOS: Douma Alwarid

Owner Douma Alwarid So, just seven months after Unorthodox Yukon opened, it expanded. Alwarid pushed out a wall, and now the entire back of the store is devoted to Indigenous work. But while the store’s first year was promising, Alwarid also experienced a devastating personal loss, followed by the upheaval of the pandemic. “My dad [Shakir Alwarid] had passed in early November (we had

opened in June); we expanded the store in early December, for the Christmas rush; COVID hit in March, right after I had spent most of December’s profits on restock for what I had expected to be a busy tourism year,” Alwarid said. “I was convinced I had bankrupted myself.” Fortunately, Shelley MacDonald cont’d on page 3 ...

Summer in the Yukon is short

(a jewelry designer whose work Alwarid carries in the store) “hooked me up with her awesome cousin” who built a “basic but wicked website” for the business. “That literally got me through five or six months of crazy COVID.” She had 1,200 online orders in one year, all out-of-territory orders from customers across Canada and the United States. She had a particularly avid buyer in Luxembourg. Part of her success was due to the website; the other was the product and the burgeoning popularity of Indigenous designers and their work. “This is design, this is art, this is fashion. We’re on the cusp, in Yukon, of a creative explosion with these artists; and can you just imagine if we could feed them the funds that they could do nothing but focus on this day in, day out? The artwork … my god. I’m already blown away by it.” Lots of other folks are blown away by it, as well. I often see Alwarid’s customers posting their new earrings on Instagram and wearing them during online meetings. “And this jewelry … my god,” Alawrid said. “I have ladies, some of my regular customers, wear

in the Yukon, Alberta and British Columbia. “Being of Arab descent, he was subjected to racist comments and attacks throughout his adult life,” Alwarid said. “But he never let it phase him, his drive, or passion for helping. He was also one of the mostgiving and loving people, in addition to being one of the most intelligent. He always defended the underdog. I am constantly striving to be more like him in my life.” One of the ways Alwarid emulates her father is through her generosity. She’s donated significant amounts to community organizations such as CAIRS. Alwarid is a visionary with big plans for developing the business website, to promote the designers and their work. And now that the pandemic seems to be subsiding, she may see the true potential of her business. “I’d love to see my shop and website eventually in the hands of an Indigenous organization or group,” she said. “We’ve done so much with so little, already … The possibilities are endless in the right hands!”

Unorthodox Yukon, decorated with Tara Kolla (of The Wishfactory) flowers their jewelry mountain biking … and I know the person, if you print this, she’ll know who I’m talking about.” One of the biggest inspirations

for Alwarid continues to be her late father, Shakir Alwarid, who was a senior official in Yukon government, for many years, and who also worked with First Nations

f you are into that kind of thing, you will get a chance to see something along those lines June 11 starting at 8 a.m. when the annual Ride for Dad kicks off at Shipyards Park. The Yukon chapter, which was founded in 2010, has a long history of support and camaraderie when it comes to the fundraiser which supports seed funding for prostate cancer research. Whether you ride a motorcycle, hop on as a passenger or have nothing to do with motorcycling, you can still make a huge difference to the event, said Sean Secord, a co-chair for the local chapter. He added that the Yukon group is the only chapter in the country that hosts two fundraising events within the calendar year. Aside from the June ride, the organization also hosts a comedy night, during the winter, that adds more pledges to the cause. COVID has hampered the comedy segment the past couple of years, but Secord is hopeful we are on the down side of the pandemic and its effects on socialization and events. “As a charity, we are still able to raise a lot of money.” Riders, survivors, and friends and family who have all been touched in some way by prostate cancer have routinely stepped up to the plate to support the local

