Welcome to the winter issue of Pool & Spa Enhancing Outdoor Living and winter it really is. The mercury dropped low and quickly across many parts of Australia and New Zealand this year. As we bade farewell to a third La Niña summer, autumn took hold and behaved a little out of character, delivering one of the coldest Mays on record. Regular frosts, snowfall and lower than average temperatures have been the feature of this winter already, and we’ve still got a fair way to go.

You know who doesn’t care about the cold? Spa owners. While some of us begrudgingly hang up our towels and admit defeat against the dropping temperatures — wondering why we didn’t bite the bullet and install pool heating — those lucky spa owners are busy soaking and relaxing and enjoying a change of pace. Well, we’ve got plenty of interesting info in this issue to help keep those readers happy — with articles on the essentials of spa chemistry, and we take a look at some impressive add-ons to take in-ground spa installations to the next level.

If your garden is looking a little sad and not responding well to winter and frosts, we’ve got all the advice you need to keep plants happy till the weather warms up again. Speaking of warming up, check out our recipes for hot drinks that are guaranteed to take the chill off and help you beat the winter blues in no time.

Q: Is winter a good time to install a pool?

A:In a word, yes. Not surprisingly, most people think about swimming as the weather starts to warm up. Springtime can be pretty busy for pool designers and builders — summer even more so.

Depending on where you are located, the cooler weather often signals a slowdown for many of the outdoor trades that you are likely to need including builders, tilers, landscapers and fencers. If they aren’t using that time for a well-deserved break, there’s every chance they’ll have greater availability than at other times of the year, making coordinating trades much easier. Opting to build a pool in the cooler months should give you a reasonable amount of flexibility when it comes to the installation schedule and probably also allow extra time if needed for unforeseen issues like weather-related delays or supply issues. Your builder and other contractors won’t be as pushed for time, trying to juggle multiple projects at once in the mad rush towards Christmas.

Getting the work done in winter means you’ll also be ready to dive right in when the weather starts to warm, giving you a nice long swim season ahead. That extra bit of time also allows planting and landscaping the chance to grow in, so your outdoor area looks perfect come summer.

Creating a lowmaintenance pool

Low maintenance is a term that is rarely associated with pool ownership. In years gone by, the work required to keep a pool in tiptop condition and looking the right colour whilst being safe to swim in was enough to turn some people off the idea of pool ownership. Your pool probably gets all the attention when it comes to backyard entertaining, but it’s hard to ignore the beauty of a well-designed outdoor kitchen and the sheer convenience it offers. Opting for a second cooking space means there’s no need to trek back and forth to the house for knives and forks, salt and pepper, extra plates or a cold drink. It not only keeps the crowds — and the mess — out of the house but will also give you more time to enjoy with family and friends.

If you’ve been yearning for a barbecue upgrade and don’t know where to begin, here’s some ideas to get the creative juices flowing.

HIT THE RIGHT SPOT

In any building project, location is the first consideration. If you’re retrofitting you’ll probably have limited options, but it’s best to aim as close to your existing kitchen as you can get. That advice may seem counterintuitive — why put both cooking spaces within a stone’s throw of each other? It makes sense economically, closer proximity means you can more easily connect to existing services — a less expensive alternative than running additional plumbing, power and gas lines.

You will probably want the area to be under cover, so it’s protected from the elements. But you’ll also need to factor in ventilation and how close you are to other living areas — is there a likelihood of nuisance smoke from the barbecue or kitchen impacting other parts of the house?

WHO, WHAT AND HOW OFTEN?

Think about who will be using the space, for what and how often. Are you planning on only cooking the occasional mid-week family meal or are you more likely to host regular lunches for 20 with a pig on a spit and all the trimmings? Thinking about casual pizza nights with the neighbours or doubling down to learn the ins-and-outs of Texas BBQ and smoking meats and fish every weekend?

Outdoor kitchens can run from simple to sophisticated — how you want to use the space will help determine the equipment you need and, ultimately, guide the budget as well.

LAND ON A LAYOUT

Once you have decided how you want to use the space, you can start to formulate designs and the equipment you’ll need. Kitchen spaces fall in to four key zones: storage, preparation, cooking and serving. Within those zones, there are additional sub-areas and specific equipment placement considerations.

STORAGE

Storage includes cupboards, cabinets and cold areas — the all-important fridge. Give yourself enough room to store all the essentials: crockery and cutlery, tablecloths, napkins, pantry items like salt and pepper, sauces, oils and marinades, as well as cooking and preparation tools, cleaning supplies and other items like a first aid kit.

