Horseradish: The Root with a Reputation Irene Flannery It is neither horse nor radish, but horseradish has carried its splendidly odd name since the sixteenth century. One story has it that the German Meerrettich, or “sea radish”, was heard as “mare radish” and somehow acquired a horse along the way. Another explanation is simpler: horse once meant large, coarse or strong, which would certainly fit. I rather like the idea that this unassuming, knobbly root has collected a few stories about itself. It collected remedies, too. Across the centuries it has been used for coughs, aches, digestion and all sorts of complaints that sent people looking to the garden before they could look to a pharmacy. It even developed a reputation as an aphrodisiac. Exactly how a root capable of bringing tears to your eyes became associated with romance is anyone’s guess, though maybe a little excitement around the dinner table was part of the appeal. Horseradish eventually made its way from the medicine cabinet to the table, where its talent for waking up a plate was easier to appreciate. There is still more to it than roast beef and oysters. Horseradish belongs to the cruciferous family of vegetables, along with broccoli, Brussels sprouts, cabbage, mustard, cauliflower and kale. Think of mustard seeds: fairly quiet until you crush them, when their heat suddenly comes to life. Horseradish pulls off a similar trick. The intact root keeps its glucosinolates apart from an enzyme that can break them down. Grating brings the two together, producing new compounds called isothiocyanates. These are largely responsible for that unmistakable heat that travels straight up your nose and makes your eyes water. Researchers are studying how isothiocyanates behave in the body, particularly their possible effects on inflammation, bacteria and the processes involved in cancer development. Much of this work is still at the laboratory stage, but it is a fascinating example of science taking a closer look at a plant that people have valued for centuries. Meanwhile, anyone who has grated a fresh root knows that its chemistry is anything but quiet. A little horseradish goes a long way; a few gratings are enough to make their presence felt. Its place at the table also reaches into tradition. The Passover meal includes maror, bitter herbs eaten as a reminder of the bitterness of slavery in Egypt. Horseradish is one of the foods used for maror, particularly in communities where fresh bitter greens were difficult to find. What a powerful use of flavour: the sharpness is meant to be felt, rather than subtly hidden under a sauce. It makes our little dab beside the Sunday roast seem rather timid. Horseradish was also valued as a digestive aid, and it has long had a place beside rich meats. Its sharpness cuts through the fat of roast beef, which may explain why the pairing has endured for so long. But there is no reason to leave it waiting for Sunday dinner. A little grated into mashed potato gives it a lovely lift; mixed with crème fraîche, it is excellent with smoked fish. It is especially good with beetroot, too, where the sweetness of the vegetable meets the heat of the root and the two get on together beautifully. The old uses of horseradish went well beyond the dinner table. Fresh root was grated with honey or vinegar for coughs and congestion, prepared for bladder complaints, and made into warming poultices for aching backs and joints. Anyone who has grated it will know why it caught the attention of people troubled by a blocked nose: the heat rises from the root, the eyes begin to water, and the nose follows soon after. of the bladder, the root was bruised or sliced and steeped in wine or water; herbalists believed the resulting drink encouraged urine to flow and helped pass what they called “gravel.” Today, scientists are looking more closely at the compounds behind that pungency. Studies of horseradish extracts have found antibacterial and anti-inflammatory activity in the laboratory, offering a possible explanation for some of the uses handed down through generations. There is still much to learn about how those findings translate to people, and about the preparations and amounts involved. But the questions being asked now are remarkably close to the ones that sent people to dig up this fierce little root in the first place. Horseradish feels particularly at home as autumn settles in and the cooking becomes slower and richer. Fresh root looks rather like a small parsnip that has had a difficult life: knobbly, brown and unlikely to catch anyone’s eye in the vegetable shop. Choose one that feels firm, with no soft patches, and keep it in the fridge until you need it. There is very little warning of what lies beneath that rough skin. Peel and grate a small piece, however, and its sharp scent rises immediately. It is best to grate only what you need, as that glorious heat begins to fade once the root is cut. Start with a little; it is always possible to add more, but much harder to persuade horseradish to leave a dish once it has made itself at home. A fiery little jar: For a bracing cold-weather mixture, grate 30g fresh horseradish and blend it with the juice of one lemon, 1cm grated ginger, ½ teaspoon of cinnamon and 1 tablespoon of honey. Add a little cooled boiled water, just enough to make a loose paste, then transfer it to a clean jar. Keep it covered in the fridge and use within 2–3 days. A teaspoonful can be stirred into warm water as needed, though it is wise to taste it before being too generous with the spoon. You will get about 12-15 teaspoons out of this, depending on how juicy the lemon is and how much water you need to add to loosen the paste. Scale up or scale down according to your needs, but it is better to make a small batch often to maintain its pungency. Whether taken for warmth on a chilly day, for the first signs of stuffy nose or simply for the pleasure of making something from the root itself, horseradish may have nothing to do with a horse, but it certainly knows how to kick. The public are requested to support an appeal to help Mr. John Lynch and his family in their time of greatest need. The family were terribly affected by the recent disastrous fire. Mister Lynch not only lost his wife in the fire, but his business has also been destroyed, and he and his children have been reduced from comparative wealth to abject penury by the tragic events.