Motorcyclists gather for a group photo prior to the ride from Shipyards Park chapter, and Secord said one of the biggest fundraisers doesn’t have anything to do with a motorcycle. Traditionally, the ride has taken participants through the Tagish Loop, but in recent years (before COVID), the chapter branched out to ride in different directions, and it was well received. “We did different communities and we got some good feedback,” Secord said. This year’s ride will see participants heading to Haines Junction after a brief ride through Whitehorse. However, there’s more to the event, Secord added. On Friday June 10, people can come down to Shipyards Park, between 5–8 p.m., to take in the sights and sounds of motorcycles, games, and even food and music. Now that many pandemicrelated restrictions have been lifted in the territory, Secord said he would like to see the number of riders get back to pre-COVID levels. The goal, he added, has always been to get about 200 bikes out there for the ride, but typically they land in the 170–180 range. But there is always hope.

“The more the merrier,” he said. In the last 22 years, the annual Ride for Dad has raised $37 million and has made a huge difference in how people are diagnosed and treated for prostate cancer. As a health professional himself, Secord sees tremendous value in being able to help move research forward through fundraising. Now partnering with researchers in Alberta, the local chapter has seen its money used in groundbreaking testing that can potentially find aggressive cancers through blood work rather than the traditional biopsy, which is hugely impactful to Yukoners who can give blood in the territory versus making long and expensive trips to the Outside for treatment and testing. Time is short, and the sooner people can be made aware of the need and lifesaving implications of prostate cancer testing, research and treatment, the better. So dig out those leather chaps, wash down your bike and get your best smile on, because you are in a place with one of the shortest riding seasons in the country—and every minute counts. n

HELPING HANDS Local mom’s Facebook group brings families together from all across the Yukon

O

ver the last couple of years, parents in the Yukon have had to work a little harder to find safe places to socialize, with other families, and to get advice from other moms and dads. The pandemic has forced a lot of programming to readjust how it is accessed by the public, and many of those places that parents used to gather are either no longer as easily accessible or are possibly non-existent. That is not to say that things are not starting to improve, but while public programming is beginning to re-emerge, one local mom has been hard at work making sure that Yukon parents have a place to go to when they need a helping hand. Andrea Simpson, who is the loving mom of two young sons, began the Yukon 2020/2021 Babies group on Facebook, in the summer of 2020, as a means of connecting with other parents. She recalls that with her first son, Rowan (4), she had a wonderful maternity leave and was able to meet a lot of other moms and dads at different parenting groups. It was incredibly helpful, she remembers, having that sense

of community as you began your life as a mother. However, when her youngest, Alder (1), came along in August of 2020, there were not many of those same opportunities available. “I wanted a place to be social and make those same connections for myself and Alder, as I was able to with Rowan,” she said. She also had a lot of concern for first-time parents who would not have been able to attend any of the groups that had been closed at the time. The Yukon 2020/2021 Babies group is an online community that has over 500 members to date. It began as a private group where Yukon moms and dads of babies born in both 2020 and 2021 could come together and share, learn, laugh, organize walking groups and socialize with one another without judgment. It has become a safe haven for many parents to ask questions, promote upcoming events and get helpful advice about all things parenting. Jenna Buntain, mom to Henry and Bridget, praises Simpson’s Facebook community because, as she said, “I often feel like I’m alone in things [that] I struggle with as a parent, and it’s nice to know that other parents are willing to give advice and help you through it.”

to include members of the Yukon community who work with infants and young children professionally, as well. “We have two lactation consultants, a doula, and sleep consultants who are members,” Simpson explained. “It’s been fantastic because we have professionals in the group who can offer up a variety of information to parents, on lots of topics.” Another member of the Yukon 2020/2021 Babies community is Jo, from Partners for Children. Jo is affectionately known by many in town for the wonderful work she does in running the Mother Goose groups for little ones and their caregivers. She first heard about the Facebook group at one of the classes she was running, and she offers nothing but flattery for the good it is doing for Yukoners. “I’m so grateful that it exists,” Jo said. “So often when people come to groups, what they really PHOTO: Mehak Khan Photography need is a village. It takes a village to raise a baby; that’s the phrase, and it’s so true. Andrea and Ben Simpson with We [parents] need our peers. Rowan, 4, and one-year-old Alder People who are at the same stage as us. People who get it. “And while groups end, the in the Yukon each year, having brilliant thing about Andrea’s over 500 members is just so cool,” Facebook group is that it doesn’t said Simpson with excitement. end. Even at 2 a.m., if you have And it has also been lucky enough a question, you can ask, and The group has grown immensely over the last two years. “When you think about the fact that around 400 babies are born