PREPARATION

Clear benchtops for food prep are a must. You’ll be dealing with meat, seafood and vegetables — chopping,

slicing, dicing, marinating meats, assembling kebabs, shelling prawns and slathering pizza dough with sauces and toppings — so you’ll want plenty of room to work comfortably.

To keep things clean, you’ll need a sink (with hot and cold running water) that’s also big enough to take larger items like grills from the barbecue for easy washing. Don’t forget space for a bin that won’t be in your way or under your feet.

COOKING

Your cooking zone incorporates all the equipment you’ll need to feed your family and guests — whether that is a barbecue, smoker, stovetop, pizza oven or all of the above. You’ll obviously need to know the exact dimensions of all cooking equipment and appliances to plan the design properly.

In addition, the cooking zone needs to be heatproof and well ventilated, and it must have access to required services including power, water and gas.

There are many modular outdoor kitchen options available that incorporate benchtops, storage, cooking, fridge and sink into a single linear design, taking out the guesswork and simplifying the design process.

SERVING

Make sure there’s enough room for a good-sized table and comfortable chairs in a pleasant setting, so everyone can relax and enjoy their meal, out of the sun (or rain) and away from any barbecue smoke.

THE FINER DETAILS

As with any kitchen, you’ll need durable, non-slip flooring. Being outdoors, it will also need to withstand a bit of weather and be suitable for high traffic. Pavers, concrete and bricks are all outstanding exterior options.

Never underestimate the importance of lighting — in an outdoor environment or anywhere else. Poorly lit spaces make hard

work of everything, so take the time to plan lighting and consult an electrician for advice on the type of outdoor fittings you should look for and where to place them.

If you really want to get your money’s worth, think about installing heating or cooling options that would make the space a viable entertaining area year-round. Including extras like comfy seating and a big screen TV will have you watching the footy grand final with your mates over ice cold beers and home-made pizzas before you know it.

A well-designed outdoor kitchen can be the jewel in the crown of your entertainment area — providing extra living space and easily adding value to your home. It can also be as simple or extravagant as your tastes — and budget — allow. AVOIDING FROST DAMAGE

Even in those areas where frosts are prevalent, subzero conditions are probably restricted to a relatively low number of nights across a few months, rather than constant frosts for half the year. This means you should be able to manage by keeping an eye on the weather and taking some simple steps to prevent the likelihood of damage.

Mulching will protect your plants from the cold. Where possible, cover the entire plant with mulch like compost or bark when frosts are forecast and remove

only recommended for hardy plants that can withstand it, and obviously not for small or fragile seedlings.

For larger plants, applying a layer of mulch at the base helps by acting as an insulator, creating a barrier between the cold air and the soil, helping maintain a more constant temperature and avoiding the stress of continual freezing and thawing.

COVER

Some plants can benefit from full cover when the temperature drops. Woven fabric — rather than plastic or paper — draped loosely over plants and dropped to the ground can provide a dome of protection. Just be sure the plants are strong enough to withstand the weight or use a stake to keep the fabric hoisted.

If you are growing plants in containers, use hessian to wrap the pot and form a protective barrier that will help keep the soil and roots from freezing. Wrapping loosely ensures there is still enough air circulating around the plant, while still defending it against the cold.

WATER

Moist soil holds more heat than dry soil, so the best thing you can do is water your plants when cold weather is forecast. Check before you water of course, to make sure it’s needed. Soil that is already damp won’t need any additional help, but dry soil will. Water in the morning, allowing the moisture to soak into the soil and reach the roots before nightfall.

SHELTER

If you are a keen kitchen gardener who likes to cook with fresh produce and herbs year-round, a small greenhouse might be the answer. There are so many options available to suit every space, taste and budget, which means you can beat the cold and keep plants safe from pests as well.

If your budget — or interest — doesn’t stretch to a full greenhouse, covering small or young plants with plastic containers is a short-term alternative in winter. Just be sure to keep an eye on them, as high sun exposure may create too much heat, even in cooler temperatures.

Another option is to simply move plants indoors when frost is likely — this could be into a garden shed or into the house, depending on the fragility of the plant and how long you expect the cool weather to last. Some plants that thrive outdoors in warmer weather will do well indoors during winter, provided they have appropriate light and are positioned away from drafts or heating.