The donation of almost thirty-two pounds to the family, by businessman Mr. James McKenna, has already been acknowledged by this paper. A list of donors has been drawn up, and we have much pleasure in seeing the name of Lord Ventry at the head of this list who donated the sum of three pounds. (Hope the paper had much pleasure in seeing James McKenna’s donation.)

On the 17th of January 1737 the good ship named the Solomon, of Harve de Grace, France, ran aground at Bigbury Bay in Devonshire. She had been en route to Cork but was castaway in the above bay. The peasants of the area came down in their thousands to plunder the vessel. When the French crew saw them, all but three of them abandoned ship. Captain Mandeville, along with Captain John Kane of Dingle and Mr. Edward Lynch opened fire on the mob which was so effective that they saved the ship from plunder until the Lord of the Manor, Sir William Courtney, arrived with assistance.

Murder in the Asylum -Kerry News 06 December 1916 Peter Kennedy, who is believed to be deranged, was charged that on 28 November 1916, at Killarney Lunatic Asylum, he did feloniously and wilfully kill and slay a man named John Kelliher. Mr. Fleming (?) said the prisoner was unfit to plead, and that it would be important to enquire as to the state of the accused’s mind. So, a jury was sworn in, and Dr. Griffin of the Asylum said the prisoner had been in the care of the Asylum for the past six years and was utterly insane. He said Kennedy would be incapable of understanding the charge against him. The jury found the prisoner insane, and he was ordered to be detained during His Majesty’s pleasure. (Was Kennedy known to be violent before this crime. What were the circumstances that resulted in the murder.)

Robbery in Caherciveen -Tralee chronicle 23 January 1847 A shopkeeper in this town named Curnane was robbed of twenty-five pounds last night. The majority of that amount, apart from a few pounds, was in silver. After Curnane and his family had retired for the night, some person or persons, came to the back of their dwelling. They managed to gain entry through a window, and they took away a box containing the money and the shop’s account books. On the same night about 60 pounds (27k approx.) of potatoes were stolen from a man who lives just outside this town who, it appears, intended to use the potatoes as seed in the springtime. Caherciveen is not badly off at present for provisions. The supplies are constantly kept up, but the prices are out of reach of people, even those in middling cir8 Corca Dhuibhne Beo

The famine-mongers here are increasing the prices of flour and meal to a great extent. The bakers are not giving half the weight of bread, and the magistrates are taking no steps to correct the evil situation. An inquest was held today on a poor man who died of starvation. A second inquest was also held today on the body of a labouring man. The Jury returned a verdict in accordance with the findings of Dr. Hickson, who held a postmortem examination, and declared the same result as that of the earlier man, death by starvation. It appears we will have many more such deaths. Meanwhile, the district to the west of Dingle is in a deplorable state of destitution, resulting from the dense population.

Record Livestock News -Kerry Evening Star 06 October 1902 There have been big consignments of cattle from Tralee this week when two special trains full of cattle left for the annual sales in Ballinasloe. Mr. Johnny O’Connor, cattle dealer, Tralee, sent one special train, with thirty wagons and 575 head of on cattle on board. This was the largest consignment of cattle ever sent by one dealer from this district. Mr. Savage, cattle dealer, sent a special train of 23 wagons, containing 368 head of cattle.