someone will likely be going through that same thing and can, at the very least, be there to reassure you. It really is a great local resource.” And that is exactly what Simpson hopes for the group’s future: to continue to be a source of information for parents and a place of true connection. She says that she understands that as the children of the members grow older, there will likely be less of a need for parents to logon with concerns, but she hopes the friendships that are forming amongst parents, now, will continue to last. Photo Fridays are also a highlight for Simpson and for many members of the group. Photo Friday is a weekly posting, on the newsfeed, where members all get a chance to share a photo of their little one. “I just love getting to see these babies grow up. They are all in a similar cohort, and it’s wonderful to see them all hitting important milestones, like first steps or the first day of daycare together. Some of these babies will graduate together. That is amazing to think about!” The Yukon 2020/2021 Babies group is one that means a great deal to so many Yukon families. It has become a source of belonging for parents during an intensely difficult time to have and raise a child. Andrea Simpson knows she has created something very special, and the members of her wonderful online community definitely agree. n

SEASONAL RECIPES

BEEF CHEEK HASH D

id you know there’s an awesome little butcher shop called Tum Tum’s Black Gilt Meats, at the beginning of the Hot Springs Road? They sell local meats and other locally made food products. That’s where you can find interesting cuts of meat like the beef cheek in this recipe. It seems like a bit of an undertaking to slowly cook a beef cheek for a simple hash like this, but it’s more like a set it and forget it scenario. And what you get at the end is a perfectly beefy, tender braised cheek. You can braise the cheek a couple of days before you want hash—making this recipe a great one to bring on a weekend getaway or camping trip. Serves 2 Ingredients ❑ 1 beef cheek ❑ Salt and pepper ❑ 1/4 tsp paprika ❑ 1/4 tsp onion powder ❑ 3 tbsp olive oil, divided ❑ 1 onion, chopped ❑ 1 bottle of beer ❑ 8–10 small potatoes, cut into cubes ❑ 2 eggs

Beef cheek

Instructions 1) Season the beef cheek with salt, pepper, onion powder and paprika. Heat 1 tablespoon of olive oil in a large skillet, over high heat, and sear on both sides until dark brown. Remove from the skillet and place in a slow cooker with beer and chopped onion. Set the slow cooker on medium and cook for 12 hours.

2) After 12 hours, remove the cheek and all of the liquid from the slow cooker. Let cool completely overnight.

3) Once the cheek has fully cooled, shred the cheeks with your fingers. Heat 1 tablespoon olive oil in a large skillet, over mediumhigh heat, and add cubed potatoes. Cook until potatoes begin to soften, then add shredded beef and 2/3 cup of reserved cooking liquid. Cook until liquid has evaporated, then season to taste with salt and pepper and keep it warm while you cook the eggs. 4) Heat remaining oil in a nonstick skillet, over mediumhigh heat, and cook the eggs until the whites are set and the yolks are runny. Divide the hash between 2 plates and top each one with an egg. n

ou know it’s morel season when photos of grimy, grinning mushroom hunters begin to show up on social media, and the Government of Yukon posts links on its Facebook page to fire maps and tips on safe and respectful harvesting. You’ll need a license for commercial harvesting, but if you’re picking for yourself and your household, all you need is a good nose, bear spray, some buckets and drying equipment, and knowledge of where not to pick: First Nations settlement land (unless you have permission) and on private property. Be safe out there, morel fans. I’m no pro, but a couple of years ago I had good luck in the transition areas at the edges of the burn. And that is my only tip— except, there’s quiche when you get home. CARAMELIZED ONION AND MOREL MUSHROOM QUICHE

