Posole soup is a traditional Mexican dish that is enjoyed by many on Cinco de Mayo. This hearty and flavorful soup is typically made with hominy, pork or chicken, and a variety of spices, and is often garnished with lime wedges, shredded cabbage and fresh cilantro. The combination of tender pork or chicken, chewy hominy and spicy broth creates a delicious and satisfying meal that is perfect for celebrating the holiday.

Posole has a long history dating back to ancient Aztec and Mayan civilizations, where it was considered a sacred dish and was often served during religious ceremonies. It was believed to have both spiritual and nutritional significance, as it was rich in protein and vitamins. Over time, posole spread throughout Mexico and evolved into different regional variations, each with their own unique ingredients and flavors. Today, posole remains a beloved and popular dish, especially during special occasions and celebrations.

Why is it called posole? Technically, “posole” is Spanish for “hominy.”

But it usually refers to this traditional soup. It can be green (verde) or red (rojo), determined by the peppers used. Pork posole is most common, but today we’re using chicken.

What the heck is hominy? Hominy is dried corn that’s been soaked in a mineral lime bath in a process called nixtamalization. This alkali

process loosens the hulls and softens the kernels themselves, causing them to double in size, which is why hominy looks like giant mutant corn. Without hominy, we wouldn’t have masa, or ground corn. No masa means no tortillas, tamales or tacos. Hominy is easier to digest, thus more nutritious, and makes an excellent alternative to potatoes or beans, especially in soups like this.

EASY POSOLE

VERDE DE POLLO

This green Mexican hominy and chicken soup is ready in just 45 minutes on the stove, or you can let it simmer in the slow cooker all day. Add jalapenos if you like heat. You can use leftover or rotisserie chicken to make it even quicker.

Total Time: 45 minutes

Yield: 16 servings

1 tablespoon olive oil

1 large yellow onion, peeled and diced

2 cups mild chiles, roast, seeded and diced

2 jalapenos, seeded and minced, optional

3 cloves garlic, minced

2 pounds boneless, skinless chicken breasts OR 3-4 cups cooked shredded chicken

8 cups chicken stock

2 teaspoons ground cumin

1 teaspoon salt, or to taste

1 (110-ounce) can hominy, drained

Garnishes: sliced avocado, cilantro, cotija cheese, thinly sliced radishes, lime wedges, shredded cabbage, tortilla chips

Heat oil in a stockpot over medium high heat. Add onion and saute

until soft and translucent. Add the peppers and garlic and saute for an additional minute, stirring occasionally. Add chicken stock, 2 cups water, cumin and salt, and bring to a simmer. If you’re not using pre-cooked chicken, add the raw chicken and cook for 15 minutes, or until cooked through. Remove and shred. Add the hominy. Return the chicken to the soup. Reduce heat to medium low and simmer for at least 5 minutes. Salt and pepper to taste. Serve hot with your desired garnishes.

The moral of the story is: If you want to celebrate Cinco de Mayo like a pro, remember, with posole soup, it’s all about the garnish. So pile on those toppings and make it rain with diced avocado, cilantro, cotija cheese, thinly sliced radishes, lime wedges, shredded cabbage and tortilla chips!

Just be warned, you may need to make extra for your friends who will undoubtedly show up once they hear about your posole-making skills. Happy Cinco de Mayo, amigos!

Combine pineapple, banana, coconut milk, coconut extract, and vanilla in a blender cup; blend until smooth. Serve immediately.

Heat oven to 350 degrees. Brown meat and onion in a skillet over low heat. Remove from heat and thoroughly mix in celery, rice, horseradish, mustard and egg. Cook cabbage leaves for 3 minutes in boiling salted water. Place meat mixture on cabbage leaves and roll, fastening with toothpicks. Place close together in greased baking dish, pour tomato puree and water over cabbage rolls. Cover and bake 30 minutes. Once baked, remove from dish and pour sour cream into the liquid remaining in the baking dish. Before serving, spoon sour cream over cabbage rolls and enjoy.

