ANDY: I’mtheHeadRiverKeeperandJim istheAssistantRiverKeeper.Welookafter thetrout fishingon theEstate. Themain jobof ariver keeper istoensureyou maintainanidealhabitatand conditions toholdtroutonthebeats.
JIM: It’s notjust about fish too,it is everything todo withtheriverandthe water.Wemanagefourandahalfmilesof trout fishingriverontheEstate,in additionto thiswe havetrout lakesand the Fishery Brook.
ANDY: It’sjustthetwoofus,soanything involving waterlikebuildingbridges, clearingdebris,or maintainingbanksis downtous.
Whatwasyourjourneyto becominga RiverKeeper?
ANDY: I’vealwaysbeenakeen fisherman butI didn’t start in this field. Previously I was an engineer, inmechanicaland productionengineering,doing technical drawing.Igotto30anddecidedona careerchange,tosomethingmore
fulfilling.So, Iretrained.IstudiedaHND atSparsholtCollege fortwoyearsin fisheries managementand fish farming andcamestraighthere.IthoughtI’dhave tomoveforworkbut thisjobwasonly downthe road.IstartedasAssistant RiverKeeperin2002, Iworkedunder theHeadKeeperfor20yearsandbecame HeadKeepertwoyearsago.
JIM: I’vealwaysbeeninto fieldsports andconservation.IalsowenttoSparsholt. Ididtwo yearsofCountryside Management andayear ofForestry. Thisgavemeacomprehensive knowledgeofhabitatmanagement.
Whatdoesatypicaldaylooklike foryou?
ANDY: Itdependsonthetimeofyear.The fishing seasonruns fromthe15thofApril totheendof September.Inseason, first thinginthemorning weareoutweedcutting,mowingthegrassor strimming togetreadybeforethe fishermen arrive. Westock fisheverytwoweeks,typically adding about700 fishatatime.We monitorhowwell eachbeatoftheriver is fishing.Anglersmaintaincatchbooks
ateachbeathut,whichwereviewto seewhatfish havebeencaught,allowing ustoadjustourstockinglocations accordingly.In theeveningsIcheckthe rivertoensureeveryone hasenjoyedtheir day. Fishermencanaccessthe beats from 9amuntilonehouraftersunset.
JIM: Fly fishingisalwaysbestatdawn andduskduetothetrout’sfeedinghabits.
ANDY: Wealsotestthewaterqualityevery two weeksforammonia,phosphates, nitrates, temperatureandelectrical conductivity.Thistest getssentofftothe AnglingTrust.
Duringtheclosedseasonwearefeeding the fish everyday.Thereislessnaturalfood this time of year sowesupplementfeed thetrouttohelpmaintain theircondition. Byhandfeedingthe fishwecan monitor thetrout’swhereabouts.
Whatis flyfishing?
ANDY: Fly fishingiswhereyouusean imitationfly toreplicateanaquaticinsect. You’retryingtotrick the fishintothinking it’sarealfly.Whereascoarse fishinguses livebaitlikemaggotsandworms.
Whyis flyfishingontheRiver Loddon sospecial?
ANDY: It’stheexclusivity.Eachangler getsa privatestretchofriver,which iscalledabeat,for themselvesanda guest.

Heatovento180C/160Cfan/gas4.Prickthe basealloverwithaforkandbakeinthecentre oftheovenfor15minutesuntillightlygolden.
Meanwhile,meltthebutterandchocolate togetherinasaucepanoveralowheat.Once melted,stirinthesugarandflour,then graduallybeatintheeggs.
Pourthefillingoverthebaseandcoverthetop inchocolateeggs.Returntotheovenandbake for12-15minutesoruntilthefillingisjustsetat theedgesbutthecentreisstillshinyandabit wobbly.
Removefromtheovenandputinthefridgeto chill(Canbemadeadayaheadandkeptinthe tinovernight.)

225gself-raisingflour 2limeswithzestfinelygrated
50gnaturalyoghurt Limewedges,limezestandmint leavestodecorate
FORTHESYRUP
3limesjuiced(90ml)
100glightbrownsoftsugar smallbunchofmintleavespicked androughlychopped 120mlwhiterum
FORTHEBUTTERCREAM
150gunsaltedbutter, softened
400gicingsugar,sieved 2limes
50gcream cheese
Heatthe oven to 180C/160C fan/gas 4
Butter and line two loose-bottomed 20cmround caketins. Putthebutterand sugarinalargemixing bowl Beat for5 minuteswith anelectricwhiskuntil paleand fluffy.
Whisk inthe eggsoneat atime, thenfold through the flour,grated lime zestand yoghurt Divide the batter betweenthe prepared tins andbake inthe centre of the oven for 25-30 minutes,or until a skewer insertedin the middle comes out clean.
Leave in thetins for a minute, then turn out onto wire racks
To makethe syrup,put halfthelime juiceand all the sugar and mint leaves intoa saucepan and bring toa simmer, adding 1 tbsp water if needed to dissolve the sugar Gently bubble for 7-10 minutes,or until syrupy.
Remove from theheat and stir throughthe rum and remaining lime juice Leaveto infuse for 10 minutes, then strain intoabowl. Prick the warm cakes all over witha cocktail stick and pour over the syrup. Leaveto cool completely.
To make the buttercream, putthe butter, icing sugar and lime zest in a bowl and beat withan electricwhiskfor 5 minutesuntillight and fluffy
Beat in the cream cheese until just combined, being careful notto overbeat
Put one of the syrup-soaked sponges on a large serving plateand spoon over one-third of the buttercream,spreading itover witha paletteknife Topwith the other spongeand spread the remaining icingover thetopand sides ofthecake
Decorate withthelime wedges,limezestandmint leaves
Thecakewillkeep inthefridgefor uptothreedays.