Ingredients: • Crust (enough pastry for 2 quiches made in 9-inch pans) • 2 cups all-purpose flour • 1 tsp kosher salt • 1/2 cup cold unsalted butter, diced into small cubes • 1/2 cup cold vegetable shortening, such as Crisco, frozen briefly and diced into small cubes • 3 to 4 Tbsp very cold water • Filling (enough for one quiche) • 1 Tbsp olive oil • 2 Tbsp butter, divided • 1 medium onion, halved lengthwise and thinly sliced • 1 tsp salt • 2 Tbsp sherry, port or cooking sherry* • 1/2 oz (3/4 cup) dried morel mushrooms, rehydrated in 1 cup hot water • 1 clove garlic, minced • 1 tsp soya sauce • 3 large eggs • 2/3 cup 10% cream • 1/2 tsp black pepper • 1/2 cup grated cheddar cheese

AUSSIE GIRL IN THE YUKON

Aussie Girl columnist Kylie Campbell-Clarke is an Australian writer and photographer living in the Yukon. She adventures in the Yukon with her Canadian husband, two Yukon dogs Phil and Charlie and cat Howie.

SWIPE RIGHT: A NORTHERN LOVE STORY Is it possible to meet your match in a small town?

I

never thought I’d get married, and I certainly never thought I’d meet my husband in a town of 40,000 in northern Canada, but the fates of the universe had different ideas. I’ve traveled a lot over the years, I’ve visited 55 different countries and Canada is the 12th country I’ve lived in. I’ve always been alone and was pretty certain I was always going to be. From my article in What’s up Yukon, “Swipe Left, Swipe Right” (2017), on the difficulties of Tinder dating in the Yukon, I figured if Whitehorse was to be my home, then I was going to be single. The fresh Tinder “meat” would arrive in spring, and shortly afterwards you’d swipe out of your possible matches within days. If you did actually match with someone, it was often with an inappropriate solicitation of dick pics or requesting my “bits” pics. No thank you! Block. Ignore. Repeat. Then one day I was enjoying a glass of wine (or five) when this guy named Ryan popped up. Unable to see his face (as his primary photo was a cat on his face), his profile and pictures made me smile and outwardly giggle. Swipe Right and instantly match. Nothing shocking there. As females, we actually review Tinder profiles, debate in our heads before committing to a left or right response. Some men, on the other hand, seem to just swipe, swipe, swipe—the splattergun approach, where you throw some spaghetti at the wall and see what sticks. Instantly we start chatting, and either he’s hilariously funny or I’m a tad bit intoxicated—or it’s

PHOTO: Kylie Campbell-Clarke

Kylie and Ryan share a tender kiss under a Cuban sunset a mixture of both. We chat some more and eventually realize we live 250 metres away from each other in Riverdale! I figure I should meet this guy (to verify he’s not a weirdo) and invite him over. Directions: Go ’round the back of the house … there’s a door that leads to the basement down the stairs. Ryan eventually makes it to my apartment and said, “I really thought I was being catfished or I was going to be killed when you said to come to a basement in the dark.” We laughed that I was not, in fact, a killer of Tinder men, and I realized this guy was at least a legit human and that we should go on a date. The next day we decided to go for a mountain bike ride. He pulled up in his black truck and we noticed we had the exact same bike! If nothing tells you destiny like two cheap people owning the same green giant Fathom 2 mountain bike, then nothing will. I’ve always been one to go 100 percent into anything I try. As such, I was all in. Ryan and I