The Irish people have only to observe the peace, and preserve their patriotic determination, and the period cannot be remote when the blessings of the Legislative Independence and domestic protection will be felt over this long-oppressed land. Let us then persevere in legal and, above all, peaceable, but zealous exertions, and the Parliament will be in College Green again at no distant day. DINGLE FOOD FESTIVAL. The Annual Féile Bia takes place over the weekend of October 3rd to 5th this year. Over 50 food stalls will be located at different points around town together with around 60 different outlets taking part in the popular Taste Trail.

CULTURE NIGHT 2026. All the events held in West Kerry on Friday last as part of the National Culture Night were well attended and much appreciated proving that the idea behind the celebration of our heritage at local level is a huge success. The main rainfall on the night interrupted the open air production of An Bad Chlos by Aisteoiri Bhreanainn under the direction of Lucy Begley. Spicy Beef, Chickpea & Chorizo Casserole Mark Murphy - Dingle Cookery School

Return the beef to the pot, add the beef stock and season with salt and pepper. Bring to a simmer, cover with a lid and place in the oven for 2 hours. Remove from the oven and stir in the chickpeas and chopped tomatoes. Replace the lid and return to the oven for at least another hour, or until the beef is completely tender. Once ready, stir in the parsley and lemon zest. Taste and adjust the seasoning with salt and pepper. Serve with rice or mashed potatoes. Bain taitneamh as!!

As the evenings begin to draw in, my cooking naturally starts to change. There are still plenty of great vegetables around, but I find myself moving away from lighter summer dishes and towards big pots of slow cooked food, warming spices and dinners that can happily sit in the oven for a few hours. At the cookery school, we always focus on understanding the technique rather than simply following a recipe. Once you understand the basic method for making a good stew or casserole, you can change the ingredients and flavours to suit what you have. For a rich, dark stew like this, the important part is at the beginning. Take your time browning the meat properly, soften the vegetables, cook out the tomato purée and spices and then add your liquid. Those first 20 minutes will make a huge difference to the finished dish. This version uses beef chuck, chorizo, smoked paprika and cumin, with chickpeas added towards the end. It is rich and warming, so I like to finish it with plenty of parsley and some lemon zest to give it a little freshness. It can also be made in a slow cooker. Ingredients 1 kg diced beef (chuck ideally) 1 tbsp flour (optional) 1 large onion, finely diced 3 cloves garlic, crushed 2 red peppers, deseeded and finely chopped 250 g cooking chorizo, cut into chunks

Preheat the oven to 170°C. Add the beef and flour to a bowl and season with salt and pepper. Toss well to coat. Heat a large casserole pot over a high heat. Once hot, add a little oil followed by the beef. You may need to do this in batches so that the meat browns rather than steams. Cook for a few minutes until the beef is well browned all over. Remove the meat from the pot and set aside. Reduce the heat to medium, add a little more oil if needed, followed by the onion. Cook for a few minutes, stirring occasionally. Add the garlic and peppers and continue to cook until the vegetables begin to soften. Turn the heat up slightly and add the chorizo. Cook for a few minutes, stirring occasionally. Add the smoked paprika, cumin and tomato purée and cook for another minute.

CAMP FAIR Heavy rain did not dampen the enthusiasm, spirit and enjoyment at Camp Fair last Friday, as locals, neighbours and friends once again came together to celebrate a much loved traditional Sheep Fair. The day began with a special blessing to mark the bicentenary of St. Mary’s Church, Camp, built 200 years ago and still proudly serving the community of Camp. Fr. Michael Moynihan, PP of the Corca Dhuibhne Pastoral Area, officiated at the ceremony. Afterwards, Fr. Michael enjoyed a traditional mutton pie joined by local ladies, Bridget Prendiville and Brigid O'Connor in O’Dwyer’s. Later at The Junction Bar, Mary's mutton pies were again enjoyed all day. All were delicious. There was a fine display of sheep pens put down by the young boys and girls. So encouraging for the custodians of the land in Camp to see the Fair in safe hands for the future.