Today’s pool cleaners are designed to offer trouble-free cleaning and maintenance of your pool. With continuing advances in technology, cleaners have become pretty smart in the last decade or so. While they still easily suck up any loose debris from the pool floor, they can now also scrub walls, floors and the waterline, manoeuvring through the pool using smart navigation. Many options

also feature remote control access via a smartphone app. On occasion, your suction cleaner may not perform as expected — but the solution will often be an easy one. Here are some simple troubleshooting tips to help get things rolling — and cleaning — again.

The filter is too small. Replace.

The skimmer basket or pump basket is full of leaves. Empty and clean.

DRINKS WITH A DASH

From the classic hot toddy to a lip-smacking mulled cider, these drinks will send the winter blues packing with a little kick.

MULLED WINE

No Christmas in July celebrations are complete without a little mulled wine. A favourite at European Christmas markets — at any time of day — the heady scent of spices makes this drink an instant warmer.

Ingredients

1 bottle red wine — Merlot or Grenache are ideal choices as they are not bold enough to overpower, but still have enough weight to carry the spice flavours.

¼ cup brandy

2 oranges — 1 sliced into rounds

1–2 tablespoons honey

2 whole cinnamon sticks

3 whole star anise

4 whole cloves

Additional cinnamon sticks and orange slices to garnish

MULLED CIDER

This recipe couldn’t be simpler. A fruiter alternative to mulled wine, the addition of allspice adds a layer of complexity to the flavour.

You can make this drink using alcoholic or nonalcoholic cider. For the boozy option, use an unfiltered, noncarbonated scrumpystyle cider. For the no-alcohol version, grab the best cloudy, non-fizzy apple cider you can find.

Method

1. Place the orange rounds in the bottom of a heavybased pot — a Dutch oven is perfect. Squeeze the juice from the remaining orange and add to the pot.

2. Add the wine, followed by the brandy, along with one tablespoon of honey. Add the cinnamon sticks, star anise and cloves.

3. Warm over a medium heat until you see steam. Reduce to low when bubbles appear.

4. Taste — be careful, it will be hot — and add more honey if needed. Keep on a low heat for 5–10 minutes, tasting regularly, as it will become spicier the longer it stays on the heat.

5. Serve warm in heatproof mugs or glasses with garnishes if desired.

Ingredients

2 litres apple cider

2 cinnamon sticks (plus more to garnish)

2 whole cloves

2 whole allspice berries (also sold as whole allspice pimento)

1 orange, sliced

Method

1. Place all ingredients into a heavy-based pot — again, a Dutch oven is perfect. Bring to a simmer.

2. Serve hot in heatproof mugs or glasses. Garnish with cinnamon sticks if desired.

1½ nips (45 mL) whiskey

180 mL water

2 teaspoons honey

2 teaspoons lemon juice

1 lemon round for garnish

Optional cinnamon stick for garnish

Method

1. Heat water in a saucepan, bring to a simmer.

2. Pour into a heatproof mug, add whiskey, honey and lemon juice and stir till honey dissolves. Taste and add more honey or lemon if desired.

3. Garnish with lemon round and optional cinnamon stick and serve.

HOT TODDY

The classic hot toddy is a favourite for anyone with a sniffle and a desire to call it a night. While the lemon and honey can help soothe a sore throat or blocked nose, the whiskey is the ingredient most likely to ensure a good night’s sleep. Serves 1.

HOT BUTTERED RUM

Butter, sugar, spices and a dash of dark rum… what’s not to love with this warming drink? The perfect nightcap on a chilly evening, hot buttered rum uses ground — as opposed to whole — spices, meaning you’ve probably got everything you need in the pantry. Serves 2.

Ingredients

100 mL dark rum

200 mL boiling water

1 tablespoon light brown sugar

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

2 tablespoons unsalted butter, melted 2 cinnamon sticks, to serve

Method

1. Put water on to boil.

2. Combine sugar, cinnamon and nutmeg in a bowl.

3. Slowly add rum and melted butter, stirring.

4. Divide the mixture into heatproof glasses and top each with 100 mL boiling water.

5. Serve with cinnamon stick garnish if desired.

HOT CHOCOLATE

A perennial favourite, hot chocolate is a perfectly fine drink in its own right, but it also partners well with a range of different flavours that help make that chocolate sing!

There are two schools of thought when it comes to hot chocolate — with some recipes calling for cocoa powder and others preferring solid chocolate… this one takes the best from both worlds.

Dutch process cocoa powder refers to the way the powder is processed, with the resulting product being quite dark, mellow and smooth when compared with natural process cocoa powder. Serves 2.