practically lived together once we met and he moved into my newly purchased condo. What I learnt very quickly is how annoying another person can be! Seriously, I had been alone my entire life, and even when I shared dormitory rooms I would always have my own private space. Now I would have to share everything! It was extremely overwhelming. Did you know that men don’t know what a laundry basket is? There were a lot of other overwhelming things happening … I had just bought a condo, started a new job … new everything. I had a mental breakdown! Throughout my life I’ve experienced anxiety and depression, but had just dealt with it. I’d run away and live somewhere else, be someone else. But this time was different. I didn’t want to be or feel this way. I wanted to keep Ryan in my life and knew that if I didn’t change or try to deal with this stuff, he would run away. One night I was extremely low … tears streaming down my face and the incomprehensible desire for death, soI woke Ryan up from

bed. “What’s wrong?” he asked. I erupted into tears and couldn’t speak. He hugged me and I never knew I wanted to be hugged so badly. He had no idea how to deal with me … I didn’t even know how to deal with me. I just needed to get through it. “I love you,” he said as he kissed my forehead. I picked up the phone and got into therapy. Therapy helped me start to address things that have happened and to process feelings. I was put on medication to help and it changed/saved my life. I continue to take them to this day and will possibly take them forever. One day I looked at Ryan and I knew I wanted to have him in my life as long as he would let me. He’d already told me that he knew he loved me, straight away, but didn’t want to scare me off by telling me. So I decided I was going to ask him to marry me. Did you know there are very few websites to help women propose to men—yet thousands for men to propose to women? It made it very challenging to figure out what I was supposed to do. Obviously, keeping it secret

was the first step. The second was asking for permission. I phoned Ryan’s mum and asked her over the phone if I could ask for Ryan’s hand in marriage. “Yes!” she cried. Now the ring. What do men want? Websites were telling me the masterful ways to figure out a woman’s ring size or the type of ring she wants, but nothing about men. Until I came across one that said, “Men don’t care, just get something cheap and buy something nicer later.” OK. So I did. The tricky part was living with someone and hiding the ring. It was no easy feat! The ring was to be delivered in the post, and everytime I received a package, Ryan would watch me open it. How would I get him not to watch me open this one? How could I not give away that it was a ring! Luckily, the company had sent a free charm necklace with the ring. I opened it stealthily and pulled it out and was like, This is what I bought, as I took the package and hid the ring box. Phew! The next step … When and where? When Ryan and I started dating, I told him that I was a traveler and always will be. My dream was to visit every country in the world. He had been to the US but had never really traveled, so I wanted to make sure he was on-board with this change. He jumped in with two feet and we booked our first trip to Cuba. What a perfect place to pop the question! Cienfuegos, Cuba, on January 10, 2020 (Ryan’s birthday). We had just arrived at our fancy hotel after a hot, sticky shared taxi ride from Viñales. When we arrived at the hotel, the owner started to talk with Ryan. “Oh no!” I interrupted and told Ryan to check in, have a shower and I would talk with the owner. cont’d on page 11 ...

The pair are all smiles during their trip south to the world-famous Calgary Stampede in Calgary, Alberta “I’m the one proposing!” I exclaimed to the owner. “Oh, okay, okay,” he said, confused that a woman was doing the proposing. “So, we have your special wine here,” he said. We went over the plan and I headed to our room. The bed was covered in red rose petals in the shape of two hearts, and there was a bouquet of red roses. Our room was stunning. I was really nervous because today was the day I would ask him. Ryan came down the stairs from his shower and I got my fancy red dress, quickly showered and got changed and came down the stairs. “Hey, Ryan, can I read you something?” I asked. He nodded as I pulled out my phone. I took a breath … ready to read what I had written down …

original wedding was for August 2020. It got pushed to May 2021, and then finally we married each other on August 28, 2021. I sometimes can’t believe everything that’s happened. Life has thrown some curveballs our way and it hasn’t been easy. But I think to myself, Of all the things that had to happen in my life, and all the things in Ryan’s, so that we would meet at that moment in time, when we did, was pretty incredible. The day before, I may have swiped left instead of right. Of all the places in all the world, I met the love of my life in a northern Canadian city of 40,000 people. n