The Old School was a hive of activity, with delicious home baking, teas and coffees served throughout the day. The painting competition for the children went great. Meanwhile, the Pet Show attracted plenty of attention, well done to all who came out despite the weather. There was plenty of colour and fun at the Children’s Fancy Dress too, led by Valerie entering into the spirit of the occasion in costume dress. Annascaul woman, Mary Casey celebrated another birthday, born in 1934, she has never missed a Camp Fair and she is very proud that her mother Annie Moynihan came from Gleann na nGealt. Aoibhinn O'Dwyer celebrated her 18th birthday too on the Fair day, a lovely memorable occasion for her. Congratulations Mary and Aoibhinn. As the day progressed, the music, stories and craic continued into the evening. The Railway Tavern and The Junction Bar had great music and entertainment all night. We'd like to announce that we will finish up our contract at the end of this season (9th November 2026) at Cothú in Ionad an Bhlascaoid. The last four years at the Blasket Centre have been great and we thoroughly enjoyed running Cothú and meeting all the visitors that came through and had coffee and lunch with us. Lorcán Ó Cinnéide and his fantastic team were very welcoming and helpful throughout our time and we have built friendships that will go beyond our tenure in the centre. We've been working in the hospitality industry for over 22 years here on the Dingle Peninsula, running restaurants Goat Street Café, Grey's Lane Bistro, Random and Cothú. We've had so many great times and fun, but we feel it's now time for a change and new adventures. We would like to sincerely thank our suppliers, as well as our fantastic staff over the years. New Basketball Club Launch

West Kerry Waves Basketball Club has been received very well in the West Kerry area. With sessions in Annascaul, Camp and Castlegregory, our aim is to be a community club for boys and girls. We have started with under 12s and will build on this each year, i.e. next year we will have an under 14 team. To celebrate reaching over 50 members, we have decided to have a launch party on Sunday 27th September at 4pm in Annascaul Sports Hall. We will have special guests in attendance to show their amazing skills to the children! There will be games and prizes on the day and might play a little basketball too. You can do some unpaid work as a volunteer and keep your social welfare payment. However, you must continue to meet all the conditions attached to your payment. Your Intreo Centre or Social Welfare Branch Office or the section paying your social welfare payment will usually decide whether you can keep your social welfare payment and work as a volunteer. Disability payments and volunteering If you are getting Illness Benefit or Invalidity Pension you must get permission to work as a volunteer. You must apply to the section that pays your social welfare payment before starting any voluntary work. If you are getting Illness Benefit, you apply to the Partial Capacity Benefit section for permission to do voluntary work.

West Kerry GAA Michael Kennedy, PRO West Kerry West Kerry 0-21 St. Brendan’s Board 2-14 St Brendan’s Board, comprised of five teams were strong favourites to beat a depleted West Kerry side, minus An Ghaeltacht, in preliminary round 1 of the senior county football championship played at Annascaul last Saturday evening. Playing against the wind Brendans were very impressive in the opening half, scored two goals and were leading by five points after 10 minutes. West Kerry worked hard to keep in touch but were still 5 points adrift at half-time on a scoreline of 2-8 to 0-9. Things were not looking good for the West as they would be playing against the wind in the second-half and had struggled to keep in touch in the first-half. Whatever was said at half-time West Kerry came out a different and determined team in the second-half. They now started to control the game and notched up point after point and had drawn level by the 46th minute. After exchanging points, the West went ahead on the 49th minute adding three further points. But Brendans were not done and scored two points before the final whistle leaving the Westerners victorious on a final scoreline of 0-21 to 2-14. To their credit Brendan’s never gave up and were still chasing the game until the final whistle whistle. Odran Ferris, Conor Hayes, Daragh O'Connor and Tomas Kennedy were a constant threat and goalkeeper Sean Broderick put 3 points on the scoreboard.