Preheat the oven to 400 degrees. In a large oven-safe skillet, heat the oil over medium heat. Add the onion. Saute for 5 minutes or until soft. Add the garlic, red pepper, kale, oregano, red pepper flakes, and salt. Saute for 5 minutes or until the kale is wilted. Add the tomato paste. Saute for 1-2 minutes. Add the orzo, canned tomatoes, chicken or chickpeas, and broth. Bring to a simmer. Bake for 10-15 minutes until the orzo is soft. Finish by stirring in butter, crumbling feta over the top, and dusting with some fresh dill, lemon juice, and freshly ground black pepper.

Perfume is always a popular Mother’s Day gift. It combines luxury and sentiment and lasts much longer than a bouquet of flowers. Perfume bottles are often works of art in and of themselves, increasing their appeal. They are popular collectibles, whether they contain perfume or not. There is even a major club for their collectors: the International Perfume Bottle Association (perfumebottles.org). Antique and vintage perfume bottles sell well at auctions. As with most antiques, a famous maker increases the value, whether it’s a perfume by a celebrated designer or a bottle by a well-known glass artist or company. This one, made by Stevens & Williams, a famous English art glass company from the 1840s

Q: How is Celine Dion doing since she was diagnosed with a neurological disorder? Will she ever sing in front of an audience again? -- N.G.

A: Two years ago, Celine Dion was diagnosed with stiff-person syndrome, a neurological disorder with an unknown cause and an uncertain prognosis. In an interview with Vogue France, she said that she undergoes physical and vocal therapy five days a week and hopes to sing again.

In February of this year, Dion presented a Grammy Award to Taylor Swift. She looked happy and radiant, leaving her fans hopeful that they’ll hear her angelic voice on stage again someday.

Q: Is it true that Garcelle Beauvais is leaving “Real Housewives” because her acting career has taken off? She’s the only levelheaded one in the bunch, so I wouldn’t blame her if she quit. -- T.S.

A: There have been several firings and voluntary exits among Bravo’s “Real Housewives” lately, but Garcelle Beauvais is not one of them -- at least not yet. The popular cast member of “The Real Housewives of Beverly Hills” began her career in front of the cameras as a model for the Ford agency before getting bit by the acting bug. She appeared in the Eddie Murphy film “Coming to America” and its sequel, as well as “The Jamie Foxx Show” and the short-lived Aaron Spelling primetime soap “Models Inc.”

After her career lagged

to the 1930s, sold for $1,968 at Brunk Auctions, surpassing its high estimate. Its bold color, elegant design and skilled technique contribute to

the high price. The bottle is almost heart-shaped and features a white flower and leafy vine cameo cut to a bright red ground. Cameo cutting is

a bit, she joined “Real Housewives” in 2020. While most actors look at reality television as a step down, this had the opposite effect on Beauvais’ career. Viewers were charmed by her wit, levelheadedness and beauty, and her career in Hollywood was reborn.

Millions of catalogs were published each year beginning in the early 1900s. The first Montgomery Ward retail stores opened in 1926. The last of the stores closed in 2001. The company was sold in 2004 and was sold again in 2008. It is now part of Colony Brands, Inc. and is an online-only retailer. Value of an old catalog depends on age, content, cover art and condition. Some sell for about $35 to $50. If the catalog pictures a new invention, old tools or items that have historic value, it could be worth

a microscopic size in order to enter the body of an injured scientist via a tiny submarine and repair his brain damage. Cameron admits, “We’ve been developing it for a number of years and plan to go ahead with it very soon.” Welch was the top Hollywood sex symbol at the time. (She passed away in February 2023.) The film was built around her sex appeal, and despite her unavailability, Cameron says, “We think we can make a pretty good movie.” There just aren’t any sex symbols like Raquel Welch around today, but still, they could sell tickets to that casting session!