partner in crime … my partner in life. I can’t imagine my life without you. I want to celebrate that love with you and with our friends and family. So I want to ask you ... Will you marry me? I pulled out the ring as I got down on one knee. Ryan was crying and nodded yes as I put the ring on his finger. We kissed and I got the champagne and we toasted to our lives together. Covid happens, and life goes pretty topsy turvy. All of our trips were canceled. Instead, I sold my condo, we bought a house and we got two dogs and a cat. Our

THE BUBBLE LIFE

column with

Angela Szymczuk

Angela Szymczuk is a Whitehorse-based writer and espresso-infused, newsconsuming “machine” who loves the gym, boxing and spin classes, while still finding time to enjoy a Macanudo cigar, a glass of Glenfiddich 18-year-old scotch, and to ponder how she might teach her cat to scuba dive.

EXPLORING BEVIES THAT SPARKLE There is an old saying that says, “I may not speak Italian, but I am fluent in prosecco,” and what a lovely language it is to be fluent in

B

ut where did this lovely fruity drink originate from? Let’s start with the name. Prosecco is named after the prosecco grape (later renamed the glera grape), which is grown in the Veneto region of Northern Italy. We first began to hear of it in 1593. An Englishman named Fynes Moryson was traveling through Northern Italy when he came across the bubbly drink. He began to write about it in his travel diary, spelling it as prosecho. Then, in 1754, an Italian author named Aureliano Acanti wrote about it in one of his books, using the spelling prosecco. For the next 300 years, prosecco was popular within Italy. However, it wasn’t until the year 2000 that prosecco began to gain mainstream popularity in other parts of Europe and North America. Some of you may be wondering, What is the difference between prosecco and Champagne? First is the origin. The grapes used in Champagne are grown in

sealed airtight to prevent carbon from escaping. After the process is done, it is bottled. It is also this process that causes prosecco bubbles to be larger and looser than Champagne bubbles. As for similarities between the two, both can be made in a white colour or in a pink rose colour. When uncorked, both bottles will make the famous loud “Pop!” Now that some of the basic facts are covered, it’s time to taste and review a prosecco. The one I decided to enjoy is called Scavi and Ray, Spumante Dry (spumante means sparkling). The first thing to be noticed is the glittery bottle. Coming in several different colours of gold, red, blue, silver and pink, it definitely catches the eye and looks extra celebratory. Once the cork is popped and the bubbles poured, it’s time to begin the flavour journey . The first thing I noticed is that this prosecco is very light, with some nice fruit notes of pear and green apple—very clean on the pallet. It’s not overly sweet, and the flavour is nicely balanced. The colour is like a verylight white wine and has PHOTO: Angela Szymczuk a pleasing scent. It is very easy to drink (you could A prosecco that tastes as easily drink four glasses without lovely as the bottle looks even realizing that you did). Overall, I would say the Scavi of the bottle. When finished, the and Ray prosecco is great to be bottle’s neck is frozen, causing the enjoyed for any occasion, from dead yeast cells to be released—a brunch to swanky parties. Any sparkling beverage produced outside of this region cannot be called Champagne. Second is the taste. Prosecco tends, to me, to be more on the sweeter, fruitier side of things. Whereas Champagne has a more dry-fruit taste. Third, the production is a bit different. For the second fermentation process, Champagne is bottled, then flipped upside down on racks. The Best Things in Life are… Rescued!

Meet Rango!