This was a truly remarkable second half performance by the West from a team that had only come together a week before. It was a wonderful, tension filled comeback that delighted the home fans who responded by cheering their team off the field. Killian Falvey, Cian O’ Grady, Cathal Ferriter, Colm Moriarty, Michael Scanlon and Cormac Ó Cinnéide were very much to the fore for West Kerry but overall it was a great team performance with eight different players scoring. Manager, Gearoid Ó Cathasaigh, is a great motivator and is passionate about West Kerry football. He has built a management team that is equally enthusiastic. Together they have instilled that spirit and passion into their team. Full credit to all concerned and also to chairman, Muiris Ó Fiannachta, who persuaded the manager to take on the job. Gone are the days when some players were less than enthusiastic about playing for West Kerry. West Kerry now have a two-week break to gather and consolidate while Brendans are out again next week in the losers round. With three different teams from Corca Dhuibhne competing in the county championship, there is a lot to look forward to in the coming weeks for residents of the Dingle Peninsula. We wish them all well and hope that they can stay apart for as long as possible. Footnote: A minute’s silence was observed at the start of the game in memory of recently deceased Kevin Knightly. Kevin was a stalwart of the Annascaul club over many years and served in many roles as a player, officer and fundraiser. He also oversaw the major construction works undertaken by the club in the early eighties. As dheis Dé go raibh a anam dílis.

The competition will welcome clubs, players and supporters from Gaeltacht communities throughout Ireland

for a weekend celebrating Gaelic football, music and dance and of course the Irish language. Preparations are being led by the club with the support of volunteers, community organisations, local businesses and sponsors. Further details about the competition, upcoming fundraising activities and opportunities to become involved will be announced over the coming months. Gabriel Ó Cathasaigh thanked CLG Lios Póil and everyone who attended the launch, those who contributed to the film and panel discussion, and the many volunteers working behind the scenes to prepare for the Comórtas. The Fruit of the Vine: Ancient & Divine

Micheál Ó Coileáin "Wine is the most healthful and most hygienic of beverages.” - Louis Pasteur In his Ecclesiastical History of the English People written in 731AD, the Venerable Bede, who was an English monk, scholar, and historian living in the north of England, describes Ireland as not having ‘any want of vines.’ Bede is also known for popularising the use of BC and AD to order historical years. His claim of ‘many wines ‘present in Ireland is contradicted by Gerald of Wales (Giraldus Cambrensis - cleric and writer, whose book, Topographia Hiberniae, provides an account of late 12th century Ireland, which he visited in 1183), who said that Ireland had never had any vines, although he noted the abundance of imported wine and identified Poitou as a major exporter of wine to Ireland. The latter was a province of west-central France whose capital city was Poitiers. There is some evidence from wine-stained pottery vessels from Waterford dating to about 500BC, which may be the first evidence of wine in Ireland – more than likely of Greek origin. The excavations at An Riaisc, near Ballyferriter by Prof. Tom Fanning and his team in the mid 70’s produced shards of pottery from wine filled amphora imported from the eastern Mediterranean. It is a type of Late Roman amphora from the 5th and 6th centuries AD, originating in the areas around Cyprus or Syria. Used to transport wine or olive oil, these large storage vessels feature distinctive wheel-made horizontal ribbing and have been discovered at high-status early medieval Christian sites in Ireland such as at An Riaisc. Therefore, there is good evidence that a small monastic community in the far western edges of Christendom in Corca Dhuibhne, are trading with the Roman world and importing wine – probably through Britain in the Early Medieval Period. To broaden the discussion, the earliest archaeological evidence of pure grape winemaking anywhere in the world, comes from 8,000-year-old pottery jars, found in the South Caucasus region of Georgia. Archaeologists found tartaric acid (a chemical fingerprint of grapes) on pottery shards in several Neolithic villages. The village of Gadachrili Gora being often cited as the classic example. A lump of beeswax wrapped in plant material and tied with twine discovered in South Africa’s Border Cave in 2012, suggests that early hunter-gatherers may have been making a type of honey-based alcohol there as long as 40,000 years ago. The bundle also contained traces of a protein substance, possibly egg, and tree resin—a recipe lost to time! Chemical analyses recently confirmed that there is evidence of an early alcoholic beverage created from a mixed fermented drink of rice, honey, and hawthorn fruit and/or grape from the Yellow Rive Valley in China. Chemical analyses of ancient organics absorbed, and preserved, in pottery jars from the Neolithic village of Jiahu, in Henan province, Northern China, have revealed that a similar mixed fermented beverage as found in South Africa of rice, honey, and fruit was being produced 9,000 years ago, approximately the same time that barley beer and grape wine were beginning to be made in the Middle East. “Wine is bottled poetry.”

Dingle Literary Festival Announces 2026 Programme

Younger readers are at the heart of Dingle Lit, with Ashwin Chacko and Sadhbh Devlin taking part in events for children and young people. Muireann Ní Chíobháin will host the Children’s Books Ireland Book Clinic, while Fighting Words will also be part of the festival programme.