Ingredients

100 g dark chocolate chips

1 teaspoon Dutch process cocoa powder

300 mL milk

Sugar or sweetener to taste (optional)

Cocoa powder or ground cinnamon to serve (optional)

PEANUT BUTTER HOT CHOCOLATE

How do you make hot chocolate better?

Add peanut butter for a match made in heaven. Serves 4.

CHOCOLATE AND CHAI

Who can say ‘no’ to hot chocolate on a cold and rainy day? From the classic old-fashioned favourite to some mouth-watering flavourful alternatives, there’s a reason we all keep coming back to the drink from our childhood. If chocolate and cocoa aren’t your thing, what about a delicious chai latte — a spicy, milky alternative to coffee that will definitely warm you up.

Method

1. Place chocolate chips, cocoa and 60 mL of milk in a saucepan over medium heat.

2. Stir with a wooden spoon while chocolate melts.

3. Add the remainder of the milk and whisk until foamy and hot — don’t let the milk boil.

4. Taste and add sweetener if desired.

5. Divide into two heatproof mugs or glasses and dust with cocoa powder or ground cinnamon if desired. Optional Hot chocolate can be dressed up with a dash of brandy or rum, or any number of schnapps flavours including peppermint, butterscotch, banana or cinnamon.

Ingredients

2 cups full fat milk

6 tablespoons dark chocolate chips

¼ cup smooth peanut butter

4 tablespoons sugar

2 tablespoons Dutch process cocoa powder

1 teaspoon vanilla extract

Pinch sea salt (optional — use only if there is no salt in your peanut butter)

Method

1. Add milk chocolate, peanut butter and sugar in a small saucepan over medium heat.

2. Whisk constantly until chocolate melts.

3. Add cocoa powder, vanilla and salt (if using). Whisk until combined, then remove from heat.

4. Divide into heatproof mugs or glasses and serve immediately.

150 mL milk

50 mL thickened cream

½ teaspoon brown sugar

½ orange, zested pinch of ground ginger

pinch of ground cinnamon

1 whole clove

2 drops of vanilla extract

50 g dark chocolate chips

Whipped cream to serve (optional)

Method

1. Add milk, cream, sugar, orange zest and spices together in a saucepan. Bring to a simmer over a low heat.

2. Remove from the heat and pour through a sieve into a jug, discarding the clove and orange zest.

3. Pour the warm infused milk back into the pan and stir in the vanilla and chocolate until the chocolate has melted and is smooth. Return to a low heat if needed.

4. Serve in a heatproof mug or glass topped with whipped cream if desired

GINGERBREAD HOT CHOCOLATE

All the tasty spices of gingerbread in liquid form and with just enough chocolate to satisfy a sweet tooth. You won’t want to share this decadent treat. Serves 1.

CHAI LATTE

Last but not least, the humble chai latte is among the world’s most delicious drinks. There’s a few ingredients and a little bit of fiddling to get started, but your first homemade chai latte won’t be your last — guaranteed. Serves 4.

Method

1. Toast cinnamon sticks, cardamom pods, cloves, peppercorns and star anise in a dry frying pan until they are fragrant.

2. Add the spice, along with the ginger and tea bags, to a teapot filled with half a litre of freshly boiled water. Leave to infuse for 10 minutes.

3. Add milk and brown sugar to a saucepan over a medium low heat until the sugar has dissolved. Be careful not to let the milk boil. Once it is lightly steaming, whisk to create foam.

Ingredients

2 cinnamon sticks

8 cardamom pods

4 whole cloves

6 peppercorns

1 whole star anise

2 cm piece ginger, thinly sliced

3 teabags unflavoured black tea

— English or Irish Breakfast or Ceylon are good options

500 mL freshly boiled water

500 mL whole milk

1–2 tablespoons brown sugar pinch cinnamon to serve

4. Strain the tea between four heatproof mugs or glasses, then pour in the milk (hold the froth back). Stir to combine, top with milk foam and dust with a pinch of cinnamon.

our spa or hot tub will probably get quite the workout over winter. Here are some tips to make sure everything functions as it should and that water stays clean and healthy.

WATER TREATMENT

Spas and standard swimming pools are not the same because hot water requires a different water treatment approach to prevent viruses, bacteria and algae from thriving. Correctly using chemicals will help maintain healthy conditions, and you’ll need to keep an eye on a few key measures: total alkalinity, pH and sanitiser levels. Your spa sanitiser will be either chlorine or bromine.