He is a 2-year-old, male, Akita mix and is available for adoption from foster. Here is what his foster family has to say about him: Rango has a wonderful disposition, he is intelligent and calm (most of the time). Rango knows the basics like sit, stay, lay down, and is working quickly to master even more tricks. He loves to play, especially with his favourite stuffed wooly mammoth toy. He loves to be around people, his new family should be aware that he will need time and patience to work on his separation anxiety, but with consistency and kindness he will make a wonderful addition to a lucky family This adventurous pup will be a very loyal companion; however, he is also quite a bit of an escape artist and will need a very secure yard or pen. He is medium in size and has a beautiful thick coat. He is very sweet and loving! He would do best in an active home, and he would make a wonderful adventure companion! He would do well with older children, and with proper introduction to another dog, we do not know how he is with cats. If you are interested in adopting Rango please fill out an online application at humanesocietyyukon.ca.. If you already have a pre-approved application with us within the last year, call 633-6019 to put your application towards her.

Shelter Hours: Tuesdays - Fridays 12pm-6pm Saturdays - 10am-6pm 126 Tlingit St, Whitehorse, YT Y1A 6J2 | Tel: 867 633 6019 humanesocietyyukon.ca

DISPATCHES

Sophie is in her 30s and French. She studied and worked in the UK and Senegal, before moving to Canada. The time she spent in the Yukon changed her life for the best. She developed a true interest for quiet, wild spaces and a more-rural life. She is now back in France, starting a goat farm in the countryside and sharing stories from Europe!

‘LITTLE LIVING THINGS’ IN OUR FOOD Communities around the world have been preserving food and beverages since the Neolithic Age, in order to extend their shelf life.

I

n the Yukon, First Nations traditional foods include, for instance, dried meat and fish, or meat preserved with animal fat. On the coast, for Indigenous communities such as the Nuxalk, fermentation processes are widely used for preserving salmon heads, beaver tails and seal flippers. So, what is fermented food? Fermenting is the process of transforming a food, usually in the absence of oxygen (thanks to the action of micro-organisms, such as bacteria and yeasts, which produce energy). Several types of fermentation exist. The most-popular ones are ethanol fermentation (for

beer, wine and bread) acetic fermentation (for vinegar), and lactic acid fermentation (for all fermented dairy and veggie products). ETHANOL FERMENTATION— WINEMAKING AT HOME Ethanol fermentation happens when sugar is changed into alcohol in a liquid without any air, at room temperatures of up to 30℃ or 86℉. We can find microorganisms everywhere in nature. Fruit is covered with bacteria and yeasts (the thin white layer on the skin of grapes, for instance). Traditionally, wine is made by crushing grapes, using hands or feet, to get the must (unfermented juice) containing the skins, seeds and stems. The natural yeasts then spread into the juice and start the fermentation process in a closed container or wooden barrel. Thanks to the yeasts, the sugar contained in the fruit will be transformed into gas and alcohol. Once the fermentation is done, the must is removed and the juice is filtered and can be drank as is, or it can go back into the barrel for the wine to mature, in order to get a more-pronounced flavour.

The mother can then be split into different jars to make several vinegars. The scoby can be kept in a pot (jam-jar type), with a gauze and a lid on top (not sealed), so the mother can continue breathing. Add wine to cover.

This method can be used with any fruit that you have in your garden or that you have harvested in the forest, as long as no chemicals have been sprayed on them! Currants, haskaps, Saskatoon berries or sea buckthorns can be used and mixed together according to your taste.

Good bacteria are all around us on fruit, flowers and fruit flies! They help make the best vinegar

VINEGAR OR ACETIC FERMENTATION Vinegar (literally, sour wine) is made with alcohol. This fermentation occurs after the ethanol fermentation and it needs oxygen. The ethanol is transformed into acetic acid, thanks to the acetic bacteria available in the environment (as on fruit flies) and in the presence of air. A vinegar “mother” (scoby) will form at the top of the liquid after a few weeks or months. HOMEMADE VINEGAR Ingredients: Natural wine (fruit only— nothing added to the fruit or in the process), around 7–10°C for alcohol. If your wine is too concentrated in alcohol, let the open bottle rest for a few days. The alcohol will partially evaporate. Natural vinegar (not pasteurized or filtered), where you can see some “layers” at the bottom of the bottle (the mother).