Dingle Literary Festival has announced its 2026 programme, bringing an exciting line-up of Irish and international authors, poets and storytellers to Dingle from the 20 - 22 November. Tickets for festival events and workshops are now on sale at www.dinglelit.ie.

The Irish-language programme runs throughout the weekend, with events featuring Lorraine Ní Chathasaigh, Seán Óg Ó Duinnín and Micheál Ó Conghaile, alongside Michael Cronin, Laoighseach Ní Choistealbha, Aedín Ní Thiarnaigh and Eoin McEvoy. Fearghas MacLochlainn and Slaine Ní Chathalláin also feature, with Aon Scéal and BnScoil among the events taking place as Gaeilge.

This year’s programme spans fiction, non-fiction, poetry, children’s literature and events in the Irish language, alongside creative writing workshops and immersive events taking place in Dingle throughout the weekend. One of Ireland’s most celebrated novelists, Sebastian Barry, will open the festival on Friday evening in conversation with Martin Doyle, author, journalist and Books Editor of The Irish Times. Barry’s latest novel, ‘The Newer World’, follows one man’s life in the aftermath of the American Civil War. “This year’s programme reflects what Dingle Lit is about. It brings together distinctive voices, different forms of writing and conversations that we hope will stay with audiences long after the weekend is over. From some of Ireland’s best-known authors to emerging voices, and across both English and Irish, there is a variety of events and activities in this year’s programme. Dingle is an important part of the festival’s identity, and we look forward to seeing authors and readers come together here again this November,” said Sheila O’Reilly, Festival Director, Dingle Literary Festival. Fiction is strongly represented throughout the weekend, with acclaimed novelist Christine Dwyer Hickey, crime writer Liz Nugent and European Union Prize for Literature winner Lana Bastašić among the authors appearing. Non-fiction, memoir and current affairs form another major strand of this year’s festival. I wrote and directed a documentary film on The Gloaming , From Moment to Moment in the early 2000’s and I regard this as my first film even though it was not feature length. Before that I had worked mainly as writer researcher on 2 long series on traditional music ‘Bringing It All Back Home ‘ and ‘River of Sound’ with the late and much missed Micheál Ó Súilleabháin . What are you working on at the moment? Upcoming projects? At the moment I am in pre production with ‘Ceolta Nollaig Ó Chorca Dhuibhne ‘ for TG4 . It’s based here which is fantastic and more that this I will not say for fear of hexing it ! What job(s) are you most proud of? I love the film I made about The Gloaming , the film I made with Pauline Scanlon last year ‘Amhráin do mo Mháthair and my film on Dónal Lunny ‘In Time’ which was perhaps the film I always wanted to make and had the great good luck to actually get do it . What’s your process? How do you get into a role/project and how do you work? So far the projects have somehow come to me. The story is always the most important thing and that needs time. So typically I would spend ages talking to people ,taking loads of notes, probably overdoing the research and waiting for the story to make itself known to me . It always happens . What advice would you give to anyone wanting to get into the film industry? (or best advice you got?) Know what you want to do . It’s a very collaborative industry which is what I love about it . While people will look to you for direction if you are writing /directing you are not on your own in the endevour . Tell us about yourself I’m a Dubliner with Mayo Kerry and roots so very conflicted identities where football is concerned. I came to Corca Dhuibhne as a student back in the 70’s to Dún Chaoin and fell under the spell of the music language culture and landscape. It remains as magical and inspirational as it was the first time . How did you get into the film industry? A long long route through RTE radio, then television , then documentary making for television, then on to independent production until very late in the day to writing and directing on to full documentary features. What inspired you to want to work in film? (film, tv programme, actor, etc.) and what inspires/motivates you from day to day in your work? I don’t think I ever consciously wanted to work in film. I think I found out that I did after I had actually started to direct short documentary programmes for TG4 . It was more a case of I like doing this more than anything else. I had been a Jack of all trades for a long time across many different aspects of production so I had a very long apprenticeship. What was your first job in film and what have you worked on since? My background is in television not in the film industry as such . So I started as a researcher on television programmes doing short feature inserts . This involved going out on the road with film crews and learning