Buy a test kit from your spa retailer or local pool shop and test the water daily.

CHANGING THE WATER

Change your spa every three to four months. Alternatively, remove and replace around 1/3 of the total volume of water every three to four weeks.

TOTAL ALKALINITY

The total alkalinity should ideally be in the range of 90–110 ppm (parts per million). A low total alkalinity will require constant pH adjustment. To raise total alkalinity, add sodium bicarbonate in small quantities. To lower it, add hydrochloric acid in small quantities. Wait one hour and retest.

PH LEVEL

pH is the measure of the acid/alkaline level of the water. It is important to maintain the correct pH level as it directly impacts the effectiveness of other chemicals. pH is measured on a scale of 0 to 14, where seven is neutral, below seven is acidic and above seven is alkaline.

Incorrect pH levels can lessen chlorine or bromine efficiency, cause eye and skin irritation, corrode metal fittings, cause cloudy water and encourage scale formation. pH should always be above 7.0 (measured at room temperature, not hot) to avoid possible equipment corrosion. It shouldn’t be higher than 7.8, as this reduces sanitiser efficiency.

To increase pH, add soda ash and to decrease,

SANITISING

Sanitising is essential to safe, healthy water that is free of harmful microorganisms. The most common forms of sanitiser are chlorine and bromine, though ozone may also be used in combination. Saltwater chlorinators must be of sufficient capacity to maintain the recommended chlorine residual (the prescribed ppm).

The amount of sanitiser required depends on multiple factors: water temperature, frequency of use and the number of people using the spa. It is important to always keep the sanitiser level in the target zone. It can be used up very quickly in hot water, so levels need to be checked regularly.

After heavy use (or on a weekly basis), shock dose the water with chlorine or bromine. Check the levels again before use.

RECOMMENDED LEVELS

Total alkalinity: 90–100 ppm pH: 7.4–7.6 Chlorine: 2–3 ppm Bromine: 3–4 ppm

If your spa is not being used, add sanitiser every day to prevent contamination. If correct pH and sanitiser levels are maintained, microorganisms such as viruses and bacteria should not survive in the water, even when it isn’t being used.

For general hygiene, it’s also important to clean the filter regularly and to empty hair and lint from the pump as often as required.

PREPARING YOUR POOL FOR WINTER

KEEP YOUR POOL IN TIPTOP CONDITION WITH THESE EASY WINTER CARE STEPS.

It’s that time of year again, when the days grow shorter and the temperature starts to dip. For some homeowners, now is the time to think about winterising your pool, before the chill sets in. A few simple steps now will ensure your pool water stays healthy over the cooler months, minimising the work needed to get everything in order come springtime. While some of these steps may seem obvious, it’s good to keep a checklist on hand to make sure everything has been covered.

Clean the pool — thoroughly brush or scrub the walls and floor and vacuum the entire pool.

Test the water and rebalance the chemicals — either test it yourself or take a sample to your local pool shop for testing. If you’re unsure about balancing the water chemistry, call a SPASA-accredited technician.

Total alkalinity should be 80–120 ppm. To increase total alkalinity, add sodium bicarbonate. Lowering total alkalinity will be addressed when pH levels are rebalanced.

Clean the filter — thoroughly backwash and clean the filter to get rid of any build-up of contaminants. A good clean and degreaser product should do the job. Check and change the filter media while you’re at it and make sure the skimmer basket and lint pot are debris-free.

The pH should between 7.2 and 7.6 for concrete pools and between 7.0 and 7.2 for fibreglass. To increase pH levels, add sodium carbonate (soda ash). To decrease, add pool acid (muriatic acid, a diluted form of hydrochloric acid). Be sure to mix it in a full bucket of water first and do not add more than 500 mL at a time.

Shock dose the pool — remove the cover and mix granular or liquid chlorine (in quantities as directed by your local SPASA member) with a bucket of water and add it to the pool. Leave the cover off till chlorine levels return to normal.

Check and adjust timers where necessary to cater for decreased demand.

Add algaecide — mix the recommended quantity of long-life algaecide designed for winter with a bucket of water and add it to the pool.

Recheck chlorine levels and put the cover back on. Check the chlorine level every two weeks and keep an eye on the skimmer basket.

Occasionally check the water level and the filter pressure gauge.

These simple steps should keep your pool healthy over winter. If you’re uncertain about any of these steps, contact your local pool store or a SPASA-certified pool technician, who can also give your pool a ‘health check’ in spring, ensuring everything is ready to go when you are.