Good bacteria help make the best vinegar Method: The mother … Pour 1 cup of wine into a large pot (or into a jug with a large opening). Add 1 cup of vinegar. Cover with a clean linen or a paper towel (so the bacteria can breathe), but avoid anything else coming into the liquid. Let it rest at room temperature and wait 2–3 months for the mother to begin growing (the colder the room is, the more time will be needed).

The vinegar … Put a piece of the mother into a large glass jar. Add wine. Cover with gauze or linen, so the lid is not sealed and put a plate on top. Do not leave in the sunlight, but keep in a dry, dark place such as a cupboard. Wait for a month or so, then taste it. The mother is usually at the top of the jar, with dead bacteria, and the vinegar does not taste like wine anymore. Those characteristics mean the vinegar is ready and the mother needs to be fed again. You can extract the vinegar into a clean bottle and add more wine to the jar, with the mother, to start the process again. Vinegar is delicious as is, but it can also be flavoured, according to your taste and to the season, with seasonal fruits, plants, flowers. Let the flavours develop in the vinegar for two weeks before consuming.

THE WIDELY KNOWN LACTIC BACTERIA Following the same principles as for winemaking, vegetables have a layer of microscopic fungus and bacteria on their skins. If cut and placed outside for a long time, they would decompose. However, with salt but no air, lactic fermentation will occur, eating the sugar from the food and transforming it into lactic acid. This acidity prevents any risk of spoilage. This fermentation is used for a wide variety of foods: sourdough, yogurt, cheese, salami, and fruits and vegetables such as sauerkraut, kimchi, pickles, lemons, olives, garlic, beetroot, carrots, etc. More fermentation recipes to come in the next columns! n

MINE UPDATE Wildlife Protection at the Eagle Gold Mine. At Victoria Gold’s Eagle Gold Mine, wildlife protection is an important element of the Company’s corporate culture and the entire team’s commitment to environmental responsibility. “Victoria Gold is committed to the success of the Eagle Gold Mine and to ensuring that its operation and closure have positive effects in the Yukon as we work to minimize our environmental impact,” says Victoria Gold President & CEO John McConnell. Personnel at site are educated about the area’s wildlife monitoring and mitigation measures and how to adhere to them through initiatives including mandatory site orientations, traffic control policies and the implementation of management plans such as bear awareness and a wildlife observation reporting program. The site’s wildlife observation reporting program entails personnel recording wildlife sightings and encounters on wildlife observation cards: a tool used to track and evaluate the frequency of animal encounters. These observation recordings help to monitor species at risk and notify site personnel of potentially dangerous animals around work areas. Observations are compiled on a quarterly basis and submitted to Yukon Energy, Mines and Resources in accordance with the mine’s permitting requirements. Routine observations include an assortment of large and small animal species including moose, bears, lynx, marten, porcupine and a variety of birds.

Wildlife observations from the Eagle Gold Mine site.

The Eagle Gold Mine’s Environmental Department provides ongoing wildlife and reporting education for site personnel through site-wide bulletins, collaboration with mine department leads and presentations in meetings. In addition, the department coordinates and participates in a number of wildlife surveys including late winter moose surveys.

The Eagle Gold Mine is situated within Victoria Gold’s 100 per cent-owned Dublin Gulch Property located approximately 375 kilometres north of Whitehorse and 85 kilometres north, northeast of the Village of Mayo, within the traditional territory of the First Nation of Na-Cho Nyak Dun (FNNND). The company employs over 500 workers and contractors; half of which are Yukoners At Work and many are FNNND citizens. If you are a Yukoner with mining experience, Victoria Gold encourages you to become a Yukoner At Work. Visit the “Work For Us” page at vgcx.com/contact/work-for-us/ and send your resume to greatpeoplework@vgcx.com.
